Turning Circular! Finca El Monte has reopened after ‘lockdown’ not only with a new colour scheme throughout but also with a renewed purpose! We have always had recycling and sustainability as the bedrock of our ethical sourcing policy, however, the time off has given us the chance to really think about what more we can do. Since Blue Planet II highlighted how ecosystems in the ocean could be destroyed with plastic waste everyone seems to be talking plastic! Many ordinary people have been inspired to go “Plastic Free” and our own

Town Council has unanimously agreed to tackle plastic use in Buckingham. We must be realistic: we cannot banish plastic. In many cases it’s actually the better material choice for the environment. There’s a danger, however, of using plastic as a scapegoat, when the real problem is the linear system. Thinking and working in circles instead of along the same old lines, means today’s waste IS tomorrow’s product. We have many items which have taken this “reuse” idea to a beautiful and colourful level including rugs, throws and cushions made from plastic bottles, a clever way of using recycled sari material and a lovely range

of tableware and gifts made from recycled aluminium, which saves up to 90% carbon emissions compared to producing new aluminium. The Energy Effects Studio Update Since day one of lock-down The Energy Effect Fitness Studio has continued to deliver 18 live classes and online PT sessions every week for our members, everything from high impact Spinning, Kettlebells and Bootcamps to fun classes like Energy-Glow and Dancercise Gold, all filmed live from the instructors homes and streamed through a private members facebook page. Behind the scenes we have been preparing the studio ready for a long awaited re-opening, ensuring that we meet all COVID-19 regulations and provide a safe workout environment that still maintains the fun and friendly atmosphere that we all love. Upon re-opening class numbers will be strictly reduced to ensure that social distancing can be maintained, therefore advance booking will be a necessity. All participants will be required to hand sanitise at the dedicated stations when arriving. We have ensured that every member now has all the equipment that they need at home to carry out their classes

online so they will bring these items with them to avoid sharing studio supplies. We have kept a small number of dumbbells, kettlebells and mats that can be pre-booked for new members, these will be cleaned before and after use. To avoid excess numbers in the building there will be an additional 15 mins between each class to allow time for the previous participants to vacate and cleaning to take place. There are also a few small changes, the lovely pink towels in the toilets have been replaced with paper towels, antibacterial wipes are in each toilet so that members can clean after use and these should be disposed of in the new peddle style bins to avoid unnecessary hand contact. We have also moved our spinning bikes downstairs where there is more ventilation for what is without a doubt one of our most popular but hottest classes. The bikes will be moved into place by the members and thoroughly cleaned after each use. The whole studio has also been given a lovely fresh coat of paint and a thorough deep clean throughout, which will continue to be done on a regular basis.

TO DETOX OR NOT TO DETOX?

with Louise Lambert-Day - Place Eight Wellness I’d think there are a fair number of us right now who believe they could do with a detox after a few months of lock-down. I’m often asked if a detox is worth doing and if so, what the best approach is. I’ve participated in lots of detoxes myself and some are definitely not for the faint hearted. But do we really need to detox and if so, what is a realistic, effective and safe way to do it? Most evidence for detoxing comes from naturopathy, a system of natural medicine. Even if the clinical evidence for detoxing is still forthcoming, the list of potential benefits is enormous. Depending on your existing level of toxicity (in other words how well or badly you generally treat yourself), you might be surprised to find a whole array of health problems can often disappear. In my experience these can include: • Bloating, nausea, indigestion and a furred tongue may vanish as your liver gets back to optimum function. • Constipation, gas and cramping can resolve itself as intestines return to balance. • Frequent colds and flu, tiredness, cellulite,

blemishes and puffy eyes can all improve as your lymphatic system shifts into a higher gear. • Clogged sinuses, congestion and nasal drip can disappear when your lungs function properly. • Urinary problems often clear up as kidneys stop overworking and under-functioning. At the very least, most people who detox experience a marked increase in energy. Often, they see a clearer complexion and brighter eyes. Concentration and mood can also improve. There are many types of detox and some are fairly severe. No doubt you’ll have seen adverts for detox pills and potions, wraps and kits & whilst some are certainly supportive, most are not strictly necessary. Detoxing can actually quite simple. It’s a natural, pre-programmed process that your body conducts on its own. So, the truth is that you really need to do the work yourself – with diet, exercise and some will-power. Sorry. Here is a very simple detox which is safe, sensible and supports all the main detox systems of the body. Ideally you would stick to this for as long as possible as it’s really more of a blueprint

for healthy living: • Eliminate the following: alcohol; caffeine; dairy; wheat; red and processed meats; convenience & processed foods and of course sugar. • Eat lots of fresh fruit & vegetables. Fruit and vegetable juices are ideal for detoxing, so try to juice whenever possible. • Have two or three servings of protein a day. Include deep-water fish, organic eggs, chicken and legumes. Incorporate some Brazil nuts and sunflower seeds, all of which contain vital detox amino acids (and which make great snacks). • Instead of tea or coffee, drink herbal teas (nettle or fennel are especially good choices) and/ or dandelion coffee, which is liver-supporting. • Start your day with two tablespoons of freshly squeezed lemon juice, half a pinch of cayenne pepper and at least half a pint of warm water. • Drink eight glasses of still water a day – more if you are exercising.

• Brush skin daily for five minutes before washing to stimulate the flow of lymph and promote circulation. • Gentle exercise is beneficial when detoxing. Walking and swimming help and Yoga is superb as it supports and strengthens all of the body. • Have a sauna or steam bath - including them where possible while detoxing helps the process. Having a massage, or MLD (Manual Lymphatic Drainage) is also effective. • Allow time to detox your mind by resting it. Try some guided meditation or at the very least permit yourself half an hour per day to just sit. • Get plenty of sleep. Powerful healing and detoxifying processes happen whilst we slumber. • Be gentle on yourself. Learn to listen to your body and its needs. • Ideally, visit a naturopath or nutritional therapist who can help you devise an ideal program of supportive supplements.

Hi, i’m Jess

GROWING AND ENJOYING YOUR GARDEN MY GARDEN RIGHT NOW Stake and dead head, this is all I seem to be doing right now. It’s all growing and it’s all getting tall. Hollyhocks are towering overhead, perennial sweet peas, passion flower and clematis are covering the fences, the roses are really coming to their best now. But the current stars of the show are the poppies who bloom so beautifully and briefly that the bees flock to them to fill their boots with pollen. Every evening I’m snipping the heads of all the roses that have gone over, I have even

managed to cut some a little early so as to dry the petals. These petals will probably end up as ‘perfume’ for my 9 year old but if they dry well enough may be confetti for my Brother’s wedding. Right now is a good time to feed your roses, either with a rose food or using well rotted manure around the base. To me, roses are an investment and well worth looking after, they are a plant that with the right care will just get better year on year. Coming from a florist background I am always drawn to the big and blousy David Austin varieties and

As a youth I was much happier surrounded by my pets and plants than anything else, this has never changed. Now at the age of 40 I think I’m where I’m meant to be; surrounded once again by plants and pets. For the last 12 years I have been a florist, I have owned my own shop, been studio based and freelanced for some amazing florists having the opportunity to work at amazing venues all over the country. During the last 5 years I have had the space to grow my own flowers, often adding the perfect bloom into my floral displays. Right now a new chapter is opening up and there is much more flower growing in my future. These articles will be my thoughts and observations of the garden as it grows and changes.

I go for repeat flowering ones to make sure their season is as long as possible. Climbing up my fences I have clematis, passion flower and perennial sweet peas that seem to grow and grow no matter how much a prune and try to tame them. They all last really well in a vase too and can provide real interest trailing from a vase on a shelf or windowsill. Taller plants such as Salvia, lupins, scabious and delphinium continue to need some support especially with the recent wind we have had. Try not to stake them too stiffly and tie them to canes, metal bow plant supports are the best to use right now. I’m a fan of the rusty metal ones that I buy from Preston Bissett Garden Centre. Earlier this year I dug up my Dahlia bed to make way for some vegetables to enjoy. I redistributed my beloved friends throughout the main flower bed and now some are showing signs of flowers. I am so relieved the move didn’t damage them especially as I didn’t lift them last year either. Now is the time of year I can see any gaps in my flower beds and I definitely go for the more is more approach and never want to see any soil poking through. So I have bought a whole tray of pink Achillea which I can now dot (cram) through the flower beds to give even more colour and the bees love these too. Until next time, enjoy your gardens.

GARDEN FAVOURITES The single best plant I have in the garden is an Annabelle Hydrangea. It has grown and spread quickly and blooms prolifically. The pale lime colour brightens up a dull area in the garden and I have just planted a few more to enjoy next year too. The stems grow long and straight and are also great for cutting and putting in a vase, lasting a week or more if the water is changed. I pruned this down by two thirds in the autumn and it seems to have benefited from that and come back stronger than ever.

Here are some popular Lockdown recipes…once the ingredients became available again!

Lemon Garlic Pasta - Serves 2

Our wonderful NHS and keyworkers have continued to do all they can for us – never have we needed them more or appreciated them enough, so the clapping may have stopped but the sentiment should never falter. Hopefully, by the time you read this I will once again be able to spend close time my parents who have been shielding, like some of you who have had to endure isolation like never before. I don’t know how you have found lockdown, I know I had my struggles – even losing my mojo for cooking at one point. I joined a fab group on Facebook called Let’s Get the Nation Cooking Again which allows people to swap favourite recipes and show the odd butchery tutorial – check it out for some great ideas. As I write this, the doors are re-opening for bars, restaurants and cafes which is a welcome step for the hospitality industry. Let’s hope by the time you read this all has gone well. As always, have fun in your kitchens whether for simple grub, functional meals, special occasions, or home fine-dining. Now more than ever, as my new best friend, whom I found in Lockdown, Marie Kondo suggests – only do it, keep it or live with it, if it brings you joy! Love Tina x

Ingredients 250g Spaghetti/Linguine pasta 2-3 garlic cloves chopped Zest of 2 lemons 2 tbsp of lemon juice 2 tbsp Regular olive oil for cooking Salt to taste approx 1/2 tsp Drizzle of Extra virgin olive oil for dressing Optional dried herbs and chilli flakes

Method Cook the spaghetti as per packet instructions (less 1 minute) in plenty of boiling hot water. In a separate pan, add a good drizzle of regular olive oil and the garlic on low heat. As the garlic is simmering, zest one lemon and add to the garlic. Zest another lemon and set aside to add at the end. When the garlic starts to sizzle but still has not changed colour much, add the lemon juice and salt and squish the garlic down with the back of a fork. If you want to add the optional dried herbs or chilli flakes do so now.

Two minutes before the pasta is done, transfer the spaghetti to the garlic lemon pan and reserve some pasta water. Turn up the heat and toss the pasta in the sauce for a minute or two Taste the pasta before serving and adjust with extra salt or

Sourdough Bread - 1 Loaf

You will need a sourdough starter to make this, see the website for details on how to make it or contact us if you need a recipe and don’t have the internet.

Ingredients 500g strong white flour, plus extra for dusting 1 tsp fine salt 1 tbsp clear honey 300g sourdough starter flavourless oil, for greasing

Method Tip the flour, 225ml warm water, the salt, honey and the starter into a bowl, or a mixer fitted with a dough hook. Stir with a wooden spoon, or on a slow setting in the machine, until combined – add extra flour if it’s too sticky or a little extra warm water if it’s too dry.

Line a medium-sized bowl with a clean tea towel and flour it really well Tip the dough back onto your work surface and knead briefly to knock out any air bubbles. Shape the dough into a smooth ball and dust it with flour. Place the dough, seam-side up, in the floured bowl, cover loosely with a sheet of oiled cling film and leave at room temperature until roughly doubled in size. The time it takes for your bread to rise will vary depending on the strength of your starter and the temperature in the room, anywhere from 4-8 hrs. The best indicators are your eyes, so don’t worry too much about timings here. You can also prove your bread overnight in the fridge. Remove it in the morning and let it continue rising for another hour or 2 at room temperature. The slower the rise, the deeper the flavour you will achieve. Place a large baking tray in the oven, and heat to 230C/210C fan/gas 8. Fill a small roasting tin with a little water and place this in the bottom of the oven to create steam. Remove the baking tray from the oven, sprinkle with flour, then carefully tip the risen dough onto the tray. Slash the top a few times with a sharp knife, if you like, then bake for 35-40 mins until golden brown. It will sound hollow when tapped on the bottom. Leave to cool on a wire rack for 20 mins before serving. source: bbcgoodfood.com

Q&A with Chris Mullis, Founder of the Buckingham Support Network Back in March, Chris Mullis put together a group on Facebook to support local residents during the Coronavirus outbreak and so far it has over 2,000 members! We wanted to do a little Q & A with him and also we personally wanted to give him some recognition and to thank him for all of his efforts for putting this group together and managing it. To join the group simply search for ‘Buckingham Support Network’ on Facebook. Hi Chris! Thank you so much for doing this Q&A for our readers! If you don’t mind, will you tell us a bit about you? What do you do for a living and where do you live? I am the Client Refund Manager for Bettertax, we specialise in Tax Returns and Refunds. I live in Buckingham and have done for the last 23 years. My grandparents and parents have been here all their lives. What made you put together the group in the first place? I saw an idea being put around on a comment thread on one of the national newspapers online and thought that Buckingham might benefit from a Support group if things did move along to a ‘Lockdown’. I’m pleased to say that I was correct. How many people do you and your network help each week? The numbers at this stage are hard to tell because people are now going direct to those that have helped them previously so no longer come directly to me for assistance. I still have around 5-10 individuals or couples that call me on a weekly basis and request assistance. What are the most popular requests? Prescriptions. The people that were and in some cases still are shielding are the ones that need medication to get by so that is the most prominent request. What have you had to do for vulnerable residents? We’ve cut grass, collected shopping, collected prescriptions, fed a tortoise, lent an ear, given people company and pointed people in the direction of the amazing Emergency Food Bank.

Do you have a list of people who are available to help? If so, who are they? There is a list pinned to the top of the Support Network Facebook page. This is a list of numbers and the street they live on for people to call directly if they are close to them. The amount of active volunteers has gone down as people return to work etc but those that continue to be there for the network and I know who they are and I am grateful to those people. Is your group just for Buckingham Residents only? Simply put, no. We have helped people in Gawcott, Steeple Claydon and as far out as Little Horwood. Will you keep the group going for as long as the Coronavirus is here? Yes and once Covid has gone completely I would like to think that people can turn to the group for Support beyond the virus. The sense of community really came to the forefront once the outbreak took hold and that is something I would love to see continue as a normality. Is there anything else you want to tell us about the group? Just to thank everyone for their kind words to me about the group. I didn’t set out for any personal recognition, I just wanted to bridge a gap between those in need and those that can help. We have achieved that and that is something we as a community should be proud of. Finally once more a huge thankyou to the volunteers still picking up prescriptions and everything else that comes with what we are doing here. It wouldn’t work without that small band of people.

Established in 2019 as a dog walking company, Woof Times has expanded rapidly to become a one-stop-shop for all your pet service requirements. 2020 saw Woof Times incorporate dog grooming, dog walking, home sitting/pet visits, pet taxi services, as well as gaining a home boarding licence. The dog walking team offer one-to one walks, rather than walking in packs. Dogs get exclusive care and attention this way, with photo updates and flexible walk times to suit both the dogs, and their owners’ routines. Having recognised the demand for a wider range of pet services, Woof Times started operating their grooming salon from Steeple Claydon. Staffed by City and Guilds qualified groomers, the team is capable of grooming any breed, any style, any sized dog and using any grooming technique. Offering everything from puppy introduction grooms, clip-offs, ‘teddy bear’ trims, scissor trims, full handstrips to de-sheds, the Woof Times grooming team have the equipment and skills to accomplish beautiful grooms every time. Beautiful grooms deserve beautiful smiles so the Woof Times salon has on-site ultrasonic teeth cleaning equipment as an additional service. The amazing feedback and demand for these grooming services, has meant that the Woof Times grooming team have quickly outgrown the current salon space and are in the final throws of fitting out a custom built salon in Hogshaw. Woof Times are thrilled to announce that the new salon will be opening on Friday 7th August, offering the same professional grooming services, alongside a new retail zone. When the team picked the location for the new salon, they wanted to ensure that they were able to reach out to both new and existing customers. Woof Times offer a collection and drop-off service for all four-legged visitors to the salon. Woof Times looks forward to welcoming all of their customers, and future customers to their premises. Staff will be ready and waiting to answer any questions you may have about any of the Woof Times services.
