SAY HELLO TO CORNWALL PLACE KITCHEN You’d have to be crazy to start a new business during the height of lockdown in a pandemic, wouldn’t you? Well, back in November, that’s exactly what we did when we took the keys to a former barber’s salon near to Waitrose in Buckingham and opened the doors to Cornwall Place Kitchen, a coffee shop and chef’s table experience in Buckingham. Since then, we – Sarah, George and the team – have learned so much about Buckingham, about running a business of our own and about how important it is to give people an experience that they can enjoy during these times. If you’ve been able to visit us, you’ll know that we’ve brought our range of hot and cold drinks to Buckingham, with homemade cakes and food to order, such as our amazingly popular French toast and brunch rolls, but that’s only a small part of what we do. Having worked for many years in catering and hospitality, we’re passionate about excellent service, local high-quality ingredients, operating in an environmentally sustainable way and ultimately creating an unforgettable experience for our customers that they will remember and want to share with their friends and family. When we took the keys to our venue on Cornwall Place, we worked with Willow Kitchens and Interiors to fit out a bespoke kitchen and private chef’s table experience upstairs for 10 people. Unfortunately, the everchanging restrictions around social gatherings have meant that we haven’t yet had a chance to welcome people to our place, but instead we’ve been able to bring the same experience

to our customers’ homes in a few ways. Even during lockdown, we’ve been able to create and provide some of our dishes as a hot takeaway service; this has been extremely popular on Saturday evenings, with customers local to us collecting their orders to enjoy at home. Some of our most popular menu options – which we update regularly to reflect seasonality – include our Pork Belly, Mushroom Suet Roll, or Beef Ragout with celeriac mash. While it still remains impossible for us to welcome customers to our place, we believe that our ‘At Home’ service is the next best thing, as this way you can enjoy your food with no shopping, very little washing up and no food wastage. Taking inspiration from our taster menu experience that will soon be our full menu, we’ve adapted some of our dishes so that we do the majority of the preparation, then we deliver everything you need so that you can finish the dishes at home, in your own kitchen – with full instructions, of course. The menu is designed for you to be able to take your time, have some fun and eat the restaurant food we are all missing. Whether you’re looking for a night in meal for two, a weekend brunch or midweek pie, our ‘At Home’ menu has something for everybody, including optional extras such as a selection of sweet treats, beers or cocktails. So far, our best opportunities to showcase our ‘At Home’ selection have been New Year’s Eve and Valentine’s Day, where on both occasions we’ve had great feedback and plenty of bookings with customers from Towcester, Aylesbury and Newport Pagnell. We can’t wait to welcome you to our place but in the meantime we’d be just as excited to bring our passion for local, high-quality food and drink to you. A COVE OF HIDDEN TREASURES... A CHARITY SHOP WITH A DIFFERENCE Florence Nightingale Hospice Charity is thrilled to bring a different kind of shopping experience to the town of Buckingham. If you are a fan of unique and authentic items then you’re going to love our new shop brimming with vintage and retro gems. “The shop is a charming Grade 2 listed building, and so it seems fitting to try a vintage offer in such a lovely location. We also know that there is a keen interest in vintage and collectable items in and around Buckingham and Winslow, so what an ideal place to try our first specialist vintage shop”, says Lily Caswell, Head of Retail at the Charity. The shop will offer a range of fashionable preloved vintage and retro clothing, shoes, accessories, books and toys and a selection of classic and timeless homeware. So, what made us decide to open a completely different style of Charity shop? Lily explains, “As a Charity, we are lucky to receive many fabulous donations, including lots of vintage items such as clothes, accessories, books and collectables. Having had success selling vintage items in our Winslow shop, we were keen to open a specialist store which would be a perfect place to sell all the unusual, collectable, vintage and antique pieces that we are so kindly given. We hope that it will become a destination for thrifters, treasure hunters and collectors looking for something special.” Our new Florence Nightingale Hospice Charity Shop is located on 23 Bridge Street, Buckingham, MK18 1EL and will be open

from 9am – 5pm Thursday to Saturdays, with the shop officially opening as soon as the Government restrictions are lifted. We are also on the lookout for a number of volunteers to join our fantastic retail teams - could that be you? If you are friendly, motivated, and want to help your community by pledging your time, then we would love to hear from you. Working in our Charity Shops is a great opportunity to meet new people as well as gain new skills and every day is different! Lily says, “For the Hospice, the money that our shops raise is essential, and we are really looking forward to opening the doors and welcoming our customers to shop with us again”.

APPLE HOMES BECOMES PART OF THE ALEXANDER & CO GROUP We’re delighted to share that local Buckingham-based estate agent, Apple Homes, has become part of the Alexander & Co Group, one of the south-east’s largest independent estate agents. industry on track to hit approximately 1.1 million housing transactions completing in 2020 (data has yet to be released by Land Registry), which is very similar to previous years. We expect that these levels will continue throughout 2021.

Despite the strain of the pandemic, the property industry at this time remains strong, with the lettings market continuing to perform particularly well. The sales market - thanks the stamp duty holiday - has far exceeded our expectations, given that all property sales were halted in March last year for about two months. Interestingly, the pandemic has led to shifts in what people are looking for in their new home. Rightmove has recorded increased searches for properties with gardens and with homeworking looking like it’s here to stay, many potential buyers are also looking for an extra bedroom or garage space to use as a home office.

Here at Alexander & Co, we will be looking to extend our reach across the local areas, continuing George’s strategy of acquiring businesses and incorporating them into the Alexander & Co name, including Apple Homes and Ella Homes, who will both become Alexander & Co offices by summer this year. FASTING FOR HEALTH Have you ever tried fasting? It’s f ree, comes with numerous health benef its and is actually fairly easy to do.

FASTING IS NATURAL Humans have evolved to survive without eating during times of food shortage with no ill effects, but many view being hungry as ‘bad for you’ or even something frightening. Since advertising was invented, we’ve been conditioned (by food manufacturers) to eat three meals a day (plus snacks), even in the absence of hunger. However, when we don’t eat, physiological changes occur, boosting cells’ energy production, improving brain health, reversing Type 2 diabetes and even slowing the ageing process of cells. Fasting has also been found to reduce blood pressure, cholesterol and triglycerides - risk factors for cardiovascular disease.

WHAT HAPPENS DURING FASTING? When we eat, our body produces insulin to control the amount of sugar in our blood. If we constantly graze, insulin is continually released into the bloodstream. When we stop eating, blood sugar and insulin levels drop, reversing insulin resistance, a precursor for Type 2 diabetes (when insulin is high and cells have become insensitive to its action). Fasting also triggers a process called

‘autophagy.’ The word means ‘selfeating’ and is essentially the body’s waste disposal system - where dead, old and worn out bits of cells as well as invading bacteria and viruses are hoovered up and cleared out before being recycled. Autophagy occurs all around our body, including in our brain and helps protect cells from accumulated waste products which would otherwise affect their functioning. Scientists have discovered that animals fed every other day lived significantly longer – more than 80% longer – than those with unrestricted access to food. So, it seems autophagy helps prevent body cells from ageing. It can also help manage chronic inflammation, believed to be at the root of most chronic diseases Constantly eating and snacking doesn’t allow your body a chance to clean itself with autophagy.

TYPES OF FASTING There are many different types of fasting and you don’t need to fast for a long period to experience health benefits. Autophagy kicks in after around 16 hours without food and we already fast for around 12 hours overnight. By eating our evening meal earlier and breakfast later, it becomes

relatively easy to extend your overnight fast to 16 hours, meaning you’re eating during an eight-hour window. For example, breakfast at 9am and evening meal at 5pm, or breakfast at 10am and evening meal at 6pm. This is called time-restricted eating, and many people adopt this approach two or three times weekly. You’ll be surprised how quickly your body adapts to a new eating regime. Most people practising time-restricted eating report they don’t feel hungry. This is because your hunger hormone, ‘ghrelin’, declines when you fast.

FASTING MADE EASY Choose a fasting regime to work with your lifestyle. Reduce tea and coffee beforehand, to avoid caffeine withdrawal symptoms during your fast.

Slowly increase your fasting window by shifting the times of your mealtimes little by little, helping your body adapt to periods without food. During a fast, drink plenty of water as your liver and kidneys will want to seize the opportunity to flush out waste products. Before you embark on any type of fasting, it’s best to speak to a practitioner to make sure fasting is suitable for you, particularly if you suffer from chronic health issues. Your GP should always be informed if you have any health condition prior to fasting.

SPRING HAS SPRUNG Or I hope it has as I sit here on a very grey and wet January day, dreaming of Spring and the magic that is on the way...

LET’S TALK 2020 We were all very glad to see the back last year and I feel 2021 needs to work harder to make up for it. I really hope you are all keeping well and finding ways to struggle on. The evenings will be getting lighter and I sincerely hope that the weather has dried up by now and we are able to get out in our gardens. I suggest planting lots of colour, just anything you like. There are no rules so a riot of shapes, heights, colours and scents will cheer the soul. Growing from seed takes patience and if you don’t have it then pop to the garden centre and see what takes your fancy. Buckingham Garden Centre and Preston Bissett Nurseries are open (January) and I hope many more will be by the time this goes to print.

NEWS FROM LOLLY AND THE HARE Gardening was such a saviour to so many last year, I found that it was the only thing keeping me sane and the Winter has been a struggle. But, hopefully by now, my Anemones and Ranunculus are grown and ready to cut and sell, the Narcissus and Tulips too. So colour has returned, beauty and promise are all around and all the hard work I have put into this new

I have always loved being outside and noticing the wildlife that plants and flowers bring into our gardens. As a youth I was much happier surrounded by my pets and plants than anything else, this has never changed. Now at the age of 40 I think I’m where I’m meant to be; surrounded once again by plants and pets. For the last 14 years I have been a florist, I have owned my own shop, been studio based and freelanced for some amazing florists, having the opportunity to work at amazing venues all over the country. During the last 5 years I have had the space to grow my own flowers, often adding the perfect bloom into my floral displays. Right now a new chapter is opening up and there is much more flower growing in my future. These articles will be my thoughts and observations of the garden as it grows and changes.

TIME TO PLANT Get sowing all the seeds you can. If like me, you have an enormous collection of seeds, deciding what you have room for will be an issue. I seem to have developed a lockdown seed problem! It is the perfect time to start sowing seeds in the greenhouse, under a cold frame or even on the windowsill, ready to plant out after the last frosts.

FOOD OR FLOWERS? I always think I want to grow vegetables to eat but as I plant more and more flowers, the veg take a back seat. This year I may try to add something lovely to eat on to the plot. I’m currently sowing a second round of Sweet peas, Stocks and Snap Dragons. The

first sowings are looking wonderful in the Polytunnel.

WHAT TO SOW Starting a flower patch from scratch? Grow a lacy flower such as Ammi or Daucus, a focal flower such as Roses, Cosmos or Dahlia and then the spire shapes of Delphinium, Lupins or Snap Dragons. Sow some for each season, check seed packets for growing and flowering information.

THE BOOKS THAT GOT ME THROUGH LOCKDOWN Hi! I’m Kate and I’m here to talk to you about all things food in

Buckingham and the surrounding areas. You can also follow me on Instagram and Facebook for foodie updates @kate_a_edwards Well, at the time of writing this we’re 4 weeks into another national lockdown and eating out in actual restaurants is just a distant, but fond memory. So with this edition of Community Contact I thought I’d bring you something a bit different . . . the cookery books that got me through lockdown!

Simply by Sabrina Ghayour This is the latest offering from the fabulous Sabrina, the chef that has bought us other gems such as Feasts and Sirocco. Her recipes are from a Persian background, but generally don’t contain any ingredients that you couldn’t pick up in Tesco. If you’re a bit tentative about trying Eastern recipes and Ottolenghi baffles you, then Sabrina is the gateway chef for you. What’s extra brilliant about Simply is that I’m yet to make a recipe from it that can’t be whipped up in a few minutes with minimal effort. My favourites recipes from it so far have been: • Smoky Beef, Potatoes & Pea Pan Fry with Eggs & Yoghurt (pictured) • Yoghurt & Spice Roasted Salmon Wraps • Tepsi Kebap (kebab baked in a frying pan)

Jamie’s Ministry of Food by Jamie Oliver I have to say, I’ve not been overwhelmed with Jamie’s recent releases. Too much lemon and yoghurt and unnecessary quirky-ness that just makes the recipes a bit awkward to make. I do LOVE a classic Jamie recipe though, and this book is full of them. This is the book that taught me how to cook a roast, make my own salad dressing and cook perfect rice. There are loads of recipes in this I go back to time and time again, here are a few of them: • Sizzling Beef with Spring Onions and Black Bean Sauce • Sweet Potato & Chorizo Soup • Vanilla Cheesecake with a Raspberry Topping

What Mummy Makes by Rebecca Wilson Follow @whatmummymakes A big part of lockdown for me has been weaning my son onto solids. All of this started when he was 6 months old, exactly when I was starting to introduce him to solid foods. Lockdown has given me a bit more time to really get stuck into trying him on new and interesting foods, and there are some great books out there. But this beauty by Rebecca Wilson is the best I’ve found (give her a follow on Instagram too if you’ve got a baby or toddler, she’s FULL of great ideas). The recipes are simple, easy to make, and not so “out-there” that your child doesn’t actually want to eat them! Better yet, all the recipes are suitable from 6 months, so you can get them started on foods you can all eat as a family from the get-go. I’ve still got so many recipes I want to try from this book, but the winners so far have been: • Cheesy Broccoli Pasta (pictured)

Skinny Kitchen Secrets – Laura @skinnykitchensecrets Not a book, but a fantastic blog and Instagram account. Laura is a Weight Watchers member, but don’t let that fool you. The recipes on her website are utterly delicious and usually packed full of veg too. When I can’t be bothered to trawl through my (embarrassingly extensive) cookery book collection for inspiration, I always find myself gravitating to her website for recipe ideas. She’s also in the process of updating her website to include calories and macros for all the recipes too, so this will be a great resource for all you dieters. Well, here we are, into the second month already and I hope this finds you all safe and well. Its hard to believe we are almost a year since the pandemic really began in the UK. I looked back at the TP article this time last year and it was all about how to deal with things that did not go to plan….how ironic is that?! Food is something we can use to bring us joy and boy do we all need some of that now. With half the hospitality industry closed and the shopping experience more restricted, its not so easy to be excited about food but there are so many creative ways to still enjoy those treats when we feel like a little break. Over the months, Leo and I have enjoyed various treats - local Sunday Roast click and collect, an online cook-a-long evening with James Martin, a fresh dough make-a-pizza-at-home kit delivery, decorate your own Krispy Kreme doughnut delivery and who knows what else by the time you read this! February and March are always great months on the culinary calendar – Chinese New Year 12/2, Valentine’s Day 14/2, Pancake Day 16/2 and Mothers’ Day 14/3. We may not be able to share those with others this year, but we can still indulge ourselves at home, even if it is just to make ourselves feel better. ‘Fake-away’ is a relatively new term, which I think is great, so I have included a tasty recipe to celebrate the year of the Ox or any other day you feel like it. Valentine’s Day would not be complete without chocolate (for most of us!) so check out the amazing (and naughty) breakfast idea… I am definitely giving that a go. Many of us will not be able to see our Mums, God Mums, Grandmothers’ again this year for Mother’s Day so how about making her something suitable to send in the post as a surprise? I have included a recipe for a tasty treat that keeps well, will travel easily and is light in weight so good on postage! With more of our communities getting their vaccinations now, let’s hope by the next edition we find ourselves in easier times. Twyford Pantry Chicken and Mushroom Fakeaway (serves 2)

Ingredients 2 chicken breasts diced 6 spring onions chopped 1 onion sliced 1 red pepper deseeded and sliced 1 green pepper deseeded and sliced 200 g button mushrooms sliced 4 tbsp soy sauce 2 tbsp oyster sauce 2 tbsp rice vinegar or white wine vinegar with a little sweetener added 1 clove garlic crushed ½ tsp fresh ginger minced ¼ tsp ground black pepper 250 ml beef stock 1 handful baby corn chopped 1 handful broccoli cut into small florets low calorie cooking spray

Method Heat up a wok or decent sized frying pan, and spray with low calorie cooking spray. Add the onions, chicken, peppers, broccoli, garlic and ginger and cook until they start to soften.

Add the spring onions, baby corn and mushrooms and cook until they start to colour slightly. Add the soy sauce, oyster sauce, rice vinegar and black pepper. Pour in the stock and stir well and allow to simmer on a high heat until the sauce reduces

slightly, lightly mash with a fork.

Ingredients 2 thick slices of Brioche/Quality thick white bread 1 large egg 2 tbsp milk 1 tsp pure vanilla extract/paste 2–3 tbsp Nutella 1 bar dark chocolate broken into squares 35g cup of mixed berries 1tbsp white sugar 1tsp icing sugar 1tbsp unsalted butter Greek yoghurt and Maple Syrup (optional)

Method Mix the berries and white sugar in 60ml water and leave the mixture to simmer (stirring occasionally) over a low heat. Once the mixture has reduced
