SAFE LIFTING WITH THE HOOKA FROM KJN Well known as the premier plant and tool hire company in this area, Marsh Gibbon based KJN Services has recently added a unique machine to their fleet, the ‘Hooka’ – tracked micro forklift – available for you to hire throughout Buckinghamshire, Oxfordshire and Northants. This innovative piece of equipment combines the features of a micro-forklift, spider crane and tracked dumper all in one machine! It has been specifically designed to revolutionise the safe lifting, shifting and installing of bulk building materials, steel beams and machinery. At only ONE metre wide, it has been size matched to pallets and bulk bags, but can also transport and install garden statues, pizza ovens, street furniture, root ball trees and other materials. Above all, the Hooka’s patented Load-lock™ system completely eliminates the inherent instability of traditional forklifts by transforming dangerous suspended payloads into safety ballast for the machine. This allows the Hooka to be extremely compact, lightweight, and have turn on the spot manoeuvrability. This provides unrivalled delivery access into the heart of sites, thereby minimising manual handling, yet the machine still lifts and shifts loads of up to 1.5 tonnes with complete safety! Additionally, the Hooka runs on a large footprint rubber track base which gives it outstanding stability, low ground pressure and enables it to travel on existing infrastructure including paving and lawns without causing damage – making it ideal for town centres and parks as well as traditional building

sites, landscaping projects and domestic gardens. Furthermore, as the Hooka can reach the places no other machine can, it allows materials to be moved to point of use which covers off the employer’s legal duty to minimise manual handling. The Hooka is designed and built in the UK and represents a quantum leap forward in best practice – saving time and money and reducing health risks and liability. KJN customer Chris Wilkinson of Grendon Underwood based Garfield Developments comments “We’ve used the Hooka to install steel lintels on building works. Its compact size and simple to use controls makes the work safer and quicker than other methods. It’s ideal for the sites where we have limited access and room to work ”. BEAT THE WINTER BLUES With Summer behind us, the coming months of shorter days and cooler temperatures can leave many of us with the Winter blues or even worse, Seasonal Affective Disorder (SAD) - with symptoms including fatigue, depression and social withdrawal. We also tend to put on weight as the nights draw in as we reach for foods to comfort us. Our modern lives mean most of us no longer work outside as we once did, which is fine during the Summer months when there are more daylight hours, but during the Winter many of us are going to and returning from inside, desk-bound jobs in the dark. Our day is no longer dictated by dawn and dusk as electric light allows us to carry on well into the night. As a result, we’re no longer as effective in regulating our own body clock and are suffering more of the symptoms associated with light deficiency.However, the news isn’t all gloomy like the weather can be! Look to these key food choices and lifestyle tweaks to help boost mood and get through the winter feeling a bit brighter and healthier. Carbohydrates - we tend to eat more in colder weather to keep us warmer but don’t automatically reach for bread, white rice, pasta, sweets and cake. Simple carbohydrates can provide temporary feelings of euphoria (hence the phrase ‘comfort food’) but can ultimately increase feelings of anxiety and depression. Instead, stick to wholegrain options for breads and pastas and think of bean and lentil-based stews and soups for comfort. Oily Fish - research tells us that Omega 3 fats may help with depression. Look for oily fish such as wild

12

salmon, mackerel, sardines, anchovies, and trout. If you’re vegetarian (and even if you aren’t) consider flax and chia seeds, walnuts, kidney beans, wild rice, cabbage and dark berries. Or consider a good supplement with a high EPA and DHA content. Folic Acid - This B vitamin is used by the body to create serotonin, a feel-good chemical that helps us feel calm and relaxed. Reach for dark leafy greens, beans, whole grains, oranges, sunflower seeds and lentils. Vitamin D - an important nutrient for brain function and low levels may be linked to increased risk of depression. Our body produces vitamin D from the sun, but we won’t have adequate exposure during the winter months and it can be difficult to get this vitamin from foods, especially for vegetarians. Egg yolks, oily fish and some mushrooms such as chanterelles are good sources but taking a Vitamin D3 supplement is worth considering if your levels are low. Ask your GP to check. Magnesium - a mineral involved in mood regulation. Low levels are associated with oxidative stress and

OCTOBER - NOVEMBER 2019 increased inflammation, both of which are associated with depression. Go for avocados, nuts, seeds, legumes and whole grains. And good news! Good quality dark chocolate may help enhance mood and relieve anxiety. Look for choices with over 75% cocoa or raw cacao chocolate… and not the whole bar in one go!

Make your environment brighter - Open curtains, trim back tree branches, and sit closer to windows. For many severe SAD sufferers, sitting next to a light box for 30 minutes per day can be as effective as antidepressant medication.

In addition to food, make these small lifestyle changes to help keep spirits up through the darker months: Exercise - Recognised to improve symptoms of depression. Exercising under bright lights or even outside may be even better for seasonal depression. Add some upbeat music to improve mood even further. Get outside - Talking a walk when its cold and gloomy outside isn’t easy, but spending time outside can improve focus, reduce symptoms of SAD, and lower stress levels. Try to be outside as close to midday as possible. If you’re working, go for a walk at lunchtime. It’s often less depressing than watching a gloomy day from the inside.

The Twyford Pantry It’s hard to believe that we’re on the Autumnal countdown to Christmas already when it’s still the tail end of the late Summer weather we long for and it only feels like 5 minutes ago we were enjoying light fresh food rather than cooking rich warming dishes. The heating went on a little bit earlier than normal this year and I hear a colderthan-normal Winter is on its way so we may as well embrace it. However you spent Summer I hope it had a few highlights for you – mine included becoming Neil and Laura’s second son’s Godmum and buying our new home – hopefully by the time this arrives we will have moved in, whatever stage of renovation it is in – minus a kitchen that’s for sure so cooking will not be high on my list for a while! Thank you to everyone who supported and helped on the Twyford Pantry food stand at this year’s Twyfest Roc @ the Rec – hope everyone who came had a great time.

GLUTEN FREE CLEMENTINE YOGHURT CAKE - SERVES 12

Back to the food for this issue…. Like it or not Christmas will be with us and although we may not want to see it in the aisles or hear it on TV for a good while yet, we can always do some prep work. One of the best things on the make ahead list is the cake so this issue will give you 3 alternative ideas for Christmas Cakes – unless of course you prefer the same traditional recipe year after year – check out the Community Contact website for my Mother-In-Laws recipe that she sticks to…it is so good we asked her to bake it for our wedding cake too! Love Tina xx shops) 150g Greek yoghurt 1 tbsp orange blossom water Frosting 200g softened salted butter 500g sieved icing sugar 1 tsp vanilla extract 100g Greek yoghurt (room temperature)

Ingredients 4 seedless clementines (3 whole, 1 zested, 2 tbsp juice) 200g golden caster sugar 200g salted butter, softened 4 eggs 250g gluten-free self-raising flour 100g polenta 1 tsp baking powder ½ tsp xanthum gum (available in supermarkets, health

Method Put the whole clementines in a saucepan, cover with water, then bring to the boil and simmer for 35 minutes until the fruit is really tender. If the clementines won’t stay submerged, sit an old saucer or small lid on top of them to weigh them down. Drain the fruit, then whizz to a purée and leave to cool. When the purée has cooled, heat the oven to 180C/fan 160C/gas 4, butter the bases of 3 x 20cm cake tins and line with baking paper. Put the sugar and butter in a large bowl and beat until light and fluffy. Whisk in the eggs, fold through the flour, polenta, baking powder, xanthum gum, yogurt, orange blossom water and 2 tbsp clementine juice with the

175ml/6fl oz honey 125ml/4fl oz coffee liqueur 2 oranges, juice and zest only 1 tsp mixed spice 2 tbsp good quality cocoa TO MAKE THE FROSTING AND ASSEMBLE THE CAKE 3 free-range eggs, beaten Beat the butter with half the icing sugar and vanilla until 150g/5¼oz plain flour smooth. Beat in the remaining icing sugar until smooth, 75g/2½oz ground almonds then briefly beat in the yogurt in three batches – don’t ½ tsp baking powder overbeat or the icing may split. Spread two of the sponges ½ tsp bicarbonate of soda with a thick layer of icing and put in the fridge to firm up for 20 minutes. Stir the clementine zest through the Frosting remaining icing. Sandwich the two chilled layers, with 25g/1oz dark chocolate covered coffee beans the plain third on top. Method Preheat the oven to 150C/130C Fan/Gas mark 2. Line the sides and bottom of a 20cm/8in, 9cm/3½in deep, round loose-bottomed cake tin making sure side are twice as high as tin. Place the fruit, butter, sugar, honey, coffee liqueur, orange juice and zest, mixed spice and cocoa into a large wide saucepan. Add the eggs, flour, ground almonds, baking powder and bicarbonate soda, and mix well with a wooden spoon or spatula until the ingredients have combined. Carefully pour the fruit cake mixture into the bake-o-glide lined cake tin. Transfer the cake tin to the oven and bake for 1¾-2 hours, or until the top of the cake is firm but will has a shiny and sticky look. At this point, if you insert a cake tester into the middle of the cake, the cake should still be a little uncooked in the middle. Place the cake on a cooling rack. Once the cake has cooled, remove it from the tin.

LAST MINUTE FROZEN CHRISTMAS ICE CREAM CAKE - SERVES 8

Ingredients 800 gram square dark fruit cake 550 gram frozen mixed berries 1 litre good-quality vanilla bean ice-cream 2 tablespoon brandy or rum 1/2 teaspoon ground nutmeg 1 1/2 teaspoon finely grated mandarin or orange rind 40g dry-roasted almonds, chopped coarsely Handful mini meringue drops

Method Grease a 20cm springform pan; line base and side with baking paper, extending paper 3cm beyond rim. Cut fruit cake into three slices horizontally. Place a square slice in the centre of the base of the pan. Using remaining slices, trim them to fit the gaps; reserve trimmings. Using your hands, flatten fruit cake to form a level base without gaps. Cut trimmings into small pieces. Remove approx 100g berries from the freezer, cut any strawberries in half stick these to inside sides of the tin – sticking with ice-cream if needed. Place tin in freezer for 10 mins. Spoon remaining ice-cream into a large bowl; stir in brandy, nutmeg, rind and almonds and stir to mix. Spoon one-third of the ice-cream mixture into the pan; scatter with one-third reserved fruit cake, smooth level with a spoon. Repeat with remaining ice-cream mixture and fruit cake. Freeze for 4 hours or overnight until firm. To serve, transfer cake to a serving plate. FIREWORKS AND PETS - ADVICE FROM THE BLUE CROSS Animals have very acute hearing. Loud bangs and whistles may cause them actual pain in their ears. But by following these simple guidelines your pet need not suffer. SMALL PETS AND FIREWORKS Rabbits, guinea pigs, hamsters, gerbils, mice, ferrets and birds all need to be treated with special care when fireworks are being let off. These animals are easily frightened. Blue Cross advises that owners of such types of small animal should follow these precautions: • Hutches/cages and enclosures should, if possible, be brought into a quiet room indoors, or into a garage or shed. • Give your pet extra bedding to burrow into so it feels safe. • If you cannot bring your pet’s hutch inside, you should turn its enclosure around so that it faces a wall orfence

instead of the open garden. • Cover any aviaries or hutches with thick blankets or a duvet to block out the sight of the fireworks and deaden the sound of the bangs, but make sure there is enough ventilation. DOGS, CATS AND FIREWORKS • Always keep dogs and cats inside when fireworks are being let off • Make sure your dog is walked earlier in the day before the fireworks start • Close all windows and doors, and block off catflaps to stop pets escaping and to keep noise to a minimum. Draw the curtains, and if the animals are used to the sounds of TV or radio, switch them on. • Ensure dogs are wearing some form of easily readable identification (ID) – even in the house. They should have at least a collar and tag. • Prepare a ‘den’ for your pet where it can feel safe and comfortable –

perhaps under a bed with some of your old clothes. They may like to hide there when the fireworks start. • Let your pet pace around, whine, miaow and hide in a corner if they want to. Do not try to coax them out – it’s just trying to find safety, and should not be disturbed. • Stay calm, act normally and give lots of praise for calm behaviour. It’s OK to cuddle and stroke your pet if it helps them relax, but if they prefer to hide under your bed, then let them do this. • Avoid leaving your pet alone during such potentially upsetting events. • Don’t tie your dog up outside while fireworks are being let off, ie outside a shop while you pop inside... • Never take your dog to a fireworks display. Even if they doesn’t bark or whimper at the noise, it doesn’t mean they are happy. Excessive panting and yawning can indicate that your dog is stressed.
