FEBRUARY - MARCH 2020

WELCOME TO THE FEBRUARY / MARCH EDITION OF COMMUNITY CONTACT MAGAZINE AND A VERY HAPPY NEW YEAR TO YOU ALL! A few people recently have been asking how our new addition to the family is as I have clearly forgotten to mention in our magazine how he is doing (baby brain!). Well our second baby boy, George Dennis Massey, arrived rather quickly on 7th April, his due date and also his late grandfather’s birthday which is really special! Total time of labour was around 40 minutes and he was born in the car outside the Methodist church in Waddesdon! Unfortunately he had a short stay at Stoke Mandeville’s amazing NICU, but we were soon home and getting used to being a family of four. Well as I write this he is turning 9 months old! He’s a real character and will be on the move any day now! Can you believe we are celebrating our fifth Birthday! Yes that’s right! We have been publishing our local bi-monthly magazine for five years! I can’t quite believe it. So thank you to each and every one of you who read our magazine In this issue you can see my review of the Energy Effect Studio as I embark on trying to get my pre-baby body back! There’s also articles from Pest Force UK, gardening advice with Twigs, Coles Book Review and much more! If you want to share any exciting news you have with the local community we will do our best to include it in our magazine or on our social media – simply email me laura@communitycontact.co.uk

HEALTHY GUT, HEALTHY YOU! Hippocrates was a very clever Greek physician. Many of you will already be aware of one of the more famous quotes attributed to him – ‘Let food be thy medicine and medicine be thy food’; a tenet that all Naturopathic Nutritionists follow. However, he also said that ‘all disease begins in the gut’. Who would have thought that over 2000 years later scientists would be discovering with more certainty that the make-up, diversity and health of the colonies of bacteria within our large intestines could in fact be linked to a number of chronic diseases? For years, we thought of bacteria as organisms to

Have you been to the Energy Effect Studio lately? At the start of January I started getting back into exercise after having a year off whilst pregnant with George, and then with raising a baby and a toddler I’ve found it difficult to make time for me! The girls at the Energy Effect Studio really make you feel welcome, especially if you are a bit nervous, like I was at the thought of getting back into exercise! My favourite classes so far are Energy Glow and Toning Blast! Energy Glow is a cardio work out / dance work out to club music. It’s fantastic! Not only does it keep you fit, but you get to dance to all of your favourite dance music for an hour, so in turn its really good for your mind too! The class is an hour long and is at 6.45pm on a Wednesday and Thursday evening. Toning Blast is great! I think if you want to get back into fitness and have your cardio sorted but need a strengthening / toning class then this is the one for you. The class has a cardio warm up, it works your

legs (SQUATS!), you use free weights to tone your arms, then some core exercises. It’s a corker! There are lots of other classes also available – see their facebook page for more details! But for beginners I would definitely recommend the above classes. I am currently trying to work up to Piloxing (a class that incorporates pilates and boxing) and Kettlecise, the best all over body work out! I attended these classes before I fell pregnant with George and was really starting to see the results! Classes are available on a pay as you go or membership basis, and if you’re looking for some one to one personal training sessions then Kirsty and Lisa are also level 3 personal trainers! Summer is just around the corner, so what are you waiting for! Go and give the Energy Effect Studio a go!

The Twyford Pantry How is your New Year going so far? We’re already a month in to 2020 – are you someone who pays no attention or who places high expectations on what’s to be done and achieved? So many of us seem to put more pressure on ourselves in the first month of the year (especially a new decade) whereas it really is just one month of 12 on the calendar when you look at it. By month 2 reality has set in and we realise it’s better to just make small changes throughout the year! Whether you’ve had a bumpy start, or a great start, have an exciting time ahead or things you’d rather not think about there will always be a tomorrow and a yesterday no matter where we are and what plans we have. Its how we deal with things when they don’t go to plan that matters –

CHOCOLATE PRALINE PANCAKE CAKE – SERVES 6-8

Ingredients : For the pancakes 140g plain flour 200ml whole milk 2 eggs 25g unsalted butter, melted, plus a little extra for greasing sunflower oil, for greasing For the praline: 100g caster sugar 100g blanched almonds ½ tsp sea salt flakes

42

like us and our kitchen…yep we’re still on a trestle table with a portable hob and a micro-oven, but we’re making the most of it – less cleaning! It got me thinking about food and what happens when things don’t go to plan – it’s either disastrous or can be rescued so here are some dishes and hints that might come in handy sometime. With some culinary dates on the calendar coming up – Valentine’s Day 14/2, Pancake Day 25/2, and Mother’s Day on 22/3 I have also included a gorgeous Chocolate Praline Pancake Cake that can be used for any one of the celebrations – either way you spend any of them, happy planning….and happy creative recovering (if you need to!). Tina x For the chocolate sauce: 250g dark chocolate, finely chopped 50g unsalted butter 175ml whole milk 125ml double cream 2 tbsp brandy or dark rum 50g light muscovado sugar whipped cream, to serve Method First make the pancakes. Sift the flour with a pinch of salt into a medium-size bowl and make a well in the middle. Mix the milk and 100ml of water together. Break the eggs into the well and start whisking slowly. Add the milk and water in a steady stream, whisking constantly and gradually incorporating the flour as you do so. Whisk until the batter is smooth and all the flour has been incorporated. Set the batter aside to rest for 30 mins, then whisk the melted butter into the batter. Heat the pan over a medium heat. Very lightly grease the pan with melted butter. Make the pancakes using about 2tbsp per pancake. Lightly brush a baking sheet with sunflower oil. Tip the caster sugar into a medium-size saucepan, add 2-3 tbsp

FEBRUARY - MARCH 2020 of water and set the pan over a low-medium heat to allow the sugar to slowly dissolve into the water. Bring to the boil and continue to cook until the syrup becomes amber-coloured caramel. Working quickly, tip the blanched almonds and salt into the pan and continue to cook for 30 secs-1 min until the caramel turns deep amber and the almonds are toasted. Tip the praline onto the oiled baking sheet and leave until completely cold and hardened. Break the praline into chunks and whizz in the food processor until coarsely chopped.

• Crumble into a glass bowl, pour on little sherry/ amaretto etc, top with fruit, shop bought custard and some cream – trifle instead of cake! Use 2tsp baking powder to 150g flour if you find your self-raising flour is out of date or empty • Cake is uneven or catches on the edges Made a soup too salty? • Drop in a peeled raw potato – cook for further 15 mins or so and remove – it will have absorbed the excess salt

To make the chocolate sauce, combine all the ingredients Burnt a sauce or stew for dinner tonight? in a heatproof bowl set over a pan of barely simmering • Don’t scrape the bottom! Transfer to a new and- drop water. Stir occasionally until smooth and silky. Remove in a peeled raw potato (useful things potatoes!) and from the heat and cool to room temperature. set aside for 15 minutes – it should absorb the burnt flavour Heat oven to 180C/160C fan/gas 4. Lay one pancake in • You could also try adding squeeze of lemon juice, the bottom of a 20cm springform tin and spread over 1 splash of sherry or madeira or a tin of chopped tbsp of chocolate sauce. Scatter with chopped praline tomatoes if it goes with the dish and top with another pancake. Continue in this manner until you have used all 12 pancakes, topping the stack Overcooked mushy pasta? with a pancake. • Drop it in ice water or run a cold tap over it for few minutes (save water for the garden) – this will contract Cover the tin with foil and bake on the middle shelf of the starch. Then reheat in a tomato sauce – the acid the oven for around 20 mins or until hot through. Gently will perk it up further. warm the remaining chocolate sauce, cut the cake into • If it is really beyond eating as a pasta dish then drop it wedges and serve scattered with the remaining praline in soup to bulk it out into more of a minestrone chocolate sauce, and a bowl of lightly whipped cream alongside. Made mushy rice instead of fluffy rice? Don’t waste it, just invent another course! source: www.bbcgoodfood.com • Add some cooked bits of meat or prawns, roll into little balls and either pan fry or wrap in wonton wrappers and deep fry or steam

KITCHEN HACKS AND TIPS

Baked a cake and it didn’t rise- friends/family arriving for afternoon tea? • Turn it into an ice-cream bombe but cutting 2 thin horizontal slices – line a domed bowl, layer with ice-cream and jam then top with slice of cake – trim edges – put back in freezer and take out 5 mins before serving • Mash up the cake and mix with frosting or the butter cream icing you were going to make – roll into balls – coat in melted chocolate and nuts/coconut etc for cake pop treats

Overboiled beans past the tender stage? • Puree them with some of the cooking water or stock, add some herbs and turn into a delicious bean soup • Mash the bean and add sour cream or natural yoghurt to make a dip Dried out the chicken? • Chop it up, add to celery, mayonnaise, dried fruit, spices, walnuts to make a tangy chicken salad

What is Pancake Day / Shrove Tuesday Pancake Day, or Shrove Tuesday, is the traditional feast day before the start of Lent on Ash Wednesday. Lent – the 40 days leading up to Easter – was traditionally a time of fasting and on Shrove Tuesday, Anglo-Saxon Christians went to confession and were “shriven” (absolved from their sins). A bell would be rung to call people to confession. This came to be called the “Pancake Bell” and is still rung today. Shrove Tuesday always falls 47 days before Easter Sunday, so the date varies from year to year and falls between February 3 and March 9. In 2020 Shrove Tuesday will fall on February 25th. Shrove Tuesday was the last opportunity to use up eggs and fats before embarking on the Lenten fast and pancakes are the perfect way of using up these ingredients. A pancake is a thin, flat cake, made of batter and fried in a frying pan. A traditional English pancake is very thin and is served immediately. Golden syrup or lemon juice and caster sugar are the usual toppings for pancakes. The pancake has a very long history and featured in cookery books as far back as 1439. The tradition of tossing or flipping them is almost as old: “And every man and maide doe take their turne, And tosse their Pancakes up for feare they burne.” (Pasquil’s Palin, 1619).

In the UK, pancake races form an important part of the Shrove Tuesday celebrations – an opportunity for large numbers of people, often in fancy dress, to race down streets tossing pancakes. The object of the race is to get to the finishing line first, carrying a frying pan

with a cooked pancake in it and flipping the pancake as you run. The most famous pancake race takes place at Olney in Buckinghamshire. According to tradition, in 1445 a woman of Olney heard the shriving bell while she was making pancakes and ran to the church in her apron, still clutching her frying pan. The Olney pancake race is now world famous. Competitors have to be local housewives and they must wear an apron and a hat or scarf. Each contestant has a frying pan containing a hot pancake. She must toss it three times during the race. The first woman to complete the course and arrive at the church, serve her pancake to the bellringer and be kissed by him, is the winner. At Westminster School in London, the annual Pancake Grease is held. A verger from Westminster Abbey leads a procession of boys into the playground where the school cook tosses a huge pancake over a fivemetre high bar. The boys then race to grab a portion of the pancake and the one who ends up with the largest piece receives a cash bonus from the Dean. In Scarborough, Yorkshire, on Shrove Tuesday, everyone assembles on the promenade to skip. Long ropes are stretched across the road and there maybe be ten or more people skipping on one rope. The origins of this custom is not known but skipping was once a magical game, associated with the sowing and spouting of seeds which may have been played on barrows (burial mounds) during the Middle Ages. Many towns throughout England used to hold traditional Shrove Tuesday football (‘Mob Football’) games dating back as far back as the 12th century. The practice mostly died out with the passing of the 1835 Highways Act which banned the playing of football on public highways, but a number of towns have managed to maintain the tradition to the present day including Alnwick in Northumberland, Ashbourne in Derbyshire (called the Royal Shrovetide Football Match), Atherstone in Warwickshire, Sedgefield (called the Ball Game) in County Durham, and St Columb Major (called Hurling the Silver Ball) in Cornwall.

New opportunities with Pestforce... Last year Buckingham resident Trevor King was fed up of the day to day “rat race” of his job and made a huge change in his life. Trevor has always been keen on the outdoors life and being close with nature. He loves his country and outdoor pursuits and responded to an advert to join the UK Largest Franchise in Pest Control. Its more like being a crime scene investigator…. His new business is like being a crime scene investigator and he enjoys every single day. Every job he does is different, and he loves the challenge. Many people assume that pest control is just about the eradication of pests, and they’d be wrong. Its more like a series of CSI from the television.

and being responsible to the environment and other nontarget species. There will be many occasions when we simply need to keep the problem out (prevention) and others when we can use non-toxic products which is so much safer for everyone. And when it comes to insects like “bees” we will do anything possible to protect and save bee colonies. Too often customer freak out if they see a colony, but they are rarely dangerous. Our approach is to leave them or if necessary, we will relocate the colony as opposed to killing them. Pestforce has been established for some time and has built a reputation through the service it provides to customers. It has received over 5,000 online customer reviews and Trevor is now part of the network that Keeps customers Pest Free. In his own words “I just love the smiles on the face of my customers when I help resolve their pest problems.”

• how many are involved • What do they want? • And why?

During last year Trevor passed through the Pestforce training and was amazed at the level and depth of science and biology was involved. “I think people will be surprised to see how much knowledge you need to be a professional pest controller. You need to understand the biology of all pests, breeding cycles, feeding habits etc… so that you can find a suitable solution to a problem. I can also say that professional pest control is not all about eradication and using highly toxic products.”

Only once you have the “evidence” and “proof” can you then effectively provide the right solution. Modern pest control is much more about “pest management”

He now enjoys every single day working, in and around Buckingham, doing something that he Loves and now wishes he had made the move years ago.

You have to enter the “crime scene” and assess “who did it” and why. You have to identify the “offenders” and then build a “motif”;

pest problems? Over 4,000 Specialising in: • Mice and Rats • Moles • Birds and Proofing • Squirrels • Bed Bugs • Cockroaches • Bees and Wasps • Ants • Flies And many more...

Pestforce are here to help you!

HOW DOES THE CLOCK CHANGE AFFECT YOUR PET? Just like us humans, cats, dogs and rabbits have an internal clock that tells them when they should eat, sleep and wake up. It’s called a circadian rhythm and it’s governed by sunlight. Changes to this biological process can explain why they may seem lazy in the winter months or more energetic in summer, as their exposure to natural light decreases and increases. It’s one explanation if you think your pet has Seasonal Affective Disorder (SAD).

when these routines take place that can cause stress in our pets. What can you do to help your pet adjust? When the clocks change, it’s all about routine changes for our pets. When they suddenly have to wait an extra hour for breakfast (clocks back) or their exercise time is an hour earlier than normal (clocks forward) they have difficulty internally understanding it. It can upset their rhythm, causing psychological and physiological stress.

Changes in sunlight levels happen gradually throughout the year, but what about a sudden clock change that occurs overnight?

We can help them by adjusting their routines gradually over a number of days running up to the clock change. Start around a week beforehand and adjust feed, walk and wake times by ten minutes each day. By the time the clocks change your pet will already be on the new routine, reducing any potential stress.

Whilst an hour forward or back will have no direct effect on our pets – as they have no concept of time it does change our schedule, and this is what we need to be aware of. We set our pets’ routines by when we wake up, go to work, come back, take them for walks or let them out for exercise, and it’s the hour shift in

Granted, it’s not great having to get up earlier than necessary, and you may not be able to feed your pet much later due to work, but any adjustment will help reduce any anxiety. As always, be patient with your pet and be there for your pet, and together you’ll get through it.
