Summer is here! Crack open those BBQs and get the summer tunes playing, as we enjoy more time outside and in our gardens. There is so much to see and do outside in our local area, with beautiful places like Evenley Wood Gardens, Stowe and Waddesdon Manor all on our doorsteps. In this issue we have some great editorial articles with advice on ecofriendly living, fun fitness events in June and July, pesky parasite advice from Windmill vets and a really important article, Lucys Mission to Michigan. This is about a beautiful little girl Lucy Wright, who is fighting to beat high risk Neuroblastoma – an aggressive childhood cancer. Lucy has been accepted for treatment in Michigan, when her UK treatment has finished and she is in remission, but needs help raising £120,000. Take a look at the article and fundraising events that are planned and please try and support at least one of them. it really will make a huge difference. The Twyford Pantry Summer breeze makes me feel fine…so the song goes – let’s hope by the time you read this is we’re breaking out the summer wardrobes and enjoying the first few Al Fresco meals of the year.

BROCCOLI AND BACON SALAD SERVES 6

finely grate in the garlic. Add all the other dressing ingredients, season with sea salt and black pepper, and whisk. Halve, deseed and finely slice the tomatoes and chop the chives, reserving the flowers. Add to your broccoli and bacon bits. Dress it all really well, and check the seasoning. If needed, add a splash more vinegar. If you’ve got any chive flowers, sprinkle those over the top and serve as soon as possible. Source: Jamie Oliver’s ‘Jamie’s America’ cookbook

Ingredients 2 large heads of broccoli 6 rashers of dry-cured smoked streaky bacon finely sliced olive oil 3 firm red tomatoes ½ a bunch of fresh chives (15g with flowers if you can get them) Dressing ½ a clove of garlic 2 teaspoons Dijon mustard 6 tablespoons extra virgin olive oil 2 tablespoons white wine vinegar Method... Remove the broccoli florets from the stem and cut into very small florets. Discard the thick dry base of the stalk and cut the rest in half lengthways and finely slice. Blanch your broccoli florets and sliced stalks really quickly in boiling salted water for 60 seconds, just long enough to soften the broccoli but still leave it with a bit of a bite. Drain in a colander and spread it around a clean tea towel to steam dry (this is important because it will help the dressing cling to the broccoli). Once completely dry, transfer to a serving dish. Fry the bacon on a medium heat with a small splash of olive oil until crisp and golden, then spoon most of the bacon bits over your broccoli. Any leftover fat in the pan can be used in your salad dressing. Pour it into a mixing bowl, then peel and

Ingredients 4 x 250 ml cans pre-mixed gin and tonic – choose any you like 100 ml (3 ½ fl oz) elderflower cordial Method... Pour the cans of gin and tonic into a medium roasting tray and transfer to the freezer for 1.5-2hours, or until mixture is frozen. Remove from the freezer and use two forks to crush the ice into a slush. Divide the mixture between four large tumblers, then pour ¼ of the elderflower over each.
