Horses have been in my soul since the age of 6 when I first saw one. I was obsessed and used to cry at Black Beauty. My mum would find me with a skipping rope sat on the front gate pretending to ride! Every horse I saw I wanted one of my own. Thirty-nine years on and I am still the same (minus the skipping rope I might add) and had the pleasure of owning my own beautiful boy for 5 years before I sadly lost him in 2019 very suddenly. Being a photographer, I get to work with lots of beautiful horses and their owners to capture memories with their best friends. Some of whom have had them since foals and are now into their twilight years. After having my own photo shoot with my horse, I have an even greater knowledge of how important it is to cherish those moments with them. I am forever grateful to have these gorgeous pictures of him to look back on.

Regulations and British Cycling, we are cycling in groups of 6 ensuring we keep socially distanced at all times. If these speeds and distances seem too much for you to begin with then don’t hesitate to get in touch with us. If we have enough interest we will look to put on some slower step-up ‘taster’ rides later on in the season. The Winslow Wheeler Cycle Club started up in July last year and already has over 40 members aged between 18 years to mid 70’s. We are a friendly and sociable club, affiliated with British Cycling, providing rides for the local community and surrounding areas – a great way to keep fit and make new friends.

Cycling has really boomed since Covid-19 first appeared – it is a great way of boosting physical and mental health and can help shed any excess pounds. Many more people took to their bikes last year, whether it be a trip to work, the shops, local park or to join a Club like the Winslow Wheelers. Many bike shops reported running completely out of stock due to the sudden high demand. The club meet every Saturday morning at the Public Hall, Elmfield Gate Car Park, Winslow, MK18 3JA from 08:45 hours onwards. Currently we have three different paced groups led by experienced ride leaders: C Group– this is a steady paced ride at approx. 13-14mph average speed, distance 20-35 miles B Group- this is a medium paced ride at approx. 15-16mph average speed, distance 25-40 miles A Group– a faster paced ride at approx. 1718mph average speed, distance 40-55 miles We cycle mostly on the quieter country roads suitable for road bikes. These are club rides and not a race and all three groups meet up halfway at a coffee shop/café for a well-earned cuppa/cake and chat! In line with current Covid-19 Government

Spring flowers are growing, blooming and being sold. The Summer flowers will be on their way soon, the hedges look lush and green and we are already planning ahead for our Autumn crops. Hopefully the weather will keep on getting better and we can feel the warmth on our skin and soak up the Vitamin D from The Sun, this is very welcome after what seems to have been an endless grey, wet and cold Winter/ Early Spring. There is so much beauty in there garden but still so many jobs to be done, here are a few to get you started.
SOW MORE SEEDS Many of you will have started seeds off in the greenhouse last Autumn or on windowsills earlier in the Spring, but it is not too late to start some off now. Choose some fast growing annuals such as Marigolds, Sweet Peas, Zinnia and Phlox. I prefer to sow them in small pots until they are large enough to plant into

LETS TALK BBQ’S!
Hi! I’m Kate and I’m here to talk to you about all things food in Buckingham and the surrounding areas. You can also follow me on Instagram for foodie updates @kate_a_edwards
As I’m writing this, we’re experiencing some un-seasonal snow, however I’m confident that by the time you read this article we’ll be firmly on the road to summer. So what better time to start talking BBQs! I am fairly new to the world of BBQ-ing, but what I lack in experience, I make up for in passion! I was never that fussed about a classic British BBQ. The charred supermarket bought burgers and sausages never really did it for me, and I found the sides unimaginative. Now don’t get me wrong, there is definitely a time and a place for this classic BBQ fodder, but it wasn’t something I wanted to eat every weekend throughout summer. Over the past few years I’ve been working on up-ing my BBQ game, so here are my top tips for how to have a cracking BBQ this summer.
Charcoal is for champs I’ve been experimenting with both gas and charcoal BBQs, and I have to say, charcoal always comes out on top. If you pick the right fuel, it adds a wonderful flavour to your food, as well as cooking it to perfection. The Oxford Charcoal Company is a great local company with a range of options to choose from. You can also add wood chips to achieve different smoky flavours. Don’t get me wrong, gas also has it’s place. If you’re rustling up some burgers to feed the kids, or cooking up a few sausages after a bit of day drinking, it’s quick and easy and gets the job done. But if you’re putting time and effort into your food, take the time to get your fuel sorted too.
Pick one dish and cook it well
We’ve all been there. Someone overloads the BBQ with a variety of different meats, cooking them all at the same, at the same temperature, which results in nothing being cooked well

and everything being over or under done. To really wow your guests, pick one thing to be your main dish and really focus on cooking that well. I know it’s tempting to overload your guests with a variety of meats, but trust me, a well thought thorough menu will be much better received. To make it extra special, pick your meat up from a local butcher. They’ll be able to cut the meat exactly how you want it, and also offer some cooking tips too. Pick the main event – think a whole chicken, beef short ribs or a leg of lamb. Then plan your sides around it. If you really want to go the extra mile, create a cocktail to go with your menu too!
Direct vs Indirect heat
Funnily enough, not all meats benefit from being flame-grilled over a ferocious fire. You wouldn’t cook everything on max heat in your oven or on the hob, and the same applies to your BBQ. There are lots of different ways of setting up your BBQ so that you have an area for both direct and indirect cooking. You can see lots of examples online, or in DJ BBQ’s book “Fire Food” (which is a fantastic book to get you started on your BBQ-ing journey). You can then move your food between the two areas depending on what you need at the time. For example, you don’t want to cook a spatchcocked chicken over direct heat for the whole cooking time, as it will dry out. However 20 minutes at the beginning or end of your cooking time will really help to crisp the skin up.
It’s not all about the meat
There I said it! Controversial, I know. But there are so many amazing sides or veg based dishes you can create on the BBQ that will go down a treat. Take a look at the book “Charred” by Genevieve Taylor if you’re looking at adding some meat-free options to your repertoire. There are some great recipes there that will be sure to take your fancy.
Hopefully Covid restrictions continue to ease and we’re able to enjoy lots of BBQs with family and friends this summer. Serving your food up family-style on boards and platters in the middle of the table is always a great way encourage socialising over food. Hello Summer months and hopefully a continuation of some warmer weather (albeit splattered with hail and snow if April was anything to go by…what was that all about??!!!!). By the time you read this hopefully a lot more of you will have had your jabs if not the second one and our pubs/restaurants will have opened their gardens, getting ready to open their doors later this month (not to mention hairdressers in April, I lost weight just having a haircut!). How nice has it been to see friends and family in our gardens or public outdoor areas – the things we once took for granted. Since the last issue we have enjoyed Easter and I was lucky enough to also celebrate my 50th birthday on Easter Sunday. Being a WOACA (woman of a certain age) it delivers other challenges outside of COVID but I had the pleasure of joining the Press Pause for Menopause online masterclass back in March which Laura has written a review on, if you haven’t read it already. It was BRILLIANT for all sorts of reasons but also made me think about the benefits certain foods give us, especially on our mood and well-being. As we’ve all had a tough time of it one way or another, I have included some recipes to lift our spirits, both nutritionally but also to enjoy the creation of or to share once again with our loved ones. I also learned (bit late to the party I know) but I finally caught up with the fundamental importance of drinking water and increasing protein levels. Anyone who knows me knows I have been rubbish with water most of my life, but I’ve finally got into the habit and it feels really good….and gets easier! So, if there is one thing you can do for yourself to help with energy, memory, feeling and looking fresher it’s getting into drinking water – pimped up with fruit slices, a bit of lemon and ginger or just straight up – your body will thank you for it and we need our bodies to stand us in good stead. We have a lot of making up for lost time to do everyone so let’s give ourselves the best chance to be as healthy and most importantly as happy as we can be. Much love and summer blessings Tina xx

Twyford Pantry Salsa Verde Salmon with Smashed Chickpea Salad (serves 2)
Ingredients 3 tsp olive oil 1 orange , zested and juiced 2 skin-on salmon fillets small bunch of parsley (including stalks), finely chopped ½ tbsp Dijon mustard 1 shallot or 1/2 small red onion, finely chopped ½ tbsp red wine vinegar 400g can chickpeas , drained and rinsed 2 roasted red peppers from a jar, drained and chopped 50g kale
Method Heat the grill to high. Whisk 1 tsp of the oil with the orange zest, a splash of the juice, lots of black pepper and a small pinch of salt. Put the salmon, skin-side down, on a non-stick baking tray and pour over the marinade. Leave to marinate at room temperature while you make the salsa. Put the parsley, mustard, half the shallot, the vinegar, 1 tsp oil, and the remaining orange juice in a small food processor and blitz to a thick sauce, adding a splash of water to loosen if needed.

Heat the remaining oil in a frying pan and fry the remaining shallot for 5 mins. Stir in the chickpeas and some seasoning, turn up the heat and stir until the chickpeas are just starting to crisp. Mash roughly with a potato masher and stir in the
tender. Allow to cool, then peel and halve if large. Slice the pear and arrange on a serving platter with the beetroot, nuts, cheese and micro salad leaves.
roasted peppers and kale. Add a splash of water and cover with a lid until the kale is wilted. Keep warm over a low heat.
Whisk together the walnut oil, balsamic vinegar and honey, then season to taste. Drizzle over the salad just before serving.
Grill the salmon for 4-6 mins, or until cooked to your liking. Spoon the chickpeas onto 2 plates, top with a salmon fillet (leaving the skin behind if you like), and spoon over some of the salsa verde. source: BBC Good Food online

Easy Peasy Instant Berry Banana Slush (serves 2)
Baby Beetroot, Pear and Feta Salad (serves 4)
Ingredients
Ingredients 3 bunches baby beetroots (any but red and gold look good), trimmed 1 Williams pear 25g walnuts, toasted 200g marinated feta, drained 2 cups micro salad leaves or mixed herb salad 80ml walnut oil 2 tablespoons balsamic vinegar 1 tablespoon honey
Method Preheat the oven to 180°C. Trim the bunches of beetroot, then wrap each bunch in foil and place on a baking tray. Roast for 45 minutes or until
2 ripe bananas 200g frozen berry mix (blackberries, raspberries and currants)
Method Slice the bananas into a bowl and add the frozen berry mix. Blitz with a stick blender to make a slushy ice and serve straight away in two glasses with spoons. source: BBC Good Food online
