In 2016 we published the first edition of The Voice’s African and Caribbean Food Guide that was launched at the Birmingham Caribbean Food Festival. The response was overwhelming; over 24,000 copies were distributed across the United Kingdom at festivals, churches, businesses and community groups. In just six weeks hundreds downloaded the Voice + app for the electronic version. Following on from this success, we are pleased to present the 2017/18 edition which is filled with great stories, recipes and an updated listing of over 200 African and Caribbean restaurants. This handy 92-page directory is your essential guide to where you can dine or simply drop-in for a takeaway at the many eateries specialising in African and Caribbean cuisine in the UK. The popularity of African and Caribbean cuisine continues to grow steadily, as celebrity chefs create tasty tropical flavours, whether it’s jollof rice from Ghana and Nigeria or jerk chicken from Jamaica. Visit any major supermarket chain in the UK and you are sure to find an aisle, or a full section, dedicated to selling food products or ingredients from these regions. It is against this background that, (in the same year that The Voice celebrates it’s 35th anniversary), we decided to publish the second edition of this comprehensive guide to the many African and Caribbean eateries on our high streets up and down the country. We see it as part of our company’s mission as Britain’s leading black newspaper, to support, promote and celebrate our cuisine and establishments. Chef brings

South African flavours to the UK By Vic Motune

Petrus Madutlela came to prominence when he starred in the 2013 series of Masterchef despite his profile he hasn’t forgotten his roots When chef Petrus Madutlela appeared on the BBC show Masterchef: The Professionals in 2013, he won over its judges and viewers with his smile and passion for flavour. He reached the quarter finals but his decision to cook a traditional South African dish called pap en vleis, which is a porridge of maize meal served with stewed meat gravy,was a major talking point. Viewers who were rooting for him to go all the way to the finals felt he should have gone for a safer option, one the judges would be more familiar with. However, Madutlela stands by his decision to cook the dish that he grew up with in a Pretoria township, “If I cooked French or Italian maybe I would have gone through to the semi finals or finals but I wanted people to know that I’m proud of where I come from, so the only way to do that was to cook a dish like pap en vleis. At least people could say one person on the show was brave enough to cook South African food.” Today Madutlela is the acclaimed head chef at The Poet at Matfield, a pub in Tunbridge Wells, Kent. Reviewing the food at the venue, TripAdvisor said: “Petrus Madutlela, an up-and-coming chef and one to watch.” Despite his success in the UK, he still gets excited about memories of food and his family back in South Africa.

Chef Anthony Cumberbatch By Andrea Photiou

Find out who taught the top chef to cook and which foods will be popular in 2017 For nearly 30 years, Michelin-trained Anthony Cumberbatch has been honing his award-winning skill as a professional chef, celebrity caterer, occasional TV personality and kitchen consultant. Before coming to the attention of top French chefs that set the standard worldwide for what is considered ‘quality’ cooking, a young Cumberbatch began learning about food preparation and how to source local ingredients by watching his grandparents work culinary magic in Barbados. Q: What is it about Caribbean food that you love the best? A: Versatility and sexiness. Our cuisine is so unique - a cocktail of flavours from Asia, Africa, Spain and the Orient and that allows me to explore. My inspiration comes from recreating popular dishes and re-discovering traditional recipes. For example, ackee and salt fish money bag and curried goat in an edible basket - some of my signature dishes – are a fusion of funky ingredients and are present presented in a contemporary way, leaving behind the concept of ‘flat food’ on the plate. ‘ Hells Kit Gary Tomlin knows that the profile he gleaned from being a part of Gordon Ramsey’s Hell’s Kitchen has served him well in the restaurant business but not necessarily in the way people may think. Tomlin, the owner of Jerk and Juice in Leytonstone said being the only black person and Rasta on the hit show was as testing as preparing the food.

“I’m all about the vegan life because I know that is the future.”

However, having come through the fiery show, which would see Ramsey regularly lambasting his charges in an attempt to get the best out of them, Tomlin says the public pasting helped him to develop his people skills. Tomlin prides himself on his cooking and has done so ever since he worked out that he was one of few among his peers that actually knew his way around food.

“I’m a touch dyslexic so school and anything studious wasn’t my strong point and when I realised that I could cook, I just decided to run with that. “Growing up I thought everyone could cook, all the men did in my family. But when I realised that people were starting to know me for my food, I thought building a business in that area would be the best place for me.”

chen survivor Tomlin is famed for his special jerk dumpling. It’s one of his signature specials and although he’s reluctant to share them just yet he told The Voice he has some big plans for more specials coming very soon. For now however, Tomlin says if you find yourself at his restaurant you won’t be disappointed by the array of healthy options. Making his suggestion for a hearty breakfast, lunch and dinner at Jerk and Juice he said: “I’m all about the vegan life because I know that is the future, so if you were to pop into Jerk and Juice today for breakfast I would offer you something like fried dumpling with coconut curried ackee, it’s a ten out of ten. That would be your starter and you could have it with plantain or mixed salad. “For the main, I would prepare some quinoa. For those who don’t know, quinoa is a substitute for rice and sometimes I’ll have quinoa with peas in it. I do a dish with gungo peas cooked down in a Caribbean style. “It’s a vegetarian dish but it has a mince texture to it and it goes down well. For the non-vegans I have lemon drizzle for dessert. I do a vegan cake as well but the drizzle is my top seller. “Then there are also the multiple juices I offer. Okra juice and strawberry and carrot are just two of the more unusual options you can get but they are both amazing. If you’re in the area, stop by.”

A decade has passed since Levi Roots sauntered onto the set of Dragon’s Den and wowed the judges with his guitar playing and plans for Reggae Reggae sauce. Even after all of his success, he says there is plenty more to learn. In that time, Levi has become a household name opening restaurants, producing multiple cookbooks and winning a host of awards for his culinary contributions. Having recently picked up the Casual Dining and Pub award, yet another feather in his cap, Levi said winning the accolade was a testament to his team who have supported him in the last ten years. “It’s nice to win, it’s what you work for, especially when there is a team involved. It’s difficult to dot all of the Is and cross all the Ts and when you get awarded it salutes all that you have been doing. Hospitality is one of the most difficult things to get right.” Admitting that there is still tremendous room for personal and profes professional growth, Levi said with so many regions in the Caribbean, present presenting menus that reflect the true diversity in the food options available from the region was one of his priorities. “There are thousands of islands in the Caribbean and each of them have their own way of expressing their food,” he said. “As a Jamaican myself, I know that we are passionate about our own food but I also know that I have only just scratched the surface of what could possibly be done. “So we change the menu quite regularly at the restaurant. We represent the whole Caribbean, I don’t like to say that I am a Jamaican restaurant, which is why we present ourselves in the way that we do. On the menu Martinique is represented, Barbados is represented, Trinidad is repre represented and a whole host of the other islands so I am still learning about Caribbean food, as we all are. Caribbean food is much more than ackee and salt fish and jerk chicken.”

AFRICAN FOOD in a DIGITAL era Student Thelma Egbe is among a new generation of African chefs who are winning fans online By Vic Motune

Blogging has been a great platform for so many people to become a huge success. Today’s food lovers are increasingly going online in the hunt for ideas about the recipes or restaurants they might try next. People trust reviews and recipes from bloggers the way they trust the opinions of friends and family. This is something that student Thelma Egbe discovered when she set up her blog TheLmZkitchen, which has the tagline ‘The best of Nigerian cuisines.’ Egbe decided to create the blog about healthy, easy to make African recipes after she discovered that her younger brother, a university student, was spending a lot of money on takeaway food. “I realised that a lot of people who leave home for the first time just don’t bother to cook and just go for takeaways�, she says. “I was trying to educate them so they could save themselves a lot of money.� The reaction to the blog was better than she could have expected. Her versions of recipes for classic dishes such as spinach stew, Nigerian fried rice and egusi soup quickly gained an audience of thousands. “Initially I hated doing the writing�, she says. “I’d have much rather just done the cooking but when I started getting attention with readers asking me to post recipes for certain dishes I thought ‘OK, maybe I’m not just talking to myself.’’ One often cited reason that African food hasn’t taken off in the UK in the way it should is because it is so time-intensive – some dishes like cambuulo, a famous Somali rice dish can take up to five hours to cook. However, the Coventry University student firmly disagrees. “Being in England makes cooking African food easy. In Nigeria I wouldn’t have used a blender for example which means I don’t have to pound my pepper. Prepa Preparation is key - if you can prepare a day before you cook it’s just a case of mixing everything together.�

“Choose the wine that uplifts your meal” meal”

Wine is the fastest growing beverage category in restaurants - and with good reason. It is the most suited beverage to food and can escalate a good meal to gastronomic heaven. African and Caribbean cuisine is diverse and varied with an array of seasonings, flavours and spices and can make pairing with wines somewhat challenging. Here are a few guidelines that can help you choose the wine that uplifts your meal. Firstly, there are no hard and fast rules. Drink what you like with what you like! Generally, white wines with white meats and red wines with red meats works. However, the spice levels, pepper heat and gravy or sauce need to be considered when pairing. Champagne, Prosecco and Cava are great as an aperitif and go with just about any dish and are perfect with salty dishes. They are also perfect for any time of day so they are my drink of choice with ackee and salftish. Off-dry Riesling, Gewurztraminer and Vouvray are ideal white wines to pair with spicy jerk chicken or sweet sauce dishes as they tame heat and spice and balance sweetness. Chardonnay is great with fatty fish dishes like grilled salmon or fish in rich sauces and Sauvignon Blanc, Verdejo and Vinho Verde all have the zing needed to balance the tart sauce served with our escoveitched fish. Dishes with earthy flavours of mushroom and truffles go well with Pinot Noir and it is also great with roasted duck, chicken or turkey, as is a Rioja. Big reds like Malbec, Cabernet Sauvignon, Shiraz, Zinfandel favour big, juicy meats like lamb and steak and also complement oxtail stew or jollof rice and oxtail, barbecue chicken or pork. Still or sparkling Moscato, a sweet Riesling or Lambrusco complement dessert if you want to end on a sweet note, but are also good with most dishes if a sweeter wine is your preferred choice. Remember each palate is different and we like what we like so make your own choices. Wine with a meal takes it from ordinary to extraordinary so just have fun as you go in search of the perfect pairing.

Actor Don Warrington, MBE, gives us an insight into the perfect Trinidadian Christmas dinner as well as his culinary habits Veteran actor Don Warrington is currently playing dad to comedian Dane Baptiste on BBC3 sitcom Sunny D as well as being up for a Manchester Theatre Award. We caught up with Warrington to find out what else he’s got on his plate besides preparing for his next role. Q: Do you get much time to cook at home? A: Not a great deal, no. I will have some fish – I tend to eat a lot of oily fish like mackerel, salmon and things like that. I don’t necessarily eat it for health reasons - I’ve just always liked it. I don’t like to eat heavy or pasta based dishes late at night. I normally go for fish cooked with peppers and onions. Q: What’s your speciality dish? A: A traditional Christmas dinner. What’s on the table depends on where I am. I spent Christmas in Trinidad a few years ago and we had traditional cuisine – a dish called cou cou which is cornmeal cooked in banana leaf parcels boiled for a long time. We also had macaroni cheese, rice and peas, different kinds of meat. I don’t eat pork but there will normally be pork, chicken…I don’t recall ever having turkey in Trinidad. That would be eaten with plantain, yam, sweet potatoes, that sort of thing. Q: With so much diversity in the islands, are you able to pick just one favourite Caribbean dish? A: My favourite dish would be a ‘buss up shot’ roti. It’s a curried roti and there are different fillings – chicken curry, pumpkin curry. I like them all! I’ve been to Guadaloupe, that’s mainly French cuisine. They have a fish-based diet which is good – lots of fresh fish. Q: Where do you like to shop and dine out? A: I like to go to the local shop and pick my fruits and vegetables. If I can, I will support small businesses. It depends on what’s convenient – sometimes I do go to the Cou cou is a cornmeal supermarket. There are some fruits from the dish cooked in banana Caribbean that you can’t get here, which is leaf parcels a shame.

Ghana-born chef Ben Asamani is on a mission to change people’s perceptions about vegan food Traditionally, eating meat has long been viewed as a sign of affluence in many African cultures and the omission of meat from the diet is a sign of poverty. So when Ghana-born Ben Asamani chose to cut out meat, dairy and all meat products as a teenager, the reaction was predictably one of surprise.

Initially his family thought it was a phase he would grow out of but decades later Asamani runs a successful vegan food business. He opened the 222 Veggie Vegan restaurant in west London in 2004 and has his sights set on launching a similar venture in his home town of Tema, Ghana early next year. He was inspired to become a vegan after attending a church meeting in Ghana which highlighted the benefits of healthy eating and drinking. “We are meant to eat a plant based diet, fruit and greens, which has benefits for our health and the environment,” he says. Lunch at 222 Veggie Vegan is a buffet-style affair, while there is an la carte menu from 5:30pm onwards. Dishes include a vegan roast, oyster mushroom and spinach raclette as well as a pumpkin and pine nut risotto. The dessert list includes vegan ice cream and tofu cheesecake. “It is a very international menu” he says. “I don’t use microwaves and some customers complain that we are delaying them but we have to cook the food fresh. For me not using a microwave and not frying the food alone tells them that the food is healthy.” Asamani wants to spread the message of healthier cooking to Ghana in the form of a new vegan restaurant. “I love Ghana but a lot of Ghanaian food is too starchy and there are lots of fruit and vegetables that people do not eat. It’s fair to say that most people in the UK have never heard of the baobab fruit. However, in Africa, people have been eating it for hundreds of years. The fruit, which looks like a hairless coconut, is a rich source of vitamins C and B2, iron, calcium and antioxidants. Malcolm Riley, the self taught chef, recipe creator and entrepreneur behind The African Chef brand is on a mission to spread the word not only about the baobab but African ingredients and cooking techniques. The baobab and other sustainable tree food like moringa, butternut, sweet potato and shea butter have made their way into his range of chilli sauces and spicy condiments such as Baobab Chilli Jam, African Spice Paste and Butternut Condiment and through them Riley is winning a host of new fans to African food. “I’m part of a bigger movement which is aiming to change the way African food is seen in the UK”, he says. The cute spot in Essex is the only sit-down eaterie serving Caribbean food in the area, making it a unique and pleasant addition to the throng of dining experiences. Omoyele says he spotted the opportunity to add some Caribbean culture to the culinary scene in South Woodford and took it. “There was literally not one Caribbean restaurant in the vicinity,” Omoyele said. “Its has been received well by the locals residents. The area is quite multicultural and very affluent so it works. Most of the people around there know what Caribbean food is from their holidays in the region. “They go to the Caribbean, taste the food, understand it and when they get back home in the UK they want to have a bit of the Caribbean on their doorstep. A fusion of Jamaican jerk and Italian pasta finish ed with a creamy sauce.

Serves 4 people INGREDIENTS:

• 850g of raw prawns de- eined • 1 tbsp unn’s i er Ginger Garlic and Pimento Seasoning • 1 tbsp unn’s i er Jamaican Jerk Seasoning (Choose from ‘Hot’ or ‘Mild’ based on your own chilli heat preference) • 1 packet penne pasta boiled and drained • 30g butter • 2 clo es garlic minced • 1 medium onion chopped • 2 stalks spring onion chopped • 225g full cream • ½ tsp salt • ½ tsp black pepper • 00g can sweetcorn drained • ½ medium-si e red pepper chopped

jamaica valley curry goat Jamaica Valley Curry Goat Recipe Ingredients 3 lbs goat meat, chopped in cubes 1 lemon, 3 tbsp Jamaica Valley All Purpose Seasoning, 2 tsp black pepper 5 tbsp Jamaica Valley Curry Powder, 2 large onion, sliced, 4-6 cloves garlic, minced, 1 Scotch Bonnet pepper, sliced, 4 tbsp cooking oil, 4 cups boiling water, 1 large sprig thyme, 1 medium onion, chopped, 2 bunches of scallion chopped, 2 tbsp fresh chopped ginger, 10 pimento seeds, chopped coriander Instructions Wash meat, with lemon and water. Cut off any visible gristle and fat. Mix together goat meat, with all seasoning, leaving out, 1 large onion. Place in fridge overnight (or at least 5 hours) to marinate.

1. Remove all fresh ingredients, sliced onions, scallion, coriander, Scotch Bonnet pepper etc; from the bowl of marinated goat meat and set aside. 2. Heat cooking oil in large Dutch pot or cast iron pan. Place goat meat in pan and brown to seal in juices. 3. Once the meat is browned add thyme and 2 cups of boiling water; cover, lower heat to medium-low and simmer for about 1 hour 15 minutes. 4. Chop 1 medium onion and add to pot along with the sliced onion, Scotch Bonnet pepper and all fresh ingredients that were set aside earlier. 5. Add 2 cups of boiling water and bring to a boil. 6. Taste and remove Scotch Bonnet pepper based on your taste. Serve with white rice or rice and peas.

TASTES OF AFRICA With a range of cultural influences, climates and ingredients, cuisine on the continent is very diverse African food is a reflection of the diversity of the continent’s cultures and climate. Depending on the region, there are variations in recipe ingredients, food preparation and cooking techniques. The continent’s food has also been influenced by foreign invasion. North African cuisine has a strong Arabic influence – from the seventh century onwards Arabs introduced a variety of spices such as saffron, cinnamon and ginger. The nomadic Berbers adapted semolina into couscous, one of the main staples of the region. Arabic influences can also be seen in east African cuisine. For example, steamed rice is served with spices such as saffron and cloves. Immigrant workers also brought their foods with them, such as spiced vegetable curries, lentil soups, chapattis and pickles. The British also influenced east African food by bringing in new breeds of sheep, cattle and goats. West African cuisine typically relies on starchy ingredients such as rice or yams - the staple grain varies from region to region, but maize or corn is common in many areas. Food is often flavoured with hot spices, chillies and sauces such as peanut. Southern Africa has the most varied cuisine of the continent, a blend of the indigenous African tribal societies and the European and Asian populations that settled there. Central African food remains the closest to traditional ingredients and cooking techniques, far less influenced by European or Arab settlers. Plantains and cassavas form the basis of many meals.

The future OF CARIBBEAN CUISINE The founders of Original Flava talk recipes, favourite meals and why their grandmother is their inspiration By Leah Sinclair

Shaun and Craig McAnuff are the two twenty-something south London men, who are looking to modernise Caribbean cooking for the younger generation. Known for their quick and easy recipes; from succulent escovitch fish to the best rum punch, the Thornton Heath natives have amassed over 220,000 Facebook likes in just under a year. “We’ve been cooking since we were young, and just decided to take it further,” says Shaun. “Timing really is key.” The Original Flava brand began with their grandmother who would cook delicious meals during their childhood, which Shaun and Craig try to recreate in a quick and simple way. “Our family is

Jamaican, and we grew up with my grandmother always cooking in the kitchen,” recalls Craig. “We ended up really taking to it, and grew up within that culture.” Many of the tasty treats that they regularly make for their legions of followers, are reminiscent of meals and beverages associated with their grandmother; from curry goat to sorrel. For Caribbean foodies everywhere, their indulgent how-to-videos and various products including calendars and aprons, are just a part of the reason why Craig and Shaun do what they do. “The support of the people means a lot, and we’re looking forward to doing more to cater to them,” enthuses Craig.

Some of these plans include their own products, which they hope to sell at supermarkets, as well as branching out into reviewing Caribbean restaurants. “We’re all about building our brand, and creating new innovative dishes that fuse Caribbean food with different cultures,” says Shaun. “We’d really like to explore that in 2017, and hope that we can make a pivotal change in the future of Caribbean cuisine.”

AFRICAN COOKING African cuisine is varied and diverse, but throughout the continent there are common tools and techniques that are used in making food.

1. Cooking Pot The traditional cooking pot is made of clay and then fired in a kiln. But in modern Africa, many families have switched to using cooking utensils made of metallic, ceramic and other materials, especially when using electric or gas fires. The earthy smell of the cooking pot lends a unique flavour to food such as fresh beans or meat. 2. Mortar and Pestle The mortar and pestle are familiar to many African households. They are used for heavy duty pounding of grains such as millet to separate the chaff from the grain or pounding raw groundnuts into groundnut powder. 3. Gourd A gourd is a climbing plant, which produces a long or round fruit. When this fruit matures and dries and is hollowed out it makes a useful container. The clean, woody smell of drinking water in a calabash is quite unique. Several African communities also use calabashes as musical instruments. 4. Winnowing Tray Winnowing trays are primarily used to sort grain. After pounding or threshing maize, millet or groundnuts for example they are then winnowed in a tray to separate the grain from the chaff. 5. Grinding Stone Grinding stones were the centrepiece of African kitchens for hundreds of years. Some households had a grinding hut or house, where grinding stones of various sizes were housed. These distinctive ceramic pots with their long cone-shaped lids can also be used as a serving dish. They are traditionally used in north Africa. 6. Sieve These are commonly used to sieve flour. Sieves in Africa are now mostly made of metal or plastic. However, traditionally, they were made with soft reeds.

What do you think it is about African food that makes it so popular right now? By Leah Sinclair

What was the inspiration behind creating Pop Up Africa?

Pop Up Africa is an Africa-inspired pop-up retail and food events company, and it started out of a desire to promote and make African products more available to a broader audience.

What are some of your favourite memories of African food from your youth?

My favourite food memories vary, from eating jerk chicken at Notting Hill Carnival, to my time at university and that being my first taste of cooking independently and experimenting with recipes. I was also very influenced by a blend of flavours, from Nigerian and British dishes I ate at home, to my friends and the dishes they had, which ranged from Chinese, Ghanaian, Indian and Congolese food.

What are your favourite recipes?

My all-time favourite is jollof rice, because no pots of jollof rice are ever the same! Some cook it with Basmati rice, others with long grain, some put meat in it others put vegetables. Another recipe that I love is a Nigerian spinach dish called efo riro. I love spinach, and efo riro is rich and full of flavour.

Who is your favourite African food blogger and why?

Fafa Gilbert, because she’s so passionate about what she does and her blog has some of the most beautiful images of Ghanaian food. I love the way that she explores with new ingredients and puts her own twist on dishes from West Africa by fusing the dishes with dishes from around the world, for example her yam soufflé.

I think the internet and social media has helped to cultivate a savvy group of African food bloggers and vloggers, who use these platforms to share pictures and recipes of a variety of dishes from across Africa. Technology is giving Africa a new voice - one that’s innovative and painting its own picture of Africa; its fashion, tourism and cuisine. Now, both Africans and non-Africans are connecting and becoming more aware of the various dishes from jollof to injira, and African chefs, bloggers and vloggers are using social media as an opportunity to raise their profile and share ideas

INGREDIENTS: . 2 onions, chopped . 2 large carrots, chopped . 1 tbsp olive oil . 1 clove garlic, crushed . 500g minced pork or beef . 400g can tomatoma toes . 300ml hot beef stock . 1 tbsp tomato ketchup . 1-2 tsp Dunn’s River Jamaican Jerk Seasoning (wet paste) . 350g spaghetti . To serve: Parmesan shavings, basil leaves METHOD: 1. Put the onion, carrots and oil in a large pan and fry gently for 5 mins, to soften 2. Add the garlic and mince and fry for 10 mins until browned. 3. Stir in the tomatoes and chop-up with a knife. Pour in the beef stock, tomato ketchup, Dunn’s River Jerk seasoning, salt and ground black pepper. Bring to the boil, then reduce the heat, cover and simmer, stirring occasionally, for 30 mins. 4. Meanwhile, cook the spaghetti in a large pan of boiling, salted water, according to packet instructions. Drain well and spoon into 4 bowls. Top with the jerk bolognese sauce, Parmesan and basil - Enjoy!
