CONTENTS
WELCOME Welcome to the first edition of Critics’ Choice – a publication that is designed to draw your attention to some of the best loved restaurants in Glasgow and the West. Every featured restaurant has been given a positive critique either by a food critic, or by a diner through one of the various online sites that allow you to post reviews. All the restaurants are within a 45 minute drive of Glasgow city centre, or are located in the city itself. I hope this guide will make your lives a little bit easier when deciding on where to dine out. There will be another edition out next year, and if per chance you mislay this publication, you can see it online at dramscotland.co.uk

Chambord Crème Brûlée 50ml Chambord Black Raspberry Liqueur 750ml Double cream 110g Sugar 2 Egg yolks 1 tsp Vanilla extract Caster sugar for dusting
Method Pre-heat oven to 300°F. Heat the double cream in heavy sauce pan over medium-low heat, just to the boiling point. Mix sugar, eggs and egg whites together in large bowl until light and frothy. Slowly whisk hot double cream into egg mixture; strain the mixture back into sauce pan. Using a wooden spoon, stir the mixture over low heat until it just coats the wooden spoon. Add the Chambord Black Raspberry Liqueur and vanilla extract. Divide mixture equally into ramekins and place ramekins in a baking dish. Fill baking dish
with water 2/3 of the way up sides of ramekins. Place dish in oven and bake until skewer inserted in the center comes out clean, approximately 35-40 minutes. Remove ramekins from water bath and allow to cool slightly. Then, cover and refrigerate until chilled, approximately 2 hours. Presentation: Pre-heat broiler. Sift a layer of caster sugar over top of Crème Brûlée and place under broiler until sugar caramelizes, 2-4 minutes. Serve immediately. Garnish with fresh raspberry and mint leaf.

more opened in 2008 in the heart of the Merchant City and since then it has gone from strength to strength. Run by the Perella family from the village of Picinsco in Southern Italy, the restaurant prides itself on its care and commitment to providing excellent authentic Italian dishes at a reasonable price.
The restaurant can cater for romantic couples, family celebrations and nights out with friends. In fact Amore is Italian word for ‘love’, but it is also related to ‘passion’, which Italians use commonly to emphasise their love for food and wine and certainly the Perella family have more than their share of Amore!

Place sliced leeks in a colander and rinse well to remove sand. Melt the butter in a saucepot. Add the rinsed leeks, white wine, salt and garlic. Cook over low heat for about 10 minutes. Add the chicken stock and continue cooking over low heat until the leeks are soft, about 10 to 15 minutes. Stir in the crème frâiche, chopped parsley, lemon juice and tabasco. To make the cornflour thickener, mix the water and cornflour together and set aside. To make the sweet and sour Chambord Black Raspberry Sauce, heat the oil in a saucepot. Add
150g All-purpose flour 60ml Olive oil 6 Fresh chervil sprigs 3 tbsp Rice vinegar 2 tsp Soy sauce 2 tsp Honey Pinch Ground black pepper Stewed Leeks 170g Butter 2kg Leeks
5 tbsp White wine 4 tsp salt 1 tsp Garlic, minced 350ml Chicken stock 170g Crème frâiche 3 tbsp Fresh parsley, chopped 1 ½ tbsp Lemon juice ¾ tsp Tabasco
the scallions, garlic and ginger. Cook for 20 seconds, being careful not to brown. Add the chicken stock, Chambord Black Raspberry Liqueur, rice vinegar, soy sauce, honey and black pepper. Cook over low heat for 2 minutes. Stir in the cornflour thickener and cook for another two minutes. Strain the sauce through a fine mesh strainer and reserve for plating. Remove fish from marinade and pat dry. Coat the fillets lightly in flour. Heat the olive oil in a sauté pan until it just begins to smoke, add the salmon fillets. Cook over medium heat until golden brown and crispy. Turn over and continue cooking until internal temperature of fish reaches 145˚F. To assemble the dish, place ½ cup of the stewed leeks on a plate and arrange the salmon fillet on top. Drizzle 2 tbsp of the sweet and sour Chambord Black Raspberry Sauce around the leeks and garnish with the chervil sprigs.

Method In sauce pot, simmer red wine until reduced by 3/4. Add cherries and Chambord Black Raspberry Liquer and cook over low heat until cherries have plumped and the Chambord Black Raspberry Liquer has reduced to a syrupy consistency. To finish and assemble dish: Have the black raspberry compote ready at hand and toast 4 slices of the pain d’epices. Heat cast iron skillet (or heavy sauté pan) over medium high heat. Add thin film of sunflower oil to pan when cold. Pan is ready when oil starts to smoke. Season foie gras pieces with salt and pepper.

Pat dry with a paper towel. Sear foie gras in hot pan, pressing down to ensure even coloration. Flip as foie gras develops a nice deep brown sear. Warm them through for the richest, most unctuous texture. Test if done with thin metal skewer inserted into middle. If skewer comes out cold, they are still raw. If they take on enough color before they are warmed through, finish them in a hot oven. Place foie gras on slice of pain d’epice and place spoonful of compote on top, letting the syrupy juices run over the sides of foie gras and into bread.

he Tempus @ The Grand Central Hotel delivers a unique dining experience with comfort, style, taste and quality as standard. It’s been restored, but still has many original features, and some diners will remember its location from the past, but that’s all that has remained the same. This classy restaurant still manages to create a relaxed atmosphere, but its décor has the “Wow” factor. The food can be described as Scottish – sourced from local suppliers, and ranging from oysters to traditional favourites and speciality dishes too.

orres is a nice and cosy wee restaurant serving good quality Spanish tapas at reasonable prices.
It has the buzz and charm of an authentic Spanish eatery, and offers an extensive menu of tapas alongside traditional paellas, side dishes and desserts. It also offers signature Torres dishes including Sardinas a la Plancha (grilled sardines) and Croquetas de Jamon (Serrano ham croquettes). All dishes are cooked to order. Torres' decor is inspired by the spirit of Spain. Warm terracotta tiles, burgundy banquette seating, and traditional Catalan artwork create an authentic Spanish dining experience.

he Uplawmoor Hotel near Barrhead is a country hotel with an AA Rosette Restaurant. You can be sure of great service too as it also holds a Scottish Thistle Award for Customer Care. The restaurant offers a relaxed and friendly dining experience with professional and attentive service. It was originally an old beamed barn, and it has been tastefully converted and now has a nice cosy atmosphere, offering a choice of imaginative à La Carte or seasonal dinner menus. The family run business celebrates its 20th anniversary this year, which is testament to the quality of its offering.

his restaurant offers classic French cuisine made with locally sourced Scottish ingredients and its customers rave about the quality of the food and the service. It enjoys an elevated position on Byres Road, and its ski lodge décor is delightful – it manages to be both light and airy during the day and invitingly cosy in the evenings. Think wood panelling and antler lamps, a cosy red carpet and dark furniture – think Alpine ski-lodge with great food. You can dine à La Carte, enjoy a prix fixe menu, lunch or weekend brunch. Delicious French food, beautifully presented.

his corner café/ restaurant has been a huge success since it opened. Its large floor to ceiling glass windows and semi-industrial interior gives the place a very New York feel. Whether you perch in the window with a piping hot coffee and a cake, or take yourself off to the Mezzanine for some more serious food, the whole atmosphere is buzzy, friendly and of the moment. The added benefit is its expansive outside area – which is the perfect location for Sunday brunch during the summer – weather permitting. The chefs at Epicures are no slouches in the pudding department. Their grand dessert platter is just the job for those who can’t decide, as you get a little bit of each. en Oriental & Teppanyaki restaurant, offers a meeting of cultures, styles and cuisine. Friendly staff and a warm, relaxed atmosphere combine with excellent food and a superb choice of fine wines and imported beers, make every meal an experience to remember. On the ground floor it offers distinctive Teppanyaki cooking from Japan, where chefs cook before your eyes which is entertainment in itself. While on the first floor it offers an exquisite choice of Cantonese, Japanese and Thai cuisine. The building itself is an unusual cylindrical shape, and the décor reflects this complete with a spiral staircase. It really is an oriental restaurant with a difference.”
