elcome to the Spring/Summer edition of the Wee DRAM. This issue we have an interview with cover girl Danielle Murphy of Ian Macleod Distillers. She looks after the likes of Smokehead and Isle of Skye and is a great ambassador for whisky. She even manages to keep fit despite having a hectic work schedule. We also have the pictures from last month’s ‘For the love of whisky…speed tasting’ event at the Queen’s Arms in Edinburgh. A big thanks to Alec Trousdale who helped organise it, but then who unfortunately wasn’t able to attend due to a bug that landed him in hospital. But sis, Katie, did an admirable job. NEWS An exhibition “Scotch Whisky: From Grain to Glass” exploring the history of the Scotch Whisky industry will open at the Scottish Parliament in November to celebrate the centenary of the Scotch Whisky Association. On announcing the new whisky exhibition, Scottish Parliament Presiding Officer Tricia Marwick MSP said, “The importance of the Scotch Whisky industry, particularly to rural Scotland, has long been recognised and the Scottish Parliament is delighted to be hosting this exhibition, in partnership with the Scotch Whisky Association, to mark the centenary.” The exhibition is just one of a number of events planned by the Scotch Whisky Association this year. The exhibition will open on 29 November 2012 and continue until 25 January 2013. It is part of a programme of temporary exhibitions in the Parliament’s Main Hall that explore wider themes of Scottish interest and achievement.

f you haven’t yet seen the Strange Undoing of Prudencia Hart you ought to try and see it this summer. The drama, put on by the National Theatre of Scotland, and sponsored by Benromach, takes theatre into Scotland’s pubs and other unlikely venues, where stories are told, re-told, sung and passed on. It’s an evening of supernatural storytelling, music and theatre inspired by the Border Ballads, Robert Burns and others. The tale is based round one Prudencia Hart, an uptight academic, who attends a conference one wintery morning in Kelso in the Scottish Borders. As the snow begins to fall, little does she know who or what awaits her there. David Urquhart, Joint Managing Director of Gordon & MacPhail, owners of the Benromach Distillery in Forres, said: “It’s a pleasure to be

NEWS n Scotland is celebrated the world over for whisky and golf, so what could be more appropriate the announcement of a three year partnership, that will see Glenmorangie become the Official Whisky of The Open Championship. The Open Championship is golf’s most famous tournament watched on television by an estimated 458 million households all over the world. This year it takes place at the Royal Lytham & St Annes Golf Club, near Liverpool but in 2013 it returns to Scotland and to Muirfield near Edinburgh. Meanwhile the dates for the Ryder Cup 2014 at Gleneagles have recently been announced as the 26th to the 28th of September 2014.

NEWS n Glenfiddich’s first ever vatted Vintage Reserve is now available from the bar. Malt Master, Brian Kinsman and Global Brand Ambassador, Ian Millar, nosed and tasted three exceptional vatted vintage whiskies dating from 1973, 1974 and 1975, before selecting the 1974 Glenfiddich. Brian Kinsman, Glenfiddich Malt Master, said, “Just 50 limitededition bottles of the distinctly Glenfiddich whisky, which has rich, spicy oak notes and an amazing vibrancy for whisky of this age, will be available in the UK.” Meanwhile, Glenfiddich has also unveiled a new burgundy bottle for its 21 Year Old Gran Reserva. The bottle also bears the signature of Brian Kinsman. He said, “Glenfiddich 21 Year Old Gran Reserva is one of the most premium whiskies we make. It is matured and mellowed in American oak casks then the liquid is decanted into hand-selected, Caribbean rum casks for a further four months maturation. With its sweet toffee, fig and vanilla notes, Glenfiddich 21 Year Old is most definitely a whisky to be savoured.” n Whisky Fringe is set to take place in Edinburgh this summer between the 3rd and 5th August. WEMYSS MALTS LAUNCHES NEW 8 YEARS OLD BLENDED MALT SCOTCH

Boutique Whisky Company Wemyss Malts has launched a new 8 year old blended malt called “The Hive”. Wemyss’ blended malt range, which also includes Spice King and Peat Chimney, has names inspired by each whisky’s natural flavours and aromas so that the consumer can easily understand the style of whisky being purchased. The Hive is named after the honeyed sweetness found on the palate of this whisky. The style of these blended malts each mirrors one of the key Scotch malt regions. The Hive is

representative of the Speyside region, Spice King of the Highlands and Peat Chimney of Islay. As with the rest of the Wemyss Malts range, these blended malt whiskies have been developed in conjunction with the Scotch expert and writer Charlie Maclean. The Hive will be the first in this range to showcase a new look label which is bold and striking, with excellent shelf presence. The blended malt range continues to be bottled at 40% abv.

THIS YEAR’S Speyside Whisky Festival, has once again proved to be resounding success. As we went to press the Festival was just about to get into full swing. anCnoc Highland Single Malt Scotch Whisky has unveiled a new global campaign that is set to bring a modern twist to the traditional world of whisky – through a collaboration with internationally acclaimed Scottish illustrator Peter Arkle. Arkle, who is now based in New York City, has developed an exclusive range of limited edition designs for anCnoc , which will be launched throughout 2012 and will be available in the UK, USA, Sweden and selected European markets. Demonstrating Arkle’s fascination for the science and mystical nature of anCnoc’s production process, the first anCnoc Peter Arkle Limited Edition release is based on a depiction of each of the Single Malt’s ingredients: malted barley, spring water, heat, yeast, time and ‘magic’ - which the illustrator brands ‘the secret thing which makes anCnoc anCnoc’. The striking packaging design repeats this image, transforming it into an eye-catching and bold black ink pattern on the brand’s trademark stark white background. The whisky inside is equally special, containing a new

expression, hand selected by anCnoc Distillery Manager Gordon Bruce. Matured wholly in Spanish oak sherry barrels - a first for the brand - the resulting dram is complex and satisfying, rich in colour with amber highlights. Spicy fruit cake aromas combine with creamy vanilla and sticky toffee, while tones of dark spices and dried fruits add depth to the flavour. Whisky training scheme gets government support Bar staff with a passion for whisky can now take advantage of a new training scheme. The Whisky Ambassador Programme, is the UK’s only BIIAB accredited whisky training scheme and it has been approved by ILA Scotland, the Scottish Government scheme that helps pay towards the cost of training. So if you are earning £22K a year or less, you qualify for the ILA assistance. Training under the scheme, which is also backed by VisitScotland will be offered at a series of events planned across Scotland. The first one was held in Glasgow in April, while the next event takes place in Inverness early in May. There are also courses being run in Ayrshire, Edinburgh, Aberdeen, Perth, Dundee and

Oban. Victor Brierley, a spokesman for Whisky Ambassador, said, “Bar staff should be able to talk about what whisky is, the colour, the age, the peatiness, the sweetness, and how it has come to find its way into bars all over the world. “They should be able to tell customers where a particular whisky is extinct because it isn’t being produced any longer and be knowledgeable and confident enough to up-sell, encouraging people to try a malt even if it costs a couple of pounds more than a blend.” Details of the training scheme and availability around Scotland can be obtained by contacting train@thewhiskyambas sador.com.

INTERVIEW

Danielle Murphy has a passion for whisky and as Business Development Manager for Ian Macleod Distillers in Scotland, she has a job she loves. She tells Wee DRAM why. What brought you into the industry? I have spent the last 10 years working in the industry for various companies, but whisky is one of my first loves. I just love the fact that whisky is made in Scotland, and we do it so well. What were you doing before the drinks industry beckoned you? My father owned various pubs including Murph’s Barrelhouse, so I was brought up with a drinks background. But instead of going into the pub industry I decided to travel the world as a croupier. I did this for several years before coming back to Scotland.

Do people find it unusual when they discover that you are selling whisky? Some more traditional people sometimes ask me ‘what do I know about whisky’. They soon find out, that actually, I do know my product. It helps that I drink it, and I’m always keen to improve my knowledge. In fact occasionally I do a shift at the Pot Still in Glasgow. Frank Murphy, who runs the pub with his family, is a fount of all knowledge.

What do you say to people that say they don’t like whisky? If they say they don’t like whisky, I tend to respond by saying it’s just that you haven’t found the right one for you yet. After all, there are 97 distilleries in Scotland. There is a whisky for everyone. I would definitely recommend a Glengoyne and soda for novices. This is what the Japanese drink, and it is a very enjoyable, especially in the summer.

What does your role involve? My role is to ensure that Scotland’s publicans know about our brands – Glengoyne, Isle of Skye, Smokehead and Tamdhu. I encourage them to do different promotions and the different brands appeal to different type of pubs. For instance Smokehead is associated with more contemporary bars such as Treacle in Edinburgh and The Blythswood in Glasgow. While Glengoyne is a non-peaty malt which is has always been family owned and my job is to raise awareness of it.

What do you do in your spare time? I’m a real gym bunny. I love pushing myself. And I do a bit of personal training with my friends and family. I also share a dog with my mum, and I’ve a cat…I love animals. In fact this year I am going on holiday with my dad to a horse ranch in Montana. I can’t wait.

Do your friends drink whisky? It’s funny... my friends that work in the industry do, but it takes a lot of persuasion getting my other friends to try it. But I have a dram every other night. 16

Where do you go to socialise? I tend to socialise in the South Side of Glasgow, that’s where my gym is. But I also enjoy going to Moskito on Bath Street and of course the Pot Still. It has a great atmosphere. What are you busy organising at the moment? I am planning a cocktail competition for later in the year. I hope to get lots of bartenders involved.

Our recent speed tasting events took place at the Queen’s Arms in Edinburgh. A great night was had by all. Peter Gerard said, “This was a really interesting event. I have been to a few tastings before but I liked the idea of the speed tasting, and the hosts were so informative These guys really know what they are talking about. My favourite tonight was between Auchentoshan, and Bowmore although I really enjoyed some of the Peatier tasting malts. Smokehead was lovely - I was surprised at how much I enjoyed that one. COCKTAILS

WHISKY-A-LOLO Ingredients 50ml Auchentoshan Classic. 75ml ginger beer. Mixture of fresh fruit, mint, apple, fresh lime, lemons and oranges.

Ingredients 50ml Maker’s Mark. A dash of Cointreau. Top up with ginger ale. A slice of orange. Method Muddle an orange slice in a glass with a splash of Cointreau and add the Maker’s Mark then top up with ginger ale and stir. Then add ice.

CUTTY FASHION

CUTTY STORM Ingredients 1 shot Cutty Sark. ½ shot Bols Triple Sec Liqueur. 1 wedge fresh lime. Lemonade. Method Pour all ingredients over cubed ice in tall glass starting with the lime wedge, give it a light stir and then top up with fresh cubed ice if needed.

Method Just mix it all together. There is no special technique. Then let the fruit mix perfectly with the citrus flavours of Auchentoshan and add ice.

Ingredients 2 shots Cutty Sark. 2 dashes Angostura Bitters. 1 barspoon gomme (sugar) syrup. Orange peel. Method Stir all ingredients with cubed ice for 20 seconds in a short glass and then garnish with orange peel.

New look for The Ardshiel Hotel

How did Flora Grant and Marion MacKinnon go from working in the Financial Services sector in Glasgow, to running a whisky hotel and bar in Campbeltown? A Wee DRAM investigates. lora Grant and Marion MacKinnon (pictured above) decided to bring their financial acumen to the world of whisky when they took over the reins at the ten-bedroom Ardshiel Hotel in Campbeltown in 2010. Since then they have turned the hotel into a wee goldmine, transforming it into a mecca for whisky enthusiasts at the same time. In fact, when they recently revealed the all-new American oak and blue tartan reception, bar and lounge areas to the world, none other than Richard Paterson, mater blender extraordinaire, made the long trip to Campbeltown to lend his support. It’s a sad but true fact that Flora and Marion remain a bit of a curiosity in what is a male dominated world of whisky. Explains Flora, “It is rare to have female whisky enthusiasts, and it still happens that customers will look beyond us for a man in charge, or some have even been known to ask when we are getting the bus home after a shift working behind the bar! She continues, “We very quickly realised once we quit our former jobs that there was a lot more to this business than we first imagined. Finding the older whiskies can be hard work and it all requires a significant investment. But this doesn’t scare us as we are extremely passionate about whisky, plus it isn’t going to lose its value.” Marion continues, “We have 480 whiskies on display and we have another 500 or so to pull out, although some of these are duplicates. The redevelopment has taken two years and as a result, locals have been following its progress. And from

when we opened I think it has reignited a lot of wider interest in the town.” The reception area and bar/lounge now boast a sleek new look with American Oak wooden doors and finishes next to a ‘Stuart Modern Blue’ tartan pattern on what are padded wall panels. There are also cabinets displaying some of the more exclusive brands, and the ladies are rightfully proud of what they have achieved. Says Marion, “We are now most definitely on the whisky trail in this part of the world and we get a lot of business on the way to and from the local Springbank Distillery. Campbeltown has a great affinity with whisky, and the hotel itself is an exdistiller’s house and the town used to have around 34 to 37 distilleries. Now there are three, and we have a good relationship with them all, particularly Springbank.” She continues, “Tourists flock here, and we also take block bookings from whisky groups and schools, and run a monthly whisky club with about 40% women, and we are looking to set up a second group shortly. We are always trying to encourage new ways of drinking whisky, and we have Ginger Grouse on tap, so we are working on a long drinks menu, too. Matching whisky with various food courses is a terrific growth area for us at the moment, especially as we move into summer. TASTING NOTES

The great thing about malt whisky is that people can taste a whole variety of flavours in the liquid. Whisky connoisseurs have a host of descriptives, on this page we give you some that are used to describe the various Island malts. When we talk about nose we mean smell, and palate means the taste. The Finish, is the taste that remains once you have swallowed. Benromach Peat Smoke Colour: Dark straw Nose: Initial soft fruit notes blend with a subtle medicinal edge. Sweetness gradually develops with a delicate antiseptic edge. Palate: Subtle saltiness, with a rounded sweetness. Some smoke emerges and a touch of spice lingers in the background. Finish: Long and sweet. The Dalmore 12 year old Colour: Dark reddish brown. Nose: Sweet malt, orange marmalade mixed with sherry and a hint of leather Palate: Initially drier sherry taste, though sweeter sherry develops, along with spice and balancing, delicate, citrus notes. Finish: Long and spicy with ginger, lingering Seville oranges and a suspicion of vanilla. 30

BenRiach 12 year old Colour: Rich amber Nose: Aromatic peat with fragrant hints of honey, fruit and mellow oak. Palate: Peaty with complex fruity hints, mixed with heather, nuts, oak wood and spices. Finish: Dries slowly with tempered spicy oak. Ardbeg 10 year old Colour: Deep gold. Nose: Sweet, with soft peat smokiness and carbolic soap. Palate: Intense, yet quite delicate on the palate, with burning peats and dried fruit, followed by sweeter notes of malt and liquorice. Finish: Long and smoky finish. anCnoc 12 year old Colour: Rich copper with amber highlights Nose: Rich and spicy fruit cake aromas are complemented by creamy vanilla and sticky toffee. Mild notes of freshly picked green apples are accentuated by a touch of blood orange zest.

Palate: Sun-dried raisins and honey emerge, followed quickly by vanilla ice-cream with hot caramel sauce. Finish: Round and long, on the dark side of the fruit. Bowmore Darkest Colour: Reddish copper. Nose: Floral with tinges of smoky oak. Palate: Flowery perfume gives way to nutty maltiness. Finish: Smooth with echoes of toasty malt and liquorice. Springbank 10 year old Colour: Golden honey.

Nose: Sweet chilli and charcoal mingling with cloves. Palate: Chalky and malty with flashes of nutmeg and a lingering saltiness. Finish: Long, chalky and perfumed.
