Frozen Dough Process Welcome to our Bakers Secrets‌ Stage 2. Retail Store
1.
Frozen product is removed from freezer storage
2.
The product is placed on baking trays or in tins
3.
The product is placed in racks and allowed to thaw for 4-5 hours
4.
The thawed product is placed into the prover
5.
When the dough reaches the required volume it is placed in the oven
6.
The freshly baked product is ready for sale on the bakery counter
Step 1
Remove frozen dough from the freezer and tray up on a designated tray. If you are seeding the product see step 1 (a). If you are not seeding move the product directly to the fridge which is set to -3째c and leave them to defrost overnight.
Step 1(a) Remove frozen dough from the freezer and tray up on a designated tray. Allow to defrost for about 20 minutes so that the crust of the dough is moist. Take the dough and roll in desired seed or coating.
Step 2
Move the seeded raw dough and non-seeded raw dough to the fridge and allow to defrost Overnight at -3째c. Now you are prepared for your 1st morning bake
Step 3
Take the defrosted dough from the fridge and place in the
prover and allow the dough to prove for with 80% humidity
Step 4
Step 5
1 hour @ 40째c
Remove frozen dough from the prover after 1 hour. At this point of time the dough will have risen to its full capacity and should feel sticky to the touch. Before transferring the dough to the oven you should now score the top of the dough in your desired design. You can coat in flour also.
You are now ready to transfer the prepared dough to your oven where it will bake to perfection within 19 minutes. The oven will be fully programed so that you will Achieve maximum quality .
