COMWELL CARE
FOR PEOPLE AND THE ENVIRONMENT Comwell wants to take better care of the earth’s natural resources and minimize our environmental footprint. This is why we have devised a food & beverage policy with focus on sustainability. The policy applies to all of our hotels, and we are proud of it. This is just one of the ways we take responsibility for both people and the environment.
DANISH SEASON We prefer to work with seasonal Danish ingredients. They provide the best quality, the best taste and bring a natural variation to our kitchens. They also help protect the environment and climate, because choosing Danish ingredients prevents unnecessary transport and fuel consumption.
ORGANIC INGREDIENTS We prefer organic ingredients, as they are better for taste, animal welfare and the environment. Our transition to organic led to all of our restaurants receiving the Danish organic label in bronze. This is something we are very proud of, and we continue to work closely with our suppliers to increase the availability of organic ingredients.
ORGANIC BEVERAGES We also prioritize organic beverages. We do so, because we wish to offer our guests beverages of high quality, free from pesticides and additives. It is therefore possible to order organic soft drinks, beer, wine, tea and coffee in our restaurants.
MORE GREENS, LESS MEAT We work creatively and innovative with fruits, greens and other vegetables, when planning our menus. This provides exquisite culinary experiences for our guests, and it is better for the environment. We use less, but better meat - mainly from organic and free-range farming.
FRESH SEAFOOD FROM DANISH WATERS We use an increasing amount of fish and shellfish to prepare healthy, tasty and versatile meals. We prefer fish caught in a sustainable manner in Danish waters and MSC certified.
BETTER USE OF THE INGREDIENTS We have respect for the ingredients we work with and this affects the way we act in the kitchen. In the kitchen, we work with the ingredients as a whole. Thus, we minimize food waste, protect the environment and promote sustainable consumption. In addition, we satisfy our professional curiosity.
FOOD COORDINATORS We focus on professional competencies in our kitchens. For that reason, we have been training food coordinators at all Comwell hotels – in cooperation with Copenhagen Hospitality College. They are responsible for the day-to-day coordination and distribution of ingredients, so we can create tasteful and sustainable dishes of high quality.
THE OFFICIAL DIETARY GUIDELINES We want to offer tasty and healthy meals that provide energy and a stable blood sugar level. Therefore, we actively implement the official dietary guidelines, whenever possible in our daily work. We use whole grain products, experiment with new grain sorts in order to eat more coarse food and strive to use healthy fat sources, still ensuring that the food remains tasty and keeps its identity.
