Hello Wow - wasn’t that a great Summer we just had? We have been very busy here. Since my last letter page we have had mini breaks in Cornwall, Derbyshire and Norfolk. I have to say the weather and the hospitality was absolutely brilliant wherever we went. We’ve also had lots of visitors - we took family from Yorkshire crabbing in Mersea and then seal watching in Walton. They had a great time, and of course we couldn’t go to Mersea without visiting The Company Shed for locally caught seafood. So, from British hospitality to British food. We are so lucky to live in such a great area with all our local food suppliers. British Food Fortnight is coming up soon and we have an article on page 8 which highlights some great food initiatives that might interest you. Also, we have some recipes on pages 24 and 28. They may not be British in origin, but the ingredients could certainly be found locally at our farmers markets. As usual we have an abundance of events in the What’s On pages and we have details about Wivenhoe’s very first ‘spoken and written word’ festival, aptly named Wiv Words on page 14. If you get the chance, take a look at their programme, which can be found online, as they have over 40 events going on over two days in October. I’m really looking forward to going along myself! Apple Day - October 12th Apple Day was first first celebrated on 21st October 1990.The idea of a national Apple Day was set up by the charity Common Ground to celebrate our most versatile fruit and the beautiful orchards they come from. It is now well-established in the calendar with apple-themed events taking place every year.

British Food Fortnight runs from 21st September to the 6th October and celebrates the health benefits and pleasures of eating local, seasonal and regionally distinct produce. Many of our local pubs and restaurants have embraced these principles, including Suffolk based ‘The British Larder,’ which also has a website crammed full of inspirational recipes featuring the best seasonal ingredients: http://www. britishlarder. co.uk/ Finances continue to be tight for many families and eating out may not be possible very often. Celebrity chefs and supermarkets pick up on the signs of the times and there is a lot of emphasis now on

looking at different ways to eat cheaply and healthily. Just like Jamie Oliver’s most recent TV series, supermarkets are keen to offer advice on how to stretch the Sunday roast to two or even three meals by creative use of leftovers. All of this is good advice for new students arriving at university, many of whom are likely to be cash-strapped and may have little time, inclination or knowledge of how to cook from scratch. As well as a surge in the number of recipe books which use just 3 or 4 ingredients, there are some great websites out there like www.deliciousmagazine.co.uk/ articles/5-recipes-guaranteedto-get-teenagers-cooking with simple advice and healthy, cheap recipes designed to appeal, like the one pot ‘Throw-it-all-in-stew’ which packs in lots of healthy, filling veggies.

Climbing Plants Climbing plants, especially those with flamboyant flowers or fantastic foliage can transform a garden and offer a whole new planting opportunity, as your garden literally goes upwards and takes a vertical climb. by Pippa Greenwood Supporting Cast
Train it well
A few climbers are self-clingers and don’t need a special support system when grown against a fence or wall; Virginia creeper and Hydrangea petiolaris for instance. But most need to have a proper support, and it pays to put this in place before you plant. For lighter weight climbers some trellis, perhaps prettily painted will do the trick, but for heavier climbers such as a vigorous clematis, or wisteria, you will need galvanised straining wires.
If the climber is quite small, it may need to be trained in the right direction. A short bamboo cane or several for a multi-stemmed plant, can be angled from the base of the plant to the vertical surface, allowing you to tie in the stems and edge them towards the support. Once the climber has reached the wall, the enlarging network of stems may become congested if left to its own devices, so actively train the stems to grow in the direction you need them to.

If you use trellis as a support on a wall, it can be attached to wooden battens which are fixed to the wall using rawl plugs. Use a series of hinges to attach one edge of the trellis to the batten, and a few hooks to allow you to raise or lower the trellis for when you need to maintain the wall.
Climbers planted against a wall will need extra TLC if they’re to look their best. Make watering them top-priority, especially for the first 18 months whilst they’re becoming established. Apply a good, bulky organic mulch to a depth of about 8cm (3in) or so all around the rooting area, but take care to avoid the mulch coming in to direct contact with the stems.
Clever Combinations
If the surface that you want to plant up is big enough, try to use climbers that flower in different seasons as, chosen carefully, the plants you use will increase the period for which the arch, pergola, arbour, wall or fence, looks its best.

Many climbers do have a habit of becoming a bit bare at the base, especially after they’ve been in place for a few years.Try some seasonal bedding plants around the base, or plant a small and attractive shrub a little further away to hide the bare stems.

Walk on the Wild Side ‘Up Ol’ Smoky’
This month’s walk from Derek Keeble is called ‘Up Ol’ Smoky’ in reference to a farm en route from Little Horkesley to Wiston (or Wissington, as it is also known). But for many people the highlight of the walk is St Mary’s Church in Wiston, a beautiful Norman church made ‘more Norman’ in the Victorian period, when it was significantly restored and altered. Architectural purists might consider the restoration heavy-handed, but it still retains great charm and interest, from it’s picturesque setting next to Wiston Hall to it’s impressive medieval wall paintings, dating from about 1280. These include a large dragon and what is believed to be the earliest known image of St Francis of Assisi, shown preaching to birds in a tree. The quiet, hidden location of the church does lead to ‘long pondering-moments,’ as Derek describes them, so this walk is ideal if you’re in the mood for a spot of thoughtful reflection amongst fading Autumn leaves at the turn of the season. Wivenhoe is only a small town but it is chockfull of talent: there are artists and poets, writers, comedians and musicians. Stand still long enough in one of Wivenhoe’s streets and someone might write a song about the colour of your hair or make you a character in their novel. Despite all this amazing talent, there has been no single event which has harnessed all this creativity. Until now.

Over twenty schools and almost 1,000 school children and young musicians will be actively involved in the Roman River Festival which started this September. Sudbury Festival of Performing Arts
This is a competitive festival open to people of all ages. It gives an opportunity for people to perform, as a soloist or as part of a group in front of a sympathetic audience and to receive an expert and friendly assessment from a professional adjudicator. Children and adults with a wide range of abilities from all over East Anglia take part, and benefit enormously from the experience. The Festival offers about 400 competitive classes in the main branches of performing arts: music, dance, speech and drama. Performances will take place in February and March 2014. Chilli Chicken Stew Serves 6 - 8
Ready in 1 hour 45 minutes
With Halloween in October, why not plan a ghostly gathering and serve up this hot and spicy chicken stew? Perfect for filling up hungry trick or treaters.
Ingredients: • 1-2 tbsp sunflower oil • 1 large onion, peeled and cut into chunks • 2 garlic cloves, peeled and crushed • 1 small red chilli pepper, deseeded and finely chopped (optional) • 6 large skinless chicken fillets, cut into pieces • 2 x 400g can chopped tomatoes • 2 tbsp sun-dried tomato puree • 2 tsp dried oregano • 1 x 400g can kidney beans in chilli sauce • 1 red, 1 green and 1 yellow pepper, deseeded and diced • Salt and freshly ground black pepper • Warm crusty bread, to serve

Heat 1 tbsp of the oil in a large, deep flameproof casserole and fry the onion and garlic for 5 minutes until softened and golden. Add the chilli pepper (if using) and chicken pieces and cook over a medium heat, stirring all the time, until the chicken pieces are lightly browned all over, adding a little extra oil if needed. Stir in the tomatoes, tomato puree, oregano and 200ml water and bring to the boil. Season well with salt and freshly ground black pepper then reduce the heat, partially cover and simmer for 40 minutes, stirring occasionally. Add the kidney beans and diced peppers to the casserole and simmer, uncovered, for a further 20-25 mins until the peppers are tender and some of the liquid has reduced. Serve in mugs or bowls with chunks of warm crusty bread.
Tip For a hot non-alcoholic punch to serve with the stew, pour a large carton of apple juice into a saucepan. Core and slice 2 small apples and add to the pan with one thinly sliced lemon and a couple of cinnamon sticks. Heat gently for about 10 minutes, then pour in 1 litre of ginger ale. Heat through for a further minute then serve in heatproof glasses or tumblers.

Twice Baked Cheese Souffles Makes 4
Ready in 1 hour 20 minutes
If the thought of baking a fragile cheese soufflé for a special dinner seems a little too ambitious, then think again. Baked once in advance then baked again just before serving, these delicious individual soufflés work every time. Ingredients: • 40g butter, plus extra for greasing • 40g plain flour • 225ml milk, warmed • 4 large eggs, separated • 3 tbsp fresh chopped parsley • 75g mature Cheddar cheese, grated • 75g Stilton cheese, crumbled • Salt and freshly ground black pepper • 150ml double cream • Green salad, to serve • Cayenne pepper, to sprinkle (optional)
Tip To prepare ahead, leave the soufflés to cool after the initial baking, then turn them out into the baking dish and cover with cling film. Chill in the fridge for a few hours or overnight and top with the cheese and bake for the second time just before serving.

Melt the butter in a saucepan then stir in the flour and mix with a wooden spoon to make a smooth paste. Cook over a low heat for 1 minute. Gradually whisk the milk a little at a time. Once all the milk has been added, cook over a low heat for a further 2-3 minutes, whisking continuously, until you have a smooth and thick sauce. Remove from the heat and cool for 5 minutes. Beat in the egg yolks, parsley and two-thirds of the Cheddar and Stilton. Season lightly with salt and freshly ground black pepper. Preheat the oven to 180C/350F/Gas Mark 4. Butter four large ramekin dishes and line the bases with circles of baking parchment. Place the egg whites in a clean, grease-free bowl and whisk until stiff. Beat one spoonful of the egg whites into the cheese sauce to loosen it slightly then gently fold the sauce into the remaining egg whites. Divide the mixture evenly between the prepared dishes. Place the dishes in a roasting tin and pour in boiling water to come halfway up the sides of the dishes. Bake for 20-25 minutes until risen and golden. Transfer the dishes to a cooling rack (the soufflés will sink a little but don’t worry). Increase the oven temperature to 200C/400F/Gas Mark 6. Turn the soufflés out into a shallow baking dish and remove the lining papers. Sprinkle over the remaining cheese and return to the oven for 15-20 minutes until piping hot and puffy. Spoon the cream over the top and bake for a further 2-3 minutes until heated through. Serve immediately with salad, sprinkled lightly with cayenne pepper, if liked.

All Creatures Late and Mauled...by Lady Muck For someone who likes nature, I have come to the realisation I have a massive intolerance to coping with it when it invades my house. I seem to have spent an awful lot of time squashing, swatting and subsequently scraping up various examples over the past couple of months. This summer I had a perpetual single bluebottle flying in ever-decreasing circles around my head as I worked. There’s only so much of that you can take before you’re compelled to beat it to death with a rolled up copy of the Radio Times. Then all you get is a precious 10 minutes of silence before the next one finds you. It’s war. Leave a window open at the wrong time of year and you’re invaded by flying ants intent on annexing your kitchen. A wasp hid in my sock while it was drying on the line and stung me on the toe when I put my sock on. Moths eat my clothes. I splatted a spider on my bed which was so huge it left an indelible stain on my sheet and now I can’t bring myself to sleep on it ever again. And then there’s the family feral beast. The cat of course is a walking host to all kinds of disgusting forms of nature which require poisoning with pill and potion or worse, forceful removal. I had to buy a small piece of plastic at exorbitant cost for removing tics, the application of which requires several helpers - someone to keep the cat in one place basically by sitting on it, someone to unhook claws from flesh, someone to hop from one foot to the other going ‘urgh’ and someone to supply the alcohol necessary for post operative care (with tonic, for me). The feral beast, once released, retaliates by introducing yet more nature into the house. This morning I found a mouse cowering in my peg bag. Not sure if being caught by a cat and dropped in a peg bag did more damage to its nerves than the hundred decibel scream

I uttered when I put my hand on it. If the beast can’t bring nature into the house she finds increasingly artful ways of dealing with it. On one occasion, Husband, not being very strong of stomach, could only gesture ashenfaced to the back doorstep where I discovered the face (just the face, mind) and front paws of a mouse arranged so it looked like it had just surfaced and been frozen forever in quick setting concrete. ‘It’s like living with Hannibal Lecter’, muttered Husband weakly, ‘It could scar you for life, something like that’. Which was just what my friend said after he’d watched his mother encountering a bug type creature on the landing. Unaware of being observed, she’d walked up to it, peering closely, murmuring gently,‘Well, what have we here? You’re an interesting looking creature aren’t you? You’ve got funny looking feelers and everything. Lovely colours on your wings. Wonder what you are...,’ and so on until she straightened up and very carefully and deliberately crushed it to death with her shoe. It’s the only way to be sure.
