The feature write-up on Dubai’s Indian gems was quite a fascinating read. We could see why some Indian restaurants are so different from other Indian restaurants. We now have a list ready with us and cannot wait to eat food at restaurants mentioned in the feature. Henry Thanks to Connector, we took our guests out for dinner at Hotel Cartegena in JW Marriot. They truly loved the place, experience and 360 degree panoramic view of the city from the restaurant. The food was great without an iota of doubt . We also clicked some amazing pictures with Dubai’s dazzling skyline in the background. I am glad that I picked up Connector’s July issue and found out about this lovely addition to the city. Emma

A Rare Affair:

S ince its invention in mid-19th century New York, the average steakhouse menu hasn’t changed much - how can you improve on perfection? Although there are different cuts of steak, some of us don’t really know what they are. We’ll admit that we have been caught in confusion over the difference between a strip and a sirloin in the past so we’re cracking the code on what to expect from your favourite cuts. The most common cuts of steak, available on almost every menu, are rib eye, T-bone, strip loin, sirloin and rump. Rib eye steaks come from the boneless interior of the steak and tends to be the most flavourful of cuts. A T-bone steak, however, comes from the loin and although the tenderest cut, tends to lack flavour. The strip loin is similar to the T-bone but without the bone itself and has more flavour. A sirloin - or www.connector.ae

rump steak comes from the area directly behind the loin and although it’s generally less tender it’s packed full of flavour. How you like your meat cooked depends on your personal preference, although some top steakhouses refuse to overcook their meat. The term ‘Blue’ refers to a steak that’s seared very slightly on the outside and remains raw inside - and you may have to sign a waver if that’s your preference! If you enjoy your steak rare, that means you enjoy it slightly more cooked than a blue steak, but it’s still mostly red inside. Medium rare refers to a longer cooking time with just a sliver of redness in the middle whereas medium is pink inside. Having your steak cooked medium well means that it’s mostly brown, with a slightly pink centre and well done is exactly that - cooked throughout! CONNECTOR AUGUST 21

Silver Beach Café at Al Seef

A s far as destinations within a destination go, Dubai certainly has plenty of exciting and varied places to be explored. From the marina and JBR area, to the new developments in Jumeirah and the Dubai Canal, to the bustling hive of activity around Dubai Creek. One of these destinations is Al Seef, the recently opened development on the banks of Dubai Creek. Stretching a length of 1.8km and linking a modern dining and shopping area with the traditional and historic Al Fahidi district. Over the past few months different dining options have started to open up as Al Seef is set to include over 500 retail and dining outlets. A recent one to welcome guests is Silver Beach Café, a spacious and bright bistro style restaurant with direct and spectacular views of Dubai Creek. One of the most varied menus on offer, with over 60 different dishes from a number of predominantly European cuisines, the menu offers choice and with a good mixture of seafood, meats, pizzas, pastas and vegetarian dishes, it certainly has the ability to satisfy all guests. www.connector.ae

Our starters were an avocado hummus and coriander fishcakes. The hummus had a smooth and creamy texture and the tastes of both the avocado and the chick peas came through. The fishcakes where packed full of flavour and the accompanying thousand islands dip, with a splash of tabasco, had a gentle kick that was welcome but not overpowering. For mains we opted for a spicy chicken pizza and lobster mac and cheese. The base of the pizza was thin and perfectly crispy and very well topped with chicken pieces, bell peppers, onion and a nice sprinkling of jalapenos to give an extra bite. The standout of all was the lobster mac and cheese, generous pieces of fresh lobster with a consistent and not runny cheese sauce, made of three cheeses – cheddar, emmental and parmesan. To finish off we had a traditional sticky toffee pudding and a classic tiramisu, both offering a sweet way to end a tasty meal. C hef Nicholas was born and raised in the capital of Jamaica, Kingston. He started his studies at the famous Culinary Institute of America, in New York. Soon after he became the personal chef to the American Ambassador in Kingston. His passion for food and love of his colourful and lively country lead him to Dubai where he took the helm of Head Chef of Ting Irie in 2016. Other than his love for Reggae music, he brought along with him his knowledge of the Caribbean flavours, rich culture and vibrancy of his people. RECIPE OXTAIL COCOBREAD SANDWICHES Prep time: 20 mins Cook time: 3 hrs Serves: 4-6 Ingredients For the filling: 15ml corn oil 1 medium carrot, chopped 2 cloves of garlic, diced 1 medium scallion, chopped 500g oxtail 15ml ketchup 1 tsp brown sugar 15ml soy sauce 200ml water

For the pastry: 200g flour 15g sugar 200ml milk 1 tsp gm salt 15ml yeast 15ml water 15g butter For the coleslaw: 250g white cabbage, sliced 100g red cabbage, sliced 2 tbsp mayo 1 tsp sugar 1 medium carrot, grated

Method Combine all ingredients for the coleslaw and set aside. For the oxtail filling, add corn oil, carrot, garlic and scallion to a stock pot to sweat for 7 minutes Add oxtail, ketchup, brown sugar, soya sauce and water. Cover and slow cook for two hours. Alternatively transfer to a slow cooker and leave on low for 6 hours or high for 3 hours. For the cocobread, mix together yeast and sugar in the water then stir in milk and salt. Add flour slowly while mixing together, until the dough can be turned out of the bowl. Knead the dough for 10 minutes. Leave to rise for 1 hour in a warm place, in an oiled mixing bowl. Divide into 12 portions, roll each to about 6 inches wide. Brush with melted butter and fold in half, brush and fold again. Set on a baking sheet and leave until the dough rises to double its size. Preheat the oven to 210 degree celsius, and place a pan of hot water on the lowest shelf, bake the cocobread on the top rack for around 12-15 mins or until golden brown. To serve, cut cocobread in half, add a tablespoon of coleslaw and oxtail.

Schools are generally accommodating for parents who apply late and have procedures in place for students who do so. Enquire with the school of your choice to determine what you need to do in order to secure your child’s place. Fiona McKenzie said, “many schools will be open to last minute entries in certain year groups and it is always worth trying. We

Schools will require reports from any previous school, and ask children to sit an assessment of some kind. If for some reason a parent is unhappy with the decision they have made then we would advise talking to the school and discussing any issues. If the parent decides to withdraw their child then there are a series of procedures they will have to go through. If they leave within a couple of weeks then they may only lose the assessment and registration fee if it is later than that then they will probably have to pay the first terms fees but they should be entitled to have the other cheques retuned.” If a parent is unhappy with their decision, what is the procedure? If you are in a situation where you feel as though you’ve made the wrong decision, don’t panic - there are always ways to resolve your concerns. always mean that you will agree! Always give the teacher time to look into the issue, and don’t expect an immediate decision until they have - there are always two sides to a story, (sometimes more!) If you are not satisfied with the outcome or actions, arrange to meet with someone more senior; most schools will have a policy or handbook which explains who you should go to if you have an issue, and who to escalate it to if you are not satisfied. The school principal is a last resort, and should only be seen once several other people have been spoken to; this might include a head of department, an assistant headteacher, a deputy headteacher or a vice principal. What parents often try to do is go straight to the top, which is neither practical nor helpful in most cases. If a parent is unhappy about a decision that a school has made, it is always advisable to talk to someone at the school. Very often your child’s class teacher will be able to explain why a decision is made, and if not, someone more senior will. Schools never make decisions with the intention of upsetting parents, and there is almost always a rationale for the decision. G etting a regular health check-up done is the best way to keep your health on track. Regular health exams can help find problems before they start. Health checkups can help find problems early, when your chances for treatment and cure are better. Dr. Arshad Bhat, Specialist Internal Medicine at Mediclinic Al Sufouh said, “While health care is becoming expensive and sophisticated, these technological advances on the other hand enable us to diagnose and cure many diseases if detected at an early stage . Treatments employed for many common diseases have succeeded in prolonging and improve the quality of life . This underscores the strong focus on early detection of disease process through evidence based screening programs.” Connector spoke with industry experts to shed light on a range of health check-ups, respective age groups the various health risk factors one should be aware of. 48 AUGUST CONNECTOR

Common health check-ups for both men and women Skin check Everyone should practice monthly headto-toe self examination of their skin, so that they can find any new or changing lesions that might be cancerous or precancerous. Skin cancers found early are almost always curable. If you spot anything suspicious during skin self-check, see a dermatologist. Colorectal cancer- colonoscopy Dr. Nazia Salam of Health Shield Medical Centre said, “Both men and women can be screened for colon cancer from the age of 40 years up until 75 years old (DOH Abu Dhabi). The screening test is called a colonoscopy, where a camera is inserted into the colon and it is done every 10 years. If a person has certain medical conditions, this may be more often and your doctor will advise you on this. Alternatively, a stool test can be done every 2 years.” #connectordubai

The earlier decay or gum inflammation is detected the easier it is to treat and, the better the prognosis is likely to be. During a routine dental check up, your dentist will check for cavities or gum disease as well as examining your face, neck and mouth for abnormalities. An X-ray may be carried out - as well as a scale and polish to remove any buildup of plaque or tartar. Between visits to the dentist patients should brush their teeth at least twice a day and floss daily.” Cholesterol check-up According to Dr. Nazia Salam, the American Heart Association (AHA) recommends that all adults above 35 years old have their cholesterol checked every 5 years. If a person has the following risk factors: diabetes, smoking, BMI of more than 30, family history of stroke, family history of heart attacks, screening should begin at 20 years instead. Screening is done by drawing a sample of blood from the arm. The UK guidelines recommend a cholesterol test every 5 years between the ages of 40 and 75 or every year if a person is already on cholesterol lowering medication. A person with a family history of familial hypercholesterolaemia (a type of high cholesterol which is genetic) should be screened at the age 10. www.connector.ae

Blood pressure Dr. Nazia further adds, “Blood pressure should be checked from the age of 40 years and then at least once every 5 years. If a person is at increased risk of high blood pressure, for example because they have a family history of high blood pressure they can be checked more often. This will be decided by your doctor. High blood pressure is confirmed by an increased blood pressure reading on at least two different visits.” BMI assessment BMI is nothing but the ratio of your body weight to your height. A BMI between the range of 20-25 is considered healthy. Check your BMI regularly to prevent chronic diseases like type 2 diabetes, heart disease and osteoporosis. There are online calculators that can swiftly give you an idea of your BMI, however a quick method is to divide your weight in kilograms by your height in metres, and then divide the answer by your height in metres again. Eye check-up To lead a good life, we need good vision. Keeping eye health in check is important. One should go at least once a year for an eye check-up. A regular check will help you prevent macular degeneration and refractive problems and problems that cause blindness such as glaucoma. Osteoporosis is generally thought of as a “woman’s disease” because the prevalence of osteoporosis and the rate of fractures are much higher in postmenopausal women than in older men. Even though bone loss in men usually occurs later in life compared with women, men can still be at high risk for osteoporosis. By age 65, men catch up to women and lose bone mass at the same rate. Building strong bones and reaching peak bone density (maximum strength and solidness), especially before the age of 30, can be the best defence against developing osteoporosis.” Health check-ups for men Other than general health check-ups, men should visit doctors for must do health checkup specific to their gender. The U.S. Preventative Services Task Force recommend screening for an abdominal aortic aneurysm in men aged between 65 and 75 years, who have smoked 100 or more cigarettes in their lifetime. Health check-ups for women Dr. Astha Mishra, Specialist Gynecologist at Aster Clinic, Al Khail Mall said, “ A few essential tests that women between the ages 25-55 should undergo to prevent major health concerns are routine gynecological clinical examinations and ultrasounds to check uterus and ovaries are recommended, for all sexually active women or those having any complaints." Cervical cancer screenings or Pap tests are essential in women between the ages 21 - 65, every three years or earlier is recommended depending on risk factors and previous reports Thyroid tests should begin at the age of 30 to obtain a baseline result, based on which one can understand the risks. However, if you have a family history of thyroid, screening must be done early by the age of 20. Mammogram screenings should be carried out yearly for women in their 40’s in order to rule out the possibilities of breast cancer or to aid diagnosis at an early stage as advised by your clinician. O besity is a major health concern for today’s pets, and successful weight management can save your furry friend’s life. According to the Association for Pet Obesity Prevention pets are increasingly being diagnosed with clinical obesity. A 2017 survey showed that 56% of dogs and 60% of cats were classified as obese or overweight by their veterinarians. If your dog or cat is overweight, they can develop all kinds of health problems, such as painful arthritis, heart disease, breathing difficulty, diabetes and even certain types of cancer. The biggest obstacle is that most pet owners aren’t sure what their pet’s ideal weight should be and also don’t know how to spot the difference between healthy and obese. How to tell if your pet is overweight or obese First, you should be able to easily feel - and count - your pet’s ribs when you lightly run 62 AUGUST CONNECTOR

your fingers across the side. Ribs shouldn’t be distinctly visible, but you should easily be able to feel them when you stroke the animal’s side. Next, when you look down on your pet from above, you should see an hourglass figure or an indentation near the midsection.
