EDITOR’S NOTE It’s the most wonderful time of the year, so the song goes and I totally agree, I just love the festive season! It’s the smells, tastes, sounds and personal traditions and memories from my childhood that make the celebrations so special. The social gatherings with friends and family, picking out presents for loved ones and of course with all the delicious food on offer, my diet simply goes out of the window for the month as I embrace it fully. Well, there’s no point in doing things in half measures now is there? We tend to brunch on Christmas Day but will be cooking at home this year as we have our family over from South Africa. Two Tum Tums Up! I n a city with dining options going into the thousands it is not easy finding something that is new and unique, so when we heard about Dubai’s first ever 100% vegetarian restaurant we just had to try it out. Not because we are vegetarians, the opposite in fact, but to see just how creative you can be with a purely vegetarian menu and how tasty it can be. Walking into Tum Tum Asia you immediately sense a relaxed yet bustling environment, where casual dining and street food combine well. The place is very quirky with all the walls decorated differently, the dishes served in different ways, some presented on model rickshaws, drinks served in cylinders and barrels and a draw in each table where guests can help themselves to more cutlery and napkins without waiting for a member of staff to get them. The menu is intensive offering a wide range of dishes from across Asia including India, Thailand, Singapore, China and Japan. Stand out starters were the Wow Wonton, the Thai Pani Poori Shots and the smoked Tandoori Sushi, which gives a smoked taste initially then the spice gently kicks in. www.connector.ae

The variety of creative tasty dishes continues throughout the menu with the Twice Cooked Mushrooms, Famous Cheese Balls, filled with smooth molten cheese and the Singaporean Laksa, all of which very pleasantly surprise in how vegetarian dishes can be so tasty. This was emphasised with the Charred Soya Wings. Served on skewers and cooked in a honey and garlic coating, with chilli potato wedges and sweet chilli sugar snaps, so tasty we could be forgiven for thinking we were eating chicken skewers. Considering it was a Sunday evening and Tum Tum Asia has only been open since mid October, the constant stream of customers shows that the brains behind it, Chef Akshay Nayyar, has created a hit and a must visit for everyone. And with starters ranging from Dhs 20 and mains going up to around Dhs 40 you could go often and eventually try everything on the menu. C raig Best earned the title Head Chef at Marina Social after thirteen years of culinary experience amongst some of the industry’s leading venues and chefs. Beginning his culinary experience at notorious Chef Gordon Ramsay’s restaurants, Craig had a fantastic step into the world of culinary excellence. The four-yearjourney included experience at both The Devonshire and The Warrington where Craig worked his way up the ladder, from demi-chef to sous chef. Continuing his impressive career debut, Craig joined La Trompette, a 1 Michelin Star restaurant in London as Chef De 40 DECEMBER CONNECTOR

Partie. His responsibilities included running the kitchen, including the pastry, ordering stock and assisting the menu changes. For two year he excelled in his role, which eventually landed him a Head Chef position at Michael Nadra Chiswick. One year later, Craig ventured backwards as Sous Chef at heavily acclaimed Tredwell’s & The Gilbert Scott, both Maruc Wareing restaurants. Surpassing his talents after one quick year, Craig made the big move to Dubai, where he took on the role, yet again as Head Chef, at Social Wine & Tapas. RECIPE YULE LOG SPONGE Recipe 3 eggs 85 grams sugar 85 grams flour 30 grams cocoa powder Method: Preheat the oven to 200C (390F). Beat the eggs and sugar together with an electric whisk for about 8 min until thick and creamy. Mix the flour, cocoa and baking powder together and fold in the egg mixture carefully. Pour the mixture on to a baking tray lined with parchment paper and bake for 10 min. Take it out of the oven and let it rest for 15 minutes to cool at room temperature. YULE LOG CREAM Recipe: 50 grams butter 140 grams dark chocolate 15 grams golden syrup 284 grams double cream 200 grams icing sugar

Method: Melt the butter and chocolate together in a bowl over a pan of hot water. Remove from the heat and stir in the syrup and half of the cream. Beat in the icing sugar until it’s smooth and whisk in the remaining cream until it holds its shape. METHOD TO MAKE THE LOG: Once the sponge has cooled, remove from the parchment paper and cut the edges to make it look like a rectangle. Spread the cream on top and then roll it into a log shape. Cut a thick diagonal slice from one end of the log and lift the log on to a plate. Now arrange the slice on the side with the diagonal cut against the cake to make a branch. Spread the icing over the log and branch without covering the ends. Use a fork to mark the icing to give the effect of a tree bark. Scatter with unsifted icing sugar to resemble snow and decorate as required.

The Problem: Sticking to your diet The Solution: You’ve spent weeks - or even months! - sticking to a sensible eating and exercise plan that’ll ensure you fit into your slinkiest party frocks, but as soon as December 1 rolls around, the parties start stacking up, your schedule goes crazy and all your hard work goes to waste (or should that be waist?) However, party season needn’t be a food free for all, and with some careful planning, you can end the season as slim as you started. Choose beverages carefully and alternate with water throughout the night to fill your tummy. Remembering and accepting the quirks and personalities of all your family members will also lessen your stress. Also bear in mind that even though it’s a party you don’t have to overindulge on food and drink. Make the focus of the event catching up with friends and colleagues as opposed to consuming as much of the buffet as possible, and if you want to make a quick exit, drive instead of getting a cab. Don’t be afraid to bail early using the kids or work as an excuse - as long as you’ve spent ample time with your host and have worked the room, no one will begrudge you an early bedtime. If you can’t face another dinner, opt to ‘pop by’ instead, telling your host, “I can’t stay for dinner, but I’d love to meet you all for a drink beforehand.” This will ensure you’re back on your sofa recharging and having done 54 DECEMBER CONNECTOR

Begin by checking in with friends and family about who to buy for. If you have a smaller budget, you might decide to only buy for each other’s children, or do a pot luck or Secret Santa. And although you might prefer to surprise family and friends with their gifts, you can take a lot of stress out of festive shopping by asking what it is they would really like. This is a win-win as they get a gift they actually want, and you can cross their name off your list super-fast. Work as a Team Don’t try to take everything on yourself. Write a list of what needs to get done and then ask your husband to partner with you in tackling every item on that list. All too often we feel like we are expected to do everything and end up resenting our partner’s lack of help. If we don’t ask though we will not get. Create a Spending Plan Together discuss what you are willing and able to spend for the holidays. Reaching an agreement on gifts, food, socialising and travel money, can keep arguments at bay. Christmas tends to be one of those holidays where we massively overspend. Typically, because the marketers are so good at making us think we must get that extra thing for the holiday. Christmas trees and advent calendars used to be enough for example and now it is decorations and food galore. There is no shame in recognizing and saying if you can’t afford to do what you want to do this year or what you’ve done in the past. Let it be and find more costeffective alternatives. When it comes to gifts most children will remember the one to one attention given, than the toy. I can’t remember much what my grandparents gave me, but I can remember the way my granddad used to play games with us. The fact is, couples who can agree on a budget, not only find an extra weight has been lifted from their shoulders, they reduce the chances of a blow up later. If you are worlds apart on what you want to spend, keep talking until you find a compromise. I have found working with countless couples now that most arguments around Christmas come back to childhood wishes, get to the feelings behind what you want, so you can often resolve differences quickly. 56 DECEMBER CONNECTOR

Carve Out Couple Time I cannot tell you the amount of times couples will come to me and say, “we are having trouble communicating” and when I ask more questions, it is clear that the problem is they are not making time for each other, hence the poor communication. Text messages do not build closeness, love or togetherness. If you want to sail through the season, you need to carve out time for the two of you and be fully present when doing so. This means phones and screens away, to show affection, appreciation and attention to one another.

4 Don’t let family come between you It is important to “have each other’s back” especially during busy and stressful times. We need to feel each other’s support when it comes to children, extended family and even work. Supporting each other’s roles in the relationship is critical during the holiday period. When it comes to family members it is key to remember that they won’t change just because it is Christmas. They can and will act in ways that hurt us or our partner. Use this holiday time to develop inner strength and become closer through it. Rise above any negative comments by letting them go. What helps me when my mum puts me, or others down is to say to myself that “only people who are hurting hurt”.

Take Time Out Whether you are going back home for Christmas or having all the family visit you in Dubai it is essential to have a “get out of jail free card.” By that I mean having an agreement with each other that if the stress is too much and you need a break you support each other to escape. The excuse you use: going to the shops, headache or taking a phone call, doesn’t matter, what is important is resting and taking time for yourself when it all gets too much. You and your relationship will be in a much better place when you feel calm, centred and supported.

Keep your gratitude attitude alive As hard as it may be at times, remind yourself that what we see on the sparkly Christmas movies doesn’t exist in reality. HEALTH & WELLBEING Longer term, the gaunt skin of a 40 year old heavy smoker resembles that of a non-smoking 70 year old: • Facial wrinkles and furrows (e.g. crows’ feet at lateral canthus, vertical ear crease, smoker’s lines around lips) • Baggy eyelids and slack jawline • Uneven skin colouring: greyish, yellow with prominent blood vessels (telangiectasia) • Dry, coarse skin Sleep and skin aging A Swedish study showed that sleep deprivation affects facial cues in a negative way. Sleep deprived individuals were noted to have hanging eyelids, swollen eyes, darker circles and more droopy corners of the mouth. Poor sleep quality as ascertained by Pittsburgh sleep quality index, and sleep duration of less than 5 hours was shown to be associated with increased signs of intrinsic aging and decreased skin barrier function. Alcohol consumption Excessive alcohol (ethanol) intake or alcohol abuse can result in many health problems and is implicated as a cause or aggravating factor for several skin conditions. • Telangiectasia One of the earliest signs of alcohol abuse is a persistently red face due to enlarged blood vessels (telangiectasia). This appears because regulation of vascular control in the brain fails with sustained alcohol intake. • Flushing Transient flushing is also a common side effect of alcohol, particularly in heavy drinkers. It is due to acetaldehyde, the main breakdown product of alcohol. Acetaldehyde is thought to cause flushing by stimulating release of histamine. Up to 40% of alcohol consumers experience flushing and elevated heart rate after drinking even minimal amounts of alcohol, due to accumulation of acetaldehyde. • Hyperpigmentation Skin darkening (hyperpigmentation) around the eyes, mouth and on the legs, may be associated with chronic liver disease. www.connector.ae

• Generalised pruritus Generalised skin itching (pruritus) may occur due to the build-up of poorly metabolised substances that stimulate nerve endings in the skin. These substances may include bile salts, histamine, corticosteroids and opioids. • Nail changes • Skin cancer Along with increasing the risk of liver, pancreatic and breast cancer, alcohol increases the risk of skin cancer. • Nutritional deficiency Nutritional deficiency can develop when alcohol replaces normal food in the diet and the digestive tract and liver do not digest and process food the way they should resulting in malabsorption. With little calorie or protein intake the skin becomes dry and loses elasticity. To maintain healthy skin, along with a balanced lifestyle, sticking to an anti aging regimen is also advised. Several anti-aging strategies have been developed over the years. Antiaging creams are applied to the face, neck and hands long term. These may contain: • Sunscreens • Fruit acids • Vitamin C • Topical retinoids • Growth factors Fillers and Botox can be injected under the skin to disguise crows’ feet lines, smoker’s lines and some scars. vision problems We give you the low down on the symptoms to look out for, causes and treatments with our handy guide‌

T o see an object clearly, light reflected off the object passes through your eye to focus on your retina. Common vision problems occur when the light fails to focus correctly on your retina, so the object you are looking at appears blurred. Myopia (nearsightedness) Myopia, short-sight or nearsightedness are common symptoms to describe a condition in which someone cannot see far objects clearly. Myopia is the most common refractive error of the eye, and it has become more prevalent in recent years. In a recent study, National Eye Institute declared growth of numbers of patients 60 DECEMBER CONNECTOR

with myopia from 25% in the 70’s to around 41% in the last decade. Through the exact cause for this increase in near-sightedness is unknown, doctors feel it has something to do with eye fatigue from computer use and other extended near vision tasks, coupled with genetic predisposition for myopia.

Myopia: Symptoms and Signs Myopes will typically have difficulty reading road signs and distant objects clearly but will be able to see well for closeup tasks such as reading and computer use. Children with myopia can easily be identified by their parents as they need to come close to objects such as a TV to #connectordubai


HEALTH & WELLBEING view more clearly and will have difficulty in seeing school white/black boards, so they may have problems with learning. Other signs and symptoms of myopia may include squinting, eye strain and headaches. Feeling fatigue when driving or playing sports can be a symptom of uncorrected myopia.

What Causes Myopia? Myopia occurs when the eye ball is too long, relative to the focusing power of the cornea and lens of the eye. This causes the light rays to focus at a point in front of the retina rather than directly on its surface. Myopia can also occur by the cornea and/ or the lens being too curved for the length of the eye ball. Typically, myopia begins in childhood with more risks if the parents are myopes and in most cases, stabilises in early adulthood, however, some cases, especially those with high errors may continue to progress with age.

Myopia Treatment Myopia can be corrected with glasses, contact lens or refractive surgery. Eyeglasses lenses, high- index lenses (for thinner and lighter glasses) with anti refractive coating is a good choice. Also, photochromatic lenses, that protect your eyes from UV and high-energy blue light, can be used to reduce your need for a separate pair of prescription sunglasses outdoors. Contact lens are a good option for managing myopia especially for those who are not happy with their glasses, or those whose everyday activity can be interrupted with using glasses as athletes. However, excessive contact lens wear can be dangerous to your eyes, especially for those who were using contact lenses for years as it carries higher incidence of allergies and infections to the eyes. www.connector.ae

Refractive surgery can reduce or even eliminate your need for glasses or contact lenses. The most common procedures are performed with an excimer-laser. Refractive surgery for myopia started more than 25 years back, and now with the recent advancement in technology, the laser vision correction procedure has become one of the most successful surgeries with a success rate that exceeds 98%, with a very fast recovery (few days) and going back to full normal life activity in less than a week. The principle concept of laser vision correction is to flatten the cornea with laser to allow high rays to focus directly on the surface of the retina. Various modalities of laser vision correction are available now like PRK, Lasik, Femto-Lasik, and smile technique. A computerised analysis of the cornea (Corneal Topography) is a mandatory investigation to be completed before surgery, in addition to a full eye examination, will determine the most suitable procedure to be done for each case. Laser vision correction is usually done after stabilisation of vision (around the age of 21) and it is not advisable before the age of 18 years except in very rare circumstances. Laser vision correction can cover a sizable percentage of patients (up to 90% of myopes), however it is contraindicated for some cases such as a keratoconus patient with severe dry eyes or a patient suffering auto-immune disease. Patients who are not good candidates for laser vision correction (thinner than normal cornea, keratoconus and patients with high errors of refraction) can still get an opportunity to get rid of their glasses through many other procedures like implantable lenses (phakic IOLs) that work like contact lens, except they are surgically placed within the eye. It is typically permanent, which means no maintenance CONNECTOR DECEMBER 61


HEALTH & WELLBEING is needed. These lenses (unlike IOLs in cataract surgery) do not replace the eye’s natural lens which are left intact. Hyperopia (far-sightedness) Hypertropia is a common vision problem affecting about a quarter of the population. Patients with hyperopia can see distant objects very clearly, but have difficulty in focusing on objects that are up-close.

Hyperopia: Symptoms and Signs Far sighted people usually have eye strain, headache and sometime squinting when performing work at close range. Causes of Hyperopia This vision problem occurs when light rays focus behind the retina rather than directly on it. The eye ball of this person is usually shorter than normal. Children are usually born farsighted, and some of them outgrow it as the eye ball lengthens with normal growth. Hyperopia should not be confused with presbyopia (normal difficulty in near-vision after age of 40 years) Hyperopia Treatment Hyperopia can be corrected with glasses, contact lenses or laser-vision correction surgery. For glasses, high-index lenses are a good option as they are thinner, lighter and have a slimmer more attractive profile. Also, aspheric lenses are a good option since they reduce the 62 DECEMBER CONNECTOR

magnified “bug eye” appearance eye glasses for hyperopia can cause. Light weight poly carbonate lenses are a good option for children with hyperopia since they are more comfortable and more resistant. Refractive surgery such as Lasik or CK (conductive-keratoplasty) is a good option for treating hyperopia with the same precautions mentioned for myopic patients. Corneal implants are under investigation and could be a future option for hyperopia correction. Presbyopia According to the American Academy of Ophthalmology, presbyopia is defined as a normal loss of near focusing ability that occurs with age. Most people start noticing the effects of presbyopia after the age of 40, when they start having a trouble seeing small print clearly. You cannot escape presbyopia, even if you have never had any vision problem before. Even people, who are near sighted will notice that near vision blurs when their wear their usual eye glasses or contact lenses to correct distant vision. Worldwide around 1.3 billion people had presbyopia in 2011 and these numbers are expected to increase to 2.1 billion by 2020. Though presbyopia is a normal change in our eyes as we age, it often has a significant and emotional effect because it is a sign #connectordubai

Causes of Presbyopia Presbyopia generally is believed to stem from a gradual thickening and loss of flexibility of the natural lens inside the eye. Symptoms and Signs of Presbyopia Usually when you became presbyopic, you need to hold your phone and other reading material further from your eyes to see clearly. Presbyopia can cause headache, eye strain and visual fatigue that makes all near tasks uncomfortable and more tiring. Presbyopia Treatment Glass contact lens and refractive surgery are all good options to treat presbyopia. Reading eyeglasses, bifocal glasses and

progressive (multifocal) lenses are all available options to treat presbyopia. Contact lenses, bifocal and multifocal contact lenses are good options to treat presbyopia without glasses. Why is a Christmas pet a mistake? First, because no animal should be a surprise. The arrival of a dog changes the dynamics of a household considerably. Someone must take responsibility for their daily needs - feeding, exercise, health care and grooming. The decision should be considered, talked about and negotiated. A new dog, not necessarily a puppy, either, should be the result of a process, not an impulse.

Pets should not be surprises Surprising a loved one with a puppy or kitten on Christmas morning is a romantic but usually misguided idea. Yes, the recipient may be extremely excited and happy with a new puppy or kitten, 64 DECEMBER CONNECTOR

but unless the ‘surprise’ has been well researched and thoroughly planned for, it can be a risky thing to do. It’s hard to resist a warm, furry little bundle under the tree on Christmas morning, but unless the new pet parent is wholly committed to the idea of raising a puppy or kitten, the bloom can come off the rose in a hurry.

3 A pet for a child shouldn’t be viewed as a new toy Children should not be encouraged to think of a new pet as just another toy under the Christmas tree. It’s a clever idea to separate the idea of presents and toys from the realities and responsibilities of pet ownership. A living creature shouldn’t be considered the same kind of ‘wow’

ANIMAL MAGIC Christmas gift as, say, a new bike or the latest Xbox console. Caring for a dog or cat is a big responsibility and far different from getting a new toy that is taken out, played with, and put away again. It’s important to impress upon a child the difference between their belongings and their pet, from the very first minute a new dog or cat enters their life. Even if your child is pleading for a pet and you think they are old enough to take on the responsibility, I recommend you keep the ‘pet project’ separate from the holiday festivities. A dog is for life, not just for Christmas- not for the short term, not for the wow-factor, and most certainly, not as a toy.

4 Pet stores, backyard breeders, puppy mills. In the weeks leading up to Christmas, certain disreputable individuals and businesses are bursting at the seams with all the latest popular puppy models. Most of these babies are shipped in from puppy mills. Some are healthy, but many are not. All are bred and born in inhumane, often filthy conditions. Are you really prepared to pay huge vet bills for the rest of the pet’s life? www.connector.ae

Every time a dog is purchased from an irresponsible breeder or mill operator, it is an incentive for those businesses to stay up and running. So, while you may give a puppy mill baby a lovely home for Christmas, her mother remains back at the mill, having litter after litter until she’s too sick or old to reproduce - at which point she’s disposed of.

5 Opt for a rescue pet, you will save a life Sadly, many Christmas dogs do still end up abandoned or surrendered to shelters in the early part of the New Year.

If you and your family really want a dog, choose it carefully, and take your time. Get one from an experienced rescue group, or an established animal shelter. Ask lots of questions about the dog; expect the staff to ask you a lot, too.
