EDITOR’S NOTE The Holy Month of Ramadan is expected to start in the middle of May and this issue of Connector has a very strong Ramadan feel about it. In our cover feature this issue, "Thirty Nights Of Ramadan”, we highlight just 30 of the many wonderful Iftars you can experience throughout Ramadan. We have also spoken to some of the schools in Dubai and asked them how pupils share and experience Ramadan in the class room. Keeping with a cultural theme, our chef’s recipe this month comes from Seven Sands, the leading Emirati restaurant located in JBR, where they show us how to make the perfect Lamb Ouzi. We all know the heart is up there as one of the most useful organs in our body, and in our health section this month we look at what it does, why maintaining a healthy heart is important and if there’s a problem looming, what are the early signs. Everyone likes to accesorise and in this issue we bring you some of the latest accessories to add that extra something to any outfit for any occassion. There's a lot in here for a busy month. The Holy Month of Ramadan is upon us:
A time for charity, reflection, and growth.
R amadan is a time when Muslims fast from sunrise to sunset, abstaining from not only food and water but so much more than that. It is a time for humility so that the hunger of the one fasting reminds them of the blessings they have been given, the effort that one can put into the community, family and especially the less fortunate. It is also a time of cleansing of one’s self and personal inhibitions and vices for development of a better self. Whether it be abstaining from gossip, from cursing, from smoking or whatever else. What is Ramadan? In Islam, fasting or in Arabic- Sawm is one of the main five pillars, including Faith (Shahada h), Prayer (Salah), Charity (Zakah) and pilgrimage to Makkah (Haj). 18 MAY CONNECTOR
Although fasting may be observed any time in the year, it is especially dedicated to the Islamic month of Ramadan. In the Islamic calendar, it was during the month of Ramadan that the Prophet Muhammad (PBUH) received the first revelations of the Qur’an. The month lasts for about 30 days and the exact dates vary year to year by the Islamic lunar calendar. Though this year’s dates are predicted to fall around 16 May- 14 June, the exact starting date will not be announced until the crescent moon rises and the month will end when the new crescent moon has been sighted. When the new crescent moon is sighted, the month ends with a three-day celebration called Eid Al-Fitr, Muslims officially stop fasting and spend the days with joyous festivities, exchanging #connectordubai
RAMADAN FEATURE gifts, adorning new clothing and spend it with family and friends. During Ramadan, Muslims around the world share certain common traditions. The fast itself begins with a pre-dawn meal called Suhoor and is broken at sundown with a meal called Iftar and traditionally with a date, as was done by the Prophet Muhammad (PBUH). Along with abstaining from all food and drink, Muslims perform regular prayer, with the five daily prayers and additional prayers during the night called tarawih, of which about 1/3 of the Qur’an will be recited until by the end of the month all 114 chapters will be complete. The month also has days of which are considered even more special to be observed, especially the last 10 days and among them the night of ‘LailatulQadr’ translated as the ‘the Night of Power’. “Fasting can become a power source of body, mind and soul. It helps renew your body and mind and create a deeper awareness of your soul” says acclaimed Saudi Life Coach, Dr. Sumaya Alnasser. Muslims consider this time incredibly valuable to take advantage of the increased prayers and to reflect upon the year and the coming year ahead to develop one’s self to be better individuals for not only family- but also society as a whole. isn’t about deprivation but fulfillment. To share in wealth and food bringing family and communities together, especially to the less fortunate and to become humbler, more forgiving of others, modest, empathetic and overall better version of themselves. Ramadan for All “Ramadan is not just a month for Muslims but can be celebrated by everyone regardless of your faith- after all a huge component of the month is community” says Dubai resident Amena Faizan, she’s lived in Dubai for 6 years and has celebrated the month with many of her non-Muslim colleagues and friends. “Everyone is welcome to join in on trying out the fast for a day or two. There is no guideline or limitations when it comes to experiencing the month” she adds. It is especially encouraged to take part in charitable giving, whether it be through volunteering, donating, or with the countless grand Iftar and Suhoor celebrations, and everyone is welcome to join in on the delicious foods, even if they are not fasting. Here in Dubai, the city itself tends to slow down but picks up at night. As ascribed by UAE law, there are shorter working hours for everyone. During the CONNECTOR MAY 19
RAMADAN FEATURE day it is recommended to respect the Holy Month by refraining from eating, drinking and smoking in public areas. Nevertheless, most restaurants and cafes will be open for non-fasters but with pulled down shades or curtains. It is also recommended that everyone dress and behave appropriately, it is also advised to wear modest clothing, typically covering the shoulders, chest and knees as well as keeping music volumes down when driving out. Tips for the month: • Use the month’s greetings ‘Ramadan Kareem’! • Take the family to dine at an Iftar or Suhoor tent and experience the Ramadan spirit. • Get to know the neighbours! Send some food over if they are fasting or if they are not- send food anyway. • Explore the city when the night comes alive. Malls are open late, as well as numerous cafes and restaurants. • Remember to be mindful of the rules during the month. Especially that during the day no eating, drinking or smoking is allowed in public. • Participate in the season’s charitable spirit by getting involved in the many opportunities across Dubai. Iftar being the most important meal for so many reasons, we have researched through Dubai’s extensive Iftar offers and have brought a list of 30 iftarsone for each day of the month for you. T here is probably no simpler, more relaxed and friendlier type of dining experience than in a churrascaria, and now there is somewhere new to enjoy this. Fogo de Chao meaning “fire of ground”, is Dubai’s newest Brazilian churrascaria restaurant recently opened in DIFC. For those of you new to this type of restaurant, it is a meat lover's dream. The concept and menu is simple. Each setting has a circular card placed next to it, green coloured on one side and red on the other. If the green side is showing then passadores (waiters) come to your table, each carrying a different cut of meat, and carve for you. Had enough? Turn over to show the red side. Fogo de Chao is the first UAE restaurant and second in the Middle East of the restaurant chain founded in Brazil some 40 odd years ago, and now boasting over 50 restaurants in six countries globally. The menu is simple, you choose from one cut of meat, or the option of a continuous supply of the most popular cuts, or the Fogo Churrasco Experience- every single cut available, continuously coming to your table. RECIPE LAMB OUZI Ingredients Hashwa mix 5kg Whole baby lamb 20ml Corn oil 100g Channa dhal 20g Cinnamon stick 1 Green chilli (whole) 50g Cashew nuts 2kg Basmati rice 50g Brown onion (sliced) 20g Bezar 1g Saffron 2 Bay leaves 10g Raisins Pinch Salt Yoghurt sauce Masala mix 2 litres Natural yoghurt 10g White onion 200ml Corn oil 40 Red onions (sliced) (chopped) 100g Salt 5kg Tomatoes 50g Coriander 30g Fresh coriander 4 Bay leaves For garnish 4 Cinnamon sticks 5 Cloves (optional) 5 Red onions (sliced) 2 Green chillies (chopped) 20ml Corn oil 20g Ginger (chopped) 2 Garlic cloves (chopped) Handful Fresh coriander 50g Tomato paste 75g Ghee 100ml Bezar Method: 1. Preheat the oven to 180 degrees Celsius / 355 Fahrenheit 2. Place the lamb into a large pan of cold water (if needed, cut the lamb in half and use two pans) with the saffron, chili, bay leaves and a pinch of salt. Bring to the boil then reduce to a simmer for 30 minutes. 3. While the lamb is simmering, prepare the Masala, Hashwa mix and Yoghurt sauce (see below) 4. After 30 minutes, drain the water from the pan and coat the lamb with the Masala mix. Set the remainder of the Masala mix aside for later. 5. Cover the meat in foil and put the meat in the oven for 45 minutes or until the meat soft and tender 6. Cook the basmati rice (as per the pack instructions) with a pinch of salt, cloves, cinnamon and bay leaves 7. Place a layer of rice in a dish, followed www.connector.ae
by a layer of the remaining Masala mix. Repeat until all the rice and Masala mix is used 8. Transfer the rice and Masala to a large serving platter, and place the Masalacoated lamb on top then garnish with fresh coriander, Hashwa mix and fried onion To make the Masala mix: 1. Heat the corn oil in a frying pan over a medium heat then add onion and sautĂŠ until golden in colour 2. Add coriander, bay leaves, cinnamon, cloves, green chilies, garlic, ginger and Bezar mix and fry for another minute before adding the tomatoes, tomato paste and ghee 3. Bring the mixture to boil. Simmer for 10 minutes. To make the Hashwa mix: 1. Boil the Channa dhal as per pack instructions and then strain the water 2. Heat the corn oil in a frying pan over a medium heat then the onion and sautĂŠ until golden in colour 3. Take the pan off the heat and add the Channa dhal, cashew nuts, Bezar and raisins. Mix together. To make the Yoghurt sauce: 1. Mix all the ingredients together in a bowl 2. Serve as a condiment for the lamb

An Egg-celent dish for Suhoor. The Egga is known to be the Egyptian frittata, usually preferred as a breakfast meal. It consists of Beaten eggs, tossed in olive oil with vegetables, and baked to goodness! This dish is a super simple and healthy one. Ingredients ½ Onion ½ Tomato 100g Al Islami Mixed Veggies 4 Eggs 30ml Olive Oil ½ tsp Salt ¼ tsp Black Pepper Herbs for garnish Instructions • Cut the onion in small cubes. • Sweat the onion with the olive oil until soft on medium heat. • Add the tomato and Al Islami mixed veggies. Cook for 2 minutes. • Break the eggs in a bowl. Season with salt and pepper. • Add the vegetables and herbs. Mix until smooth. • Transfer to baking dish and bake in the oven at 180 degrees Celsius for 12 minutes. • Remove from the oven, garnish with fresh herbs and enjoy. • Ramadan Kareem

Date and Strawberry Rice Pudding
Start the Holy Month of Ramadan on a sweet note! Enjoy a classic strawberry rice pudding with an Emirati twist. The Date and Strawberry rice pudding is popular for its rich flavor with ingredients such as saffron, strawberries, almonds, pistachio powder, and date syrup. Ingredients 200g Al Islami Strawberries, thawed 200ml Milk 300g Rice, cooked 20g Pistachio powder 3 pods Green cardamom Saffron 80g Date syrup Instructions • Peel and wash the potato. • Bring two pots with water to a boil. Put the eggs in one and the potato and chicken in the other one. When the eggs come to a boil reduce the heat to a simmer and time 10 minutes for them to be ready. • Cool down the eggs, peel and cut in half. When potato and chicken are ready remove from the water and cool down. Slice both to mouthsize pieces. • Toast the peanuts in a pan until golden. Put into a food processor adding the sugar, shrimp paste, chili and garlic. Blitz until smooth, if neccesary add water and soy sauce for smoothness. • Transfer to a bowl and incorporate the soy sauce and tamarind. Adjust the thickness with water. • Put the sauce on the plate as a semi circle. Arrange the chicken, potato, egg and green beans. • Garnish with herbs, green onion and the bean sprouts. • Squeeze a lime over the salad and enjoy #connectordubai

Hilsa Prawns with Rice Balls
A staple traditional dish which the Muslim community prepares during the Holy Month of Ramadan in Bengal. This appetizing recipe consists of prawns, coriander, turmeric and green chilli along with golden brown shallow fried rice balls that compliments the dish. Ingredients 500g Al Islami Cooking Shrimps 3 pieces Green chili, chopped 100g Onion www.connector.ae
Instructions • Grind the chill and mustard seeds. • Cut the onion in small cubes and sauté until golden. • Add the rest of spices and cook until smooth. • Add the prawns and let it simmer on medium heat for 5 minutes. You can add water to make it a wetter curry. • In a food processor blitz the rice, coriander and salt until coarse. • With wet hands shape the rice into small spheres. • In hot oil, shallow fry the rice spheres until crispy and golden. • Put the curry on the center of a plate. T he Holy Month of Ramadan is set to begin this month around 17 May and will span throughout the school term. Hence, it is an utmost duty of schools to provide an environment ensuring well-being of students, especially one where they can feel safe to practice their religion. This month’s education feature, hence, focuses on how schools are preparing students for Ramadan, what education they include on the Holy Month of Ramadan, how do they make the month special in schools, and how is the school day different, if at all. Educating new staff and school community Schools take various initiatives to educate community members, coming from nonMuslim backgrounds, about the concept and importance of Ramadan. Jumeira Baccalaureate School (JBS) said, “At Jumeira Baccalaureate School (JBS), we have a multi-cultural environment with nearly 70 different nationalities and multiple religions. It is therefore important that teachers and classmates who aren’t fasting understand why Muslims fast. To do that, in the run-up to Ramadan we carry out assemblies for both primary and secondary schools about fasting, how it is celebrated around the world and how different cultures mark the Holy Month of Ramadan. In our secondary school we also welcome guest speakers who educate students about a wide array of different topics, including how to eat healthily during Ramadan and the effect that fasting has on the body.” Sabah Rashid, Head of Primary of the Swiss International Scientific School (SISD) in Dubai said, “Our community members can be new to Dubai and often to Ramadan. We communicate the concept #connectordubai
KIDS & EDUCATION of Ramadan to our staff members through HR with comprehensive information about the cultural, religious and celebratory aspects of the month. The Islamic Studies department work with classroom teachers to hold student-led assemblies, maintain displays and offer optional activities. Some non-Muslim children choose to experience fasting.” Charity and kindness drives Ramadan teaches the community to be more compassionate, and practice empathy. Hence schools initiate various charity drives to instil the values of kindness in students. Imad Nasr of JBS added, “Kindness, forgiveness and charity are practiced throughout the month in the form of whole school charity drives. Ramadan teaches our community to be more compassionate and empathetic to those who are in need, and many of our students become involved in Dubaiwide charity initiatives. We also try to incorporate kindness, forgiveness and charity into our lessons on a daily basis, helping our students to understand the true meaning of Ramadan.” Sabah Rashid of SISD mentioned, “We participate in the Ramadan Fridge campaign, providing a fridge for the public in our neighbourhood. The fridge is monitored and filled regularly together by the SISD student, parent, and staff community for the entire month of Ramadan. items that are then distributed to the construction workers contributing to our beautiful school campus building site for the two additional remaining boarding houses. This provides a comfortable interface between students and workers with evident mutual appreciation.” Reduced school hours KHDA announces special school timings during Ramadan. The class lengths are generally reduced to adapt to special Ramadan school hours. Imad Nasr of JBS throwing light on school timings during Ramadan said, “Yes, the school day changes for our entire community. The day gets shorter and the length of classes are adjusted to reflect this. This year’s timings are yet to be confirmed by the KHDA, but last year students were in school from 8:30am until 1:30pm, whilst staff worked from 8am until 2pm.” Different tasks for students fasting Besides reduced school hours, there are separate homeworks and assignments for students fasting. The effort is to support students in practising their religious beliefs. Deema Al Alami, Vice President Arabic & Islamic - GEMS Education said, “Teachers also make accommodations for fasting students, for example, PE teachers assign a different task/project for students who fast and are unable to engage in highintensity exercises.” CONNECTOR MAY 47

KIDS & EDUCATION Designated eat & drink areas for nonfasting members In order to make environment friendly for non-fasting members, schools have designated areas where the non-fasting members can eat and drink without disrespecting the fellow fasting members. Imad Nasr of JBS on being asked about any special reservations for non-fasting members said, “Lunchtime is probably one of the challenges during Ramadan. At JBS, there are designated areas of the school for members of the community who aren’t fasting to be able to eat and drink, whilst still respecting the feelings of fasting students and staff.” Ramadan fetes The schools take a step ahead to celebrate the spirit of the Holy Month of Ramadan. Some arrange Iftar meals for the school community to embark on values of sharing and others decorate the corridors with Ramadan themed items. Nikki Sharkey, Deputy Head Pastoral, Foremarke School Dubai said, “Foremarke will host an annual Iftar, encouraging pupils and parents to join for a scrumptious meal. As a preRamadan treat, the school will also host entertainment and events including a special performance by a professional Arabic Dance Group.” Deema Al Alami of GEMS Education further added, “Ramadan is a beautiful month in our schools. their corridors with Ramadan themed items such as lanterns, crescents and other ornamental items mostly designed by students and staff. Many schools have different prayers and duaa’s and Ramadan greetings displayed across the school.” Imad Nasr of JBS said, “For staff we hold an Iftar, which encourages both Muslim and non-Muslim staff to join together to mark the breaking of the fast. Prior to Ramadan beginning, our Parent and Friend Association also organise a Ramadan workshop with an array of fun and educational activities designed for the whole family to highlight the upcoming Holy Month.” Quran competition & cultural education Sabah Rashid of the SISD said, “Students practice their Quran recitation with Tajweed and can also opt to participate in a recitation competition during Ramadan. Imad Nasr of JBS said , “ JBS’s International Baccalaureate curriculum is based around encouraging students to become independent enquirers, fostering their research skills. As such, within lessons over the Holy Month, students are encouraged to research how Ramadan is celebrated in different cultures. This learning is integrated into assemblies where students participate in talks and performances, and in Arabic lessons students are encouraged to talk about how Ramadan is marked within their own cultures and communities in Arabic.” CONNECTOR MAY 49

interruption in the pumping of blood by the heart due to blockages in the blood tubes” adds Specialist Internal Medicine at Mediclinic Al Bahir, Dr. Raji Mathew “these blockages occur due to the deposition of cholesterol and related material within the lumen of the blood tubes.” Dr Ilaria Saredi Family Medicine Specialist at Allied Medical Center says that other common heart diseases include valvular heart issues. “There are four valves in our heart (aortic, pulmonary, tricuspid and mitral) that make sure the blood flow stays in a one-way direction through the heart circulatory system”, she says. Problems arise when a valve becomes too stiff restricting the blood flow, or even becoming leaky cause blood to flow backwards. Other illnesses include Arrhythmias which are when there a disturbance leads to the heart having skipped, abnormally fast or low heart rates, heart failure. Another is Angina, when the heart muscle cannot pump to meet the body’s demands for blood and oxygen causing discomfort in your chest, arm, neck, stomach or jaw. Dr. Allam Alkowatli at Emirates Hospital Dubai adds that other procedures to address heart disease include taking medication, often used to treat high blood cholesterol, high blood pressure, or heart disease itself, and advanced heart disease may even require surgical procedures to improve blood flow. It is best to make a lifestyle change to make sure you are maintaining a healthy heart. According to Dr. Haitham Al Hashimi, a study demonstrated that a combination of various lifestyle changes had the potential in reducing heart disease in men up to 80%. If you have certain risk factors of heart disease like hyper tension, diabetes, high tobacco uses and high cholesterol, these can be controlled with healthier choices in eating, maintaining a healthy weight and being consistently physically active. When it comes to nutrition, Dr. Ilaria Saredi at Allied Medical Center advises to adopt a balanced diet. “Aim to keep in check processed foods and saturated fat levels.” She says, “Watch out on red meat, salt, and sweet foods, try to add more fruit and vegetables to attain your 5-a-day goal. Don’t forget to switch to whole meal flour alternatives and introduce legumes that will be useful for your intestinal health.” Other tips to maintain a healthy heart include reducing stress, decreasing intake of alcohol and especially tobacco, maintaining a healthy weight according to your Body Mass Index, get enough sleep, and even make sure you take care of your dental hygiene- as those who have gum disease are often at the same risk factors for heart disease. #connectordubai

Uplifting facial at Burj Club
T he Burj Club has set the beauty goals as high as the tallest building in the world. Located next to Burj Khalifa, it spans over five floors featuring an indoor pool, ladies only gym and spa, mixed gym and spa and a rooftop pool and lounge. The royal treatment is experienced at every level. As you enter the club, you cannot stop but admire the beautiful views of the Dubai Fountain. The interiors exude luxurious vibes with soft wooden touches combined with white hues, mirrors and steel. The antique curtains made of metal chains are quite an attraction. I changed into a soft bath-robe kept in the dedicated locker- featuring a modern number lock security system. I then headed to the therapist lounge where lounge chairs were separated using the antique curtains. Cranberry juice and fruit skewers were served and I just could not stop admiring the views from the room. Once I had filled in the consultation card my therapist, Lizzie, was introduced to me. The treament I was booked in for was a facial and the particular treatment was explained to me 60 MAY CONNECTOR
in detail once my skin was assessed. The therapy room has warm tones, dim lighting and soothing background music. After a deep cleansing, Lizzie prepared for my skin assessment test. My skin type was evaluated to be sensitive, so the therapist recommended Resonance Facial. The treatment began with inhalation of an aromatic oil from a hot towel and a quick body massage, the combined effect of this relaxed both my muscles and mind straightway. The facial treatment included the application of an exfoliation mask followed by a gentle head and facial serum massage. After the exfoliation, followed an aromatic oil face massage and it concluded with the application of a resonance mask and a gentle hand massage. L ocated in Palm Jumeirah, Blow Out Bar is everything about hair except cuts and colours. The décor is quite chic and modern. It has a colour theme of green and white colours. On being asked about the colour theme, we were informed the salon offers hair treatments which are organic and use products which are cruelty-free. The salon opens at 7.30 am and specialises in hair services like different types of blowouts, hair-dos, braids and organic hair treatments. The façade of the salon is quite lavish designed with floor-to-celling glass windows. The entrance was the only sign that we were entering a modern hair salon. We reviewed the organic hair treatment, manicure and a blow out service, an experience that took two hours. The salon does manicures and hair treatments side by side to save time of course. The organic hair treatment is customised for you as per your hair condition. After carefully examining the hair, the stylist chooses an organic treatment which includes a deep head massage with essential oils followed by the application of a hair mask made of Greek curd and glycerine. www.connector.ae
Within the salon is an in-house café for its guests to sip a freshly brewed coffee and nibble some cookies while the treatment continues. Coming back to the hair, after the hair mask, a moderately hot towel was wrapped around my head which was replaced with the second hot towel after about fifteen minutes. Meanwhile, the manicurist proceeded with the manicure treatment. The head-wash post hair steaming took some time as they had applied oil on the scalp. However, the process was gentle and smooth. After the hand and hair treatments, the stylist asked for my preference of blow out. They have some quite chic options, ranging from ancient blow outs to beach curls to just a simple one. We went ahead with the beach babe curls and having short hair is no constraint. It took one hour but the stylist knew her job well, hence, the results were good. Key points to consider before rehoming a dog If you are planning a holiday, a house move, a new baby or a new job within the coming months, it might be a good idea to postpone your adoption until all of these distractions are out of the way.
