If you’re a fan of Jennifer Lopez, Ed Sheeran, Take That, Andrew Strong or Liam Gallagher then you’re in for a treat as they’re all performing live this month at various venues across the city. If that wasn’t enough to get you out and about there’s the story of one of the world’s most iconic figures, Nelson Mandela, brought to the stage in an original musical tribute, the Mandela Trilogy at Dubai Opera. For art aficionados, the opening of one of the world’s most anticipated cultural attractions, Louvre Abu Dhabi, on 11 November is something we’re very excited about. at Rixos Premium Dubai W e initially had difficulty finding the restaurant, walking around the cavernous confines of the hotel a couple of times before we were directed to the correct elevator down to the basement, through a maze of a corridor and finally outside. The Mediterranean beachfront restaurant is located adjacent to the swimming pool offering uninterrupted views of Ain Dubai and the sea. Seating is offered in either of the two large terrace areas or inside. As it was a particularly warm evening with high humidity we chose inside. As you stride in, you notice the fresh seafood displayed on ice, there’s everything from lobsters, scallops, sea bream, red snapper and mussels to sea bass and clams. It all certainly looks fresh and leaves a lasting impression. The kitchen is open with a viewing 36 NOVEMBER CONNECTOR

area, and well equipped with a charcoal grill, wood fired Italian pizza oven and rotisserie. The restaurant is decorated in washed whites and light blue interiors with a relaxed feel that reflects the Mediterranean traditions from the French Riviera and the Italian coastline, to southern Spain and Greece. We are seated and ready to order minutes later having already decided on main course when we walked in, I did say lasting impression didn’t I! The menu isn’t overly fussy with all the classics you’d expect combined with rotisserie dishes and the restaurants signature sharing platters. Our starters consisted of Prawn Pil Pil, cooked in white grapes and olive oil with garlic, chili flakes, cherry tomatoes and lemon; #connectordubai


THE REVIEW Alaskan Crab, avocado mousse topped with crab meat and citrus fruits (blood orange, orange and lemon); and a Burrata Caprese Salad, burrata cheese with slices of tomato and nectarine garnished with crispy basil leaves. The prawns were crisp and succulent; crab meat, sweet, delicate and soft with the added touch of the light creamy mousse and fresh zing of the fruits combining well; the burrata nice and creamy working wonderfully well with the sweet and tart taste of nectarine and tomato. Everything was so fresh, light and flavourful, you couldn’t fault anything including the portion size which is generous. Next up were the mains, whole Grilled Sea Bream served with a unique salsa verde and a medium temperature cooked Tenderloin. Our waiter filleted the fish, which was charred and crispy on the outside, at the table. The first

mouthful was meaty and tender with a fresh taste, not overly cooked. The salsa verde was delicious, I enquired on the ingredients and was informed it was chefs secret recipe. I could taste the parsley, anchovies, lemon and garlic but can’t quite put my finger on the remaining items. The tenderloin had a nice charred surface and executed perfectly as it melted in your mouth. The food quality, service and surroundings are excellent. Portion sizes are generous, and the price point is spot on. There’s too many overpriced restaurants in JBR already but Riviera Beach Grill certainly offers high quality food at an affordable price and a place I wouldn’t hesitate to return to. The perfect roast turkey For approx 10 people Ingredients 1 Turkey (approx. 16lb - 7kg) 6 oz - 175gms Soft butter 8oz (225gms) fatty streaky bacon salt and pepper Stuffing Sausage meat or Veal mince Fresh sage - dried will also work well 1 large onion - finley chopped 1 egg Turkey Giblet stock 1 medium onion 2 carrots - peeled and diced 38 NOVEMBER CONNECTOR

2 celery stalk Bay leaf 5 pepper corn Method… To make the stuffing, combine the breadcrumbs with onion and sage in a large mixing bowl, stir in a little boiling water and mix thoroughly. Next work the sausage meat into the mixture and season with salt and pepper. Leave the stuffing covered in a cool place - but not in the fridge, as it shouldn’t be too cold when you come to stuff the turkey. Pre-heat the oven to 425°F (220°C). Stuff the turkey by loosening the skin with your hands and pack the stuffing into the neck end, pushing it up between the flesh #connectordubai


GOOD FOOD and the skin towards the breast (not too tightly because it will expand while cooking). Press it in gently to make a nice rounded end, then tuck the neck flap under the bird’s back and secure with a small skewer. Don’t expect to get all the stuffing in this end - put the rest into the body cavity. Arrange two large sheets of foil across your baking tin - one width ways, the other lengthways. Lay the turkey in the center, rub it generously with butter, making sure the thighbones are particularly well covered. Next season the bird with salt and pepper, and lay the bacon over the breast with the rashers overlapping each other. Wrap the turkey in foil. The parcel must be firmly sealed but roomy enough inside to provide an air space around most of the upper part of the turkey. Bring one piece of foil up and fold both ends over to make a pleat along the length of the breastbone - but well above the breast. Then bring the other piece up at both ends, crimp and fold to make a neat parcel. The cooking… Place the roasting tin on a low shelf in the oven and cook at the initial high temperature for 40 minutes. Lower the heat to 325°F (170°C) and cook for a further 3 hours for a 12 lb bird (approx. 5.5 kg), or 3½ hours for a 14lb bird (approx. 6.3 kg), or 4 hours for a 16lb. Tear the foil away and remove the bacon slices to allow the skin to brown and crisp. Turn the heat to 400°F (200°C) and cook the turkey for a further 30 minutes. It will need frequent basting during this time. To test if the bird is cooked, pierce the thickest part of the leg with a thin skewer: the juices running out of it should be golden and clear. There should be no trace of pinkness in the juices. Remove the turkey from the roasting tin and transfer it to a warm carving dish. Leave it for 45 minutes to rest before carving. www.connector.ae

Top tips when cooking your turkey: • Baste regularly - it will help keep your bird juicy! • Calculate your starting time so that the bird should complete cooking at least 45 minutes before sitting down to eat. • Take the turkey out of the fridge the night before. This allows it to cool to room temperature so that it heats up immediately when you put it in the oven. • Prepare the stuffing and the vegetables the day before. Keep peeled veg in water in the fridge, it will stop them from drying out or going brown. The gravy… Put the giblets in a saucepan with halved onion, cover with 1½ pints (900 ml) water and bring to simmering point. After removing any surface scum with a slotted spoon, add the remaining ingredients. Half cover the pan with a lid and simmer for 1½ -2 hours. Then strain the stock and store, covered, in the fridge. Keep the juices that end up in the bottom of the pan from the cooked turkey and add to the Giblet stock. To make the gravy, tip the fat and juices out of the foil into the roasting tin - work the flour into the remaining juices over a low heat. Whisk in the Turkey Giblet Stock bit by bit until you have a smooth gravy. Serve with roasted potatoes and parsnips, cranberry sauce, buttered brussels and sweet buttered carrots. When it comes to the best secondary education for your child in the UAE, what are the options, benefits and qualifications pupils can expect from the British, American, International Baccalaureate and Indian curriculums? We reveal all…

Curriculum Overview British: The compulsory national curriculum subjects are the ‘core’ and ‘foundation’ subjects. Core subjects are English, maths and science, while foundation subjects are computing, physical education and citizenship. Schools must also offer at least one subject in the areas of arts, design and technology, humanities and modern foreign languages. American: The US Curriculum is based on American Common Core State Standards for English language arts, math, history/geography, science, social studies and physical education. International Baccalaureate (IB): Consists of a core and six subject groups, designed to give students a balanced education combining arts, sciences and extra-curricular activities. 44 NOVEMBER CONNECTOR

KIDS & EDUCATION How work is graded British: For GCSEs, a grading scale of nine to one is used, with nine the top grade, replacing the former A*-G grades. Assessment is mainly by exam, with other types of assessment used only where they are needed to test essential skills. American: For the GED, students can earn a score between 200 and 800 for each section of the test. The minimum passing requirement is an average of 450 points in all content areas, and a minimum score of 410 in any of them. SATs are scored between 200 to 800 points per content area, with total scores between 600 and 2,400. International Baccalaureate (IB): Each subject is graded from one to seven, while a further three points are available for the CAS (creativity, action, service) element, for a maximum of 45 points. Indian: CBSE uses a relative scale with nine positional grades in each subject, which are based on the performance of all the candidates who passed the exam in that subject in a given year. A ccording to the International Diabetes Federation, one in 11 adults have diabetes leading to a total of more than 415 million people worldwide. By 2040, one adult in ten will have the disease, increasing the total number of diabetics to more than 642 million people. Diabetes is a growing concern in the UAE and in the Middle East and North Africa region. In 2015, around 9.1% of adults aged 20-79 were labelled as diabetics, with over 40.6% of the cases being undiagnosed. In 2015, 19.3% (almost one in five people) www.connector.ae

It is also a regional concern with Bahrain, Saudi Arabia and Kuwait all featuring amongst the top 15 countries in terms of rates of diabetes worldwide. Diabetes in the UAE is rising at a faster rate than the rest of the world and the number of people with diabetes is expected to double to 2.2 million by 2040. Most of the food we eat is turned into glucose or sugar for our bodies to use for energy. The pancreas, an organ that lies near the stomach, makes a hormone called insulin to help glucose get into the cells of our bodies.

When you have diabetes, your body either doesn’t make enough insulin or can’t use its own insulin as well as it should. This causes sugars to build up in the blood. Diabetes can cause serious health complications including heart disease, blindness, kidney failure, and lower-extremity amputations. There are three major types of diabetes: type 1 diabetes, type 2 diabetes and gestational diabetes. Type 1 diabetes is usually diagnosed in children and young adults, and was previously known as juvenile diabetes. 54 NOVEMBER CONNECTOR

Only 5% of people with diabetes have this form of the disease. In type 1 diabetes, the body does not produce insulin, a hormone that the body needs to get glucose from the bloodstream into the cells of the body. The body breaks down the sugars and starches you eat into a simple sugar called glucose, which it uses for energy.

The most common type of diabetes, more than 90% is type 2, which occurs when the body does not respond to insulin and doesn’t make Image of the pancreas enough insulin to control the blood sugar. At first, your pancreas makes extra insulin to make up for it but, over time it can’t keep up and can’t make enough insulin to keep your blood glucose at normal levels. Pregnant women who have never had diabetes before but who have high blood sugar levels during pregnancy are said to have gestational diabetes. Gestational #connectordubai


diabetes starts when your body is not able to make and use all the insulin it needs for pregnancy. Without enough insulin, glucose cannot leave the blood and be changed to energy. What are the causes? Type 2 diabetes is thought to result as a combination of genetic and environmental factors. The risk of having diabetes is five to ten times higher in first-degree relatives of a diabetic person compared with a person without diabetes in the family. Those of Hispanic, African, and Asian descent increase their chances of having the disease. Environmental factors such as lifestyle, including diet and physical activity, impact the chances of having diabetes significantly. The increase in the rate of obesity worldwide is also contributing to the rise in the rate of diabetes. Other risk factors for developing diabetes include an age older than 45, having an inactive lifestyle, high blood pressure, abnormal cholesterol levels and a history of polycystic ovary syndrome.

What are the symptoms? Typical symptoms include increased thirst, the need to urinate frequently, blurred vision, low energy along with unintentional weight loss. Most people with diabetes have no symptoms and therefore the disease takes a long time before it is diagnosed. How is it diagnosed? There are several ways to diagnose diabetes. Blood tests such as a Fasting Plasma Glucose (FPG) which checks your fasting blood glucose levels. This test is usually done first thing in the morning after not having anything to eat or drink (except water) for at least 8 hours; a Random Plasma Glucose test which can be checked at any time of the day and an A1C test which measures your average blood glucose for the past 2 to 3 months. There’s also an Oral Glucose Tolerance Test (OGTT) which involves drinking a special glucose solution and checking blood glucose levels before, followed by another one hour and two hours after drinking the solution.

How can it be prevented? Genetics play an important predisposing role in type 2 diabetes, but there are many other factors such as obesity, inactive lifestyle, poor diet and smoking that can increase the chances of having the disease. Maintain a healthy diet by eating a variety of foods including fresh fruits and vegetables, limiting fat intake to 30% or less of your daily calories, watching your portion size, avoiding processed and refined sugars and saturated fats. Healthy eating habits can go a long way in preventing diabetes and other health problems. Regular exercise allows your body to use glucose without extra insulin. This helps combat insulin resistance and is what makes exercise helpful to people with diabetes. Screening for diabetes is another essential element that could identify the pre-diabetic state, which can be reversed back to normal. What are the complications? Diabetes has serious long-term 56 NOVEMBER CONNECTOR

complications and can damage blood vessels which increases the risk of heart attacks by at least three times, the eyes (leading possibly to blindness), the kidneys (leading to kidney failure and dialysis) and the nerves. Every six seconds, one adult dies from diabetes. Therefore, it is important to control blood sugar levels to prevent these complications from occurring. How can it be treated? Diabetes requires regular monitoring and the treatment includes lifestyle changes, physical activity and glucose monitoring along with oral and/ or injectable medications. In summary, eat healthy, avoid weight gain, exercise regularly and get yourself checked for diabetes if you are at risk of having the disease or suffer from any of the symptoms. HEALTH & WELLBEING There are two primary techniques of hair transplant — FUE (follicular unit extraction) and FUT (follicular unit extraction). Both procedures aim to get the same results at the end but are fundamentally very different types of surgery. During an FUE hair transplant, doctors remove hair follicles one by one from a donor area (such as the back or sides of your scalp), and then transplant this hair to the balding area. The second option, FUT, is also known as the ‘strip method.’ The patient is anesthetised, and a doctor removes strips of tissue from the donor area, and, once extracted, the donor strip is cut into individual follicular units. Animal rescue voluntary services based in the UAE. Dedicated to helping all animals.

A t Connector, we are crazy about animals. That’s why we’ve teamed up with SNIFF, an animal rescue organisation based in the UAE dedicated to helping all animals. Set up by a group of friends all with full time jobs but a love for animals, SNIFF is an animal rescue group which aims to rehome the UAE’s stray and abandoned pets. All with rescue pets themselves, the founders of SNIFF aim to educate people on the importance of adopting rescue pets instead of buying from pet stores. The tragic situations animals were being found in prompted them to take action. SNIFF is entirely funded by the generosity of animal lovers in the UAE and beyond. 64 NOVEMBER CONNECTOR

Any contributions go directly into their account at the vets who use it to pay for medical bills, food and boarding. SNIFF constantly needs foster homes, people to help with fundraising events and above all just to spread the word. Nana - A 5-year-old female mix breed, past pet. She is small-medium size as well (10+kg). She needs love and care as she is unhappy at the shelter.

Lola - our happy girl, 3 year old Labrador. She is the queen of fetching, she loves playing, she is active and would love a garden and a family with kids to play with her. She has a lot of love to give, she will be a fun dog to have as part of the family. She is good with kids, dogs & cats.

Joy - Lovely 3 year old female TerrierGerman shep-herd mix. Joy loves human interaction. She is stunning and would do well in any type of family.

SUGAR Luka - happy male dog, mix saluki/lab. 2.5 year old. He loves fetching the ball, he will be the best playing com-panion, he knows commands like sit, wait. He has a very sweet and positive personality. He would do well as a family dog, he loves other dogs companionship as well. He is a happy little buddy.

Doggie - 1 year old mix breed. This handsome boy is small -medium adult size (10kg +). He is a sweet loving boy.

Jack - 1 year old saluki mix, Jack is a dynamic dog, he would do well with an active family or single per-son, the perfect running buddy! He is full of energy for life!
