Ba Restaurant at Fairmont The Palm
T here over 9,500 restaurants and diners in Dubai, some new, some established and some that were around for a bit, closed for a while and reopened later with a fresh look. Ba Restaurant and Lounge at the Fairmont The Palm is exactly that. The high end restaurant recently reopened after being closed for some time, and has maintained it’s place as one of the city's most regarded restaurants, ranked in the top 50 restaurants in Dubai on TripAdviser and number 1 from close to 400 Chinese restaurants. The new look restaurant is chic and elegant, with a welcoming lounge and bar area and a spaced out dining area for around 70 people, that gives each table its own intimate space. The menu offers a great choice of Chinese dishes, but also varies it up a bit more with a selection of Japanese and Thai dishes. Our starter we opted for tiger prawn tempura and the highly recommended steamed buns, one of duck, kimchi and sweet onion sauce and the other of braised beef, chili mayo and spicy slaw. The prawns was generous for 2 to share, with a thin and crispy tempura batter coating some of the meatiest tiger prawns we have tasted. The buns stood www.connector.ae
out even more, they were light and fluffy and each with a good filling, giving the full flavours of the meats and the spicy slaw with the beef was a great complement. For main course we went for the signature Kung Pao chicken and the honey baked cod. The combination of tender pieces of chicken, with crunchy cashews and a gentle kick from the chili, made sure the dish was full of flavour and it was clear to see why this is one of the most popular dishes at Ba. The chunks of white meat of the cod were perfectly coated in a nice sticky layer of honey adding a subtle sweet taste to the dish. The sides of steamed jasmine rice and stir fried vegetables were great with both dishes and were more than enough for 2 people. If you have room for desert, the ideal way to end the meal is the yuzu citrus tart with yuzu sorbet. Light, citrusy and very refreshing. The stand out in the new look Ba are it’s very relaxed and welcoming atmosphere and the varied and affordable dishes on the menu, while maintaining the luxury feel. A ward-winning and Celebrity Georgian Chef Guram Baghdoshvili speaks 5 different languages and is a true artist at heart, being a professionally trained singer and chef, he considers food an art and is thrilled to bring Georgian cuisine to Dubai. Chef Guram has previously been seen on My Kitchen Rules Georgia Jury 2018, front cover of the City Magazine Georgia, Head Chef of Nikki Beach PT, Executive Chef of NoSoloÁgua, Executive Brand Chef of Vinotel and Owner/ Executive Chef of Restaurante Anona GEO. and wine bar restaurant titled NoSoloÁgua in Portimão, the coastal town of Algary in South Portugal. RECIPE KHINKALI Khinkali are a specialty of the Caucasus nation of Georgia. They are most often enjoyed at special restaurants where the tasty, meat-filled dumplings are served simply with a generous sprinkling of crushed black pepper. While ground beef and lamb are the most common fillings, you can also make khinkali stuffed with chopped mushrooms or cheese. Ingredients - makes 12 to 15 dumplings Dough 3 cups flour 2 teaspoons salt 1 egg beaten (optional) 1 to 1 ½ cups water Filling 1 pound ground beef or lamb ½ cup broth or water 2 onions, minced ¼ cup parsley, chopped ¼ cup dill, chopped 1 tablespoon ground caraway Salt and pepper to season
of a round of dough. Working around the dumpling, bring an edge of the dough up over the filling, making pleats in the dough and bringing the edges together over the top of the filling. Pinch the top of the dumpling together to seal it and form a knob. Repeat with the remaining dough rounds and filling. Bring a large pot of salted water to a boil. Add the dumplings to the water and cook at a low boil for 15 to 20 minutes. Remove the dumplings to a serving dish with a slotted spoon. Season generously with cracked black pepper and serve hot. How to eat khinkali the Georgian way Grab the top knob of a dumpling and bring it to your mouth. Take the first bite carefully. If the dumpling has been sealed properly, delicious, brothy juice will gush out. Eat the remainder of the dumpling except for the top knob. The knob is never eaten by Georgians. Instead, line them up on your plate to keep a tally of your appetite.
Method and preparation Mix the flour and salt in a large bowl. Make a well in the centre and add the egg and 1 cup of the water. Stir the egg and water into the flour with a fork. Add more water as needed to form a soft dough. Remove the dough to a lightly floured work surface and knead until smooth and supple, about 5 to 6 minutes. Cover and set aside for at least 20 minutes to rest. In another bowl, mix together the ingredients for the filling. Cook a small portion in a greased skillet to taste seasoning and adjust as necessary. Cut the rested dough into 2 portions. Roll out one portion of the dough to about ¼ inch thick. Cut out 3 inch rounds of the dough using a cookie cutter or large glass. Roll each round out into a 5 or 6 inch round. Sprinkle each round with a little flour and set aside as you finish with the rest. Place about ¼ cup of filling in the centre www.connector.ae

a head teacher The choice of schools in Dubai is huge and there are many key and important factors that parents need to take into a considerations when deciding where to send their children.
C hoosing a school can feel like a hard task as parents consider the needs of their children along with the value that they will get for the fees they pay. Asking the right questions to a head teacher, makes this task more informed and much easier and helps reaching the final choice. Connector spoke with industry experts and renowned principals to throw a light on some of the questions parents should ask before deciding. Does it matter that my child cannot speak fluent English? Gaynor Dale, Principal at Regent International School said, “I put families at www.connector.ae

Having teachers who are both qualified and committed to life-long learning will help ensure the best outcomes for students in terms of academic progress and attainment.” How relevant is the school curriculum in 21st century? This can present a challenge for prospective parents which means the decision making process becomes subjective and they may feel the need to rely on ‘gut instinct’. “ How will your school support a child’s character development? As interesting is finding out what the Head would consider to be the current weaknesses in the school and to share how they are working on these areas. “ What sort of child is not right for your school? Fiona Mckenzie of Gabbitas added, “This question demands a very honest answer because not every school is right for every child and it is important for schools to recognise that and to be clear about the children they serve best and those for whom they would not be a good fit. Sharon Storrie of Dubai British Foundation said, “While Dubai can be transient, it is still worth finding out how long teachers have been with the school / organisation. Schools who are able to retain a significant proportion of their staff each year are in a strong position to grow and develop and often have a more consistent understanding of where they are going as a school and how to get there. The ability to retain staff is also an indicator of how happy staff are, this in turn impacts on the well-being of students which is recognised as a key indicator of future success.” Clive Pierrepont, Consultant (Press, PR and Communications) at Taaleem said, “Ask about the curriculum and why the school chose it. It is important also to know about staff turnover, a rate above 1520% would need an explanation.” What are the opportunities for parental involvement? Sharon Storrie of Dubai British Foundation said, “Parents are the most important educators of their children and schools who work hard to support both children and families recoginise this. When the school is a community of mutual respect and strong relationships, parents and staff can work closely together to support students in all aspects of their development and education.” 38 OCTOBER CONNECTOR
What does the school see as important? Peter Hill of Jebel Ali School said, “School priorities will impact on the general feel and atmosphere of the classrooms and wider community. It is this 'feel', the 'it' factor which is so very important - far more so than the promises of the website and prospectus.” How are you different from other schools? Marco Longmore of Brighton College Dubai said, “Every school wishes to see itself as offering a distinct and unique experience. Parents should be wary of schools that place a particular emphasis on a publicised USP, as this will often be created as much for marketing purpose as educational.” Approach existing parents As well as asking questions to a head teacher, it is also recommended to speak with existing parents. Clive Pierrepont of Taaleem said, “When visiting the school, you will often see existing parents around the school, do not be afraid to approach them and ask for their opinions, they will often be extremely candid. BREAST CANCER AWARENESS
From peach to pink
the woman who started it all
T here are few symbols that genuinely speak to people all over the world. One of the most recognisable is the pink ribbon. The pink ribbon has become an international symbol of the battle against breast cancer as well as awareness and ultimately, the female resilience. But, the ribbon was not always the bright pink we see today, it actually started as peach. In 1991, Charlotte Haley, a resident of California, began making ribbons by hand in her dining room to raise awareness of the disease. As a breast cancer survivor herself, the cause was close to her heart and she was determined to be heard - by any means necessary. To each packet of five ribbons she attached a postcard that read: “The National Cancer Institute’s annual budget is $1.8 billion, only 5 percent goes for cancer prevention. Help us wake up legislators and America by wearing this ribbon.” Charlotte wanted America, and the 44 OCTOBER CONNECTOR
world to start paying attention and take accountability. She also began handing the cards out at the local supermarket and writing to prominent women, including former first ladies. Over time, Charlotte’s peach ribbon has become phased out due to the introduction of the pink ribbon by Self Magazine and Estee Lauder, who approached her with an aim to collaborate. Charlotte dismissed the notion of working with the company as she found the concept “too commercial.” She refused to deter away from her goals. Charlotte went on to live a long life before passing away in 2014 at the age of 91. Breast Cancer Awareness Month is a time to acknowledge the strength of those who are affected by the disease and honour those who fight against it. So, next time you pin on your ribbon, stop and take a moment to honour Charlotte Haley, the woman who started it all. #connectordubai

Go pink for a cause Things start to turn pink in the month of October for a good reason.
O ctober is marked as Breast Cancer Awareness Month with the aim of raising awareness for a disease which impacts approximately 1 in 8 women. While you may enjoy all the pink desserts and treats around you this month, the underlying cause behind all those refreshingly pink treats is to push women to take their health seriously and never ignore the importance of regular self-check-ups for breast cancer. A dedicated month focusing on this cause sees many hospitals come up with special campaigns and activities for women to be more aware of their health and a disease, people are still not very comfortable talking about. This month, in recognition of Breast Cancer Awareness Month, we have brought together the most important things, a woman needs to know. Microneedling done on unclean skin can be a source of serious infection. Home treatments are usually done with dermarollers not dermapens. Dermarollers are only meant for one use but are often used for more. This again acts as a possible source of skin infection and the tips can go blunt which again damages the skin. Professional treatments are done with dermapen tips which can be customised to different depths for different areas of the face. They are usually combined with professional grade mesotherapy or PRP for optimum treatment results, Treatments are also done using topical analgesia in clinics which means deeper penetration of the skin can be achieved to treat scars and other issues. Meet Fat Frankie Hello, I’m Fat Frankie, I’m a big boy who likes cuddles and to roll over on my back and act goofy. Until February last year I was a happy garden cat enjoying chasing the birds and insects and sleeping on the patio. One day my life changed forever. I wasn’t feeling well and was very quiet, in pain and soaked in my own bloody pee. The vet diagnosed "Feline Urinary Track Syndrome" or "Feline Idiopathic Cystitis" in other words I had crystals that were causing obstruction and I was unable to pee but my bladder was full so was constantly leaking 62 OCTOBER CONNECTOR
urine which was mixed with blood. I had to spend a week at the vet. When I was allowed to go home the problem was the ‘’home and life’’ I knew, was no longer an option as I had to be on a special diet for the rest of my life, in order for this to never happen again. I spent a while looking for a foster until a young lady offered to look after me, and for about a year she was my very best friend. But unfortunately she left Dubai and now I’m stuck in a tiny cage waiting yet again to find a best friend. I don’t really like it here and would love to be loved once again, and if possible forever #connectordubai

My condition might sound scary but it's actually not, since FUTS is more common that one would think. A lot of companies produce cat food that will support/prevent the condition. Most foods produce alteration of the urine pH. They also may contain antioxidants and supplemental, omega-3 fatty acids. Simple diet and plenty of water and I've been healthy now for over a year. My condition is considered a very treatable disease in most cases. Some cats experience only one FIC episode and never look back. For others lifelong diet is required, I prefer to eat my special food and stay on the safe side. Luckily for me 38smiles did not give up on me, and got me released from the pound and placed in a foster home. Since than its been an amazing journey of learning how to be a pet and enjoying life, there is only one missing puzzle piece and that’s my forever family.
