Welcome to Dubai Welcome to Dubai, one of seven emirates that forms the United Arab Emirates (UAE). Often recognised for its iconic skyscrapers, the world’s tallest tower, man-made islands and malls, Dubai is undoubtedly a success story, as is this young country itself.
About the UAE
Just 45 years old, this Islamic and Arab country has achieved tremendous success, a combination of the founding fathers’ achievements and steady guidance from its leaders. Six emirates (Abu Dhabi {the capital}, Dubai, Sharjah, Ajman, Umm Al Quwain and Fujairah) got together on 2nd December 1971 to form the United Arab Emirates (UAE). The seventh emirate, Ras Al Khaimah, joined on 10th February 1972. Prior to being known as the UAE, the seven sheikhdoms were known as the Trucial States (as per the treaty relations established with the British in the 19th Century). In early 1968, the British decided to withdraw their involvement in the Trucial States and thus a federation was born.
Location
The UAE is an Arabian Peninsula nation along the Arabian Gulf. It borders Oman to the east and Saudi Arabia to the south.
Founding father of the UAE
His Highness Sheikh Zayed bin Sultan Al Nahyan, a driving force behind the www.discover-dubai.ae
formation of the federation, was the first President of the UAE.
Government
The UAE is a constitutional federation. It is run by a federal government and local governments of the seven emirates, with powers and roles being defined by the constitution. Traditional governance still exists, with the ‘majlis’ concept giving citizens free access to the rulers. The current President of the UAE is His Highness Sheikh Khalifa bin Zayed Al Nahyan, while the Vice-President and Prime Minister is His Highness Sheikh Mohammed bin Rashid Al Maktoum.
Religion
The official religion of the UAE is Islam, and you will find many mosques throughout the city. Non-Muslims are not permitted entry into mosques.
Population
The estimated population of Dubai is approximately 2.7 million people. Around 80% of those are expatriates who are attracted by the tax-free working conditions and the relaxed, relatively crime-free lifestyle. DISCOVER DUBAI JULY | 3

A Bedouin’s Desert Survival Guide The Bedouin were the people of the desert, often in transit, moving from water well to water well, avoiding or joining various tribal conflicts, and following the seasons for good weather bringing its vegetation for their animals. It was a very hard life; out in the elements with only fabric as their shelter the tent. What skills can they teach the adventurous visitor to their territory now? Should you find yourself stuck in the desert, a modern Bedouin would go straight to their phone. Having the Dubai Police Application on your phones with a fully charged phone battery and car adaptor are now your essential tools for survival. Included in the app is an SOS (Save Our Souls) button. Even with no data package, when it comes to safety, switch on the mobile data and go to the app. When the big red button is pressed, it sends your GPS location to the emergency control room. An officer will call you for more details of the emergency and will come rescue you by car or helicopter. This app will work even beyond Dubai boundaries in the desert or gulf. However, it’s essential to know methods to protect yourself and feel comfortable out in the desert conditions to enjoy one of nature’s most beautiful environments. When leaving for the desert always go 8 | JULY DISCOVER DUBAI
with certified professionals or trusted friends and family; never alone with strangers. When leaving on your adventure, tell someone of your plans, including a time table and the vehicle description you will be going in. Then take with you, plenty of water (average 3 litres per person per day) and snacks which can take the desert sun and heat; such as dates, teas, dried food and flour. Matches for lighting a fire are also essential as is a blanket, a shovel and a metal pot. A blanket can provide shade when tucked into closed car windows and pinned down at an angle or towards a tree. To keep cooler, dig under the shade of the tent you have made as sand below the surface is cooler and more comfortable. A shovel is a helpful tool as are metal tracks from car or sporting shops in the region to help excavate yourself from sunken tires. Before setting off, ensure you have a fourwheel drive vehicle. If for some unforeseen circumstance you are in a sandy plot with only a two-wheel drive vehicle, know that it is your back wheels with the power and therefore the reverse gear is the best option. Never spin your wheels once you realise you are stuck, as your tires will only sink, making the challenge of moving even harder. Remember you are driving on fine grains of sand. Reduce your tire pressure while counting to 25 on each tire or to 15psi. Dig #discover_dxb
sand away from around your tires to make the smoothest surface possible and place greenery, car mats, or metal or wooden slats you brought with you down on the sand, up against the tires of the direction you plan to go. If you have any liquid beyond litres of water for your own consumption, wetting the sand can help firm it up. Once you plan to accelerate, do so very slowly or from a higher gear and with the four-wheel option in effect. For expats, imagine driving on ice - you do not want the tires to spin unnecessarily. Turning left and right quickly as you try to get out will also help. Once you are moving, drive swiftly and continue to move the steering wheel left and right as you drive back the way you came. For further techniques on conquering sand dunes and reading the desert, take one of the courses offered at the driving schools in Dubai. So, you have found yourself stuck, but have plenty of supplies, are enjoying the peace of the desert and have rigged your blanket into a comfortable tent. After gathering firewood, light a fire and ensure you have enough firewood to sustain it for a few hours. Remember the desert can be quite cold in the summer but reaches scorching temperatures in the summer. Mix flour and water into a flat bread shape and lay it within the following layers: burning coals, sand, the dough, sand and glowing coals from the fire. Let it bake for roughly an hour and uncover. The bread is done when tapping on it reveals a hollow sound. Knock the sand off from the bread and it is ready to eat. Interestingly www.discover-dubai.ae
desert sand will not stick to the bread crust like beach sand. Pair it with dates and possibly a pot of tea you made over the fire and you have a traditional, humble meal of a Bedouin. Should you run out of water... Do not hesitate to call the authorities. But worstcase scenario, rest in the sunlight hours and search for water near sunset. Digging straight down near the roots of trees will often yield a water supply. In a barren desert, try your luck where a sand dune meets a flat area of sand. At that angled point dig straight down. Trees which yield a white creamy film when the leaves or branches are cut are poisonous and should not be eaten. Trees that do not, can provide nutrition from their leaves, especially young sprouts as well as sucking on their roots. However, when searching for water or firewood, do not wander beyond keeping your car in view. It is very easy to get lost and confused in the desert. Thinking wandering on foot will be more helpful but it will not. Always stay with your car. The desert is as enchanting and peaceful as it is daunting and dangerous. With the right preparation, knowledge and respect for nature, it can be enjoyed by those indigenous to her qualities as well as those first-time explorers. When in Dubai…
What to try…
What to buy…
Now that you’re in the city, it would be a shame if you left without trying Emirati food. Between all the meals you’re going to indulge in, make sure you leave some space for:
Though Dubai has lovely souvenirs you can take back home, including sand art, magnets and mugs of Burj Khalifa and Burj Al Arab, the ones you really should be after are:
Machboos Though this rice dish originated in Saudi Arabia, it is common to see it at Emirati dinner tables. The dish is made with long-grain rice, meat, vegetables and spices, and is sometimes garnished with a tomato sauce.
Bukhoor These are wood chips soaked in fragrant oils and burned in a traditional incense burner. In Arab countries, the bukhoor is passed among guests at a gathering as a gesture of hospitality.
Luqaimat A very popular Emirati dessert, these round deep-fried dough dumplings are less fluffy than doughnuts and are soaked in date or sugar syrup, flavoured with saffron and cardamom.
Sadu cushions Made with ancient Bedouin weaving techniques using wool from camels and goats, this fabric is easily distinguishable because of its colours - deep reds, black and white.
Camel milk In the past, Bedouins survived solely on camel milk. It can be bought in bottles in supermarkets around the country, and is available in flavours such as saffron, date, chocolate and strawberry.
Dates The sweet fruit has been a food source for survival to Bedouins. Easy to digest, they are high in iron and contain potassium and vitamins too. Note: the packaged ones can be eaten year round.

Souks Souks are traditional marketplaces or bazaars that retail a wide range of commodities. Here are three worth ticking off the list when you're in Dubai. Dubai is geographically divided into two parts - Deira and Bur Dubai - by Dubai Creek. Deira, home to Dubai’s oldest markets, can be accessed by road, but the alternate (also traditional) way would be by abra. These small barges are powered by diesel engines and can seat around 20 people. Incidentally, Dubai's work force commute across the creek on a regular basis and there are over 17,500 abra crossings per day. If you decide to travel on one and are wearing expensive or light-coloured clothing, it's advisable to remain standing for the trip as the bench seats can get a little grubby. Spice Souk Once you land on the Deira side of the creek, all you need to do is follow your nose and take in the breath-taking selection of spices such as ginger, chillies, cardamom and frankincense, all displayed in huge jute sacks ready to burst at the seams. Wandering around the stalls is a pleasant way to pass an evening, and the fragrances can really help to work up an appetite. This is a working souq which sells goods to locals and sailors from the dhows and is a good place to buy incense burners, saffron, rose water, henna kits and shisha pipes. www.discover-dubai.ae
Perfume Souk One of the things Middle Eastern Arabs are known for is their strong, spicy fragrances and perfumes. The Perfume Souk is the ideal place to explore these alluring scents and a great opportunity to find your perfect one. Besides traditional perfumes, they also sell branded fragrances from around the world, so it is well worth a fragrant tour of the many shops. Gold Souk Even if you are not looking for anything specific, the Gold Souk is worth a visit to see the glittering array of merchandise on offer (especially in the evening). Approximately 10 tons of gold is present at any given time in the souk. There are over 1,000 jewellery shops in Dubai, and with no taxes and low import duties, it is one of the cheapest cities in the world to buy gold jewellery. If you are looking to buy, don’t feel pressured into deciding at the first shop. There's plenty of choice and everyone's prepared to bargain. DISCOVER DUBAI JULY | 13

The waterfall, where the canal meets the Sheikh Zayed Road bridge, is a beautiful motion-operated water feature that is visible from the promenade and switches off when a sensor detects a boat nearby. Burj Al Arab Since its opening in December 1999, the Burj Al Arab has been one of the most photographed structures in the world. Sometimes referred to as "the world's most luxurious hotel", the Burj Al Arab was designed to resemble the billowing sail of a ship, and standing 321m high, it makes an impressive addition to the Dubai skyline. The display erupted from every side of the megastructure including the top, making it the highest fireworks on a building. Whether Burj Khalifa attempts to break a record or not this year, its annual NYE fireworks are worth including on your Dubai bucket list. It is not surprising to see spectators gather around the area six to seven hours before the show so they can secure the best spots. World’s largest mall: The Dubai Mall. Known as the largest mall in the world (by total area), The Dubai Mall also prides itself on being one of the world’s most visited lifestyle destinations, beating spots like New York’s Time Square and Canada’s Niagara Falls in the past. With more than 1,200 outlets to shop at, numerous restaurants and cafes to dine at and entertainment attractions such as an ice-rink, aquarium and cinemas, there’s enough to cater to all ages. www.thedubaimall.com Largest water screen projection and permanent projection: Imagine at Festival Bay, Dubai Festival City. Dubai Festival City’s newest attraction, Imagine, set two world records - the largest water screen projection and the largest permanent projection mapping in the world - within six months of launching. Through its two shows, ‘A Child’s Dream’ and ‘Stardancer’, Imagine showcases the latest entertainment technology in water, pyrotechnics, lasers, lights and dramatic effects. The shows begin after sunset, daily. www.discover-dubai.ae

Beauty & pampering
Beauty & pampering Treat yourself to a hammam A Middle east variant of the Roman bath, a hammam tops all cleansing treatments. The process, which usually involves steam, scrub and a massage aims to leave you squeaky clean. Here are some places that master the ritual. Talise Ottoman Spa, Jumeirah Zabeel Saray
The Palm Jumeirah The award-winning spa prides itself on its Turkish hammam experience. The ‘Coffee Peeling’ one puts a twist on the traditional treatment using Turkish coffee to exfoliate, but it is the signature ‘Royal Ottoman’ one that is highly recommended. Heat is used to soften the skin and prepare it for exfoliation, done with a kese mitt on the heated stone bed, followed by a foam massage. They’ll shampoo your hair and give you a scalp massage before applying a moisturising conditioner. The final step of the treatment is a honey mask that will leave your skin soft and refreshed. It's one hour of serious indulgence and is priced at Dhs 590. Call 04-4530456. www.jumeirah.com
One&Only Spa, One&Only Royal Mirage Dubai
Al Sufouh Road Picking a hammam treatment when you have four different options on the spa menu can be quite a task. To make it easier, we suggest the Royal Hammam. It’s a luxury version of the humble treatment and involves deep cleaning with the traditional Moroccan black soap, followed by a full body exfoliation with a loofah. The body is then enveloped in a Ghassoul (mineral clay) wrap while the face gets a honey mask. The treatment finishes with a 40 | JULY DISCOVER DUBAI

Beauty Bar, Al Ghadeer Tower
Sheikh Zayed Road More economical than most hammams in Dubai, the one at Beauty Bar is as authentic as it gets. The therapist leads you to a steam room where the heat softens the skin and opens the pores. Next, the Moroccan black soap is rubbed over the body, and a mitt is used to scrub the body in circular strokes. After the final rinse, the body is slathered with a cooling lotion. The hourlong treatment costs Dhs 150. Call 04-3273441. #discover_dxb
Health & Fitness Staying fit during your holiday
With summer temperatures sending the mercury soaring, many of us will be looking forward to taking a vacation in the coming weeks, but how do we maintain our fitness during an action-packed holiday? “Staying fit whilst travelling has never been easier. With high tech gadgetry that can help you monitor your fitness on-the-go to apps which can guide you through exercises, there has never been a better time to maintain your fitness whilst on the move,” says Trevor Flowers, Fitness First trainer. He shares his top tips on how to stay fit during vacation: Set goals before take-off Before setting off on your trip have a think about the kind of exercises you could do at your destination. Heading for a beach vacation? Then jog two or three times a week. The sand will increase the intensity of your run and need only take 30 minutes to burn more than 300 calories. Alternatively pack a skipping rope in your luggage so you can squeeze in 20 minutes of skipping before your day starts, burning up to 200 calories. As for your nutrition, don’t deny yourself sweet treats but eat in moderation. Calorie intake Often, when on holiday there will be sumptuous buffet options. Managing your food consumption during vacation can seem like an impossible task, but it needn’t be. Feel free to indulge in foods you may not normally consume, however, try to balance this out by loading your plate with salads, vegetables and fruits alongside the sugary treats. Also, try to eat smaller portions.
Stay hydrated During action packed adventures or busy holidays, it can sometimes be easy to forget to stay hydrated. Make sure you drink a minimum of two liters of water a day. Water is essential in maintaining the function of every system in your body. Tip: drinking an ice-cold glass of water will help you curb your desire to overindulge on sweet treats. Being resourceful on your vacation If you are heading to a sunny country, swimming is a great way to burn calories, and being low impact means it’s easy on the joints. In your hotel room, use the side of a bathtub or a chair to do tricep dips; do bodyweight exercises such as wall squats, lunges, press ups, star jumps or hold a plank for two minutes every morning. Travelling within the Middle East? Why not ask your club about the international passport option which gives you access to other Fitness First clubs. If you are not yet a member of Fitness First, then why not request a one-day guest pass if you are staying near one of their clubs. Visit uae.fitnessfirstme.com for fitness tips, club locations and class information. And if you do not have access to fitness equipment, make use of the environment around you.
Monitoring your fitness whilst travelling Track your fitness whilst on the move with MYZONE technology. The belt is small enough to pack into your hand luggage and will help you keep track of calories burnt, length of your workouts and effort expended. www.discover-dubai.ae

DUBAI'S LITTLE GEMS…
You don’t have to empty your pockets to enjoy a good meal, especially not when you’re in Dubai. While the city has many top-notch restaurants, including those by celebrity chefs and imports from New York and London, it is also the turf to homegrown eateries. These places might be little in size but we assure you they dish out food big on flavour.
Al Ustad Special Kebab Around since 1978, this Iranian restaurant is no secret to ardent foodies. The restaurant specialises in South Iranian cuisine, mainly kebabs and chicken and meat dishes. At any given point, one of the three brothers will always be around to greet diners, take orders and involve themselves in friendly banter. It is normal to be distracted by photos that are plastered on the walls and memorabilia such as clocks and mobile phones hung on the walls. Currencies from around the world are lined under the glass top tables. You haven't enjoyed your kebabs if you didn't have them with a side of rice, drizzled with melted butter and topped with barberries. Mains range between Dhs 25 and Dhs 32. Mankhool road, near Al Fahidi Mentro station, in Bur Dubai. Call 04-3971933. Ravi Restaurant Most people say you haven’t eaten in Dubai if you haven’t eaten at Ravi’s…and we agree! This no-frills institution serves the best Pakistani food in the city. For what the restaurant lacks in interior (expect plastic chairs and covers), it makes up in its meatheavy menu. The curries are flavourful, the biryani rice is fragrant and the dal is as silky as it gets. For a service team that barely speaks English, you'd be happy to know they rarely get their orders wrong. Most dishes are priced under Dhs 25. near Satwa roundabout, opposite Emirates Co-operative Society. Call 04-3315353. 44 | JULY DISCOVER DUBAI
Sind Punjab Indian restaurants are a dime a dozen in Dubai, but it is safe to say that none nail Indian street food the way Sind Punjab does. Ditch sitting indoors for a space by the glass counter where you stand and wait for the server to make you pani puri (a crisp hollow round street snack that’s filled with onion,
potatoes, chickpeas and flavoured water). The challenge is getting the entire piece in your mouth at one go. Other street food items on the menu include samosas, chaat (savoury snacks) and pakodas (fritters). Prices start as low as Dhs 2. Meena Bazaar, Bur Dubai. Call 04-3525058. Local House Restaurant It would be a shame if you left Dubai without sinking your teeth into camel meat. Often categorised as ‘comfort food’, Emiratis serve camel meat when a child is born or when there’s a death in the family. This tender and juicy meat is used as patties in burgers at Local House Restaurant. You can have additional fillings ranging from fried egg #discover_dxb
and salsa to mushrooms and caramelised onions. Up for something heartier? Try the camel meat biryani or kebab. Tip: if you haven’t warmed up to the idea of the meat, the camel milk shake is a good start (psst... it's high in mineral content and unsaturated fatty acids). The restaurant is a popular pit stop for tourists wandering the heritage site it's located at. Camel meat based dishes start from Dhs 45. Al Fahidi Historical Neighbourhood. Call 04-3540705.
Al Reef The go-to place after a night out, Al Reef is busiest in the early hours of the morning on weekends. The most demanded item on its menu is the manaeesh (a flatbread topped with cheese, herbs or ground meat). Not too different to a pizza, this Levantine snack costs less than Dhs 15 and is something your stomach will appreciate after a binge drinking session. near Safa Park on Al Wasl road and opposite the post office in Karama. Caution: service staff are not the friendliest. Call 04-3968999. Al Mallah Residents are fans of this establishment and chances are you will become one too after you try their food. Nailing Lebanese fare, the restaurant is best-known for its juicy and tender shawarmas (chicken or meat grilled on a spit for as long as a day and then shaved off and served as a wrap with toppings including tahini and pickled turnips). A side of one of their fresh or mixed juices (Tahiti Extra or Chubby Melon being the favoured ones) is mandatory. Mains start from Dhs 28. 2nd of December street (previously known as Dhiyafa street). Call 04-3984962.
Bu Qtair Synonymous with the phrase ‘fresh fish’, Bu Qtair is worth every bit of the hype. Once operating out of a porta cabin, the restaurant now has a location that boasts sea views. However, it has the same menu, that lists no more than five items, and the (dreaded) long queues to place your order and pay your bill. Once you're past that, you get the crispy, spicy fried fish the eatery is famous for. The head chef has been around for more than twenty years… that explains why the Malabari curry has retained its taste over time. opposite fishermen’s accommodation in Umm Suqeim, near Burj Al Arab. Call 055-7052130. www.discover-dubai.ae
Al Fareej This menu boasts more than 20 kinds of fresh juices and will leave you spoilt for choice with its endless food options. But the star on the menu is the kebab, with most diners rating it five out of five. Seating options are limited - if you’re lucky you'll get a chair in a shaded spot in front of the restaurant or you take a mat and sit in the park outside. Order the lamb lemon tikka for its one of the best things you can put in your mouth. Pesco pollo vegetarians can opt for the joojeh kebab (boneless chicken tikka) and they won’t leave Al Fareej disappointed. Mains start from Dhs 27. Union Co-operative Society in Al Qusais.
