Scandinavia is a large region of Northern Europe comprised of Denmark, Norway, Iceland, Finland, and Sweden. Scandinavia is on one of the largest peninsula in Europe and extends above the Artic Circle. This Scandinavian Peninsula is surrounded by the Baltic Sea and the North Atlantic Ocean. There are many cultural differences between Scandinavia and The United States. One cultural difference is Desserts are not typically served at the end of daily dinners in Scandinavia. Consequently, pastries, cakes, cookies, coffee breads, and special puddings are truly regarded as “treats,” to be savored with friends as an essential part of casual fika breaks, formal coffee parties, and holiday smörgåsbord tables. In this book we will be exploring some of these Scandinavian desserts.

Swedish Apple Pie Ingredients 4 -5 medium apples 1 1/4 cups sugar 3 teaspoons cinnamon 3/4 cup butter

Preheat your oven to 350 degrees while you prepare your food. Fill your pie pan ž full with apples. The upper piec crust spills into the bottom, so there is no need for to make a bottom crust. Mix together Ÿ cup of sugar and 3 tsp of cinnamon.Take this combination and sprinkle it over your apples. In a saucepan, melt butter and remove then remove it from heat. Add the remaining ingredients (including the 1 cup of sugar remaining) into combination. Pour your mixture evenly over the apples in the pan. Bake your pie for 45 minutes, then let the pie cool.
How to Properly Peel an Apple Using a vegetable peeler begin to remove the apple skin. Start by creating two circles at the top and bottom of the aplle with your vegtable peeler.
After you have made these two circles start to peel the rest of the apple. Move the vegtable peeler in a downwards motion starting at the circle at the top of your apple to the bottom circle.

Swedish Almond Cake Ingredients Lastly begin to chop your apple in to quarters. cutting the apples sides of so that only the core is remaining. This reduces the hassle of using a corer.

This treat is served traditionally with a powdered sugar on top.

Preheat oven to 350 degrees. Beat sugar, egg, almond extract and milk together. Add the flour and baking powder, then cinnamon, finally adding the butter. Spray baking dish (approx. 10” by 7”) with spray oil or any non-stick coating. Bake at 350 degrees for 50 minutes or until skewer or toothpick comes out clean when inserted into the middle. Cool for 20 minutes, then remove from pan. When ready to serve dust with icing sugar and cut cake into slices approximately 1” by 3.5”.

Mix eggs, flour and salt together in a bowl. Then add the milk a little at the time, and whisk to a smooth batter. The batter will be very thin (almost like for crêpes). In a hot skillet (preferably castiron), add one teaspoon butter and just as much batter to cover the bottom (turn the skillet around to spread the batter). Fry the pancakes golden brown on both sides. Add more butter for each new pancake. Roll or stack them on a serving plate. Keep warm. Serve hot, preferably with whipped cream and jam.

Heat oven to 375 degrees. Have ungreased baking sheet(s) ready. Sift together the flour, baking soda, spices and salt; set aside. Beat the butter and 1 cup of the granulated sugar in large bowl of an electric mixer on high speed until light, 1 minute. Add the egg and molasses; mix well. Stop the mixer and add the flour mixture. Mix just until combined. Using about 1½ teaspoons dough for each, roll dough into balls. Roll in the remaining ½ cup granulated sugar so they are fully coated.

In a mixing bowl, cream the butter and sugar. Then add maple syrup; mix well. Combine the flour and baking soda; gradually add to the creamed mixture. Divide the dough into eight portions; Roll each portion into a 9-inch log. Place 3-inches apart on ungreased baking sheets. Bake at 300°F for 25 minutes or until lightly browned. Cut into 1-inch slices (I use a pizza cutter and go through all on a sheet at once). Remove to wire racks to cool. Dust with confectioners’ sugar.

Icelandic Cocoa Soup Ingredients 3 tbsp. cocoa powder 3 tbsp. sugar ½ teaspoon cinnamon 2 cups water
This dessert soup is best served with a side of rusks biscuts.

Mix the cocoa powder, sugar and cinnamon in a saucepan. Add the water gradually and stir until smooth. Bring to boil and simmer for 5 minutes. Add the milk, reheat to boiling point and simmer for 2-3 minutes. Mix the potato starch or cornstarch with a little cold water, stir into soup and remove from heat. Salt to taste and serve.

Norwegian Rice Pudding Ingredients 1 ¾ cups water ¾ cup long grain rice 1 quart milk 1 tsp. salt
This dish is often served as dinner and then a dessert.

Boil water and add rice, cover and lower heat to simmer for 15 minutes. Add milk and, if using them, the raisins or currants and vanilla and bring back to a boil. Cover, lower heat and simmer until the rice is tender, about 20-30 minutes. Season with salt. Serve with butter, milk, sugar and cinnamon. For a sweeter rice try adding ¼ to ½ cup sugar with the milk.

Cream butter and sugar. Add egg and mix well. Stir in flour and almond extract. Chill dough 1-2 hours. Make balls the size of small walnuts. Flatten balls on cookie sheet with the bottom of a glass dipped in flour. Press a ½ of a cherry onto each cookie. Bake at 350 for 15 minutes until edges are light brown. Do not over bake. You can sprinkle with powdered sugar if desired.

Heat oven to 375°F. Remove pie crust and place flat on ungreased large cookie sheet. In medium bowl the brown sugar and butter. Sprinkle over half of pie crust to within ¾ inch of edge. Brush edge with water; fold pie crust over filling. Move kringle to center of cookie sheet. Press edge with fork to seal; prick top with fork. Bake 17 to 22 minutes.In small bowl, mix powdered sugar, vanilla and enough milk until smooth and desired drizzling consistency. Drizzle over warm kringle. Cool completely, about 30 minutes. Cut into wedges.

Finnish Cranberry Whip Ingredients 2 cups fresh cranberries 1 ½cups water 1 cup granulated sugar 1 cup water
A fruity bite to eat that can be done with any type of berry.

Heat cranberries in 1 ½ cups water to boiling; reduce heat. Simmer uncovered until berries pop, about 8 minutes. Press cranberries through sieve to remove skins. return juice to saucepan. Add sugar, 1 cup water and the salt; heat to boiling. Add farina gradually, stirring constantly. Cook, stirring occasionally, until thickened, 3 to 5 minutes. Pour into small mixer bowl. Beat on high speed until pudding becomes fluffy and light pink, 3 to 5 minutes. Then Serve.
