Parmigiano Reggiano cheese is a PDO (Protected Designation of Origin) product. PDOs are defined and protected by European Union law in order to defend the reputation of regional foods. The Skies are the Limit Last week we told you Philip Newman-Hall of Le Manoir Aux Quat'Saisons was bravely (some might say foolishly) going to perform a tandem parachute jump from 10,000 feet. The aim is to achieve sponsorship in the region of £10,000 in aid of Hospitality Action. Philip told me yesterday the response had been terrific and funding to date was just over £4,000. We did discuss what happened if he didn’t reach his goal. On the basis he was doing the jump at a £1 per foot would he have to suspend himself in mid-air until such time as sufficient funds were donated? It seems unlikely this will be the case but please keep the donations coming. Thank you.

Oceans of Waste A recent report in a respected scientific journal indicated that waste/rubbish produced by humans had been found in every ocean and sea in the world. Predominantly plastic, we have even managed to contaminate areas of the sea bed that is so deep it cannot support many forms of life. Comforting isn’t it that we have managed through our cavalier approach to waste to reach the parts of the universe that other less contaminating materials have failed to penetrate!

World first as 100% of hotels must comply with sustainable measures For the first time in any destination, mandatory sustainability standards for hotel establishments have been approved by the Cyprus Tourism Organisation. This means every hotel operating in Cyprus must now take action to protect the environment and support their local community. The new minimum standards are part of a wider programme of reforms from the Cyprus Tourism Organisation (CTO), the Cyprus Sustainable Tourism Initiative (CSTI) and the Travel Foundation - to make Cyprus a leading destination for sustainable tourism. Because of the scheme, hotels in Cyprus will now be required to demonstrate sustainable business practices that will ultimately lead to cost savings and a more authentic Cypriot offering for their guests. The standards cover a range of criteria including: Reducing energy, water and chemical use, and the amount of waste generated. Training staff and having a "green team" responsible for sustainability issues. Sourcing local goods and services where possible. Promoting authentic Cypriot food and entertainment. Supporting local charities and community initiatives.
