Keeping it Local Caterer & Hotelkeeper this week featured a number of CH members and the Association itself when discussing the subject of involvement in the local community. Under the heading of “Sweet Charity”, it indicated that a sustainable business is a socially responsible one, involved in its local community and seen to care about its customers. It appears the feelgood factor is alive and well and residing very close to home. For The Green House Hotel, Bournemouth (2013 Considerate Hotel of the Year) sustainability, fair trade and local involvement exist at the very core of their business. They are much involved with local schools tutoring on sustainability and careers in hospitality, and staff delight in working with their local community. That involvement and support is returned by the community who utilise the hotel for events and hospitality. At Battlesteads in Northumberland (2011 Considerate Hotel of the Year) owner Richard Slade echoes the thoughts of The Green House. “It’s a serious effort to be part of the community. If we expect the people who live in the village to support us, we must support things that mean something to them”. The team at Battlesteads provide around 3,000 meals a year to the local school, organise weekly meals for pensioners and put on an annual beer festival from which the proceeds go to charity, among many other things. Even Yours Truly was quoted indicating that being considerate (and green) wasn’t just about saving energy, water and waste and being sustainable – it’s also about people and looking after the community. Counting down to World Water Day 2014 – 22 March Water = energy and energy = water. Simple isn’t it? In the real world it may not be that easy. What do we do when the demand for water is rising exponentially and 78% of available fresh water is stuck in glaciers, soil, rock and vapour? Each day, millions of people have no access to clean and fresh water. It is one of the major challenges for today, not to mention outcomes such as water-borne diseases and economic stress. We can all contribute and help by saving water and energy, using both more efficiently and really pushing policy makers, plus do something ourselves. Log onto www.unwater.org/worldwaterday then click on Campaign Materials. There you can use your creativity to spread the word and build a bigger awareness. You can download, print and paste onto your blog, vlog, website or even order a T-shirt to make this campaign highly visible to others and get more attention.

Water.. ..is the new black gold, a precious resource that is not infinite. Some of us will say that during the last few months we have had enough rain/water to last a lifetime. To some that water is an essential ingredient for a lifetime, one that millions of people have cut short because of a lack of a fresh clean water supply.
Anything you can do……… Who does sustainability better? The stand-alone restaurant or the restaurant within a hotel? Early in April CH gets in the ring with SRA (Sustainable Restaurant Association) to debate the issue which in turn will teach both sides of the coin that they have something to learn from each other. That’s the theory, but is it the reality? Join us for this event at a well known CH member hotel – date, venue and timing details available very soon, and learn of methods and initiatives that hopefully will inspire you and make you even more sustainable (and considerate!).
The Return of the White Panther? Those of us of a certain age will remember the halcyon days when The Pink Panther prowled our cinemas screens. Now it appears a new breed of panther is to hit our PC screens. CH Ambassador Raymond Blanc in animated form (when is he not?), playing the part of inspector Blanc, will seek out in a series of animated cartoons the good and the bad guys (male and female) who use or do not use fish from sustainable stocks and which carry the MSC label. The first film in the series can be found here.
News from our Members InterContinental London Park Lane – At the Cookbook Café sustainability is firmly on the menu. Not only do the team use local produce and support local businesses, they also partner with local causes and charities. Area GM Alvaro Rey says, “Last year we partnered with Edible Playgrounds which provides food-growing and learning spaces in the grounds of inner-city schools”. They were also involved with Well Child and London homeless charity The Passage, both highly worthy charities. Bravo Zulu InterCon London Park Lane! The Considerate Hotel of the Year 2014 Awards Each week we will be featuring a category and the criteria for entry. We will also be contacting member hotels individually to encourage participation. This week we are homing in on – Considerate Small Hotel of the Year (sponsored by EcoPure Waters) - Recognising that small accommodation operations, 10 bedrooms or under such as B&B’s, guest-houses, or restaurants and pubs with rooms, have considerable environmental achievements. This award will be presented to the provider which is considered by the judges to have made the most significant achievements and proved most inspirational in terms of their green journey during 2013, without all the trappings and resources of big business. This will give entrants the opportunity to relate their positive results, anything from energy saving and CSR, to creating innovative environmental initiatives and communicating their considerate messages to their guests, as well as lessons learnt during this 12 month period that highlight eco-friendly and socially responsible experiences that could act as an inspirational tale for others. In effect, it is their story. This is now a specific category for the small accommodation provider who perhaps previously felt swamped by larger fry; and this award has been designed to recognise the very important part these providers play in our strategy - now there is something for everybody.
Sustainability is the new definition of Luxury If you think walking bare foot and eating raw food is not sumptuous living, think again. At the Healing Summit in Berlin, Sonu Shivdasani, CEO of Soneva Group has quoted “people today are living in a box, not literally a cardboard box but we live in a square flat, work in a cubicle office and eat food from a paper box. There is so much more that nature can provide for us but somehow we overlook it. The upcoming luxury travel trend is now called Slow Life, where you put yourself into a wilderness, free yourself from typical luxury and eat what mother nature offers. If we cannot escape our cubical everyday life, at least make the sustainable luxury trip happen”. Here are the 5 trends that appear to make it possible – it helps if your resorts are centred on the Maldives: open air dining, be bare foot, eat self-grown vegetables, try out local and seasonal gourmet food, and play sport without accessories.
