10,000 Feet & Falling for a Good Cause! Pray listen to a message from Philip Newman-Hall, Director at CH member Le Manoir Aux Quat Saisons: “I will undertake a Tandem Parachute Jump from 10,000 feet on Sunday 20th July 2014 on behalf of our main industry charity Hospitality Action. Last year, together with a number of "senior" industry colleagues, we raised £25,000 for Hospitality Action by holding our "Back to the Floor" Dinner where we all became waiters or sommeliers for the night. We will not be holding another Back to the Floor Dinner until 2015 in London and in order to keep this fantastic event in everyone’s mind until then I thought I would go "Back to the Ground" instead. My target is to raise £1.00 per foot of my jump and therefore a total of £10,000, however, as this is a parachute jump I suppose the sky is the limit! Hospitality Action is The Charity that supports those in our industry who fall on hard times, often through no fault of their own. It also supports youngsters coming into the industry who may have financial, drug or drink difficulties and provides a life line to older retired members of the profession who may have no other contacts and relish a day out with other workers from hotels and restaurants. So I am asking you to give as much or as little as you can to support me in this fundraising. £1.00 is fantastic as this covers another foot.....but if you can stretch to more then that would be fantastic. I have set up a Just Giving Page or you could just send any donations to me here at Le Manoir and I will add them to the Just Giving page.

Our Award Sponsor Prosciutto di Parma Parma Ham is a Protected Designation of Origin (PDO) product, meaning that it can only be produced and cured in the traditional production area near Parma, a small northern town in the Emilia Romagna region of Italy. The geographical characteristics of the Parma region contribute to the sweetness of Parma Ham and make it possible to produce the highest quality hams. The drying process that Parma Ham goes through creates a ham that is very low in fat content, with many mineral salts, vitamins, antioxidants and easily digestible proteins. Parma Ham is 100% natural and is truly a food for everyone. The unique taste of Parma Ham is dependent on this traditional production process passed down from Roman times, carefully controlled by the Consorzio del Prosciutto di Parma. There are over 150 producers of Parma Ham in Italy who continue to practice these traditional methods. Only hams that have passed stringent curing regulations approved by the EU and have been aged for a minimum of 12 months can be awarded the stamp of the Ducal crown – a five pointed coronet logo with PARMA in the centre which is branded onto the ham’s skin. The Ducal Crown is now a certification trademark. For more information, please visit the website.
Food Service Industry is getting Greener reports the Gram Green Paper although budgets and lack of knowledge appear to remain a barrier. After a two-year wait, the Big Stage, quite literally, was set at Hotelympia on Tuesday 29th April for the launch of the fourth Green Paper, commissioned by energy efficient refrigeration (Considerate) supplier, Gram. The results from this unique analysis and quantitative research into http://us5.campaign-archive1.com/?u=dde11f98e5ce03d93968ee089&id=326971ec84

sustainability, within the UK foodservice industry, shows that more operators and chefs now believe themselves to be greener since the first report was launched in 2008. Budget however is still the biggest factor cited by respondents, whilst knowledge is also recognised as a major obstacle to being greener, and therefore more considerate. Quantitative surveys were conducted between November 2013 and February 2014 and analysed by independent research consultancy Cambridge Direction. Partner associations that contributed and supported this research include; CESA (Catering Equipment Suppliers Association), HCA (Hospitable Caterers Association), ACE (Association of Catering Excellence), CHA (Considerate Hoteliers Association), IoH (Institute of Hospitality), TUCO (The University Caterers Association), LACA (Local Authority Caterers Association), NACC (National Association of Care Catering), Master Innholders, SRA (Sustainable Restaurant Association) and FCSI (Foodservice Consultants Society International). It seems the industry is still feeling the effects of a double-dip recession, with 55% of respondents to The Green Paper questionnaire saying that lack of budget was a barrier to having a greener workplace, and only 5% of respondents ‘very willing’ to pay a small increase in costs in order to be greener. Dominic Burbridge, Associate Director at The Carbon Trust however believes that we should stop thinking of green being more expensive: “Being green means being more efficient. Over the ten-year lifespan of your kitchen equipment, more than 80% of your money is spent on energy consumed and less than 20% on the equipment itself. Energy prices continue to go up year after year so investing a bit more upfront in energy efficient equipment is a no-brainer for any business no matter your size.”

per bottle’ scheme. “Through our support for Just a Drop, and by encouraging our customers to do the same, we’re now adding a strong ethical element to our existing economic and sustainable business proposition.
