CH has found that over the years Green Teams within UK hotels have become part of the integral fabric of each property and they are now not just a norm, but a must! They contribute to the efficiency of the management structure, add a more social and ethical angle and have established themselves a little as the 'moral conscious' of each hotel. Which is why we decided to dedicate this month始s newsletter to this topic.

actually first start? Why were hoteliers realising that they were actually necessary? CH's Chairman John Firrell recalls - “Back in the early 90's at the birth of CHA, when green referred to either a colour or plants, and CHA's then parent Westminster City Council was gathering the great and the good of the area's hotels, restaurants, theatres and builders to rally to a rapidly developing concern for the health of our planet, much debating went on as to how best to respond to this call to arms. As time went on environmental matters began taking up more meeting time, so several hotels decided to set up sub-committees with a chairman who would bring ideas, suggestions and findings discussed back to the management table. The Green Team was born! Although it was some time before this name was adopted more formally. Many are now searching for a clearer definition of what a Green Teamʼs exact role should be, which is so much more than the recycling of paper, the switching off of lights and turning off of taps of yesteryear. Considerate Hoteliers has long been working closely with Green Teams all over the UKʼs hotel landscape and we have seen some models be more successful than others, but really the overall effectiveness invariably seems to be linked to the empowerment given to the team by senior management as well as seriousness attributed to the topic all the way to the top. Given our longstanding experience with this topic, we have devised special Workshop modules to help a hotel set up an efficient Green Team with a coherent structure, assist it with its mission finding, setting tangible goals and implementing effective monitoring systems. (see the Considerate Suppliers section in this newsletter for more information) CH has also produced a short guidance note for members on how to create a Green Team within our Knowledge Hub this can be downloaded here. Additionally please remember that for your Considerate Hotel of the Year Awards, we take all Green Team activities into account for each category, so to all of you out there getting your applications ready, the more creative, active and engaged your Green Team is the better chances of winning an Award for your Hotel overall.

MOTTO: ʻʼWe really do want to let the grass grow under our feet!ʼʼ How the Green Team is selected The Green Team is purely voluntary; made up of individuals from all levels of the business who have a genuine passion to contribute to making the hotel and the industry in general a more sustainable and ʻconsiderateʼ environment. This ensures that influence and enthusiasm is allocated in the areas that can make a difference. For example: Starting at the very top, the General Managerʼs commitment to a sustainable hotel is vital in gaining funding for technical projects such as the installation of the Waste to Water Machine. On an annual basis the existing Green Team and any ʻnew shootsʼ are invited to a Garden Party where existing members re-commit to their responsibilities and new members are interviewed to establish individual areas of knowledge, interest and commitment. A green job description is issued to all Green Team members, and whilst this is a voluntary role, the level of commitment, responsibility and accountability are as crucial as any other role within the property if ongoing success is to be achieved. How the Green Team engages with other staff and colleagues in the hotel. We love to talk! The Green Team understands that engagement of the entire hotel team is vital to ensure a sustainable culture is infused and maintained. All HODʼS attend 1 Green Meeting per quarter to receive updates whilst ongoing developments are fed back to all departments via the Employee Consultative Committee. A new innovation in 2013 was the implementation of bi-annual Green Roadshows where a completely green lunch is served and the team interact with all team members, sharing knowledge and hotel updates whilst fundraising games provide fun and the opportunity to donate to charities or spend the money on more far reaching ideas such as planting trees with The Woodland Trust. Ideas from the dedicated Green Suggestion Box are considered and shared and implemented where possible. The Green Board was cited in our GTBS accreditation assessment as ʻOne of the best I have seenʼ(Stuart Parks, GTBS assessor) The implementation of monthly Green Audits is a constant reminder that standards in all departments need to be maintained and underpins the empowerment of the Green Team to maintain current standards and implement new ones. It starts at the top. The General Manager of the hotel is clear: A sustainable hotel as we ʻbuild for the futureʼ is a key priority combined with creating long term relationships with our neighbours and the surrounding community. Whilst ROI (Return On Investment) is vital, a genuine culture of ʻwanting to make a differenceʼ is not only allowed but is actually the norm. For senior managers – being considerate is not an ʻextraʼ to their role, it is an intrinsic requirement. According to which criteria does the Green Team set its goals and objectives? Goals and targets echo the current goals in our Company CSR Policy to reduce carbon emissions and the ʻBuilding for the Future' sustainability plans: Waste management Reduction of energy and water consumption Communication (we added Engagement) Purchasing Innovation The Green Team also set themselves a very personal pledge: ʻPutting the ʻSocialʼ into Corporate Social Responsibilityʼ Increasing activities with local community projects such as employing local people Forming a business partnership with Thames Clean up. Taking Part in “Earth Hour”. Ensuring we provide accessibility for our guests with disabilities (this includes welcoming Guide Dogs into our restaurant). Ensuring our teams are provided with a safe working environment and at least one nutritional meal per day. Promoting a diverse workforce with equal opportunities for all. Continuing to monitor our donations to charities. Promoting our Club Carlson Loyalty Scheme initiative that allows our guests to convert their Loyalty points into charitable donations. And lastly: Talks are taking place to consider the possibility of a new policy allowing team members to take unpaid leave to carry out volunteering activities How the Green Team monitor its successes and progress Meeting notes and previously set targets are reviewed at each meeting and project time plans set. Monthly statistics from our purchasing guru of our waste management systems are shared along with a report of ʻsocialʼ activities that have taken place. ʻbuilding for the futureʼ programme and the team have recently created a specific ʻBuilding for the Future' noticeboard where pictures and statistics of progress are tracked & shared with the whole hotel. Monitoring of scores in the bi-annual ʻClimate Analysisʼ (Employee Engagement survey) with particular note of the areas relating to opinions on company ethics, importance placed on a safe working environment and whether the individual considers the company to have a positive impact on the environment and local community

Green Team Workshops by Considerate Hoteliers Given that this monthʼs topic can have an influence over ALL suppliers a hotel works with, we decided to highlight our own services, which we at Considerate Hoteliers offer you, our member hotels, in the shape of workshops. When setting up and operating a successful Green Team it can at times feel like an uphill challenge. Selecting the right individuals, the right initiatives and achieving real results are all some of the hurdles which must be overcome. Fortunately this is where Considerate Hoteliers are able to help out. In addition to the wealth of information available through our exclusive membersʼ Knowledge Hub, we also offer bespoke workshops for hotels on a range of topics, including Green Teams. Through our fun and engaging approach, we have helped several hotels to create and get the most out of their Green Team. Typically this would cover the following steps: 1. Start by reviewing any existing sustainability strategies or plans in place to ensure that the way the team works is aligned with aims of the hotel. 2. Explore the different roles and responsibilities of the team, particularly in the context of how they interact with the aims of sustainability strategies. 3. Define and recognising the successes achieved by the team so far and learning from any failures, in order to build a robust plan going forward. (It is likely there is a lot of knowledge already in the team but this perhaps hasnʼt been captured, and it is important to draw this out) 4. Individuals and the collective team are helped to explore the question “What can I do?”- Techniques taught include empowerment, inspiration from peers and hearing real stories of success. 5. Defining an identity and even a motto helps to create a common aim. Ultimately a flexible structure is provided to the team to work with, helping provide stability and real results in their work. We see our role as being very much that of support to a Green Team and of giving it ownership of the process and impetus. This then allows the Green Team to carry on successfully implementing initiatives. And last but no means least, with the launch of Con-Serve, a Green Team at a hotel is now also able to measure its projects in facts and figures, delivering the data to demonstrate that an effective Green Team does indeed ʻpay offʼ. STORY OF THE MONTH Organisations that motivate us One of the most important roles for a Green Team is to identify suitable initiatives for the hotel to get involved in which support your responsible business aspirations. Considerate Hoteliers have worked with a multitude of different partners over the years on initiatives that we think are of real value to our members. Below is a summary of some of our most exciting current initiatives that your Green Team can get involved with.

Whole World Water Whole World Water (WWW) are creating a new way to do business – balancing environmental, economic and societal issues. The Plan Zheroes website now features an excellent interactive map allowing surplus food producers to automatically be matched with charities in their area who they can donate to as well as volunteers willing to transport their food. Nick Waddington is a perfect example of someone who is living out his purpose. Whilst under his inspired leadership, Trenython Manor pioneered the sustainability agenda and not only improved profitability and lowered costs but reinvigorated the team of staff to inspire a whole generation of children through fun, innovative kids clubs which included denbuilding, understanding biodiversity and mini-beast safaris. My life motto

Not so much a motto, more a quote written by a Roman poet and satirist Horace over 2000 years ago: “We are just statistics born to consume resources” I discovered it whilst wanting to learn more about climate change a few years ago, and not only did a bigger picture dawn on me but also the impact a linear economy, if not life, has on the planet and our understanding of it. ʻCircular Economyʼ and ʻRewilding', topics we will no doubt hear more of in the future; Can we potentially slow and reverse the impacts of climate change? However, if I were to have a motto it would be:ʻif we donʼt dream of a better future we wonʼt get oneʼ! An unforgettable place I travelled to in the last year Rarely do I venture out of Cornwall - twice last year; a day out to London for the annual CH Awards and Norfolk for a family holiday which is becoming an annual pilgrimage. A long drive but well worth it! My partner visits family with the kids while the dog and I, well, we just get lost, exploring for hours the multitude of woods, waterways and plantations. Wildlife is abundant, not a soul insight and the additional advantage of the terrain being very flat! I even think the dog appreciates that. My favourite hotel La Voile Dʼor hotel, Sables Dʼor Les Pins, Brittany, I havenʼt been since the 70ʼs! A quick Google reveals very little change, and itʼs a reminder of fond memories as a child on our first family holiday abroad. Miles upon miles of dunes, golden sand, blue sky, estuaries, rivers and forest! A far cry from the cobbled streets and canals of East Lancashire, my childhood stomping ground. Itʼs an experience that I now look back upon as having a subtle, yet profound impact on my life. I will perhaps visit again soon with my family! What does our “Topic of the Month” mean to you Green Teams are becoming evermore apparent and important in our industry. They come in many guises and bring a multitude of benefits to any business; reducing costs, bringing a sense of worth and purpose to our everyday roles, and they can be a hot bed of creativity which in turn can bring its own success, and in these days of social media will provide you with invaluable content. For me it's a must moving forward. It's not unusual on this day and age to employ a Sustainability Manager or similar. With the right direction and knowledge a Green Team can bring about positive change and tangible results very quickly. The oldest piece of clothing in my wardrobe Take your pick The last meal that truly impressed me Iʼm still bowled over by the spring vegetable salad starter we had at The Landmark Hotel in London at the 2013 Considerate Hotel Awards luncheon ceremony. People that inspire me Throughout my life Iʼve been inspired by many people from all walks of life but none have been able to show just how beautiful and diverse the planet is that we live on and why we should all work harder to protect it, other than Sir David Attenborough. What does responsible tourism/business management mean to you When you operate in the destination tourism market, you quickly realise the importance of responsible tourism, sustainability and how connected it is with the wider economy, politics and climate. Cornwall is surprisingly one of the poorest counties within the UK, the largest employer is the public sector followed by tourism and agriculture, all three of which are suffering in our current economic climate with more cuts to come. Tourism has had the additional burden of a couple of wet years, high petrol prices, a washed out train line and the ʻschool holidayʼ fine fiasco just added to the woe. At the same time new housing projects, wind turbines, solar farms, supermarkets/shopping outlets all compete for that last green field. The reality of running out of space is becoming ever more apparent. The fear for some, is that the very essence of Cornish culture and rich natural heritage, the basis for our tourism industry, is under threat. Population and land use is a global issue so the more responsible we all become, the better the outcome will be. Itʼs that simple and that important. My favourite website There are many! Most used without a shadow of a doubt is twitter @Nick_Waddington. Social media is an amazing platform to give and receive information. Whichever one or how many you chose, make it work for you/ and your business. Those that donʼt embrace social media will more than likely end up with those that didnʼt embrace the internet. Itʼs your new shop window and will drive traffic to your website! How else are all those people on their phones and tablets going to find you in the future. If you donʼt entice them in yourself, youʼll be paying someone else or a 3rd party to do it for you! I travel to work by Car - sorry, but thatʼs Cornwall. Seasonal & local favourite produce If it fits into a pie Iʼll have it! The more local and seasonal the better! My favourite ‘sustainable’ company Couldnʼt possibly pick a favourite, theyʼre all amazing and are tackling a variety of problems that we can all learn from. My biggest worry about the future Population, energy, food and resources. The more people who understand the exponential function and what a modest percentage growth really means, the better.
