Wasted Words or an Appetiser? There is little doubt that within the considerate/responsible world of hoteliers, food waste, how to avoid it becoming waste and when does it become waste is taxing the minds of hotel operators throughout the land (that land being the planet). If you read last week’s News Bulletin (it’s available in the Members Area of the CH website if you missed it) you will have noticed there is some rivalry amongst the various organisations. Avoid waste at all costs, shouts one and who can argue with that? Strangely no one, but the other side is saying, however, if you do produce waste this is what you should do with it. When I was in the Royal Navy, it was known as utilisation of byproducts. Over the coming months we are going to hear lots from both groups and they are equally worth listening to. In the middle is an organisation called FareShare: it is a national charity that tackles food waste and food poverty across the UK and we shall hear more of them in due course (more information here).
Sustainable Hotel Restaurant of the Year Three cheers for Le Manoir Aux Quat Saisons who have scooped SRA's Hotel Restaurant of the Year award. Rumour has it they were in very competitive company but this week’s Bravo Zulu is heading up the M40 to Oxfordshire, dodging a few floods on the way!
The Hotel Group CEO who climbed a Mountain and was humbled Wolfgang M. Neumann, CEO and President of the Rezidor Hotel Group on climbing Mount Kilamanjaro: "The fact that I made it up to the top was only the icing, the whole process was a very special learning experience. I am proud of having made it, grateful for having collected over US$ 30,000 for the Kenyan SOS Children Village, but most importantly I was touched by the unique human kindness of the Tanzanian people and the incredible natural beauty. I will need a few days to put it all into perspective".
Blaming Nature Suddenly the floodgates have opened, and the long political reluctance to warn about climate change has been swept away by the winter storms. present politicians. Whilst eminent scientists have indicated that all the evidence so far points to global warming and climate change contributing to the storms “definitive proof” is not there yet. Extreme weather is almost universally expected to worsen as the world warms up. But inconveniently, natural time lags are inherent in the world’s climate system and the effects of pollution emitted today may not show up for decades. The argument should therefore concern what level of risk – based on the best scientific evidence – we are prepared to face from a changing climate, and how much we are prepared to do to mitigate it and adapt to it. Editor’s note – I cannot claim this opinion to be my own – it was first uttered by Dr Stefan Gosling, a member of the Inter-Governmental Committee on Climate Change in Stockholm. The view would appear to have the support of many clear thinking and undoubtedly considerate individuals.
Hotelympia Looms.. Will you be there? A change of date for this year’s Hotelympia at ExCel in London Docklands to 28th April until 1st May and Considerate Hoteliers will be there extolling the message – Caring for You & Your World. CH will be putting on a number of workshops on Hotelympia’s main headings for 2014 – Food & Drink, Design, Technology and Equipment. CH topics are (Food) Reduce food waste and save money in association with WRAP, (Design) Sustainable technology use in design and refurbishment, (Technology) Using technology to improve your sustainability performance, (Equipment) Catering / kitchen equipment and behaviour energy saving advice. Hotels must do better.. ..if they are to attract the £2 billion stay away from home market in England alone as identified by VisitEngland in 2010. VisitEngland has estimated the value of the stay away from home market for disabled people at £2billion. However, a recent survey by the new online training resource for hotel staff called AccessChamp has found that hoteliers have a long way to go to provide great customer service to disabled guests. News from the Front (of House) K West Hotel & Spa is dedicated to minimising the impact its operations have on the environment. As part of their learning process, they are in tight collaboration with Considerate Hoteliers, Green Tourism Business Scheme, The British Hospitality Association and Carbon Trust. K West Hotel & Spa liaises with the local community and participate in discussions about environmental issues in recognition of compliance with relevant environmental legislation as a minimum level of performance. The education and training of employees in environmental issues and the environmental effects is a priority for them, together with a high regard for good practice management. The Savoy was proud to be the official hotel partner for the #EEBAFTAs. They welcomed the stars to the partner Style Suites this past weekend to get them ‘red-carpet ready’ for the glittering event. Thanks to BAFTA we currently have one of the iconic masks on display in our Savoy Museum along with photographs from Andy Gotts ‘Behind the Mask’ collection.
Climate Week & You.. Climate Week is Britain’s biggest climate change campaign, inspiring a new wave of action to create a sustainable future. Culminating in a week of activities on 3-9 March 2014, it showcases practical solutions from every sector of society that help people live and work more sustainably. Each year, half a million people attend over 3,000 events in Britain’s biggest environmental occasion. Events are run by schools, businesses, charities, councils and many others. Participation is completely free. You can help accelerate action on climate change by making Climate Week happen where you are. Ask an organisation or group you know to start planning an activity now for Climate Week in March 2014. People can run any kind of event or activity – each year there is a huge range such as workshops, competitions, exhibitions, launches, bike rides, film screenings, open days and debates. One activity you can take part in is the Climate Week Challenge competition. Over 200,000 people in schools and workplaces take part each year. The Considerate Hotel of the Year 2014 Awards Each week (from next week) we will be featuring a category and the criteria for entry.
