Greetings to all liquor traders and business people. May 2016 is the year in which all our frustrations come to an end. Starting with the long walk to “Shebeen Licences” we hope the court case by the Yeoville Rate Payers Association will come to an end, so that people can move forward with their businesses. Secondly, since I became president of the Gauteng Liquor Forum, I have been hard at work in submitting and attending meetings for the ratification of the Gauteng Liquor Bill. There is still no final draft of the Bill. Thirdly, I wish to draw your attention to the Liquor Act which determines the trading hours of every liquor trader in Gauteng; the Act and the Bill will make life easy for everybody including the men in blue (SAPS). I call on all liquor traders and business people to register your business because there is a saying: “Don’t sit in a corner and expect all good things”. NTHA GRADUATION CEREMONY The National Tourism and Hospitality Association’s (NTHA) wittiest members, who call themselves Liquor Traders against Crime, have done it again: they celebrated the Ndofaya Hospitality Academy graduation ceremony on November 26 2015, awarding 2 1 students with their Cathsseta Accredited NQF Level 4 Certificate in Professional Cookery. What a good thing the Liquor Traders Against Crime have done, to give hope and a better life to the graduates and their families, in an initiative which has brought light to the community we trade in and love, by giving back from the profits and affiliations of the NTHA. Over the 12 month duration of the course, NTHA assisted the students financially: normally this course costs some R20 000 per student. Under the support of the NTHA, Ndofaya Hospitality Academy students were only obliged to pay R800 as a commitment fee. The outcome of the programme is already yielding real success as six students have been placed in companies such as Spur Corporation, where they will be trained for a further six months, emerging as junior managers. Other Ndofaya graduates from 2015 are now working at Montecasino in Fourways as chefs. For the school’s founder, Fanny Mokoena, as well as its NTHA representatives, including Maud Masiyiwa, Stanley Bezuidenhout, Lucky Diale, Pinky Tiro, Johnny Kaledi and the members of the board of the Meadlowlands Tourism Development Centre, this level of success was a dream come true, which will encourage Ndofaya Academy to launch other accredited programmes that are in demand from the community. These include: 1. Professional Cookery = NQF Level 4, duration 1 year. This learnership programme will commence

in January of 2016. There are 15 applicants for this course. 2. Assistant Chef = NQF Level 2, duration three months. Admission is currently open for applicants. 3. Cooks 101 = 24 credits, 10 days (Run on Saturdays, specifically for individuals who have commitments during the week and who want to acquire basic cooking skills) Ndofaya’s experienced and capable academic team, under the leadership of Mandla Motha, will run the programme. Motha has been a chef for over a decade. He will be supported by his colleague Sizwe Nkosi, teaching theory; as well as facilitators Salina Modise and Khathutshelo Ngwasheng and NTHA administrators Teboho Motjetjepa and Xoliswa Somagaxa Ndofaya Hospitality Academy’s objectives are still in community development through skills development and industry exposure to members of our previously disadvantaged community. NTHA works on the ground in providing school children with rich history and also Meadowlands Tourism Development Centre as a tourist attraction, providing enough background on the formation of Meadowlands from the forced removal in 1954 from Sophiatown. KIE’S CLOVER ACQUIRES FRAN

Retro brand Frankie’s is an established name in the market, with its range of soft drinks, hot chocolate powder and lollies. Frankie’s was started in 2006 by husband and wife team Mike and Paula Schmidt. Clover Industries Ltd has recently purchased Frankie’s Olde Soft Drinks CC, to form Clover Frankie’s (Pty) Ltd and Clover will hold 51% of the new venture. Johann Vorster, Clover chief executive, said: “Apart from the brand synergies, this acquisition provides Clover with an important platform from which to launch into carbonated soft drinks and other value added branded ranges.” Mike Schmidt, cofounder of Frankie’s, stated: “Currently Frankie’s outsources its entire sales, merchandising and production function. BAIN’S TAKES TOP HONOURS IN NEW YORK Bain’s Cape Mountain Whisky flew the South African flag high at the 2015 New York International Spirits competition by taking gold. The only South African 100% single grain whisky, Bain’s Cape Mountain Whisky is made from local grain, distilled in column stills and double matured. It pays tribute to Andrew Geddes Bain who constructed the Bain’s Kloof Pass in 1853. Master distiller Andy Watts says the whisky has received a warm welcome in New York. And the James Sedgwick Distillery where Bain’s Cape Mountain whisky is manufactured took the prized Best International Whisky Distillery of the Year award.

Distell’s flagship wine Nederburg has embarked on a global campaign which has seen the brand’s packaging and look undergoing a facelift. The company is staggering the launch of the new look of Nederburg, which is also one of the fastest growing wine labels in Distell’s portfolio. Head of Distell’s luxury brand portfolio marketing team, Carina Gous said that the new packaging would feature the brand crest more prominently with a fresher, more modern feel. “It has been designed to clearly convey Nederburg’s heritage, pedigree and sophistication, to establish a stronger family resemblance across the range and to amplify shelf stand-out,” she said. In the coming months, Distell will also roll out new above-theline and digital communication plus a new strategy with regard to in-store merchandising.

LD-WORLD THREE SHIPS RECREATE OMERS ONLINE EXPERIENCE FOR CONSU On 27 October 2015, Three Ships gave consumers the chance to purchase 800 limited edition Three Ships 10 Year Old Single Malt Single Cask PX Finish whiskies. Through live streaming, customers were able to select a handnumbered bottle at www.themasterscollection.co.za in an interactive experience and see it being taken off the shelf before master distiller Andy Watts signed and wrapped it for delivery. Consumers were able to pay for their purchases through SnapScan, who partnered with Three Ships. Three Ships wanted to create an old-world experience for connoisseurs with the sense of walking into a cellar to purchase a unique whisky. Three Ships marketing manager Liezl Dippenaar said: “To create excitement and awareness we needed a platform that’s unique in the world of online shopping to mirror the pioneering spirit of the Three Ships brand which has created many firsts for the South African whisky industry.”

ORLD CLASS W E R A S IE D N A R B N A IC SOUTH AFR Holding the title for International Brandy Producer of the Year for not one but two years running is no mean feat. Leading South African brandy makers the House of Van Ryn’s scooped top honours at the New York International Spirits Competition as well as four medals across their portfolio of brandies. With close to 500 submissions from more than 35 countries, the competition for the top position was stiff. “Our brandies were competing against very distinguished companies from around the world, and the fact that we dominated the category by winning five out of the eight medals in total is testament to the consistency and world class quality of South African brandies,” said Distell’s Brandy Ambassador Nicholas Holdcroft. South African brandy makers held the flag high, with Van Ryn’s bringing home two gold medals for the Van Ryn’s 12-year-old Distillers’ Reserve and Van Ryn’s 20-year-old Collectors’ Reserve. Two silver medals were awarded for the Oude Meester 18-yearold Souverein and the Van Ryn’s 10-year-old Vintage as well as a bronze medal for the Van Ryn’s 15-year-old Fine Cask Reserve.

BRANDHOUSE JOINT VENTURE IS UNBUNDLED

In July 2015, the announcement was made that the brandhouse Joint Venture (JV) in South Africa was being unbundled, with brandhouse becoming the wholly-owned subsidiary of British multinational alcoholic beverages company Diageo. The JV has seen brandhouse become the market leader in South Africa’s spirits market – the market share has grown from 27% to 40%. This unbundling will see Diageo sell its 42% stake in DHN Drinks as well as its 15% stake in Namibia Breweries to Heineken. Diageo will also be selling a 25% stake in Sedibeng Brewery to Namibia Breweries.

S SCOTTISH LEADER BRING A NEW PERSPECTIVE Guests at a recent set of pop-up events created by Scottish Leader whisky and held at Braamfontein’s Shine Studios had the chance to play their part in an evening of drama. From canapes being served by unseen waiters through holes in the wall to tearing down paper walls, from menus in reverse type to multiple dessert stations, the evening was full of twists and turns. Also on display were videos of Scottish Leader street art by Prefix who created 3D installations in both Newtown Junction and the V&A Waterfront to highlight the brand’s tagline “a new perspective”. Global ambassador for the brand analytical scientist Dr Kirstie McCallum flew in from Scotland to present the evening. Guests were also treated to a gift of 12-year-old Scottish Leader which is not available locally.


BEER MAKERS ST E G R LA O W T ’S LD R O MERGER BETWEEN THE W It is official: Anheuser-Busch InBev and SABMiller have signed a merger deal that will see AB InBev buy SABMiller for £71-billion. In order for this merger to take place, SABMiller sold its 58% stake to Molson Coors in its United States joint venture MillerCoors for $12-billion. With an expected cost saving of at least $1.4-billion a year, the new company

will be producing roughly 30% of the world’s beer. “Our combination with SABMiller is about creating the first truly global beer company and bringing more choices to beer drinkers in markets outside of the US,” said Carlos Brito, chief executive of AB InBev.

ELA KELLOGG’S AND SEBENZION – A WINNING COMBINAT Ten thousand outlets reaping the benefits of the partnership between Kellogg’s and Sebenzela, have seen spaza owners and consumers enjoying a wide range of products. Choco’s bars and Fruit Loops K Packs have been in high demand, with consumers asking for new flavours in bars. Kellogg’s set a goal of ensuring that 80% of their Sebenzela sales force were on bike loaders by the end of October. This was in order to supply spazas with stock from micro- distributors daily. Not only has the market proved to be a boon for Kellogg’s but it has also boosted their brand presence nationally.

FT DISTELL KNOWS ITS CRA At a gala dinner in London at the end of November last year, Distell was awarded top spot as Distiller of the Year for 2015 in the International Wine and Spirit Competition. It received the award in 2007 as well. Distell took two category trophies as well as five gold outstanding and 11 gold medals overall. Distell was awarded the Best Worldwide Brandy trophy for the Van Ryn’s 12-year-old potstill as well as Best Worldwide Whisky trophy for the Three Ships Single Malt 10-year-old. Distell’s primary production director Johan Venter said: “We are enormously proud of these achievements and the confidence they convey in the intrinsic quality of our products.”

JOINT VENTURE WITH DISTELL AND TERLATO WINES SET TO SOAR Distell has signed a joint venture with the American Terlato Wine Group which will raise its profile in the US, and create an independent combined commercial Terlato Artisan Spirits division in the Terlato Wine Group. The new division will begin trading from February. Representing more than 70 wines from 12 countries, Terlato has control over 20% of the wine market retailing at $20 and over. Managing director of Distell International, Steven Nathan said the joint venture would enable Distell to enjoy long-term growth in the US. “We are very excited by the development and believe that the new operation establishes us as an important and relevant US player in the artisan spirits business and presents us with a great opportunity to grow,” he said. Terlato Wine Group will also be importing four of Distell’s key wine brands: Nederburg, Durbanville Hills, Plaisir de Merle and Two Oceans. www.spotongmag.co.za

ou’ve been in your current business premises for a few years and you’ve seen your establishment grow, but now you’re wondering if you have room to expand. Before taking the important decision of whether to purchase or rent your business premises, consider the pros and cons of both.

Renting premises Pros: Your landlord is responsible for the maintenance and management of the property – you won’t be stuck with an unexpected bill if the geyser bursts. There is a much smaller financial outlay with renting your business space and there is less financial risk involved than buying. Instead of paying off a monthly bond, you could invest that money into your business.

Cons: One of the biggest downsides to renting a property is that you are paying off someone else’s bond instead of your own. The landlord may also place restrictions on what your business may or may not do. Will these premises allow for growth in the years to come? You may need to 20

Pros With South Africa’s current economy resulting in lower interest rates, now may be a good time to invest in your own premises. Owning your own premises creates business security as it is a long-term investment and an asset that can stand you in good stead into retirement. s of 2009, business owners cannot register new close corporations. This is due to the passing of the Companies Act (Act 71 of 2008), which merged the categories of registration, previously known as close corporation and company “(Pty) Ltd” respectively. Businesses that were registered as close corporations prior to the formation of the new Companies Act do not need to re-register in a new structure or convert to companies.

Close corporations will exist indefinitely but it is clear that they will begin to fall away as converting to a company offers business owners more advantage. The Companies Act has been designed in such a way that, though registered as companies, smaller businesses will not automatically be subject to strict financial reporting and auditing requirements. This way, companies that are similar to close corporations can be formed. There will be no further need for new close corporations. Under the Companies Act, companies have been divided into the following categories: • Private company (Pty) Ltd • Public company (Ltd) • State-owned company (SOC) • External company • Personal liability company (Inc) • Non-profit company (NPC)

What are the benefits of converting to a (Pty) Ltd? Although private companies are governed by stricter rules, than close corporations, it’s worth noting that 22

converting from a close corporation would create greater opportunities for growth and new investments. Close corporations can only have up to 10 members whereas private companies are allowed up to 50 members. If your goals include selling off shares and getting more members on board, then the only way to achieve that is through a conversion.

How to convert a close corporation into a private company Conversion is easy to do online, it costs R175 to convert your close corporation to a short standard company (CoR15.1A).

Gauteng Prioritises Procurement Spend Towards Township Businesses As part of its commitment to support and drive the Gauteng Township Economy Revitalisation Strategy (TER), the Gauteng Provincial Government has prioritised procurement spend towards township based businesses. It has allocated 30% of public procurement budget for these businesses over the next five years. The provincial government has committed to procure goods and services below R500 000 from township businesses. Furthermore, goods and services above R500 000, can still be procured from township businesses that have the capacity or through subcontracting, and joint ventures. In order for township businesses to be considered to provide services, they need to be eligible and registered. Thus the provincial government launched a campaign titled “Qondisa Ishishini Lakho” (meaning “Fix your Business”). The Qondisa ishishini lakho campaign was successfully launched on 14 October 2015, and aims to assist all potential and current entrepreneurs across Gauteng townships to formalise their business. Through the campaign we also offer other business related advice, financial and non-financial support. Since the launch, the government has assisted over 6 000 businesses in 20 townships across the province. Due to the high demand of the service, the campaign has been extended until June 2016. Criminals work hard to find new ways of stealing from small and medium businesses – just like yours – so you need to work even harder to prevent that from happening. Most taverns get a boost in revenue over the December holidays which means having more cash and stock on site in the beginning of the year. This is a risk for small business owners, and you will need a way to ensure that your investment is protected.

If you or your staff need to deposit cash, make sure that you have the resources that will save your money and possibly lives, such as a full tank of petrol, airtime and charged cellphones that can be used immediately in the event of an emergency. Finally, make sure that you and your employees alternate between bank branches so that you don’t form too much of a routine for potential criminals to follow.

Storing Stock Making sure that your stock is safe after hours can be tricky. You might even be losing sleep over the fear that your business is being broken into at any given moment of the day or night, while you are not there. Take time to re-evaluate how you store your stock, where it is kept at night and what you can do to increase its security. A popular choice these days is to have a permanent security guard on site. Alternatively, beef up your existing security with extra security bars and industrial locks. Keep track of the stock on hand by having a record of what is sold and what has been restocked, on a daily basis. That way you can also see where any losses occur during busier seasons in your business.

Employee Safety Finally, happy employees are productive employees. So make sure that your employees stay happy and safe by arranging to transfer their wages directly into their bank accounts. This way they are getting paid regularly, without having to worry about being robbed of their cash on the way home. Understanding solar energy’s response to Eskom

Load shedding seems to be here to stay, with some experts reporting that even when Medupe and Kusile power plants fully come on line, we still may be in a position where scheduled outages will be necessary. So, what is the solution? 30

There are a few solutions, some fairly immediate, some which will provide a longer, more sustainable option to the South African market. Those of us with Zimbabwean mates, know the story (the smell and the noise) of generators – a quick, easy and effective way of rolling back the dark pall of Eskom’s load-shedding programme. An entry level 5KvA generator, able to light a house and run a few appliances, will set you back only a few thousand rand and is easily sourced at a local Builders Warehouse or Makro store.

Generators allow you a “plug and play” option, ensuring that you will have light as soon as you fill the tank and plug it into your main circuit. The drawback of the generator though is not only the awful racket it makes, nor just the fact that your neighbours may be taken on a chemical high from the fumes, the real drawback is a generator’s sustainability. These machines cost more to run in terms of rands per watt than what our dear friends from Eskom charge us – and with the fuel price about as consistent as a Bafana Bafana performance, this is

only supply the need of the individual but to also have a small surplus amount, which could be pumped back into the national grid (This is known as a gridtied system). The private generators would be paid twice the value of what they were charged for the electricity. The result: Germany now produces more than 35% of the world’s solar energy, almost 39 gigawatts at any one time. Interestingly, according to Eskom, South Africa’s total electricity demand is 34gW at peak times. Considering these details, in the light of the fact that the Medupe power station costs almost R32 per watt to run and that the carbon emission tax for the plant is over R1-billion annually, a viable alternative source of energy for the consumer is desperately necessary. Eskom would not disagree either. In a recent press release, Eskom encouraged the increased usage and development of renewable energy by “independent power producers” in order to alleviate the demand on our “constrained power system”.

not a position I would feel comfortable to bargain from. A number of years ago, European countries, such as Germany, were forced to consider alternative sources of energy. The German government set themselves the goal of offsetting 5% of the national electricity demand through solar energy. Through a dynamic ”2 to 1 payback” scheme, Germany was able to achieve this target in under four years. Their plan was to encourage households and businesses to install solar powergenerating systems, large enough to not

That option for the small businessman and the everyday household must be solar energy, however, this form of energy seems to be ”clouded” in misconception and uncertainty. It’s a misconception worth clearing up, though. The first issue to clarify is the reason for any particular installation, that is, do you wish to save money in your monthly electricity bill or is your aim to get through the four hours of darkness scheduled each day? If load-shedding is your only concern, a battery back-up system is your best bet. From around R6 500 for a battery pack, inclusive of a necessary inverter, you can power your HD television, DStv decoder, wireless router and a couple of LED lights for between three and four hours. So, R6 500 may solve your immediate load-shedding headaches, but it will not stave off the burden Eskom brings to your pocket. In order to avoid the impact of the 12% tariff increases planned by the national

energy provider, you need to invest in a complete solar solution. The notion of ”going off the grid” is a fanciful wish, one that will cost you substantially in the hope of accommodating your every energy need. Rather, the preferred approach is to generate your own power during the day, to heat your geyser, charge your batteries and return the surplus back into the national grid (which is allowed in most major metropoles). Then, you would only have to rely on Eskom during high-use times and after battery depletion. This approach would significantly lessen your initial capital outlay. To achieve this, you would need photo voltaic (PV) solar panels, an adjusted geyser system, an inverter, which would allow you to add on to your system in the future and to monitor energy production and supply, and finally you would need a set of back-up batteries for the evening’s power demands. A system of this size would cost you around R70 000. Don’t let this number scare you away, however: this system would not only cover the darkness of load-shedding but it would also effect a 70%-90% save on your monthly electricity bill. A quick calculation means in an average household, you could pay back the full system in four to five years, based purely on savings and projected tariff increases. This model makes so much financial sense that some of the major banks are offering energy-based loans. Unfortunately, we are creatures of necessity, and if this is being read in the comfort of lamplight and air conditioning, there is a good chance that we cannot recall when last the plague of darkness struck. Or how it inconvenienced us. However, a cursory glance at the rest of the world and we soon realise that the challenges of power supply are not an issue of ”if” but ”when”. www.spotongmag.co.za

A nationwide forum was established in 1995, with the hope that visible solidarity between the police and the community would deter criminal activities. Both the police and members of the forum are represented in this kind of initiative. And it is the police’s challenge to ensure there are officers for every unit that needs attention in their community. Further to that, the station commissioner should always be available to respond to questions from the public at all CPF meetings.

But why are community policing forums so important? Quite simply, having an efficient community policing forum in your 42

community promotes your local police department’s accountability. The CPF allows you, in the community, to monitor how effective and efficient the SAPS service you actually get, is. It gives you, in the community, a voice so that your concerns are addressed. An effective community policing forum is vital for distributing resources throughout the municipality where it is needed the most. In this way, the community is able to reach out to those who need help the most, without risking their wellbeing in the process.

British politician Jacob Rees-Mogg said: “People coming together as a community can make things happen”, which is exactly what needs to happen in order for any initiative to be successful. So the next time you complain about how the crime rates seem to be soaring, think about what you can do for your community to assist them? How can you work together with the SAPS to lower crime rates and have a safer community? You can join your local community policing forum. That isn’t all the community policing forum initiative does to assist the community. Since the inception of forums of this nature on a national level, the way complaints and charges are handled has changed as well. This is done by communicating with community members on the status of complaints, and the progress of cases being investigated. It has also led to residential and business patrols to help lower crime rates in the community. Although, it is still clear because of the ongoing crime rate throughout the country that more can be done with regards to putting pressure on criminals.

Our police department has often been criticised for its role in combating the crime epidemic, so the community has decided to do something about it. The Community Policing Forum was established to form a partnership between the police and the communities they serve in an attempt to create effective protection.

The question now is whether or not we as a community need to do more to assist the police department, or if our police department is failing us. If you take a look at the newly-released crime statistic for 2015, there haven’t been many successes in terms of the crime rate dropping. Further to that, there also seems to be a drastic increase in violent crime across the country. This doesn’t leave much room for confidence in SAPS, but can they really take all the blame? With initiatives such as the CPF in place, do we as a community not share the responsibility now as well? Should we not be more involved in securing our safety and the security of our communities?

or as long as can be remembered, the double cab market in South Africa has had only one real champion and several pretenders. The Toyota Hilux has dominated this segment and is by far the most popular vehicle in its class. More recently though, several manufacturers have come to the party, producing some notable contenders: the Isuzu KB, the Nissan Navara, the VW Amarok and the Mazda BT-50, which have all very successfully laid a claim to the throne, but none have The Toyota Hilux really threatened the king. The Ford Ranger

More than 3.2 litres seems quite pointless after you’ve tested the Ranger, as this version is both economical and powerful enough. The 147kW gave us plenty of power and the 470Nm of torque made towing just about anything a real breeze. The model we tested sold for R499 900, which also isn’t cheap, but if you are in the market for a double cab, price shouldn’t be your first criteria. Value should. The Hilux and the new Ranger offer more than you would expect; we believe the new Ranger really does stand a chance at reigning supreme. ebruary is a tough month. It’s the final month of summer and the festive season is little more than a memory (although our expenses and waistlines don’t seem to understand that!) Thankfully, there is more to celebrate than to be glum about. It is the month that celebrates love, for one thing, not to mention that we still have a whole month’s worth of warm weather to appreciate. The change of season will bring a whole new host of flavourful local ingredients that will be readily available, too. There is still time to embrace the last bit of summer fun in your dishes, while beginning to introduce slightly darker, richer flavours into your menu. Here are a few total crowd pleasers to change up your game with.

HICKEN MANLY C ll feed four people)

(One chicken wi Recipe by Jan Braai

Ingredients: • 1 chicken • 1–2Tbs of your favourite chicken spice or rub • 1 tin of cider, ginger beer, beer, Coke, apple juice or grape juice • 4–8 medium to large potatoes Method: • Open the tin of soda/cider/beer/juice and drink one third of it. Now let the remaining contents in the tin reach room temperature. • Light the charcoal fire. In a kettle braai, this means having two heaps of coals on the sides of the bottom grid and leaving the middle of the bottom grid open. • Ensure that all innards are removed from the cavity of the chicken. • Rub the chicken inside and out with the braai spice. • Push the tin with two thirds of the liquid carefully into the cavity of the chicken.

• Place the chicken standing upright (with the can inside also facing upright) into the middle of the top grid of the braai and pack the potatoes around it. • Close the lid and bake the chicken for one hour at 180°C. Make sure that the bottom and top air vents are open. Do not open the lid for the next 50 minutes. • After 50 minutes to one hour the chicken will be ready. The skin will be crisp and some of the liquid from the can will have steamed into the chicken making the meat moist and flavourful. • The chicken is done when its internal temperature is 77°C on your meat thermometer, or when the juices run clear when you poke the flesh with a knife. • Take the chicken off the braai, discard the can and its leftover liquid, and let the chicken rest for a few minutes before carving it. • Serve with the potatoes, which will by now have crisp skins and be completely soft inside.

Ingredients: For the Cake • 1 cup stout beer (Castle Milk Stout works!) • 224g butter, chopped • 75g cocoa, sifted • 2 eggs • ⅔ cup sour cream • 2 cups cake flour • 1½ tsp bicarbonate of soda • 2 cups castor sugar Icing • 4 egg whites • 1 cup light brown sugar • 1/4 cup cocoa, sifted Method: • Preheat oven to 160°C. • In a pan, combine the stout beer and butter, and heat gently until butter is melted. • Remove from heat, whisk in cocoa. Set aside. • In a separate bowl, whisk the egg and sour cream together, add to the stout mix with the flour, bicarbonate of soda and sugar and whisk well. • Pour into a greased loaf or cake tin and bake for one hour and 20 minutes or until a skewer comes out clean. • Cool slightly in the tin before turning out. • For the icing: • Whisk egg white in a bowl over simmering water until soft peaks form. Gradually add sugar and beat until stiff. • Remove from the heat and whisk on low until cool. • Whisk in cocoa and top the cake with mounds of the meringue. Serve with a dusting of cocoa for decoration.

STICKY WALKIES

(Serves 8)

Recipe by Expresso.com

Ingredients: • 1kg cleaned chicken feet • 200ml tomato sauce • 120ml olive oil • 4Tbs soya sauce • 6Tbs braai and grill seasoning • 4Tbs chicken spice • 2 tsp Worcestershire sauce, • 4Tbs crushed chillies (fresh or dried) • 100ml cola • Handful of fresh coriander

Method: • In a bowl, combine the tomato sauce, olive oil, soya sauce, cola, braai seasoning, chicken spice, Worcestershire sauce and chillies, and stir until all ingredients are combined to form the marinade. • Place the chicken feet into the marinade for 15 to 20 minutes before putting them on the grill. The fire must not be too high, medium will do. • Grill the walkies, brushing them with marinade while braaiing until just cooked. • Sprinkle with chopped coriander, and serve. Tip: You can serve these walkies with grilled pineapple as a midday snack or an interesting starter.

Life After Boxing

J

acob Matlala, the shortest professional boxer in the world, who became widely, and affectionately, known simply as “Baby Jake”, was born in Soweto in 1962. He spent most of his life in the suburb of Meadowlands, where his boxing aspirations began. Baby Jake’s father was a recreational boxer and it is said that the young Jacob began training as a 10-year-old, eventually ending up at the Dube Boxing Club.

Career beginnings The club’s trainer Theo Mthembu quickly became a pivotal part of Baby Jake’s career. Under Mthembu’s guidance, his first professional fight was in February 1980 in Port Elizabeth, where he defeated Fraser Plaatjies. He would lose his next two fights after his debut. Despite the naysayers and the world of boxing itself trying to dissuade him, 58

Baby Jake stuck to his goal to become a professional boxer. Standing at just 147cm high, he was the shortest boxer in the world. Eventually, as his career flourished, he also became the shortest world champion. The common thread that would follow Baby Jake’s career is that everyone he fought, though in his weight class of flyweight, was much taller than him. In 2002, Baby Jake fought his last fight. In the ring at Carnival City, East of Johannesburg, he defeated Columbian boxer Juan Herrera 1:43 into the seventh of 12 rounds. In the stands watching the fight and rooting for Baby Jake was the late Nelson Mandela, and Hollywood actor Will Smith. Baby Jake went out in blazing glory: A feat not many boxing legends are able to achieve. Baby Jake defeated Herrera, a man 10 years his junior, and he won that year’s World Boxing Union light

When he finally hung up his boxing gloves, Baby Jake said he had done so because he felt he had run out of small people to fight. His life after boxing was filled with business moves, which weren’t always successful, and ambassadorships. On the business side, there were franchise restaurants and grooming products named after him or featuring his image. He was an ambassador of the Gauteng province’s Aids awareness and prevention campaign and a spokesperson in the province’s campaign against illegal dumping. He put his commerce degree, which he achieved through the University of South Africa to work. After retiring from boxing, Baby Jake played an active role in boxing development. He trained players at Dube Boxing Club, and was constantly and vociferously critical of the youngsters’ lack of discipline in their training. In an interview he was quoted as saying, “Now they get to the gym at 5.45am, and are not ready to start training at 6am as they haven’t warmed up yet.”

The end Baby Jake died on December 7 2013. He succumbed to pneumonia. He is survived by his wife, Mapule and two sons, Tshepo and Masego. But commemorations of Baby Jake’s death were overshadowed by the death of Nelson Mandela two days earlier: The public couldn’t help but draw parallels between the two heartbreaking events. The two men had been enamoured with each other in life.

he National Tourism Hospitality Association (NTHA) in association with Tswellopele Training Institute and the Meadowlands Tourism Development Centre celebrates yet another milestone! A huge congratulations to all 2015 graduates of Ndofaya Hospitality Academy. And the graduates honoured every expectation guests had of them, meeting the challenge of serving 120 hot meals at the same time, with aplomb, with amazing appetizer selections, each more delicious than the next.
