“My biggest project for 2016 is to create cookery e-courses” Silvana at work
Silvana’s shapes At her Acton-based Italian cookery school, Tutti a Tavola, Silvana Lanzetta teaches people how to make pasta from scratch – by hand. In our Q&A she talks about what Ealing, Christmas, and her business plans... How did the Christmas go – did you end up cooking a traditional Italian meal? Since my partner is Swedish, we alternate the Christmas celebrations, and this year we had a Swedish Christmas: which means loads of meat (meatballs, ham, sausages), plus a potato, cram and anchovies gratin called Janssons Frestelse (which means Jansson’s Delight), a beetroot, apple and sour cream salad, and gravalax, cream cheese and dill on crispy bread. For dessert we had traditional Swedish soft ginger cake. Both

in Sweden and in Italy we mainly celebrate the evening of the 24th, so the huge dinner was consumed on Christmas Eve. On Christmas morning Swedes eat a rice and cinnamon porridge, called risgyngröt (amazingly delicious). And for lunch we had a dish made from leftovers of the day before: pytt i panna (roughly translated as small pieces in a pan), where you dice the potatoes, the meat and add some onions, then fry everything up. Of course, I cooked everything myself, despite the fact that I

am not Swedish: the man has just eaten and given grunts of approbation. Any hints you’d like to share about Tutti a Tavola plans for 2016? My biggest project for 2016 is to create e-courses, to allow people who wish to learn how to make pasta but can’t, either for geographical barriers or time, to take my lessons at their own pace in the comfort of their own home. Customers will also be able to print a workbook and a recipe book to help them with the learning. I plan to launch my e-lessons in September 2016. What is your Ealing life like outside of work? I am a mum, so my life revolves around my two children: school runs, playgroups, playgrounds, parks... I love to go to Gunnersbury Park for picnics with the family as often as the weather allows it.
