Food for thought Living with food intolerance can have its challenges but, as Martina Said discovers, the extensive variety of alternative foods that are healthy and easily available to buy, appears endless.
I
t seems that the number of persons living with some kind of food intolerance is ever increasing. Perhaps it’s only a perception, but it is one supported by the well-stocked aisles of gluten and lactose free products at supermarkets that have spiked in recent years, and by the various options on restaurant menus catering for different dietary requirements.
reaction to food, however, is often mislabelled as an allergy, which is a specific form of intolerance to a food or food component that activates the immune system, including the release of antibodies which trigger the release of body chemicals (such as histamine), giving rise to itchy skin, coughing, wheezing and a variety of other symptoms.
The more frequently mentioned food intolerances are linked to gluten and lactose-based foods, and are entirely different to food allergies. An adverse
Food intolerance, on the other hand, involves the body’s metabolism and not the immune system. Lactose intolerance, for instance, results
when individuals lack the digestive enzyme lactase that is responsible for breaking down milk sugar. While it may invoke similar symptoms to a food allergy, namely nausea and stomach cramping, the body response is actually different. People living with a serious food allergy need to eliminate the offending food altogether, while those with intolerance can generally put up with small amounts of the food or component without backlash. Lactose intolerance is probably the most common and frequently encountered food intolerance. Lactose, a sugar found in milk, is normally broken down into simpler sugars by the enzyme lactase present in the small intestine. When enzyme activity is low, the lactose remains undigested and is transported to the large intestine, where it is fermented by bacteria in the gut, giving rise to abdominal pain and flatulence among other symptoms. The quantity of milk and dairy products that leads to symptoms of intolerance varies widely between individuals – some can drink a glass of milk without experiencing discomfort, others can barely tolerate a spoonful of yoghurt or cream. Gluten intolerance has also become rather common, and is an intestinal disorder that occurs when the body can no longer tolerate gluten – a protein found in wheat, rye and barely. also known as coeliac disease, is permanent and often underestimated. If a sufferer consumes a gluten-containing food, the lining of the small intestine becomes damaged and less able to absorb other essential nutrients. Symptoms include weight loss, weakness, irritability and abdominal cramps, and withdrawal of gluten based foods alleviates symptoms and improves the state of the intestine.
In both cases, the best remedy for a better quality of life is to abstain from eating the foods that cause discomfort altogether. It is also the best way to identify exactly what intolerance you are suffering from. In the case of lactose intolerant individuals, there are numerous food items that can replace lactose-rich foods that still give the required amount of calcium, ranging from soya, almond and coconut milk, tofu
and soya beans, to porridge, parsley and okra. There are also numerous lactose-free yoghurts, soya creams and lactose-free ice-creams that are an equally tasty substitute to the real thing. Coeliac patients can turn to a variety of cereals and grains, such as maize, rice, quinoa, arrowroot, lentil flour, baking powder and wheat-free pasta, the latter being widely available in supermarkets and health food stores.
Pinning the problem down could prove to be a challenge initially – whereas food allergies elicit an immediate reaction from the body, such as shortness of breath or a skin rash, a reaction to food intolerance is more delayed, which could make it harder to identify exactly what is causing the problem. One of the most common and effective tests is the elimination
diet, whereby a single or combination of suspect foods is removed from one’s diet for around two weeks to monitor whether or not symptoms improve or disappear, after which the suspect foods are re-introduced in small and gradual amounts, until a normal consumption pattern is achieved. If symptoms re-occur, then it is easier to identify which foods should be eliminated.
Alternative foods FOR COELIACS: The Maltese/Mediterranean diet is heavily reliant on glutenbased items such as pasta, bread and sweet treats. A little research, however, will reveal just how many interesting options are out there that are tasty and healthy for coeliac patients. One gluten free grain that is also a current health food craze is quinoa, a pseudo-grain that is more closely related to spinach than to grain plants. Raw quinoa could be processed and cooked whole in water, like oatmeal, for a crunchy, nutty-tasting warm cereal or salad base, and quinoa flour could be used to make flatbread. It is a great source of plant-based protein, and also contains lots of iron and omega-3 and -6 fatty acids.
FOR the LACTOSE intolerant: Avoid goat, sheep, cow or buffalo milk, as all milk derived from mammals contains lactose. However, if you’re not too keen on soy milk and are looking for an alternative option, the following dairyfree milks are all packed with natural vitamins and antioxidants. Almond milk, for instance, is filled with magnesium and Vitamin E, while rice milk has almost no saturated fat and plenty of vitamin B12. Coconut milk has a creamy taste and texture, similar to cow’s milk, but has a substantial amount of saturated fat.

Beat the Christmas rush With just weeks to go until Santa makes his annual appearance, we at Best Buy are anticipating the rush of the busiest time of year. With that in mind, Jo Caruana presents some hints, tips and ideas to help you keep things under control.
I
don’t know about you, but my to-do list increases tenfold at this time of year.
There’s all the things I want to do at home (put the tree up, buy new decorations, bake festive goodies, sort out my Christmas wardrobe and plan my list of presents for friends and family). Then there’s the things I want to do with my friends or family themselves, such as host a lovely festive dinner or party, and honour each group or unit with some suitable celebration that thanks them for being wonderful throughout 2014. And, finally, there’s all the work items that need to be concluded before
the busiest weeks of the year draw to a close and I can collapse on my sofa, with a glass of eggnog in one hand and a mince pie in the other. So, where to begin? Well, this year I tell myself that I am going to approach the Christmas rush with the same organisation and precision usually reserved for military interventions. I start by planning the festive period as a whole, and create a place where I can keep my lists, receipts and recipes as they start to pile up. I also start a couple of calendars online (although you could do this
in hard copy too) and share them with my close friends and family so that we can keep tabs on our combined events, as well as individual activities. Plus, by booking people early enough I ensure that they commit to the dates I have in mind. With money high on everyone’s list of worries and spending at an annual high, the time to budget can also prove very helpful. Aware of what I can (and cannot) spend, I create a spreadsheet to keep tabs on this key aspect of preChristmas stress. With an overall amount in mind, I break that down to cover various expenses: presents for others (and a couple for myself!), eating out and entertaining, festive food and treats, and other activities, such as theatre tickets to watch the pantomime. Yes it can prove hard to stick to, especially when temptation is bound to lurk round every corner in the form of things I would love to buy for myself or others, or events I would love to attend, but it does help to have an overall figure in mind. This is also the time of year to start thinking about Christmas cards and when you need to send them. There are all sorts of festive options – for instance, do you want to have a personalised card made for friends and family? Or would you like to support your favourite charity by buying their offering this year? Plus, do you need to think about corporate gifts and cards for work? Begin by reviewing the list of people that you need to send cards to and ensuring you have their updated addresses. Consider the fact that last-

post dates vary considerably for overseas destinations, especially when it comes to those in Asia, America or Australia. It is best to ensure that all your cards, regardless of the address, have been sent by 5 December. Taking pastizzi to a whole new level Young entrepreneur Marilù Vella’s original pastizzi business, Pastizzi Gourmet, is going from strength to strength owing to equal parts passion and innovation. Here, the theatre studies graduate turned pastizzara speaks to Sarah Micallef about how she turned one of her passions into a fullyfledged business.

wo of Marilù Vella’s passions in life are theatre and cooking, and she considers herself “very lucky to be working in both.” Apart from participating in a number of local productions, theatre studies graduate Marilù is the owner, director and pastizzara of Pastizzi Gourmet – through which she makes pastizzi that are not only healthier than the traditional variants, but also comprise an array of innovative flavour combinations. “Pastizzi Gourmet started when I was waiting for a reply about a job, and not wanting to sit
idly and do nothing; I discussed the idea with my husband – then boyfriend – and started making pastizzi with different fillings for friends. I used my grandmother's old recipe and tweaked it to make a healthier version,” she recalls, looking back on how it all began. “It took off instantly – I remember being inundated with orders for Christmas!” Everything in Pastizzi Gourmet is made by hand and with love, starting from the pastry to each individual pastizz. Speaking of the low fat recipe, Marilù says, “no lard is used for the pastry, instead I use a healthier alternative made with seed oils. Non-hydrogenated vegetable margarine has replaced animal fat, making it not only suitable for vegetarians, but also a much healthier version of the old home-made pastry and incredibly low in fat.” Apart from this, she only uses fresh genuine products for the fillings, wherever possible using home-grown vegetables from her father's field or from farmers she trusts. What is your earliest memory of cooking? I remember helping my auntie in the kitchen. She loves cooking and spends most of her day in the kitchen, and I used to spend lots of time with her. I also remember cooking for my maternal grandparents – they used to be really impressed, even at just a plate of pasta, and still mention it to this day.

“It took off instantly – I remember being inundated with orders for Christmas!” Can you remember the day you decided making pastizzi would be the career path for you? I remember having some sort of ‘eureka’ moment in terms of why we stick to ricotta and pea pastizzi only, and remember discussing it with my husband, Sean. I never thought it would turn into a career – I thought it would be something I'd be doing on the side, but luckily it went well enough for me to focus on it full-time. Who or what has been your greatest inspiration? My grandmother and auntie are my first and greatest inspiration. I often wish my grandmother was still alive to see what's happening with the pastizzi recipe she used to make. My husband is also a great source of inspiration – he pushes me back up when I feel it's too big for me, and he even comes up with some of the ideas for fillings himself. What has been the highlight of the Pastizzi Gourmet journey so far? Probably sending pastizzi to Maltese cancer patients in London over Christmas, and going to Sardinia to show Italian people how to make pastizzi and tell them all about them. How do you spend your down time? I lecture part-time in Theatre and Performance at Junior College, which I love. In my free time I end up relaxing, although whenever I find the time, I love travelling. What’s your favourite thing in your whole house? Definitely the kitchen. I can live with an unmade bed, but the kitchen always needs to be spotless and organised. What would you never buy? In terms of food, I know I'd never buy oven pizza, or anything which is made in bulk and you'd just put in the oven or fryer. I love making things from scratch and feel bad about buying frozen food. If you were advising a friend to try one dish or meal, anywhere in the world, what would it be and why? One of the best meals I’ve
had was at a restaurant called Metaxi Max in Santorini, Greece. The only way to get there is by renting a car or by taxi, but it's
definitely worth it. The food was divine, and I'd go back anytime. What are you most looking forward to at this present moment? I'm looking forward to expanding Pastizzi Gourmet. It's a bit of a difficult step but I am working hard to make it happen. It's my big project.

inter is a time of year that calls for cuddling and snuggling indoors, when we seek warmth and comfort to shelter us from cold and rainy days and nights. Our pets are no different, but are often exposed to adverse weather conditions when left out in the cold, which could easily lead to otherwise avoidable health problems.

“Animals with chronic pain derived from conditions such as osteoarthritis might need more medication to help them cope with the discomfort, particularly early in the mornings. Exercise becomes more painful and they become reluctant to move. If this problem is not addressed, indoor cats and dogs tend to gain weight and this might have negative repercussions on the arthritis itself. The situation gets worse for animals living outdoors since they need to be able to move to keep warm and can become hypothermic in cold, windy or damp weather.”
“The cold, damp weather challenges the immune system and increases their susceptibility towards infection. Veterinarians see more cases of respiratory disease, particularly feline rhino-tracheitis (feline influenza or cat flu) in winter. The number of cases is even

Most importantly, veterinary surgeons are there to help – it is always best to act quickly and ask for help early in the course of the disease rather than later when cases become complicated and more difficult to treat.”

Is there a solution to our traffic or parking nightmares? Putting aside what the authorities can do to improve traffic flow and parking issues, a simple off-theshelf solution is for consumers to opt for smaller cars. Filetto di manzo in crosta Ingredients 500g beef fillet 500g puff pastry 1 egg (beaten) 50g butter 1 medium onion, coarsely cut
200g fresh cream 100g dried porcini mushrooms 200g white mushrooms, sliced Glass of white wine
Method Leave the porcini mushrooms to soak in a bowl with water and put aside. In the meantime cook the fillet for five minutes on each side in a little bit of butter and put aside to cool. Fry the onion in butter and add the white mushrooms, followed by the soaked porcini, keeping the liquid aside, and cook for about five minutes. Add wine and some of the left-over water from the porcini bowl, and cook on medium heat for a few minutes. Add the cream and mix until thickened, then put it aside and let it cool. Open the pastry to 1cm thickness and brush with half of the beaten egg. In the middle, spread some of the mushroom sauce and place the fillet on top. Place the rest of the mushrooms on top of the fillet. Close the pastry ‘al saccoccio’, and pierce it with a fork, after which brush it with the rest of the egg. Bake in a pre-heated 200 degree oven.
Tagliatelle del Monsù Ingredients 500g boiled fresh tagliatelle 50g butter 1 small onion, finely chopped 250g peas 150g prosciutto cotto
2 sachets saffron 250g fresh cream Glass of white wine Grated parmesan/pecorino (optional)
Method Pan fry the onion in butter for five minutes. Add the peas and ham, and cook for a further five minutes. Pour the wine and mix well, then add the cream and saffron. Toss the cooked pasta with the sauce and top with some grated parmesan or pecorino.

For the Chantilly cream: 4 eggs 500ml milk 200g sugar Vanilla stick 50g plain flour 250ml fresh cream
Method Boil the milk and vanilla, and meanwhile, beat the eggs and sugar until combined in a separate bowl. Add flour to the eggs and sugar, and proceed to add the milk. Return the pan to the stove, mixing with a wooden spoon until dense and creamy, then let it cool. Whisk the fresh cream and add to the cooled mixture. Combine by layering on a plate, starting with a thin layer of the spongecake, then the puff pastry, topped with half of the Chantilly cream, puff pastry again, and finished with the rest of the cream. Decorate with berries on top.

Ir-Rizzu, a family-run restaurant established in 1986 is situated on the seafront of Marsaxlokk, 50 metres away from the church square. The restaurant is run by Ruzar and Leli Farrugia and their families, and specialises mainly in fresh fish and seafood which is bought daily by one of the brothers from the fish market.
