Hello,
“Radical transparency.” This was the phrase a high-flying finance guy used recently to describe what we do at COOK with our annual report and the AGM we hold in all our shops. He was amazed that a privately-owned company, in particular, would be so open. I appreciate you come to COOK for an amazing Chicken, Ham & Leek Pie rather than a sermon on business ethics. But if we want the world’s companies to start getting better – for their employees, the planet, the communities they operate in, and society generally - then we all need to start caring more about the businesses we buy from. I should emphasise here that we are far, far from perfect. But we are trying hard to be a business we can all be proud of – and hopefully that includes you, our customers – and a crucial part of that is making ourselves completely accountable and transparent. So I hope you’ll come to our Annual General Munching at your local COOK shop on Saturday 1st October. COOK co-founder Dale turned 60 this summer. With everyone having to work until they’re at least 85 these days, we’re having to figure out what on earth to do with him. Luckily, Dale has two abiding talents: he’s an amazing chef and a bit of a showman. The answer was obvious: YouTube. So welcome to ‘Dish of the Dale’, a little series of videos of Dale in the kitchen either making his favourite recipes or passing on handy hints on how to serve them. Dale says: Just reading the list of ingredients makes me wish it was dinner time: free range British pork, mushrooms, mustard, wine, cream… seriously, what’s not to like? We braise the pork strips in white wine, balsamic vinegar, sherry and lemon juice to create an amazing flavour.
To Serve:
Nothing fancy required, just mash or rice with green veg and maybe some fresh chives to garnish.
Dale says: Boozy, beefy and just
bloomin’ lovely, look at our very first menu from 1997 and it’s there at the top: Boeuf Bourguignonne. We soon got over our pretentious French spelling phase but our recipe has stayed pretty much unchanged since.
To Serve:
I always go for rice but if you want potatoes then Dauphinoise or Creamy Mash would be my pick. All you need on the side are some vibrant steamed greens – tenderstem broccoli or French beans.
