When Dale and I started COOK nearly 20 years ago, vegetarian food wasn’t really on our radar. We’re both from a generation of men for whom vegetables are most definitely an accompaniment something to offset the big slab of meat in the middle of the plate. But these days I’m not the chest-beating Ed & Dale, Founders Neanderthal I once was. Thanks, as ever, to the positive influence of my wife, I now accept that meat is not essential for every meal. Eating a bit less of it - even if that just means switching to a vegetarian option once a week - is simply a good thing to do. Good for your health. Good for the environment. Good for your wallet. Last year I discovered Meat Free May, a campaign run by Friends Of The Earth, and this year I’ve decided to take part. Not as a big statement, I just reckon I can… something I would never have said 10 years ago. Hopefully you’ll try a few veggie meals in May, too. Our chefs make some phenomenal meat-free dishes including casseroles, curries, tarts, and lasagne. They’re so delicious, once May is through, you might find you have a few new favourites.

BEST COMPANIES TO WORK FOR We’ve spent the last few years trying hard to create a great workplace at COOK. Central to our plan has been to move beyond the idea that people are just human resources to be used by companies in the pursuit of profit. We try to treat everyone as important and valuable for who they are. The Best Companies list is updated annually and based on feedback from employees, so it’s been a really useful tool for measuring our progress. In 2013, we made the top 100 for the first time, coming in at 87. In 2014 we came 65th. Last year it was 44th. And – drumroll please – this year we’ve come 28th, making us the highest placed manufacturer. We also received a special award for our work giving exoffenders a second chance. TO PRAWN OR NOT TO PRAWN As well as creating tasty new recipes, the COOK Development Chefs – Jess and Rosie – work hard to make our best recipes even better. Recently they’ve had the daunting task of trying to improve our bestselling Classic Fish Pie. The issue that really divided opinion was whether or not to keep the prawns. We ran two public polls and the results were identical: the pro-prawners won by almost 2 votes to 1. So they’re not going anywhere. If you’re staunchly anti-crustacean, we’ve posted the recipe on our blog so you can be your own development chef. There are plenty of other lip-smacking recipes, on the COOK website.
FREE-RANGE BRITISH PORK We source every ingredient ourselves. For our pork, we now work with just two very talented farmers: Rob Mercer of Packington and Mark Haywood of the wonderfully-named Dingly Dell. They’re lovely people committed to producing top-quality, sustainable, free-range pork. So committed, in fact, that they’re both part of the pig standards advisory group for the RSPCA. We’re working hard across our supply chain to find more farmers like them with whom we can build long term relationships.
