arl Stefanovic may be back in the hot seat on the Today show, but while he’s all smiles on screen, an insider claims behind the scenes the TV host is making diva-like demands – and getting his good mate Richard Wilkins’ job back on Today is top of his list. “The bosses have forgiven Karl for bringing bad publicity to the show with his private life but he has not forgotten what they did by any means,” says our well-placed spy. After being publicly fired, along with his brother, Peter Stefanovic, sister-in-law, Sylvia Jeffreys, and best mate, Richard ‘Dickie’ Wilkins, also losing their jobs in close succession, Karl is apparently ready to make some changes of his own. Now surrounded by a new team of people he barely knows, the TV star is said to be determined to test their ability to front the national breakfast show, with Tracy Vo, Brooke Boney and Alex Cullen all worried they could be in the firing line.

But, according to her brother, Thomas Markle Jr, Meghan would now feel fully confident about enacting her grand Hollywood plan. “I’ve always known that Meghan was never going to give up Hollywood,” Thomas, 55, exclusively tells New Idea. “There is no way! I think Meghan’s got Hollywood in her blood and I think she’ll definitely have a house in Los Angeles,” he adds. “I think she’ll definitely target [getting some big movie roles]. I think she’ll have more selective roles now. I think she’s still going to be involved in Hollywood one way or the other. Her popularity is pretty high up there in terms of being a worldwide figure. SURROGACY IN AUSTRALIA A According to associate professor Anusch Yazdani, surrogacy is not an alternative to fertility treatment and is used in situations where people are either not able to or should not carry their own pregnancy. Anusch, medical director of the Queensland Fertility Group, says: “The legislation is quite different in each state, and Queensland has some of the most open legislation, but in no state in Australia is commercial surrogacy permitted.” Unlike in other countries, such as America where surrogates can be paid up to $170,000, no money can be exchanged between the surrogate and the commissioning parent. “In all of Australia, the surrogate (gestational carrier) has to be known to the commissioning parent. They must have had a relationship with the parent and know each other. It cannot be a commercial

relationship,” says Anusch. While the legislation allows for the surrogate to be compensated, they can’t be paid. “Someone has to want to help someone else have a pregnancy, as they feel it is the right thing to allow that person to have a baby,” Anusch says. With laws preventing surrogates and willing parents from advertising their service or need, people have to meet or be introduced. This often happens via online forums or IVF clinics. It is because of all of the rules and laws in place that Anusch believes there is a shortage of surrogates in Australia. “To minimise the risk of someone wanting to keep the baby for themselves and because they are not paid, it is a very special person who gives up a large portion of their life and goes through a pregnancy for someone else.” To find out more visit qfg.com.au

Two of the toughest critics in MKR history have joined forces. Sophia, 35, best known as one of the villains from Season 4, has teamed up with Romel, 43, who was a runner-up with Ibby in Season 10. But can they work together to win? “I had a great experience last season,” says Romel. “It really challenged me and pushed me out of my comfort zone. I want to give it another crack to see how far I can go this time.”


ROULA & RACHAEL, VIC After causing plenty of drama around the dinner table in Season 9, best friends Roula, 36, and Rachael, 23, are ready to show Australia that they have changed. “It’s 100 per cent about redeeming ourselves,” says Rachael. “Last time we got way too caught up in the table drama and lost ourselves. I want to show the real me and also show we can cook.”

MKR’S NEW LOOK – HOW IT WORKS My Kitchen Rules is getting a shake-up this year as Manu and Colin go head to head to determine who is the ultimate chef. Colin will lead a group of hopeful new contestants who will live together in a mansion. POPPY: ‘I WANT A GOOD FATHER FIGURE FOR MY KIDS’ Wollongong-based photographer Poppy, 38, has become an instant fan favourite for her laugh-outloud humour. “I’ve got 2-year-old twins and when they were 6 weeks old, my husband had a terrible accident,” Poppy recounted of her split with her husband. “He tripped and fell into his co-worker’s vagina and he’s still stuck there!” Of course, dating with two young kids hasn’t been easy for Poppy, but she is ready for love. “I’m looking for a good father figure,” she tells New Idea. “Someone to have my back.” And, it shouldn’t be too hard for her prospective hubby to woo her as her ideal date is “drinks at a seedy pub”, she laughs.

IVAN: ‘HATERS GONNA HATE’ Ukrainian-born Ivan, 30, admits that he has strong opinions and isn’t afraid to speak his mind no matter who he might offend. And the Sydneybased real estate agent is taking the same attitude into the show. “Haters gonna hate,” he says. “I just hope [my bride] gives me time, to gain an understanding of who I am.” Of course, underneath his tough exterior Ivan is a true romantic and is hoping to find “loyalty and honesty” in his new partner. And, when it comes to their first date, Ivan has high expectations. “My ideal date is something that gets the heart racing,” he admits.

MISHEL: ‘I WAS CATFISHED’ Queensland-based mum of two and teacher Mishel, 48, has had her fair share of heartbreak, including going through a divorce 15 years ago after her husband cheated on her. What’s more, life on the dating scene hasn’t always been a joyful experience, with eight men also cheating on her in the past and being catfished. “I have a full journal [of dating disasters],” Mishel says. “I’ve been on a date with a man that ain’t the other man in the photo. Catfishing is common.” But, Mishel isn’t ready to give up on love. “I’m excited that I will meet someone kind and loving,” she adds. However, she does have one deal breaker. “Cheaters!”

HAYLEY: ‘I WENT FROM DRUGS TO BODYBUILDING’ Hayley, a bodybuilder and finance broker, already has fans talking with her vivacious and chatty personality, but the Melbourne-based beauty had a tough past. Hayley started taking drugs at 16 and became addicted for the next 10 years. But turning to bodybuilding saved her. ast your mind back 20 years ago, when infectious dance track ‘Absolutely Everybody’ was rising up the charts. The song catapulted a then 18-year-old, freshfaced Vanessa Amorosi to international stardom. “Looking back, it just feels like another person!” the 38-year-old tells New Idea. “I wasn’t even out of school when half of this was happening. But what a journey … it was incredible.” After its release at the end of 1999, the hit remained in the charts for six months, and soon after her Sydney Olympics performances, the song was released internationally and went on to climb the UK top 10. While many young musicians would have fallen foul of the meteoric rise (and accompanying ‘child star’ curse), for Vanessa it was a different story. By the age of 17 she was already a stage veteran. “I started gigging when I was 11 or 12,” she explains. “That was my saviour. So when ‘Everybody’ happened, I didn’t feel like, ‘Wow! My

entire universe has changed.’ Instead, it was just the same.” Blessed with powerhouse vocals that belied her years, Vanessa would go on to sell two million-plus records worldwide and notch up 16 ARIA and APRA nominations. But while riding high, the songstress upped sticks to LA in 2011, effectively ending her pop career in favour of her

It was an incredible experience and I wouldn’t change it.” While the move to the US was for professional reasons, it also proved to be the catalyst for dramatically transforming Vanessa’s personal life. It started with a chance encounter in an Los Angeles cafe with martial arts trainer Rod Busby. “When I met my husband in a coffee shop, I started looking

trying to fulfil mine at the same time.” Will Killian follow in Mum’s footsteps? “He has perfect pitch,” she says. “But I’d like to steer him away from the industry. I’d like him to be like Daddy and to have structure and routine. I feel like the music industry is a really tough ride and other mums in the music world would say the same thing. But knowing my luck he’s probably going to get into it!” For now, Vanessa’s focus is the recent release of her album, Back to Love, and her upcoming spot in next month’s Eurovision – Australia Decides 2020 on SBS, where she will compete against nine other performers for the chance to represent Australia in the iconic Eurovision Song Contest. While the logistics of hopping between two different continents need to be tweaked, it’s clear Vanessa is in a very good place. “I really am extremely blessed,” she enthuses. “I didn’t think I’d be able to juggle having a family and a career, but if I can continue to have my little place in the universe making music for another 20 years, then I’ll be really, really happy.” By Paul Ewart

We chat to the series’ newest stars – talented Kiwi actors Bree Peters, Rob Kipa-Williams, Ethan Browne and 22-year-old rising star Kawakawa Fox-Reo – for the lowdown on their life-changing roles as the Paratas.

ROB KIPA-WILLIAMS (Ari Parata) Tell us a little about yourself … I was born in Napier, New Zealand, but I’ve also lived in Australia and the US. I’ve done lots of roles on different things over the years and ended up on Channel Seven’s 800 Words playing Zac. I was living in Auckland when I got the Home and Away role. How did you feel at the time you got the call? To be honest, although I felt the character was a very good fit for me, I just wasn’t sure I wanted to move to Australia. I love my country and was very happy with my life there. But I gave it a lot of thought and, in the end, I’m really glad I decided to come across and do it because it’s re-ignited my passion for the craft of acting.

Yes, Ari finds himself challenged, with no money and an injury from a construction site, which is how he ended up in the hospital. He has come from a life of turbulence. Is he hiding some secrets?

KAWAKAWA FOX-REO (Nikau Parata) You’d just been accepted into LA’s American Academy of Dramatic Arts when you got the call from Home and Away … Yes, it changed my plans a little bit! I obviously wasn’t about to turn down an amazing opportunity such as this. How have you settled in? Everyone is really lovely. They’ve told me to chill out, relax and have fun. Have you formed a close bond with Bree, Rob and Ethan, who play your mum and uncles? Yes, and I feel really lucky to have started with them together. It’s nice to be able to share the experience with other Kiwis! What can you tell us about your character Nikau? He’s a young guy trying to find his feet in a new place. And there may be some romance on the cards for him. Someone catches his eye pretty quickly!

BREE PETERS (Gemma Parata) Tell us a little about yourself … I was born in Auckland, but grew up in a small beach town. I knew I wanted to be an actor from the time I was about 4. I wanted to marry Tom Selleck, but I also wanted to be Magnum PI! Fresh out of drama school, I did a lot of theatre and then got TV roles [in shows including Shortland Street] as well as in film. What can you tell us about the Parata family? They’ve come to the Bay to build a new life, but all they have is each other. They are hiding some pain. And what about your character, Gemma? She is Nikau’s mother, and Ari and Tane’s [sister-in-law]. Family is everything to her. Do you share character traits? We have a lot of irreverence in our culture – even in the dark times, there’s always room for a joke and a little bit of lightness. I’ve thrown a lot of that in there with Gemma. And we wear the same jeans! [Laughs]

ETHAN BROWNE (Tane Parata) Tell us about your character … Tane is Ari’s younger brother and Nikau’s uncle. He’s very cheeky and quite rebellious. He’s a free spirit and doesn’t like anyone telling him what to do – especially Ari. But, deep down, he means well. All he wants is the best for his family. Could romance be headed his way? I think there’s every chance of that! You were just about to graduate from NIDA when you landed the role. Was that a dream come true? Absolutely! I was born and raised in a small town in New Zealand, but I was living in Sydney for NIDA when I got the part of Tane. This is my first TV role and I’m so grateful to be here. By Jackie Brygel

he might have been on holiday but Ashini Wijayaneththi was still up at the crack of dawn. And instead of heading to the airport, she was on course for her kitchen where she was planning to spend the next four days. The 36-year old from Wodonga, Victoria, was about to make an epic cake. “I’d never entered a baking competition before,” Ashini tells New Idea. “I thought I’d give it a try. The theme was ‘Something we should be proud of being Australian’ and I came up with the idea of a firefighter rescuing a koala.” It would be the most elaborate cake Ashini had ever attempted. Ashini started baking and decorating when she was 12 and living in Sri Lanka. She grew up having to improvise with lots of ingredients and could only dream of products such as fondant. “When I arrived in Australia in the 2012, it was a gamechanger. I could buy fondant in the supermarket!” she smiles. From there the sky was the limit. Working in admin during

ormer Victoria Police officer Cameron Hardiman knows exactly how tough it can be out on the firing line. In fact, he even wrote a book on the subject. After a 34-year career working in the Air Wing, then with the AFP and finally in counterterrorism, Cameron has put pen to paper to reveal the honest, raw and often

on a daily basis could have. After seven years of general duties, Cameron moved to the Air Wing unit. “My dad was in the air force and I knew about helicopters and I loved them. I thought it would be the ultimate job,” Cameron says. “If I thought being a normal copper was exciting … well this was even better.” Every day was like a scene out of an action movie – but one particular rescue mission on the Bass Strait sparked something inside the tough cop. In February 2005, Cameron and a fellow officer had to winch a 71-year-old yachtsman from the monstrous waves during a storm. Cameron was on the winch when the treacherous weather swung him around violently and dipped him into the ocean like a teabag. He thought he was inches from death. This near-drowning was the catalyst for a delayed emotional collapse years later. As Cameron writes in his tell-all book Ten Feet Tall and Not Quite Bulletproof, there was no time on the job to reflect on the horrific scenes or the repressed trauma bubbling within him. “I pretty much ignored [the trauma]. I dealt with it in my own little way, which most coppers do, and that’s ignore it. You couldn’t really think too much about it, because you had to get ready for the next mission,” Cameron explains. “The bottling up comes back to haunt you later. That’s what PTSD is all about … you just

I was winched on board to connect a tow line from the motor yacht to a water police boat. “The motor yacht sank a short time later and the couple on board were pulled from the water by the water police boat. It was hardly the heroic first winch I was hoping for! My second winch was three dead bodies from a helicopter crash in Mount Hotham.” Cameron joined the police force at the age of 18, a starry-eyed teenager ready for a big adventure. “I’d like to say it was to help people, but I thought it looked fun. I saw a commercial on TV and it looked pretty exciting. What 18-year-old kid wouldn’t want to do that?” Cameron says. The young recruit had no idea the devastating impact that seeing so much death and destruction

t’s been nearly 65 years since 1930s Hollywood star Thelma Todd mysteriously died in the prime of her career. In 1935, after attending a party, Thelma, 29, was found dead from carbon monoxide poisoning, in her car in Los Angeles. To this day, the true circumstances surrounding her death remain a puzzle. In her book The Ice Cream Blonde: The Whirlwind Life and Mysterious Death of Screwball Comedienne Thelma Todd, author Michelle Morgan looks into the life of the much-loved star, why her demise was strangely swept under the carpet and how, perhaps, there was even foul play involved. A VICTIM OF SCANDAL According to Morgan, who looked into various unpublished interviews, FBI files, and studio records, Thelma’s unfortunate passing was kept very quiet by Hollywood executives in Tinseltown. “When she died, the studio and the people surrounding her wanted to push everything

under the rug and move on,” Morgan wrote. “Her death had become a massive story that lasted for months. Even her last movie, The Bohemian Girl, her role was cut down to this tiny part when she was supposed to be featured prominently in the film. I think people wanted to move on from this scandal.” “Her career ultimately became whittled down to a one-liner in magazines, such as ‘Remember when tragic Thelma Todd passed away?’” Morgan added. “Her death had become this dirty thing that happened in Hollywood that everyone wanted to quickly forget. Sadly, because no-one wanted to speak about her, she was forgotten with time.” AN UNLIKELY STAR Thelma was not a stereotypical young Hollywood actress in the 1930s film boom and would often speak her mind, according to Morgan. “She was extremely outspoken in Hollywood and wasn’t afraid to speak up when

she felt something wasn’t right,” Morgan said. “She wasn’t a typical Hollywood bombshell who needed to be better than everyone else. If she believed in you, no matter your role, she would defend you. She was far from a dumb blonde. “She was threatened with blacklisting because she wouldn’t entertain producers at parties and then [spoke] to reporters about her experience,” Morgan pointed out. “She later gave an interview about the lack of morals that existed in Hollywood and how that was so shocking for her. She saw married people carrying on with other married people and it just wasn’t what she was accustomed to. “She didn’t get Hollywood. She was always so thrilled to return home because she could

truly understand the people around her. She got the people of Massachusetts [where she was born]versus the strange types she was meeting in Hollywood.”

Morgan also believes that Thelma’s death was not an accident or even suicide, and suggests the actress could have been murdered. “I don’t think for a second she committed suicide,” said Morgan. “She had been out to a party and was in good spirits. She never gave any kind of indication she was going to take her life. I rule out accidental death as well.” She added: “People thought she must have accidentally killed herself because she wasn’t aware of carbon monoxide poisoning. In her lifetime, there was so much press warning the public about carbon monoxide poisoning. I find it hard to believe that a woman who was running a restaurant wouldn’t have been aware of the risks. It was being written about on a near-daily basis.” According to the Chicago Tribune, various suspects came out of the woodwork including Thelma’s ex-husband Pat DiCicco, her lover Roland West, his estranged wife Jewel Carmen and the mobster Lucky Luciano, but no-one was found guilty and to this day, Thelma’s death has been marked down as an unfortunate accident.

crime PRINCE CHARLES, 1994 On Australia Day 1994, Prince Charles, then 45, was attending a function at Sydney’s Darling Harbour. As the prince rose to address the crowd, university student David Kang, then 23, rushed onto the podium and fired two shots. Kang was immediately jumped upon by a horde of security agents and distinguished guests, who held the shooter until police moved in. Prince Charles, however, appeared unfazed by the chaos and later said he thought it was all just part of the proceedings. It was later revealed Kang was brandishing a starting pistol, and had fired two blank shots, as a protest at the treatment of Cambodian asylum seekers in detention camps. Kang was found guilty of threatening unlawful violence and sentenced to 500 hours community service.

PRINCE ALFRED, 1868

There were celebrations with the first royal tour to Australia by Prince Alfred, the second son of Queen Victoria. On March 12, 1868, the 23-year-old prince was enjoying a picnic day at Sydney’s Clontarf Beach. In the crowd was Irishman Henry James O’Farrell, 35, who suffered from mental illness.

He walked up behind the prince and fired a revolver into his back. As the prince was rushed to Sydney Hospital, the crowd set upon O’Farrell, brutally beating him, before the police moved in. One month later, O’Farrell was sentenced to death, and was hanged on April 21.

Prince Alfred, meanwhile, spent two weeks in hospital before returning to England. Sydney’s Royal Prince Alfred Hospital was later built as a memorial to his recovery. The incident, however, caused great national embarrassment and unleashed a wave of persecution of Irish Catholics.


JOHN NEWMAN, 1994

NSW State Labor politician John Newman earned a place in the history books as Australia’s first political assassination. Newman, 47, was a strong anti-crime crusader in the outer Sydney suburb of Cabramatta. One of his opponents was former refugee Phuong Ngo, who believed Newman stood in the way of him winning a seat in state parliament. Ngo launched a number of botched attempts to have Newman killed and on September 5, 1994, Ngo finally achieved his goal when Newman was shot dead in the driveway of his home. Despite being the prime suspect behind

the murder, Ngo denied any involvement. It took police and prosecutors seven years, including two mistrials, to finally convict Ngo of the crime. In November 2001, he was sentenced to life in prison.

Four years after he exited Queensland state parliament, Albert Whitford, 46, was shot and killed on a Brisbane street on January 29, 1924. James Laydon claimed Whitford had an affair with his wife when he was away at the war, and the simmering anger between the men boiled over one night when Laydon shot Whitford. The assailant was sentenced to seven years in prison.

In the mid-1960s, debate raged over Australia’s involvement in the Vietnam War, and Federal Labor leader Arthur Calwell, 69, was outspoken in his opposition. On June 21, 1966, Calwell was addressing a rally at Sydney’s Mosman Town Hall, and once it was over, returned to his car. Student Peter Kocan, 19, then approached the car, pulled out a sawn-off rifle and shot at Caldwell. The bullet shattered the car window, with shards of glass exploding in Calwell’s face. Calwell was released from hospital the following day. The would-be assassin later admitted he was motivated by the desire to become famous. Found guilty of attempted murder Kocan spent 10 years in a mental hospital. Six months after the attempt, Calwell was succeeded by Gough Whitlam.

Serves 4, Prep and Cook: 20 mins 2-pack stone baked pizza bases (450g) ²⁄³ cup refried beans 2 cups Perfect Italiano 4 Cheese Melt 100g shaved hot salami (deli) ½ cup drained roasted red capsicum strips ½ small red onion, thinly sliced 125g can corn kernels, drained Guacamole dip, sour cream and pickled jalapenos, to serve 1 Place pizza bases on two oiled, large oven trays. Spread with beans. Sprinkle with half the grated cheese. 2 Scrunch salami and divide over the cheese. Scatter with capsicum strips, onion and corn. Sprinkle with remaining grated cheese. 3 Cook in a hot oven (200C), swapping trays halfway, for about 12 minutes, or until cheese is melted and bases are crisp. Remove. 4 Serve with guacamole, sour cream and jalapenos. 40

We used shaved salami from the deli counter and pizza bases from the bakery aisle of major supermarkets. The grated cheese packet contains easy melt and traditional mozzarella, cheddar and romano cheeses.

Fish Finger Tacos with Mango Salsa

Serves 4, Prep and Cook: 20 mins 2 tblsps vegetable oil 400g box frozen crumbed fish fingers (16 pieces) Shredded iceberg lettuce, thinly sliced cucumber and garlic aioli, to serve 8 mini flour tortillas, warmed MANGO SALSA 2 large ripe mangoes 2 small vine-ripened tomatoes, finely chopped 2 spring onions, thinly sliced 1 tblsp lime juice

1 To make salsa, cut cheeks away from mangoes. Scoop out flesh from each cheek. Finely chop. Place in a bowl with remaining ingredients. Stir to combine. 2 Heat oil in a large, non-stick frying pan over a medium to high heat. Add fish fingers. Cook for about 3 minutes on each side, or until golden brown and crisp. Remove. Drain on absorbent kitchen paper. 3 Serve lettuce, cucumber, fish fingers and mango salsa on tortillas. Drizzle with aioli.

To warm tortillas, place on a microwave-safe plate and cover with plastic wrap. Microwave on High (100%) for about 40 seconds. Fish fingers can be replaced with crumbed chicken tenders. Cooking time may vary.

oil in a bowl. Season with salt and pepper. 2 Heat an oiled, large frying pan over a medium to high heat. Add beef. Cook for about 4 to 5 minutes on each side, or until cooked to your liking. Remove. Rest, loosely covered with foil for 3 minutes. Thinly slice. 3 Meanwhile, heat rice according to packet directions.

4 To make coriander cabbage, combine oil, vinegar and coriander in a bowl. Season with salt and pepper. Whisk well. Add cabbage. Toss to coat. 5 To serve, arrange rice, coriander cabbage, tomatoes, avocados and beef in serving bowls. Drizzle with chipotle mayonnaise. Serve with lime wedges. Garnish with coriander sprigs.

HERBED ERBED TAHINI YOGHURT 1 cup fresh parsley leaves ½ cup fresh mint leaves ½ cup fresh coriander leaves 1¼ cups Greek yoghurt 2 tblsps hulled tahini 2 tblsps lemon juice 2 tsps honey 1 To make herbed tahini yoghurt, place all ingredients in a blender. Blend until smooth.

Transfer Season with T f tto a jjug. S ith salt and pepper. (Makes 2 cups.) Cover. Refrigerate, until serving. 2 To make meatballs, combine mince, harissa, yolks, breadcrumbs and onion in a bowl. Season with salt and pepper. Mix well. Roll tablespoons of mixture into 50 balls. Spray with cooking oil. 3 Heat half the olive oil in a large, non-stick frying pan over

a medium to high heat. Add meatballs in two batches, adding remaining oil with second batch. Cook, turning occasionally, for about 8 to 10 minutes, or until browned and cooked through. Drain on absorbent kitchen paper. 4 Serve meatballs with herbed tahini yoghurt and pita bread.


Potato Salad with Creamy Yoghurt Dressing

Serves 4-6, Prep and Cook: 20 mins 1kg chat potatoes, halved 4 middle bacon rashers (175g), rind removed, chopped 3 green spring onions, thinly sliced ¹⁄³ cup coarsely chopped fresh parsley CREAMY YOGHURT DRESSING ½ cup Greek yoghurt 1 tblsp Dijon mustard 1 tblsp lemon juice 1 Place potatoes in a large saucepan. Cover with cold water. Bring to boil. Gently

boil for about 10 minutes, or until potatoes are tender. Drain. Cool slightly. 2 Meanwhile, heat a medium, non-stick frying pan over a high heat. Add bacon. Cook, stirring occasionally for about 5 to 6 minutes, or until crisp. Drain on absorbent kitchen paper. 3 To make dressing, combine all ingredients in a large bowl. Season with salt and pepper. Whisk well. 4 Just before serving, add potatoes, bacon, onions and parsley to dressing. Stir to coat.

For a change, replace bacon with chopped chorizo. Cooked potatoes can be made up to one day ahead. Keep, covered, in the fridge. Reheat potatoes in a microwave-safe container on High (100%) for 2 to 3 minutes or until warm.

We used Farmers Union Greek yoghurt for this recipe. Hotcakes will keep for up to two days, stored in the fridge. Reheat in the microwave, one at a time, on High (100%) for 20 seconds until warm. Macerated berries will keep in the fridge for two days, stored in an airtight container.

1½ cups Greek yoghurt (375g) (See Tip) ¼ cup milk 2 eggs, lightly beaten 2 tsps vanilla extract 1¾ cups self-raising flour 1 tsp ground cinnamon 2 tblsps caster sugar Melted unsalted butter, for greasing Extra Greek yoghurt, to serve MACERATED BERRIES 3 x 125g punnets fresh blueberries 2 tblsps caster sugar 1 tblsp lemon juice 1 To make macerated berries, combine all ingredients in a medium bowl. Stand bowl at room temperature, stirring occasionally, for about 30 minutes, or until berries release juice and sugar is dissolved.

2 Meanwhile, make pancake batter. Combine yoghurt, milk, eggs and vanilla in a large jug. Whisk until smooth. 3 Sift flour and cinnamon into a large bowl. Stir in sugar. Pistachio Pavlova with Honey Roasted Peaches Serves 8, Prep and Cook: 2 hours, 20 mins

¾ cup raw pistachio kernels 6 egg whites, at room temperature 1½ cups caster sugar 1 tsp cornflour 1 tsp white vinegar 600ml tub thickened cream, whipped Chopped pistachio kernels, to decorate HONEY ROASTED PEACHES 8 firm ripe yellow peaches (850g), stones removed 2 tblsps caster sugar

¼ cup honey 1 tsp vanilla bean paste 1 Grease a large oven tray. Trace a 20cm x 35cm rectangle onto a sheet of baking paper. Place onto prepared tray, trace-side down. 2 Process raw pistachios in a food processor into fine crumbs. 3 Beat egg whites in a large bowl of an electric mixer until frothy. With motor operating, gradually add sugar, 1 tblsp at a time, beating well after each addition, until sugar is dissolved.

Continue to beat for a further 5 minutes, or until thick and glossy. Beat in cornflour and vinegar. Fold in pistachios. 4 Spoon meringue onto traced rectangle on tray. Spread out to the edges. 5 Cook in a very slow oven (120C) for about 1 hour, 20 minutes, or until dry and crisp. Turn off oven. Cool in oven with door ajar for 1 hour. Remove. Cool completely. 6 To make honey roasted peaches, cut peaches into 2cm thick wedges. Place in a large

roasting pan. Toss in sugar. Drizzle with honey, vanilla and 1 tblsp water. Gently toss to coat. 7 Cook in a hot oven (200C) for about 15 minutes, or until peaches are just tender and caramelised. Remove. Cool to room temperature. 8 Just before serving, spread whipped cream over pavlova. Top with half the peaches. Drizzle with syrup from pan. Sprinkle with chopped pistachios. Serve with remaining peaches. 47

250g packet Granita biscuits 150g unsalted butter, melted 85g packet mango-flavoured jelly 85g packet lime-flavoured jelly 85g packet raspberry-flavoured jelly 1 tblsp powdered gelatine 250g block cream cheese, chopped, at room temperature ¾ cup caster sugar 1 tsp vanilla extract 1½ cups buttermilk 1 Invert base of a 23cm 48

springform pan (base measures 22cm). Grease and line base and side with baking paper. 2 Process biscuits in a food processor until finely crushed. Add butter. Process until combined. Using a straightsided glass, press mixture evenly and firmly over base and 5cm up the side of prepared pan, to form a thin crust. Refrigerate. 3 Working with one packet of jelly at a time, dissolve crystals in 1 cup boiling water in a heatproof jug. Stir in ½ cup cold

water. Pour each jelly into a rectangular container (2-cup capacity). Refrigerate for about 3 hours, or until set. 4 Sprinkle gelatine over ¹∕³ cup cold water in a small heatproof jug. Sit jug in a small saucepan of simmering water. Stir until gelatine is dissolved. Remove. Cool for 5 minutes. 5 Beat cheese, sugar and vanilla in a small bowl of an electric mixer until smooth. Beat in buttermilk, scraping down side of bowl. Beat in gelatine

Cheesecake can be made up to two days ahead. Keep, covered, in the fridge. Any flavoured jelly crystals can be used in this recipe.

Pine Lime Jelly Mousse Serves 4, Prep: 25 mins 450g can crushed pineapple in syrup 85g packet lime-flavoured jelly MOUSSE 85g packet Aeroplane Create A Jelly ¾ cup light coconut milk 1 tsp finely grated lime rind 300ml tub thickened cream 1 Drain pineapple in a sieve over a bowl, pressing firmly with the back of a spoon to drain off excess syrup. Transfer crushed pineapple to a bowl. Cover. Refrigerate. Reserve 1 cup pineapple syrup. 2 Place lime jelly crystals into a heatproof jug. Add ¾ cup boiling water. Stir until crystals are dissolved. Stir in reserved pineapple syrup. 3 Pour jelly evenly into four glass tumblers (450ml-capacity).

Lie each glass on an angle, sitting in the hole of a silicone muffin pan. Carefully transfer to the fridge. Refrigerate for about 4 hours, or until jelly is set. 4 To make mousse, place jelly crystals in large bowl. Add ½ cup boiling water. Stir until crystals are dissolved. Stir in coconut milk and rind. Cool to room temperature. Stir in reserved crushed pineapple. Beat cream in a small bowl of an electric mixer until soft peaks form. Fold into pineapple mixture until combined. 5 Remove jellies from fridge. Stand glasses upright on bench. Spoon in mousse to cover jelly. Refrigerate for about 4 hours, or overnight until set before serving.

TIP

The jelly crystals are not diluted in this recipe. Replace berry blue, orange and strawberry jelly crystals with different flavours of your choice. Ice-cream can be made up to five days ahead.

Jelly Ripple Icecream Cones 600ml tub thickened cream 395g can sweetened condensed milk ½ x 85g packet berry blueflavoured jelly (2½ tblsps) ½ x 85g packet orange-flavoured jelly (2½ tblsps) ½ x 85g packet strawberryflavoured jelly (2½ tblsps) Waffle ice-cream cones, to serve

The jelly crystals we used are available from major supermarkets. You can replace the lime jelly in the glasses with other flavours. Try pineapple, passionfruit or lemon. Desserts can be made up to two days ahead.

1 Beat cream and milk in a large bowl of an electric mixer until soft peaks form. 2 Spread one-quarter of the cream mixture over base of 14cm x 27cm large loaf pan (8-cup capacity). Sprinkle evenly with the berry blue jelly crystals. 3 Repeat layering with cream mixture and orange jelly crystals, then cream mixture and strawberry jelly crystals. Top with remaining cream mixture. Cut squares from baking paper, about a 12cm square for a standard size muffin pan. To help paper cases fit more snugly, spray pan holes with cooking oil spray first. here’s nothing like a new year to start afresh and overhaul your eating habits after December’s diet of Panettone and mimosas. If you want to shed some excess kilos and feel more energetic in 2020, here are five new expert-approved diets to try.

THE SUSTAINABLE DIET

Forty-six per cent of Aussies mentioned environmental concerns as the most important problem facing the world, according to a recent Roy Morgan report. If you’re keen to eat in a way that’s a little more earthfriendly, try Scott Gooding’s sustainable diet. On the menu is alternative meat sources such as kangaroo and cheaper cuts of meat like shoulders and cheeks, free-range eggs, and making your own hummus. “A sustainable diet is naturally low in carbs and high in nutrient dense foods that are farmed in a low-impact way,” says Gooding.

SOBER HAPPY HOUR

A trend predicted for 2020 by US retailer Whole Foods Market is that more of us will be searching out non-alcoholic drinks such as Seedlip spirits and mocktails such as Nogronis. Research from La Trobe University on 120,000 Australians found that one-third of us have reduced how often or how much we drink in the past year. “There are lots of health benefits from cutting back on alcohol, including an improvement in your moods,” says dietitian Chloe McLeod.

Tweaking your diet to contain more omega-3s from fish and seafood is another trend that’s come about from people who feel veganism is too restrictive. Seaganism involves pickling, fermenting, smoking and/or ageing seafood, with dishes like octopus salami, shellfish sausages or swordfish ham. If you’re not a fish fan, get the nutritional benefits by crushing nori sushi sheets (which are made from seaweed) over salads. “Seaweed is prized for its high nutritional content – it is rich in protein, fibre and omega-3,” says Dr Michael Mosley in The Clever Guts Diet.

You might start eating your spag bol with pasta made from lentil or chickpea flour, according to the Whole Foods Market report. As Australia is becoming increasingly health conscious, traditional foods like pasta have new options. Barilla has launched a range of pasta that is made with legume (lentil or chickpea) flour that holds the ‘al dente’ texture just like regular pasta. “Legumes are a delicious gluten-free powerhouse, loaded with protein to help you feel full,” says dietitian Rebecca Gawthorne.

FLEXITARIAN DIET

If you’ve ever tried ‘Meatless Mondays’ then you’re probably already doing this. “The flexitarian diet is essentially a plant-based diet with the option to ‘flex’ and consume animalbased products (meat, dairy, poultry etc.) in moderation,” says nutritionist and Harvest Gourmet ambassador Jacqueline Alwill. While meat is a good source of protein, iron and zinc, eating more than 700 grams (raw weight) of red meat a week increases your risk of bowel cancer, according to the Cancer Council. 59

ew research shows having a pet in the family helps heart health, reduces stress and can quell loneliness, plus more. We looked into the most recent studies and asked for expert advice from Dr Margie Roser, a specialist veterinarian who works for Vetnostics in Canberra, on the benefits of owning a pet.

QUELL LONELINESS Recent research from the University of Sydney found new dog owners saw a significant reduction in loneliness within three months of acquiring their pet. The researchers also found some evidence to suggest new dog owners experience a reduction in negative mood. “Dogs are great companions and are generally regarded as another family member,” says Margie. And there’s the added social benefits of dog walking. 60

“Walking your dog can be a very social activity and people are 10 times more likely talk to you when you are walking your dog,” says Margie.

REDUCE ASTHMA “Kids exposed to dogs early in life are less likely to develop asthma,” says Margie. Scientists have revealed that exposure to dogs during early life may reduce asthma symptoms in childhood. The study investigated how dog exposure affected asthma severity in children with the condition with researchers finding that children who were exposed to bacteria and other particles from a dog experienced a reduction in asthma symptoms. A LONGER LIFE According to a study published in the journal Circulation: Cardiovascular Quality and Outcomes, dog ownership is linked to a 21 per cent reduction in the risk of

death. Interacting with a dog makes you happy. You only need to see the faces of hospital or nursing home residents when a dog enters the building. “Dogs love us unconditionally, and feeling loved is linked to living longer and recovering faster from illness,” says Margie.

THEY PROTECT US Owning a dog, regardless of size, is a deterrent to home invaders, so not only do they love us, they protect us too, according to Margie. “I have a beautiful little Cairn terrier, who makes me smile every time I get home. She is so excited to see me and it gives me great joy to come home to such happiness,” she says. “She also stopped a house intruder coming into our house recently, her 9kg of bark was enough to scare him away! We are so grateful for her bravery.”

A HEALTHIER HEART Recently researchers looked over a 12-year period at more than 100,000 dog owners in Sweden who have cardiovascular disease. They adjusted for the kinds of things we know affect cardiovascular health such as age, demographics, socioeconomic status, marital status, number of children at home – and even after taking all of that into account, they found a benefit in dog ownership. In fact, they found that the companionship of a dog is possibly very important to their heart health. “Dog owners are also more likely to lead healthier lifestyles and are at less risk of heart disease,” says Margie. REDUCE STRESS New research shows just patting a cat or dog reduces the levels of the stress hormone cortisol. According to a journal by the American Educational Research Association, 249 college students were recruited and split into groups, with one group spending time with cats and dogs for 10 minutes, stroking and playing with the animals. The students who interacted with the animals were found to have significantly lower cortisol levels. “Just 10 minutes can have a significant impact,” reported study co-author Patricia Pendry. MORE EXERCISE It’s an obvious benefit but one that can really make a difference. When you own a dog you will get more exercise as you have a very good reason to get outdoors every day. That morning or afternoon dog walk (or both) becomes a routine that benefits both you and your furry friend. Another benefit of exercising with the hound? Children who walk and interact with dogs have been shown to have better social skills.

YOU ARE SO MUCH MORE THAN UNPAID CARERS I watched them on the ferry: a grandma, grandad and a couple of young boys aged around 6 and 3. The youngest wanted to sit on one side of the boat, the eldest on the other and the grandad plonked himself down, clearly exhausted by his day as tour guide. Poor grandma had to chivvy both boys to sit together and tried to distract them by pointing out the big cruise ship in the harbour. Much has been made of the role grandparents have played these school holidays and stories abound of how they’re being taken advantage of by their dual income children. There is no question they’ve worked overtime in the past few weeks as parents have returned to work. We don’t thank these unsung heroes enough so here goes … We appreciate you more than you will ever know not just for the safety and care you provide our children but for your patience and love. We see the quiet way you go about teaching our children the same manners and life skills that you taught us so long ago. We know that you’ll point out the jacarandas when they’re in bloom and make lamingtons from scratch and do puzzles and teach our children how to choose a ripe pineapple in the supermarket. And in doing so part of you will always be in our children. We know that time is love and so every minute you spend with our child we know they are building a relationship with you which gives them another person who is on their side and understands them. We may forget to say it but we admire the unique way you help our children overcome challenges. The way you put five lollies in a jar to represent the five days we’re away so they can count down until we come back; the stories you tell them about your life so their own may be richer. We also appreciate that you grow with them, keeping in touch via Facebook Messenger or text as they grow and stride out into the world. Thank you. I enjoyed reading yo ur story ‘50-Year Anniversary: the M oon Landing’ (NI, July 22). fter a month’s break, The Ghost Files podcast is back, and what a story we have to kick the year off with! My guest Sophie Tate tells a tale that will have you breaking out in goosebumps, even on the hottest summer’s day. Back in 2002, Sophie was 24 and working at a dental surgery. With her lease on her St Kilda flat set to expire, she needed to urgently find a new home. Wanting to move closer to her sister, who’d just had a baby, she was looking for a place on the Mornington Peninsula. To her surprise, a place popped up that was cheap, and it had a view to

the bay. Bargain of the year, right? Sophie signed the lease, sight unseen. On the day she moved in, Sophie was delighted with her new, two-bedroom home. “I just don’t understand why it’s so cheap,” she marvelled. “This house must be haunted.” It was a throwaway line, a bit of a joke, but her words proved eerily prescient. A week later, Sophie invited a friend over – the plan was to have a bite at the house, before heading to the local drive-in to catch a double feature. Laughter and music coloured the air, as the pair chatted and prepared dinner. Then, Sophie happened to glance down. The word “DIE” was written on her lower leg. “It was under my knee and took up my whole leg, it was big! And perfect solid black,” Sophie recalls, “but the ‘Die’ was white and written in beautiful very, very old calligraphy-style writing.” This proved to be just the beginning of a haunting which terrorised this unassuming, rational and intelligent young woman for four months. or more than two decades, Livinia Nixon has been a sunny fixture on our screens, with memorable roles on everything from quiz show Temptation to the iconic entertainment program Hey Hey It’s Saturday. “Here I am on one of my Getaway trips with my producer Rochelle Martin. We’re very similar souls and always have an amazing time together. This was the two of us in front of Mount Fuji in Japan a couple of years ago. We spent nearly three weeks travelling around Japan, eating the most incredible food, meeting amazing people and learning so much about the history of the country.”

“It took me about an hour to get into this kimono in Japan, as there are so many layers! It’s really interesting. As soon as you go through this process, you become quite diminutive. You’re somewhat restricted with your movements and it almost changes your persona.”

“I was about six months pregnant with Henry when this photo was taken. It was a lovely and very special time in my life as I was on the cusp of parenthood for the first time with Al, which was so exciting, and I was working on an iconic TV show with great and hilarious people. I’m probably lucky that I didn’t go into labour on set after laughing so much!” 78

He’ll throw topics at me and I make stories up, including this one which I decided to turn into a book. Henry’s Pirate Adventure was short-listed on the Children’s Book Council of Australia Awards and is now being released in the UK. It’s been really lovely, and Henry is so chuffed.”

I

n 1980, some of the world’s biggest – and most influential – music stars went off to play the great gig in the sky. That is, they passed away. The Beatles’ John Lennon, AC/DC’s Bon Scott, Led Zeppelin’s John Bonham and Joy Division’s Ian Curtis were all very different musicians, but they are forever linked by the tragedy of their untimely deaths. They left behind an incredible legacy of music which is to this day loved by millions throughout the world. JOHN LENNON, DIED DECEMBER 8

By 1980, the Beatles were a distant memory for John, who had moved to New York with wife, Yoko Ono. In October that year, he celebrated his 80

40th birthday with Yoko and 5-year-old son, Sean, who shared his father’s birthday. Yoko surprised them with a sky-written message: “Happy Birthday John & Sean − Love Yoko.” But just two months later, the family was ripped apart when the ‘Imagine’ singer was gunned down in front of his apartment by obsessed fan Mark David Chapman, hours after John had autographed an album for him. According to a transcript from Chapman’s parole hearing in 2018, the killer now feels remorse for his crime. “Thirty years ago, I couldn’t say I felt shame and I know what shame is now,” Chapman said. “It’s where you cover your face, you don’t want to, you know, ask for anything.” Chapman was denied parole

but will again be up for parole in August this year.

BON SCOTT, DIED FEBRUARY 19

The legendary lead singer of AC/DC had a reputation for being a hard-drinking wild man with a knockabout charm, making him popular with the ladies. AC/DC’s 1979 album, Highway to Hell had proved a huge hit for the Aussie band and the subsequent tour took them around the world before culminating in the UK. Just three weeks after the tour finished, Bon was on a night out drinking with friends when he passed out in a car and later choked on his own vomit, aged 33. “For us, it was like losing a member of your family,” guitarist Angus Young later said in an interview. “It’s very,

very difficult to go through something like that. Not only is it your friend, it’s also somebody you’ve been working with all that time.”

JOHN BONHAM, DIED SEPTEMBER 25

Much like Bon, John ‘Bonzo’ Bonham, drummer for stadium-shaking rockers Led Zeppelin, had a penchant for alcohol that would ultimately lead to his death. The band was rehearsing for what would have been their comeback tour in North America, staying at guitarist Jimmy Page’s house in the UK. After downing vodka all day, Bonzo eventually passed out and never woke up. He was 32 when he died. It was later reported Bonzo had consumed the equivalent of 40 shots of vodka over

On August 17, 9-weekold baby Azaria Chamberlain disappeared from a campsite at Uluru. The baby’s parents, Lindy and Michael Chamberlain, claimed Azaria was taken by a dingo and the ensuing court case fascinated the country. Lindy was tried for murder, and in 1982, was found guilty of the baby’s murder. In 1986, however, she was released after new evidence was discovered, and a year later, Lindy and Michael, who was co-accused, were pardoned.

Two weeks prior to what could have been a career-changing tour of the US, lead singer Ian hanged himself in his kitchen, aged 23. At the time, Ian suffered from epilepsy and depression. Following his death, the remaining members of Joy Division formed New Order and had hits throughout the ’80s. By Stephen Downie

hen we farewelled our favourite coastal town for 2019, we did so with hearts in our mouths and tissues in our hands! The Home and Away season finale concluded with a cliffhanger unlike any other. In the most nail-biting of developments, several of our favourite characters had found themselves caught up in a terrifying hostage situation after gunmen invaded the local hospital. By the time the credits had rolled for the final time for the year, tragedy had struck leaving us shell-shocked. In a development no-one saw 82

coming, the life of young medical intern – much-loved Summer Bay resident Mason (Orpheus Pledger) – had been claimed by the gunmen. But now we can reveal that the carnage is far from complete. When Home and Away returns to our screens for 2020, at least one other hugely popular character will die. Who will it be? Still held hostage by the Ouroboros gang are Jasmine (Sam Frost), Alex (Zoë Ventoura), Marilyn (Emily Symons), Mackenzie (Emily Weir), and a critically-ill Bella (Courtney Miller). “Bella is certainly in dire straits,” says Courtney, adding, “and she’s not the only one! “The last time we saw Bella,

she was on the ground almost shutting her eyes. The events at the hospital will change everyone’s lives forever.” Meanwhile, Colby (Tim Franklin) and Dean (Patrick O’Connor) have broken into the lift well of the building and are planning a way to rescue their loved ones. But could the pair’s scheme backfire – with truly devastating consequences? Then there’s Robbo (Jake Ryan)

Meanwhile, Home and Away’s newest super-couple Ziggy (Sophie Dillman) and Dean ended the year on anything but a loved-up note. After Ziggy returned to the Bay from her

short-lived stint working at the race track, she made an emotional confession to Dean – she kissed another guy while she was away. Dean quickly made it clear he was in no mood to forgive or forget his girlfriend’s betrayal. With their relationship in tatters, Dean soon had something far more serious to contend with – confronting the gunmen in the siege, as he and Colby stormed into the hospital! What’s ahead for this couple?

TEEN TROUBLES Life in the Bay can be fraught with drama – and the teens are certainly not immune. In the lead-up to the year’s end, Ryder’s (Lukas Radovich) world collapsed when the high-school graduate found himself falsely charged with uploading a sex video of himself and seductive backpacker Jade (Mia Morrissey). Will Ryder be able to prove his innocence? Or will Jade’s vindictive plan ruin the teen’s life forever? “Let’s just say that Ryder has a huge fight on his hands trying to clear his name,” reveals Lukas. And that’s not all, hints Lukas, who reveals: “Someone could be coming to the Bay this year who has a strong connection to Ryder’s past and could really shake up his world.” Stay tuned!

There’s nothing quite like a Summer Bay wedding and at least one of our much-loved couples will say ‘I do’ this year. But, as is often the case in the Bay, the road to the altar could well be a rocky one. Get ready for another unforgettable wedding, Home and Away style! Meanwhile, one Summer Bay clan will be completely taken by surprise with the arrival of a long-lost family member. The big question is: Will that particular individual be welcomed with open arms?

When the year ended, hugely beloved long-standing Summer Bay resident Leah (Ada Nicodemou) was missing without a trace. With the police on the case, all that Leah’s distraught partner Justin (James Stewart) could do was hope and pray. Understandably, though, Justin was barely holding it together as he waited for news of the woman he loves. But could Justin’s nightmare be just beginning? There’s every possibility that will be the case – and that it relates to a frantic Leah running down a street in none other than a wedding dress!
