•1 egg • 1 tbsp Worcestershire sauce • 1 tbsp Bragg’s Liquid Aminos • Canola or vegetable oil • 8 brioche hamburger buns or 12 slider buns, sliced in half • Vegies and condiments for serving METHOD 1 Preheat your grill to high heat. Brush the grates with oil to keep the burgers from sticking. In a small bowl, combine the onion flakes, salt, pepper, onion powder, parsley flakes, celery seed, and paprika. Set aside. 2 In a large bowl, combine the beef, kale or spinach, breadcrumbs, egg, Worcestershire sauce, and Liquid Aminos. Use your hands to mix until just combined – don’t overmix or you’ll end up with tough burgers. If making large burgers, shape the meat into 8 patties, about 2cm thick. If making sliders, form the meat into 12 patties, about 5cm wide and 2cm thick. Grill the large patties for about 5 minutes, flip, then another 3 minutes for medium. For sliders, cook for 4 minutes, flip and cook for another 4-6 minutes for medium. Cook longer if you prefer them more well done. Transfer the burgers to a platter and cover with foil. 3 Lay the buns cutside down on the grill and toast until grill marks have just formed, about 1 minute. 4 Layer up the buns with a patty and your toppings of choice. Serve ‘em while they’re hot!

CHILAQUILES INGREDIENTS • 8 x 15cm wholewheat or corn tortillas • Extra virgin olive oil • Kosher salt, to taste • 3 ½ cups store-bought green tomatillo salsa (for green) or 2 ½ cups store-bought enchilada sauce plus 1 cup canned diced tomatoes (for red) • 2-3 cups shredded chicken (optional) • 1 cup shredded queso fresco • Unsalted butter, for cooking eggs (optional) • 6-8 large eggs (1 per person) • ½ cup sliced radishes, for serving • 1 avocado, sliced, for serving • 2 tbsp chopped fresh coriander, for serving • 1 lime cut into wedges, for serving • Sour cream, for serving • Hot sauce, for serving METHOD 1 Preheat the oven to 205°C. 2 Cut the tortillas into chip-sized triangles, about 8 per tortilla. Lightly coat 2 large baking sheets with oil and scatter chips on sheet. Drizzle them with a bit more oil, sprinkle with salt and toss to coat. Arrange chips so they’re in a single layer and don’t overlap. 3 Bake chips for 10-12 minutes, flipping halfway through and watching to make sure they don’t burn. They should be golden brown and crisp. Remove chips and set aside. Keep the oven on and decrease the heat to 175°C. 4 Combine chips in a large sided sheet pan or a cast-iron skillet. Pour salsa or enchilada sauce plus tomatoes over the top and give everything a toss so chips are well coated. Spread chicken over the top and sprinkle cheese. Bake for 10-15 minutes until sauce is warmed through and cheese is melty. Feel free to finish under the grill for about 20 seconds to get the cheese browned and bubbly. 5 Meanwhile, whisk eggs in a bowl and season with a pinch of salt and pepper. Add 1 tbsp olive oil to a large non-stick or cast-iron skillet over high heat. When the oil begins to shimmer, pour the eggs into the pan and slowly stir with a spatula. When the eggs begin to set, reduce heat to low and continue stirring until the eggs are just set and fluffy, about 2 minutes. 6 To serve, remove the pan from the oven and top sauce with eggs, sliced avocado and radishes, plus coriander. Serve with lime wedges, sour cream and hot sauce.

ROASTED CHICKEN WITH ROOT VEGETABLES INGREDIENTS • 1 x 1.5-1.8kg chicken • 1 medium sweet potato • 1 medium turnip, swede, large parsnip or other root vegetable • Olive oil • Kosher salt, to taste • Black pepper, to taste METHOD 1 Take the chicken out of the fridge 1 hour before cooking. 2 Preheat oven to 205°C. 3 Cut the sweet potato and the root vegetable into 2.5cm pieces. Scatter them on the bottom of a cast-iron skillet or roasting pan, and toss with just enough olive oil to coat and a generous pinch of salt. 4 Pat the chicken dry with a paper towel. Season with salt and pepper and set the breast side up on top of the vegies. Roast for 20 minutes, then turn the chicken breast side down. Roast for another 20 minutes. Turn the bird breast side up once more and roast for a final 20 minutes. It should be golden brown and fully cooked, with an internal temperature of 75°C, and the vegies should be caramelised and tender. Let the chicken rest for 10-5 minutes before carving.
