editor Welcome to the first ever Christmas and New Years edition of our Byron Life Magazine. I am really excited to be sharing with you some of the brilliant and remarkable people that make up our community this issue. I feel like on a daily basis I am introduced to either a new person doing spectacular things for others in the area or an initiative of some kind that genuinely benefits others in some way that is completely selfless and inspiring. If I were able to just report on all of the incredibly thoughtful charities, volunteers and initiatives that directly benefit our community I wouldn’t have enough pages. But I aim and promise to bring you as many community stories as I possibly can. When getting ready for this issue the team at Byron Life Magazine really wanted to try and find a way to help encourage everyone to support our local community. Which resulted in becoming the main driving force behind bringing the ‘Live, Shop & Buy Local’ feature idea to life. Bringing people together and connecting them has always been one of my favourite past times, especially when it involves supporting your local community and/or the destination you are visiting.

breathing genuine initiatives that positively impact our immediate and extended landscape, I wanted to try and help place some emphasis on the importance of our local economy. For example, when it comes time to purchasing your celebratory presents this year, no matter what you believe in, please take the time to contemplate and consider the ripple effect your choices can have by simply spending local. All too often I hear of local people driving an hour or more away to buy something for $10 dollars less, thinking they caught a bargain, only to realise they just spent more then that on fuel. It really doesn’t take much to realise that our community is made up of, and possesses some of, the most gifted and talented humans on the planet, which results in us having some of the best gift options in Australia, right on our door step. Keep on living to love, and loving to live.

Food funding healthy futures T

he quintessential ‘Byron life’ is all about healthy living. Fresh local organic produce, getting out on the waves or enjoying nature, there is no denying we are predominantly a health-conscious community.

So what initially encouraged the ‘healthy-living’ mentality of the Byron Shire? Was it the hippies, or is it just the product of our magnificent environment? Probably a lengthy discussion! However, there has been one constant innovator, pioneering new ways for healthy community food with positive environmental impacts. Santos Organics (in no way associated with the coffee company at airports or the mining company!) began operating out the back of a ute in the 1970s delivering sacks of wholefoods to residents of Main Arm. Since these early days, Santos Organics philosophy of healthy and ethical food has never changed. Late last year they made a monumental change that places this iconic local organisation in a unique position to empower people and communities to live in a healthy and sustainable way. The 90+ local community Santos Organics owners voted that the organisation restructure into a 100% environmental not-for-profit social enterprise. This means every dollar spent in-store helps fund environmental and community projects. Yes, you read it right. You buy food and organic products and every dollar of profit that comes from your purchase is reinvested in environmental and social projects. How’s that for using your purchasing power! A shout out goes to all the previous owners of the organisation, for giving up any dividend rights to support such a great investment in all our futures, you are awesome! So where to from here, we asked Paul Crebar, Communications and Culture Manager at Santos Organics. “From here we get super busy investing in projects, and ensure we can give more to help feed those in need in our community via Liberation Larder and Mullumbimby Community Centre. We recently funded local indigenous bush regeneration in partnership with Rainforest Alliance and Madhima Gulgan, and are proud to fund Future Feeders to purchase solar panels for their Mullumbimby Community Gardens farmer incubation program. We are also very excited about funding Plastic Free Byron with their Borrow a Byron Bag program that will see accommodation providers having reusable bags available for guests. We are aiming for a Plastic Free Byron very soon! It’s a very exciting time for us and the organisation has such a long legacy supporting the community - I believe it’s been a rollercoaster of 40 years!”

The customers of Santos Organics have supported the organisation to transition to 100% renewable energy and this year alone donate over $70,000 to local not-for-profit projects. A truly special time for our local community organisation and wonderful to see the Byron Shire pioneering new ways of relating to the earth, our food and each other. Wirritjin Show with BAY FM’s Darren McElroy by Ian Browne Darren McElroy is the jewel in the crown of the Indigenous radio world. This part of the planet is so very lucky to have such a wise, open-minded radio presenter, who arrives weekly with a creative soundtrack that gathers in Aboriginal music and events from around the nation. His show brings to us all a deep understanding of the beating heart of this old continent while feathering a passionate commitment to allow both ‘black & white’ to dream together as one.

HOW LONG HAS YOUR SHOW BEEN ALIVE ON BAY FM? The Wirritjin show has been running for about five years and is the second incarnation of the show originally starting out as cultural awareness; predominantly a music show, that ran for about six years. HOW DID IT ALL START, WHY DID YOU DECIDE TO SHARE YOUR VOICE OVER THE AIRWAYS? For many years I supressed my Aboriginal ancestry and lived in denial, until I decided to settle in Byron, that saw me respected for who I was hiding. This gave me the strength to complete a ‘Radio DJ course’ with a final project to create a show. I created a show called Cultural Awareness, highlighting Indigenous music that was lacking on the airways. WHAT DO YOU BRING TO BAY FM, WHY SHOULD PEOPLE JOIN IN? Eleven years at Bay FM has seen a major explosion in Indigenous music with the exoneration of all the artists that sang up the struggles of Indigenous people without any recognition from the mainstream music industry. The Wirritjin show delivers stories of struggle, highlights triumph, and continues to introduce listeners to a whole new generation of deadly music steeped in culture. DESCRIBE THE CULTURE OF BAY FM AND HOW IT HAS ALLOWED YOU TO EXPLORE INDIGENOUS THEMES? Bay FM was a small community radio station in Butler Street when I started. After finishing the radio DJ course, and having success with the show, a position became available on Bay FM for an Indigenous presenter. With a few shows covering Indigenous music and stories, I was welcomed and mentored from day one. DESCRIBE THE MOST IMPORTANT PART OF BEING A RADIO HOST, AND WHAT YOU DO TO SUPPORT INDIGENOUS AUSTRALIANS? Community radio stations have been at the forefront of presenting independent artists, so the most important contribution I have made is by introducing the voice of Indigenous Australia. THE TITLE OF YOUR SHOW, WHAT DOES THIS MEAN, AND WHY IS THIS SO IMPORTANT TO YOU? Wirritjin is a Ramindjeri word offered to me by my Uncles from South Australia. The meaning of the word encompasses the arrival of the first colonists in SA witnessed by the local tribes, saying that as soon as they settle in Australia they become part of Australian culture, and would forever be linked with Aboriginal Australia. Quite simply put, “blackfella whitefella shared dreaming.” HOW DOES YOUR SHOW SUPPORT RECONCILIATION? The concept of reconciliation is encompassed in the concept of Wirritjin. Reconcile the past so that we can move to a harmonious Australia as one together.

DO YOU GET TO EXPLORE YOUR OWN CULTURAL IDENTITY BY DOING THE SHOW WEEKLY? Because of my mixed heritage cultural identity, which has been the inspiration and drive for the show, it has allowed me to express and convey the intricacies of identity, and the strength it instils. DESCRIBE THE COMMITMENT YOU SHOW TO YOUR AUDIENCE AND THE LOGISTICS OF WHAT YOU DO? Away from the radio, I work as an Aboriginal Community Support worker in Nimbin, and at times it is difficult to distinguish what hat I’m wearing when I attend meetings, events and seminars. So, what I’m trying to say is that I’m totally immersed in the world I talk about on the radio. WHO ARE SOME OF THE LOCAL INDIGENOUS PEOPLE YOU HAVE INTERVIEWED AND WHY YOU INVITED THEM ONTO THE SHOW? From the start I have maintained the position as an ‘open door policy’, holding the space for anybody to talk, sing, promote events, share political views and much more. WHAT DO PEOPLE SAY TO YOU ON THE STREET? DO THEY APPRECIATE WHAT YOU DO? One of the main questions I get asked is always about the music I play, who was that artist and where can I get a copy. Also, I find that people are subscribing to the philosophy of Wirritjin, meaning that there is a shared dreaming in Australia to understand and respect its cultural history. DO PEOPLE TUNE IN FROM OTHER REGIONS AND DO YOU PODCAST YOUR SHOWS? Not really up to speed with the technology yet, but since Bay FM started streaming I have family listening all over Australia, and on many occasions, I have received confirmation that I have listeners in America and who knows where else in the world. WHAT IS THE MOST SATISFYING PART OF BEING THE HOST OF THE WIRRITJIN RADIO SHOW FOR BAY FM? When I first started at Bay FM my mission was to produce and present Australian Indigenous music to the airways, from then until now there has been an explosion in Indigenous music, culture and history that I find most satisfying. IS THERE ANYTHING NEW YOU WOULD LIKE TO BRING TO THE SHOW? The show has been evolving and growing for eleven years now, so any new challenge is welcomed with open arms. IS THERE ANYTHING ELSE ABOUT YOU WOULD LIKE TO SHARE ABOUT YOURSELF: COMMUNITY INVOLVEMENT, WORK AND PLAY? When I started the cultural awareness show on Bay FM I was working as a chef in Byron at various establishments and was taking a break from my studies at Southern Cross University (SCU). At the time I had a chance meeting with David Gulpilil who was visiting Byron. After interviewing David, I was invited to SCU to hear David address a packed auditorium. This inspired me to enrol in another degree at SCU, Trauma Healing, which I completed in 2010 with a major in natural medicine. WHEN CAN PEOPLE TUNE IN TO LISTEN TO YOU ON BAY FM? Put your money, where it really counts!

W

hen we give money to charity it is often whisked off into the ether with no way to see or track its good work, just our hope it has helped in some way. With The Northern Rivers Community Foundation (NRCF), however, you can be assured every dollar goes directly back into our community. This unique organisation raises funds, which are then funneled into local projects and impact local lives in positive, practical ways. The foundation was created by locals for locals and has distributed grants across 246 projects meeting social, cultural and environmental need. Now in its 13th year, NRCF has provided $1.3 million in community grants and programs since 2005. This year NRCF’s community grants program

received 75 applications, which is a 60% increase, showing the need for more philanthropy in the Northern Rivers. The foundation allocates funds according to five key areas that are important to our community; youth, disability, health & wellbeing, environment & conservation and aged services. At the recent annual grants giving ceremony held at Byron Bay Herb Nursery in November the NRCF announced and disbursed $120,000 across 18 innovative community projects. This year’s major grant went to Murwillumbah Community Centre who received $24,000 to help re-establish its community food pantry, which was wiped out by the Cyclone Debbie floods of March this year.


COMMUNITYUNITY I remember hearing once that 93% of the money raised at charity stalls outside supermarkets goes into administration costs. That could never happen with us.

John Callanan Director and Chairman of NRCF Byron Life Magazine sits down with dedicated volunteer, director and chairman of NRCF John Callanan. John first came to the area in 1972 and moved here from Victoria in the mid 90’s. He now has three grown-up kids and eight grandchildren that live in the area. John loves flying and often donates his plane and his time to flying children and charity groups high above the beautiful Northern Rivers coastline. WHAT IS YOUR ROLE AT NRCF? I became Chairman of NRCF four years ago and have been the director since 2005. I wanted to get involved in a community foundation because I had reached an age in life where I had been fortunate enough to be successful and knew it was time to give back. I have watched NRCF grow from the seed of an idea, nourished by hard work and enthusiasm, to become the phenomenal foundation it is today. TELL US A BIT ABOUT THE PEOPLE YOU WORK WITH? There is such a diverse range of people that I work with and we all share one main thing in common; we love to give. NRCF has 100’s of supporters and eight board directors. We have a matrix of skills and are always looking for more board members. HOW DOES THE FOUNDATION WORK? Basically, we fill a need that the Government used to fill. We fundraise, and we distribute donations through our grant programs - Community Grants, Back to School, SCU-Bowen Scholarship Fund. We also support donors with Named Funds where they can build their own funding for specific programs and projects they are passionate about. We are a-political and non-religious. Our donations come from individuals, families, businesses and other city based foundations. We have created a network of need and impact assessment that other foundations can work well with. The NRCF is building a solid capital base for the future, investing money and putting the groundwork into a successful foundation that will be around for our grandchildren’s grandchildren. TELL US ABOUT SOME OF YOUR FAVOURITE PROJECTS: That’s such a tough question! There are so many amazing projects to choose from. One that is close to my heart is providing the Disabled Surf Association with wheelchairs that can go across the beach and into the sea. I spent two years in a wheelchair after a motorbike accident and remember trying to hobble across the sand to the surf. I know firsthand how life-changing these wheelchairs would be. Another project would have to be Story Dogs whereby volunteers bring dogs into schools to help disadvantaged children learn to read. The kids get to cuddle the dog and read to them without the fear of judgment or criticism. So far, this project has helped over 200 children become confident lifelong readers. Finally the ‘Angels’ at the SHIFT Project Byron deserve a mention because they are transforming the lives of one homeless woman at a time.

Something most people don't know: My parents travelled around in a caravan for the first 4 years of my life. A self-proclaimed ‘open book’, Amy is the sort of person who is genuine and upfront with everyone she meets. They were really popular and caught the attention of the University who were determined to shut them down and find the organisers. I was summoned to the University heads office because; at the time I was working in the Student Unions events department. I was really nervous, thinking I had been caught but it turned out that they wanted me to help find the culprit! Little did they know that it was I, right in the heart of the beast’s den. They never did find us out, and we continued to put on parties till I graduated. These days George uses his love of sound for much more wholesome pursuits as the producer at local community radio station, Bay FM. He is also a big fantasy and science fiction fan and loves Star Trek (although he’s asked us not to tell anyone!) In his spare time George reads a plethora of fantasy novels. His two favourite authors are, Robin Hob and Robert Jordan, and of course George RR Martin. Born in the UK, George moved to the Byronshire to be close to the surf. He loves to longboard at Wategos Beach, go rock climbing and find waterfalls. A science buff at heart, George studied physics, chemistry and biology, but loves astronomy and really wants to own his own space telescope one day. In the meantime, his favourite thing to unwind with is puzzle games. George has had a couple of brushes with fame. Working in the live music industry in the UK for 10 years, he worked with artists like Sam Smith, Jose Gonzalez, Alt J. ictoria Dyte’s business Reindeer Riot offers web design and branding services, and while her husband Col has his own business (Drawn Upon) they often end up working on projects together. “We’re fortunate to be able to overlap the services our businesses offer. I build websites and Col does all things branding and graphic design. It’s a great match.” Victoria has noticed a trend of people making the decision to create their own websites. “Quite often I get enquiries from

The SRC comprises of thirty students from across all years elected annually by their fellow students. the master Inspired by intricate beauty, renowned designer and craftsman, Tony Kenway, has paved an impressive career from replicating elegant natural forms into covetable collections of furniture. Fulfilling both form and function, Tony’s timber timepieces are as at home in a living room as they are in a museum, preserving a piece of native beauty for generations to come. His intricacy has been inspired from a lineage of knowledge, passed from craftsman to craftsman who were drawn to the Byron area for its magnificent timber. This land was once home to the largest subtropical forest in Australia, providing a plethora of fine timber which attracted the best furniture makers in the world. It’s a tradition Tony is proud to continue to uphold today. Although there is significant satisfaction in knowing your best work will be treasured beyond your own years, there is another legacy which Tony is even prouder of. The privilege of imparting all he knows to the next generation of craftsmen. Once the apprentice and now a master in his own right, Alby Johnston has worked with Tony collectively for more than a decade. Alby first came to Tony in 2003 having already learned the trade from a master craftsman and artist in Brisbane. Tony was impressed with Alby’s enthusiasm and could see his skill and aesthetic melded nicely with his own. “It didn’t take long before I knew that this guy was the real deal. He is smart, a fine craftsman and has incredible patience. He is willing to spend months and months on a single piece of wood, he’s a perfectionist. I was proud to call him my protégé and I spent years imparting all I could to support his personal journey and development. “I’ve spent a lifetime building those skills, it’s a great feeling to pass it on, to keep a diminishing trade alive,” Tony said. Tony’s career has reached exceptional heights and continues to grow. He

was won three top international awards from the Philadelphia Furniture Show, the world’s largest studio furniture show. Twice he was awarded ‘best chair’ and he also took out ‘best new artist.’ Tony worked in the Queen’s Royal Collection Workshop, then further into his career, signature pieces were selected for the William Morris Trust house in London. With one of the world’s best as his teacher, Alby knew that he was learning from a humble giant of the industry. His determination and enthusiasm allowed him to gradually master Tony’s techniques, particularly in chairs which are exceptionally challenging in that they need to be both beautiful as well as functional. “There are several challenging techniques used to make Tony’s chair design and the repetition of making such skilled work allowed me to master the skills required in our craft. “The biggest thing I have learnt from the time working with Tony is that we can make just about any design that we conceive, this confidence and approach is vital as a designer and craftsman in artisan furniture,” Alby said. Both master craftsmen find inspiration from nature. “My influence comes mainly from the marine environment, partially from my time building ships before moving to furniture design, but also from my love of the coast. The baroque beauty and intricacy to be found in a delicate form, such as the vortex within a shell, the curve of a wave, spirals, it all relates to energy,” Tony said. “The local natural beauty that appeals to me the most are the forests. Having completed an Environmental Science degree majoring in Ecology and Soil and Water Processes, and always being inspired by woodwork and furniture

making, this is no surprise. The daily presence of the natural world around me can, at times, heavily influence my designs,” Alby said. Alby’s design influence from the forest is most visible in his ‘Rainforest Rocker’ Chair, a distinctive piece which won first prize in the 2010 National Studio Furniture Exhibition. This was a proud day for both Tony and Alby, with Alby taking the top prize and Tony awarded second for his submission. “I felt as though I had already climbed my

Rainforest Rocker - Alby Johnston mountain, I was absolutely elated for Alby, more so than if I had won myself. It was incredibly rewarding to see the apprentice become a master,” Tony said. Despite owning two different design studios, Tony Kenway Furniture and Bayspoke Studio, the men still collaborate on ideas and assist with each other’s commissions. Alby assisted Tony to create a significant piece of Tony’s career, the ‘bed for dreaming’, inspired by a client’s Oriental poppythemed bedroom. The bed took two years to make, with the scale model even taking several months to complete to ensure perfection. “The thing I love about working with Tony is the connection both as a friend and mentor, as well as sharing a complementary design aesthetic. Mentor relationships are especially vital for niche markets such as ours and the support during development and transition into business has been a saviour,” Alby said. As a fitting show of respect to both artists, Tony and Alby currently are separately commissioned by the same client for dining and living room furniture that will occupy the same apartment in Sydney.

I was not in it at the time, thankfully, as the bullet ended up in the headrest. Brazil can be quite unsafe and it made me realise that in a matter of seconds, everything can be taken away from you. “ “My mother had sent me to an American school so my English was already very good, so I said to Fabio, ‘let’s go.’ We had friends in Perth who had been very encouraging of us to move to Australia, so we moved to Western Australia in 2008,” Eduarda said. The couple went through the procedure of having their dental qualifications recognised in Australia before working for the government in Exmouth. They became Australian citizens in 2012, and began looking for a dental practice which they could transform to include world-leading technology and advanced practices. Eduarda and Fabio purchased Bangalow Dental in 2012, and even though it was only their first visit to Byron Bay, they loved the area and could see the opportunity to bring technologically advanced dentistry to the community, eliminating the need to travel to a metropolitan area for first-class treatment. They also welcomed their beautiful daughter, Mila, to the world in 2014. “Although Bangalow Dental is a dental practice for all ages, it has a strong focus on cosmetic and digital dentistry. That’s what we love to do. “With the advance of CAD-CAM systems, 3d printing, digital smile design and Skyn Concept, it is possible to design a smile to match the patient’s face and characteristics,” Eduarda said. F

rom sticky buns to sniffing beans, David and Jenny Kennedy, (known lovingly throughout the community as Mr. and Mrs. Bun), share how a fascination of coffee and love at first sight evolved into a successful business and home in Byron Bay. David reflects on how his curiosity for coffee began in 1989. “It began after a visit to a boutique coffee roaster in Sydney in order to create a coffee blend for a new Patisserie we were opening in Glebe. Funnily enough this is where the ‘Bun’ name evolved from also. I was given the nickname “Sticky Bun” by friends. They would often joke telling me I ran a “Sticky Bun” shop and I would try and correct them, “No it’s a fine French patisserie,” he laughed. “The coffee roasting process intrigued me and I formed a friendship with the roaster. When I exited the patisserie, the roaster asked if I would like to join their team. I jumped at the opportunity and spent five years learning the craft, eventually becoming head roaster.

“From the day David first called me in 1989 to tell me he had made his first cappuccino for a paying customer, to 2004 when he announced a coffee roaster was on its way from Turkey, his enthusiasm and passion has been infectious. Now it is our family business and we are extremely proud and grateful of his dedication,” Jenny said. Bun Coffee produces four main blends as well as a 100% Australian grown product and a decaffeinated coffee, all created by David. He explains that his biggest seller is the Shade Grown Rainforest Blend. “Because this coffee is grown in a thriving natural ecosystem, I believe it adds to the depth of flavour. The coffee makes a stunning espresso and due to its brightness, produces an extremely full-flavoured milk-based coffee. We also belong to a very large buying group and combined with our volume purchasing this affords us great prices that allows us to stay super competitive.” “There is no substitute for the freedom and control you have when you are not beholden to the buying decisions of someone in a head office who has no concept of your location or demographic,” Carey said. We’ve seen a lot of changes in gardening over the years.

O

ne of the most exciting has been how a concern with ‘organic’ has become pretty mainstream. When I first took over Eden at Byron, there were very few organic gardening products on the market. I remember asking one of the largest producers of garden supplies for organic options, and he thought I was pretty crazy. But now, there’s a full range of certified organic products available for the home gardener. And this interest in organic stems not just from concern for our own health, but also from a growing realisation that we are simply custodians of our garden, our tiny part of this planet. Our gardens give us great pleasure, and help to feed us. But they also serve a much greater purpose, providing food and habitat for a vast range of creatures. The single most important thing we need to do to create a beautiful, productive garden is to nurture the soil. After all, that is what sustains plant life. Building healthy soil is a gradual process, and one that continues indefinitely. It’s a bit like exercise – you need to keep doing it, or the benefits are lost! The next most important thing is to choose the right plants for particular situations. It’s no use planting sun-loving grevilleas in a shady garden, or moisture-loving ferns in a dry rockery. Choose plants that are both suited to our climate (but do be prepared to push the boundaries!), and also suited to the particular position. If you find something is doing really well, then plant more of that, and explore what other plants enjoy similar conditions. Variety is important, not just for interest, but for maintaining a healthy little eco-system.

Next, limit your use of chemicals. Look after the health of your soil and your plants. Be prepared to tolerate a bit of damage – those holes in the leaves of your lemon tree are most likely made by the caterpillar that becomes the beautiful orchard butterfly. They won’t eat much, so just let them be.

Yes for sure. The world is constantly changing, shifting. We are evolving to peace and learning that we are not separate from each other, or everything.

Humans are eclectic by nature, there is so much diversity amongst us that, I don’t think we’ve been able to unanimously agree on what a harmonious existence is… We haven’t quite cracked yet… but if we all kicked back and had some Damiana, (our favourite Mexican love herb at Elixiba) we’d catapult ourselves into a utopian dream of harmonious living!

People call me an “eternal optimist” and I will accept that as I believe there is way of BEING that creates harmony.

Our small actions have ripple effects that have the power to create big changes, especially with the power of consumer purchase choices and the internet. Wholeness, healing and peace are paving the way towards harmony and although we still have a fair way to go I see the positive actions and changes taking place around me every day and it’s exciting to see this progress.

As we learn to live with ourselves and journey within to source the space that instinctively knows how to let go off the “ego” we do find peace. So for humans to be able to live, survive and flourish, it is now and will become even more essential in time to come for the growth as a BEING so that harmony can be attained. If we want an environment that is nourishing and safe for our children and grandchildren I believe we have to look within and GROW UP AND OUT. What we can’t achieve when working with others, we won’t achieve for ourselves either.

I recently tagged along to North Stradbroke Island with the boys from Drop Legs to watch them play Island Vibes and inevitably catch a few waves and enjoy a couple of beverages. This was a band truly in their element and the perfect snapshot of how a bunch of good mates can make their art without compromising one iota their ideal lifestyle or authentic selves. Drop Legs are a blonde haired hurricane, mixing reggae and hip hop with infectious grooves and perpetual grins from ear to ear.

WHAT HAVE DROP LEGS BEEN FROTHING ON MUSICALLY AT THE MOMENT?

HOW DOES YOUR SURF FROTH INFLUENCE YOUR MUSIC FROTH?

Between us currently it's a mix of King Tizz, Chronixx, Mos Def, 30/70 and a bunch of other Aussie bands.

I guess coastal life seeps into the sound and the lyrics- also probably keeps us more stoked at home and on the road- it's like the easiest cheapest stress reliever/epic pastime. Also we try and gig more around coastal towns because they vibe with our sound more and we can also score a few waves.

WHATS THE PLAN FOR THE BAND OVER SUMMER, LOTS OF GIGS OR SURFING AND CRUISING?

WHERE DID YOU GROW AND UP AND WHEN AND WHY MOVE TO BYRON? We moved to Avoca Beach, NSW from Collaroy, when I was 7 years old Such a magical place to grow up. We were free range groms/grom-ettes spending our days down the beach, all year round. I moved to Byron 4 years ago. I always knew I was moving north one day… for the waves, climate and like-minded people.

HOW LONG YOU BEEN SURFING? I’ve surfed since I can remember. From a foamy that I got off Santa when I was about 5. Ha! I remember I used to get in trouble off dad for standing up on my nipper board, taking off on bomb sets, the bigger the better and going for it. I think my first hand me down fibre glass thruster was from my old school shred lord Uncle Brian at age 8 or 9. I grew up surfing on whatever kind of board I could get my hands on. In my early 20’s I started playing around on twinnies and single fins. Since I found the love for a longer board, I’m mostly on my 9’5 log by shaper Sean Nettleton. He’s changed my surfing life for sure.

WHAT DOES A SURF AGENT DO? Sunshine & The Eccentrics is a boutique agency, representing independent creatives. I build and share a strong representation of stylish, unique, practical designs, for those who live for the sea and enjoy the simple yet adventurous lifestyle. My soul purpose is to be the middle women between the independent surf/fashion boutiques and the designers. Showing the seasonal collections, assisting brand promotion, creating happy relationships and rapport with all. As a natural communicator and eye for detail, I was witnessing my friends Danny of Salt Gypsy and Maria of Atmosea creating amazing surfing suits and Celeste Twikler making fine jewellery. Amongst the myriad of eccentric Byronites, all vying for their piece of the Byron Dream, there stands a man, without care for recognition or acclaim. His name is JS and apart from being the muse and protoge of Byrons own poet/surf board Shaper Ed Sinnot he also is renowned for his multi surf craft mastery and counter culture attitude. His derelict appearance cause some to take pity and offer him half a sandwich or a hot shower, but beneath this rough exterior is a soft heart and a sharp mind.

WHO IS JS? JS stands for freedom of expression but my name is Josh Sleep, I grew up in Suffolk Park. My friends call me Hunter because I like radical writing, surfing , motorbikes, tattoos, bikes, music, zen gardening and art.

DESCRIBE YOUR PERFECT DAY? Getting up early and hitting the surf. Sometimes its Wategoes with my shaper Ed Sinnott or down at Broken. I ride any style of board Ed makes me – logs, high performance short boards, aerial boards, anything goes, then lunch, then painting canvas in the arvo maybe a late surf or gardening followed by great food and praying for forgiveness for all the crazy things I've done hahahah.

Q: Tell us a bit about your surfing philosophy:

A: I have always thought that surfers are so passionate about surfing because it’s an easy pathway to being totally present. Far easier than meditating but with the same benefit! Philosophically I think that surfing is an experience that all humans crave, it’s our one chance to disconnect from the world, be in an ever changing environment and connect with nature and ourselves. Q: Who or what inspires you as a surfer? A: Being in the ocean inspires me. I truly believe that immersing in salt water is the cure for nearly everything. It certainly has been for me. I am inspired by people who are living their lives through surfing, both in work and play. Q: What do you love most about the ocean and surfing culture?

A: I love the ever changing nature of the ocean, the energy you experience every time you get in the water, and how close to nature you can be. Strangely, I love sitting on the edge of a bait ball, where I just watch all the action around me in awe. Then you feel alive!

The surf culture is like a tribe of like-minded people. The saying ‘only a surfer knows the feeling’ is so true (if not a little elitist!). You know that when you are talking to another surfer, you speak the same language and share the same passions. Q: Tell us about your role at Mojo: A: I’m General Manager, which basically just means I do a bit of everything to make sure we deliver on our mission of taking our customers through the thrill of adventure and learning experiences, in the most awesome locations, to find their Mojo! Lucky for me these locations include some of the most secluded surf locations on the East Coast and our new surf camps in Indonesia. Q: What are your words of surfing wisdom? A: Never bring aggression into the surf. It’s ok to share waves as long as it’s not dangerous or you’re a wave hog! Smile and talk to other surfers. Give someone a hoot when they score a good wave. Embrace all wave riders no matter what craft they choose.

Ed Sinnott Junior is an Australian surfer with a lifetime of experience who lives Byron Bay on the N.S.W north coast and has his ESP/BRYON BAY BUILT factory out in the industrial area. Since 1976 he has combined his knowledge of surfing with a passion for hard work, originality, and innovation within the field of surfboard manufacturing. Over the last 41 years he has shaped over 20,000 surfboards for a huge variety of people from all over the world and gained invaluable experience by shaping for surfers the ASP World Tour as well as several World, State and Australian title holders. The expertise that comes with years of design and shaping experience keeps him on the cutting edge of creative and innovative surfboard design. He has worked for Michael Peterson Surfboards, Skipp Surfboards, Gordan and Smith, Hawaiian Island Creations, Lightning Bolt, Force Nine, Beach Street. “I shape the whole spectrum of surfboard design, everything from hi-performance shortboards, fishes, mini mals, retro designs and longboards, in my opinion any shaper worth their salt should be familiar with all aspects of design. My shaping focus is intergenerational and all my boards are made by Australian surfers. ” Over the course of a career that has spanned the single-

fin, twin-fin, thruster and the modern longboard eras; Ed has seen a lot changes in the surfboard industry. “When I started surfing in the late sixties many of the surf companies and board manufacturers of today didn’t exist. We didn’t wear leg ropes, wetsuits were basically non existent and no one would have ever conceived you could get a surfboard made in China or that plastic boards made in Thailand would ever be acceptable. I personally chose to manufacture my boards using Australian workers and materials here in Bryon Bay. Mass production is not my scene, but producing professionally made surfboards of A1 quality is. Here at ESP we are proud of what we do and as a group of Australian surfers we have never embraced the propaganda pushed in the surf media by corporations promoting Asian surfboards or overseas brands. t can be as exhilarating as a roller coaster or as tranquil as meditation. No matter which body of water you choose to paddle on, kayaking is a great way to connect with nature, improve overall fitness and push your personal limits.

in bad weather. There’s nothing worse than a kayak that only wants to propel (broach) sideways in a storm! The steering system is not fixed, it is able to be adjusted with ease for your leg length and seat comfort.

Born in New Zealand, John Clemmett grew up with a love of the water. At a young age, he learnt how to build kayaks with a timber frame skinned them with calico and painted them to waterproof it. Better to be on top of the water when it was too cold in the winter to swim.

“I’ve tested our kayaks in bad weather to ensure the responsiveness of the rudder steering and have landed them on rocks coming back from sudden storms. The hulls have been well tested,” John said.

He moved to Australia in the 1970’s and was a keen surfer, but shortly prior to moving from Sydney to Byron Bay, John was a passenger of a motor vehicle involved in a serious accident. His injuries put an end to his surfing, but he found he was still able to paddle, reigniting his love of kayaking. When the opportunity presented itself to purchase Challenge Kayaks, previously based in New Zealand, he bought the business and moved the manufacturing to Clunes in the Hinterland of Byron Bay, where it has been ever since, building kayaks under the name of Challenge Kayaks Australia. “The biggest difference with our kayaks is that they are made from a technologically advanced polyethylene plastic, which I firmly believe is stronger than traditional Fiberglass and Kevlar kayaks. The durability of the hull is far superior to anything else I have ever paddled. The greatest test of a kayak is its stability in a following sea as well as its performance in rough conditions. If you have a car a must must do is “Doma Café” in Federal. Doma Café is a little Japanese Café tucked away in the picturesque Byron hinterland. Every dish at Doma is a perfectly balanced flavour party. I must confess, I normally take charge when visiting with friends and order a few dishes for the group to share, thus avoiding any awkward “order envy” moments. Having returned to Byron Bay two years ago, Amy loves her job as a Chef at Fish Mongers Byron Bay. “I love the creativity and freedom it presents, I’m constantly learning and developing new skills,” she said.

Tell us a little about the food on your menu? I'm spoilt with the amazing quality fresh seafood we have access to, from our local barramundi and snapper to huge Aussie king prawns and oysters. It allows the food to speak for itself.

Who inspires you as a chef? Thomas Keller has the ability to make every plate look like a work of art. Also, Wolfgang Puck, his food is absolutely out of this world!

What is your secret weapon in the kitchen? A sharp knife, I know it's an obvious answer but I really depend on it.

Do you have a funny cooking story you would like to share with our readers? Too many to count! Working in a kitchen is full of pranks and funny stories. One that comes to mind is the chef who got tired of waiters sneaking his caramelised hazelnuts that he used for a garnish. To trick them, he made a batch spiked with very hot chillies. Let’s just say the batches got mixed up somehow and one customer got a very spicy dessert!

What do you love most about your job? I love having my own business at the Ocean Shores Tavern. I have six employees and we’ve all been together since we started 18 months ago. We are a tight group, almost like a family.

Tell us a little about your menu?

riginally from Coff’s Harbour, Gareth went to boarding school in Towoomba and remained there for his first job in the kitchen; scrubbing potatoes when he was 19.

He started his family when he was young and now has two children with his wife, Jillian who works at Ocean Shores Tavern alongside him. “I love working with my wife! It forces us to be excellent communicators which works wonders for our marriage!” Said Gareth. As a younger man Gareth found himself working in the building trade but was looking for a new direction after undergoing a shoulder reconstruction.

We offer the best in Australian pub grub! All our recipes are made from scratch and all our fresh produce, from our free-range chicken to our locally caught seafood and grass-fed beef, is sourced locally or from within Australia. We have regular specials and a ‘Steak Night’ on Wednesday then a ‘Curry Night’ every Thursday, which is also member’s night.

Who inspires you as a chef? My grandad was a chef in the army and then opened up Coles bakeries. I always remember that as a child. It was when my mum died when I was a younger though that I really started getting into cooking.

It was at this time he connected with life-long friend Chris Trask who got him back into the kitchen and inspired him to be a chef.

What is your secret weapon in the kitchen?

“Chris passed away recently and I want to publically thank him for helping me find my passion and direction when I started in the kitchen. I miss the vibe sessions at 2am cooking random goat curries!” Said Gareth.

Place the eggplant over a naked flame and cook for 15 minutes turning frequently, until the outside is charred and the inside is soft.

1. Pre-heat the oven to 180C.

Cut the eggplant open and scoop the flesh into a bowl, squeeze in the lemon and crush in the garlic. Add the cumin, hemp oil, tahini and a good pinch of both salt and pepper. Serve topped with hemp seeds, parsley and pomegranate.

2. Crack the eggs into a mixing bowl and whisk. Add all other ingredients and stir well to combine. 3. Spoon the mixture into a loaf tin lined with baking paper then transfer the tin to the oven and cook for 1 hour. 4. Take the bread out of the oven and cool for 30 minutes before slicing.
