10When I said I would look after the business while my boss went on a well-deserved holiday to the UK with her family, I have to say I didn’t appreciate what a huge task was ahead of me. I was just four months pregnant when I said yes. Now, almost a year later my son is approaching six months old and teething. The long night sleeps of his younger days are a distant memory – and so are mine! They say that when the boss is away things have a habit of going wrong and while preparing this issue we have certainly been tested. From power outages on the day we were due to go to print to a burst water main at the hairdressers on the day we did the cover shoot. And then there was the rain, which of course poured down throughout the photo shoots.

Now that we are approaching Christmas, it is a time when we think of family and our greater circle of loved ones. It is a time when we value our friendships, reflect on the year we are leaving behind and appreciate the love we have in our lives.

When Chris took a job interview in the Whitsundays without telling his wife, he never dreamt that five years on the couple would be living here and he would be the Manager of a luxury local hotel.

A proud New Zealander, Micheal moved to Australia 19 years ago. He and his partner lived in Sydney before moving to the Whitsundays and settling in Airlie Beach five years ago.

Coming to Australia after a colourful childhood living all over the world, Chris is an interesting blend of influences. He was born was born in Austria, but considers himself Dutch even though he has never lived there and doesn’t speak the language. He grew up in West Africa, mostly Nigeria and then went to boarding school in Austria.

“We have two crazy kids and watching them grow to achieve their goals makes me a very proud parent,” said Micheal.

Chris eventually settled in Australia moving to Sydney with his wife and then relocating to the Whitsundays five years ago to pursue his career. As General Manager of Mirage Whitsundays, Chris works hard to create a happy customer-service orientated atmosphere. “When you have happy guests and a happy team, they will take care of your business,” said Chris. Winning Gold for best Deluxe Accommodation at this years’ Tourism Awards was a significant achievement for Chris and his team. Despite these admirable credentials Chris still considers Mirage a hidden gem, waiting to be discovered. When he’s not managing the team at Mirage Whitsunday Chris likes to spend time with his own family. He is also an avid football fan, preferring to call it football instead of soccer and supporting the National Dutch team with a passion.

As a Supervisor at GJ Gardner Homes, Micheal is incredibly busy. The company has grown so much recently so there is a lot of additional organising to do and keeping the ‘tradies’ in-line can be a full-time job in itself. Although it is challenging at times, he loves his job and working in a close, professional team environment. “I am passionate about having a strong work ethic and enjoying what I do. This makes GJ Gardner the perfect career for me. I would love to be able to retire early, that would be awesome, but let’s see how that goes!” Said Micheal. With the little free time he has Micheal loves to go motorbike riding and with a backdrop of the stunning Whitsunday hinterland, he certainly lives in the right place. “The only thing missing from our town is a KFC outlet,” he jokes.

After ten years in Mackay Victoria fulfilled this dream by purchasing Intuition Art of Hair in Greenfields last year. “My love for the hair industry only grew stronger along with my determination to kick goals and achieve the dream of owning my own salon,” said Victoria. When she’s not working with her fabulous team at Intuition, Victoria likes to spend the day out on the water on her ski boat with her partner Justin. She loves nothing more than the wind in her hair and the sun on her skin enjoying a day with friends or family wake boarding.

Our Whitsunday: Behind Utopia The success of our regional video ‘Our Whitsunday: Our Utopia’ has given rise to a series of videos we like to call ‘Behind Utopia’. In July 2017, Whitsunday Regional Council launched a regional video called Our Whitsunday: Our Utopia. The concept of the video was dawn til dusk, a day in the life of people living in the Whitsunday Region. It features local faces in local places, stunning natural beauty and the diversity of our region. Most importantly we wanted to portray how our community spends their everyday in the wonderful Whitsundays. The shoot took place across the region and there were so many authentic and genuine people coming forward with great enthusiasm to be part of this project. We were eager to promote the fact that all of the footage in the clip was filmed after Cyclone Debbie, to show how quickly our region had bounced back. Keen to enhance the ‘community spirit’ vibe we had created, a series of five short videos were created called Behind Utopia. It’s the people that make the Whitsundays a great place as much as it is the environment we live in. The Whitsunday Region has had a challenging year with the devastation caused by Tropical Cyclone Debbie and it is heartening to hear the positivity from the people that call the Whitsundays

home. The Behind Utopia series can be viewed on Council’s Facebook page, You Tube Channel and a condensed version appears on Channel 7. Our Behind Utopia stars have been extremely enthusiastic and genuine in their appreciation for their home and it shows! Our local stars include: • Joan, a local from Collinsville • Ken, a Council employee and resident of Proserpine • Trent and Bianca, owners of GSL Aviation in Airlie Beach • Carl from the Bowen Gumlu Grower’s Assocation • A mix of the region - Narelle from Collinsville and Lindsay from Proserpine The regional video and the Behind Utopia series form part of a broader #ourwhitsunday campaign to generate community spirit and to let Council know what our residents value and enjoy about our region. Council’s Instagram page will officially be launched in November (@whitsundayrc) So next time you are out and about - fishing at the dam, taking your kids to the skate rink in Collinsville, eating fish and chips at Horseshoe Bay or at the lagoon, take a few photos and use #ourwhitsunday to show us your every day in Our Whitsunday.

The region’s first ever Economic Development Strategy was adopted which gives us a clear, actionable and achievable “road map” for economic development in the Whitsunday Region over the next five years.

Proserpine’s future is looking bright with a successful consultation process undertaken with the community to develop a draft Proserpine Sustainability and Future Growth Master Plan.

To be back in action such a short timeframe with record tourism and airport numbers recorded in the second half of the shows our region is getting back to business.

More than 3 ½ years in the making, the new Whitsunday Regional Council Planning Scheme was adopted on 28 June 2017. This will ensure that a well-planned, well serviced, liveable and sustainable Whitsunday Region caters well for future generations.

The fighting spirit and never say die attitude displayed by our Whitsunday region residents is humbling and make me very proud to be Mayor of such an amazing community.

The Whitsunday Coast Airport has hit record numbers and is expected to hit the 500,000 passenger target in 2018.

A $6.5 million revitalisation of the Airlie Beach Foreshore.

Works for Queensland funding programs have delivered park upgrade projects across the region at Conway Beach Foreshore, Collinsville Skate Rink, Gideon Pott Park Basketball Court in Bowen, Anzac Park in Collinsville, Bowen PCYC Skatepark, Cannonvale Beach Foreshore, Cannonvale Lakes, Wilsons Beach Foreshore and solar at the Bowen Water Treatment Plant.

Moving ahead, major projects are in the pipeline to develop the Bowen Marine Centre of Excellence, the $22 M Shute Harbour Project, indigenous tourism projects at Flagstaff Hill in Bowen and new tourism infrastructure at Lake Proserpine.

Well the late great John Lennon nailed it in his intro to “So this is Christmas”. As Christmas approaches and 2017 comes to a close, our region can look forward to the opportunities that lie ahead and reflect on the resilience shown by our communities this year. It is staggering to think that it is only nine months since our Whitsunday community felt the full impacts of Tropical Cyclone Debbie. The day after the disaster it was all hands on deck to start the long recovery process.

Councillors, myself and the whole organisation headed by CEO Barry Omundson, have proactively led our region’s recovery process. Our funding advocacy efforts to all levels of government are reaping big dividends with close to $200 million secured from Federal and State for our region. The $40 million Whitsunday Coast Airport terminal expansion is already underway with the runway upgrade completed in late October and the terminal expansion commencing early in 2018. 2018 promises to be a “moving year” for our region with so many exciting major projects including: •

Adoption of a five year Waste Management Strategy for our region which included the decision to implement Kerbside Recycling and demonstrate the importance of sustainable waste services in the future.

On behalf of the Whitsunday Regional Council, from the coalfields of Collinsville to the beautiful beaches in Bowen, the cracking barra fishing at Lake Proserpine and the amazing islands off Airlie Beach and Cannonvale, can I wish all residents a very Merry Xmas and a prosperous New Year in 2018.

Christmas is a time of celebration, joy and togetherness. For Council it is a time to reflect on the year that was and look forward to the New Year with great optimism. For the year that was, thank you to everyone who has worked hard and showed amazing generosity of spirit to contribute to our region. Queensland Music Festival showed us that great achievements are possible when we unite our talents. Let’s continue to work together by shopping locally for our Christmas gifts. Building small businesses secures jobs and supports a stronger future for Isaac. Don’t forget our Love Your Local campaign will still be running until the end of January next year. I encourage you all to get behind this great initiative.

2016 WAS DUBBED ‘THE WORST YEAR IN HISTORY’ ON SOCIAL MEDIA, MAINLY DUE TO THE DEATHS OF MANY HIGH-PROFILE CELEBRITIES INCLUDING DAVID BOWIE AND PRINCE. SO HOW HAS 2017 SHAPED UP IN COMPARISON SO FAR?

Much like anything in life, it’s about perspective. Locally, one could say that 2017 was much worse, due to the devastation caused by Cyclone Debbie. Worldwide, worse devastation was seen in many corners of the globe. The United States of America was dealt a double-blow with Hurricane’s Irma and Jose, then the country mourned the worst massacre in modern history in Las Vegas. But it certainly wasn’t all bad. As humans, we have a fantastic ability to rise and conquer. To rebuild and emerge stronger than ever. Here in Mackay and the Whitsundays, this year proved that more than ever. On top of overcoming a natural disaster, many businesses and individuals thrived; winning awards, claiming championships and representing the region on national and international levels. AND THE AWARD GOES TO… Queensland shines, and nowhere does it shine brighter than at our region’s annual tourism awards held in Mackay and the Whitsundays. The Mackay Region Tourism industry’s night of nights encourages and recognises excellence in the industry. It was held at Magpies Sporting Club and featured local My Kitchen Rules contestant, Della Whearty, as MC who also conducted a cooking demonstration using fresh regional produce. The Whitsunday Tourism Awards are the region’s premier tourism event, established to pay tribute to the enormous contribution made by the region’s tourism operators and service providers. This year’s celebration was held on tropical Hamilton Island.

Grazing gratification Silver Award in Food Excellence

A feast for the senses, Mackay couple, Patrice and Simon, have perfected the art of food presentation, creating platters and grazing tables which look as scrumptious as they taste. Their business, Plattered Up, has recently celebrated its first year, with the milestone made all the more special with a Silver Award at the Mackay Region Tourism Awards in the Food Excellence category. Being relatively new to the Mackay foodie scene, Patrice commented that she was both overwhelmed and honored when Plattered Up scooped the prize. “We’ve had an amazing 12 months and have been lucky enough to work with and collaborate with some amazing Mackay vendors; from florists, to event venues, tourism operators as well as other caterers and event coordinators. “Some of our proudest and most elaborate grazing table displays have been collaborations, so we have had a very welcoming introduction to the industry here in Mackay,” she said. The local couple were high school sweethearts here in Mackay, before moving to the Gold Coast for Patrice to complete her International Business Degree. They stayed on the Gold Coast for 10 years, six of which they ran a healthy café and catering company. They moved back to Mackay to be closer to friends and family while their family grew, with two daughters, Marika who is 8 and 3-year-old Neila. “We have always loved food and particularly food artistry, so knew we wanted to get back into the catering industry, but also wanted to bring something new to Mackay,” Patrice said.

Best Use of a Sloping Site

McNeill Building When building in the Whitsundays, maximising the million-dollar view is crucial. Achieving this on the steep sloping surrounds of Airlie and the Whitsunday Islands is challenging, but a local building business has proven itself to be the master for the third consecutive year. At the recent Master Builders Mackay and Whitsundays Housing and Construction Awards, McNeill Building took out the honour of ‘best use of a sloping site.’ The house was constructed in Arlie Beach for Graham and Robyn Harris, experienced home owners who knew exactly what they wanted to achieve. The Harris’s met with Martin Gartrell from McNeill Building and were impressed with his willingness to build ‘off-the-plan’ to incorporate different design aspects. The Harris’s Airlie home is a dream come true, a celebration of master craftsmanship. It incorporates four bedrooms, the master with an enormous walk-in-robe and ensuite. The lavish open-plan living is adorned with quality appliances and stone-top benches in the kitchen, then indoor living seamlessly flows outdoors onto a huge deck. The deck is as wide as the house to maximise the panoramic view, while the use of glass balustrade and tall glass stack doors means there is a view of the ocean from almost anywhere in the house. High ceilings and polished hardwood timber floors add to the luxury.

Its external cladding is Colorbond, an important feature in the design process as explained by Martin. “Given its elevation and exposure to our harsh climate, we incorporated Colorbond cladding and screening, even the soffits were done in mini orb Colorbond to achieve an incredible look which requires no maintenance and is designed to perform for years to come,” Martin said. McNeill Building have tailored their business to specialise in the construction of sloping site buildings. “Our in-house engineer assists in providing the most efficient structure and we have a fantastic crew of builders and subcontractors who are as passionate about the result as we are,” Martin said.

Often it’s a matter of blocking out time and committing to not talking to clients for this period, staff should explain you’re not available and will call back. It may start with half a day per week. Are you sharpest in the morning or the afternoon, this is when you’ll want to be firing on all 8 cylinders. Finding the resources required boils down to money and skills. First you have to accept that working ON your business is more valuable time than working IN your business. You can pay a few dollars extra for a staff member to handle some clients or do some work but they don’t think about your systems, processes, marketing and strategy. A focussed hour on management will make you a hell of a lot more than an hour of wages. If you’re too busy serving to answer the book keepers queries so they can send

WHY IS IT SO DIFFICULT FOR WOMEN TO ACHIVE FINANCIAL SECURITY? A regular female listener to my radio interviews on Emerald 4HI asks me to voice my views on women and the financial opportunities they often miss out on. Women have done a great job in recent years to improve the gender balance. In Politics, we have women as the leaders of Germany and the United Kingdom. Whether our next Federal Government is Labour or Coalition, it is possible their respective leader could well be female. In the movies, all the old super heroes used to be men and now we have the huge success of Wonder Woman and to top it off a female Doctor Who! Our girls are also doing well in sport. The women’s Seven’s Gold at the Rio Olympics was a national treasure. Roger Federer, after winning Wimbledon again, is being lauded as the greatest tennis player ever. People forget Serena Williams has won more grand slams than Roger. Although doing very well in most areas, financial security for women is often a challenge and difficult to achieve. Here are some findings from the Association of Superannuation Funds of Australia (ASFA). Although women usually manage their own finances, superannuation can be a blind spot but men are actually pretty good at Super. According to ASFA, 25% of men know their exact Super balance and women about 13%. Average Superannuation balance upon retirement On average a man in Australia ends work with $295,500 while women end up with about $138,000. Generally, women are on a lesser pay scale, spend time at home with children, deal with divorce and so on. There is another factor, however – a woman’s lack of interest, knowledge and/or understanding of Super.

HOW DO WE FIX THIS? I would ask every parent in Australia to encourage their daughters to do Maths at school. As a role model for girls and young women, the super industry could promote the image of a woman in charge of her affairs and finances. uying or selling a home, is a major transaction in anyone’s world, whether you are a first-home buyer or experienced investor. Many complex details surround the purchase, which at its heart, is a legal transaction. Conveyancing is a crucial part of the transference of a title from the seller to the buyer. A conveyancer ensures that the property’s ownership is transferred without hindering legalities and that there are no other interests that can impede the title transfer. Traditionally, this process can be slow and frustrating at times, with old-fashioned manual document methods required for settlement. This usually involves four parties attending a settlement; the buyer’s solicitor, the seller’s solicitor, the buyer’s financier and the sellers financier; to physically handle transfer documents and bank cheques. Thankfully, conveyancing is moving with the digital age. Kellee Fogg, Legal Practitioner Director of Whitsunday Law explains how a secure online platform called the Property Exchange of Australia or PEXA can save both parties time and money. “With PEXA, all parties log on to the platform to check documents prior to settlement. “The online platform is linked to the Department of Natural Resources and Mines and the Office of State Revenue. This allows for validation of the property details. “Once all documents are checked, settlement figures are organised, a time can be set whereby settlement occurs automatically. No physical attendance is required. “The bonus is that funds to be received by the seller are received the same day as cleared funds. The buyer receives the property transferred into their name on the same day so that there is no risk of anyone registering an encumbrance over the property between settlement and registration,” Kellee said. Although Whitsunday Law have been using PEXA for more than a year, not all conveyancers have made the switch to digital. Kellee explains that all parties need to be willing participants of PEXA for the advanced digital platform to be used. “We are finding that a lack of awareness of this facility with the general public seems to be hindering legal firms getting the approval of their clients to use PEXA. We want to share the advantages of this system so that the general public understand it’s not a difficult process. In fact, although there is a fee for the buyer and seller to use the program, this fee is offset by a number of positive factors, no title check fees as this is already validated in PEXA, no bank cheque fees, settlement is faster and you often save time and money on your conveyancing cost.” Whitsunday Law offers all clients purchasing or selling straight-forward residential properties a free review of their contract prior to signing. “Not only can we explain what is in the contract so they understand what they are signing, we can also try to anticipate any issues that may arise in the future from the contents of the contract. “I thoroughly enjoy property law and want to make the experience for my clients just as enjoyable,” Kellee said. Having lived in Brisbane for more than 30 years before moving to the Whitsundays two years ago, husband and wife Thê Pham and Thao Nguyen had a plethora of Asian restaurants to choose from. Here in Airlie Beach, Thê and Thao missed the togetherness of Asian communities, gathering for cuisine and conversation, a celebration of food and family which is an important part of Vietnamese culture. Growing up surrounded by a family of excellent cooks, food is their passion, and they want to share the flavour and friendliness of Vietnam with the local Whitsunday community. Their restaurant, d’Viet House, is opening at Beach Plaza, opposite the Airlie Beach Foreshore, this December. Although Thao enjoys cooking, she doesn’t get much time to do so. In contrast to their love of food, medical imaging is the profession of both Thê and Thao. Drawn to the Whitsundays by beautiful natural surrounds, they filled a gap in the local market by opening Whitsunday Ultrasound. Their clinic in Cannonvale has been open for two years and their Bowen clinic has just celebrated one year in business. Thê is the Director of the clinic as well as the senior sonographer and radiographer while Thao is the practice manager. “We saw a need for more medical imaging services in the region. Patients used to have to wait for weeks for an ultrasound but are now able to get an appointment most of the time on the same day. We also introduced the widely used practice of ultrasound-guided therapeutic injections either with Cortisone or PRP for pain management with great success. “With shorter waiting time and specialty services such as ultrasound-guided injections, we’re able to assist local GPs and Specialists in improving their patients’ medical conditions,” Thê said. A desire for Vietnamese cuisine in the Whitsundays also drove their decision to open d’Viet House. “We missed the food that’s always so readily available back in Brisbane, especially Vietnamese restaurants. All dishes are made from scratch using fresh healthy ingredients based on authentic home recipes,” Thao said. Opening mid-December, d’Viet House will bring a taste of the orient to the streets of Airlie. This sudden loss in demand resulted in a restructure to remain operational. “Unfortunately, we had to downsize our team and change the operational side of the business. Like many other families and businesses in the region, we are yet to finalise our insurance claim, adding additional strain.” Patrick commented that it was due to the flexibility and support of his major suppliers that his business could remain operational. “Countrywide Foodservice Distributors along with our major suppliers offered a massive amount of support after the cyclone and continue to do so. They bypassed a lot of the ordering protocols to allow our team to work from mobile phones to get stock on the road in a time the community needed it most,” he said. Alongside support from Countrywide, Pat said that a group of local heroes were to thank for their dedication after the cyclone. “Local business identities, local trades and of course, our wonderful team, are to thank most for getting the business up and running so soon after the cyclone,” he said. Despite the challenging circumstances, Whitsunday Foodservice continues to supply and deliver wholesale food and cleaning products to a variety of Whitsunday businesses, from schools, hotels and nursing homes to resorts and service stations. Foodstuffs are delivered free of charge, five days per week to account customers, while members of the public can purchase directly from them at their Cannonvale warehouse, 25 Galbraith Park Drive. The warehouse is opposite Whitsunday Plaza and open Monday to Friday, 8 a.m.

IMAGINE THE MOMENT YOUR BABY WAS BORN. MONTHS OF ANTICIPATION AND PREPARATION CULMINATING IN THIS ONE MOMENT WHEN YOUR BABY BREATHES ITS FIRST BREATHE. This was the moment that Michelle and David had looked forward to for so long. They had gone through a hard labour that resulted in a caesarean section because little Paige had her umbilical cord wrapped around her neck. Fortunately the delivery went well and she stayed with her daddy for the first few minutes while the numbing wore off. Finally she was given to her mum, Michelle, and it wasn’t until she tried to breast feed for the first time that they realised something wasn’t right. Michelle and the young nurse at Mackay Hospital could see little Paige was struggling. She was trying to take the milk but brought it straight back up. After an x-ray was performed it became apparent that her Oesophagus hadn’t formed properly. This is known as a ‘toff’ baby. After just ten minutes in her mother’s arms Paige was put into a box with breathing apparatus until she could be flown by helicopter to Townsville later that afternoon. Unable to travel because of her operation earlier that day Michelle was forced to stay at Mackay Hospital while David drove up to Townsville to be with their baby daughter.

Fortunately the next day another patient had to be transferred by air to Townsville so Michelle was able to hitch a ride. Reunited with her family, it was time to focus on baby Paige’s operation and recovery. Paige went into surgery which fortunately was successful and when she came out she was paralysed for seven days. This gave her little body time to heal and her parents stayed with her every day watching as she lay attached to breathing apparatus in the intensive care ward. While Paige was at hospital Michelle and David were blessed to stay at the Ronald McDonald House North Queensland located a few minutes’ walk from the hospital. This is emergency accommodation is a charity facility dedicated to helping families of children in need of specialized medical care at Townsville Hospital. Without it Michelle and David would have had to spend a lot of money on hotels or sleep on one of their friends couches. “Ronald McDonald house were truly amazing and words can't explained how much they helped us,” said Michelle.


“They gave Dave and I a place to stay so close to the hospital we could walk to see Paige and also have that time we could go home and have a break. We stayed there free of charge and could stay as long as we would like. This is now my charity of choice that I will be helping as they change lives of so many families in need.” Michelle and David stayed for four weeks in total before they could finally take baby Paige home. Almost a year on they are planning her first birthday with all the family close by. “Paige is nearly walking now and striving in every way. The doctors are so happy with her. She is a very happy baby and we are very proud of her and she is amazing young girl. We can’t wait to see her grow even more!” “We can’t thank the Mackay Hospital and the ward at Townsville enough. The Ronald McDonald house saved us and my family and will be forever thankful.” Michelle and David recently raised $3000 to say thank you. Thirteen years ago Debbie Knight lost a friend to suicide. The day before she died she had given Debbie and many of their friends unexpected gifts and seemed fairly upbeat. These are now gestures that Debbie wished she had spotted as classic warning signs and the reason she helped start a local not-forprofit group dedicated to suicide prevention.

Suicide is the leading cause of death for Australians aged 15 to 44 and suicide is costing Australia $17.5 billion a year. Every year 370,000 Australians think about taking their own lives. One in 17 Australians will consider suicide each year. It might happen to any of us and each of us just needs to know what to do and where to go for help.

Debbie and her friends started the organisation in her lounge room and called it ‘Grapevine Group’ because they realised they were hearing about these tragedies through the ‘gossip grapevine’ at a time when it was too late to help. Back then there was very little media coverage to create awareness and the warning signs were recognizable but not well known. Add to this the stigma that mental health issues are incorrectly perceived as a weakness and it is easy to see why suicide has become such a major cultural issue.

The main aim of Grapevine is to increase awareness and educate our local community. When they collated the Mackay region’s list of local suicide prevention resources, they were surprised to find just how many local resources there are for suicide prevention. Their goal is to promote them and offer tools to actively help people in our community. There are two ways Grapevine initiates this. Firstly through their ‘Help-a-Mate’ cards which have so far been distributed to over 137,000 people throughout the region. Last month, during Mental Health Week, they launched a campaign called Help-a-Mate Hubs where 12 local businesses have become official collection points for the public to collect bundles of Help-a-Mate cards to distribute to their colleagues, customers, team mates, volunteers or friends. The cards list vital local suicide prevention resources.

It costs them $25 per person to be trained in safeTALK and if you have a group of ten or more a trainer will come to your location at a time that suits you. “It takes the whole community to be involved and working together to make a suicide-safe community” said Debbie. “I’m really proud of how far we have grown. I’ve had people email me thanking Grapevine. Telling us their attempt was prevented and they sought help after finding our list of local suicide prevention resources” said Debbie. Grapevine does not receive any funding from the Government but the organisation is fortunate to be the beneficiary of many local events. Living with a form of high functioning autism means Darcy has a higher IQ than most people. He loves computer games and designing worlds with his expert visualization capabilities. We met him before his Sailabilty session at the Whitsunday Sailing Club which offers locals living with a disability the opportunity to set sail on small sail boats in the bay. Two days a week Darcy is also employed at the chicken farm in Strathdickie. He loves caring for the chickens and feels a real connection with them. He also cleans the pens out and collects the eggs. When he’s not busy at work or hanging out with his friends at the Endeavour Foundation Darcy likes to play sports, computer games and bowls. The Endeavour Foundation nominated Darcy for this page as they would like to commend him for his achievements.


Don’t Let Your Dog Get Heat Stroke This Summer As North Queenslanders we have all come to love the tropical climate, but it doesn’t come without its risks to our companions. When a dog is exposed to high temperatures, heat stroke or heat exhaustion can result. Heat stroke is a very serious condition that requires immediate medical attention. Once the signs of heat stroke are detected, there is precious little time before serious damage, or even death, can occur. Dogs do not sweat through their skin like humans, they release heat primarily by panting and they sweat through the foot pads and nose. If a dog cannot effectively expel heat, the internal body temperature begins to rise. Once the dog's temperature becomes too high, damage to the body's organs may become irreversible. What to do if you suspect Heat Stroke: If you suspect that your dog is suffering from heat stroke, you must take immediate action. • First, move your dog out of the heat and away from the sun right away. • Call or visit your vet right away, even if your dog seems better. Internal damage might not be obvious to the naked eye, so an exam is necessary. • In the mean time you can apply cool water via hose or damp towels. Fan air onto the wet dog to speed cooling. N.B Do not use ice or cold water. • Offer your dog cool water, but do not force water into your dog's mouth. Preventing Heat Stroke: • Never leave your dog alone in the car on a warm day, regardless of whether the windows are open. Even if the weather outside is not extremely hot, the inside of the car acts like an oven - temperatures can rise to dangerously high levels in a matter of minutes. • Avoid vigorous exercise on warm days. When outside, opt for shady areas. • Keep fresh cool water available at all times. • Certain types of dogs are more sensitive to heat – especially the obese, young, old and short-nosed breeds, like Pugs and Bulldogs. Some dogs can recover fully from heat stroke if it is caught early enough. Others suffer permanent organ damage and require lifelong treatment. Sadly, many dogs do not survive heat stroke. Prevention is the key to keeping your dog safe in the tropics.

We took weight out through the ends to make it more manageable. Then to finish off Teighan’s hair, Kate decided to create soft smooth waves with an iron to compliment the shine. AGI ONE Agi One is a hair relaxant that deeply repairs and conditions the hair from the inside out, leaving the hair smooth with great shine. Kate is our Agi One expert and the process only took 1 and 1/2 hours, leaving her hair with incredible shine and soft ends that will last until the New Year.

MAKEUP Today Alana performed her magic creating a natural look. Teighan doesn’t wear too much make up and wants to be a role model for her children at school to encourage them to be themselves. Alana used ELES HD foundation which creates a dewy, youthful glow while still having great coverage. She then created soft brown eyes using a Mac pallet which made her eyes stand out adding soft wispy lashes for a more natural glam. To finish the natural glow, the perfect shade of inglot lip stain was used for a more natural colour which will last Teighan all night.

Make your TV sound better! Tired of struggling to hear the TV? Making some simple changes could help solve the problem. Apart from hearing loss, the biggest factor in not being able to hear the TV properly is the acoustic setup of the room your TV is in. High ceilings, tiles, concrete or polished wooden floors can make sound echo or reverberate. The more echo there is in a room, the worse sound will appear when it reaches your ear from the TV. In bad situations, even people with normal hearing can have trouble understanding what’s being said on the TV. Surprisingly newer TVs can make the situation worse. The default sound settings and the thin design of new flat screens

can affect the sound negatively. The default sound settings on new televisions are set to provide a surround sound experience like in a movie cinema. To do this the graphic equaliser is set to emphasise the bass frequencies. These are the pitches where all the music and background noises such as explosions, car engines, trains, the roar of jet engines and more are. Most speech sounds sit in the mid to high frequency areas, which are not presented well by default settings on surround sound systems. The frequencies that are most susceptible to echoing are the mid and high frequencies.

High-pitched sounds rebound off objects, which means the music and the background noises sound great because the low-frequency signal reaching the ear is quite pure. Once we get to the mid and high-pitched speech sounds they sound terrible as they are bouncing all through the room before getting to your ear. Add a hearing loss on top of this and it may be almost impossible to watch a movie. Changing the acoustics of the room will make a big difference to your TV sound. Having carpeted floors, soft furnishings or even hanging a rug on the wall will soak up sound and stop the high frequencies from bouncing around and distorting what you hear. If you do have hard floors, lay a rug between the

television set and the viewing chair to stop the echo off the floor. You should also change the sound settings on the TV or surround sound system. By reducing the bass and increasing the treble you’ll decrease the background noise and music and increase the volume of speech. Having sold my wedding business last year I now have more time to enjoy with my family and friends in this beautiful part of the world I call home.

Tell us one bit of advice you would offer your customers. “There’s no hurry when choosing glasses. Take your time, ensure they are comfortable to wear and that you are truly happy with what you’re wearing.” Why do you love working at Specsavers? “The team here is like a second family, supportive and encouraging. It doesn’t feel like work because I love what I do.” Tell us a little bit about yourself “I’m from Newcastle and moved to the Whitsundays four years ago. I have a wonderful fiancée and two beautiful children as well as a pet snake! I have an Indigenous background which is where my dark complexion comes from.”

DONNA Donna is another of the team’s friendly optical assistants who assists with pre-checks and assists customers in finding the right pair of glasses. Tell us one bit of advice you would offer your customers. “There is a wide variety of extras we can offer with glasses, including many coatings for different lifestyles; polarizing, ultraclean, reactions, drive wear and thinning.”

Why do you love working at Specsavers? “Specsavers offer a wide variety of training which I enjoy. I’ve already learned so much in three months. I also get to perform a wide range of tasks.” Tell us a little bit about yourself “I’m originally from Scotland and moved to Australia after meeting my partner, Jack. We travelled across the country in an old 70’s Ford truck with two kids, a dog and a cat. We moved to the Whitsundays in January. I enjoy meditation and yoga.” KARA Kara provides support and assistance to customers on their journey from initial eye tests to glasses and lens solutions. Tell us one bit of advice you would offer your customers. “Glasses are a fashion statement. Meet the Manager Arvid Noack HEMINGWAY’S

A

rvid is the new manager of Hemingway’s Restaurant at Abell Point Marina. With 22 years of industry experience, 12 of those being in Sydney, he brings a wealth of knowledge to the popular waterfront venue. “In Sydney I was at Café Lyon, a high street bistro and prior to that at Blue Line Cruises on Sydney Harbour. I have had a very varied hospitality career, originally being from Germany, so I am hoping I can bring a difference to Hemingway’s to see this restaurant shine. “As the restaurant forms part of the greater marina business my focus as manager is on continuous improvement and how we can set the bar higher with the restaurant offering. Ensuring we deliver a great product on a daily basis is top priority,” Arvid said. Arvid’s desire to live in the Whitsundays also fuels his outdoor passions of cycling and swimming, a lifestyle where he can spend more time with his young family rather than being stuck in city traffic. “I look forward to exploring all the local secrets, getting out on the ocean and experiencing the islands.”

Meet Ryan Hawkins, executive chef at Souths Leagues Club Mackay. He did the majority of his apprenticeship in the Whitsundays, which was a fantastic opportunity to work with a diverse range of chefs from all corners of the earth. What’s on the menu at Souths? At Souths we pride ourselves on making as much in house as possible. We do all our own butchery, crumbing, cheesecakes, filos, pies, spring rolls and fresh beef mince for burger patties. We have the highest quality bistro food we can possibly make. If I had to recommend just one thing it would have to be something off our extensive parmi menu. We build all our parmi’s on freshly crumbed chicken breast or crumbed rump steak and they are the best in town by far! Who inspires you as a chef? As a chef inspiration is as important as creativity and a big part of everyday life in the kitchen. I draw inspiration from anyone and everyone.

Sometimes you can get ideas from people you least expect. If I have to put a celebrity chef’s name to the question it would be Gordon Ramsay. He has a no-nonsense, simple, classic way about him. He doesn’t over complicate food and lets good quality produce do the talking. What do you love most about your job? It would have to be the intensity of a massive service and the camaraderie amongst the staff in the kitchen. We’re like one big family as we often spend more time with each other than our own families! What is your secret weapon in the kitchen? Where do I start!!! We have a machine called Elvis that ‘tenderises’ all of our snitzels Our newest toy in the kitchen is ‘Mr Freeze’ our blast chiller that helps make the best desserts and to maintain the highest of standards with the full food production side of our organisation.

Meet the Manager Val is originally from Europe and first came to Airlie Beach to study. He loved the relaxed, tropical lifestyle so much that he decided to stay and make the Whitsundays his home. He has been the Manager of Sorrento Restaurant & Bar for over a year now and loves meeting new and interesting people.

“I love what I do and I do it with love,” said Val. On his days off, when he’s not catching-up on sleep, Val likes to get out on the water and make the most of some of the spectacular day tours Airlie Beach has to offer. Thundercat and Ocean Rafting are two of his favourite. What is special about Sorrento Restaurant & Bar? It would have to be the friendly staff and also the amazing sunsets over the marina. covered deck and stunning marina views. There is always a great atmosphere here with live music all weekend. The food is amazing too, with fresh seafood, housemade pasta and the best pizza in town. What cocktail would you recommend your customers try? The Mango Margarita is my favourite, especially at this time of year. It is icy cool and fruity. We make it with frozen mango blended with Tequila, Cointreau, lemon juice, orange juice and sugar syrup served in a salt-rimmed glass. Do you have a funny bartending story? What do you recommend your customers try on the menu? Our Chicken Porchetta is my latest creation, simply delicious. Another favourite is our Skirt Steak Sandwich, tender and juicy, perfect when washed down with an ice-cold beer. What do you love most about being a chef? I really enjoy the creative side, discovering new flavor combinations and creating the perfect dish to add to our menu. Who inspires you as a chef? Our appreciative customers! in the Whitsundays HANZEL MARTINEZ Head Chef D’vine Catering MAXENCE GOUYER Sous Chef D’vine Catering Hanzel started working in catering around March 2017, but has been with the company since Feb 2015 as the Head Chef of Fish D’vine Restaurant in Airlie Beach. He joined the catering team to share his knowledge, giving the catering side of the business the wow factor that you would normally associate with restaurant dining. Max started working at D’vine Catering 2 months ago after working at Fish D’vine over the years. Over the last 2 months he has been busy working at a lot of different functions including mastering working on yachts. Q: What do you love most about catering in the Whitsundays? Hanzel: I love the different variety of dishes that we cater for each client. Giving that personal touch that D’vine Catering will be remembered for after their event. Also going to different venues like Whitehaven Beach, Lure, Earlando, Paradise Cove and many more areas in this Whitsunday region that has breath taking views and atmosphere that is very unique and rewarding as a chef. Max: I get the opportunity to work in a few different locations that people dream of like Whitehaven Beach and working on an 85 foot super yacht. I can’t really complain about my job! What would you recommend on the menu? Hanzel: My favourite canape is the chorizo and prawn skewer with smokey harrisa dressing. The combination of flavor, tang and heat just gives that long lasting taste that you would say to yourself I want more of that because it’s just yummy. Max: We have got a few different menus, buffet, courses and canapes. Prosciutto fillet mignon would be one of my favorite canapes.

Tell us the highlight working at D’vine Catering? Hanzel: Well, it would have to be a Lunch BBQ at Whitehaven Beach for 180 adults and kids. It was a fantastic day at the beach setting up our BBQ, marques, table and chairs with a stunning view and peaceful atmosphere. When the guests arrived they were greeted by refreshing cocktails and drinks then a luscious seafood BBQ feast. The guests quickly ate the food that we prepared for them and afterwards they enjoyed they rest of the afternoon enjoying the white sand and atmosphere of Whitehaven Beach. It was perfect. Tell us a funny moment for you? Max: I would say a day on Whitehaven Beach when we had to carry equipment from the barge to the beach in 1 meter of water. It was a challenge!

Alan Bryce is originally from Scotland where he trained as a chef before moving to Australia in 2009. He was lucky to work in an award winning restaurant for 5 years before moving onto the 5 star Marcliffe Hotel and Spa in Aberdeen where he worked for 2 years, refining his skills.

Local seafood is very popular and we also have a vegetarian section as well. We recently introduced Himalayan salt dry aged steaks from local supplier Master Butcher Whitsunday that are proving to be a big favourite with our customers. Who is your favourite celebrity chef? I have many chefs that I admire but one that has always been a favourite is Marco Pierre White

What do you love most about being a chef? It might sound strange but I love the pressure and the High intensity it brings. It’s also satisfying when you build up a strong flow of regular customers and receive positive feedback. What is your secret weapon in the kitchen? The secret weapon in my kitchen is my kitchen team. We work out of a very small kitchen providing large number of meals each week so building a strong reliable team is a must. Do you have a funny story from your years as a chef? At my previous job at the Marcliffe in Scotland, the top sports teams playing in the area, both domestic and international, would come and stay with us. The international teams would bring their own chefs, however, many of the coaches and players would prefer to order with us because thy preferred our food. This was great for our egos and annoying for the other chefs who thought they were better than us because they cooked for the famous international teams.

It’s been another busy year with plenty of events bringing people to Mackay including the amazing Elton John Once in a Lifetime concert, the Mackay Airport Beach Horse Races and the Australian Fishing Championships. As we get closer to the end of the year it’s time to think about your own travel plans for the holiday season. Did you know there are around 70 flights to Brisbane per week to choose from to get you on your way and to connect you through to other destinations? You can also fly north from Mackay to Cairns and take advantage of their international network with direct access to Singapore, Hong Kong, Tokyo, Osaka and Bali, and from December, to Guangzhou and Shenzhen in mainland China. Whatever direction you fly remember if you book your Mackay Airport Parking online and well ahead you will get the greatest possible savings. And watch out for Santa in our terminal as Christmas draws closer. When you’re coming to the airport to pick up or drop off passengers, take advantage of the first 15 minutes in the short and long term car park being free of charge. It’s a much better option than driving circuits due to the security regulations which prohibit vehicles waiting at the front of the terminal.
