Located just north of Bundaberg, 1770 is the only town in the world which has a number for a name! Lieutenant James Cook made the first landfall by a European on what was to become the Discovery Coast, and the birthplace of Queensland, on May 24, 1770. From the town of 1770 discover Lady Musgrave Island, an island cay with an internal lagoon, unique to the Great Barrier Reef. The Great Barrier Reef parallels the Queensland Coast and is accessible from most destinations. At its heart is the Whitsundays, A string of tropical islands dotted along an idyllic stretch of paradise. Mackay is one of the best places in Queensland to see a platypus in the wild. Take a day trip to Eungella National Park and watch this unique duck-billed mammal splash among the water of Broken River. Continue the journey northward for a taste of the tropics in Townsville. The cosmopolitan city combines federation architecture with an array of top restaurants and boutique shopping. Soak in the coastal vibe with a stroll along The Strand or get close to nature and cuddle a koala at Billabong Sanctuary. Off the coast of Townsville, Magnetic Island is one of the few islands you can drive to. Take your vehicle on the car ferry and explore many of its 23 beautiful bays. Magnetic Island was named by Lieutenant James Cook in 1770, when the island appeared to affect the magnetic compass on his ship. For a small island, there is much to do on Magnetic Island. Soar above the island in the Red Baron; the only two-passenger, open cockpit biplane on floats, in the world. Ride bareback into the ocean on a horse trek or discover koalas in the wild with a bush walk to historic WWII forts. The exotic rainforest meets the Great Barrier Reef and nestled inbetween these two World Heritage areas is the modern mecca of Cairns, Queensland’s most northern tropical city. Laze on a northern beach or explore the rustic artist village of Kuranda by taking a gondola ride above the lush rainforest canopy. One of the most fascinating areas to explore in Northern Queensland is the Daintree Rainforest. It is the oldest continuously surviving tropical rainforest in the world, thought to be more than 135 million years old.

A surf haven for wave riders, Byron Bay has earned its reputation as a world-class surf destination. The village is as intriguing as it is quirky, with a fascinating mural streetscape of indigenous, rainforest and psychedelic facades. Continue your journey north across the border into Queensland, where the beer is cold and the sun is hot.

Falls is a multi day camping event kicking off at the end of December in Lorne, Victoria & Marion Bay, Tasmania & Byron Bay, New South Wales. The festival brings tunes from around the globe to your frontal lobes. Bands that make you dance. Art that gets you involved, with friends that make you laugh. The Festival was created in 1993 from a campfire idea. It was on the home of Falls, the very farm at Lorne in Victoria where it is still held each year.

The foreshore at Palm Cove comes alive with the annual fireworks display at 9:00pm on New Year’s Eve!

Abell Point Marina and the Whitsundays would like to extend a warm tropical welcome to the arriving Clipper Race fleet, supporters, family, friends and visitors in January 2018.

I chose the Whitsunday Wonders tour and it was my first time on a jet ski! The

I was absolutely nervous but within no time I felt in full control of the craft and loved every adrenalin-pumping minute. Ocean Dynamics take a small number of jet skis on each tour, so the intimate experience was great for a beginner like myself. I’ve seen the Whitsunday islands many times by boat, but seeing them from the jet ski and taking time to enjoy South Molle Island were absolute highlights of this tour.

WHY DID YOU CHOOSE TO STAY AT WATERS EDGE ON THE STRAND? We are from Cairns and we have family living in Ayr so Townsville is a midway point for us, a convenient place to meet in the middle. Before booking we looked them up on Trip Advisor and noticed they had a Trip Advisor Certificate of Excellence so were confident we would have an enjoyable stay. We are so glad we chose Waters Edge because it is right in the heart of The Strand which is Townsville’s coastal tourist hub. The hotel is literally on the water’s edge! In the middle of The Strand and walking distance to the restaurants, cafes, bars and supermarket. The Strand is a well-designed recreational area with playgrounds for the kids, sports fields for the older kids, splash parks, swimming-pools, all linked together by a leisurely waterfront esplanade. WHAT WAS THE ACCOMMODATION LIKE? Our room was a sea view studio apartment and the view was just breath-taking, an uninterrupted panorama out over the stunning Coral Sea and down to the bustling street below. We had a birds-eye view of the whole parade and it made for some excellent people watching! Inside, our room was clean and comfortable. There was a soft armchair, a flat-screen T.V. and reverse- cycle air-conditioning. The apartment has a fully-equipped kitchen with two hot plates, crockery, microwave and a large fridge. The kitchen facilities were excellent and having them meant we could make breakfast and lunch ourselves and enjoy it on our verandah. This saved us a lot of money during our stay and meant we could splash out on our evening meals.

WHAT FACILITIES ARE THERE AT WATERS EDGE ON THE STRAND? Our favourite place to relax was poolside! Both families could gather together, cool down in the water and enjoy the ambience of our own private pool set amidst the tropical gardens. There is plenty of seating and it is elevated, looking out over the street and the ocean. We enjoyed many evenings outside on the deck, taking advantage of the communal bbq facilities and meeting other guests. WHAT WAS SO SPECIAL ABOUT WATERS EDGE ON THE STRAND? I loved the location best, it was so central and right on the water. The complex was also really quiet, there was a strict ‘no-party’ policy which meant we could enjoy an evening out and return to a relaxing environment and get a good night’s sleep. WOULD YOU RECOMMEND STAYING AT WATERS EDGE TO A FRIEND? Oh yes, in fact we will be back ourselves next year! The Manager, Sue, is really friendly and helpful. She will assist with booking tours and has a lot of local knowledge. Townsville is an awesome holiday destination well worth a visit!

AQUARIUM ANIMAL PROFILE: Name: ‘Lolly’’ Species: Leopard Shark (Stegostoma fasciatum) Background: Lolly was born at Reef HQ Aquarium as part of our captive breeding program, which ceased in 2014. This beautiful and approachable shark, loves the limelight, resting centre stage at the feet of divers during our daily predator dive show. Despite having never interacted with a male leopard shark, Lolly produced offspring in a process known as parthenogenesis. Her daughter, Kit-kat, also lives at Reef HQ Aquarium. Species Information: Leopard sharks are attractive and immediately recognisable with dark brown leopard-like spots against a yellow skin tone. They are a benthic, or bottom dwelling species that are most active at night. They have small teeth that crush hard bodied prey, like crustaceans. Interestingly, when leopard sharks are born they have don’t have spots. Instead, they have black and white stripes, which resemble a zebra. It is for this reason they are known as zebra sharks in other countries. Leopard sharks are more abundant in Australian waters than in other parts of their range. Due to human activities, these harmless and beautiful sharks are an endangered species.

Our Crocs are getting Frisky As the summer sun temperature rises and the wet season downpours plummet from the heavens, the rise in water temperature brings an exciting yearly phenomenon to Billabong Sanctuary. It’s crocodile breeding time. Estuarine crocodiles, more commonly known as saltwater crocodiles, begin their peculiar breeding rituals during the summer months, which we refer to as the ‘wet season.’ Courtship is initiated by the female who will entice a male with rumbling noises and presenting her neck to the male in a submissive gesture. In the wild, males strive for large territories, often swimming in the ocean between river systems to increase their chances of breeding. Male crocodiles will often breed with numerous females during mating season, and then play little or no part in parenting after that. Mating occurs in the water and is a sight often seen by visitors to Billabong Sanctuary during summer. After the deed is done, the female crocodile is ready to lay her eggs four to six weeks later. She will lay between 30 to 70 eggs at one time and create a nest around the eggs with vegetation and mud. She protects her nest aggressively and will often go with little to no food during incubation, a hefty sacrifice as usually food is at its most plentiful during this time of year. As the vegetation breaks down, the heat of decomposition helps maintain the incubation temperature of the nest. DID YOU KNOW? The incubation temperature of the eggs determines the sex of the baby crocodiles. Incubation at around 31.7 degrees produces males and slightly higher or lower temperatures produce mostly females. Hatching will take approximately three months, where the female crocodile will remain close, guarding them from predators in the wild such as feral pigs and goannas. DID YOU KNOW? When baby crocodiles are ready to hatch, they start to ‘chirp’ from inside the egg. They break open the egg with a strangely positioned tooth on the end of their snout, known as an ‘egg tooth’ to break the shell. The juvenile crocodiles remain close to their mother and communicate with each other using gentle chirping sounds, but if they find themselves in distress, they have a loud distress call to alert Mum. OUR BREEDING PROGRAM Billabong Sanctuary has a breeding programme for Estuarine crocodiles. Our crocodiles began laying their eggs earlier this season, in the beginning of December, whereas normally it has been late December. The females lay an average of 45 to 55 eggs each, which are moved as soon as they are laid to be incubated at the Sanctuary. The incubator is set at 31.7 degrees to produce all male crocodiles. If the eggs are fertile, we have about a 90 percent success rate in hatching, much higher than in the wild.

Waltzing Matilda is about as Australian as it gets and, to experience an array of wildlife by an Aussie Billabong, take a walk on the wild side at Townsville’s Billabong Sanctuary. Australia’s native animals are as weird and wonderful as they come. From the cuddly koala to the bounding kangaroo, Billabong Sanctuary lets you get up close and personal to your favourite furry, feathered and scaly friends. Billabong Sanctuary is based around three habitats; eucalypt forest, rainforest and wetlands, with a large billabong at its heart. Wetland birds come and go from the sanctuary as they please and, as you take a stroll around the lapping edge of the billabong, keep an eye out for the friendly turtles who greet you at the water’s edge. Whether you visit morning or afternoon, there are always guided shows and interactive opportunities to touch or feed many of the sanctuary’s inhabitants. If you leave Airlie Beach after breakfast and head north to Townsville, you will not miss any of the experiences as there is a 1 p.m. as well as a 3:15 p.m. crocodile feeding and also the opportunity to hold a koala both morning at 11:15 a.m. and afternoon at 4 p.m. Billabong Sanctuary is Australia’s best interactive wildlife experience! At wildlife encounters, you can pat a dingo, hand-feed a cassowary, hold a koala or hug a wombat. Get a souvenir photo for a small fee, or use your own camera. There is no charge for wrapping a python around your neck, holding a lizard or holding a small crocodile. At the all-inclusive wildlife talks, you will learn about the ecology, the habits and unusual characteristics of Australia’s unique animals. Each ranger is passionate about the welfare of the animals at the sanctuary. Their care and devotion is evident in the presentations they give. Billabong Sanctuary is actively involved in a captive breeding programme for the endangered Southern cassowary. There are only 1000 cassowaries left to be found in the rainforest north of Townsville. The Sanctuary also displays the threatened Greater bilby in a semi-arid desert habitat. One of the most misunderstood native animals in Australia is the dingo. See a different side to this magnificent creature and then pose for a photo and pat the friendly dingoes. Billabong Sanctuary has 2 star attractions when it comes to crocodiles. Bully who is the larger of the two weighing in at 750 kgs and measuring 4.5m in length. Bully arrived at Billabong Sanctuary in 2013 trapped at Halifax, north of Innisfail and due to his weight, his crate had to be transferred into his enclosure by crane. Then there is Jupiter, who is a whopping 500 kgs and 4.3m in length. Jupiter was caught off Townsville’s Strand beach in early February 2016. Estimated at 60 years of age, Jupiter has battle scars down the side of his body from confrontations with other large crocodiles. Make a day of it at Billabong Sanctuary by enjoying a coffee and meal from Blinky Bill Café or bring your own supplies to enjoy a barbecue beside the tropically landscaped pool.

Follow a Snorkel Trail There are two snorkel trails on Magnetic Island, one at Nelly Bay and the other at Geoffrey Bay. The beautiful fringing reef is teaming with colourful marine life and impressive coral gardens. White surface floats will guide you along and act as floatation resting points. The floats have letters on them which relate to the swim cards that can be bought from participating retail outlets on the island. The Nelly Bay trail is 100 metres off the beach near Base Backpackers and is a great swim for beginners. The Geoffrey Bay trail is for stronger swimmers and starts 400 metres from the beach opposite Hotel Arcadia taking you to the Moltke wreck which is also a popular underwater dive site. Make sure you stay close to the white buoys and do not swim out as far as the yellow buoys as they are baited shark lines!

My favourite dish is a hard one to narrow down but with Maggie Island prawns being the best in the world, I can’t go past our fresh seafood platter....Maggie Island prawns and Moreton Bay bugs, fresh oysters, fresh and local Barramundi, scallop served in the shell in garlic butter, Green Lip mussels in a chilli-tomato broth and our famous salt ‘n’ pepper squid...it really is amazing!!! What is your secret weapon in the kitchen? My secret weapon is no secret at all... good old German efficiency! Do it good today and better tomorrow!! A little OCD never hurt anybody... everything must be organised and in it’s place. When I go into the cold room to get something, I’ll organise the sauces so they are all colour coordinated. Weird maybe but hey, I’m a chef... we’re all a little crazy. My German accent helps to keep the place in check...people think I’m angry all the time but it’s a false perception. I just have a

Where are you from originally and what brought you to Magnetic Island? I was born in a small farming town whose name translates to “water castle”, in the mountainous state of Bavaria. After spending years working 85hrs, 6 days a week as a head chef in a busy traditional bier garden I was ready to take a break and keen to find out if there was more to life than slaving away in a kitchen. I wanted to get out of my comfort zone to a far away land and decided that Australia was the place to be and would be a great opportunity to experience many different people and cultures. What is the inspiration behind your restaurant and what makes it so unique? After cyclone Yasi destroyed the Bungalow Bay kitchen in 2011, I moved onto a new endeavour as chef at Peppers Blue on Blue Resort for the next 18 months. During this time, a close friend of mine’s mother was the landlord of a restaurant that had not been doing very well. When the restaurant closed its doors, I jumped at the opportunity to show them how it’s done and after many hours of discussion (and a few beers), I, along with my former Bungalow

There is something for everyone. We have recently added a breakfast burger, and healthier alternatives with mushroom, spinach, tomato and lots of fresh fruit. We still have the classic bacon and eggs and pancakes which are always popular. And of course our beautiful rescue koala Hagrid is the star of the breakfast.

Home Hill Rest Stop Home Hill offers a free 48 hour stop over for caravans, motor trailers and camper vans at its rest stop conveniently located on Railway Avenue, right in the centre of town. Go Diving Experience one of the world’s best adventure dives! In 1911 the luxury passenger vessel SS Yongala disappeared in a cyclone just off the coast. The vessel now sits on a sandy bed 33 metres below the surface, the top parts of the ship can be seen at 15 metres. Yongala Dive is a company that offer day trips for the adventurous, heading deep into the unknown and exploring the wreck, seeing the tragic destiny of the vessel first hand. The wreck is also is known for close encounters with bull sharks, manta rays and turtles.

Rose Bay Resort has a relaxed, casual environment and is just 5km from Bowen town centre with all the shops and amenities. An award winning accommodation provider, Rose Bay Resort offers self-contained 2 bedroom penthouses, 2 bedroom and 1 bedroom apartments and 1 bedroom studios. Soft fresh towels are provided, so is tea and coffee, kitchenette facilities plus shower gel etc. We were also pleased to discover Foxtel T.V. There is a swimming-pool on-site and lush green gardens which lead straight onto the beach. We stayed in a 1 bedroom studio which was modern, well maintained and well-equipped. Our room had a balcony looking out to sea, we could hear waves gently lapping the shore as we went to sleep at night and we woke up for a stunning sunrise that streamed across the bay.

The variety of accommodation suits any type of tourist, from couples looking for a romantic getaway to families looking for a picturesque yet affordable place to stay. Its central location, and easy drive from Mackay or Townsville make it the perfect destination for the city and dweller looking to escape. Also, because the rooms are self-contained the holiday becomes much more affordable. Guests can visit the local supermarket (two minute drive away) and get food supplies for the duration of their stay.

Historical As North Queensland’s oldest town, Bowen is brimming with history, especially at the Bowen Historical Museum on Gordon Street. The Big Mango On Bowen’s southern entrance on the Bruce Highway, keep an eye out for the famous ‘Big Mango’ at the Bowen Visitor Information Centre. An excellent photo opportunity at 10 metres tall, this mango statue is indeed the largest in the world! Bowen is famous for growing large numbers of juicy, golden mangoes. Ask at the Information Centre for the 100% Bowen mango sorbet. It is a totally healthy, utterly delicious treat!

Picturesque Lookouts and Walking Tracks To see Bowen from above, journey up Flagstaff Hill and enjoy a cool smoothie or bite to eat at the panoramic and aptly named, Three Sixty café. It’s often referred to as one of the best ocean view locations in Queensland with Whitsunday Island vistas. ACCOMMODATION REVIEW When we first arrived at BIG4 Bowen we were dazzled by the views! It really was a lovely surprise. The park overlooks Queens Bay, which is just stunning, and is right on the waterfront. We fished and took our canoe out for a paddle without even leaving the park. And we spent a lot of time just relaxing and enjoying the views. The sunsets are spectacular, especially with a glass of bubbles.

WHAT TYPE OF ACCOMMODATION IS AVAILABLE? The park has nice waterfront cabins or villas where you can sit and enjoy uninterrupted views of the bay. We stayed in a spacious two-bedroom family villa. There was plenty of room for me and my husband, and teenage daughter to spread out and relax. The cabin had everything we needed to do our own cooking and we used the BBQ on the deck a few times which was great because we could sit and enjoy the view over the pool while we ate dinner. There are also caravan and camping sites along the waterfront and others set back from the water. It’s a compact park so you are never far from the water anywhere at BIG4 Bowen.

WHAT FACILITIES ARE AVAILABLE ON-SITE? The caravanners and campers are well looked after with the lovely amenities and camp kitchen which seem to be very well set up. We poked our head in and they were immaculately clean. Our daughter really loved the lagoon pool. It was deep enough to cool off and a lovely temperature the whole time we stayed. Our daughter was also impressed with the Free WiFi. We saw some younger children riding around on pedal karts which looked like a lot of fun and we saw some kids in the games room playing foosball which would be ideal for a break from the sun or on a wet day.

WHAT ACTIVITIES ARE THERE TO DO AROUND THE AREA DURING THE DAY? There’s so much to see and do around Bowen. When we first arrived it looked like a sleepy town but then we started to explore and we were amazed at what we found. There are fantastic walks and no less than seven local beaches to wander. We discovered great coffee and brekkies at wonderful cafes that would rival any capital city. We loved the historic pubs which not only had great atmosphere but also great meals. We spent time following the mural trail. They reveal a fascinating visual story of Bowen. The waterfront is picture perfect and the waterpark is a hit with kids. We were told we couldn’t leave Bowen without trying fresh Bowen mangos and their famous mango sorbet. We were not disappointed! One of our highlights was snorkelling off the beach at Horseshoe Bay, just around the corner from BIG4 Bowen. It was so easy. And we saw two giant golden turtles swimming around the Bowen pier. Every day was jampacked. We had to come back to the park to relax!

WOULD YOU RECOMMEND BIG4 BOWEN TO A FRIEND? Absolutely! In fact, we recommended BIG4 Bowen to some caravanning friends who always head north to escape the southern winter. They called in to stay for a couple of days and ended up staying for two weeks!

But stop the search, I have found the ideal location for value-seekers! Sunlit Waters Studio Apartments provided a fabulous location for a holiday stay in Airlie Beach. What I noticed straight away upon arrival was that the location couldn’t be more perfect. It’s a short walk from the centre of town, but far enough away from the main street to be very relaxing and peaceful at night. It is a boutique accommodation provider which is perfect, it means less likelihood of neighbour disruption and less people crowding the pool!

Sunlit Waters have new owner operators, Chris and Fiona Williamson. I met Fiona upon arrival and was delighted with the personal service. My room was spacious and spotlessly clean. The bed was comfortable with great pillows, I slept wonderfully during my stay and the shower pressure was fantastic! Sunlit Waters have the ability to book a number of Whitsunday experiences and tours, for the same price you would pay at a tour desk. I saved myself the hassle of a walk into town and booked a cruise with Fiona who recommended an adventure which ended up being absolutely unforgettable. After a day out on the water, it was relieving to come back to my studio and use the laundry facilities to freshen up my clothes. I had some local seafood to cook and took advantage of the cooking facilities in my room to create the freshest marinara feast. I sat on my balcony with a glass of wine and watched the Coral Sea change colour as the sun set. I took a quick dip in the pool under the stars before snuggling under the covers. Sounds corny I know, but to disconnect from devices and get on the reef with a bunch of mates and chase glamorous sportfish, is a great way to reset my brain. I love it!

WHAT IS THE SEA FEVER GAME BOAT LIKE? The Sea Fever boat is an absolutely perfect fishing charter vessel. It handles the weather well and is custom built for Barrier Reef Sportfishing. It has everything you need; hot shower, comfy beds and enough shelter to protect you from the elements. Plenty of room in the ice box for a few frosty cold ones too of course. I usually do trips that are several days and that’s definitely the way to go. Sleeping on the reef is absolutely awesome! You can fish all day and all night if you’re keen. Considering you’re miles and miles from closest land, the boys put on a great feed too. Steak night is a treat, with all the trimmings and a juicy Rib Fillet. Fantastic!

ABOUT THE CRUISE…

We opted for a six hour cruise, allowing us to experience some of the lesser-known signature experiences the Whitsundays has to offer. We had an intimate group of six passengers and our bare boat experience came with two crew members supplied, who took us to incredible locations I had never experienced in the Whitsundays before. With the ability to cater for 35 passengers onboard, Alani is a surprisingly affordable luxury option for larger group celebrations. A highlight of our excursion was Nara Inlet, where we saw incredible Aboriginal cave paintings and beautiful waterfalls. Of course we had to spend time at world-famous Whitehaven beach, but our crew knew where to anchor and what time to visit to beat the crowds. We had a large part of the beach to ourselves while enjoying time on the stand-up paddle boards and our very own inflatable water slide! Who says you can’t have a little fun on a luxury cruise. We opted for the inclusion of canape platters, with a sublime selection of cheese, fruit and seafood. Our crew also found an exclusive location for snorkelling where we saw a beautiful array of tropical fish. It was, quite simply, a perfect way to see the Whitsundays.

HOW TO GET THERE

BEACHES AND SURF

Domestic flights arrive at Ballina Airport, a 25-minute drive south of Byron Bay, or at Gold Coast Airport, a 45-minute drive north of Byron Bay.

The northern New South Wales Coast has been a mecca for surfers for years. Why not book lessons with a surf school and you’ll be standing on the waves in no time? With seemingly endless pockets of coastline to explore, each beach has its own charm. Find one to meditate on, relax in the sun, swim, surf, kayak, paddle board or simply take a stroll along the golden sand.

By car, Byron Bay is an easy two-hour drive south from Brisbane. Regular rail services and bus companies operate into Byron Bay. Bus services from Brisbane, Sydney and other regional towns along the eastern coast provide a budget alternative to reach this vibrant destination.

ABORIGINAL HERITAGE The NSW north coast is the traditional territory of the Bundjalung people, made up of two clans. The Arakwal in the south and the Minjunbal to the north. Protection and preservation of cultural heritage and the broader environment is very important to people of the wider Bundjalung nation. Aboriginal culture tours are available to explore some of the culturally important sites throughout the Byron shire and to learn more about the Bunjalung people.

Wategos Beach, the best secret in Byron Little Wategos Beach is by no means a secret or hidden destination, as it is only a short walk from either Wategos main carpark or the lighthouse. But believe it or not, it is likely that you may find yourself to be the only person on your arrival to this gem during the colder months. There is just something that is completely unbeatable about having whales and dolphins within a stone’s throw from where you are enjoying the beautiful pristine waters and serene beach. It doesn’t matter how many times you see resident dolphins dominating the line-up and putting surfers to shame, or the whales breaching and waving at you from the water, it never gets old.

Rejuvenate at the Tree Tree Lake Lake Ainsworth, or more commonly known in the area as ‘Tea Tree Lake’, is an amazing fresh water lake located in Lennox Head which is about 15 minutes drive south of Byron Bay. Enjoy a swim in the pristine fresh water and soak up the healing energy of the Tee Tree plants that grow at the side of the lake. This is a popular spot with locals looking to escape the hustle and bustle of daily life and an excellent place for visitors to experience the amazing powers of the supernatural tee tree oil. After a good long soak you’ll come out of the lake feeling fresh and revitalised!

Climb Mount Warning Hiking Trail If you are up for a challenge in the wilderness, Mount Warning will test your skills on every level! This four hour uphill climb takes you to the summit of an extinct volcano, 1,156 metres above sea level. It is a strenuous climb but you do not need to be experienced to reach the top. The ground is rocky and uneven so make sure you concentrate as there is often loose rocks underneath and low-hanging branches overhead. It is best to leave early in the morning, preferably at dawn to escape the midday heat. Never leave in the afternoon, as you will not have time to make it down before the sunset. Make sure you take a lot of water and always take a friend. To get there, take the scenic route off the Pacific Highway to Murwillumbah and left onto Riverview Road then follow the signs to Mount Warning National Park.

Look out over Minyon Falls The view from Minyon Falls lookout is the best in the area; not only of the falls themselves, but on a clear day you might be lucky to see all the way out to the coast. From the lookout, watch the cascades flow over Minyon Falls to a deep palm-shaded gorge roughly 100m below. The tops of the cliffs are forested with Australian eucalypts, like blackbutt and scribbly gum. At the base of the falls is a beautiful natural pool that was made for swimming. Minyon Falls is a great place for a quick stop, but if you’d like to spend longer at this pretty place, there's a picnic area with plenty of shady trees, barbecues and picnic tables. There are also a couple of bushwalks that leave from the picnic area, including Boggy Creek walk, which takes you to Rummery Park campground, and Minyon Falls walking track, which takes you down to the base of the falls.

Too many to count! Working in a kitchen is full of pranks and funny stories. One that comes to mind is the chef who got tired of waiters sneaking his caramelised hazelnuts that he used for a garnish. To trick them, he made a batch spiked with very hot chillies. Let’s just say the batches got mixed up somehow and one customer got a very spicy dessert!

MEET THE CHEF

Owner & Chef at Ocean Shores Tavern

Originally from Coff’s Harbour, Gareth went to boarding school in Towoomba and remained there for his first job in the kitchen; scrubbing potatoes when he was 19. He started his family when he was young and now has two children with his wife, Gillian who works at Ocean Shores Tavern alongside him. “I love working with my wife! It forces us to be excellent communicators which works wonders for our marriage!” Said Gareth. As a younger man Gareth found himself working in the building trade but was looking for a new direction after undergoing a shoulder reconstruction. It was at this time he connected with life-long friend Chris Trask who got him back into the kitchen and inspired him to be a chef. “Chris passed away recently and I want to publically thank him for helping me find my passion and direction when I started in the kitchen. I miss the vibe sessions at 2am cooking random goat curries!” Said Gareth. Today, Gareth owns and operates the kitchen at Ocean Shores Tavern and Byron Life Magazine sits down with him to find out more.

WHAT DO YOU LOVE MOST ABOUT YOUR JOB?

I love having my own business at the Ocean Shores Tavern. I have six employees and we’ve all been together since we started 18 months ago. We are a tight group, almost like a family.

TELL US A LITTLE ABOUT YOUR MENU?

We offer the best in Australian pub grub! All our recipes are made from scratch and all our fresh produce, from our free-range chicken to our locally caught seafood and grass-fed beef, is sourced locally or from within Australia. We have regular specials and a ‘Steak Night’ on Wednesday then a ‘Curry Night’ every Thursday, which is also member’s night.

WHO INSPIRES YOU AS A CHEF?

My grandad was a chef in the army and then opened up Coles bakeries. I always remember that as a child. It was when my mum died when I was a younger though that I really started getting into cooking.

Brunswick Heads

Mullumbimby

Located 20 minutes north of Byron this friendly beachside town is famous for its long lazy river, which winds through its centre. The river is the town’s central swimming-hole and there is a road bridge crossing, which is a popular (and safe) place to jump-off into the cool waters below. It is a tidal river so make sure you go at high-tide.

With its organic, alternative vibe and distinctive lifestyle, Mullumbimby is home to some of the best free thinkers of the free world. No-one walks barefoot down the main-street quite like the locals do in Mullum!

There is also a protected bay called Torakina, which is sheltered from waves and a beautiful spot to relax. If you are looking for waves Brunswick heads has an awesome surf break too with a long white sandy beach that extends all the way to Byron Bay. When you are ready to wind-down and escape the sun, pull up a chair at one of the local cafes. If you are there on a Sunday afternoon make sure you go to the Brunswick Hotel for live music.

Mullum, as the locals call it, is a ten-minute drive in-land from Byron Bay and the lush green hinterland journey is truly spectacular. Head to Mullum for an old-school authentic hippy vibe and enjoy an organic coffee, a spa treatment or browse around some of the unique homeware stores. The town has a local charm and a unique culture. It is an in-land version of what Byron might have been like before the tourists arrived. By far the best activity there is people watching.

Bangalow Lennox Heads The surfing community from around the world flock to Lennox Head’s iconic National Surfing Reserve with its famous right-hand point breaks at Lennox Point. Go to Lennox to see some of the best local and global surfers in action and take a long walk along an un-crowded beach. Another spot near Lennox Head, which is well worth a visit, is Lake Ainsworth. This lake is bordered with cleansing tea trees and a perfect place for a relaxing swim or a kayak.

Surrounded by verdant valleys, the drive to Bangalow offers truly spectacular scenery with fertile farming land and sweeping views across the lush green hinterland and out along the coastline to Byron Bay. This is one of the best scenic drives in the region. Bangalow is a refined country town, which is quintessentially cultured with beautifully, restored federation buildings and a main street lined with boutique shops, galleries and an array of cafes and restaurants. The town is a pleasant place to spend a leisurely afternoon browsing at your own pace enjoying the cooler inland climate.
