Come together and shop local The holidays are a time of coming together, and that feels more fitting this year than most. While we have been encouraged to keep our distance and stay home, there have still been many examples of communities coming together. Whether it be supporting frontline workers with donations of PPE, supporting a neighbour who might be feeling isolated, or making masks for those who do not have one, over the past year, we have seen many ways that people have come together despite restrictions meant to keep us apart. This year it might be more important than any other to come together and support small businesses by shopping local. Online shopping is quick, safe, and easy. While there are certain brands that are ubiquitous with online shopping, local stores in Cornwall, Akwesasne and SDG have a presence there as well. The Digital Main Street project is a not-for-profit organization that has been at work in Cornwall and around the province helping small businesses setup an online presence.

The holiday shopping season is the most important time of the year for retail. It is a time when many small shops find their ledgers shift from red to black. Even businesses that might not have an online store still have options to help residents shop local safely this year. Even before he re-opened his store to the public after it was closed by the pandemic, Randy Sauve of Fantasy Realm was offering curbside pick-up service. Randy says that customers can call him up, tell him what they want, and that they will be ready for pick-up by Tuesday. For a different shop local idea that caught fire this year, let’s take a look at Mrs. B’s Gifts and Home Décor. Earlier this year, Mrs. B’s started offering their “Bring Your Own Bubble” service. Mrs. B’s allows customers to book times for themselves and their social bubble to come to their store and shop safely. Local businesses have taken up the challenge presented by the pandemic and have gone above and beyond to make sure that they are still there for their customers.

For communities like Cornwall, Akwesasne and those in SDG, businesses are always there. When there are events like a local Santa Claus parade, businesses can often be seen either on a float, or maybe as a sponsor, or maybe they’ve provided in kind services like Christmas lights, candy canes, or hot chocolate. When there are fundraisers for local nonprofit organizations, local businesses are often seen leading the charge of support there too. The United Way of SD&G holds their fall fundraiser every year, and every year, local businesses pitch in to offer support. Pommier Jewellers in Cornwall always creates a beautiful angel pendant, the proceeds of which go to support the United Way. The United Way’s signature event of their fall fundraiser, their Wine and Cheese event, is strongly supported by local businesses. The event is organized by business owners, and local businesses often donate much sought-after items; the Wine Tree, built by Olsonfab is just one example. Rachel’s Kids House of Hope provides support to children and their families when they are going through some of the most difficult times in their lives. The Rachel’s Kids annual Garden Party goes a long way to build financial support for their initiatives every year, but this event would not be possible without local businesses. A big part of the fundraiser is their auction, which is filled with items donated from local small, large, corporate or franchise businesses. Every town, village, and city in the area have iconic local businesses that are a part of the fabric of their communities. The year 2020 has been a year of two stories. The first is a story of adversity, and challenge. The second story of 2020 is about communities coming together and supporting each other. For the 2020 holiday season, come together as a community and shop local.

the area. One early morning in December, as Lucy prepared to open the store, she noticed dozens of customers lined up outside. It was an unusually large crowd, especially since she hadn’t announced any big sales that week. As soon as Lucy unlocked the door, customers flooded into the store. They all headed straight for the decoration aisle. With Christmas just around the corner, I guess they want to make sure their homes look festive, Lucy thought. Strangely though, everyone seemed to be interested in only one type of decoration. Lucy watched as residents bought strand after strand of garlands. She also noticed that many of her customers were giggling and whispering to each other as they left. This is very odd, Lucy thought, but she didn’t ask any questions. She preferred to respect the privacy of her fellow citizens. However, the store owner soon began to worry that she would run out of the popular garlands. Lucy asked her young cashier to keep an eye on the shop, then she rushed to the storage room. Lucy searched and searched for the boxes of extra garlands, but they were nowhere to be found. “Where did I put them?” she wondered out loud. That’s when she heard a familiar chirp. It was Octave, the magical cardinal that watched over the town of Mount Christmas. From his perch atop a shelf, the bird cheerfully sang: “Your treasure awaits, near the skis and skates!” “Of course,” Lucy exclaimed. She’d put all the extra Christmas decorations alongside the sporting goods last year. “Thank you, my feathered friend,” she said. Lucy quickly gathered up the boxes of garlands and went to restock the shelves. By the time she headed home that evening, Lucy was tired but happy that she’d had enough supplies for all of her customers. When she pulled into the driveway, her jaw dropped. Lucy rubbed her eyes to make sure she wasn’t dreaming. “Is this my house?” she exclaimed. All the garlands she’d sold

But who put these here?” Suddenly, dozens of people emerged from behind the hedges, cheering and clapping. Right away, Lucy recognized the familiar faces of her loyal customers. “You did this?” she asked. “But why?” An elderly gentleman stepped forward and handed Lucy a bouquet of flowers. “Dearest Lucy,” he said, “since your store is celebrating its 30th anniversary this year, we wanted to thank you for your hard work and generosity. We know how much you love the holidays, but you never have time to decorate your home. So, we decided to do it for you!” “Don’t worry,” the man added with a chuckle, “we’ll come take them down for you after New Year’s Day.” As Lucy hugged each of her customers and thanked them for this wonderful surprise, Octave watched from a nearby tree, his red plumage shimmering like tinsel in the moonlight.

était une fois un concours de bonshommes de neige qui se déroulait en décembre au parc du village de Mont-Noël. Cette compétition amicale était le rendez-vous incontournable des habitants de la région, et ce, depuis des générations. Ce jour-là, la neige était d’une consistance parfaite; bien collante, elle se modelait comme un charme. Jérôme Messier était un père aimant qui élevait seul ses deux enfants : Samuel, un ado intello, et Alice, une fillette intrépide. La famille Messier souhaitait vivement gagner un prix en façonnant un bonhomme classique avec quelques touches d’originalité. Tandis que la sculpture prenait peu à peu des allures de roi des neiges, Alice remarqua que la grosse carotte qui devait faire office de nez n’était plus à sa place. Regardant partout autour d’elle, elle vit soudain un écureuil qui s’enfuyait avec le précieux légume orangé. — Reviens ici tout de suite, méchant écureuil!, hurla Alice, furieuse qu’on ait dérobé cet élément essentiel à leur victoire potentielle. C’est NOTRE carotte! Sans grande surprise, le rongeur chipeur continua sa course, trimballant tant bien que mal son encombrant butin. Spontanément, la fillette entreprit de le rattraper coûte que coûte et se mit à galoper à toute vitesse. — Alice!, cria Jérôme. Laisse tomber, il est déjà loin! Aveuglée par son désir de récupérer la carotte, elle fit la sourde oreille. Habitué au caractère impétueux de son enfant, Jérôme se lança à son tour à sa poursuite, en confiant à Samuel le soin de surveiller leur matériel. Or, Alice était étonnamment rapide et habile pour ses 7 ans. En traversant le terrain de soccer, en grimpant et en dévalant la butte à glisser, puis en slalomant entre les modules de jeux, elle parvint à atteindre le lieu de destination de l’écureuil : un tronc d’arbre percé. À genoux, Alice regarda dans l’orifice et découvrit l’animal apeuré, qui serrait le légume entre ses pattes. Derrière lui, on devinait la présence de ses petits, tout aussi effrayés que lui. La fillette entendit alors siffler une mélodie familière : c’était Octave, le sage cardinal magique qui veillait sur Mont-Noël. — Octave, cet écureuil a volé notre carotte et on en a besoin pour le concours de bonshommes de neige!, se plaignit-elle. — Oh, je vois, dit Octave. Mais manifestement, il n’avait pas l’intention de vous faire du tort; il désirait seulement nourrir sa famille.

Se retournant, Alice aperçut son père qui arrivait, tout essoufflé, et elle fonça vers lui pour sauter dans ses bras, ce qui le fit tomber à la renverse! — Vite, Papa, allons retrouver Samuel pour finir notre chef-d’œuvre!, ordonna la fillette, fière de sa bonne action. Le bonhomme de neige de la famille Messier remporta le prix « Coup de cœur du jury ». Tous trois célébrèrent cette réussite au restaurant Aux joyeux délices, où ils commandèrent leur dessert favori : du gâteau aux carottes!

Appetizers PÂTÉ BRIOCHE BITES WITH DILL PICKLE RELISH
• Level: Easy • Preparation: 20 mins • Ready in: 25 mins • Serves: 16 INGREDIENTS • 8 slices PC®Brioche Loaf • 1 pkg (150 g) PC®Country-Style Pork & Goose Pâté With Cranberry Pâté • 1 cup (250 mL) PC®Baby Dill Pickles with Garlic, drained • 1 Clove garlic • 1 tbsp (15 mL) PC®Pickled Hot Banana Pepper Rings, drained • 1 tbsp (15 mL) Olive oil • 1 tbsp (15 mL) PC®White Wine Vinegar • 2 tbsp (25 mL) PC®Dijon Mayo Sandwich Spread HOW TO MAKE • Preheat oven to 425°F (220°C). Arrange brioche in single layer on parchment paper-lined large baking sheet. Bake, flipping brioche once, until golden, 7 to 8 minutes. Let cool completely. Cut each slice into quarters to make 32 pieces total. Set aside. • Meanwhile, arrange pâté on cutting board. With knife parallel to board, cut pâté in half through centre to make 2 thin pieces. Cut each piece into 8 equal cubes to make 16 pieces total. Set aside. • Thinly slice 2 pickles; set aside. Combine remaining whole pickles, garlic, banana peppers, oil and vinegar in food processor. Pulse, stopping to scrape down bowl if necessary, until finely chopped. Set aside. • Arrange half of the brioche in single layer on work surface. Top with sandwich spread, dividing evenly. Arrange 1 cube pâté over top of each; dollop each with 1 tsp pickle-garlic mixture. Sandwich with remaining brioche. • Skewer reserved sliced pickles on each of 16 toothpicks; insert into brioche to secure.
ROQUEFORT, SPINACH AND WALNUT PASTRY BITES
INGREDIENTS • 1 tbsp (15 mL) Olive oil • 1 cup (250 mL) Diced onion • 1 pkg (300 g) Frozen chopped spinach, thawed, drained, squeezed dry and finely chopped • 2/3 cup (150 mL) Toasted walnuts, finely chopped • 1 pkg (150 g) PC® Black Label Roquefort Blue Chees e • 1/4 tsp (1 mL) Each salt and freshly ground black peppe r • 1-1/2 tsp (7 mL) PC® Black Label Herbes de Proven ce Spice Blend • 1 pkg (450 g) PC®Butter Puff Pastry, thawed • 1 Egg, beaten HOW TO MAKE • Arrange oven rack in lower third of oven. Preheat oven to 425°F (220°C). Line baking sheet with parchment paper. • Heat olive oil in small frying pan over medium heat; cook onion for 8 minutes, stirring occasionally, or until soft and lightly browned. Remove pan from heat; let cool for 5 minutes. • Combine onions, spinach, walnuts, cheese, salt, peppe r and half of the herbes de Provence in bowl. • Place puff pastry pieces on lightly floured work surfac e. Cut each in thirds. Arrange all six pieces with the long edges facing you. Divide spinach mixture evenly among pieces, placing in line 1-inch (2.5 cm) from the bottom edge and leaving 1/2-inch (1 cm) bare on each short end. Brush top edge of pastry with some beate n egg. Roll each piece firmly into a cylinder, pinching short ends to seal. • Transfer rolls to prepared baking sheet seam side down. Brush off excess flour, then brush with beaten egg. Sprinkle with remaining herbes de Provence. Bake for 25 to 30 minutes or until pastry is golden and cooked through. Transfer to serving board; cut each crosswise into eight pieces.

HOW TO MAKE • Preheat oven to 350°F (180°C). • Place coconut on rimmed baking sheet. Bake in centre of oven for 5 minutes, stirring often, or until golden brown. CITRUS AND BEET SALAD INGREDIENTS • 1 Small red ruby grapefruit, peeled • 1 PC®Organics Navel Oranges • 16 No Name®Sliced Beets, drained • 4 cups (1 L) PC®Organics Baby Spinach • 1/4 cup (50 mL) PC®Blue Menu Dressing Lemon Poppy Seed • Thinly sliced red onion (optional) HOW TO MAKE • Holding grapefruit on its side on cutting board, cut into eight slices. Repeat with orange,cutting into eight thin slices. Using 2 slices orange, 2 slices grapefruit and 4 slices of beets for each of four salad plates, arrange slices on plates in large circle, slightly overlapping them and alternating beets with citrus. • Gently toss spinach with 2 tbsp (25 mL) of the dressing. Veal Sliders with Sauteed Peppers Zesty Marinara Sauce and Jack Cheese Ingredients • 1-1/2 tbsp (22 mL) Olive oil • Half Large white onion, thinly sliced • Half Large sweet red pepper, thinly sliced • Half Large sweet green pepper, thinly sliced • 1 tbsp (15 mL) PC®Black Label Peperoncini Piccanti Hot Red Chili Peppers in Oil • 6 tbsp (90 mL) PC®Black Label Marinara Pasta Sauce • 1/4 cup (50 mL) All-purpose flour • 1 tsp (5 mL) Salt • 1/2 tsp (2 mL) Paprika • 1/4 tsp (1 mL) Freshly ground black pepper • 1/4 tsp (1 mL) Cayenne pepper • 2 Eggs • 3/4 cup (175 mL) Plain dry breadcrumbs • 6 cups (1.5 L) Canola oil • 8 oz (250 g) Veal scallopini cutlets, trimmed and pounded thin • 12 Mini Ciabatta Burger Buns • 6 tbsp (90 mL) Olive oil • 8 oz (250 g) Shredded Monterrey Jack cheese HOW TO MAKE • In large nonstick frying pan, heat 1-1/2 tbsp (22 mL) olive oil over medium-high heat; cook onions, red peppers and green peppers. Cook, stirring occasionally, for about 10 to 12 minutes or until mixture is tender and caramelized. Add peperoncini and marinara sauce; stir to combine. Remove from heat; cover to keep warm. • Meanwhile, in shallow bowl, stir together flour, salt, paprika, pepper and cayenne pepper. In another shallow bowl, whisk together eggs with 1 tbsp (15 mL) water. Place breadcrumbs in third shallow bowl. • Preheat oven to 400°F (200°C). Line rimmed baking sheet with parchment paper. Pour canola oil into large Dutch oven or any large heavy-bottomed pot with high sides; heat over medium heat until deep fry thermometer registers 350˚F (180˚C). • Dredge one veal scallopini cutlet in flour then dip into egg, letting excess drip off. Coat evenly in breadcrumbs. Transfer to a platter; repeat with remaining cutlets. • Open ciabatta buns and place on prepared baking sheet with cut surfaces facing up. Drizzle ½ tbsp (7 mL) olive oil over each bun. Bake in centre of oven for 5 minutes. Meanwhile, fry breaded scallopini in Dutch oven for about 2 to 3 minutes or until golden and cooked through. Transfer to platter lined with paper towels; pat with paper towels to remove excess oil. • Once cool enough to handle, cut scallopini cutlets into smaller portions to fit on ciabatta buns. Place a portion of scallopini on bottom half of each of ciabatta bun. Sprinkle scallopini evenly with cheese. Return to centre of oven; bake for another 3 to 5 minutes or until cheese has melted and buns are lightly toasted. Top each with onion-pepper mixture. Place ciabatta tops back on; secure each with a skewer or long toothpick
Spinach and Mushroom Naan Bites INGREDIENTS • 2 tbsp (25 mL) Extra virgin olive oil • 1 pkg (200 g) PC® King Oyster Sliced Mushrooms • 1/4 tsp (1 mL) Salt • 1/4 tsp (1 mL) Freshly ground black pepper • 1 pkg (160 g) PC® Traditional Naan Dippers Flatbreads • 1/3 cup (75 mL) PC® Spinach Dip • 1/3 cup (75 mL) Finely grated Parmigiano Reggiano cheese • 1 tbsp (15 mL) Finely sliced fresh chives
HOW TO MAKE • Preheat oven to 375°F (190°C). • Heat oil in large nonstick frying pan over medium-high heat. Once hot, arrange mushrooms in a single layer; sprinkle with salt and pepper. Cook for 6 to 8 minutes, stirring occasionally, or until golden brown. Remove pan from heat; set aside to cool for 5 minutes. Once cool enough to handle, roughly chop mushrooms. • Arrange naan dippers on rimmed baking sheet. Spread spinach dip evenly over entire surface of each naan dipper; top each with some mushrooms then sprinkle with cheese. Bake in centre of oven for 5 minutes. Transfer to serving platter; garnish with chives. Serve immediately.
Creamy Onion Cheddar Tartlets INGREDIENTS • 1 sheet (half 450 g pkg) Frozen PC® Butter Puff Pastry, thawed and chilled • 1/2 cup (125 mL) PC® Black Label Isle Of Man Extra Old Cheddar Cheese Aged 14 Months shredded • 1/4 cup (50 mL) Cream cheese, softened • 2 tbsp (25 mL) PC® Black Label Onion Cabernet Wine Jelly HOW TO MAKE • Preheat oven to 375°F (190°C). • Unroll puff pastry, leaving parchment underneath. Cut pastry into 20 rectangles; press into 20 wells of mini muffin tins to make pastry cups. Refrigerate until needed. • Stir together Cheddar cheese, cream cheese and jelly in small bowl until well combined. Divide among pastry cups. Refrigerate until chilled, about 10 minutes. • Bake until pastry is golden, 20 to 22 minutes. Let cool in muffin tins 10 minutes. Remove from tins. Serve warm or let cool completely on racks

Double-Smoked Salmon and Sweet Pea Yorkies INGREDIENTS • 1 cup (250 mL) Frozen PC® Small Sweet Peas frozen • 1/2 cup (125 mL) Fresh mint • 1/2 cup (125 mL) PC® Ricotta Whey Cheese • 1 tbsp (15 mL) PC® Creamy Horseradish Sauce • 1 tbsp (15 mL) Each grated lemon zest and fresh lemon juice • 1/4 tsp (1 mL) Salt • 1 pkg (185 g) PC® Yorkshire Pudding • Half pkg (300 g pkg) frozen PC® Double Smoked Oak-Smoked Long-Sliced • about 6 slices Scottish Atlantic Salmon, frozen
Charcuterie Pretzel Bites HOW TO MAKE • Preheat oven to 400°F (200°C). • Bring small saucepan of water to a boil. Add frozen peas; reduce heat to a simmer. Cook 2 to 3 minutes. Drain and rinse under cold water until chilled. Drain well. • Combine peas, mint, ricotta, horseradish sauce, lemon zest, lemon juice and salt in food processor. Pulse, stopping to scrape down bowl if necessary, until smooth. Transfer to small bowl; cover and refrigerate until needed. • Arrange frozen puddings in single layer on baking sheet. Bake 4 minutes. Transfer puddings directly to rack to cool completely. • Spoon pea mixture into cooled puddings, dividing evenly. Beginning at 1 short end, loosely roll up each piece of salmon to make 12 rosettes. Arrange 1 rosette in centre of each pudding.

INGREDIENTS • 2 tbsp (25 mL) PC®Mayonnaise • 1 tbsp (15 mL) Chopped fresh chives • 1 tbsp (15 mL) Dijon mustard • 1 tbsp (15 mL) Honey • 12 PC®Naturally Smoked Salami Trio (4 slices of each variety) • 12 Pretzel sticks • 2 PC®Baby Dill Pickles with Garlic HOW TO MAKE • Stir together mayonnaise, chives, mustard and honey in small bowl. Set aside. • Fold 1 salami slice into quarters; poke hole all the way through centre of folded slice using small paring knife or tine of fork. Thread folded slice onethird of the way down 1 pretzel stick. Repeat with remaining salami and pretzel sticks. • Poke hole in centre of each pickle piece; thread onto pretzels over top of salami. Arrange on serving platter with long ends of pretzel sticks facing up. Drizzle with mayonnaise mixture.

HOW TO MAKE • Preheat oven to 325°F (160°C). Line rimmed baking sheet • In large nonstick frying pan, heat oil over medium heat; with parchment paper. add almonds and cook, stirring, for 2 minutes. Reduce heat to medium-low. Stir in honey, cumin , paprika, chipotle chili and salt. Cook, stirring, for 30 seconds or until honey thickens slightl y. Scrape onto prepared baking sheet. • Bake in centre of oven for 20 to 22 minutes, stirring once, Sprinkle with sesame seeds. INGREDIENTS • 3 tbsp (45 mL) PC®New World EVOO Extra Virgin Olive Oil • 2 Oil-packed anchovies • 1/2 tsp (2 mL) Grated garlic • 1/2 cup (125 mL) PC®Black Label Panko Japanese-Style Bread Crumbs • 2 tbsp (25 mL) Chopped fresh parsley • 1 tsp (5 mL) Finely grated lemon rind • Pinch Freshly ground black pepper • 1 pkg (500 g) PC®Black Label Fiorelli Pasta • 2 tbsp (25 mL) PC®New World EVOO Extra Virgin Olive Oil • 1 Sweet red pepper, thinly sliced in 1 inch (2.5 cm) long pieces • 1 tsp (5 mL) Grated garlic • 1 pkg (400 g) PC®Raw Zipperbac Responsibly Farmed Jumbo Pacific White Shrimp • 1 tbsp (15 mL) PC®Black Label Peperoncini Piccanti Hot Red Chili Peppers in Oil • 1 jar (650 mL) PC®Black Label Vodka Pasta Sauce • 2 Green onions, thinly sliced • 1/4 cup (50 mL) Lightly packed parsley leaves HOW TO MAKE • Heat 3 tbsp (45 mL) oil in frying pan over mediumlow heat; cook anchovies 1 to 2 minutes, mashing with back of wooden spoon until they fall apart. Stir in 1/2 tsp (2 mL) garlic; cook 30 seconds until fragrant. Stir in panko; cook 4 to 5 minutes, stirring, or until crisp and golden. Remove pan from heat. Stir in chopped parsley, lemon rind and pepper. Transfer to small bowl and set aside. • Bring 20 cups (5 L) of water to a rapid boil in large pot. Add 1 tbsp (15 mL) coarse salt. Add pasta, stirring occasionally until water returns to a boil. Cook 8 to 10 minutes until tender but firm. Drain and return to pot. • Meanwhile, heat 2 tbsp (25 mL) oil in large frying pan over medium-high heat; cook red pepper and 1 tsp (5 mL) garlic 2 to 3 minutes or until tender-crisp. Stir in shrimp and peperoncini; cook 2 minutes, stirring, or until shrimp start to curl. Add pasta sauce; cook 2 to 3 minutes or until sauce is bubbling and shrimp cooked through. • Pour sauce over drained pasta. Add onions and parsley leaves; stir to combine. Transfer to serving bowl. Sprinkle panko mixture over top.
BEEF TENDERLOIN WITH ONION CABERNET SAUCE INGREDIENTS • 2 tbsp (25 mL) Olive oil • 2 tsp (10 mL) Salt • 1 tsp (5 mL) Freshly ground black pepper • 1 Beef tenderloin (about 990 g), trimmed • 1 tbsp (15 mL) PC®Black Label Onion Cabernet Wine Jelly
• 1/4 cup (50 mL) PC®Black Label Normandy Style Unsalted Cultured Butter • 1-1/2 cups (375 mL) Minced shallots • 1 tsp (5 mL) Chopped fresh thyme • 1/2 cup (125 mL) Beef broth • 1/3 cup (75 mL) Brandy • 1/3 cup (75 mL) Red wine • 1/2 tsp (2 mL) Cornstarch
HOW TO MAKE • Preheat oven to 375°F (190°C). • In medium roasting pan, heat oil on stovetop over medium-high heat. Sprinkle salt and pepper over tenderloin and add to roasting pan. Brown on all sides, about 6 to 8 minutes total. Place in oven. Roast for 15 minutes. Brush with 1 tbsp (15 mL) jelly. Roast 5 to 10 minutes longer or until thermometer inserted in centre reads 135°F (57°C). • Transfer roast to cutting board; tent loosely with foil. Place roasting pan over medium heat; add butter and cook until melted. Stir in shallots; cook for 5 to 6 minutes, stirring occasionally, or until softened. Stir in thyme, broth, brandy and wine. Stir in 1/4 cup (50 mL) jelly. Bring to a boil. Reduce heat to simmer. In small bowl, stir cornstarch into 1 tbsp (15 mL) water; stir into roasting pan. Cook until thickened, about 1 to 2 minutes. • Slice tenderloin into 3/4-inch (2 cm) thick slices; arrange on a platter. Pour some of the sauce over sliced beef; serve remaining sauce on the side.
MAPLE PECAN SPICED SWEET POTATOES INGREDIENTS • 1 Large sweet potatoes (about 2-1/2 lb/1.13 kg), peeled and sliced crosswise into 1/4-inch (5 mm) thick rounds • 1/4 cup (50 mL) Sodium-reduced chicken broth • 1/2 tsp (2 mL) Salt • 1/4 tsp (1 mL) Black pepper • 3 tbsp (45 mL) PC®Black Label Pure Maple Syrup • 2 tbsp (25 mL) PC®Black Label Normandy Style Unsalted Cultured Butter • 1 tsp (5 mL) PC®Black Label Peri Peri Spice Blend • 1/3 cup (75 mL) Coarsely chopped raw pecans HOW TO MAKE • Preheat oven to 400°F (200°C). • Arrange potato slices vertically in 9-inch (23 cm) pie plate, packing in rows to fit. Pour in broth; season with salt and pepper. Cover loosely with foil. Bake until slightly softened, about 45 minutes. Remove from oven. • Stir together maple syrup, butter and peri peri spice in small bowl; brush half of the glaze onto potatoes. • Bake, uncovered, until potatoes are golden and fork-tender, 15 to 20 minutes. • Stir pecans into remaining glaze; sprinkle evenly over potatoes. Bake, uncovered, until pecans are fragrant and toasted, about 10 minutes. Remove from oven; let cool 10 minutes before serving.

DEVON CREAM MERINGUE NESTS WITH CHOCOLATE AND PISTACHIO INGREDIENTS • 1/2 cup (125 mL) 35% whipping cream • 1/2 cup (125 mL) PC®Devon Custard • 1 pkg (100 g) PC®Meringue Nests • 1/4 cup (50 mL) Shaved PC®70% Cocoa Solids Dark Chocolate • 1/4 cup (50 mL) Chopped pistachios HOW TO MAKE • Whip cream in chilled bowl. Add custard; whip until soft and fluffy. • Fill each nest with a dollop of cream mixture, about 2-1/2 tbsp (32 mL). Top each with a sprinkle of chocolate and pistachios.

STICKY DULCE DE LECHE APPLE CAKES
CRÈME CARAMEL
INGREDIENTS • Caramel: 2/3 cup (150 mL) Granulated sugar • Custard: 1-1/3 cup (325 mL) 2% milk • 1 cup (250 mL) 35% whipping cream • 4 Large egg yolks • 3 Large eggs • 1/2 cup (125 mL) Granulated sugar • 2 tsp (10 mL) PC®Black Label Madagascar Bourbon Pure Vanilla Extract • 1/4 tsp (1 mL) Salt HOW TO MAKE • Preheat oven to 325°F (160°C). Place eight 3/4-cup (175 mL) ramekins in roasting pan. • Make Caramel: Combine sugar and 1/4 cup (50 mL) cold water in small heavy saucepan, stirring to dissolve. Cover and bring to a boil over medium heat. Uncover; cook without stirring for 5 minutes or until syrup turns amber colour. Immediately remove from heat and pour evenly into ramekins, swirling to coat bottom. Let cool completely. • Make Custard: Heat milk and cream in saucepan over medium heat until steaming and tiny bubbles appear along edge; remove from heat. Whisk together yolks, eggs, sugar, vanilla and salt in bowl. Whisk in 1/2 cup (125 mL) of hot milk mixture until combined. Whisk in remaining milk. Strain though fine mesh sieve into large glass measuring cup. Using spoon, remove excess bubbles on surface. • Pour custard mixture into ramekins, dividing evenly. Remove one ramekin to make space; pour in boiling water to come halfway up ramekins. Place ramekin back in pan. Cover pan loosely with foil. Bake for 30 to 35 minutes or until barely set with slight jiggle at centre. Transfer ramekins to rack; cool to room temperature. Refrigerate for 2 hours or until chilled. • To serve, run sharp paring knife around edge of one custard pressing side of knife against ramekin. Hold serving plate tightly over ramekin and quickly invert, gently shaking ramekin to release custard. Repeat with remaining custards.
INGREDIENTS • 1/2 cup (125 mL) PC®Unsalted Country Churned Butter • 1 cup (250 mL) Granulated sugar • 1/2 tsp (2 mL) Salt • 1 Egg, at room temperature • 1/2 tsp (2 mL) PC®Pure Vanilla Extract • 1 cup (250 mL) All-purpose flour • 3/4 tsp (4 mL) Cinnamon • 1/4 tsp (1 mL) Baking soda • 1/8 tsp (0.5 mL) Cloves • 3 cups (750 mL) Finely diced, peeled tart apples (such as Jonagold, Empire or Mutsu), about 3 or 4 • Brandied Toffee Sauce: • 1 jar (450 g) PC®Dulce de Leche Caramel Creme Sprea d • 1/4 cup (50 mL) 35% whipping cream • 2 tbsp (25 mL) Brandy HOW TO MAKE • Preheat oven to 350°F (180°C ). Spray eight 1/2 cup (125 mL) ramekins with cooking spray; place on rimmed baking sheet and set aside. • In bowl of stand mixer fitted with paddle attachment, beat butter, sugar and salt on medium speed for 2 to 3 minutes or until light and fluffy. Beat in egg. In another bowl, sift together flour, cinnamon, baking soda and cloves; add to butter mixture and beat on low speed just until combined. Remove bowl from mixer. Using wooden spoon, stir apples into batter. Mixture will be very chunky and will just barely hold together. Divide batter among ramek ins, using about 1/3 cup (75 mL) per ramekin. • Bake in centre of oven for 30 to 35 minutes or until golden and skewer inserted in centre comes out clean. Let cool for 10 to 15 minutes in ramekins. • Meanwhile, make Brandied Toffee Sauce: In small saucepan, combine dulce de leche, cream and brandy. Heat over low heat just until warmed and a pourable consistency. Do not boil. • Invert cakes onto individual serving plates. Spoon 2 to 3 tbsp (25 to 45 mL) warm sauce over each cake. Let sit a few minutes before serving warm. Serve with unsweetened whipp ed cream and addit ional sauce, if desired. Refrigerate leftover sauce for another use.

Add sparkling beverage; gin and ice cubes; stirring to combine. Divide among 4 chilled cocktail glasses. Slice remaining 2 lime circles in half to make 4 lime semi-circles to garnish along with small basil leaves.

Skating The City of Cornwall offers up to a dozen outdoor rinks in neighbourhood and community parks. A short drive to Countryside Adventures in Moose Creek offers double the fun – with both skating and tubing! Skiing Big Ben Ski Centre is the perfect place to learn, or re-learn how to downhill ski and snowboard. You can enjoy the scenery on cross country skis at Guindon Park, Summerstown Trails and the Upper Canada Bird Sanctuary.
Hiking & Snowshoeing Breathe the crisp air and enjoy the views across the kilometers of trails available at Lamoureux Park, Gray’s Creek, Guindon Park, Summerstown Trails, Upper Canada Migratory Bird Sanctuary, and Glengarry Trails. Ice Fishing Relax and drop your line at the historic Hoople Creek and take part in the 2,000-year-old cold weather practice. Rudolph the Red-Nosed Reindeer Had a very shiny nose And if you ever saw it, You would even say it glows. All of the other reindeer Used to laugh and call him names They never let poor Rudolph Join in any reindeer games. Then one foggy Christmas eve, Santa came to say, “Rudolph with your nose so bright, Won’t you guide my sleigh tonight,” Then how the reindeer loved him, As they shouted out with glee: “Rudolph, the Red-Nosed Reindeer, You’ll go down in history.”
