Group makes pitch for Benson Centre expansion at city hall TODD LIHOU todd.lihou@tc.tc

CORNWALL, Ontario – City council gave some tacit support to a plan that would add a gymnasium component to the Benson Centre in Cornwall at a cost of millions of dollars. While councillors are a long way from approving such a move, and await a report on the specifics of a plan that would require private sector and senior government funding to see to fruition, they want to see more discussion. “I tend to favour improving infrastructure when it will help people be more active,” said Coun. Bernadette Clement. “In the last term I led the charge on adding a gym to the Benson

Centre and the former council was having none of it. “The reasons at the time is that it was in competition with the private sector.” Those concerns seem to have evaporated and the group that wants to see the gymnasium component added are suggesting there is a waiting list of people and groups who want to see added space for basketball, badminton, squash and soccer. “The Benson Centre has evolved into the meeting place for families in Cornwall. This has been a great project for the city,” said group spokesperson John Dilabio. “We think by expanding this facility we’ll be looking at …ser-

vicing the needs of those families.” Dilabio suggested rental fees charged by the city to use the facility would be enough to cover operating costs. He also said petitioning the federal government for funding is a must when it comes to construction. “This doesn’t happen without upper levels of funding,” he said. “We’ve started with a concept and we’d like to work with city council, but more importantly administration…to come back to council with some strong recommendations.” Some have suggested it could cost $3 million to build the gymnasium component. There is still several hundred thousand

dollars left in a city account that was created during the fundraising component of the Benson Centre construction. Dilabio said that money could help offset the construction of the soccer field component to the Benson Centre, but that gymnasium construction would have to be covered by a completely different funding scheme. When it comes to annual operating costs Dilabio maintains rental fees will offset those figures. “From everything I have been shown so far, I do not see this being a problem,” he said. “I believe the people that use facilities should be paying for the facility.”

CORNWALL, Ont. – The annual Cornwall & Area Pop Event is back and it’s bigger than ever. Organizers Randy Sauve and Carol Grant told Seaway News last year’s inaugural edition saw more than 3,500 visitors and with the increase to a two-day convention, the ‘super couple’ expect to attract a few thousand more con-goers to the Benson Centre on April 23-24. “It’s time to get you C.A.P.E. on, Cornwall,” said Sauve, owner of Fantasy Realm. “These outside exhibitors, guests, and the people that attend will all be spending their dollars right here in our city.

They will eat here, stay here, and hopefully shop here as well.” Sauve and Grant are encouraging local businesses and entrepreneurs to incorporate the event in their products and services. Organizers suggest a C.A.P.E.-uccino or a superhero-themed burger for restaurants, while retail outlets could display their comic-inspired merchandise with convention posters. The event features elements of the larger ComicCon and pop culture shows held in cities such as Ottawa, Montreal, and Toronto, with celebrity guests, artists, authors, guest vehicles, and more than 100 exhibitors. Major guest announcements include: Clerks

movie cast members Brian O’Halloran, Marilyn Ghigliotti, Scott Schiaffo, and Ernie O’Donnell; AMC’s The Walking Dead cast members Steve Coulter, Coleman Youmans, and Chris Harrelson; as well as six Star Trek Original Series guests including BarBara Luna, Michael Forest, Sally Kellerman, Louise Sorel, Sean Kenney, and Beverly Washburn. city’s infrastructure manager, who added the full complement of city street lights will be replaced by the end of the year. He said the energy savings from switching to LED, coupled with a significantly lower maintenance cost, will result in operational savings that will offset the cost of financing the massive project. An old sodium vapour light would typically have to be replaced after six years. LED lights can last as long as 20. “There’s a lot more light than shines down on the road,” St. Marseille said. “There’s less light scatter into the sky. “Everyone is going in this direction. It’s the way to go - even in your home.” St. Marseille added the city is also replacing traffic lights too. It completes a replacement at about two intersections a year. Heavily-travelled streets in Cornwall, including many bus routes, have already had their street lights replaced.

No way to make money off infected ash trees: city TODD LIHOU todd.lihou@tc.tc

CORNWALL, Ontario - A plan to make money off trees infected with a parasitic insect have been scuttled. There was some hope at city hall that trees infected with the Emerald Ash Borer, an insect that is spreading like wild fire across this part of the country, could be chopped up and sold for firewood. But a report going to city hall Monday night suggests splitting and drying the wood would actually cost more in the long run.

“The Parks and Landscape Department currently does not have the equipment to split the infected ash wood, nor does it have a secure area to store the wood until such time that it can be sold,” Jamie Fawthrop, parks and rec manager, said in his report to council. “Municipalities that had experience with this disposal method advised city staff that their costs to process the infected ash wood to make it suitable for sale as firewood exceeded the revenue that was generated by its sale.” During the 1998 ice storm downed trees were chopped up and wood was sold, generat-

ing nearly $50,000 for the local United Way. But Fawthrop points out that the federal government covered the labour costs associated with the clearing of the trees by way of an emergency grant. “Had the costs to process the wood not been covered by this federal grant, this method of disposal would not have generated a profit,” he added. Instead, the contractor who is removing infected city-owned trees is responsible to cut the trees into 14- to 16-inch lengths and deliver the cut wood into a designated bin located at

Optimist Park where residents may obtain the cut wood for no charge. All ash tree removals, stumping, replacement planting, and treatment injections are being completed by contractors retained through the city’s tendering processes. In 2015, under this management program 468 ash trees were treated, 550 trees were removed, 258 stumps were removed, 330 replacement trees were planted. The emerald ash borer lays its eggs within ash trees, and the larvae feeds on tree nutrients, eventually leading to death.

SD&G OPP said the ATV was traveling north on County Road 16 near South Mountain when it collided with a northbound tractor trailer going in the opposite direction just south of County Road 3 at around 5:41 p.m. The ATV operator, Bradley Tinkler of the Township of South Dundas, was pronounced dead at the scene. The driver of the tractor trailer was a 39-year-old man from Ottawa. He sustained no injuries. The crash is under investigation. Provincial police said it is considering alcohol and speed as factors and that charges are not expected.

Kids racing against drugs More than 1,000 local Grade 6 students are learning about the dangers of drug abuse this week at the Cornwall Armoury. The 19th annual Racing Against Drugs program is welcoming the students to hear from health-care professionals and law enforcement types about living a healthy lifrestyle. RCMP Const. Jean Juneau, a long time organizer of the event, said the message is resonating with students.

“The students are very excited and very happy,” he said. “They come prepared, because in school teachers are giving them this message too. But here they get a little extra.” Cynthia Lord, a member of the Akwesasne Mohawl Police Service who helped chaperon a collection of 18 students from the First Nation, said students are receiving an important message. “They’re really paying attention and getting a good message,” she said.

Trench Town Oddities and Toronto-based The Cardboard Crowns have announced a coheadlining spring tour, with shows across New York and eastern Ontario. CORNWALL, Ont. – The annual Kinsmen Music Festival gave local youth a chance to shine - and the results were blinding. Nearly 1,200 students passed through Aultsville Theatre during the 62nd edition between April 5-10. Event coordinator Jane McLaren said the festival is a longstanding tradition established by the Cornwall Kinsmen Club to encourage and foster the development of creative expression in schools. “The festival keeps growing and growing,” said MacLaren. “And it’s thanks to the commitment of the Cornwall Kinsmen Club. They started the event to support arts and music in schools, which is a critical component of a well-rounded education. The Cornwall Police Association and members of the Cornwall Community Police Service have teamed up with the eatery for a two-day event on Monday (April 18) and Monday (April 25). “We’re (CPA and CCPS) beginning to raising funds for a new softball and slo-pitch facility for the City of Cornwall, an initiative that will be presented to the city in the near future ,” said Sgt. Dave MacLean, president of the CPA. “Fundraising is beginning now so the city sees that this is a serious idea and project to consider over the next few years. Current softball diamonds are booked, worn, or too small for some of the leagues operating in the city.” From 4:30 p.m. to 7:00 p.m., police will greet and serve event-goers on both dates. CORNWALL, Ontario - Dozens of people were moved to tears at a gala focusing on the plight of children with cancer as they heard the story of two little boys afflicted with brain tumours. One little fellow is making incredible strides to defeat cancer, and sadly another has succumbed to the disease. Jesse McDonald told the hundreds in attendance at the Masquer-Aid Ball for Candlelighters that her son Kohen Paschek was one year ago diagnosed with an aggressive brain tumour that doctors expected would end his life. He was only two at the time. A year later, thanks to the perseverance of his parents and the good work done by health care professionals, Kohen is free of the disease, though there it is likely the cancer will return. “He did it all with a smile,” McDonald said of the reams of chemotherapy, radiation and

other treatment he endured. “Kohen was up against two per cent odds. “We’re still in shock we find him here in our lives and we try our best to live day to day.” McDonald was joined during her speech at the event by Britney Trulove, a Cornwall area mom who lost her son Alexander Lazore just a week before Christmas to a brain tumour. The ladies lit a symbolic candle during the night as a tribute. Cherly Tourangeau, whose own son Alex is in the midst of battling leukemia, thanked the people of Candlelighters, an agency founded to advocate on behalf of and support families with a childhood cancer diagnosis. “They have allowed (children) to have some sense of normalcy,” she said of the agency that provides things like event tickets, iPads and financial assistance for families. “Candlelighters is there to help.” The Masquer-Aid gala expected to raise between $15,000 and $20,000 for Candlelighters. “My Purple Wig is a drama with humourous, sentimental and surprising moments about a family facing a medical crisis which has become the elephant in the room because they have never really sat down and talked about it,” said Katie Burke, the play’s director. ST. ANDREWS WEST, Ont. – Canoes took off in a rush down the Raisin River in an annual race that runs as deep as the water itself. In total, 319 paddlers in 177 canoes braved the frigid waters and challenging rapids at the 44th annual Raisin River Canoe Race, which takes participants through Martintown and on to Williamstown: a total distance of over 28 kilometers. A few weeks ago, it was looking like the race would miss the peak flows the paddlers like for fast conditions, but organizers got an odd handout from Mother Nature. “The snow storm last week was a blessing in disguise,” said Phil Barnes, assistant race coordinator. “Combined with the light drizzle, the fresh snow melt, raised the water levels of the Raisin River almost a meter.” The 30-km course, which runs from St. Andrews West to Williamstown, has a reputation for being the longest canoe race in eastern Ontario. But avid participants and spectators are more familiar with its contrasting duality. What starts as a peaceful paddle down the river, quickly escalates into an exciting rush as the course dips through the Devil’s Chute, rapids, and the dreaded Shoot the Dam, as it makes a turn for one more exciting twist at the McIntyre Rapids. Throughout several points in the course, people of all ages lined up against fences, leaned over bridge railings, and stood along riverbanks to get the best view of canoeists and kayakers. Race day conditions saw flows of 18,000 Litres per second; more than double that of last year’s race. The fastest time down the river belonged to the tandem of Harold Walker and Pierre Brault, from the Ottawa region. Their time was 2 hours, 32 minutes and 5 seconds. The pair were the runners up last year. The better conditions helping them shave nearly 15 minutes off their previous effort. In the high school category, Char Lan and La Citadelle tied for the most number of participants.

sidered accurate by some. Now we’re talking about a highly controversial project that could cost as much as $600,000 the first year, with operational costs that will only go up from there. The voters need to weigh in on this – there’s too much at stake to let politics rule the day.

BENSON CENTRE EXPANSION After weeks of behind-the-scenes maneuvering proponents of an expanded Benson Centre made their pitch Monday night. My favourite part was when the cost of such a project had to be (almost)pried out of the presenters. John Dilabio, a very smart man who was instrumental in getting the new (and very successful) Cornwall Curling Club built, suggested the cost of such an expansion would be about $3 million. A true cost is being put together now by experts. Dilabio got around to adding that number to Monday’s presentation only after being put on

the spot by council. A $3-million price tag is something you should be upfront about, not kept under wraps for fear of getting “bogged down” as Dilabio put it. No one is suggesting the wool is being pulled over our eyes, but at the same time as we are talking about the benefits of such an expansion, we should be talking dollars too. Much of the construction cost is expected to be borne by the private sector and senior levels of government. We should also take a serious look at how much the operational cost of such an expansion will be over time. While I wish project proponents well, to suggest the expansion will remain revenue neutral forever because rental/user fees will cover costs is just something I can’t swallow. Of course there will be a cost to taxpayers… there always is. The big question is ‘Are we prepared to live with those extra costs?’ Tune in later when we start to get some hard numbers.

As my buddy Bill Kingston rightly pointed out Monday night: “If only people were as passionate about the city budget and taxes as they are about fluoride.” The council chambers at city hall were jammed Monday night as opponents to the return of water fluoridation in Cornwall took centre stage at a meeting that stretched on for nearly three hours. While one could fire a cannon in the same room during budget deliberations and barely wound a couple of elected officials, Monday night’s full house suggests to me the issue of fluoride in our water is starting to gain traction with an electorate that is often as quiet as a mouse. The good news is Dr. Paul Connett, a university professor and expert in toxicology, made several solid points about the dangers of fluoride and how wasteful it can be to use the controversial product in our water. The bad news is it probably won’t do any good, because fluoride is likely on its way back to your water if the majority of council has anything to say about it. Some councillors, like Andre Rivette, have made it well-known which way they are going to vote on this issue in the coming weeks (the council veteran is all for fluoride) but many are choosing their words carefully for fear of tipping their hand. Behind the scenes minds have been made up, and there isn’t likely to be enough support to keep dangerously-corrosive hydrofluorosilicic acid (which is used to create fluoride in the water) from being used at the treatment plant in Cornwall.

But there is another option which would cost a pittance (relatively speaking) and take the decision away from councillors and put it firmly in the hands of more important people – you. For the low, low price of $10,000 a referendum could be held the same day as voters go to the polls in the next municipal election. A referendum prior to that date will cost the city as much as $150,000, but with all the infrastructure and support personnel already in place for voters electing the new council, the cost drops significantly. So, in just two years, voters could decide for themselves if they want fluoride returned to our water supply. The pros far outweigh the cons on this one. First of all, city councillors fearful of a backlash from voters (Mayor Leslie O’Shaughnessy correctly pointed out there will be no winners regardless of how council votes) can sit back and let the electorate decide how to proceed. We’ve been without fluoride for nearly three years, so waiting another two years for election day isn’t going to hurt. And in that time we can get a true cost of what a return to fluoridated water will mean for the municipal bottom line. Some figures released by the city suggest it will cost about $350,000 to upgrade the water treatment plant with the necessary safety equipment to bring fluoridation back online. That’s not including $50,000 a year in operational costs and about $40,000 to remove the 15,000 liters of hydrofluorosilicic acid still sitting in a vat at the plant. But the real numbers, I’m told, are quite a bit more. Unofficially the cost of the safety equipment has already ballooned to $500,000. The $350,000 figure bandied about at city hall is about two years old and not really con-

Turns out about 32,000 of the jobs have been short-term, mostly 12 to 24 month construction jobs. Meanwhile, hydro bills have skyrocketed with no end in sight. Studies in Spain and Denmark found that for every job created by windmills and solar panels, two are lost in other sectors of the economy. IN THE REAR-VIEW MIRROR According to a story in the Chicago Tribune, Baby Boomers eager to buy back a slice of their childhood are re-acquainting themselves with board games that they played while growing up. This was life as it was before video and computer games. The grand-daddy of board games was, and still is, Monopoly. Others included Chinese Checkers, Snakes and Ladders, Parcheesi, Tic-tac-toe, Scrabble, Concentration, Sorry and Crokinole which has been called a table top version of curling. Then there was the Ouija board game that could scare the jeepers out of those who dared play it. We had card games called Old Maid, Go Fish and Uno. Oh, then there was that game called spin the bottle. ... In the early hour of July 31, 1953, most of the 37 passengers on the Colonial Coach Lines bus rumbling east on Highway 2 were asleep when without warning it slammed into a stalled panel truck on the side of what was in the pre-Seaway days the main highway between Montreal and Toronto. The violent impact sent the bus out of control. It plunged down a 20-foot embankment and into the Williamsburg Canal, sinking in 20 feet of water, two miles west of Morrisburg. It became one of Canada’s deadliest bus accidents. Twenty of the passengers drowned. In an odd twist, Ontario Provincial Police charged driver Lorne Chesebrough, 28, of Kingston with dangerous driving. He survived with serious injuries and was taken to Cornwall General Hospital. Police also charged the driver of the stalled truck, Max Roodman, 40, of Toronto, with manslaughter. Three months later the charge against the bus driver, who spent weeks in hospital, was dropped. Other truckers who passed the stalled truck just before the crash reported that the vehicle didn’t have lights on. One said he came close to hitting the truck part of which was on the highway. One survivor, Ronald Mortished, 62, told The Canadian Press that after the bus plunged into the canal it quickly began filling up with water. He escaped through a window that was pushed out by another passenger.

He called it a “grim, nerve-shattering experience which I shall never forget.” “I came to the surface and saw other people milling about in the water and shrieking,” the man, visiting Canada from Ireland, said. In the dim early morning light he could see the canal bank. He said he barely made it to the bank where two nearby residents pulled him from the water and took him to a farm house. Five hours after the crash divers had recovered 10 bodies from the floor of the canal. The other 10 bodies were found inside the bus after it was pulled from the water. All were crowded in the front. The bodies were taken to a Morrisburg funeral home. It took several days for some of the victims to be identified. HERE AND THERE The Weather Channel is reporting, from the usual reliable sources, that Wiarton Willie, who back on Feb. 2 said we would be mowing our lawns and basking in the warmth of spring by this time, has entered the witness protection program. ... According to 2015 statistics released by Cornwall Police Service, crime has taken another drop in the city. If the downward trend continues, crime could be eliminated by 2025. This could be the solution to rising policing costs that have been labelled unsustainable. THIS AND THAT Remember when the Hon. D. McFibber said spending billions on building and maintaining windmills and solar panels would create 40,000 jobs in the province and reduce electricity costs for businesses and residents? Well, we should have read the fine print.

April is Daffodil Month, a time when the Canadian Cancer Society raises awareness of the disease and seeks support to find a cure. April is also Oral Health Month in Canada. Unfortunately, cancer and oral health overlap in more ways than one. Aside from a slew of other considerations, individuals diagnosed with all types of cancer have special needs when it comes to their mouth and teeth. Additionally, oral cancer itself requires regular screening by your dentist. Side effects from chemotherapy and radiation may include a burning sensation or swollen tongue, jaw stiffness, inflammation or ulceration, decreased ability to taste, bleeding gums and dry mouth. Since patients react differently to treatment, not everyone will experience the same symptoms. It’s commonly recommended to schedule an appointment with your dentist at least two weeks before starting cancer treatment. Though this can be an overwhelming time with much to do, attending a dental appointment can educate patients on how to recognize and care for potential oral complications, as well as identifying and minimizing any oral infections to avoid broader systemic infection. Some patients may require mild-tasting toothpaste or prefer rinsing with salt water if flavoured pastes or mouthwashes become irritating. Soft toothbrushes are recommended to minimize gum irritation. It’s important to

continue using flouride during treatment, to protect teeth and gums, particularly if a patient experiences dry mouth. And, wherever possible, patients should continue their regular oral hygeine program. Unfortunately, some patients experience changes in their ability to taste during treatment, which may impact eating habits. Acidic items such as citrus, vinegar, sugary and processed foods, may cause irritation. Soft, moist foods like mashed potatoes or scrambled eggs can be easier on a cancer patient’s palate. Proper nutrient and vitamin intake is important, as is avoiding alcohol and tobacco. According to the Canadian Cancer Society, approximately 4,400 Canadians would be diagnosed with oral cancer in 2015. Oral cancer may strike areas such the lips, tongue, cheeks and gums. Tobacco and alcohol are considered the most important risk factors associated with this type of cancer, but other factors include the Human Papillomavirus (HPV) and sun exposure, amongst others. Early detection is essential, so symptoms including ulcers or sores that don’t heal, lumps, growths, pain or bleeding should be checked as part of your regular appointment. Spring has sprung at the Cornwall Motor Speedway chance to win a few prizes! Work, work, work! The work being accomplished at the speedway is getting into the final phase! The sprint has started towards May 15th, cement is being poured at the bottom of the stands to enable the installation of the final 2 rows. A new fence will also be installed in the coming weeks behind the tower as the new grandstands have changed the layout especially behind turn 1. The former stands that were on top of turn 4 will become the new grand stand in the pits, they will be sitting on a new cement pad and will allow more people to sit and enjoy the races for this area. Raymond Lavergne stated that a total of 17 workers were at the speedway on this Tuesday to get as much work

Test and Tune session was added by promoter Raymond Lavergne on Tuesday, May 10th at 6:30pm all regular divisions as well as other categories are invited to come and practice, pretech and pre-registration will also be done during that evening. Admission price will determined and announced in the coming days. Track champions as well as some local series received trophies, prizes and awards during a great evening. Rick Young was the recipient of the Mitch Jock Award for his contribution to the sport over the years and Gilles Godard left with the Ron Morin Award for his efforts in helping the Cornwall racing community. Duos petits-enfants/grands-parents recherchés pour des projets télés! Balestra Productions lance un appel dans la région alors qu’ils sont à la recherche de petits-enfants et de grands-parents qui souhaitent participer à deux projets télé. Les deux projets seront tournés dans la région, sur l’un ou l’autre des côtés de la rivière. D’abord, Balsetra Productions recherche des enfants de 9 à 12 ans et un de leurs grands-parents pour Mamie & moi/Papi & moi. Il s’agit de capsules télévisées, qui seront enregistrées dans un studio d’Ottawa, en mai et juin prochain. Au total, 26 équipes seront retenues, dans la région d’Ottawa et de l’Outaouais. Ils seront contactés pour fixer une date de tournage. Il faut être disponible pour une période de trois heures. Les capsules seront diffusées sur les ondes de TFO. Il est d’ailleurs possible de voir une capsule sur la page Facebook Mamie et Moi/Papi et moi.

Les jumelles IV Pour sa quatrième saison, la série jeunesse Les jumelles, diffusée à TFO revampe sa formule. La production recrutera des jeunes âgés de 9 à 13 ans avec l’un de ses grands-parents. Des participants de l’Outaouais sont aussi recherchés pour le circuit de Gatineau. Le concept de base reste le même qu’auparavant, mais l’émission devient aussi une chasse au trésor. Deux équipes s’affronteront à chaque épisode. Ils devront se fier à leur débrouillardise pour trouver des morceaux de cartes géographiques cachés dans un village un ou quartier. Une fois le tout assemblé, la carte indiquera où est caché le coffre-fort. Le gagnant remportera 200$. Les tournages auront lieu à Ottawa, Gatineau, Rockland, Hawkesbury, Casselman, Almonte,

Le coeur sur la main! De l’engagement à l’école Rose des Vents! L’école Rose des Vents regorge d’apprenants engagés, mais elle cache aussi plusieurs élèves qui ont le coeur sur la main. Ces élèves sont impliqués à aider les autres autour d’eux; petits, grands et adultes! Certains, aiment aider chez les petits. Ces élèves aident les plus petits à s’habiller, à ouvrir leurs contenants lors du dîner et ils organisent des jeux pour les élèves de la maternelle et du jardin lors des récréations. Il y en a qui préfèrent aider les adultes de l’école comme les enseignants, les enseignantes et la direction. Par exemple, ces élèves peuvent aider les enseignantes à coller des bricolages, à afficher des travaux, à laver les tables, à faire le ménage de la classe et j’en passe! Selon moi, c’est une bonne action à faire que d’aider les autres. Dans la vie, il faut apprendre à être altruistes et engagés et, à notre école du Baccalauréat international, on apprend et met en pratique ces belles valeurs.

minutes until golden brown and crispy. Turn the breast over and cook for about four minutes over medium heat. Remove each breast from the pan and make a small incision on the bottom, about an inch deepthis helps to cook the inside of the breast more easily. Now wrap each breast in foil and place in the oven for 4 – 5 minutes, until the inside is cooked until pink in color. If the inside is still red, continue cooking for another few minutes. Remove from the oven and let the meat rest covered in foil for 10 – 15 minute. Drain the fat from the fry pan; over medium heat, add some water or stock to the pan and use a spatula to scrape the brown ‘cooked bits’ off the bottom of

the pan. Stir and then add this liquid to the Orange Sauce (continued from step # 6). To finish the Orange Sauce, add the Cointreau or Grand Marnier that was used to soak the orange julienne slices. Continue to whisk the sauce over medium heat until it reduces further. Combine the white cornflour and port together to make a paste and then add to the Orange Sauce to help thicken it further. The sauce should be rather thick in consistancy, but not heavy like molasses. To plate the dish, slice the duck breast horizontally into thin slices, pour some sauce over the top of the meat, place a little of the orange julienne slices on top of the meat and arrange a few orange slices around the side.

Ingredients • 3 – 4 duck breasts – bones removed • Salt and pepper for seasoning • Garnish • 2 oranges – sectioned with the peel cut into thin julienne pieces • 1/4 cup (60 ml) Cointreau or Grand Marnier Orange Sauce • 2 Tbsp (30 g) sugar • 1/4 cup (60 ml) red wine vinegar • 2/3 cup (160 ml) orange juice • 1 1/4 cup (310 ml) chicken stock To thicken the sauce: • 3 Tbsp port or red wine • 2 Tbsp arrowroot or white cornflour Directions re-heat oven to 360 ° F (180 ° C). To prepare the orange peel garnish, cut the orange peel into rough strips, about 1/2 inch wide. Avoid including the white pith when you cut the strips, as it has a bitter taste. Square off the edges of each strip using a sharp knife and then slice each strip into very thin julienne. Place the julienne pieces into a shallow pan of cold water, bring to the boil and blanche for two minutes (this will soften any bitter taste remaining

in the orange peel). Transfer the orange julienne pieces to a bowl and add the Cointreau or Grand Mariner on top of the orange peel; allow to soak. Now section the orange pieces: with the remaining orange pulp, slice off the very top and bottom of the orange. Using a sharp paring knife, remove each individual orange section, cutting inbetween each membrane. Place the orange slices in a bowl and cover with a bit of orange juice to keep moist while you prepare the rest of the dish. Now prepare the orange sauce: place sugar and red wine vinegar together in a saucepan and whisk over medium high heat for several minutes until the mixture turns a deep reddish-brown color. Add the orange juice and chicken stock and whisk over medium heat until the sauce reduces to about 2/3 of the orginal volume- this will take about 5 -6 minutes. Remove the pan from the heat and set aside. Prepare the duck breasts: trim the fat around the edges of each breast and score the top of each breast (the white fat part) using a sharp knife. Your knife should only slice through the fat and not puncture into the duck meat. Season both sides of each breast with salt and pepper. Cook the meat: Add a small amount of oil to a fry pan and place over a high heat. Sear the scored fat side of each duck breast first for about three

CORNWALL, Ontario - Gary Pearson never intended to win an award for taking care of his wife - it was just something he did. But the Cornwall man who nursed his late wife Joan through the trials and tribulations of multiple sclerosis was honoured just the same, at a gala in Toronto, for the tireless efforts he made to ensure her quality of life was as good as it could be, right up until last September when she passed away. “He was an outstanding caregiver for Joan,” said Karen Torrie-Racine, volunteer office manager for the local chapter of the MS Society of Canada. “He provided her with incredible caregiving so she could live independently.” Pearson said he was honoured to receive the award - officially known as the Opal Award for Caregivers - but said it was not his end game. “It was very unexpected,” he said. “But I didn’t

do this to win an award.” Torrie-Racine, who was “like a second daughter” to Joan, said Pearson, said her mentor would have been extremely proud of the award bestowed upon her husband. “She would have been thrilled.” The Pearsons always held a special place in their hearts for the staff at St. Joseph’s Continuing Care Centre that helped Joan immensely. The local MS Society office was also feted at the gala. Torrie-Racine, on behalf of the local office, accepted the Patricia O’Malley Award for help in areas of MS research.
