FROM THE EDITOR This month INSPIRED BY THE SEA

PHOTOGRAPH MATTHEW MONFREDI

I

have always dreamed of living by the sea. The closest I’ve ever come to it is owning a static caravan on the Norfolk coast when our children were small. As a family, we’d escape there at every opportunity – from Easter to October – and I loved every single minute. Our van was nestled in a small field – with 20 or so others – and it overlooked the salt marshes and big expanse of sky that imperceptibly joined with the sea on the horizon. The air was clear with that ‘salty tang’ and although the weather wasn’t always kind, it didn’t matter. I just loved the rustic, unpretentious way of life and the fact that I’d spend my days feeling healthy, carefree and alive. As we were putting this, our special coastal issue together, I was vividly reminded of those times, and the feelings of restfulness and relaxation. As a result, I’ve recently initiated discussions with my husband about permanently moving to the coast – not today or tomorrow, but sometime in the not-too-distant future. Meanwhile, I’ve devoured every article created by the HB team across these pages – from the fabulous collection of seaside homes featured on pages 47-82, to ideas on how to bring the health benefits of coastal living into your home, wherever you are (p116). I hope you’ll find similar inspiration and ideas as you flick through this month’s features, along with some much-needed escapism. And goodness knows, we all need a dream to hold on to in these challenging times!

A five-bedroom detached house in Odense on the Danish island of Funen

M

aking the move from city to country usually requires several factors to come together to create that final momentum. Up until 2003, Tine Kjeldsen and Jacob Fossum were living in a small house in northern Copenhagen, running their own interiors business – juggling work and travel with raising a young family. ‘We were at the point where we needed more room,’ explains Tine, ‘but we also wanted to cut down our commute. At the time, we were using two cars, both driving at least 40 minutes to and from work and

that didn’t make sense to us. I also knew if we were going to move, I wanted the next house to be a project – it’s a part of our interiors business I’m really inspired by.’ The property they found was an old doctor’s house on the island of Funen to the west of Copenhagen. It was built in a classic Scandinavian design and the couple fell in love with the sheer volume of space – indoors and out – as well as the beauty of the surrounding countryside. It was big enough that they would be able to work from home, at least in part, but it needed some serious attention. ‘It had been empty for two years and was crying out for someone to take care of it,’

says Tine. ‘We were keen to keep as many original features as possible – including the windows and doors that were part of its charm – but it required a lot of structural work, and we had to completely rethink how the space might work for modern life.’ A key part of the new design was changing the layout, moving walls to turn small rooms into functional areas that flowed. Several of the upstairs rooms were reconfigured to create modern suites that their children could grow into, providing them with somewhere to study and hang out. Downstairs, the plan was for spaces that all linked beautifully. Tine and Jacob hired a project manager to House Beautiful AUGUST 2020 51

‘I love the sense of space. The area surrounding the house, the endless views and the countryside’ oversee the main building work and the builders, while they continued to live and work in Copenhagen. However, they still did much of the work themselves. A traditional layer of straw-clay infill on the walls of the house had perished over the years and needed replacing. Downstairs, new insulation and underfloor heating was laid to warm what had been a very cold space. Windows and doors were renovated and rehung, though the couple decided to stick with the original roof as it was still in good condition. ‘It was February when we moved in here,’ remembers Tine. ‘The coldest winter in years and the renovation wasn’t actually finished. In

those early days, we lived in just a small part of the house, where the sitting room and dining room are located now. We had the woodburning stove and mattresses on the floor. The children were young and it was cosy so we were able to make it work while we finished everywhere else.’ The couple has decorated throughout in a deliciously soft palette, using white for the upstairs and central living area, radiating out into soft shades of grey and plaster. ‘I like faded tones,’ adds Tine. ‘They work with white and wood, and they go well together.’ They made a concerted effort to bring in as much natural light as possible, with plentiful

windows and glazed doors throughout. The upstairs floors have been painted white with a satin finish ‘to make it a little bit more like summer’. And, as night falls, candlelight creates a warm and inviting feeling. The practicalities of heating a house of this size in the Danish climate present a challenge. ‘Originally, the only form of heating upstairs was a number of small fireplaces,’ says Tine. ‘It’s a romantic idea, but it doesn’t work with small children.’ The house now runs on oil central heating, but it’s something the couple would like to change soon, and they’re looking at biomass boilers and ground-source heat pumps as environmentally friendly alternatives. years ago, they took the decision to replace the windows and they intend to upgrade the roof insulation too. It is worth the investment as they plan to stay here: ‘I couldn’t imagine living anywhere else,’ says Tine. ‘While I absolutely love the idea of starting a fresh project – build a new kitchen, bathroom and redecorate everything – we do that at work. We have new projects all the time and that’s enough to satisfy my creativity. When I come home, this feels like my base – the minute I walk through the door I think: “wow, I’m relaxed, I’m home.”’ HB For more information, visit @Tinekhome on Instagram or go to tinekhome.com

riginally from Cork, Aoife Porter went to university in Dublin, where she met her future husband, David. After university the couple settled in Dublin, but 10 years later decided to travel to Central and South America, Australia, New Zealand, Indonesia, India and Sri Lanka. ‘We ended up in a place called Margaret River, a beautiful spot near Perth in Western Australia. It had such a great vibe; there was an established surf community, which we loved, wineries and coffee shops. It was

very laidback and we were so happy there, we stayed for a year,’ explains Aoife. But after being away for two years, they decided they were ready to return home with the idea of finding a similar way of life in Ireland. ‘David’s family is from County Sligo, near Strandhill, so it seemed a good spot to head for,’ says Aoife. ‘We definitely didn’t want to go back to the city. There had been a surfing community in Strandhill for about 30 years, but it was still quite sleepy and had the community feel we were looking for.’ The couple got married in 2009, in another surfing area near Lisbon in Portugal, then

Amazing views are the focal point of the sitting area, where a stove from Stuv keeps things cosy in winter. The sofa was from The Conran Shop and the leather chair came from a friend

‘We wanted clean, contemporary lines with a light Nordic feel’ came home to set about finding a property. ‘We really wanted a renovation project and to be in the village, but found instead this average-looking bungalow that had been on the market for a while – I think mainly because it’s located up a steep drive, which put buyers off. As well as that, it’s outside the village, and for many people that isn’t ideal – but the views are so amazing! And it’s south facing, which means it’s light all day long,’ Aoife explains. The couple went to see it, but were bidding on another property at the same time. However, fate intervened and the bungalow

became theirs in May 2014. It wasn’t all plain sailing though as, due to a legal wrangle, they didn’t get the keys until the following January. ‘I grew up in a traditional Irish house with small windows, so I have a real hatred of darkness and long for the light,’ says Aoife. ‘A friend of ours, John Monahan, had just moved his practice, NOJI Architects, back to Sligo from Dublin, so we got him involved and carried out all the renovation work before we finally moved in in June 2015. ‘Most of the work we had to do was internal. The front room had the view of the bay and there was a small hall and a dark

kitchen at the back. We decided to knock through all these separate rooms to make it open-plan. We also took out the ceiling and opened up to the rafters to make it doubleheight and really light. All the rest of the work was modernising – putting in insulation and re-wiring. Polished-concrete flooring was laid throughout the open-plan area and underfloor heating installed. The windows stayed the same and we didn’t renovate the bathrooms, but we did have a new kitchen,’ explains Aoife. Initially the pair had intended to leave the kitchen, but once the builders started, House Beautiful AUGUST 2020 63

MAIN BEDROOM Simply decorated, this room needs nothing more than the stunning sea views to create an impact. The pendant light is from Ferm Living, while the throw on the bed is by McNutt, an Irish company from Donegal. Continuing the couple’s love of plywood, a box headboard has

taking all the walls out and the floor up, the kitchen ended up in the yard! ‘There was no choice. We wanted clean, contemporary lines with a light Nordic feel, so chose birch ply. Thankfully we had a great builder – Ronan Higgins – on board. His partner Charlie is a kitchen joiner, so he built the cupboards from scratch. We also lined the ceiling with birch ply, and used it in other areas to create extra storage,’ says Aoife. A three-metre-long kitchen island was installed and inexpensive Formica used as a surface. ‘It only cost about £100 and it’s still pretty good four years on, even though it gets 64 housebeautiful.com/uk

a lot of use,’ says Aoife. They moved the front door and created a hall in the middle of the house, then put the children’s playroom, guest bedroom and ensuite in the black-painted annexe. ‘This is now the au pair’s room, so she has her own separate space, and our bedroom is at the other end of the house, so we all have our privacy,’ says Aoife. In all, there are four bedrooms and a bathroom, which is reached through a hidden door in the dining area. Aoife chose a monochrome palette of white and Dark Lead from Little Greene. ‘It’s not a large house, but as it’s all on one level, it means the kids can ride around on their

We’re very close to nature here, with birds, sheep and even seal colonies. The village has a creative community with excellent coffee shops and there are good schools. I run my business from there and lots of other young families have also moved here, many of them from South Africa and Australia. Heather and Rob Gratton THE PROPERTY

A renovated and extended bungalow overlooking the sea in West Sussex

House Beautiful AUGUST 2020 67

H

eather loves a view of blue sky marked with white fluffy clouds above a still, calm sea, and today this is exactly the stunning backdrop to nearly every room in her home. But it is the view through the wall-to -wall sliding doors on the first floor that she finds particularly spectacular. ‘This area is such a wonderful, light-filled open space. I find it the most calming spot in the house,’ Heather says. ‘The colours of the sea and sky are constantly changing and from here you can step out onto the balcony where you feel even closer to the elements.’ It’s been five years since Heather and her husband Rob bought their West Sussex beachfront bolthole. Having opened a cafe in Shoreham a few years previously, Heather had been travelling to and from Hove, where they were living. ‘We decided to sell our family home, as our three sons had moved out, and we were looking

for a change,’ she recalls. ‘I hadn’t given Shoreham a second thought, but having discovered the seaside with its quirky architecture and gardens that backed onto the beach, we thought “why not?”’ ‘When we started looking for something to buy, the only properties coming onto the market were huge architectural houses, which are not to my taste, or 1950s and 60s bungalows – so we bought one of the latter.’ It took a year to rebuild the bungalow. The original footprint was left unchanged, while the walls were reconfigured and the roof removed in order to create another floor that would make the most of the stunning sea views. And it paid off, the bungalow is now a striking two-storey contemporary home. Heather designed and oversaw the work, remodelling the entire property to create a beautiful, modern space, both inside and out. She included beautiful finishes, such as the smooth cement floors and soft, powdery lime-skimmed walls. The only original feature that

was retained was the parquet flooring in the living area, which had been hidden beneath vinyl – and now offers a chic contrast to the industrial feel of the cement finishes. One of the first purchases for the house was a set of 1930s Crittall windows and doors that the couple bought on Ebay. They have been used internally, leading from the front hall to the main open-plan living area. It means that as you enter the house by the front door, there is a fantastic view all the way through to the sliding doors and out onto the garden and shingle beach beyond, with its profusion of wild indigenous plants. Heather designed the ground floor around the main living room. It comprises a super-smart kitchen, a spacious dining area and a seating space set around a large fireplace. It’s the perfect spot to sit and relax in during the winter months. As the kitchen is integral to the living area, it was important to ensure that it complemented the design of the room as a whole. This meant keeping gadgets and less-than-attractive necessities out of sight, so Heather had a larder and utility room built adjacent to the kitchen, to store appliances such as the kettle, coffee maker and

n the first half of the 20th century, day-trippers to Kingsdown had two neighbouring ale houses to choose from: The Zetland Arms and The Victory. Both could be found at the end of a footpath spiked with wild fennel, brambles and grasses. The path leads from the seafront in Deal, past Walmer, before disappearing into the shingle beach at Kingsdown. Behind, woodland rises up revealing the first chalk face of the White Cliffs of Dover. The Victory served its last pint in the 1950s, but ‘The Zetter’ continues to welcome thirsty daytrippers and locals. ‘When we first came here, it felt like the end of the earth,’ says Alex Bagner who, together with her husband Chris, bought The Victory from an elderly couple eight years ago. A longstanding family connection drew them to the area: Chris’s great-grandfather founded the local Walmer Brewery in the 1800s. After spending numerous weekends here renting cottages with friends, the couple decided to make the connection more permanent, buying The Victory (which was once owned by

the Walmer Brewery). ‘Deal has become such a huge part of our lives,’ reflects Alex, ‘more than we’d ever have thought.’ When the couple took on the humble Victorian pub, the layout still reflected its former use. The fisherman’s snug at the back was being used as a kitchen. Outside, a dank privy remained. Alex and Chris (who live in London with their three children during the week) put up with the quirks of the cottage for four years, gradually deciding how to reconfigure the space. Alex is Swedish, which explains the addition of a sauna. House guests are now encouraged to take part in the Swedish bathing ritual: an ice-cold dip in the sea, followed by a toasty spell in the converted privy. ‘People thought we were mad, but it’s starting to catch on,’ she says. The floorplan has been cleverly redesigned to make best use of the space. ‘We’re both into hosting and having people around,’ says Alex. ‘Not in a big, showy way, but the house is always quite full.’ The four-bedroom property can sleep 11, while retaining its cottagey feel. On the ground floor, the

Now, double aluminium-framed doors open out onto a courtyard garden, where a wide sliding entrance connects the house to the beach beyond. Rosy tree mallows and clusters of pink valerian have crept up the shingle towards the garden, connecting the cottage to this unique landscape. Wall panelling is used throughout the house – a nod to wood-clad Swedish interiors, but also an effective way of protecting areas of high traffic. Alex’s friend, Nicola Harding, of the interior design practice Harding & Read, advised on the colour scheme, convincing them to paint the entrance in Farrow & Ball’s Setting Plaster. ‘At the time, I remember thinking: “Really? Not just white?”’ Sliding doors and woodwork are painted in punchy Blue Ground, with rows of patterned encaustic tiles demarcating entranceways. Utilitarian Shaker-style pegs and hidden cupboards keep the narrow communal spaces orderly. On the first floor, the main bedroom, which has been painted Oval Room Blue, is furnished with locally sourced antique and mid-century furniture. The couple extended the connecting sunroom, which looks out over a row of beach huts and a flotilla of fishing boats. In another of the bedrooms, the walls have been papered in Svenskt Tenn’s bold Eldblomman. ‘This is mormor’s room,’ explains Alex (mormor is Swedish for grandma). ‘My mother sleeps here when she visits and all the children pile in with her.’ The couple have also converted the loft, creating enough space for another family to comfortably sleep over. Here, a double bed fits snugly into a dormer window that frames a pictureperfect view of neighbouring cottages with dramatic white cliffs behind. Two single beds are positioned end-to-end on the opposite wall, screened from view by a panelled partition that cleverly divides the space. Throughout, fresh and unexpected colours, bold patterns, Moroccan rugs and mismatched furniture coalesce into a relaxed holiday home. It’s a formula the couple have had the opportunity to replicate, having recently opened The Rose, an eight-bedroom seaside inn down the road in Deal. ‘It’s something Chris and I have talked about all the time we’ve known each other,’ says Alex. ‘And it’s a project that has brought the family even closer to the area.’ The Victory may have stopped serving, but day-trippers now have even more reason to explore this lovely part of the Kent coastline. atalya Nesterova is used to introducing luxurious finishes and dramatic touches into other people’s projects, but the rich colour scheme she’s threaded through her own home sprang from the house itself. ‘When we pulled off the plasterboard covering up some of the original fireplaces, we discovered beautiful decorative tiles from the 1870s in shades of mustard and deep plum. So we chose mustard as the accent colour for the whole home,’ she says with a smile. But while Natalya, who runs Nesterova Interior Design, has used jewel shades as a way to unite the spaces of her Victorian London home, she hasn’t held back on creating darker, moodier backdrops and adding sleek, contemporary furniture too. ‘I like statements, whether that be large-format art, beautiful Italian seating or shots of bright colour,’ she says. Natalya’s love of the brave and the bold also complements her husband Alessandro’s style. ‘As an architect, he naturally gravitates towards a rather more sober and serious look and likes neutral greys and blacks. But then I come in and add colour and some more adventurous touches to bring a bit of life. Together, we make the best team.’ There’s also a skilled merging of old and new in this home. The beautiful Victorian fireplace tiles that Natalya and Alessandro uncovered in their bedroom and bathroom are now framed by surrounds in a more contemporary pattern. ‘We used geometric panelling, so you get the contrast of old and new,’ explains Natalya, who then added West Elm cupboards on either side of the fireplace with fronts in a similarly intricate pattern. The couple maintained the original cornicing in the living room and dining area, but extended into the side return to create a larger kitchen that has contemporary rooflights. An internal window links the two ground-floor spaces, and supersized herringbone flooring runs from the hallway down into the living and dining room at the back of the house. The couple also extended into the loft, creating their son’s bedroom,

an office, and a shower room. Natalya made a point of using local tradespeople and suppliers, as she had already built up a good relationship with them. However, she says, it’s crucial to keep communicating at all stages of a renovation or build. ‘It’s all too easy to assume that what you have in mind is clear from the first conversation, but I always get each tradesperson to confirm in writing exactly what they’re doing before work starts,’ she explains. ‘Even if they think you’re being pedantic, it benefits both sides in the long run.’ As the work here continued, their budget for furniture and fittings started to shrink, so Natalya came up with some creative, good-value solutions. Raised beds in the garden were edged with sections of fence panels, and a plain console in the hallway was customised with doors from Superfront. Then there’s the centrepiece light in the living room, which is formed from two Ikea paper shades to make a more substantial pendant. ‘All my dream light fittings or chandeliers were too expensive, but I did like the floaty shape of this simple Ikea design,’ she says. ‘To make it less flimsy I simply put

two together and fluffed them up. The effect is impressive – and nobody guesses where it’s from until I tell them!’ But usually, understated furniture by Italian brands such as B&B Italia, Flexform and Minotti are Natalya’s favourites: ‘The quality is excellent and the shapes are timeless. I think it’s worth paying more for pieces like a sofa that you’ll see and use every day,’ she explains. The finishing touches in this home include artworks that add colour and provide a constant source of inspiration. While Natalya loves visiting events such as the Affordable Art Fair to see work by up-and-coming artists, it’s a simple montage of family photographs that takes pride of place in the family’s extension, hanging above the sofa. ‘I put together pictures of us that were taken on holiday or remind us of special times. It’s relaxing to be able to look at these images of family life – especially when work gets hectic for us both. They create a positive atmosphere,’ she says. ‘It’s good to remember that, however beautiful the objects in your home, it is the people who live in it who are most important.’ HB For inspiration, go to nesterovainteriors.com House Beautiful AUGUST 2020 87

PART TWO In the second of our three-part special on atpack homes, we focus on how modular properties are being built en masse

Until now, factory-built houses have been mainly favoured by custom- or self-builders, but the atpack system is increasingly being used across the UK to provide hundreds of modern apartments and terraced houses. This Town House design by House at Urban Splash, seen through the window, is just one of the many exciting new developments

House Beautiful AUGUST 2020 89

YOUR ESSENTIAL GUIDE TO MODUL AR ESTATES

W H AT I S A M O D U L A R H O M E ? Whether it’s a bespoke house or a block of flats, these properties are mainly constructed in a factory, unaffected by weather, and delivered on the back of a lorry to the site where they’re slotted together – hence the term flatpack. The technical name is actually Modern Method of Construction, and according to Luke Barnes from Ideal Modular Homes: ‘Our state-of-the-art factory ensures we’re able to continuously deliver precision-engineered homes ranging from family homes to multi-storey apartment blocks. They’re 97 per cent factory-finished, with internal features such as bathrooms, kitchens, flooring and lighting all fitted before the house arrives on site. External elements such as cladding, windows and doors are also made in the factory, minimising on-site work and maximising efficiency. Once sited and installed, homes are ready to live in.’

W H AT A R E T H E Y M A D E F R O M ? Most builders use a form of Cross Laminated Timber (CLT), which can be made into huge panels that are big and strong enough to form buildings several storeys high.

construction methods, as well as the speed of production, mean that they’re cheaper and quicker to build than traditional bricks-and-mortar properties. As a result, more developers, mortgage providers, councils and housing authorities are seeing them again as a viable and high quality option. It’s estimated that off-site construction reduces costs by 25 per cent compared with traditional techniques, reduces waste by up to 50 per cent, and the end house is so well insulated and airtight that fuel bills are cut by a minimum of 20 per cent.

W H E R E A R E T H E Y B E I N G B U I LT ? There are dozens of companies, large and small, opening factories – mainly in the Midlands and the North of England where the Government wants to create a centre of excellence – to build these houses, and millions of pounds are being poured into them by agencies such as Homes England, councils and housing associations to help reach the UK’s ambitious 300,000 new homes per year target.

BUT DO THEY LOOK GOOD?

Modular home layouts, such as this one by House by Urban Splash in Port Loop, Birmingham, are flexible

With architects involved from concept to completion, they have great design credentials. House by Urban Splash, owned by award-winning developer Urban Splash in partnership with Japan’s biggest housebuilder, Sekisui House and Homes England, has architect George Clarke – who designed one of its early homes – among its shareholders.

ARE THE DESIGNS FLEXIBLE?

HOW MUCH DO THEY COST? Prices vary according to the type, size and location. Ideal Modular Homes’ OURHome starts at £87,000, while House by Urban Splash’s two-bedroom Mansion House apartments start at £320,000. Prospective buyers can apply for a mortgage as usual, with some able to qualify for the Government’s Help to Buy scheme. Classed as using non-traditional methods of construction, modular properties have their own accreditation called Buildoffsite Property Assurance Scheme (BOPAS) – developed by The Royal Institute of Chartered Surveyors, Lloyds’ Register EMEA, and the Council of Mortgage lenders (CML), among others, assuring that the property will stand for at least 60 years. Some also have a National House Building Council 10-year warranty if they’ve used a method of construction approved by them, or a Checkmate 10-year guarantee. As Guy Ackernley from Urban Splash says: ‘Many of the materials and trades used are fairly traditional; timber frames, joiners, plumbers and electricians, all of which have been proven in the industry. There’s also a level of robustness with these homes, as they’re designed to be lifted and transported.’ HB NEXT ISSUE Part 3: Increase Your Living Space with a modular extension. Even though they look the same from the outside, the designs can be very different inside, with firms offering a range of layout options for varying lifestyles and family situations. House by Urban Splash’s Town House, for example, is available in 72 layout options. Guy Ackernley says: ‘Customers don’t want identikit boxes – and individual specs are deliverable in a factory environment. ‘Customers are able to choose the composition of their Town House completely, regardless of their neighbours. This includes how much space they want, how they want to live, whether they want open-plan living and if they want the bedrooms to be upstairs or downstairs. They can decide on their own finishes too.’ And, if after a few years the occupants would like a different configuration of rooms, internal walls can often be moved. Some companies can even add new elements such as lifts.

Jo Cole, a human resources manager, lives in a two-bedroom terrace cottage in Little Kimble in Buckinghamshire with her husband, Tim, who works in distribution, and her 13-yearold stepson, Ben Tell us about the old kitchen It was small and awkward with a tiny dining table squeezed into a narrow space that was rarely used. A stud wall separated the dining area from a utility room and the back door, restricting garden views. What did you tackle first? We considered extending into the side return, but after getting quotes from various builders, quickly realised it was beyond our budget, so we

CUBBY SHELVES Bright orange inlays add colour to the unit, while canisters with retro patterns heighten the mid-century theme

looked at reconfiguring the floor plan instead. However, we were flummoxed as to how to make it work, so approached our interior designer friend, Lou Wolfenden of House of Wolf Interiors, for advice. She suggested knocking out the stud wall and utility room and swapping the position of the kitchen with the dining area, so the room would work more practically and feel more welcoming. How did you design a better connection with the garden? As we were swapping the position of the kitchen and dining area, the original back door was in an awkward spot at the end of the row of units, meaning you’d have to traipse past the busy cooking zone to access the garden. To ensure a functional layout and improve the room flow, Lou suggested replacing the back door with a picture window and adding bifolds to the side wall instead. This gave both the kitchen and dining area lovely outdoor views with easy garden access. The unconventional layout brought some challenges… Yes. Once the builder had drawn up the floor plans, we took them to Wickes to get the kitchen planned out. The in-house designer House Beautiful AUGUST 2020 95

WALL UNITS Inspired by mid-century furniture design, the cupboards have a retro feel, with a practical mix of sliding doors and open shelving

STREAMLINED STORAGE Floor-to-ceiling units neatly conceal the boiler and provide a hiding place for the mop and vacuum cleaner

SPLASHBACK Tiles with a graphic pattern create a bold statement and add interest to the crisp white quartz worktop CUPBOARD FRONTS Painted in Fired Earth’s Wild Olive, the tongue-and-groove finish adds a traditional element that ties in with the property’s period details, while the leather handles are a modern touch

found it difficult to make the off-the-shelf units work around our sloping understair section, so bespoke units were the solution. Lou recommended a brilliant carpenter, Gary of Goodwood Interiors, and he drew up a custom-made design. He also took account of our love of orange and mid-century features by creating funky wall units with sliding doors. He was even able to add a pantry cupboard next to the boiler – something I’d thought impossible in our compact kitchen. What about the rest of the bold scheme? Lou helped us bring it together by mixing in green elements and patterned tiles. We wanted to inject some drama to make the area feel different from the rest of the cottage. I wasn’t convinced about the wallpaper at first, but Lou assured me it would work, and as it depicts the Yorkshire Dales – a nod to my heritage – I went with it. Sure enough, the final result is bold and exciting. Was there enough space for everything? To maximise storage, we had to include wall units, but to avoid a closed-in feel, we added open shelving to break them up. I love their convenience and they’re great for displaying my favourite jars and 96 housebeautiful.com/uk

cookbooks. Gary also made the most of the understairs area by continuing the line of cupboards beneath the slope. Were there any mishaps? When the builders were knocking out the old floor to lay underfloor heating, they hit a water pipe and flooded the space. We were canoeing in the Dordogne at the time and couldn’t be reached, so Lou was called in to help locate the stopcock. How long did the project take? There were a few months of planning and agreeing the drawings, but the actual build work only took six weeks. We decamped to the living room with a makeshift kitchen and had lots of takeaways – but this minor upheaval was worth it for the final result. Would you recommend using an interior designer? Without a doubt! Lou’s expert eye not only helped us create a room with better flow and use of space, but she also designed a playful scheme that we’d never have thought of. Introducing us to trusted trades was invaluable, and we saved money going down the bespoke route – the off-the-shelf design would actually have been more expensive.

INTRODUCE BL ASTS OF COLOUR

Jo’s bold choice of hues, encouraged by her interior designer friend, is the perfect example of how to make colour and pattern work for you. Bright hues, such as orange and green make a real statement, but Jo tempers them perfectly with monochromatic tiling, though cleverly her splashback has a hint of orange to tie the scheme together. Naked Kitchen’s Pelham design (A) also features monochrome tiles that help to break up the colour blocking. If you’re not ready to go super-bright, this design from the Refined range at Life Kitchens (C) is a fantastic interpretation of the look with a more muted and sophisticated palette. Alternatively, use a contrasting splashback for a quick take on the trend, like the one in this kitchen from Ikea (B). A Pelham collection, from £10,000, Naked Kitchens B Metod base cabinets, from £36.60; Lysekil wall panel, £35/1.96m; all Ikea C Refined range, from £25,000, Life Kitchens

Laura Siddall, a banking relationship manager, and her husband Steve, also in finance, live with their children, Alexandra, five, and Calumn, two, in a five-bed detached house in Godalming, Surrey. The original bathroom was dated and in serious need of an overhaul, so they ripped it out, opting for a new layout and bold colour scheme

Tell us about the original bathroom… It was a dated, tired space with a primrose yellow suite, dull grey carpet and pale pink striped wallpaper – in other words, it was in desperate need of updating! It looked as though it hadn’t been touched since the seventies. Did you enlist help of an interior designer or project manager? The whole house needed a complete renovation, and we quickly realised it was too much for us to take on ourselves. We found interior design company Slightly Quirky through the website Houzz. Initially we only asked for help with colours, but it soon became apparent we needed more input, so they played around with a few different room layouts and lighting plans for the bathrooms, kitchen and living areas and helped us come up with the final designs. We also had a project manager, Matt Abel from Abel Projects. House Beautiful AUGUST 2020 101

SHELF Built-in plumbing creates a clean look and allows for display and storage above the WC and vanity unit

PATTERNED TILES Continuing the floor tiles up into the shower cubicle leads the eye into the room making it appear larger

Where did you get your ideas from? We had an overall scheme for the house, which we worked on with Caroline Nicholls and Deborah Moor from Slightly Quirky. The brief was to be bold with colours and patterns and to make the whole house consistent. The first thing we chose was a black and white wallpaper for the cloakroom downstairs, so it made sense to start with the black and white tiles in the family bathroom. What was top of your wishlist? A separate shower and bath – and plenty of storage. Were there any difficulties along the way? Caroline suggested positioning the shower centrally, which has created a real sense of drama in the room as well as giving the WC a separate feel, but it was a challenge to find a three-sided shower screen to fit the space properly. It took quite a lot of 102 housebeautiful.com/uk

research to track one down that was wide enough but not so deep that it would encroach too much on the rest of the floor space. You opted for quite a bright colour palette… Yes, we wanted to go bold and the sunshine yellow has a sense of fun – very fitting for a family bathroom. What makes the room work well for you? The amount of storage and, in particular, the wall-hung vanity unit, which is my favourite part of the design as it really helps keep the room in order. The cubby holes in the shower are handy too. Do you have any tips? Research each element individually to get the best price, rather than buying everything from one stockist. How do you feel about the bathroom now it’s complete? We love how bright and spacious it is, and it will grow with us.

Introducing colour and pattern into the bathroom can seem daunting, but it’s a great way to bring the space to life and create somewhere you’ll enjoy spending time. For most of us, the bathroom is where we start our day, and an injection of a cheerful hue can help us to feel positive about what’s to come. The bathroom below from Drummonds (B), uses a soft palette of pink with leaf-patterned tiles to create a soothing yet playful look. UNDER THE STAIRS When it comes to getting the most out of our homes, every tiny corner counts, and that includes this often neglected space… If, like many of us, you’re constantly on the hunt for usable space, you could find just what you’re looking for under the stairs! It can be a bit of an awkward area, but with a little imagination and inspiration, you can quickly turn it from

an unused wasteland into somewhere stylish and useful. So, whether you’re after an at-home office, a reading nook or somewhere for the washing machine, we’ve found 13 creative ways to unleash your below-stairs potential…

THE HIGHS AND LOWS

Show off your family album with a beautiful display of framed photos above a freestanding multi-drawer chest. An oversized seagrass basket provides simple storage for shoes and trainers. For a similar chest, try the Malvern, £499, Cotswold Co. For a similar basket, try the Dipped seagrass basket, £20, Cox & Cox

So, you don’t have a whole room to dedicate to a home office? No problem. Repurpose a simple table as a streamlined desk, tuck it against the wall and add a chair or two. Don’t forget the lighting – an adjustable lamp will cast a glow exactly where you need it. For a similar lamp, try the Lime angled floor lamp, £169, The Forest & Co. For similar chairs, try the Heather dining chair, from £99, Cult Furniture

Take advantage of the fact that stairs offer the opportunity to create cupboards at different heights – opt for flush-closing ones to keep the look neat. The tallest cupboard is ideal for storing coats or the vacuum cleaner and mop, while the shorter one is perfect for hiding away shoes – use a rack to keep them organised (and stop them disappearing forever out of reach at the back!). For shoe racks, try Lakeland 110 housebeautiful.com/uk

4

PERFECT PLANTS When styling your space, don’t forget to add a plant or two. As they’ll be tucked away under the stairs, choose ones that thrive in low light, such as spider plants, calathea or ferns.

5

DOUBLE DUTY

This understairs space is fun and practical, with a useful cupboard featuring colourblocked cubby holes – perfect for bringing order to that pesky shoe mountain – and a wall of pegs above for holding bags and shelves and anything else you fancy. For similar units, try Kallax, from £63; or Galant, from £258; both Ikea. Block Design has a good selection of pegboards, from £25

It’s easy to turn the under-stairs area from an unused wasteland into somewhere both stylish and useful

DOWN TO A FINE ART Make use of the walls above your staircase too – they’re the ideal place to show off your photo or art collections. Go eclectic with a mismatch of frame colours, shapes and sizes or, for a more harmonious effect, mount them all in coordinating frames and arrange gallerywall style. HIDE AND SEEK

A stack of flush-fitting, push-to-open drawers provides a super-sophisticated storage solution for tight spaces. For bespoke cabinetry, try Neville Johnson

Rather than packing your glassware and crockery away into cupboards, why not display them on open shelves? To stop the space looking too regimented, vary the heights and widths of the cubbyholes to suit the contents. Add a whitewashed table and some pale wood chairs and, voilà, you’ve nailed the French farmhouse kitchen look. For a similar table, try the Boone, £649, Made. For similar chairs, try Oregan, £320/two, Habitat

Somewhere to lounge around with comfy seating and books close to hand? Yes please! Keep the colour scheme white or from the paler end of the spectrum to make the space appear larger. For bespoke under-stairs shelving and seating, try Sharps

Pullout storage means you can get right to the back of the cupboard and maximise the space under the stairs. This one has a base shelf for shoes and boots and a hanging rail for coats and jackets. And when it’s closed, no one would ever know it’s there! For similar pullout cupboards, try Clever Closet House Beautiful AUGUST 2020 113

If you’re yearning for a utility space but don’t have a whole room to spare, then create a micro-utility instead with a slimline sink and undercounter dishwasher. Waterproof the floor with tiles or lino (just in case of leaks), add a couple of shelves for washday essentials, and finish off with a full-length top to give you somewhere to fold and sort clothes. For similar wire storage, try the Regeneration basket, £8, Dunelm

12

BATHED IN GLORY

Forget the under-stairs cloakroom – how about going for a full-on bathroom? Privacy concerns aside (this idea is probably best used for the stairs leading to the loft conversion rather than in the main hall), it’s a great way to utilise spare space. For a similar bath, try The Clovelly Slipper bath, £1,135, The Cast Iron Bath Company (which can be painted in any Farrow & Ball shade)

WELLNESS

THE SPIRIT OF THE SEA There’s something special about being by the ocean. Wellbeing writer Jo Glanville-Blackburn explains how introducing shoreside elements into your home can help bring a wonderful sense of calm and escape

116 housebeautiful.com/uk

NATURAL BENEFITS A walk on the beach is good for body and soul, and there are all sorts of treasures to be found, ideal for bringing a little coastal style indoors

T

here’s a theory that saltwater, from the surf to our tears, holds a key to our emotions. You could say the sea is in our blood – literally – as the mineral content of seawater is remarkably similar to that of our plasma. According to Louise Moye, Cornish seaside dweller and brand manager at Living Sea Therapy skincare company, we’re still making discoveries about the therapeutic power of the sea. ‘An EU-funded Blue Health 2020 study around the benefits of marine culture, has us learning more and more about how “blue” environments can have a positive effect on our wellbeing,’ she says. ‘Studies recorded boosts in mental and physical health in coastal communities, with happier moods and reduced levels of obesity. Oceanic compounds, notably magnesium, are known to have positive benefits, working to regulate the nervous system to reduce stress and headaches, irritability, restlessness and depression,’ she continues. Most of us recognise the calming effects of a walk along the shoreline. But before you sell up and move to the coast, there are ways to feel inspired in your own home, wherever you live, and enjoy that sense of relaxed summer living all year round. House Beautiful AUGUST 2020 117

COASTAL COLOURS For a constant reminder of holiday escapades, introduce a seashore palette of aquamarine paint and fabrics into your home decor. As a healing colour, blue is thought to inspire trust, positivity and serenity. ‘I find the sea very calming and inspiring,’ says coastal dweller Frances Prescott, a make-up artist and founder of Tri-Balm skincare (francesprescott.com). ‘I live in Whitstable in Kent, and often get up at 5.30am to walk to an area of Tankerton Beach called The Street, a narrow shingle spit of land that’s only exposed at low tide. It’s as if you’re standing in the sea; then I close my eyes, stretch and take deep breaths and focus on the day ahead. On one occasion, I remember looking at the sea and there was a “space”: a tiny patch of the most perfect blue colour. It inspired the colour of my packaging – and my bedroom walls!’

STYLE FOR SERENITY

Daily ablutions are made all the more uplifting in a beautiful, beach-inspired haven. Think Long Island style and accessorise your bathing zone with a bleached wood stool by the bath or a bath rack filled with a loofah, bristle brush and natural sponges. Check out smooth shell and pebble tiles or spa-like tiny blue mosaics. White-painted floorboards give the impression of decking; match with wooden picture frames painted distressed white, then fill with favourite beach scene postcards. 118 housebeautiful.com/uk

Give reclaimed furniture a washed-out, sea-worn beachy effect with layers of various sea shades of blue, green, and white. Water down emulsion paint, then apply layer upon layer of the colours. Once dry, take a piece of rough sandpaper and randomly buff back the surface to reveal different layers underneath. Placed in your hallway, it will greet you with joy every time you walk in. Frances loves artwork by local artist friend Bruce Williams, who paints in oil on reclaimed wood (brucewilliamsart.com).

Ba throom bl iss FORGET SHOWERING In moments of stress, a saltwater bath is a great way to unwind and switch off. A salty bath is known to boost the immune system, soothe aching muscles and joints, and improve sleep patterns. The key is to keep the water warm, as temperature is a key factor when reducing stress. ࠮ Make it a ritual: lower the lighting with candles (Wax & Wick’s Rock Salt & Driftwood Candle, £25, smells lovely), play gentle sounds of the sea to quieten the mind, and try one of these bath additives: 1 Neal’s Yard Seaweed & Arnica Bath Salts, £15.50. Skin-loving seaweed from the coasts of Ireland and Brittany infused with juniper, pine, and lavender essential oils. Simply sprinkle a tablespoon into warm water, lie back and unwind.

2 Living Sea Therapy Sea Salt Scrub, £32 (see overleaf), with hand-harvested sea salt flakes fresh from the Cornish coast. Take a handful and buff into areas of dry skin. 3 Espa Detoxifying Seaweed Bath, £30. Soak for 20 mins – it’s a tonic for the body.

P u t t h e sh ore ON SHOW

Everyday objects can be a reminder of happy days by the sea. Decorative driftwood, shells, sea glass and pebbles can all bring holiday memories flooding back. Designate areas or corners of your home where you can place your shoreline treasures for an instant mood boost every time you see them… • Fill a large storm lantern with grainy sand,

place in a beeswax candle (try Daylesford Hive Tall Candle, £23), then sprinkle in tiny shells around the base of the candle. • Place large shells and natural sponges

by the side of the bath. • Use foraged elements to devise simple

coastal displays, such as a shadow box filled with shells, dried seaweed, and glass fragments washed up on the shore.

• Fill seagrass vases (try Bamboo & Seagrass

woven vase, £59, The Conran Shop) with tall grasses, cattail reeds, and sea holly thistle. BE AN ETHICAL BEACHCOMBER Foraging for pieces to create visually pleasing still lifes for your home is a great way to create joy and connect with nature. ‘It’s like treasure hunting,’ says photographer Wendy Carrig, who lives along the pebble beach in Dungeness in Kent. ‘I’ve always loved to collect large pieces of driftwood from the beach and other sea-worn items to use them as artworks, dotted around the house and garden. My house style is eclectic, all put together on a shoestring with upcycled charity shop and boot fair finds and bits and pieces of treasure from the shore.’ Do exercise restraint, however, some beaches have by-laws and restrictions.

Try DREAM SURFING The sound of the ocean has long been used in relaxation and visualisation therapies for its calming effect, allowing us to swiftly slip into a deep meditative mindful state. Scientifically, it’s called the ‘blue mind’, which brings peace, calm, hope and serenity, and a general feeling of wellbeing and happiness. STEAL A MOMENT OF PEACE

Think of it as holiday time – plug in your headphones and dream-surf by listening to Ocean Waves by Nature Sounds (search for it on YouTube) to help relieve insomnia, reduce anxiety, or for use in meditation. Also check out Big Surf, Pebble Beach, and Low Tide.

DINING SPACES As mealtimes become more relaxed, the idea of a separate formal dining room seems less important somehow – and if you do have one, chances are it’s under used. However, architects and designers are beginning to appreciate that one of the most important functions of a space may be the social cohesion it creates – bringing family and friends together – which, as research shows, is one of the keys to human happiness. Look out for any negative physical effects

Make sure the space is free from anything that can adversely affect air quality. This includes damp and mould, as well as the toxins that can be found in building materials – such as VOCs in paints, and formaldehydes in MDF and particle boards. Include good lighting To create a mindful space, use flexible options – everything from a simple dimmer switch for an overhead pendant and a variety of side lights, to atmospheric fairy lights or candles. Surround yourself with natural materials

This will create a calming effect. Fascinating research from Scandinavia and Japan has found that timber panels on walls have the ability to lower heart rates in a home’s

occupants – helping to reduce stress and blood pressure plus, in my opinion, adding a warm, welcoming feel to the space. Timber can also help improve the acoustics of a room This is another important factor

in a healthy dining space. Background noise can help or hinder dinner table conversation. Where possible, turn off distracting noisy appliances such as dishwashers while you eat, and soften noisy spaces with rugs, cushions and curtains, or even big, leafy plants, such as monstera, aka, a Swiss cheese plant. Soothing music can bring a positive mood

Try a mobile Bluetooth speaker to enable you to easily play music from your phone. Appeal to your sense of touch For example, include a wooden table with a beautiful grain, comfortable chairs, or smaller accessories such as good quality cutlery, crockery and glassware. Make it warm and comforting A lifeenhancing dining zone is less about strict formality or overly designed spaces, and more about flexible areas that draw people together to share one of life’s simple pleasures – a good meal, in good company, with good conversation. Greece is the word Inspired by the flavours of Crete, these Mediterranean recipes are just perfect for alfresco dining

‘My childhood years in the small neighbourhood of Halepa, Crete, were spent mostly in kitchens,’ recalls chef and author Marianna Leivaditaki. ‘I would spend hours writing down recipes. The water gives fish to catch and cook, the

land bears fruit and vegetables that are served as main meals, and the mountains offer game that is an irresistible delicacy.’ In her new Cretan cookbook, Aegean, Marianna offers a taste of island life with dishes rich in familial heritage and flavour.

Watermelon, charred feta and bread salad with mint Turn the page for the recipe House Beautiful AUGUST 2020 125

AEGEAN FEASTS

Lamb cutlets with lemon and oregano In Crete, we’re mad about lamb cutlets. A lot of the taverna owners in the small mountain villages have their own animals and the meat they offer is incredible. All that’s needed is salt, pepper, oregano and a well-lit charcoal grill. SERVES 4-6 AS A SHARING PLATE

Watermelon, charred feta and bread salad with mint Sometimes I feel this salad needs a touch of sweet vinegar and at other times I feel it’s perfect with just the oil, salt and pepper. I think this all depends on the acidity of the feta and the sweetness of the watermelon. If you think you need it to be sharper, then add a splash of good quality vinegar. 126 housebeautiful.com/uk

SERVES 4-6 AS A SHARING PLATE

Sea salt and freshly ground black pepper, to taste

1kg lamb cutlets FOR THE MARINADE 2tbsp chopped thyme 2tbsp chopped rosemary 1tbsp dried oregano 6 anchovy fillets Zest and juice of 2 unwaxed lemons Zest and juice of 1 unwaxed orange 1tbsp extra virgin olive oil Sea salt, to taste FOR THE SPICY FETA DIP (see cook's note, right, for method) 1 sweet pointed red pepper, deseeded 2 red chillies, deseeded 1 green chilli, deseeded 200g feta 1tbsp chopped parsley, plus extra to garnish 40ml extra virgin olive oil 1tbsp Greek yogurt 2tsp dried marjoram 1tsp dried oregano 1tsp black pepper Sea salt, to taste

2 slices of sourdough bread, cut into small squares 7tbsp extra virgin olive oil 500g watermelon flesh, cut into small bite-sized pieces, pips removed 10 black Greek olives, pitted 1 handful of fresh mint, chopped 1tbsp pumpkin seeds 1 small cucumber, sliced lengthways and then across into thin half-moon pieces 1 handful of purslane, if available, or rocket leaves, roughly chopped 200g feta, cut into medium-sized cubes

1 Preheat the oven to 160°C/ 140°C fan/gas mark 3. Spread the sourdough croutons on a baking tray, drizzle with 2tbsp olive oil and bake in the oven until golden – around 10min. 2 Put the remaining ingredients, apart from the feta, in a bowl and mix. Season to taste. 3 Just before you serve the salad, put the feta on a lined baking tray and place under a hot grill for a minute or two, until it slightly colours at the edges. Add the hot feta and toasted sourdough to the bowl and give the salad a final mix before serving.

1 Blitz all the marinade ingredients to a paste in a food processor. Put the cutlets in a dish and smother them with the paste. Place the dish in the fridge for at least 3hr. 2 Light the barbecue and when the coals are red hot, cook the chops for a few minutes on each side (or use a grill on high). Make sure they don’t catch fire when grilling, but if they do, just splash some water on the coals. 3 When cooked, take off the heat, transfer to a platter and enjoy with a nice fresh salad and the spicy feta dip.

COOK’S NOTE

To make the dip, char the pepper and chillies in a dry, hot pan until they begin to darken on the outside. Remove from the pan and peel as much as the skin off as you can. Add all the ingredients to a food processor and blitz until smooth. Adjust the seasoning and serve with some extra parsley on top.

1 celery stick, roughly chopped 1 red pepper, roughly chopped 1 white onion, roughly chopped 3 bay leaves A pinch of saffron 200ml white wine 50ml brandy

COOK’S NOTE

To make the stock, heat the oil in a pan and add all the stock ingredients. Toss around and cook gently for 10min. You want to caramelise and sweeten the veg. Add the shells to the pan and cover with water. Simmer for 30min. Turn the heat off and allow the stock to rest for a while before passing it through a sieve and reserving the liquid.

Prawns with ouzo, orzo and courgette This delicate and velvety dish is perfect in summer when courgettes are at their best. Make sure you get fresh prawns for this and pick small, tender and firm courgettes. SERVES 4 400g fresh raw prawns, peeled, shells reserved 1tbsp good quality butter 200g orzo pasta 3 courgettes, very thinly sliced 500g cherry tomatoes, quartered 1tbsp extra virgin olive oil ½tsp crushed fennel seeds 20ml Greek ouzo Zest of 1 unwaxed lemon Zest of 1 unwaxed orange 1 handful of mint leaves, chopped FOR THE PRAWN STOCK (See cook’s note above for method) 1tbsp extra virgin olive oil 1 fennel bulb, roughly chopped

1 Preheat the oven to 180ºC/ 160ºC fan/gas mark 4. Place the prawn shells on a baking tray and dry out in the oven for about 20-30min. This helps to concentrate and increase the flavour of the shells. 2 Make the prawn stock. See cook’s note, left, for method. 3 Heat the butter in a pan and add the orzo pasta. Stir gently for a couple of minutes until shiny and coated in the butter. Add half the courgettes and all the tomatoes together with the oil and fennel seeds. 4 Increase the heat and start adding the prawn stock in batches – you may not need to use all of it. The orzo will take about 15min to cook. Just before it’s ready, add the remaining courgettes, ouzo and lemon and orange zest. 5 Finally, add the prawns and check the seasoning. Cook until the prawns turn pink. You want this dish to be loose and juicy – a bit like a risotto. Serve with the fresh mint scattered over the top. If you have any prawn stock left over, freeze it to use another time.

Beef with dried figs and instant pickled salad Figs complement this beef stew beautifully. They add texture and sweetness and give it a richness that satisfies the soul. SERVES 4-6 AS A SHARING PLATE 30g unsalted butter 3tbsp extra virgin olive oil Peel of ½ unwaxed orange 1tsp ground juniper berries

AEGEAN FEASTS

700g beef chuck, or shank off the bone, cut into 8-10 pieces Sea salt and freshly ground black pepper, to taste 200g carrots, finely chopped 400g tomatoes, roughly chopped 1 litre water 200g dried figs, rehydrated in hot water for 20min, roughly chopped FOR THE INSTANT PICKLED SALAD 1/5 small white cabbage ¼ small red cabbage 1 carrot, peeled

1 kohlrabi, peeled 1 handful of fresh mint leaves, roughly chopped 2 fresh figs, peeled and diced 2tbsp sugar 3-4tbsp white wine vinegar (depending on its intensity) Sea salt, to taste 1 Heat a pan over a medium heat, add the butter, oil, orange peel and juniper berries and warm for a minute or two. Season the meat with salt and pepper; add it to the pan and brown gently on all sides.

2 Add the chopped carrots and tomatoes to the pan together with 500ml water. Cover the pan with a lid and cook gently for 30min. At this point the meat will still be tough. 3 Add the chopped figs to the pan and cover again. Cook for another 30min, then check whether the meat is now sweet and tender. It should break up when poked with a fork. During the cooking process you may need to add extra water to the pan, but you want this stew to be juicy, not watery. By the time the meat

is cooked, the sauce should be thick and emulsified. 4 While the beef is cooking, make the salad by slicing the cabbages very thinly using a mandolin and grating the carrot and kohlrabi using the coarse side of a box grater. 5 Place everything on a board and roughly go over it with a knife to chop into smaller pieces. Put everything in a bowl, add the mint and fresh figs, then season with sugar, vinegar and salt. Serve the beef in shallow bowls with the pickled salad on the side. House Beautiful AUGUST 2020 129

Buttery biscuits with lemon cream and fresh strawberries Tangy lemon cream and sweet fruit with these biscuits is one of my favourite combinations. I like to serve them whole on the side so I have spoonfuls of the cream and fruit and then a mouthful of the biscuit. If you prefer you can

crumble the biscuits over the top and then have it all with a spoon. MAKES 15-20 BISCUITS FOR THE BISCUITS 110g butter, softened 50g brown sugar 50g fine semolina 125g plain flour 4 green cardamom pods, seeds removed and crushed to a fine powder FOR THE LEMON CREAM 100g cream cheese 100g Greek yogurt

70ml double cream Juice of 2 lemons 100g caster sugar TO SERVE 300g strawberries 30g caster sugar 1tbsp rosewater 100g shelled unsalted pistachio nuts, crushed 1tbsp icing sugar, to dust (optional) 1 For the biscuits, cream the butter and sugar together. Fold in the semolina, flour and cardamom powder. Mix and form into a dough. Shape the

dough into a rough square, wrap in clingfilm and place in the fridge for a couple of hours. This will help to stop the dough from crumbling too much. 2 Preheat the oven to 180°C/ 160°C fan/gas mark 4. Line a baking tray with baking parchment. 3 Lightly flour a work surface and roll the dough out to roughly 0.5cm thick. Using a sharp knife, cut the dough into rectangles (or use a cookie cutter of your choice) and place on the lined tray. Bake for 15-20min. Remove from the oven and set aside. 4 To make the lemon cream, put all the ingredients in a mixing bowl and whisk gently until smooth and silky. You can do this with an electric mixer or with a hand whisk. Set aside. 5 Hull and cut the strawberries into quarters and place in a bowl with the caster sugar and rosewater, then stir. Let them sit for 15-20min. 6 To serve, place a generous tablespoon of the cream on a plate, followed by the macerated strawberries and the crushed pistachios. Finish with a biscuit or two on the side and a dusting of icing sugar, if you like.

Apple, peach and almond tart with sweet yogurt This is easy, familiar and everyone loves it. The ground almonds in the pastry and the peaches are the reasons I crave this dessert so often. If you feel like something sweeter, serve it with vanilla ice cream instead of yogurt. SERVES 4 250g butter, cut into cubes and chilled 250g self-raising flour 125g ground almonds 125g muscovado sugar 2 red apples, cored, peeled and cut into 2cm cubes

2 ripe peaches, stoned, peeled and cut into 2cm cubes 85g caster sugar 50g flaked almonds FOR THE SWEET YOGURT 200g Greek yogurt 50g icing sugar Zest of 1 orange ½tsp ground cinnamon YOU WILL NEED 20cm square ovenproof dish (or something of a similar size) 1 Preheat the oven to 180ºC/ 160ºC fan/gas mark 4. Put the cubes of butter, flour, ground almonds and muscovado sugar in a bowl and rub together with your fingertips

to make fine crumbs. This may take a little while, but it’s a good ‘time out’ activity. 2 Press two-thirds of the crumb mixture into the base of the dish. Mix the apples, peaches and caster sugar in a bowl and wait for the sugar to dissolve – it won’t take long, about 10min. Pour this over the crumb mix and scatter the remaining crumbs over the top, followed by the flaked almonds. 3 Cook in the oven for about 45min-1hr until you can smell the sweet aroma and the top is golden and crunchy. 4 Mix the yogurt with the icing sugar, orange zest and cinnamon and serve alongside the tart. GREENGAGES

3 W A Y S T O U S E U P. . .

DRIED MUSHROOMS Dried mushrooms bring instant flavour to a dish and more expensive sorts are often a fraction of the price of fresh. I love using dried ceps, morels, porcini and shiitakes. Mushroom risotto Because of the cooking time and liquid content, dried mushrooms are perfect for risottos. Soak dried mushrooms in hot water for 20min. Strain the liquid and use with the stock. Spicy broth Throw dried shiitakes into boiling water with lemongrass, chilli, ginger and salt and simmer for 30min. Use as the base for a noodle soup. Mushroom salt Blitz wild mushrooms in a spice grinder with salt flakes. Sprinkle on chips, roast chicken or a Bloody Mary.

First imported in 1724 by Sir William Gage, greengages are a lesser-known member of the plum family that can be identified by their green skin and flesh. Their season is fleeting, running from August to late September, and stumbling upon them is a particular delight, as they’re rarely found in supermarkets – seek them out in farmers’ markets and grocers at the beginning of August. We were lucky enough to have a greengage tree in the garden of our childhood home. They were always eagerly awaited and we had to strike the delicate balance between allowing them to ripen fully and catching them before they split and the wasps got to them. At their peak, they boast a mix of slight tartness from the skin and exceptional sweetness from the flesh, so work well in both sweet and savoury dishes. As a rule, you can use greengages as you would any plum: pushed into a frangipane tart, stewed and eaten over yogurt, or as the fruit for a crumble. They’re high in pectin, making them perfect for jam if you have a glut of them. Nigel Slater has a wonderfully simple recipe for croissants and plums that works excellently with greengages. Slice croissants in half and

place them under the grill for a couple of minutes to crisp on one side. Place halved greengages on the un-grilled side of each croissant, drizzle with honey and place under the grill until the greengages are just golden and starting to break down. Greengages can also handle spice, and love flavours such as ginger, nutmeg, cinnamon and star anise. I make greengage ice cream and serve with crumbled ginger biscuits. Halve and de-stone 300g greengages and cook in a pan with 100g sugar until the fruit is starting to break down and the liquid syrupy. Make an Anglaise base by heating 400ml double cream and pour over four egg yolks whisked with 50g sugar. Add the greengages and churn in an ice-cream machine until set. Don’t let the season go by without trying them in some savoury dishes too. The jam can be served with roast duck or pork, both of which can take a good deal of sweetness. If you find yourself with slightly under-ripe fruit, slice them and pickle with a mixture of white wine vinegar, sugar, salt and some star anise, peppercorns or chilli if you feel inclined. The slices are excellent with oily fish or draped over cheese on toast. Follow Giovanna on Instagram @giovannaryan

CALIFORNIA DREAMING The relaxed inside/outside lifestyle of America’s Golden State influenced the design of this laid-back Surrey garden, perfect for summer entertaining

H

aving spent several years living in LA, artist Armi Maddison and her husband Ian, a communications consultant, wanted to replicate its outdoorsy feel in their home in East Molesey in Surrey. However, it was a challenge as their Victorian cottage wasn’t set up for modern living. Today though, they’ve achieved a tranquil balance between old and new in a space that features a sunny walled courtyard, and a blend of modern planting with salvaged treasures and furniture built by Ian. It also includes Armi’s studio, which is linked to the house via a covered veranda and doubles as a dining area. ‘Our outdoor season is lengthened in this very sheltered southfacing area. In the cool of the evening, we make use of an overhead heater and often sit out into the wee small hours – we have some wonderful get-togethers around the firepit,’ says Armi. ‘And I love the feeling of being able to walk barefoot to my studio.’ The cottage had been empty for four years when the Maddisons bought it, and the garden was unloved and overgrown. A huge redwood and six mature leylandii blocked out light, while ivy and grasses roamed free and the ground was covered in crazy paving and concrete. ‘It took imagination to realise the potential,’ says Armi. ‘The only saving grace was a mature Japanese maple that had survived neglect and building work to become a beautiful courtyard centrepiece.’

Wow-factor view The couple began by replacing the cottage with a contemporary house, leaving only the traditional brick facade, which is in keeping with the street’s architecture. The new building has been designed to give a panoramic garden view from the moment you step inside. ‘It’s modern, secluded and totally unexpected,’ says Armi. ‘Floor-to-ceiling windows open on three sides of the house, making the garden a natural extension of the interior. It’s a tranquil outdoor space in summer and, in winter, a focal point from indoors. Neither the house nor garden would work so well without the other.’

Laid-back design ‘We wanted a garden that was low-maintenance and worked from all sides and viewpoints,’ says Armi. ‘Fortunately, the maple provided

S A LV A G I N G A N D R E P U R P O S I N G Many of the items that give the Maddison’s garden its strong sense of individuality come from the demolished cottage and outbuildings that originally occupied this space. The dining area wall, for example, is faced in wide boards salvaged from the cottage, while the corrugated iron that clads one side of the garden shed and its door is old roofing. ‘The three old galvanized water tanks used as containers were rescued from the undergrowth in the original garden,’ Armi adds. Other treasures were found on trips to local antiques markets – including

the feeding trough, now converted into a pond, and two window mirrors set on the wall above the dining table. ‘Anyone sitting at the table and facing inwards can see the garden reflected in the mirrors,’ says Armi. The key to adapting old containers for use outside, is to clean them thoroughly and drill drainage holes in the base. Then place a two-centimetre layer of gravel in the bottom, with compost on top. Lately, copper containers have become very popular, especially if unpolished, allowing the natural verdigris patina to develop.

D R O U G H T- T O L E R A N T P L A N T S Armi and Ian visited The Beth Chatto Gardens in Essex to seek inspiration for drought-resistant, low-maintenance plants. They found the dry, deep shade beneath the maple the most challenging area in which to establish plants, but Armi has gradually discovered ferns, dwarf acers, hellebores and heucheras that grow happily there. ‘They’re all are so attractive for the variety of their leaf and colour,’ Armi says. She now gives foliage and texture as much consideration as flowers, creating a colour palette that brings year-round subtlety, interest and variety to the garden. ‘But I also love the occasional clashing hues of a bright marigold orange or hot-pink geranium!’ Among the most reliable plants is pheasant’s tail grass, which grows in both sun and shade – the rusty leaves equally at home in dry shade beneath the maple or cascading out of an old water tank alongside fleabane and perennial wallflowers. Nor would an area of dry shade be complete without spurge, with its lime-green heads

that erupt in spring. In sunnier spots, Armi loves gaura for its resilience and the movement it brings over such a long period. ‘Whirling Butterflies’ (left) has long stems of butterfly-shaped white flowers, while salvia, another hardy, drought-tolerant favourite (left, below), brings flower spikes of tiny blue blooms. GROWING IN DRY SHADE • Before planting, thoroughly soak a plant’s rootball and slot into a deep hole half-filled with moisture-retentive compost. Water weekly until established. • Improve moisture retention by creating a dense ground cover of foliage, and mulch heavily with bark chippings in spring. • Bring light into the shade with variegated foliage from periwinkles, variegated ground elder or spindle. • During heatwaves, drench the ground once every 10 days – this draws roots deep into the soil, whereas little-and-often watering fosters weak, shallow-rooted plants.

G A R D E N I N S P I R AT I O N

E S TA B L I S H I N G A LAWN-FREE ZONE The need for an easy, uninterrupted passage between house, veranda and studio prompted Armi’s decision to create a lawn-free zone. ‘We’d had enough of mowing the grass,’ she says. Inspired by a visit to Derek Jarman’s shingle garden on the beach at Dungeness in Kent, the couple opted to put down gravel. Mounds of scabious, thyme and sea pinks punctuate the pebbles, while lavender rests at the base of an olive tree. There are clumps of ornamental grasses such as blue fescue, orange New Zealand sedge and hazy Mexican feather grass, which happily self-seeds. Armi now digs out anything that appears in the wrong place to give to family and friends. ‘Someone once said good gardening isn’t about what you put into the garden, but what you take out!’ HOW TO CREATE A GRAVEL GARDEN • Dig over the area, remove perennial weeds and dig in compost. • Rake level and cover in a permeable, weed-suppressing fabric such as Groundtex Polypropylene Weed Membrane. • Consider a backbone of easy-going evergreen species, such as sea pinks, hebes, grasses, euphorbias and lavender. • Add spontaneity with self-seeders, such as poppies and hellebores. • For each plant, cut two crosswise slits in the membrane, dig a hole and plant, tucking the membrane around the stem. • After planting, hide the membrane with a 7cm layer of gravel. • Adding pebbles in assorted sizes creates textural interest, while inserting lengths of decking ensures it’s easy to walk on.

Today, the tree casts dappled light onto drought-resistant plants beneath.’ Raised beds keep the soil and gravel flooring separate, while also providing structure, seating and home for a variety of lowmaintenance plants that thrive in the loamy soil. ‘I love self-seeding plants, such as aquilegias, daisy-like fleabane, alliums and Mexican feather grass – one of a number of ornamental grasses that give movement in the slightest breath of wind,’ says Armi, who reveals that many of the plants in her garden have special significance. ‘The perennial wallflower ‘Artist Paintbox’ was originally a cutting from my mother, and others are gifts from gardening friends. Our garden is low-maintenance with the easy-going ornamental grasses, plain-leaved or variegated sages, a cardoon with leaves of a silvery grey, ‘Bowle’s Mauve’ wallflowers, and phlomis – the brown seedheads look lovely in autumn, along with the feathery seedheads from grasses. I often collect favourite flowers and leaves to use for printing.’ As an artist, Armi loves to surround herself with visual things that bring joy and look beautiful. ‘The ever-changing colours, the textures, shapes and light found in this little haven satisfy all of that,’ she says. ‘It’s become a deeply personal and special place that Ian and I love to share with family and friends.’ HB See Armi’s work on her website, no5workshops.com

GREEN ROOMS

Now, more than ever, we want to make use of whatever outside space we have, regardless of how tiny it may be. In this extract from her new book Green, garden designer and author Ula Maria showcases small spaces packed with ideas to help all of us bring more glorious greenery into our lives 140 housebeautiful.com/uk

SKY-HIGH PLANTING This page Apple and ďŹ g trees, and even grapevines, can thrive in urban spaces, as this rooftop proves to stunning effect

COTTAGE GARDEN IN THE SKY It’s almost impossible to imagine that a tiny urban roof terrace (left), measuring just under 20 square metres, could be turned into a charming and luscious cottage-style garden. Yet this gloriously green space, the work of garden designer Charlie McCormick, is much more than just a piece of the countryside brought into the city. It’s a functional and productive outdoor area, which showcases how small-scale container gardening can elevate a living space to new heights. Bearing a mixture of flowers, fruit and vegetables, the containers not only shape this space, but also provide flexibility for those who, one day, might want to relocate their garden to a different home. Instead of being limiting, container gardening allows room for experimentation and error with different styles of planting, as proven by this space, where extravagant flowers, culinary herbs and even a productive apple tree can all thrive where least expected.

foxgloves and lupins for a joyful, informal look. Experiment with growing herbs, vegetables and fruit in large containers for the full cottage-garden experience. • Containers can dry out quickly,

especially in summer. Consider installing an automated watering system if your schedule doesn’t allow for regular tending. Bear in mind that some materials are more weatherproof, and the smaller the container, the more likely it will dry out. • Trellis panels create privacy without

blocking light out. Plant clematis or jasmine to cover the panels in foliage and fill the air with fragrance. 142 housebeautiful.com/uk

OUTDOOR EXTENSION A garden can become an integral part of a house and, at times, the most important room – especially when the two work together in perfect harmony. The garden above, designed by Cameron Landscapes & Gardens, is a great example of how exterior space can become an outdoor room. It sits a few steps above the kitchen floor and mimics the interior space effortlessly. Herringbone brick paving resembles the

almost identical-coloured wooden floor inside, obscuring the inside-outside boundary. The planting is a complex play of texture and form in different shades of green – proof that a painterly planting scheme need not involve an abundance of colour. The use of textural foliage and plants of varying shapes and sizes can be just as effective. Here, it brings a sense of informality to an otherwise angular space.

LUSH OASIS The absence of bright colour in this space is compensated for by the richness of textures used in the planting as well as the hardscaping

investment, highlighting the style of a garden and making it more inviting. Here, two large chairs and a bistro-style table provide the perfect coffee spot, while a sofa on the terrace (previous page) is an invitation for a relaxing evening. • Make room for plants in the smallest

Above The herringbone pattern used on the interior area has been continued through to the terraces with brick paving. Solid stone blocks, interplanted with creeping ground-cover plants and ferns for a softening effect, have been used to create a striking pathway to the upper terrace Left White hydrangeas are one of very few flowering plants found in this garden, which otherwise mostly relies on the clever use of textural foliage

of corners. Steps can be inlaid with creeping ground-cover plants and surfaces covered in pots that soften the edges and create moments of beauty. • Link indoor and outdoor spaces by

repeating colours and patterns, thereby creating a sense of continuity. • A palette of green hues with leaf ferns,

topiary and exotic climbers for texture is effective mixed with limited white flowers.

LIGHT TOUCH With a choice of five louvre widths, Atmosphere shutters provide the ultimate in privacy and light control, allowing you to tilt them to the optimum angle for your needs

SHUTTERS EXPLAINED Hillarys shutters come in a variety of styles and finishes so you can choose the perfect look for your home. Here’s our guide to help you decide…

TIER-ON-TIER Designed in two sections, these practical shutters allow you to open the top and bottom sections independently to give you total control over light and privacy. Perfect for rooms that face on to the street or are overlooked by neighbours.

CAFÉ STYLE Originally used in cafés and restaurants to protect the privacy of diners while allowing in lots of light, these stylish shutters cover the bottom half of windows only. They’re super-chic on their own, or can be teamed with full-length curtains for a softer look.

FULL HEIGHT As the name suggests, these shutters cover your window completely, for a sophisticated look that ensures maximum privacy. This type of shutter works with every style of window and can even be fitted to patio doors for a laid-back, continental vibe.

WHY WE LOVE HILLARYS Hillarys always goes the extra mile to make sure its customers are 100 per cent happy. Its excellent service starts with a home visit from a specialist advisor, who will work with you to discuss your options, and answer any questions you might have. Once you’ve chosen your perfect window treatment, Hillarys will measure each window and then fit your stunning House Beautiful shutters. And for total peace of mind, each shutter in the Atmosphere range comes with a five-year guarantee.

WANT MORE? Hillarys also makes solid shutters (with no louvred slats) – great for reducing draughts or covering single-glazed windows; tracked shutters to cover larger areas of glass such as bifold doors, or even to use as a room divider; and shaped shutters that can be crafted to cover arches, gable ends and other feature windows. The collection also includes moisture-resistant shutters for bathrooms and kitchens.

My style inspirations ANNIE SLOAN The colour expert and paint guru on her kaleidoscopic approach to life

Below left Abstract paintings at The Broad art museum were an inspiration Below Gauguin’s The Ford

POWER OF COLOUR

After eight years of art school, all I wanted to do was paint! This gave me great practical experience, which I put to use by writing books on decorative restoration. Then, at the grand old age of 40 and with three young children, I realised I wanted to change the way I worked. For a while, I’d been mixing my own paint – it was easy to use, quick to dry, and worked on anything – and it occurred to me that perhaps other people would like it too. Creating my business was an organic process, and I was soon selling paint and posting it all over the country from a little shop in Headington in Oxford.

Colour feeds, nourishes and stimulates. When you find a bold shade you love, it gives you confidence and strength. Of all the colours in my collection, I most adore Firle, an energetic green, and Napoleonic Blue – it’s bright and bold and easy to work with. Vibrant red is also a favourite. In our house in Oxford, my Emperor’s Silk paint sits next to a wall in Graphite. For me, it’s more about combining different colours than picking just one.

TEAMWORK My factory is a dream come true. Everything in the whole building is painted, and so is the outside! I have an inspiring workforce. There are 60 of us, including my lovely husband David. Everyone is creative and collaboration is key. I’m never not on social media, and love to watch what our paint community gets up to – it’s endlessly fascinating to see how they interpret my colours and hear what they love. It’s important to listen to feedback and helps us to see things through fresh perspectives.

GLOBETROTTING

Above Annie loved the colourful fabrics worn by Ethiopian women Right Old Ochre, Honfleur and Scandinavian Pink chalk paints liven up a bedroom 162 housebeautiful.com/uk

I’m very much a citizen of the world, feeling affinities with many people, places and cultures. I’m incredibly fortunate that I’ve been able to explore around the globe. Ethiopia was a particularly fabulous trip, as I travelled with Oxfam and was able to meet women farmers from empowerment projects it was running. I loved engaging with them in an outstanding setting of verdant countryside, and seeing their colourful fabrics.

HISTORY OF ART It was my father’s appreciation of art that sparked my love of colour. I found myself drawn to the work of Gauguin, and one of the colours in my collection was inspired by a shade of dusky lilac he often used. I named it Emile after his son. I love the American abstract painters too, and recall a fantastic collection at The Broad that I saw on a visit to Los Angeles. I adore the work of British artists Eric Ravilious and Ben Nicholson too, and while their use of colour is relatively muted, I’d happily display them at home.

HOME & HEART I live in East Oxford, close to lots of shops and restaurants. Anywhere on Cowley Road is almost guaranteed to be worth eating at! We’re well served with museums and galleries too. My favourite is the Pitt Rivers. From the outside, our home looks like a regular townhouse, but inside my tastes are bohemian. I play around with paint here – it’s a good way to test if our paint can be used for a mural on your bathtub (yes, perfect), or if it will hold up on your kitchen cabinets (five years and counting). In a dream world, I’d have fresh flowers every day, but compromise with lots of plants. They’re good for the mind and the soul. HB

These days, it’s more important than ever that our homes act as a haven – a place to kick back, curl up and relax in – serving as a buffer between us and the outside world. But what makes you feel instantly at ease? Surely, it’s a matter of personal taste. Rather than focus on the trends this season, we thought we’d pick four timeless looks for you to choose from – and the good news is, each of them will last much longer than a few months. So what sums up your style? For many, it will be the popular Nordic look typified by simple design and a pale, chalky palette. Some will feel more energised by bold hues and clashing prints, and will be drawn towards the more colourful end of the spectrum. Then there are the looks inspired by travel: Bohemian is made up of eclectic finds cleverly arranged together, while Opulent – a luxe look influenced by boutique hotels – creates a sense of occasion, with sumptuous velvets, rich woods and gilded finishes. Whichever style suits you best, we hope you’ll feel inspired. We’d also love to see your favourite room to relax in – share with us on Instagram using #relaxwithhb. Wishing you all a calm month ahead.
