The Night Before Christmas or, “A Visit From St. Nicholas,” Henry Livingston, 1808 ‘Twas the night before Christmas, when all through the house Not a creature was stirring, not even a mouse; The stockings were hung by the chimney with care, In hopes that St. Nicholas soon would be there;

And then, in a twinkling, I heard on the roof The prancing and pawing of each little hoof. As I drew in my hand, and was turning around, Down the chimney St. Nicholas came with a bound.

He spoke not a word, but went straight to his work, And filled all the stockings; then turned with a jerk, And laying his finger aside of his nose, And giving a nod, up the chimney he rose; He sprang to his sleigh, to his team gave a whistle, And away they all flew like the down of a thistle. But I heard him exclaim, ere he drove out of sight, “Happy Christmas to all, and to all a good-night!”

Peppermint Brittle Ingredients: 2 pounds white chocolate 30 small peppermint candy canes Directions: Line a large jellyroll pan with heavy-duty foil. Place white chocolate in a microwave-safe bowl. Heat in microwave on medium setting for 5 to 6 minutes. Stir occasionally, until chocolate is melted and smooth.

Chocolate Crinkles 8 tbsp (1 stick) unsalted butter 4 oz unsweetened chocolate, coarsely chopped 2 cups all-purpose flour 2 tsp baking powder 1/4 tsp salt 3 large eggs 1 cup granulated sugar 3/4 cup lightly packed dark brown sugar 1 tsp vanilla extract 1 cup confectioners sugar, for coating the dough

Melt the butter and chocolate in a medium, heavy saucepan set over very low heat. Stir constantly until almost fully melted. Remove the pan from the heat and stir until the chocolate is completely melted and smooth Whisk together the flour, baking powder, and salt in a medium bowl Using an electric or stand mixer, beat the eggs in a large bowl until frothy, about 45 seconds. Add the granulated and brown sugars and beat until thick and smooth, about 1 minute. Beat in the melted chocolate mixture and vanilla. With the beaters on low speed, add the flour mixture just until completely incorporated Cover the bowl with plastic wrap and refrigerate until the dough is firm, at least 4 hours or overnight Preheat the oven to 350°. Line a cookie sheet with parchment paper Place the confectioners sugar in a medium bowl. Set a sheet of wax paper on the work surface in front of you. Using a small spoon, scoop chunks of dough and roll them between your hands into 1" balls

Place the balls on the wax paper, forming enough balls for 1 cookie sheet. (There's no getting around messy, sticky hands; just wash them after each batch.) Drop about 5 balls at a time into the confectioners sugar and shake the bowl to fully and generously coat them. Place 2" apart on the prepared sheet Bake for about 11 minutes or until the cookies are puffed and crackled on top. The tops should be soft, even a little wet looking, but the edges should feel firm Slide the parchment off the cookie sheet and onto a rack. After a few minutes, remove the cookies from the paper using a thin metal spatula and place them directly onto racks to cool. Store cookies, layered between sheets of wax paper, in an airtight container for up to 4 days; or freeze for up to 2 months. sponsored by:

Recipe submitted by Carla William, Office Manager, Sentinel Apple Upside Down Gingerbread Preheat oven to 350 degrees F. Grease or spray the bottom and sides of an 11 x 7 x 2� metal pan.

in a bowl. In a separate bowl, use an electric mixer to beat together the butter, molasses, sugar, buttermilk, milk, and egg. Add the dry ingredients and beat until the batter is smooth and thick (about a minute), scraping down often. Pour the mixture over the top of the apple slices in the prepared pan.

Pour 4 Tbsp. melted butter into the pan and sprinkle 3/4 cup brown sugar evenly over it. Arrange 3 tart baking apples, peeled, halved, cored and thinly sliced, over the butter and brown sugar.

Bake on the middle oven rack for 50-60 minutes, until a toothpick comes out clean. Cool in the pan for 5 minutes.

Thumbprint Cookies "Butter, sugar, flour and jam are all you need to make these Swedish thumbprint cookies."

1 cup butter, softened 1/2 cup white sugar

2 cups sifted all-purpose flour 1/2 cup any flavor fruit jam

DIRECTIONS: 1. Preheat oven to 375 degrees F (190 degrees C). 2. Cream butter and sugar until light and fluffy. Add sifted flour, and mix well. Shape dough into 1-inch balls and place on cookie sheets. Imprint your thumb in the center to make a 1/2inch indentation. Fill with your favorite preserves. 3. Bake 15 to 20 minutes or until golden brown at the edges.

Shortbread Cookies 2 cups butter, softened 1 cup white sugar 2 teaspoons vanilla extract 4 cups all-purpose flour Directions 1. Preheat over to 350 degrees F 2. Cream butter and sugar until fluffy. Stir in vanilla; add flour and mix well. 3. Put through cookie press and form cookies onto baking sheets. Bake for 10-12 minutes.
