’m always enchanted by our annual travel issue. I may not have been one of the first to ride aboard Belmond’s new – and first to the region – South American luxury train (that honour goes to veteran travel writer Peter Hughes on page 115), nor have I got to know the pink city of Jaipur as well as Daisy Finer (p102), nor even joined our fashion team among the zebra and giraffe on the Kenyan plains to shoot our awe-inspiring cover story, but just reading about it or looking at the pictures lets my mind wander to the beautiful places of the earth without leaving the office. And taking a few moments out of ‘real life’ is definitely worth it. What makes a good holiday great? Impromptu adventures. And, naturally, who you go on holiday with. A great hotel should always… be light and bright, with a courtyard or a garden and free of annoying themes and buffets of any sort. Where would you return to again and again? I would absolutely return to The Upper House in Hong Kong. Their attention to detail is incredible – it makes all the difference. Where would you never return to? The Frangipani Villa Hotel in Siem Reap is a Fawlty Towers of a place. The bedlinen was ancient, the pool murky and, on return from dinner, there were toads on the carpeted staircase. What makes a good holiday great? Sun, sea, lovely food, and no one around but my wife and no one contacting me. A great hotel should always… have polite staff, a large bed with wonderful sheets, delicious food and views. Where would you return to again and again? As a photographer, I shoot abroad a lot and have been blessed to have visited many incredible places, but if I never went back to Africa that would make me very sad. Where would you never return to? I do not think there is anywhere that I have been to that I hated. Being a creative, I see beauty in areas that others do not.

T

WO YEARS AGO I RAN A MARATHON in Kenya. Actually, it was only a half marathon, but despite putting in the prep with trainer Tim Weeks... it was hell. Altitude, heat and a head swirling with negative thoughts gave me a battle I wasn’t expecting. But thinking of the money I was raising pulled me through. I was running for The Milgis Trust (milgistrust.com) – a roots-up organisation covering 6,000km/sq of northern Kenya, created by superwoman Helen Douglas-Dufresne, who believes that wildlife and pastoral people can continue to live peacefully side by side, as they have done for hundreds of years. Over the holidays I went to visit the area with my parents and Mr Love, (fresh off a film set). We walked up to 20km a day with Helen, her caravan of 50 camels and elegant Samburu warriors, while making romantic camps at night, showering under a small sack of warm water hoisted into a bush and sleeping under the stars.

The trust aims to encourage wild elephant and other wildlife to return to the remote and desperately dry area of Samburu-land. But, as Helen says, ‘You can’t talk to a thirsty man about conservation, until you’ve quenched his thirst.’ So we visited one of 14 water projects; solar power and hand-dug wells, that provide in total 130,000 litres of water a day for the various communities. The results are clear. In Africa, over the last ten years, an elephant has been killed every 15 minutes. Here in the Milgis, not one elephant died from poaching last year. It’s working. OUR CHRISTMAS WAS A CAMPFIRE, the songs of Samburu warriors and the percussion of wooden camel bells. No presents, no greed, no wifi, no excess. Which may sound a bit ‘bah humbug’, but when I read that in Europe we give each other an estimated €3.7bn worth of unwanted gifts – this kind of ascetic Christmas felt just right. Where do you go when you don’t want anyone to get hold of you? The best place is on board a ship in the middle of the ocean. No phones, and internet is very slow and expensive.

Favourite game to play? Pit, because the whole point is to shout really loudly and cheat. And Roulette because the croupier’s call reminds me of my darling mother, who said it all the time, whatever was happening – but never in a casino: ‘Faites vos jeux! Rien ne va plus!’

Where’s home to you? The Côte d’Azur. I love the colour, the heat, the buzz and the delicious food. Not to mention the trams and the trains, the wonderful health service and ‘the Gym’ – not the one where you’re supposed to do workouts but OGC Nice, the handsome local football team.

Which historic country house would you snap up? Le Château de Mazan,

it had been my grandmother, Adeline Blois, who had been born in Ireland, rather than her father, my great-grandfather, Sir John Ralph Blois. Then I could have an EU passport.

What are Saturday afternoons made for? Matinées either on stage or in the audience. Last thing you saw at the theatre? Ballet La Mégère Apprivoisée (The Taming of the Shrew) at Les Ballets de Monte-Carlo with a breathtaking Petruchio, played by Francesco Mariottini. I sat in the front row just above the orchestra pit, which was heaven. In the audience I also spotted Maude Sabourinin, one of my favourite dancers. I had seen her on the same stage the year before, dancing Carabosse in La Belle, and had been spellbound.

I did have a few rather vivid nightmares, though, possibly related to the fact that it was the country home of The Marquis de Sade. Years ago at Glasgow Citizens Theatre and later touring Europe, I appeared in Philosophy in the Boudoir, by the said Marquis, so maybe his ghost didn’t like the show.

What would you do as mayor for the day? Encourage everyone to greet the first person they meet with a smile and a ‘Good Morning’.

What would you change about yourself? Learn to open my post the day it arrives rather than leaving it till it’s a mountain that I cannot face.

What would really improve your life? To be a bit more tidy. Once when I shared a house with some friends, they got back late one night, heard creaks upstairs and called the police. A constable searched the rooms, then said, ‘Uh oh. I’m sorry to say one room has been ransacked.’ It was my bedroom... on a normal day.

Who’s coming round for dinner? My son, Angus. I’d cook him garlic and tomato bucatini with parmesan and spinach, but usually he prefers his own cooking.

Where was the last place you ‘discovered’? The Goring hotel cocktail bar for the warmest welcome.

Where do you go to escape the city? Who wants to escape a city? I love the noise and busyness of town life. Though I do adore the sea and go to the seaside whenever I can, but it would always be a town with a seaside, like Largs, Roscoff, Le Touquet, Naples or Nice. Most memorable night out in London? Getting on the back of a motorbike taxi in my Indian silks and high heels to be transported from the red carpet premiere of The Best Exotic Marigold Hotel in Mayfair and zooming across London to Waterloo’s Old Vic Theatre – scrambling into my overall and slippers and straight on to the stage as the charlady Mrs Clackett for the opening lines of Michael Frayn’s Noises Off. Best thing a cabbie has ever said to you? ‘I like you, you look much better in real life.’

What makes your blood boil? Brexit. I so wish

here can hardly be a more quintessentially British brand than Smythson. It was Samantha Cameron who, during her time as creative director, summed up its charm: ‘ it’s an intellectual, slightly quirky, luxury brand which also has a sense of humour’, and now we’ll wait with bated breath for what new creative director Luc Goidadin (formerly Chief Design Officer at Burberry) has in store for it. Smythson’s fans range from the Queen to Hollywood stars (Vivien Leigh), the arts (video artist Quentin Jones) and politics (Sir Winston Churchill and Baroness Thatcher). Most famous for its stationery – its copperplate engraving on its own paper, specially milled in Scotland, is the gold standard for personalised headed writing paper – a younger generation has taken to its notebooks and diaries (its Fashion and Soho diaries are found on the most stylish of desks). It was Frank Smythson himself who first came up with the notion of making diaries and later notebooks with the famous blue featherweight paper, so fine that a diary could fit into a man’s pocket – something it had never

Still today it’s the rustle of the tissue paper when you part the visiting cards or the feel of the tissue-lined envelopes as you open them that stand them apart. Early on he also introduced some bags – most interestingly perhaps the Bond Street Bag in 1902 – but it wasn’t until Samantha Cameron came up with the Nancy (a beautiful soft version made from fine quilted leather) that handbags came to be seen as a classic part of its range. Today Smythson is still a privately owned company, and its chairman and owner Jacques Bahbout seems keen to build on its enduring reputation. As always with long-standing traditional companies, the key consideration is how to keep it modern, relevant and refreshed without abandoning the very things it is most known for. This year the company is 130 years old. To celebrate it has launched the Bond collection, which includes a beautifully refined backpack as well as a miniature version of the currently immensely fashionable cross-body bag.

GET PERSONAL Personalise the rucksack or anything else you fancy with one of its ‘gold’ brass plated alphabet charms. Every letter of the alphabet is available in what Smythson calls the St Germain alphabet, a typeface exclusive to it. £50.

Smythson has come up with just such a beauty. Jewellery heists seem to be making the news on an almost weekly basis these days. Years ago our MD, John Warr, recognised the need for a bespoke custom bike build department and put me in charge of our King’s Road division. You’ve been described as the master of the modern Bobber as well as GP-styled Dyna and Sportster. What general designs have you been most proud of? My Sportster creations have been very successful and appeal to riders who appreciate a more urban styled bike. Who have been your coolest clients? As a rule, all my clients are cool. We’ve had some famous faces, such as Formula One champions, Hollywood movie stars and recently, a Duchess. All are treated equally as fellow Harley enthusiasts. Which model would you most recommend for a novice? All but the biggest Grand Tourer versions are suitable for novice riders. Harleys are

extremely easy to ride because they have low seats and a low centre of gravity. Where do you get your inspiration from? Not pigeonholing my vision or looking only at motorcycles. I like to look at all structures and styles, one of my most famous bikes was inspired by Jules Verne’s Nautilus. Have you had any really off the grid ideas? I had a guy who had Saudi’s biggest humidor. He said to me, ‘Design me a bike that’s inspired by my love of cigars’. Why buy a bike rather than a sports car? On a Harley you get to see, feel and smell your environment. It is not as sterile as a car (or ‘cage’ as we bikers call them). You are designing a bike for the Huntsman chairman and owner, tell me more about the brief... It will be a twist on a modern-day Bobber, so I want that 1930s look with more than a splash of 2018. We’re also going to use a little bit of the fabulous Huntsman signature fabric in the layers, saddles and bags. Dream destination for motorbiking? I did a ride two years ago in northern Thailand, between Chiang Mai and Pai. Beautiful scenery and amazing people. Ride on. The highlight of the event was the silent auction of the dress designed by Alice Temperley for the cover of Great British Brand to raise funds for Women for Women International. ‘It meant a lot to me to be able to auction off the bespoke Temperley London dress. It is a fantasy dress – timeless and iconic and I hope the winner will enjoy wearing it for years to come,’ said Alice. Brita Fernandez Schmidt, Executive Director of the charity, encouraged guests to dig deep with the final gong coming down on the bid by Andrew Cotgrove, from Loomah Bespoke Carpets and Rugs, who said, ‘I am not sure what came over me but as a father of two daughters and business owner working with very talented women I was so inspired to hear about the amazing work Women for Women International are doing to help women who have survived war rebuild their lives. I knew the dress would be something our family would treasure for years to come.’

GOOD READS Richard Hopton reviews three novels and a collection of short stories

Zoe Gilbert This spellbinding debut novel is set in Neverness, a primitive, imaginary island community; a preindustrial society whose citizens live by the rhythms of nature and the superstitions of their forefathers. There is a prelapsarian, Norse, folkloric feel to the book, as if Beowulf were let loose in the Garden of Eden. Gilbert’s prose is simple, deliberately down to earth: ‘A cured stick for a stirrer. A sturdy one for a sweeper. Brittle sticks for tinder. A green branch to hang the pot. A forked one for ceremony.’ The names, too, have a primitive Old English resonance to them: Ivy Rincepan, Clotha, Madden, Gad, Turpin, Werrity, Shilla, Linnet and Pike. Her prose is also beautiful, describing Neverness’ countryside and fauna with acutely imagined detail, conjuring up a world tinged with magic and a powerful sense of the supernatural. One of the characters, Verlyn Webbe, has a wing where an arm should be; an oddity presented as being perfectly normal. Magic and fantasy are a serious matter. As a result, for all its charm and imagination, Folk is wholly lacking in humour. It’s as if the author realises that the slightest hint of a joke would prick the illusion, reducing the whole enterprise to the level of a Monty Python spoof of the Vikings or a Blackadder series set among the medieval peasantry. It’s also debatable whether Folk can properly be considered a novel. It reads more like a collection of short stories and, as the publishing history makes clear, many of the chapters have already been published as separate pieces. ‘Tether’, the concluding story, is an unconvincing attempt to tie the collection together into a novel. The individual stories have characters in common and they share the environment of Neverness, its civilisation and culture. Certainly, the cumulative effect of the stories is to establish Neverness in the reader’s imagination but perhaps this makes it more of a travelogue of the mind than a novel. Bloomsbury, £14.99

A rumination on friendship, memory and loss. Set on the fringes of Sydney’s literary and academic world, The Life to Come gently sends up the absurdities of modern life. At one point, a character announces that, ‘My naturopath has me on a caffeine-free protocol’. Likewise the novel is scathing about the pretensions of the literary world: one scene describes a public reading of a ‘cross-genre work narrated by a cell phone’. De Kretser writes with a light descriptive touch; the novel is well observed without being overbearing. A quietly satisfying, enjoyable book. Allen & Unwin, £16.99

THE WANDERERS Tim Pears

This is the second novel in Tim Pears’ West Country trilogy. It tells the story of the wanderings of Leo Sercombe through rural Devon and Cornwall in the years immediately before the First World War. The novel unfolds slowly but its real charm lies in Pears’ beguiling descriptions of the West Country as it was a century ago, its primitive, unmechanised farming and ancient landscapes. It is also a treasure trove of long-forgotten country practices and folklore. The counterpoint to Leo’s ramblings are the well-ordered lives of the landed, aristocratic Prideaux family. THE DREAMS OF BETHANY MELLMOTH William Boyd

The author’s latest book contains seven short stories and two longer ones, The Vanishing Game: An Adventure and the title story. At over a hundred pages, this is almost a novella, a study of ambition and the random chances of life. In these stories, Boyd’s characters have lives which are, generally, enviable but which on closer acquaintance are also frayed. There is a sense of slight underachievement, of human frailty. Boyd’s style is engaging, worldy and witty, the collection a treat for enthusiasts of his work and new admirers alike. Viking, £14.99

ROAD TEST Italian passion is at the heart of Maserati’s new SUV, says Jeremy Taylor

Maserati – sometimes just a name can set the pulse racing. Its newest machine may be an SUV but it looks every inch as desirable as an Italian supercar. Levante is the company’s first sports utility vehicle. Created to cash in on the fastest growing sector of the UK car market, this machine is built by a company synonymous with passion and flair. Would I rather drive to work in a BMW or an Audi when a Maserati is available? German SUVs are arguably the best but for style and emotion, this Italian marque wins hands down. Named after a Mediterranean wind, Levante looks even prettier than the sublime Jaguar F-Pace. The interior feels posh, it’s relatively fast and even my diesel test car shows plenty of sporting DNA. With more chic than a Porsche Cayenne, the Levante boasts an exhaust note that makes knees tremble. This car is also fitted with optional silk seats, thanks to a collaboration with fashion brand Ermenegildo Zegna. The rest of the cabin is a leather-clad vault of exceptional quality. Build is second to none and even the touchscreen – a major gripe with previous Maseratis – is simple to use. Most SUV buyers will still opt for a German make, although the stylish, alternative choice is a Levante. It’s no class leader but expect to feel special every time you reach for the key. For those on a New Year diet, Levante’s 2.2-tonne bulk might sound off-putting. However, thanks to a V6 diesel that has been tweaked to perfection, the engine makes light work of the extra weight. It’s still odd that Levante’s bold dimensions don’t translate into a roomier interior – rear headroom is not ideal for tall teenagers. However, up front, that’s not an issue. My GranLusso is the luxury version rather than the GranSport. Both share the same engine and eight-speed gearbox, while the GranLusso features pretty body-coloured trim, 19-inch alloy wheels and wood inserts in the cabin. I recently drove the Maserati from London to Italy across the Alps. At motorway speeds it’s stable, refined and there’s hardly any road noise. Despite the raised profile of an SUV, the Levante handles a fast hairpin bend with aplomb. Thanks to all-wheel drive, the Maserati copes admirably with a muddy lane or a snow-stacked driveway. It’s really designed for the tarmac though – any Range Rover would leave it behind on rough terrain. Still, it’s a delight to drive and updates for 2018 include a raft of optional safety features. More power required? Maserati has just launched a Levante that uses a Ferrari developed V6 petrol engine. With an extra 150bhp under the bonnet, it really does go like the wind. RATING: 3/5 wellies

ON LOCATION For this month’s cover shoot, the fashion team took to the plains of Africa, staying at andBeyond’s Kichwa Tembo Safari Camp to walk on the wild side

A

s the single propeller aircraft descends through the clouds and the vast expanse of the Masai Mara opens up below, it strikes the C&TH fashion team that there couldn’t be a more perfect backdrop for the March travel issue fashion story than andBeyond’s Kichwa Tembo Safari Camp in Kenya. Before stepping foot on the manicured lawn of this hotel on the Zambezi river, guest are greeted by wallowing hippos, sleeping crocodiles and vultures on the wind-in-hair boat ride to the hotel. Arriving here is an adventure worthy of its namesake: zebras nibble lush grass beside the waterside bar and impala loll in the shade near poolside sunbathers. The hotel is named after Dr David Livingstone, who campaigned to overthrow the Arab-Swahili slave trade and gave the nearby Victoria Falls its British name. Inside it’s all colonialstyle dark teak. Plush, plumped-up cream sofas and oversized lamps fill large vaulted rooms and spill out onto a deck beside the clipped lawn. Spa treatments are given in gazebos next to the river. From this close, the nearby Victoria Falls lives up to its local name, ‘The Smoke That Thunders’. Tourists can swim across to the Devil’s Pool, a Jacuzzi-sized nook that appears at the top of the waterfall when the river is low. With just 11 inches of rock between you and the 100m drop – the term ‘safe’ might be a stretch, but no one has fallen over the edge yet. Cruises along the Zambezi river to see roaring hippos are a must, as is whitewater rafting on the Batoka Gorge, which is a huge rush. There is simply nowhere else like this in Rwanda. THE HIGHLANDS, Tanzania

Set in the remote Ngorongoro conservation area, surrounded by rolling hills that could almost pass for the Scottish Highlands, this is the latest opening from Asilia and its first in this part of Tanzania. There are eight dome-shaped canvas and teak tents, each with striking black and white portraits of Masai women hanging above huge beds, layered with cosy blankets and tartan cushions. Cow hide rugs on the floor and a wood-burning stove, which is lit at night, make it snug as a bug. Communal spaces have been strategically placed to make the most of the light at different times of day: sunrise from the dining room at breakfast and sunset in the bar, while sipping a hot ‘savannah banana’ cocktail (black coffee, banana liquor and dark rum), are both spectacular. But what makes this place really special – other than the landscape – is the people. VICTORIA FALLS SAFARI CLUB, Zimbabwe

Just after noon each day, vultures circle this 20-room hotel. They know the drill. The staff throw scraps off the balcony while guests watch, latte in hand, as the enormous predators swoop to catch the meat in their claws before it has time to reach the ground. Just ten minutes from the Victoria Falls in northern Zimbabwe, this hotel suits all kinds of traveller with its mix of rooms, suites and thatched cottages complete with kitchens (although children younger than ten are gently discouraged). The neighbouring sister hotel’s restaurant feels like an enormous tree house, and serves an à la carte dinner under its huge vaulted wooden ceiling, while elephants amble past. For a traditional Zimbabwean experience, The Boma lays on a buffet in an enormous thatched building held up by tree trunks. Crocodile steak, warthog and impala curries, followed by fried worms for the truly adventurous, equip everyone for the after-dinner drum show. Waterbuck, impala and zebra graze on the vast plain that flanks this tiny boutique lodge. Comprised of just eight swanky thatched huts, everyone wakes up to the epic view of the Chobe River (which separates Botswana from Namibia). The lodge is three kilometres from the wild and wonderful Chobe National Park with its lions, cheetah, wildebeest – and its bounty of beautiful elephants (129,000 in all). Meals are served in a grand rattan and wooden pavilion decked out in fabric from the Ndebele tribe in southeast Zimbabwe. U

p a gently winding, tree-lined street in the Santa Monica district of LA, where spacious residences are partially obscured by palms and hedges, sits a handsome, two-storey house that opens up into a courtyard with a swimming pool that is illuminated at night with coloured underwater bulbs. The family home, with its Christian Liaigre furniture and airy interconnecting rooms, is discreet – just how LA’s citizens like it. The owner, Larry Leight, an LA native, is a connoisseur of Angelinos style. He has been a part of the sprawling, beguiling city through the heady late ’60s and ’70s (he saw Jimi Hendrix play live at The Forum) and he set up eyewear brand, Oliver Peoples in 1987. The vintage-look frames appealed to the creative classes, yuppies and business moguls alike and became synonymous with the fashion and Hollywood-fuelled glamour of the late ’80s and early ’90s. Famously Patrick Bateman (of American Psycho fame) donned the tortoiseshell O’Malley frames. Larry has witnessed the ebbs and flows, from the South Central riots to the Paris Hilton bling of the Noughties, through to the wellness boom of today and many a passing fad in eyewear along the way. In LA, glorious blue skies and the constant tussle between anonymity and self-publicity, mean that shades are an essential part of the LA uniform.

Over the past ten years, the city’s pulse has changed as a swathe of creative and tech entrepreneurs put down roots, adding a new dimension to a city previously dominated by the film industry. ‘LA has a mystique that has always existed because of the entertainment business. But now the city boasts culture, technology and art. Ten years ago, LA fashion was a joke, but in recent years Tom Ford, Burberry and Dior have all staged their collections here and there is an upsurge in younger indie brands. Beyond the red carpet there is a really diverse culture that is worth talking about,’ says Larry, describing the new global appeal of the city and the trigger for his latest eyewear venture, Mr Leight, which he is launching with his 34-year-old son, Garrett. Leight’s home, where he lives with his second wife, Brit, and teenage daughters Dylan and Devon, acts as a think tank, social space and family hub. The house was built in the 1950s but when he bought it in 2000, it was a ‘tear down’. ‘We gutted it right down to the studs and rebuilt it from there. I wanted this specific property because it was the highest on the street and there is almost a 360-degree view of the mountains and water on a clear day. There are very few properties in Santa Monica like it. It was like a jungle, so we cleared the entire yard and layered the hillside. My vision for it was really an indoor/outdoor environment,’ says Leight of the rooms, which have sliding glass doors that lead out onto the courtyard.

‘I wanted this specific property because it was the highest on the street and there is almost a 360-degree view of the mountains and water on a clear Los Angeles day’

‘I wanted to create my own mini Four Seasons resort. We built a large pool and landscaped the area around it to make it feel super private,’ says the well-travelled Leight, who also keeps a house in Kauai, Hawaii. Last autumn, Leight set about renovating the home, working with interior designers Paula Press and Kendra Sosothikul of Santa Monica-based Studio Berosso. The Leights were after an earthy, organic feel. ‘I wanted to incorporate pure, natural colours and create a less formal and more meditative vibe,’ says Leight. ‘One of my favourite designers when I first started decorating was Christian Liaigre and, interestingly enough, his new collections have moved in the same direction as the look I was hoping to create in my current house – just a bit more casual and organic, but still extremely luxurious. So I was able to combine some of my older pieces of his with newer work from the current collection,’ he says of the Nobu coffee table that rests on a Tai Ping rug and the Liaigre armless Muse chairs in the living room. Hanging on the wall is a moody Rena Bass Forman photo of a Bali ocean scene, purchased from the Benrubi Gallery in New York. Upon entering the family room, you are immediately struck by a primitive image of a blue horse. ‘It’s by my wife’s father, Navarre Scott Momaday, who is an incredible Pulitzer Prize-winning Native American artist,’ says Leight of the heroic leaping animal. The

modular sofa (B&B by Antonio Citterio) and the dining table and chairs by Liaigre lend a relaxed, convivial mood to the room. The eclectic feel is in contrast to the clean, streamlined kitchen, which features a classic Saarinen table and Tulip chairs. The space is flexible to their needs, whether that’s somewhere to hide or somewhere to socialise, like the pool area, which is peppered with chairs and Pucci tables. ‘Although this is a great house for entertaining, it is also our sanctuary. As we are out all the time, we use our home as an escape from the craziness of the city. My meditative spot is out by the pool. The only thing missing from my backyard is a wave pool. If I had one, I would never leave,’ laughs Leight, who surfs at San Onofre beach in San Clemente. Each family member had the chance to help create their own personal environment. Leight has a Slim Aarons photograph in his office that epitomises the glamour and mystique of LA life and his daughters, Devon and Dylan, worked with Studio Berosso to achieve their diverse visions. Devon wanted an earthy feel, achieved with a tribal sculpture, a rawhide rug and a hanging Cloud light by Brooklyn maker Richard Clarkson. By contrast, Dylan opted for a clean white space that comes alive with textures and a James Huniford upholstered sofa and a big round mirror by RH Modern. As a building it is as white as pearl, with dove grey shutters and overlooking a 22-acre garden. The wonderful electric blue walls are inspired by Mughal designs; the Italian menu is reminiscent of Harry’s Bar in Venice. This buzzing restaurant and lounge, set within the Narain Niwas Palace hotel, is just the spot for cocktails and aperitivo (arancini, bruschetta, vegetable tempura) which you can eat outside around a fire pit or in the shade of a cool cabana, as peacocks strut around the lawn. No trip is complete without a visit to the City Palace, where exhibits include ceremonial armoury, royal costumes and Hindu scriptures. Adjacent lies Jantar Mantar, an observatory with Unesco World Heritage status and 19 astronomical instruments, including the world’s largest sundial. F

or a metropolitan Englishman living at sea level, this was a journey of rapid adjustments, sensual and cultural as well as environmental. A railway train so lavish that it has 24 bedrooms with ensuite showers, two dining cars, a bar, a baby grand piano and a gourmet kitchen is approaching platform fantasy in any case. But let that train go rummaging for adventure through the oxygen-thin air of the Andes and perceptions switch to spin cycle. The Belmond Andean Explorer, which launched last spring, is the first luxury sleeper train in South America. It runs at Alpine altitudes, on the fourth-highest rail track in the world, between nearly all the most famous attractions in southern Peru. I took the northbound journey from Arequipa. For three days, and some 450 miles, we trundled at a tranquilising 20mph through the chiselled massif of some of South America’s biggest mountains. Our destination was Cusco, capital of the Inca empire, at the threshold of the sacred citadel of Machu Picchu. On the way were two more of Peru’s extraordinary sights, the great inland sea of Lake Titicaca – where a boat sped us to the floating Uros islands made from totoro reeds – and the Colca Canyon. It was there that I had to make an instant cultural adaptation during a traditional Inca ceremony that I mistook for a smart hotel cocktail party. Belmond Las Casitas is a collection of 20 comfortable cottages scattered about a hillside garden above the Rio Colca. They were opened originally in 2008 by Orient-Express Hotels, Belmond’s

previous incarnation, and then sold four years later. I was among the first guests to stay at Las Casitas after Belmond reacquired it last year for Andean Explorer passengers wanting to see the Colca Canyon. On our first night there was a garden party. It was dark, apart from the flames of a fire pit and a torch I had brought from my room. I saw two figures approaching, one of them carrying a large dish under a cloche cover. I took him to be a waiter bringing canapés. ‘It’s an offering,’ he said. ‘How very kind,’ I replied. ‘Let me look.’ He lifted the cover and I shone my torch. I saw no vol-auvents or blinis, but was prepared to try it anyway. The waiter stopped me. ‘It’s an alpaca foetus,’ he explained, which would be offered to Mother Earth as a sacrifice to mark the hotel’s reopening. Colca Canyon, just downstream from Las Casitas, is a great gash in the mountains, in places nearly twice as deep as the Grand Canyon. It is also a home of the Andean condor, among the world’s largest flying birds. They nest in caves in the canyon wall from where they can launch themselves straight on to powerful thermals. For a bird weighing up to 15kg, that’s an important consideration. It’s a rare spectacle. The condors fly all around you – above, below and at eye level – as they drift along the canyon rim. midnight blue. It was built in Australia in the early 1990s to run a luxury service between Sydney and the Queensland Tableland. But it didn’t work out and, two years ago, Belmond shipped the whole set to Peru to be turned into the Andean Explorer. The retro design of the old train was unashamedly influenced by the Venice Simplon-Orient-Express. Much of it remains. Brass luggage racks, lovely wood marquetry on the washroom floors, wood panelling and embossed ceilings are all original. Even the door keys are Aussie. We climbed on board, literally: retractable steps reach down to the trackside allowing you to get on and off almost anywhere. At one point we stopped on a hillside for the chefs to give an al fresco demonstration of ceviche-making. In the lounge car, pisco sour cocktails were being served, accompanied by a pianist at the baby grand. Beyond, at the end of the train, was a proper old-fashioned observation car with a viewing platform open on three sides where you could lean on a wooden rail and watch the track behind unreel through the mountains. But now enthusiastic attendants were showing us to our cabins. The 48 berths are divided into four grades of cabin. The most expensive, of which there are only two, have double beds, the cheapest have bunks. All contain oxygen cylinders as the train reaches elevations of more than 14,250ft, not far short of Mont Blanc. There is no predicting how anyone may be affected by altitude. Some on this trip suffered headaches and a feeling of lassitude. Others felt no more than

slightly woozy and breathless. The train carries a doctor, but the best precaution is to have at least a day in the mountains to acclimatise. Tourist trains commute between the surreal and reality. It is surreal, in the heart of the Andes, to sit at a table dressed in white napery and dine on an amuse-bouche of Lima bean cappuccino prepared by one of Peru’s most celebrated chefs, Diego Muñoz. Ditto having a Peruvianinspired treatment in a new spa car that is being added in May. Reality lies outside. Creaking and squeaking, with the occasional unaccountable jolt, the train ambled from the Peruvian altiplano, a great swell of grassy highlands with herds of grazing alpacas, past hillsides ribbed in 1,800-year-old terracing, to curl round mighty spires of rock, 16,500ft high and daubed with snow. And all the while there was the rhythmic beat of the rails, until the train stopped and ‘stabled’ for the night in silence. Approaching Cusco there were villages with small fields of beans and corn, cows in tiny walled pastures and sheep tethered beside the track. Women were swathed in voluminous dresses in brilliant colours – fuchsia, lemon and turquoise – and invariably wore hats, shiny white straw trilbies or tall brown bowlers. This is one of our most iconic dishes at Andina. Although associated with the coast, ceviches are in fact eaten all over Peru, especially in the Andes, where there is a wide variety of river fish. In this recipe, we have brought together some key Andina ingredients to create a ceviche that sings with authenticity.

You won’t find another country in the world with such a variety of unique flavours, native ingredients, traditional dishes, ancient cooking techniques, influences and fusions. What can we eat there on a shoestring budget? Go to the city of Arequipa and eat at their top Picanterias – these are family-run restaurants selling delicious soul food. … and the best restaurant to splash out on? For something truly memorable I’d chose Ámaz. It’s one of Peru’s top restaurants, run by Chef Pedro Miguel Schiaffino. Its focus is on Amazonian influences and the dishes and décor are exquisite.

AMARILLO CHILLI PASTE 1 tbsp olive oil ¼ onion, finely chopped 2 garlic cloves, chopped 2 amarillo (or medium heat red) chillies, deseeded and finely chopped

METHOD

Make the coriander herb oil by blitzing the ingredients together with a stick blender. For the amarillo chilli paste, heat the oil in a frying pan and fry the onion for 7–8 minutes until soft. Add the garlic and chilli and fry for 2–3 minutes. Season to taste and allow to cool completely. Blitz to a smooth paste. To make the tiger’s milk, put the ginger, garlic, coriander and lime juice in a bowl. Stir and leave to infuse for ten mins. Strain through a sieve and add chilli paste and ½ tsp salt. Taste to check the balance of flavours and add more salt, chilli or lime juice if necessary. Soak onion slices in iced water for five mins, drain and lay out on kitchen paper to dry completely. Bring a small pan of water to the boil. Salt the water then add the sweet potato cubes. Simmer until just tender (about 5–7 mins). Drain and set aside. Put the sea bass in the bowl with the tiger’s milk for one minute, then add the onion slices, coriander, avocado, physalis and sweet potato. Turn all the components over very gently (you do not want the sweet potato or avocado to break up), then divide between four bowls. Season to taste and serve with crushed cancha corn, coriander leaves and coriander herb oil.

Favourite ingredient that is currently in season? Artichokes for a delicious, seasonal artichoke pie. Fluffy, crusty, creamy and delicious. Biggest mistake in the kitchen? Many pastries and cakes. I’m not great at baking as you need to have a level of love for science. Most memorable meal out? At La Nueva Palomino for my birthday last year. Twenty Picantera women organised a lunch for me, each bringing a dish they had cooked. We ate, we talked, we laughed, we danced, we sang. Unforgettable. Who would you most like to cook for? I’d invite Martin Luther King, Bob Dylan, Victor Jara and Bob Marley for Sunday lunch: a mushroom and broad bean soup called Kapchi De Setas, an Andean classic. Do you have any unusual rules? We have a saying: ‘Aquí se cocina con cariño.’ It means here we cook with love. So, everything we do in our kitchen should be thoughtful, considered and caring.

For all the off-the-cuff charm of the new wave of hotels, nothing soothes frayed nerves faster than the comforting parameters of English country house formality. In this eventuality, you don’t want fussy fare; fortunately the hotel’s just-opened restaurant fits that bill with a stately slant on comfort classics that begins with Martin Brudnizki’s design for the dining room (think classic English country house but with a dialled up colour palette) and ends with syrupy sticky toffee pudding. Speaking of classics, The Square has weathered London’s fickle scene better than most. After 25 years under the legendary Phil Howard (and a brief hiccup under Yu Sugimoto), Marlon Abela (behind nearby Umu and The Greenhouse) has pulled it bang up to date with Clément Leroy’s light-as-a-feather French cooking, which feels as fresh as its minimalist new look. Imitating local art galleries with tactile polished concrete walls, art connoisseurs might note the centrepiece fashioned from tablecloth fabrics by artists of the moment Oscar Murillo and David Altmejd, but gourmands will be far too distracted by what’s on the plate – especially if it features the dainty black truffled buckwheat tortellini with lardo di colonnata and equally delicate broth. The French Riviera is back with a bang

THE SOUTH OF FRANCE

W

ith it’s sun-kissed light, balmy temperatures and rolling vineyards, it’s no wonder that the South of France is still one of the favourite second-home destinations for British buyers. According to Anthony Lassman of property finders Nota Bene Global, southern France’s star is only rising; those who might have previously toyed with Ibiza or Croatia are setting their sights back on Provence and the Côte d’Azur. ‘It’s coming back into fashion,’ he says. ‘People appreciate the fact it’s not just a resort location but somewhere with a year-round life, a sense of history and that’s so easy to get to from Britain.’ The Macron effect has helped bring confidence back to the South of France, according to Jack Harris of Knight Frank. ‘For the past six years the market has been in the doldrums but it has now stabilised and buyers are seeing it as a base for price growth,’ he says. After Paris, it is St-Rémy-de-Provence that has experienced the biggest price rises over the past 12 months, increasing five per cent when the average for the region is two to three per cent. Buyers are also drawn to the high rents that properties can command in this part of France between May and October. ‘It helps towards the cost of running a second home,’ Harris continues. If Lassman could choose to invest anywhere in the South of France he’d buy on the Côte d’Azur, ideally a house on one of the exclusive domaines near St Tropez such as Le Capon. ‘You’re moments from the beaches, the town and also some

beautiful hilltop villages,’ he says. Properties on the Côte d’Azur don’t come cheap, however. Those with a budget of less than €1m can forget about owning property in St Tropez or one of the Caps, says Fleur Buckley of French Entrée. There are, however, more affordable alternatives if you are prepared to look slightly outside these hotspots. Properties around Le Cap Taillat near Ramatuelle, for example, tend to be cheaper than those near St Tropez, says Lassman, while enjoying the same coastline, and at Port Grimaud, five kilometres away, townhouses are available for under the million mark and moorings are 25 per cent cheaper. ‘It has a serene, Provençal atmosphere, and the glamour of St Tropez is just a short water-taxi ride away,’ says Charles Antoine Sialelli of Athena Advisors. ‘It has always struck a chord with British buyers as its one of the most beautiful spots on the French Riviera.’ The nearby villages of Vence, Valbonne and Tourrettes-sur-Loup are also a good investment, according to Buckley. ‘Heading inland will not only give you a refreshing break from summer crowds but you will usually pay less too,’ she continues. Tourrettes-sur-Loup is a particularly affordable option – there are village houses available for less than €400,000. Away from the buzz of the coast, St-Rémy-de-Provence is another prime second-home destination, according to Harris. Not only does it have a strong and stable property market but, as with Nice and Cannes on the Riviera, it has a year-round life. ‘The train from London to nearby Avignon is a great draw and the landscape

The town of Céret, in the southernmost part of the area, half an hour from Perpignan airport. The town itself is quintessentially French with cobbled streets shaded by giant plane trees and there is a highly regarded weekly market but it also has a Catalan influence due to its proximity to the Spanish border. Picasso and Salvador Dalí both spent time here; there are a number of Picasso’s works showcased in the Museum of Modern Art. Apartments here cost from €130,000 and, for around €350,000, you can purchase a traditional stone-built farmhouse with Catalan influence. Whether you’re buying in a lesser-known area or on the Riviera, it’s crucial to pick the best location you can, according to Alex Balkin of Savills. ‘Best in class properties are close to international airports and have access to technology such as broadband,’ he says. ‘People like to be connected these days, even when they’re on holiday.’ In this respect, some might argue that the infrastructure in the South of France is rather too efficient.

In the Hollywood Hills – a Spanish-style home built in 1923 that was full of classic Old Hollywood charm. Best thing about it? There were lots of amusing stories about it dating back to the Golden era of Hollywood, so I always felt creatively charged living there. Worst thing about it? Every year on Oscar Sunday the helicopter traffic above was chaotic. If you didn’t understand what was happening you would have thought it was a war zone.

Where do you live now? I have moved to Middleton, Greater Manchester and am settling into Hopwood Hall, built by my ancestors in the 1400s. It is a restoration project that will take years to complete.
