The Lost City Released: 22 April

Downton Abbey: A New Era Released: 29 April It’s the second big screen outing for the Downton Abbey lot. Violet Crawley (Maggie Smith) has inherited a lovely villa in the South of France and it’s perfect timing as these aristocrats are probably feeling very tired and need a lovely holiday and a bit of sun. If you’re a Downton Abbey fan, you’re in for a treat and if you’re not, you’ve probably not bothered reading this far and that’s fair enough.
The unbearable weight of massive talent
Sandra Bullock plays a novelist, famous for her adventure novels and Channing Tatum plays the handsome model who's always on the front cover of her books. But when she’s kidnapped by a billionaire (played by Daniel Radlcliffe) who’s convinced she can help him find a real lost city, Channing tries to embody the hero he portrays on the covers and attempts to go and rescue her. It’s like if Sex and the City’s Carrie Bradshaw tried to do an Indiana Jones – the potential for hilarity is high.
The Northman Released: 15 April Director Robert Eggers, the visionary behind the haunting horrors The Witch and The Lighthouse, brings us a new film that combines the tension of his previous work with dramatic action. A young Viking prince witnesses his father’s (Ethan Hawke) murder at the hands of his uncle and is forced to flee his home. Years late, the prince (played by Alexander Skarsgård) makes it his life’s goal to avenge his father and rescue his mother (Nicole Kidman) and kill his uncle. Also starring Anya Taylor-Joy, Björk and Willem Dafoe, The Northman won’t be an easy watch, but you won’t be able to look away.
Released: 22 April In this action comedy, Nicolas Cage plays Nicolas Cage. Yep, you read that right. The story follows a cash-strapped Cage whose career has taken a downward turn and agrees to make a paid appearance at a billionaire super fan’s birthday party. The twist? Cage has agreed to be an informant for the CIA since the billionaire fan is a drug kingpin. What could go wrong? Expect lots of Nicolas Cage memes, jokes and tropes to come to life in what claims to be the most Nicolas Cage film ever.
The Bad Guys Released: 1 April In films where the characters are animals, the bad guys are always the same sorts of animals aren’t they? Wolves, sharks, spiders, snakes etc. This bunch of animals decide to shake the status quo and go straight and become good. But stereotypes can be hard to shake, and things don’t go to plan. Featuring the voice talents of Sam Rockwell, Awkafina and Richard Ayoade, this is sure to be one of those animations that has something for children and adults alike.
Did you know? Remember that famous scene in Raiders of the Lost Ark when the swordsman shows off his skills with the sword just be quickly gunned down by Indiana Jones? The sequence was originally written as a long fight scene but at the time of filming, Harrison Ford and a lot of the film’s crew were sick with dysentery. To avoid everyone filming such a taxing scene, Ford suggested that Indy just “shoot the sucker” instead. Director Steven Spielberg gave it the okay resulting in one of the most iconic film scenes of all time! 11

Based on the book by South African author Lauren Beukes, the Shining Girls follows Kirby Mazrachi (played by The Handmaid’s Tale Elisabeth Moss) who is a survivor of a brutal attack. Years later, Kirby feels her reality constantly shifting and finds a recent murder is linked to her own assault. She teams up with a reporter to try and find the person responsible for her attack and this murder, but it seems the assailant is always one step ahead and things are more complicated than Kirby could have imagined. It’s going to be a tense thriller that will keep you guessing.
Doctor Who: Legend of the Sea Devils Easter, BBC Jodie Whittaker is back for her penultimate outing as the Doctor before she hands over the key to the Tardis to the next incarnation, whomever it may be! After a couple of heavy outings for the Doctor, Yaz (Mandip Gill) and Dan (John Bishop) they find themselves in 19th century China where a village by the sea is under attack from pirates and a monster from the ocean depths (which is probably from space, this is Doctor Who after all). Can the Doctor and her friends stop the pirates and this sea devil and save the village and the planet? Arghh matey! Let’s hope she isn't made to walk the plank!

Slow Horses 1 April, Apple TV+ What happens to MI5 agents that mess up on missions? They end up in Slough House, an administrative purgatory and become known as slow horses, with little hope of getting back up to Regent’s Park where the action is. Led by Jackson Lamb (Gary Oldman), the group just pushes paper and nothing more. But a certain event will draw the slow horses back into the race, giving them the chance to prove that they still have what it takes to get the job done. The series also stars Kristin Scott Thomas and Jonathan Pryce and is based on the book of the same name by Mick Herron.
Russian Doll 20 April, Netflix “Thursday. What a concept!” The excellent Russian Doll is back for a second season. In case you missed the first season, the show follows cynical New York dwelling Nadia (played by the brilliant Natasha Lyonne) who is stuck in a time loop, something akin to Groundhog Day. Nadia keeps dying and returning to a party that’s being thrown in her honour and with every loop her patience gets thinner and thinner. Expect the same sort of dark comedy from the first season as Nadia continues to work out how and why this is happening to her.
Did you know? The Sopranos and its logo are iconic today. But when the show was coming together, the producers added a gun to the logo because HBO was feeling worried that viewers would think it was a show about music, not mobsters! 12

Both artists love to paint their home territory and explore themes of marsh, beach, sea, boats and harbour; interpreting them in their highly individual styles. While Linds paints vigorously using a palette knife to make thick impasto textures, John uses a paintbrush and his work is delicate and meticulous. Both work in oils and acrylics, and share a love of colour.

Rehearsals begin on 19 April in Norwich Norwich’s multi award-winning Voice Project Choir is at last returning to live singing after the pandemic forced them to move online. They are now inviting people to join their open-access choir to sing in Arc of the Sky, a site-responsive performance at the Cathedral of the Marshes - Holy Trinity Church, Blythburgh, Suffolk on 2 July 2022. Rehearsals begin on 19 April in Norwich. The first session is a free taster for anyone who wants to find out more before committing to the whole project. A day spent in Norwich is one well spent. Wander through Norwich Market for delicious street food from around the world. Norwich Puppet Theatre is a gem of a theatre in Norwich and has two shows for the family this Easter. Red Riding Hood (2, 5-10 April, tickets £9, family of 4 £32). Shows are at 11am for all ages, with shows at 2.30pm for ages 4+, with both performances on 5 April relaxed and the Friday afternoon show captioned. The Elves and the Shoemaker takes place on Saturday 16 April at 11am and 2.30pm with tickets priced £9 and a family of 4 £32. The Puppet Theatre isn’t just about performance it’s also about learning and making. This Easter they offer a family workshop - What Comes Out of an Egg? on 8, 9 and 15 April at various times including a relaxed session (ages

, or ‘sunny Hunny’ as it’s also aptly known, began its life as a purpose-built resort in 1846. It has retained its Victorian character and is still a popular holiday destination for visitors from near and far. Renowned for its famous striped cliffs, the town is divided into the villages of Old Hunstanton and New Hunstanton – you can easily walk between the two and see how they differ. As the only west-facing resort on the east coast, it’s worth heading to the beach towards the end of the day to enjoy a spectacular sunset over the sea.
What to see and do
Spring and summer are especially wonderful times to visit to appreciate the beach’s vast sands, shallow waters and rock pools. In the town itself, the gardens, including an Esplanade Garden and traditional Victorian promenade garden, are at their most delightful – why not follow the Horticultural Trail round the town?
There are plenty of family-friendly activities in Hunstanton to keep all ages busy, including a bowling green, crazy golf, pitch and putt, amusements and a children’s play area. The Sea Life Centre is also a popular attraction and particularly handy if the weather isn’t great. See the resident common seal colony and the surrounding landscape from a different perspective on a trip with Searles Sea Tours, who offer a seal safari or coastal tour on one of two unique ‘Wash Monsters’, World War II amphibian crafts which take you out to your boat from the South Promenade. A little further afield is Norfolk Lavender; acres of world-famous lavender gardens that are used to produce an array of gorgeous-smelling and tasting products, from jam and candles to soap and bath oil.

else get thoroughly egg-cited for Easter? The days are getting longer, brighter and warmer. Lambs are skipping about in the fields and flowers are starting to bloom. Perhaps my love of Easter is also rooted in the fact that there’s an abundance of egg-shaped chocolate on the shop shelves. For some reason, chocolate just tastes so much better when it’s egg-shaped. With Easter also comes another school holiday and it’s the first Easter break for two years without Covid restrictions. What are we all going to do? Well, here are some ideas…
Visit a Farm Nothing says Easter like baby animals, right? Luckily, there’s no shortage of them to be found on our doorstep. Why not pop along to Wroxham Barns for one of their lambing weekends (17 April-20 May) for the chance to see a live birth and meet the brand new rare-breed lambs? The Fun Park is also well worth a visit, boasting attractions such as jumping pillows, a train ride and mini golf. The combined ticket for the Junior Farm and Fun Park works out to be great value. You could even treat the children (and yourself, obviously!) to an afternoon tea whilst you’re there. www.www.wroxhambarns.co.uk Easton Farm Park will also be hosting their Spring Babies Carnival (4-24 April) celebrating all things spring and baby animals. Personally, I can think of nothing better! Just melt some chocolate in the microwave, or over a bain-marie if you’re feeling posh, and get the children to mix in some corn flakes or rice crispies. Spoon the mixture into some cake cases and decorate with Mini Eggs before popping in the fridge to set. Simple... and not a soggy bottom in sight. than a stroll through the countryside with the sun on your face, the birds singing and the foliage bouncing into life. The estate comprises of 520 acres of woods, parkland and a lake with waymarked paths suitable for dogs and pushchairs, making it a familyfriendly destination for a wander. There’s also an Easter Trail running from 2-19 April consisting of 10 nature inspired activities with an Easter egg at the end. Get Crafting Easter bonnet making Easter bonnet making is a wonderfully creative Easter activity. Traditionally at Easter, people would wear new clothes and new hats to symbolise the new life and rebirth associated with the festival, hence the emergence of the Easter bonnet. Many primary schools still host Easter bonnet competitions but even if yours doesn’t, you can still get involved. The beauty of this activity is that you can make it as simple or as intricate as you like. If you don’t feel like channelling your inner Kirstie Allsopp, simply draw outlines of hats on pieces of paper and encourage the kids to decorate them using felt tip pens or even scraps of tissue paper and cut-outs from magazines or newspapers. Nest cakes I’ve yet to meet a child who doesn’t almost implode with excitement at the prospect of baking. Thankfully, nest cakes
Easter Trees Another Easter tradition that has become increasingly popular in the UK in recent years is the Easter Tree. Originating in Germany where it’s known as Ostereierbaum meaning 'Easter egg tree', it’s rooted in the idea of eggs symbolising new life. Have a look on social media and anyone who’s anyone appears to have an Easter tree. They’ve never been so in vogue but thankfully they can be exceptionally easy to make. Get the kids to collect a few twigs and arrange them in a vase before spending some time decorating blown-out eggshells. If you don’t fancy the mess, you can also pick up ready-to-decorate egg decorations (that might also be a little more robust) from craft shops like Hobbycraft. Egg Hunt It’s not Easter without an Easter Egg hunt. However, if you’ve got toddlers, pets or a child with allergies, you’ll know that there’s nothing practical about hiding chocolate eggs out in the open. How about hiding decorated eggs or even egg-shaped cardboard cut-outs that can be traded for chocolate eggs at the end of the egg hunt? If you’ve got older children, you could even leave a trail of clues for them to follow to an Easter treat and make the event into more of a scavenger hunt. Egg and spoon race Eaten your body weight in Cream Eggs and need a way to burn off those calories and an outlet for all the children’s sugar energy? How about an egg and spoon race? Traditionally reserved for primary school sports days, it seems an egg-propriate activity for this time of year. 31

The first in the Chaos Walking series of young adult fiction is hailed by my 13-year-old as "the best book he has ever read... so far". A great accolade as he reads a lot. Ness has written an enthralling sci-fi novel which grips readers throughout, presenting them with tough questions about identity, ethics and the nature of truth. I urge all of the young readers to take a bookbefore-movie approach; not that the Tom Holland movie is awful, it's just not not in the same league as the novel. Over a decade on since it was first published, the themes are as relevant now as they were then. Cheese & onion tarte tartin This
is the kind of thing you'll want to rustle up if you're hosting a dinner party. Your guests will be totally blown away by your pastry prowess. It looks the business, tastes delicious and is a great way to use up any onions you have knocking about in the cupboard! We like to use a quick-and-easy pastry sheet from the store rather than making our own, but that's your choice of course. Quick word of advice, you might want to open a bottle for this one.
INGREDIENTS: Serves 8 as a starter, 4 as a main • 7 mixed red and white onions (about 500-600g) • 3 Tbsp vegetable oil • 1 Tbsp dairy-free butter • 24 sage leaves • 1 Tbsp sugar • 2-3 Tbsp balsamic vinegar • 20g smoked dairy-free cheddar • 1 x 375g sheet ready-rolled dairy-free puff pastry • Salt and black pepper To serve • Green salad
METHOD: Preheat the oven to 200°C. Place a 24cm deep ovenproof frying pan with a lid over a medium-low heat. You will also require a board or plate that will fit tightly over the pan. Cook the onions Peel and halve the onions. Add the oil, dairy-free butter and half the sage leaves to the hot pan. After a couple of minutes, pour off a little of the sage butter into a small bowl. Add the onion halves to the pan, cut sides down. Season generously with salt and pepper, sprinkle the sugar over the onions and drizzle over one tablespoon of the balsamic vinegar. Turn down the heat, cover the pan and cook for 15 minutes. Finely grate the cheddar and finely chop the remaining sage leaves. Mix the cheese and sage together and set aside. Build the tart Unroll the pastry and cut it in half
widthways. Take the lid off the pan and scatter half the sage and cheese mixture over the onions. Drape the two pieces of pastry over the top to cover the onions, they will overlap in the middle. Carefully tuck the pastry in around the onions, being careful not to burn your fingers on the side of the pan. Prick the pastry all over with a fork and brush the top with the reserved sage butter. Transfer the pan to the hot oven to bake for 25 minutes, until golden brown and puffed up.

be afraid of this one. Yes, it's spicy, but it also has a beautiful depth of flavour. To do it properly, four teaspoons of chilli powder is right. For a milder but still hot curry, go for two teaspoons. Just make sure it's not extra hot chilli powder, if it is, tone it down!

INGREDIENTS: Serves 4 • 1 potato • 1 large brown onion • 3 large tomatoes • 6 garlic cloves • 3cm piece fresh ginger • 10g fresh coriander • 1 Tbsp vegetable oil • 3 Tbsp tomato puree • 500ml Curry Stock • 2 Tbsp white-wine vinegar salt For the tempeh • 400g tempeh • ½ tsp salt • 1 tsp ground turmeric • ½ tsp chilli powder • 2 Tbsp flour • 1 Tbsp vegetable oil For the spice mix • 4 green cardamom pods • 2 big bay leaves • 2-4 tsp hot chilli powder • 1 tsp cumin seeds • 1 tsp fennel seeds • 1 tsp ground coriander • 1 tsp ground turmeric • ½ tsp black peppercorns • ½ tsp garam masala • ¼ tsp ground cinnamon
METHOD: Place a saucepan of salted water with a lid on a high heat. You will also need a steamer or heatproof colander and a large frying pan. Prepare your potatoes and tempeh Cut the potato into 2cm chunks. Cut the tempeh into 2-3cm chunks. Add the potatoes to the pan of boiling salted water. Place the steamer or colander on top, add the tempeh and cover. Cook the potatoes and steam the tempeh for 7 minutes. Remove the tempeh and set aside. Drain the potatoes. Cook the tempeh Measure the salt, turmeric, chilli powder and flour into a bowl and stir to combine. Add the steamed tempeh and toss to coat completely. Place a frying pan over a medium-high heat and pour in the vegetable oil. Add the tempeh to the hot oil and fry for about 10 minutes, stirring regularly, until lightly browned. Remove and set aside.
Prep the ingredients Peel and grate the onion. Roughly chop the tomatoes. Peel and grate the garlic and ginger. Finely chop the coriander. Cook the curry Measure the spice mix into a dry frying pan. Add a tablespoon of oil and place on a medium heat. Cook for 2 minutes, adding half a cup of water to loosen if it gets too dry. Add the grated onion and a pinch of salt. Saute for 5-7 minutes, stirring frequently, until the fragrances have released. Add the garlic and ginger and cook for a further 3 minutes. Add the tomato puree and a large splash of water and cook for 3 minutes, stirring frequently. Add the stock, vinegar, chopped tomatoes, tempeh and potatoes. Reduce the heat to medium-low and simmer for 10 minutes. Taste and adjust the seasoning, adding more spice mix, salt or vinegar if needed. Serve up Top with the chopped fresh coriander and serve. 41

about being a role model and being authentic,” says Clinical Nutritional Therapist Catherine Jeans. “I’m not trying to be a clean, green, perfect person! I practise what I preach. That’s what’s inspiring.” Passionate about food’s impact on our wellbeing, Catherine has spent the last 12 years helping people feel good. She’s helped people to address underlying causes of health issues and improve their energy levels and mental health, all through what they eat. Catherine talked to me about the gut and brain connection, and the diverse population of bacteria living in our gut microbiome, claiming “it’s our second brain!” Scientific research, including studies of thousands of Norfolk school children, shows that we can positively impact our physical and mental health simply by eating more vegetables, fruit

and plant-based food. Dietary advice is all over the place: on social media, TV shows and direct from our friends. It’s easy to be overwhelmed by it all, or to disregard health ‘gurus’’ advice as unworkable with our lifestyles. Catherine believes it’s her realism about this that makes her inspiring. “I’m a real person who likes a glass of wine and a bar of chocolate!” she laughs, “The green smoothies, eating 10 a day and buying 100% organic isn’t a reality for most people.” She tries to give a more practical and attainable approach to nutrition, and estimates that she has helped thousands of people. Since Catherine’s training, she has
nutritional therapists. Her work spans from helping children and parents to peri-menopausal women, people with gut issues and those wanting to lose weight, so she certainly knows what she’s talking about! “90% of the population don’t eat a healthy diet,” she tells me. That’s why she

That’s why she’s offered free talks to charities and their beneficiaries, and supported schools with their menus and nutritional education. But it’s not about ‘a diet’, rather it’s about eating what’s right for our bodies and our minds. She reminded me that we need to fill our bodies with nourishing, grounding food and work on blood sugar balancing by consuming fewer sugar and caffeine filled products, which actually increase stress and anxiety after that initial energy boost. Catherine herself was inspired as a child by her parents: her mum had her eating healthy foods including home-grown vegetables from an early age, and her dad ran his own business. With a step-mother specialising in nutritional therapy, it’s unsurprising that Catherine is so passionate
about her own nutrition business. Catherine previously had a successful career in TV production, but burning the candle at both ends caused her health to suffer. Following a refreshing career break travelling, she was involved in a serious accident. She broke her back and, while recovering, realised she needed to re-evaluate her priorities. “I wanted to change how I lived my life. We have one life, and if we’re pushing ourselves down a path that feels incongruent to who we are, we’re never going to experience real joy.” She completed a three-year training course in London - with two pregnancies alongside - and created her business. “I love the people that I work with. It’s so diverse. I’m here to advise and coach them, and it’s so great to see the changes they make and how they feel in just a couple of weeks.” Talking more about career changes, Catherine offered some real pearls of wisdom: “It’s so important to do what sparks joy, otherwise you’ll never be the best you can be. You can gradually make a shift, you can integrate so many things, and you’ll still be drawing on skills from your first career. It’s all a journey, and it’s about taking the learning from all that we do.” It’s clear that Catherine’s experiences have taught her plenty, and as we come to the end of our chat, she offers a final piece of advice: “You have to have your grounded time. It’s important to be present, prioritise good sleep and good food.”

recipe shows you how easy it is to make butternut squash spaghetti by spiralizing the squash, which makes a great and healthy alternative to pasta. You can make different sauces for your squash spaghetti, however this is a lighter alternative which uses burrata, courgette, mint and lemon.
INGREDIENTS: • Half butternut squash, spiralized • 1 Green courgette, thinly sliced • 1 Yellow courgette, thinly sliced • Maldon Salt

METHOD: Begin by peeling and deseeding the butternut squash. Then cut into sections and using a spiralizer, create long ribbons which look like spaghetti. Place a large frying pan on the heat and drizzle with olive oil. When the pan is hot, add the butternut squash spaghetti and sauté for 5-7 minutes, until softened and golden - then remove from the heat.

While the butternut squash is cooking, place a second small frying pan onto the heat and drizzle with olive oil. When the oil is hot add the slices of courgette and fry for a few minutes on each side until they are golden and toasty – you may need to do them in batches. Set to one side when ready.
Now you can plate up. Pile a golden heap of butternut squash spaghetti onto two plates. Top with some burrata, fried courgette slices, diced chilli, fresh mint leaves and some lemon zest. Finish each plate with a final pinch of Maldon salt, some cracked black pepper and a drizzle of olive oil.

INGREDIENTS: Serves 2 For the lamb & potatoes • 2 Tbsp balsamic vinegar • 2 Tbsp olive oil • 1 rosemary sprig, leaves chopped • 2 lamb steaks • 6 medium sized potatoes, sliced in to 1cm rounds • 2 garlic cloves, slightly bashed • 150ml lamb or beef stock • 2 tsp redcurrant jelly • Small knob of butter For the peas • 500g of frozen garden peas, defrosted and drained • 2 tsp olive oil • 50g of butter, softened • 1 garlic clove, crushed • 2 shallots, finely chopped • 1 bunch of fresh mint leaves, chopped • Freshly ground black pepper • 100g Feta cheese
This is a great spring dish perfect for a romantic Easter dinner date and can be perfectly paired with a pinot noir METHOD: Lamb & potatoes Mix the balsamic vinegar, 1 tsp olive oil and rosemary together in a bowl. Add the lamb steak, ensuring that it is completely covered in the marinade, and set aside for one hour. After an hour start to warm dinner plates ready to serve. Boil the potatoes until tender - try not to over cook as they run the risk of falling apart when fried. Heat the olive oil in a large frying pan, add the potatoes and garlic, and fry gently until golden. Sprinkle some salt over the potatoes and then push to the side of the pan. Remove the garlic and then add the lamb steaks and fry for 1-2 minutes each side. Don't be tempted to over cook the lamb as this can make it tough - best served medium. Remove the lamb and potatoes and leave to rest in a warm place.
Lamb steak crushed minted peas, with
feta & fried potatoes Keeping the pan on the heat and add the stock, and bring to the boil. Deglaze the pan, scraping any of the flavoursome sticky bits from the bottom. Simmer until reduced by half. Then mix in the redcurrant jelly, continuing to stir until melted. Taste and season accordingly - remember you can add a few dashes of balsamic vinegar if it is too sweet. Crushed minted peas Add the butter and crushed garlic. Mix well together to form a garlic butter.
Add half of the peas to a food processor and roughly blitz - remember you want to achieve a crushed look not a fine purée. Add the oil to a pan over a medium heat and gently sauté the shallots for 2-3 minutes, then stir in 2–3 Tbsp of the garlic butter. When the butter has fully melted add the whole and blitzed peas. Next add the mint to taste. Keep stirring for a few minutes until the peas are heated through and season to taste. To serve Divide the potatoes between two warmed plates and add generous portions of the crushed minted peas. Slice each steak into 5-6 pieces and arrange on top of the peas. Spoon over some of the sauce and then crumble over some feta. Serve immediately with a large glass of pinot noir. 47

chocolate tart This
ridiculously good no-bake chocolate tart features a layer of hazelnut butterscotch, made with xylitol (Total Sweet) instead of sugar, and a layer of chocolate ganache. The perfect guilt-free(ish) dessert, that is diabetes-friendly!

Tart crust: • 200g rolled oats • 2Tbsp Total Sweet Xylitol • 1Tbsp cocoa powder • 100g butter, melted
Crust: Combine oats, Total Sweet and cocoa powder in a food processor until it becomes coarse. Then add the melted butter and pulse until the mixture sticks together. Transfer the mixture to a 9” tart tin. Press firmly to create an even tart shell. Refrigerate for at least one hour. Butterscotch: Melt butter in a medium-size saucepan and add the sea salt and Total Sweet. Cook over a medium heat whilst stirring for about 10 minutes, or until golden brown. Remove from heat, add the double cream and stir until well combined. Set aside to cool for at least 20 minutes. Meanwhile, grind the toasted hazelnuts until coarse. Mix with the butterscotch until well combined. Pour the mixture onto the oat base and refrigerate for 20 minutes. Chocolate Ganache: Heat the double cream in a small saucepan until almost boiling. Add the chocolate and Total Sweet (if you’re using unsweetened chocolate) and stir it until all the chocolate has melted and the mixture is smooth. Pour it over the butterscotch layer and pop in the fridge to set. Remove from fridge 10 minutes before serving.
Hazelnut butterscotch: • 70g butter • 170g Total Sweet Xylitol • 100ml double cream • 100g toasted hazelnuts • 1/4tsp sea salt Chocolate ganache: • 170g dark chocolate, chopped (unsweetened preferably) • 200ml double cream • 3Tbsp Total Sweet Xylitol (Only if unsweetened chocolate is used)

METHOD: Grease a 20cm round cake tin with olive oil and line the base with parchment paper. Preheat the oven to 190˚C. Take the blood oranges and carefully cut into thin rounds (as thin as you can go!). Sprinkling 30g of the golden caster sugar on the bottom of the cake tin, over the paper, then arrange the slices on top in a circular pattern. Use the end pieces of the blood oranges to squeeze over any juice and then set aside while you make the cake batter. In a large mixing bowl mix together the plain flour, semolina, baking powder and salt. Adding salt to your baking helps balance and enhance flavours. Next in a smaller bowl mix the vanilla extract, olive oil, orange juice and zest. Place the eggs and sugar into a stand mixer – or you can use an electric whisk – and
beat them together until they are pale and fluffy. Next add the dry ingredients, followed by the wet ingredients and beat until smooth. Pour the cake batter into the tin, on top of the orange slices, and smooth over. Place the cake tin into the preheated oven and bake for 30-40 minutes, until golden brown on top and cooked through. Remove from the oven and allow to cool for 10 minutes. Then carefully remove from the cake tin before turning it upside down onto a plate and peeling off the baking paper. Allow the cake to then cool completely before slicing and serving with crème fraîche.

Fitness Find your Fit! HIIT
Expect a high energy, full throttle blast! HIIT stands for High Intensity Interval Training. Prepare for short bursts of maximum effort (10 -45 seconds), followed by rest periods. This type of workout really fires up the metabolism for a good calorie burn. Because it is such high intensity, classes will usually be 30-40 minutes maximum. HIIT training can take many formats, a typical class might include exercises like squats, high knees, push-ups and lunges, but it can also be done with weights, or on cardio equipment.
Does the
thought of setting foot in a gym fill you with dread? The great news is there are lots of community classes in village halls all over the country. These can be much less intimidating than the traditional big gyms. Community instructors are used to dealing with people from all walks of life and all fitness abilities, so don’t be afraid to reach out and ask questions if you are not sure if a class would be right for you. These are some of the different classes you may find in your local area.
Pilates
Expect to be surprised by how much these harmless looking movements will challenge you! Originally named Contrology, it was developed as a form of rehabilitation for soldiers, and later, dancers. Expect a low impact workout which focuses on muscular control to work on strength, mobility and endurance. Usually largely floor based, although there can be standing elements, this is a full body workout with a particular emphasis on the core, posture and spinal/pelvic alignment.
Yoga
Zumba
Expect to shake your money maker! This is a dance based cardio and muscular endurance workout, mixing classic aerobic class moves and funky dance steps. Latin inspired tunes will lead you through a fun, sweaty workout that is great for relieving stress, burning a few extra calories and putting the fun factor into fitness.
Boxercise
Expect to finish the session feeling ready to take on Anthony Joshua! This class uses boxing technique adapted for a fitness environment to make it safe, using pads and boxing gloves alongside cardio and bodyweight exercises. The format can be varied, incorporating games, fitness drills, circuits, pairs work and much more! It’s an amazing stress reliever, a great way to make new friends, have fun and feel empowered!
Barre Workouts
Expect to channel your inner Prima Ballerina! This is a ballet inspired concept, also incorporating elements of Pilates and yoga, utilising a fixed handrail (barre), and using small precise movements to build strength, muscular endurance and muscular control throughout the whole body. A great one for helping to improve posture. Although low impact, it is still a challenging workout.
Expect to feel relaxed, de-stressed and stretched! There are lots of different types of yoga, but Vinyasa or Hatha are great for beginners. Expect a calm and relaxing environment, working with your breath to ease you into the various postures. Some floor, some standing, all are great for flexibility, balance, strength and mental health. Contrary to popular belief, you don’t have to be flexible to do yoga, your teacher will be able to adapt the postures for all levels and abilities. You’ll need a bag to pop your drink, towel, keys and phone in. I like this one from Glossier.

It’s
such a civilised way to travel, isn’t it - and reminiscent of a bygone age when we were not in such a hurry and life could be enjoyed at a more leisurely pace. Seemingly, more and more of us are discovering the joy of cruising, with 30 million people taking to the seas in pre pandemic 2019, and, having returned from a recent trip, it’s easy to see why. You simply hop on board (your luggage is taken care of the minute you arrive port side), make yourself at home in your ensuite cabin and then relax. There’s nothing to stress about - you just chill out and enjoy yourself, with the most difficult decision being where to have lunch! One local company, Ipswich-based Fred Olsen Cruise Lines is known as the friendly company in the cruising world. Sure, as they are the first to admit, they don't have the biggest and flashiest ships. Rather they have smaller ships which can make it into
smaller ports, and very smiley staff. Last year they introduced two new vessels to their fleet, The Borealis, our ship, and its twin, The Bolette, which take 1400 passengers each and boast facilities from gyms to swimming pools, spas, fullyequipped theatres, sun decks, bars, libraries and more. Mention must go to the food, a huge part of any cruising experience. There are the more formal restaurants where we tended to eat each evening, enjoying the silver service and a three course meal plus coffee, and a self service buffet restaurant that was our choice for breakfast and most lunches. You can expect a comprehensive selection of dishes, including a daily roast, soups, stir fries, salads, a ‘build your own’ sandwiches bar and a great dessert choice! There’s also a poolside bar which I
always enjoy for its lighter, al fresco style of dining and again, it’s waiter service, plus two specialty restaurants (with a £5 a head surcharge) which allow for plenty of variety. Afternoon tea and a midnight buffet are available in the self service restaurant for those with good appetites and, if you add in room service options, you are certainly never going to starve! We had selected a two-week cruise from Liverpool to The Canaries, aptly named Winter Warmth, which, at the end of February, was exactly what was required! We left Liverpool in bright sunshine, with the Liver Building and those two iconic statues looking very fine, and the captain simply pointed continued on page 63 61

our ship south for three days. Sea days are spent perhaps enjoying a leisurely breakfast, a line dancing class, a craft workshop or enjoying a talk from one of the onboard lecturers. I very much enjoyed listening to Ian Gunn, a former prison governor, who gave good insights into life behind barriers, discussing the merits of rehabilitation of offenders and his favourite TV show Porridge, of course! Many people simply relax in one of the lounges, perhaps listening to a live band, reading or taking part in a quiz. I enjoyed walking on the promenade deck, getting in a few laps to counterbalance afternoon tea. If you’re lucky you might spot the odd seabird or dolphin - we did on the return leg of our voyage. I added in a visit to the Atlantis Spa which has a good range of treatments. My hour-long Swedish massage certainly ironed out a few knots in my shoulders and I also liked the exercise classes - the South African Pilates
instructor put us through our paces very well indeed! Then, before you know it, you’re getting ready for trips ashore. The ship tends to dock in the islands’ various capitals and you get the best part of a day to explore. We visited Gran Canaria, Lanzarote, Tenerife, La Gomera and Madeira. Fuerteventura was a scheduled stop but high winds prevented our docking so we had more time in Tenerife which most people I spoke to had no problem with at all. The company arranges a very good range of trips ashore which obviously take away any hassle and you have the added advantage of knowledgeable local guides who, to my mind, add a certain something. There are obvious trips, say to Mount Teide on Tenerife or Timanfaya (fire mountain) on Lanzarote, but also more off beat options, perhaps exploring the vineyards and wineries of an island, an aloe vera workshop or speedy catamaran trip. We did a mixture of both independent and organised excursions. In Gran Canaria, it was an easy walk from the ship into the city, Las Palmas, and we soaked up the coffee culture and the sun drenched beach - who could want more? In Lanzarote, we again walked into the capital, Arrecife, guarded by two fortresses on either side of the harbour, for browsing and exploring. A trip to the Museum of International and Contemporary Art, housed in one of these fortresses, is recommended especially as there’s a great basement restaurant with views over the coastline and good cake! In Tenerife, we explored the capital, Santa Cruz, with its fabulous market, Mercado Nuestra Senora de Africa, which overflows with flower stalls, cheese stalls, fish counters and more - it is a real foodie’s paradise. And, as we stayed for two nights, we took a day trip to historic La Laguna, high in the hills, from where we drove to the Mirador Cruz del Carmen to enjoy waymarked
hikes in laurel forests, and outstanding panoramic views. La Gomera was a highlight for me. It’s an unspoilt little gem, close to Tenerife in distance but miles apart in atmosphere. It’s still heavily wooded, is very mountainous and sparsely populated, with little tourism. We took an organised excursion into the interior where we hiked through the ancient forests, crammed with laurels, hollies, heathers, and ferns, and, where there were little openings, fabulous views to La Palma, the island recently hit by a devastating earthquake, and Mount Teide. Finally, it was Madeira’s turn. It’s not a Canary island but belongs to Portugal and is the birthplace of ace footballer Cristiano Ronaldo. There’s a well known and frankly amusing statue of him outside a museum in his honour near where the cruise ships dock. It’s become a bit notorious for the wrong reasons as people fail to see much of a resemblance to him! But Funchal is a delight - perfect for shopping, mooching and much sitting in bars watching the world go by. We took an organised trip to the sub tropical gardens of Monte Palace, high above the city and reached by cable car which gives terrific views over Funchal and the Atlantic Ocean. The gardens, created around a beautiful manor house, are stunning, with careful planting of both native and imported plants to create Madeira’s very own Garden of Eden. It was a gentle and satisfying final stop before our somewhat choppy sail back to Liverpool - the Bay of Biscay likes to be noticed, too!

The arrival
of April brings us gardeners so much excitement as the garden will be glowing with spring colour, plentiful green growth and new life. The daffodils are a favourite floral symbol of mid-spring with their unique yellow trumpets, and us gardeners dream of what magical tunes they could perform. I myself love the everwarming sun and smell of spring air; you can almost smell the garden growing. The lawn grass will now be actively growing and we should continue to cut it on the lawnmowers highest setting. It is the ideal time to hand-sow grass seed into patches; we should lightly rake the surface before sowing the seed. Grass seed should germinate in 7 to 10 days if the ground remains moist and temperatures allow. I love to create an area of wildflowers, so now is the time to hand-sow the seeds of poppies, cornflowers, corncockles, oxeye daisies, foxgloves and borage, to name but a very few, into empty borders and bare soil of the garden. The butterflies and bees will be so grateful and by doing this we support the wildlife that is so precious to us gardeners. April is the ideal month for planting out summer bulbs, tubers, corms and roots as they need time to establish themselves in readiness for flowering in summertime. We should plant into a spot with well-drained soil and as much sun as possible. The flowers of the begonia, dahlia, crocosmia, gladioli, freesia, canna lily and lilies will make our gardens resemble the floral frontage of a florists. The warmer days of April bring new growth of favourite plants and flowers. It
also brings pesky and unsightly weeds; the more established weeds become the more difficult to get rid of them. Whilst the soil is still moist we should lift weeds and their roots before they take hold for the remainder of the growing season. Try creating a hanging basket or two, they offer elevated floral colour near front or back doors, giving us a welcoming feel to our homes. We can set about cramming our baskets with fuchsia, begonia, geraniums, lobelia, viola, petunia and salvia. The key to successful hanging baskets is to water regularly, we want them to stay green and lush in the months to come. We can use the warmer days to paint and maintain our garden fences, wooden benches, and sleepers-to smarten up the garden. It’s a good time to consider new outdoor furniture as we will have the rest of the gardening season to enjoy it. So, as we go to one gardening job to another, we should take a moment to stand still and be mindful to live in that very moment, to breathe in the fresh East Anglian air and appreciate all that is good about the outdoors and remember that the garden is our own private sanctuary. It’s fair to say that the UK home fragrance market is one of the most crowded and competitive. So how is The Candle Brand special? In 2021, The Candle Brand won three categories in the Gift of the Year Awards, run by the Giftware Association. Its Flower Diffuser was winner in the prestigious ‘My Gift of All Time’ category. In February 2022, Christina and her team attended the Spring Fair trade event and brought in 70 new trade clients, a trade show record for the company. “Our aim has always been to deliver products of exceptional quality which

Having started almost four years ago as a kitchen-table operation, the business now employs five people, sells throughout the UK and has ambitious growth plans.
