I don’t want to be one of those people, but… it was too hot last month! I am so glad to see a little relief from the blazing hot weather. Autumn is quite possibly my favorite season and September is the gateway into the golden canopies. The weather is cooler, yet still pleasant enough to enjoy the outdoors. September is always a big food month with plenty of festivals and events showcasing the fabulous products on offer throughout the region. With so many award winning producers to choose from, it is easy to see why Norfolk and Suffolk are so loved by foodies all over the country. If you are not out enjoying the local fayre you can always relax on the sofa and watch amazing food - and some amazing disasters - on the telly; everything from Celebrity Materchef to The Great British Bake Off. Whilst on the subject of baking, we have some top bakes for you to try this month so you can show off your own show-stoppers. Are you a novice in the kitchen? Released: 2 September If you had three wishes, what would you wish for? That’s the problem that Tilda Swinton has in this new film from Max Max director, George Miller. Swinton plays Dr Alithea Binnie, an academic who’s happy with life and is a very pragmatic and practical person. During a trip to Istanbul, she encounters a Djinn (basically a genie) played by Idris Elba who offers her the classic three wishes in exchange for his freedom. The average person would rub their hands with glee and wish for riches, fame, power - all the usual stuff. But for Alithea, it’s a problem – she’s a scholar of this sort of mythology and she knows all the classic stories of wishes going wrong. George Miller blew audiences away with Fury Road and all though this film will be less intense, it looks to have the same charm and creativity that audiences responded to and with the acting forces of Swinton and Elba, you can’t go wrong.

The rules of the game involve one person being a secret “murderer” and “killing” other players by touching them on the back. If you come across a murdered player, you must shout “Bodies, bodies, bodies!” You can probably guess where this is going. Yep, the game turns deadly when someone gets murdered for real. There’s a killer in the group and they’re trying to pick everyone off, one by one. It sounds like something you’ve seen before but as this film is from A24, a studio with a fantastic track record, all bets are off. It’s one part horror, one part comedy and one part thriller, and will keep you guessing right until the end.

Everyone loves a whodunit. It’s a classic format and has been utilised well in recent years in films like Knives Out. See How They Run stars Sam Rockwell as Inspector Stoppard and Saoirse Ronan as his sidekick, Constable Stalker. The intrepid investigators are called to a local theatre where a desperate Hollywood producer is trying to turn a popular play into a film. However, one of the members of the production has been murdered! Stoppard and Stalker will need to find all the clues to eliminate the suspects one by one to find the killer! It’s a well-known format but the style and tone look like a lot of fun. The cast is killer too, with Adrien Brody, Ruth Wilson, David Oyelowo, and This Country’s Charlie Cooper!

The Old Man Disney+, 28 September You think we’d be bored of watching old men who used to be spies being dragged out of retirement and then killing anyone that comes after them. Enter Dan Chase (Jeff Bridges), former CIA officer who’s been happily living off the grid with his two Rottweilers. But what’s this? Some people want to kill him! Luckily Dan is a complete bad-ass and knows how to deal with these scallywags! Now Dan and his doggos are on the run, hiding from these relentless pursuers and doing what they can to survive while trying to find answers along the way. Joining Jeff Bridges are Joel Grey, Alia Shawkat and the legendary John Lithgow. It might sound choc-full of clichés but with Jeff Bridges at the helm and doggos on the line, it’ll be a nailbiter and one you won’t want to miss.
The Lord of the Rings: The Rings of Power Amazon Prime, 2 September Amazon must be hoping this new show will be as entrancing as the one ring itself considering they spent over $1 billion on it! The Rings of Power isn’t a re-imagining or a remake of Peter Jackson’s films –instead it focuses on events set 3000 years earlier. The story follows the forging of the Rings of Power, the rise of the evil Sauron and the alliance between men and elves. There’ll be lots of new characters, but fans will recognise much younger versions of Galadriel and Elrond (played by Cate Blanchett and Hugo Weaving in the Jackson films) which will help with the transition to this new story. At best we can expect what made the Lord of the Rings such a great series of films – engaging characters, jawdropping locations, exciting battles, and fantastical creatures. At worst, it's a new fantasy series to escape to each week!
The BritishGreatBake Off Channel 4, September Set your ovens to Gas Mark FUN! The Great British Bake Off is back! Paul Hollywood and Prue Leith are ready to put a bunch of new bakers into a mixer and see who comes out as a showstopper and who comes out with a soggy bottom of shame. The agents of chaos known as Noel Fielding and Matt Lucas will be on hand to provide random skits, a shoulder to cry on and some much needed sarcasm. Bake Off has become such a staple of British television that my family and I always start a group-chat, and each pick a baker to back after the first episode. However, my heart will always belong to Val Stones, the Cake Whisperer, from series 7. Val, you’ll always be my Star Baker.

Textile artist Jennifer Williams is taking part for the first time and is based in Stowbridge in West Norfolk. She said: “I’m taking part in Norfolk Open studio to raise awareness of my practice, working in a niche and understated handcraft that is ultimately fizzling out, I want to inspire and educate people of the exciting possibilities. Visitors to my studio can expect to have full demonstrations of my working practice and you can give any of these things a try with the assistance of myself.”
Many artists will be offering additional events, demonstrations and workshops to share their skills and practice. In total there will be 218 studio venues, 19 schools taking part, 11 art trails and 28 events. A school preview exhibition will be held at the Undercroft in Norwich (15-24 September) and additional preview exhibitions will take place in West Norfolk and at the Greenhouse Gallery in Norwich. I’ve only been working in the space a year, but in that time, it has become a very beautiful and peaceful place to work. This is my first year taking part in Norfolk Open Studios, and I’m looking forward to inviting visitors to see where I create my paintings and experience the processes I go through; from building and stretching the canvas, seeing works in progress and the final framing.”

Returning to its home on the Snape Maltings Estate, Aldeburgh Food & Drink Festival will take place on 24-25 September this year. The event, which offers a platform for the local community and is celebrated as one of the UK’s best food festivals, promises a stellar line up of headline chefs from across the country, food and drink exhibitors, and events throughout the weekend. Operating as a not-for-profit organisation, the festival dedicates itself to supporting and promoting the immediate area and the businesses within it, working year-round to give Suffolk producers, chefs, restaurants and businesses a platform to showcase what they do and earn the recognition they deserve. Now in its 17th year, all entry fees and donations are invested in next year’s festival and buying a ticket offers visitors the chance to support the individuals and businesses making Suffolk’s food scene what it is. Set alongside the banks of the enchanting River Alde, the festival strives to celebrate the wonderfully diverse and exceptional local food scene. The varied terrain and landscape of the Suffolk region makes for a wonderful array of local food producers and this year’s event will showcase the best of the best, from the East Coast fisheries to fruit and vegetable growers; local chefs to gin and honey producers. The centre stage will welcome a series of headline chefs from across the UK for a string of demonstrations, talks and masterclasses, including: Chetna Makan (Demos on Saturday at 11am and Sunday at 11am) - former Great British Bake Off participant and one of the festival’s long time favourites, Chetna will be running a demonstration at the Co-Op Community Kitchen Stage Richard Bainbridge (Demos on Saturday at 12pm and Sunday at 2pm; Masterclass on Sunday at 11.30am)winner of Great British Menu 2015, esteemed Chef Patron of Norwich’s Benedict’s will be running a masterclass on how to cook Liquorice Coated Suffolk Venison, Pickled Hedgerow Blackberries, Meadow Hay Smoked Beetroot, and Suffolk Farmed Oyster Mushrooms. This showstopper dinner party dish that celebrates the seasons and showcases the incredible produce of East Anglia. He will then move stages for a Thomasinademo Miers OBE (Demo on Sunday at 12pm; Masterclass on Sunday at 2.30pm) - the winner of BBC MasterChef 2005, renowned food writer and founder of Wahaca restaurants will be presenting her recently launched Meat Free Mexican cookbook Over 100 food and drink producers from the Suffolk region will be exhibiting throughout the festival, selling raw milk, organic vegetables, sourdough bread, award winning beer, spirits and much more. Visitors can expect Aspall cyder and street food aplenty alongside an ongoing stream of live music and fringe events. A full list of those attending can be found here. The Family Meadow also returns this year bigger and better with activities for all ages. The festival is organised by Slow Food Aylsham, a not-for-profit group who campaign for fresh, healthy and affordable food, and, together with its sister organisation Cittaslow Aylsham, works with local producers, chefs and businesses to promote the region’s flourishing food and drink scene.
Organised by Slow Food Aylsham and Cittaslow, the festival is a popular event for families and a showcase for local producers, artisans, and traders to promote all that is good about local produce. Set in Aylsham’s historic and picturesque Market Place, it is a celebration of Norfolk’s food and drink and features a Farmers’ Market, Country Market, wine tasting and the showpiece Festival Dinner and famous Big SlowForBrunch.entertainment, visitors to the Farmers’ Market will be treated to a cookery demonstration like no other by comedy chefs Hugh Fearn and Lee Whittingstall who run the Liver Cottage Mobile. Their mad-cap antics create “fusion food on the move” and promise to delight younger visitors.

The last Slow Food event was a truly wonderful evening for us to show case parts of the musical, and to work with our colleagues from the Food and Nutrition deptartment.

I can’t believe I haven’t thought of this myself. Staycations are domestic breaks in our home nation, the alternative to jumping on a plane. It’s a word we hear all the time. But daycation? The daycation is a day away from home, but close to home. Time where nothing else exists except for the next 8, 12 or 24 hours. Time spent away from the stresses of everyday life to heal, slow down and do whatever you fancy. A daycation on your own in a hotel in a room with a view and room service, with friends visiting an exhibition or as a couple enjoying a long walk, afternoon tea and the theatre. Whichever way you want it. With everyone affected by the rising cost of living, and crazy petrol prices at the pumps, it makes complete sense that people are looking much closer to home to get away. I’ve always been an advocate of taking a break in my home city or county. The Egyptians invented the 365-days a year calendar and this month sees the opening of a much-anticipated exhibition at the Sainsbury Centre for Visual Arts. Visions of Ancient Egypt , supported by Viking (3 September – 1 January), coincides with two important anniversaries – the bicentenary of JeanFrançois Champollion’s deciphering of hieroglyphs and the centenary of Howard Carter’s discovery of Tutankhamun’s tomb (4 November 1922). Those in the know will be aware Howard Carter spent much of his youth living with relatives in Swaffham. A far cry from the adventures he was to have as a young archaeologist and fi nding fame as an Egyptologist. This ground-breaking exhibition will be the fi rst to explore Western fascination with ancient Egypt, side-by-side with Egypt’s own engagement with its ancient past, inviting audiences to debate and discuss who these visions serve both then and“Itnow.was a sight surpassing all precedent, and one we never dreamt of seeing.” Carter famously said. Exploring the enduring appeal of ancient Egypt in art, design and the cultural imagination. The exhibition will show how Egypt became embedded in the Western artistic imagination in the 18th century, despite most artists and designers not having visited Egypt themselves. And the exhibition will highlight how world fairs contributed to the spread of ancient Egyptian imagery, notably the Great Exhibition in 1851.

‘Tutmania’ spread across the world following the extraordinary discovery of Tutankhamun’s tomb in 1922. The archaeological excavation was heavily photographed and helped shape the Art Deco style, influencing fashion, architecture and design, all of which is explored in the exhibition. Now, the next selection is a bit of a cheat, as it’s not one single treat, but a whole box! Dog mum buys quite a few of my treats from a company called Natural Cornish Pet Shop. They have a vegetable chew variety box that has different flavours and shapes of treats in it, including bones, sticks and even crocodiles! They are all either vegetable or peanut butter based, and are perfect for a lunchtime treat. They have other similar products, including a vegetable antler which huge and - due to its shape and the knobbly bits on its surface - is really good at massaging your gums and aiding blood flow (which helps keep your mouth healthy). Practical and delicious! For dog mum’s final selection, she has chosen Pooch and Mutt mini bone dog treats. These come in different categories; Calm and Relaxed, Health and Digestion and Fresh Breath. I often have these in my treat pouch, but mum also gives me one of the calm and relaxed bones every night when I get into my bed, sending me off into a lovely, peaceful sleep. As with all these treats, they’re 100% natural and low calorie. So there you have it, a round-up of just a tiny selection of the treats that I’m lucky enough to get to eat on a regular basis. Dog mum found it incredibly difficult to select just five, as there are so many great treats we’ve found over the past year and a half. My name is Atlas, I’m a 20 month old, Fox Red Labrador and I love cuddles, training and… food, of course! You may recognise me from my Instagram page @thereallife_ofatlas where I share the ups and downs of being me (with a little help from my pawrents). We use it as a platform to share all the good moments; but also the naughty or challenging ones too, to keep it real and show that it’s not always rainbows and sunshine raising a dogespecially one as fabulous as me! One thing my pawrents are really interested in, and have learnt a lot about since having me, is natural dog treats. I love my food, but unfortunately I happen to have a very sensitive stomach. This means I have to be careful with the treats I have to ensure I don’t get poorly. One thing we’ve learnt is that some meat-based-treats, in particular chicken, don’t agree with me; so we tend to go for either fish, vegetable or peanut butter based treats (delicious!). There’s a big selection available and sometimes it can be hard to know what to choose. So dog mum has rounded up a selection of five natural dog treats for you, as tried and tested many times by me! First up, and possibly one of my favourite treats, is Soopa dental sticks. They come in a huge range of flavours including coconut and chia seed, carrot and pumpkin, kale and apple, and cranberry and sweet potato. They don’t last me very long (then again, very few treats do), but they’re ‘soopa’ healthy. They improve stinky breath and are made with human grade all natural ingredients, meaning your pawrents could even try a little nibble - if you let them share that is! Next up we have sprat bites. These are really good training treats as they are quite small but delicious with a yummy crunch to them. Mum prefers them to whole sprats as these bites don’t have any eyes staring back at her! Sprats are great for improving your skin and coat and have lots of omega oils in them.

Now-I know what you’re thinking; I said meat based treats don’t tend to agree with me, but what’s good about ostrich is that it’s what they call a novel protein. This means it’s good for dogs that have allergies, as it’s not something they have probably had in their diet before. Ostrich is highly digestible, very low in fat and, as a bonus for the pawrents, very low odour too - though I say the stinkier the better!

This exciting stall sells all things Spanish - think chorizo, cheeses, olives, oils and more. There’s a great little seating area where you can tuck into a wide range of tapas, from tortillas to croquetas, padron peppers and, of course, churros. The sangria is fab, too.

Sarah Hardy investigates Norwich Market, right in the centre of the city, has been going strong since the 11th century and now boasts about 200 stalls, with food and drink becoming increasingly popular. It opens six days a week, with some stalls also opening on Sunday, and is said to be the largest open air market in the country. You can seemingly fi nd everything on sale here, from household goods to children’s toys, clothes and fl owers. Yet what does excite, says Mel Cook of VisitNorwich, are the foodie options available which range from fresh sourdough loaves to the best chips around. You might want to pick up a spot of lunch from, say, Cocina Mia (a taste of Chile with enormous empanadas) or some amazing seafood for an upmarket dinner party from City Fish, or a post work pick-up calzone from Italian Street Food.
She adds: ‘Norwich now appeals as a great option for those interested in food, local producers, fi ne dining and moreand is a key platform for us and one that we use to attract holiday makers and day trippers to the city.’

An ambitious fl agship farm shop, with cafe, is being planned by The Royal Norfolk Agricultural Association at the Norfolk Showground, just on the outskirts of Norwich. The £2.3m development is set to include a deli, a butcher, a shop, a cafe and outdoor seating and is designed to showcase the county’s fabulous food and drink producers. A two-acre market garden is also included in the designs which will be the base for a community growing project.
All the plans are currently out for public consultation before formal planning permission is sought. It is hoped that work will start as soon as later this year.
Mark Nicholas, managing director of the RNAA, says: ‘We are thrilled to unveil plans to build a Norfolk Food Hall and Market Garden project. The Food Hall will be a flagship destination, promoting the best of Norfolk produce at the Norfolk Showground site, the home of the Royal Norfolk Show. The Market Garden is an exciting scheme which will encourage people to get involved with growing and understanding the positive environmental impact of a local supply chain.’

A new £2 million food hall is set to open in the historic Royal Arcade, in the city centre, later this year. Called Yalm, after the Norfolk word to ‘eat hungrily’, the foodie hub will see a mixture of bars and kitchens from both the city and Norfolk chefs and artisan producers, all uniting to create a fab foodie destination. Yalm will be set in the two story former Jamie’s restaurant which closed in 2019 and will offer all day dining for up to 300 people. It is expected that there will be six kitchens, plus bars and space for pop ups and an event space - the inspiration comes from Seven Dials in London’s Covent Garden. The idea is that you can buy whatever you fancy from individual venues and it will then be served to you at a communal dining area - so you can mix and match! Dan Searle, already well known on the foodie scene as he ran Mysabar in Norwich, is the venue’s operations manager and says there will be everything from pizzas to a steak house, a ramen bar (complete with dumplings), a craft beer bar, a wine and spirit bar and plenty of cocktails. ‘It’s really exciting as we are bringing together local independent businesses who really want to work together to create something special,’ he says. It is hoped Yalm will open at the end of October/beginning of November.
And eat it Described as a micro cookie bakery, the stall is packed with sweet treats, including the house speciality - brookies, which are a decadent cross between a brownie and a cookie. They are a chocoholic’s idea of heaven with fl avours ranging from chocolate orange to salted caramel, and all things in between - look out for the slutty brownie! The bakes are huge and the cookies are good, too. Not a stall for those watching their weight - you have been warned!

METHOD: Pre-heat the oven to 190°C. Wash the ham and soak it in cold water for 2-3hrs. Dry the meat and wrap completely in foil. Place the ham on a baking tray and cook in the oven for 2 hrs. For the glaze: dissolve the sugar in the marmalade and reduce in a pan by bringing it to the boil. Remove the ham from the foil and increase the oven to 200°C. Score the fat of the ham and brush it with the glaze, then place it back into the oven and brown it for 10-15 minutes. Heat the pineapple rings in the remaining glaze and garnish the joint with them. For the accompaniments: Whether you serve the ham hot or cold, a selection of seasonal vegetables would be the perfect accompaniment.Washthenew potatoes, slice the carrots, and snap the end off the broccoli. 34 Food & Drink INGREDIENTS: serves 8-10 • 140g butter, softened • 140g caster sugar • 2 large eggs • 140g self raising flour • 1 tsp baking powder • 2 ripe bananas, mashed (200g) • 3 Tbsp Camp Chicory & Coffee Essence METHOD: Preheat the oven to 180°C, gas mark 4. Grease and line a 900g loaf tin. Whisk the butter and sugar together until pale and fluffy, whisk in the eggs, one at a time. Mix together the flour and baking powder and fold into the butter mixture and then fold in the bananas. Divide the mixture into 2. Add the Camp essence to one half. Add 3 spoonful’s of each mix alternately to the base of the prepared tin, repeat the layer making sure the same colour batter is not underneath. METHOD: Grease a 25 x 20cm oven proof baking dish with dairy free butter and preheat the oven to 180c. Start by making the sponge mixture. Roughly chop the dates and place in a heatproof bowl along with the bicarbonate of soda. Add the oat or almond milk to a pan and onto the heat, gently bring up it to scalding point. Pour the hot milk over the dates and allow it to steam and soften the dates for 10 minutes. Once the dates have softened and the mixture has cooled, add them along with the milk mixture into a food processor or blender and mix until smooth. In a large bowl, beat together the dairy free butter and the soft brown sugar until light and fluffy and well incorporated. Next add the date and milk puree and mix through. Finally add the self-raising flour and spices, along with the Maldon salt. Fold this through the wet mixture so it is smooth, but making sure not to overmix the batter. Tip the batter into the greased baking dish and smooth over the top. Place into the middle of the preheated oven and bake for 40 minutes until well risen and a skewer comes out clean in the middle. Remove from the oven and set aside. While the sponge is baking you can make the sticky toffee sauce. In a small saucepan add the dark brown sugar and dairy free butter and melt together, then lower the temperate and cook together for 5 – 10 minutes until smooth and syrupy. Remove this from the heat and add the dairy free cream, stirring it in. Once the sponge has come out of the oven, pour most of the sticky toffee sauce over the puddingbut leave some for extra drizzling! Sprinkle the top of the pudding with Maldon salt. Serve the pudding while it is still warm with some dairy free ice cream and an extra drizzle of sticky toffee sauce.

METHOD: Begin by making the pastry. In a food processor add the plain flour and icing sugar and pulse together until well mixed. Then add the cold cubed butter and pulse together again until it resembles fine breadcrumbs. Next add the beaten egg along with 1 tbsp of cold water and pulse again until it comes together.Tipthe dough out of the food processor and gently knead to make sure it is smooth. Lightly flour the work surface and then roll the pastry out until it is 1cm thick, then carefully lift the pastry to line a 23cm fluted tart tin. Trim off the top and gently prick the base with a fork. Place the lined tin into the fridge to chill for 30 minutes.Preheat the oven to 180°c. Once the pastry has chilled, remove it from the fridge and fill with baking paper and baking beans. Place the tart onto a baking tray and into the preheated oven to blind bake. Bake it for 15 minutes, then remove the paper and beans and return to the oven for a further 5 minutes. Once the pastry case is baked remove from the oven and set aside to cool slightly while you make the filling. To make the frangipane add the softened butter and sugar to a large bowl and beat together with an electric whisk until pale, light, and fluffy. Add the ground almonds, egg, almond extract, lemon zest and Maldon salt. Mix again together. To the cooled pastry case start with a layer of raspberry jam, spread this across the pastry evenly. Then on top of this spoon over the frangipane and carefully smooth with a palate knife, trying to ensure the raspberry jam and frangipane remain in layers. Place the tart back in the oven for 20-30 minutes until golden brown and a skewer comes out clean. Remove the tart from the oven and set aside on a wire rack to cool Whilecompletely.thetartiscooling you can prepare the fondant icing for the top. In a bowl add the icing sugar. Add the almond extract and roughly 2 tbsp of cold water to make a thick but smooth icing (add a splash more water if needed). Place 2 tbsp of the icing into a separate small bowl and mix in the pink food colouring. Spoon this into a small piping bag with a small round nozzle attached. Once the tart has cooled, spoon over the white fondant icing and smooth across evenly. Then pipe parallel lines of the pink icing across the surface. Then use a cocktail stick to create a feathered effect by dragging across in alternating directions. Pop a single glace cherry in the centre, if desired. Allow the icing to set before slicing and serving.

Once all the flour has been incorporated, pour it into the prepared tin and smooth over the top. Place the tin into the preheated oven for 10 – 12 minutes until well risen, golden and baked throughout.Whilethe sponge is baking, place a piece of baking paper slightly larger than your swiss roll tin onto the kitchen surface. Sprinkle this liberally with some more caster sugar.

METHOD: Preheat the oven to 180°c. Grease a 33x23cm swiss roll tin with a little vegetable oil and then line base with baking paper. Grease this again with some oil and then sprinkle some caster sugar into the tin and move it around to make sure it evenly covers the base and sides of the tin. Tap out any excess. Place the sugar and eggs into a large bowl and use and electric whisk to beat for approximately 10 minutes until the considerably and it is pale in colour. This is when you can test it has reached ‘ribbon stage’ –when the whisk is lifted out the mixture and you run it across the top, it will leave a trail of mixture that sits on top, like a ribbon. Carefully sift the flour into the mixture in stages, folding it in after each addition. Take time to do this as it is important to keep the mixture light, fluffy and aerated.

Once the sponge has baked, remove it from the oven. Run a knife carefully around the edges to make sure it isn’t stuck and then tip and invert it onto the sugar-coated baking paper. Using a knife, draw a small cut line roughly 1cm from the edge of one of the long sides. Then starting here, carefully roll the sponge, making sure to tie the edge in tightly to create a neat spiral. Once it is rolled, keep it like this with the paper surrounding it, until the sponge has cooled. While the sponge is cooling prepare the fillings. In a large bowl add the double cream and icing sugar, then whisk until it forms soft peaks. In a separate bowl add some strawberry jam, along with 1 tbsp water and mix so it is easier to spread. Finally, roughly chop some strawberries for the filling, leaving some whole for the top. Once the sponge has cooled, carefully unroll it. Start by spreading a layer of the strawberry jam, then sprinkle across some of the chopped strawberries. Top this with a layer of the softly whipped cream. Make sure not to make the layers too thick as it will be difficult to roll again. Once all the layers are added, carefully re-roll the sponge. Using a sharp, serrated knife, trim off the ends so you have a neat sponge. Decorate the top with some of the cream and fresh strawberries.

METHOD: In a large serving bowl, prepare Moroccan Spiced Couscous as per packet instructions and fluff the couscous with a fork once finished. Heat oil in a non-stick pan on mediumhigh heat and cook onions and bell pepper until softened. Add garlic salt. Set aside. In the same pan, add more oil if desired and add black beans and taco seasoning. TossNowwell.assemble the burrito by taking a large tortilla wrap and add avocado with a squeeze of lime or lemon. For one wrap, add half the amount of couscous, bell pepper and onion salsa, black beans and salsa. Add other desired ingredients such as coriander or gherkins. Wrap into a burrito starting with folding the sides then folding from the bottom to cover the filling and rolling to seal the burrito. Warm it slightly on a dry pan on each side to make it crisp up a little.

In the interest of full disclosure, I should start by saying that when it comes to food, I am not the person you would ask for advice. I have collected more poor culinary experiences than Imelda Marcos did shoes. I’m your part ‘can’t cook’, part ‘won’t cook’ kind of chef. The sort of person who used to boil lettuce and who considers mash potato and salad cream as a superior sandwich. You get theHowever,point. if like me, you’re genetically closer to a wooden spoon than Gordon Ramsey in the kitchen sense, I have discovered some very basic tips to encourage success on those rare occasions where you need to produce something edible for a social situation. These are the lessons I have learned the hard way, so you don’t have to. Be Realistic This may sound obvious but if you’re flicking through recipes and one of them requires goji berries, Sichuan peppercorns or the cheese of a Belted Galloway born under a full moon, forget it. Keep looking. Sure, it’s fun to branch out and test your limits but if it requires a dictionary and details of the last lunar cycle, you may be trying too hard. The truth is, it won’t be the same if you just wing it when you can’t find what you need. Once I used different sugar in a caramel cake because I didn’t want to keep scouring for the ultra-refined sort and it turns out you can’t do that. That cake is now infamously known as my ‘Curry Poo Cake’, due to its appearance, and it actually had the texture of sand. In essence, buy the actual ingredients and if you’re going to struggle to find them, choose a different recipe. You don’t want to get to the starting line having decided clogs will do because you couldn’t be bothered to find your trainers. Be Prepared Similarly, have the right equipment for the job. You shouldn’t need to remortgage your house to find a decent food mixer. Equally, don’t assume you have the ability to whisk cream for 20 minutes if you have the upper body strength of a sickly Victorian child. Your partner won’t find your romantic chocolate mousse so appealing if it has the consistency of dribble. Be honest with yourself about how much time and energy you are willing to put in. I am morally opposed to making food that takes longer to cook than it does to eat. Make sure you can finish what you have started so you’re not poking through the raw bits of a lasagne, trying to work out if your guests have the intestinal integrity of a crocodile. They’ll only forgive you once.

Don’t Overthink It I consider myself an intelligent person, most of the time, but I do have a tendency to overthink things. Case in point, I once read the instruction ‘remove outer packaging’, to mean don’t remove all the packaging. The result of which is that I removed the box but not the plastic wrapping (which I considered ‘inner packaging’) and essentially, I laminated a pizza. Of course, logically that should have been obvious, but I couldn’t understand why it didn’t just say ‘remove packaging’. Use your common sense and on this occasion think inside the box.

Pay Attention Read your recipe twice and be sure of what you are expected to do. A tablespoon is not the same as a teaspoon. Something that is supposed to be lightly salted can easily taste like it was marinated in the Dead Sea if you’re not careful. If you have the finessing ability of Mr Blobby, take the phrase ‘a pinch’ literally. In my experience garlic and chilli powder are not to be messed with. Creake Abbey Food Hall and Cafe opens five days a week Wednesday to Sunday, from 9am to 5pm. From September, it closes at 4pm. The next farmers’ market is on September 3. There is free entry and free parking. The North Norfolk Food and Drink Festival takes place in the Walled Garden at Holkham on September 3 and 4.

The aforementioned Cafe soon followed and in 2011 Diana took the decision to create a new, larger food hall with a cafe, in an old boat-building shed at the site. She kept many of the original features - a pair of old wooden doors are very impressive - and there’s an industrial feel to it, with high ceilings, big windows and exposed gantry equipment. The idea, she explains, was simple: to both stock and use the great produce offered at the farmers’ markets. It has developed over the years, with Diana taking over the running of it in 2017. ‘It’s known for its deli counter,’ she says. ‘And it’s a food hall rather than a farm shop as we don’t produce goods here for it. It does mean that I have great fun deciding what we do want to stock!’
About a year ago, the Cafe attracted a new head chef, Abbi Saunt, and Diana can’t stop singing her praises. ‘She is the chef I have been waiting for! We have had some fantastic chefs here over the years but Abbi is definitely the sort of chef we have been looking for. Her dishes are so seasonal, light, and very colourful.’

Now based in Norwich, Abbi has worked all over the world so brings a sophisticated air to the menu where you can expect to see honey, garlic and soy chicken skewers, a miso glazed salmon superfood salad or Belgian waffles for breakfast. The cake counter continues to groan! Sunday roasts are very popular and the Cafe is fully licensed, with local beers, such as Moon Gazer Ales from nearby Hindringham on offer. A monthly ‘Round the World’ supper evening also takes place, with a different country selected each month, with The Middle East being the theme for one on September 24. Alongside establishing the Food Hall and Cafe, Diana was one of the leading figures involved in the highly popular North Norfolk Food and Drink Festival which takes place every September at Holkham. She helped to promote the local producers, using knowledge acquired at her own farmers’ markets, and was always keen to help those starting out on their own journeys. ‘I was on the committee for 10 years, I think,’ she says. Diana isn’t one for self congratulation or indeed for standing still. She is constantly looking at ways of promoting what is available at Creake Abbey and knows she has to move with the times. The Cafe, for example, serves more vegan and vegetarian dishes than ever before, and Diana is more than aware of the huge rises in the cost of living, not least the increase in fuel prices, which, for a rural destination, is critical. ‘Yes 2023 looks challenging - it is all about survival,’ she says, but if anyone is up for the fight, it's Diana!

There are lots of fitness programmes, gadgets, diet plans and shakes that promise to ‘burn fat’ and ‘tone’ your tummy/bum/ thighs, but is that really how it works? The short answer is no. Let’s break it down a little bit. When we see someone who looks ‘toned’, what actually gives that particular body part that firm appearance, is muscle, not fat. Fat cannot be ‘toned’ However, despite what some people may have you believe, exercising a body part does not burn fat in that area. That's just not how it works I'm afraid...
If you are carrying more body fat than you would like in a particular area, in order to get that toned appearance, you will need to develop the muscle, while reducing your body fat. I like to use the Sun vs Clouds analogy. The sun is always there, shining in the sky, but on days where there is cloud cover, it’s much harder to see. It’s the same with your muscles. Trust me they are there, if they weren’t you wouldn’t be able to stand upright! For most people having toned legs/ arms/abs etc, serves no useful purpose other than aesthetics. But, we do know that having lots of excess body fat can increase your chances of suffering from health complaints including heart disease, diabetes, strokes, high blood pressure and cancer. So from a health point of view, wanting to reduce body fat is not always a bad thing. SO HOW DO YOU DO IT? Lift heavy stuff! Resistance training using either weights, or your own body weight is absolutely key to developing muscle. A resistance based exercise session will use as many calories (if not more) as cardio exercise, and will also benefit your heart in the same way, with the added bonus it will also help to develop muscle. This is essential if you are trying to tone, but is also really important to help protect our bones and joints. Aim for 2-3 sessions per week that use resistance. From an overall health point of view, try for a minimum of 150 mins of exercise per week. Break this up however you like. Do exercise you enjoy, whether that’s dog walks, fitness classes, hitting the gym, or running around with the kids.
Daily activity levels: Be as active as you can day to day. Find ways to add in extra movement to your normal daily routine. A few steps here and there may not seem much but it all adds up when we’re trying to burn a few more calories to help reduce body fat. Get good quality sleep & less stress: Being permanently tired and stressed can affect our hormones which then affects our motivation, energy, mood and appetite. This can mean we eat more, and move less, which is likely to lead to increased body fat.

Nutrition: Eating a well balanced diet with all of the macronutrients (protein, carbs and fats), in the appropriate proportions and serving sizes. Protein is absolutely essential to help build and develop muscle, but in my experience, most people do not get enough in their diets. As a rough starting point, most adults should aim for around a 30g serving at each meal.

Mindfulness usually brings about an enormous change for people once they embrace it as a part of their routine. Taking one thing at a time and allowing yourself to be absorbed in the present will help filter out complex clutter that may have been bewildering you. Most people can juggle one or two oranges, but they struggle with five and some try and juggle ten or fifteen. When many people are first familiarised with mindfulness, they often have an idea that it’s all a bit fanciful and not their sort of thing. Previously, I was once definitely of that opinion. Yet, like lots of things that have changed for me and innumerable others, by accommodating mindfulness within my life it has allowed me to become calmer, more grounded, less anxious, and less low generally. My relationships are more fulfilling and seem to work better without stress, anxiety, and frustration. In my opinion there are three elements to mindfulness: 1) Being in the present moment 2) Breathing and meditating 3) Adopting a mindfulness thought Countlessprocesspeople live where they are continually getting side-tracked… especially with social media. Or they may be living in a muddled life where they repeatedly spiral mindlessly into frustration, worry or hopelessness. Often that balanced rewarding life they desire never becomes a reality. Living more mindfully has enabled many people to be productive whilst at the same time enjoying that ‘restful’ feeling. They seem more in control… They don’t miss out by being endlessly preoccupied or confused. They own their lives and what they are doing… how they are being.

merrier. We want to make our spring gardens as colourful and green as possible so let’s use this month to start a planting scheme. This month is ideal for preparing for all those future falling leaves, so we can set about building a new compost. Ideally a compost will be a self-enclosed environment made from old planks of wood or pallets as opposed to just being a heap of leaves; we want the leaves to stay in one place and breakdown into a mulch that we can use on our borders and beds next year. I love the start of autumn, with the changing of colours and browning leaves. Us gardeners are watching our green spaces transition from active growth to the slow march towards dormancy. I always think September is a month that comes with a summer hangover but also an eye for what we can create next spring and summer; a month with one leg in the past and one leg in the future. September is upon us, bringing a close to meteorological Summer and the start of ever shortening and cooler days of the Autumn season. We might even have to pop an extra layer on, depending on the weather forecast; but that won’t put us gardeners off. September can still bring us warmth which we can enjoy whilst tidying up our browning gardens. This month we can spend time cutting back any untidy foliage and getting the garden autumn-ready. As gardeners we should take a moment to delight in the summer garden we created and enjoyed; but not for too long as we now need to turn the page on that season and get doing the early autumn gardening jobs. We all want our annual and perennial summer flowers to extend their floral display into autumn for as long as possible so we should be dead-heading as many spent flowers as we can. This will ensure the summer flowers concentrate their efforts and energy on any new buds and flowers. A snip of a deadhead here and there can give our summer plants a last push of colour. We should do the same to our hanging baskets to keep them both tidy and colourful before we take them down until next year. The summer will have taken its toll on the garden lawn, so laying new turf and sowing grass seed whilst the ground remains warm and nights are becoming cooler and damper are the perfect conditions for seeds to germinate and roots to take. We can make our lawns look presentable and full before the Autumn turns to Winter. The growth of established grass starts to slow a little this month so we should now be cutting the lawn on the highest lawnmower setting as we want the grass to have plenty of leaf to stay healthy in Autumn and into Winter. The month of September can bring us surprising warmth so we should continue to give our plants a water; ideally with water collected and stored in water butts. This is also a good time of year to install water butts to collect rain water in autumn and winter, our azaleas, camellias and rhododendrons will be the first to appreciate it during any dryHowspells.exciting; even at this time of year we can start thinking spring bulbs. So we can start to order, plan and plant some of our bulbs; we can start with crocuses, daffodils and hyacinths. We can plant the new bulbs into existing or new spots in our gardens with spring bulbs it is always the more the

58 I think that it is best if we get one thing straight… I am a very reluctant camper. The thought of setting up home in a field and doing battle with the outdoors has no appeal to me whatsoever. The wild, the weather, the wasps; what is there to like. I have glamped several times before, but not in a tent. My last foray under canvas was many years before and was not a great success; uncomfortable sleeping arrangements coupled with bad weather and a distinct lack of facilities, all whilst surrounded by a sea of other tent enthusiasts. Not my idea of a relaxing break. My wife on the other hand loves to camp. The idea of going on an adventure and setting up shop in a field is her idea of bliss; opposites attract as they say. My youngest, Henry, is very much like my wife, whilst newly turned teenager Harrison shares my reluctance to go outdoors. We headed to North Norfolk to stay in one of the two luxury Stargazer Lotus Belle tents which have been recently added to the overall offering at Godwick Hall. Also available are three Shepherd’s Huts in the meadows surrounding the hall. It is worth mentioning that you can stay in Godwick Hall itself as well as The Old Stables for a slightly more conventional stay. But that wasn’t why we were here. We were going to sleep under the stars.

It took us just over an hour to drive from North Suffolk and was easily located a few miles South of Fakenham. Parking is easy, position your car next to the wheelbarrow with the name of your tent written on it; and then use the wheelbarrow to ferry your belongings to your tent. We didn’t bring that much with us, but the wheelbarrow saved the multiple journeys. The tent was amazing with plenty of facilities. A wooden framed superking bed with high quality linen and we opted to add two single put up beds for the children; built in woodburner and basket of kindling and logs; hand selected soft furnishings to making you feel at home; solar powered lighting; clothes rail and full length mirror; private toilet facilities; mini fire pit; camp kitchen with washing up facilities and mini mobile fridges and hair dryers; as well as camp shower facilities. For me it was at night when the camp came in to its own. The glow of the solar lights and the stars; which you can view through the transparent tent canopy. Godwick Hall also caters for weddings. I must admit that whilst enjoying a morning coffee before anyone else had stirred, I romanticised about what a wonderful location to hold such a celebration. The free run for the children and the tranquility for the adults. What could be better? I am a reluctant camper, but this is something I could do again and again. The peace and quiet. The togetherness. The lack of distractions from everyday life is something worth returning for. I know it might not be real camping, putting up a tent or sleeping on the ground, but who really wants to do that? This is the best of both worlds, off-grid luxury. By the time my stay at Godwick Hall’s Belle tent had come to an end, I had been converted to a tent lover… the luxury kind anyway.

What is this educational gap that they keep talking about?
As we sit here at the beginning of a new academic year, thinking about whether we have organised all of the necessary uniforms and equipment, it is worth checking on some of the basics to school life. Are the shoes polish-able? What are the haircut requirements? What food will they decide they don’t like this year? Will they still all be friends after the holidays? Will they make new friends? I find myself considering the so-called educational gap that the pandemic has left our children with and, more importantly, how we can work together to ensure the best educational future for our young people; no matter what their age or stage in education.Icanalmost hear you asking what qualifies me to write and consider this. I have worked in education for over twenty years, latterly working with the transition of students from primary to secondary school. I am a mother with a child in Year 9 (aged 13) at secondary school and a younger child in Year 4 (aged 8) at primary school. So I find myself in a very privileged position where I can make observations and suggestions of how we can help and support our future generations. We all have the responsibility to help ensure that the two years we found ourselves living in an altered reality (and for many of us, a living hell) don't have a lasting impact. Let us not forget our young people are the future: the society and the decision makers of tomorrow. So let's consider the why, when, what and how? The pandemic put us in a situation where we were not living our normal lives. We had to stay at home. Stay two metres away from everyone. Wear masks and repeatedly be told how important it was for the safety of everyone to follow all of the guidelines. I don't know about your children but a walk in the woods with my two will stay in my memory forever. The boys behaved like the other people were something to be scared of. In truth it reminded me of a scene from the Walking Dead and that normal people who were several metres away had become something to be feared. School and work was something that was done at home. Everyone concerned had to find new ways to exist, function and to try and keep society working. Many of us found a way to juggle working, home-schooling, worrying about finances and our loved ones. Many of us will have striking memories of situations when we tried to protect our young people; mine is of sitting in the supermarket car park crying down the phone to my own dad because the food shelves were empty and you couldn't get tinned spaghetti bolognese for love nor money! One of my son's food fads! However, the young people who we tried so hard to protect were there like living sponges; observing and dealing with the changes, each in their own way. And just like the grown-ups they also have their memories and now we expect them, need them, to change to a reality that allows them to make progress and fill the educational gaps.

Secondary school now reports on a 1-9 system with 4 or 5 being a pass and 9 being the equivalent of A or A*. The conversations with your child's teachers are paramount to understanding what your young person has the potential to achieve. We are not all designed to be brain surgeons, nor are we all interested in being one. Talk to your young person's teachers and they will advise you on the gaps or areas to be worked on. The resources I have already mentioned are available for all areas of education. Secondary school children will need resources specific to the subject, but if the difficulties and gaps are in English and/or Maths focus on those first as they underpin everything.
Now let's talk about what for some is a dirty word... homework! Homework is designed to consolidate what is learnt in the classroom. In plain-speak, your young person learns a new concept or idea in the classroom with the support of the teaching staff and classmates, but how can we know if they have fully understood it? This comes when they apply their new knowledge in a different situation; such as homework. Homework is also used to embed the new learning. I am amazed by all of the electronic programs such as Tassomai, not the coffee!, TT rock stars and Blooket , amongst others. These can be bought by parents or guardians, but check with either your young person or school as schools are making huge investments into these learning platforms. The reason is that many of them will give immediate feedback and have logarithms that mean it will repeat the questions your child gets wrong and then bring back the questions or areas that they are able to complete later on, just to make sure that it isWeembedded.allhaveour part to play in supporting the future of our young people, so grab a notebook and make a commitment to how you can support your young person. What can you fit into what already is a busy schedule? It could be as simple as helping them to improve their attendance or clearing a space on the dining room table so they can do their homework while you are making dinner or catching up on your own emails. Remember every little bit helps to fill in those gaps for all of our futures!
Within this position of difference it also means that our young people have learnt different things. Now this is not a criticism of what you did, far from it. In fact hats off to you all and thank you for what you have done. I am a trained teacher and my own family's experience was challenging, especially with one of my children. Then there is our own level of understanding: What was your least favourite subject? What is the peice homework that your child struggles with that you either say "ask your dad" or "Have you Googled it?" This is a glimpse of where the gaps and knowledge levels have come from? So illustrating the 'Why' has hopefully shown how many factors have influenced the situation our youngsters are currently in. The 'When' is now. So what can we do? We need to re-educate our youngsters on the importance of face to face education. Not just in response to them wanting to be at home to complete their own activities which they consider to be more fun. We need to re-educate them and ourselves in the importance of attending school when they are feeling ill. Most illnesses can be dealt with by the miracle of Calpol. With regards to Covid it is no longer an expectation to self isolate. We need to go into the new school year with the view of our young people achieving 98% attendance or above. Let's all be the proud owners of attendance certificates for the new academic year! Schools clearly know what they are doing but do we as parents or guardians fully understand what the school reports actually mean? Primary school terminology got me very stumped: "At expected", "working towards expected", do we know what that even means? I didn’t know what it meant in specific relation to my own child so I asked their teacher and a whole wealth of information came my way. The information from the class teacher was not just helpful in my understanding of what my own child was finding difficult but also they told me what they were planning to do next year. I came away feeling informed and reassured that we were all working together. So now we can talk about the 'How'. I personally made the decision that I wanted to work with my child over the holidays so I went to Amazon... (other sources of educational support resources are available!) What I found was a wealth of books: CGP Daily practice books for each term, Minecraft English and Maths books for specific age ranges and National Geographic Awesome English and maths books, again for specific age ranges. Then we devised a reward system together. I used their old reading record book as it had grids in it. I then recorded what they had completed and I gave them lots of stickers... they particularly love shiny stars. When they have completed five grids I would give them £1. While my youngest does this my oldest child reads. I decided that they would both be off the electronics at the same time or it wouldn't work and that they would both receive the same reward.Ihave found secondary school reporting even more challenging. I thought this would be easier working in the system but I have found that no two schools report or work in the same way. But through conversations with the teaching staff and the pastoral team I have found how I can support my child.
So, what are the gaps? The gaps have occurred for a multitude of reasons and the different experiences that we all had. No two families will have had the same experience and therefore no two children will have had the same educational experience. So their responses to being at school are different. Young people's viewpoint seems to be that although they knew they now had to be at school it just gets in the way. When asked to expand they simply said we did our learning in the morning and then had the rest of the day to do what they wanted to do and now they have to be at school for the whole day. They were frustrated that the school day now got in the way of what they actually wanted to do, "...and then you also ask me to do homework!"

Alison Sefton joined Norwich High School for Girls as the Head in September 2020. Can you tell us about your background? I have enjoyed a very varied career path - finance in City banks to chemistry teaching and leadership in independent schools via a short stint serving with the Territorial Army in Iraq. I am passionate about ensuring girls and young women are given opportunities to thrive and succeed, preparing students for life beyond school where the road to success is not always straight. I have been supported and guided by wonderful mentors and I now cherish my position where I can mentor and champion our students, as well as my colleagues to succeed by setting themselves ambitious goals.

What is your favourite place in Norfolk? I think that depends on many things; what kind of mood you are in and what the season is. However, Brancaster and Brancaster Staithe are my go-to places and the walk from Brancaster through to Holkham is just beautiful.

What brought you to Norfolk and CNS? I trained in Reading in 1991/2 and moved to Norfolk for my first teaching job at Hellesdon High School. I had no intention of staying in Norfolk longterm, but I fell in love with the county and chose to raise my family here. My specialism in teaching and learning, and involvement in publishing and post 16 pedagogy whilst at Dereham Neatherd, led me to look for post 16 opportunities. This brought me to CNS as deputy Headteacher in charge of sixth form under Jim Nixon. Jim retired in 2017 and I was very privileged to be appointed as his replacement. What are you most proud of during your time as Headteacher? I have so many things to be proud of! The fact that this is my first headship, and I was trusted to be given CNS is just breath-taking. I’m only the eighth headteacher in 112 years, testament to the school’s longevity and stability. I’m also incredibly proud of what we have achieved this year following the pandemic. However, I am most proud of the opportunities we have created, both for the children and staff, through the multiple partnerships we have developed.

What do you like doing in your spare time? I enjoy spending time with my family and friends. I read a lot, and when I am not reading, I am out walking. I’ve walked the majority of the Norfolk Coastal Path which I aim to complete at some point.
