A crisis not of our making Brian Chester reports

A

s this 2022 edition of the Pig Guide went to the printer the British pig industry continued to face many challenges. Sustained protests to an apparently uninterested government – while the build up of market-ready pigs on the farm increased with producers in despair as they began to cull top quality, healthy stock and see the carcasses go to waste – finally produced the go-ahead for temporary visas to allow processors to employ foreign nationals to tackle the backlog on UK farms. This belated action, however, cannot wipe away the previous apparent lack of interest and dismissive attitude by those in Government who the industry had looked to for help. It took persistent lobbying by the industry, face-to-face protests and wide media coverage, to make an impact. Up to that point it was as if production of pig meat in this country could be put aside and with the industry left to suffer the consequences of a disaster that was not of its making. Pig meat is easy enough to import from a dozen or more countries – while conveniently ignoring the ‘promises’ (and real consumer concern) on animal welfare and aided by the fact that proposed import checks on meat have been put back to July 2022. And whoever mentioned food security? Does the ‘lesson to be learned’ of over reliance

on third-party suppliers which still flickers in the flames of the gas crisis, mean nothing? For those who like to speculate on these things there could be a message here for other sectors of the UK food chain should misfortune strike. It is against this background – unprecedented since the Pig Guide was first published 26 years ago – that the 2022 edition was prepared. We are grateful to the organisations and companies which have contributed to the Guide allowing it – and its companion website www.pig-guide.com – to continue as a principal reference source during the coming year and thereafter. The effectiveness of the Government concession to allow processors to ‘import’ butchers will depend on how quickly they arrive. But the sad truth is that, whatever the outcome, it will not be a quick fix. All sectors of the industry covered in these pages will be called on to work together to ease the pain and repair the damage. This issue also contains reference to those organisations dedicated to providing help in times of crisis and need (see opposite). These contacts will be listed on the website and kept up-to-date. But questions remain: why it needed a campaign by the industry to bring those in government to their senses. This crisis did not happen over night. And what happens when the six-month permits run out given processors say they need at least 8,000 more butchers? Another backlog? Another crisis?

Sustainable statistics, delivering authentic outcomes in an increasingly sensitive world Jane Jordan reports

H

erd recording and pig business analysis is changing, and it has to if pigmeat production is to meet the challenges of climate change and increasingly judicious consumerism. Further globalisation, with growing pressure to be more sustainable, is forcing livestock businesses to re-evaluate key performance indicators and question the effectiveness of current benchmark statistics. Productivity measurements, such as pigs weaned/sow/year, tonne of feed/kg gain, are relevant but no longer satisfy modern production perspectives because supply chains, consumers and political strategists want more meaningful data. They want figures that quantify environmental impact and the ethical value their choices bring to the wider community. They want to know what a food product offers them, in terms of the

resources used to bring it to market, the carbon footprint it leaves behind and that it meets their expectations for eating quality, health benefits and value for money. Lifecycle econometrics embrace wider production perspectives and can go some way to satisfying these new demands. These measurements offer a clearer definition of production performance and how it really stacks up against available resources, such as the genetic capability of a herd, the nutrition supplied, the skills/labour available, the equipment/facilities used and the re-investment a business can afford to plough back in. Jesper Toft, agri-business and data/IT consultant with WinOpti, AgroVision’s feed optimisation programme, is a keen advocate of Life Cycle Assessment. He says it offers a more

These parameters are central to European and UK environmental policies, but they don’t take account of the emissions generated by any imported goods that might be used in a particular food production or manufacturing process. “LCA delivers a far more reliable measurement because it embraces all of the impacts – positive and negative – created by a food production/ supply process. If imported feed ingredients or fertiliser are used, then their emission values are calculated, along with those associated with processing, waste disposal and by-products, further manufacturing and the transport and packaging involved in bringing that particular product to market. It represents all the impacts of that chain and is very valuable information,” he adds.

too many second parity sows were being culled due to reproductive failure or second litter drop. To counter this loss most breeding herds were keeping too many parity six-plus sows, which presented a greater risk of breeding failure and excessive feed costs, because big sows eat more,” he explains. Evidence from client herds that adopted a proactive culling policy that removed parity six and above sows and all females reporting reproductive failure, consistently proved this policy could boost productivity and margins. These herds were more efficient and consistently reported better farrowing rates, fewer empty days, sustained numbers weaned in each batch and had lower feed costs. Also, by focusing on gilt management and retention, these businesses soon found they could cut breeding failure in

subsequent parities and achieve more predictable and cost-effective lifetime performance for all sows in their herd. This evidence encouraged AHDB Pork to launch Gilt Watch in 2017. Mr Hall helped roll out the programme and five years on the UK’s breeding herd demographic is noticeably different. Parity profiles (indoors and out) are more concise and both gilt performance and retention rates are better. However, Mr Hall believes further improvement could be achieved if producers introduced lifecycle measurements into their herd recording programmes and explored ‘herds-within-a herd’ data analyses. Gilt retention is a key component of breeding herd efficiency and needs to be examined more thoroughly. focuses on lifecycle performance metrics and has the capability to evaluate numerous efficiency factors, relating to different stages within a breeding process. “The approach is quite ‘Avant Garde’, but producers who are testing the ‘prototype’ are impressed with what the analytics are revealing. They are learning to understand more about the metrics involved, what they mean to real-time herd efficiency and how this valuable data can be used to define their own key objectives in terms of the herds parity profile, productivity/performance, culling rate and dam retention,” Mr Hall explains.

Sustainable scores Another unique feature of this innovative digital herd management package is its CO2 evaluation facility. ‘Gilt Watch CO2’ uses sophisticated IT to calculate ‘Carbon Days’, a value that corresponds with specific life cycle analytics and creates a numerical sustainability score. These values/scores can then be used to assess how management decisions might influence environmental impacts and economic outcomes, or collated as ‘currency’ the business can trade with or derive benefits from. LCA, and the econometrics associated with them, will become a fundamental part of pig business management because society will want to know what impact producing a kg of pigmeat has on the planet, not how many pigs a sow can wean in a year. The industry must develop new methods of measuring business performance. It needs tools that can identify where and how finite

Enhanced sustainability will nurture long term profitability Paul Smith assesses progress in this country and Denmark

T

a head start. Already the UK pig industry has embraced the change in social attitudes regarding pig welfare. It is recognised as a shining light because of the emphasis on more pig friendly production systems and the sensitivities of the 21st century’s customer base. Furthermore, sustainability has become an enhanced focus for the whole of the pork chain and pig producers will have to take some ownership of this global need. Since the Covid pandemic, market research has shown that consumer concerns about sustainability issues have ascended the priorities list. In developed countries this has resulted in a changed approach to investment strategies. It is not only an ethical issue. Shrewd investors are now starting to acknowledge that companies with a strong focus on sustainability will become the companies more likely to deliver long term profitability. Accountants Price Waterhouse Coopers suggest that by 2025 as much as 75% >> of global gross domestic production could be

hose passionately involved in addressing the everyday challenges of running a modern business, understandably, tend not to prioritise the need to adopt radical unprecedented changes which might be sneakingup on their business model. A sharp focus on ‘the here and now’ and commercial survival usually has to dominate the thinking. Times have changed. The UK pig industry, increasingly, has to operate within a global marketplace and social responsibilities are becoming an issue for corporate strategists. The United Kingdom is one of 178 countries signed-up to the United Nations 2030 Agenda For Sustainable Development. At its heart are 17 wide-ranging Sustainable Development Goals (SDGs). Objective 12 is about Responsible Production and Consumption whereas objective 13 is concerned with Climate Action. Like it or not, both these objectives will have a major influence on how pigs are produced in the future. We have

SUSTAINABILITY committed to carbon neutrality. These societal changes will rattle the pork chain and pig producers will sooner or later feel it tightening. Already EU countries are being incentivised to embrace sustainability challenges and opportunities. The EU Innovation Fund is one of the world’s largest funding programmes for the demonstration of low carbon innovations. It’s meant to kick-start new thinking. This money-pot is available to encourage EU members to invest in clean energy. Furthermore, it aims to boost domestic growth, create future-proof jobs and reinforce European technological leadership on a global basis. Put another way it’s an incentive offered for ‘club members’ in a club in which the UK no longer has membership. Those familiar with the forwardlooking Danish pig industry will not be surprised to hear that SEGES, the Danish Agriculture and Food Council has made an early and game-changing commitment to this global priority. It intends to be a big player in the ‘circular economy’ i.e. engage a model of production and consumption, which involves sharing, leasing, reusing, repairing, refurbishing and recycling existing materials and products as long as possible. Denmark aims to be the world leader in the circular economy by 2030. It will nurture a newlook pig industry which tackles these key global challenges such as loss of biodiversity, waste

minimisation and enhanced production efficiency. Despite the country’s imbalance between pigs and people, reducing the size of the national pig herd is not on the agenda. Circularising its economy is regarded as the gateway to becoming an even bigger global player in pig production. Denmark has already set-up a Roadmap For Sustainable Transformation of the Danish Agri-Food System. Reducing home production of food will have little impact on global sustainability concerns. However, in its role as a huge exporter of food, its focus is on the bigger picture. Not only will Denmark aim to become a test-bed for enhancing the sustainability of food for home production, by concentrating its research on sustainability, the country will acquire new knowledge that can be used all over the world. There is both a need and an opportunity because by 2050 the global demand for food is likely to be 45% up on current levels. As nations become more affluent, their meat consumption increases. Meanwhile those in the more affluent countries are likely to eat meat ‘differently.’ In order to address these issues, there will need to be a closer link between research and manufacturing so that the lag time between innovation and commercial implementation will be reduced. The Danish ‘Roadmap’ emerged via the Danish Innovation Fund which brings together research, technology development and innovation grant applications. Over 300 university departments and research establishments contributed to the Roadmap to secure the EC grant. An online webinar recently attracted 400 participants, many of whom were from distant countries which reflected the global interest in sustainability. Priorities for the pig industry involved greenhouse gas reduction via more emphasis on using sustainable feed inputs and effective feed supplements. The potential to reduce noxious gases by more frequent or the immediate discharge of slurry combined with more use of additives in stored slurry and robotic cleaning strategies were also discussed. There was some mention of controlling the exhaust fumes from covered tanks, all part of the goal to reduce the carbon footprint by 25% come 2030. These developments are likely to be linked to demonstration facilities to encourage accelerated


uptake. A target of reducing protein inputs by 30% by 2030 has been set. It is likely that in part this will be achieved via plant breeding and protein production from both green and marine biomasses. What has been the response in the UK to the challenge for its agriculture needing to become more sustainable? The scope for input from research establishments is limited following their demise in recent years. However, the strategy involves’ The Sustainable Farming Incentive’ which is a new government scheme that rewards environmental land management. Its main objectives are: 1. Maintaining and enhancing the natural environment 2. Reducing carbon emissions 3. Improving the health and welfare of farmed animals. DEFRA launched a pilot project on selected farms in October 2021. Starting in April 2022, the scheme will be available to all farmers who currently receive the land-based Basic Payment Scheme. At this stage, the main benefits to pig keepers will be via the Animal Health and Welfare Pathway, which will fund a yearly visit from a vet, or vet-led team. It will be a time-limited offer for three years. In particular, pigs will be tested to monitor herds for porcine reproductive and respiratory syndrome virus (PRRS). It’s still early days in this late started initiative, but more standards are intended to be added into the

Sustainable Farming Incentive scheme between 2022 and 2024. No doubt the Government is already bending a listening ear to single-agenda vegans and vote-winning bird watchers. So far, uptake by farmers i.e. those who produce food and are eligible for the pilot scheme of DEFRA’s Sustainable Farming Incentive, has been pathetically low. The National Audit Office logs it at just five per cent. The Government has presented it as a new opportunity to gain a green-washed National Service badge. The degree of urgency and importance of joined-up thinking towards a more sustainable home-based future-proof farming system seems disappointingly lightweight. In particular, those involved in pig production with a limited land area have been side-stepped and opportunities to work for the common good have been squandered. Maybe those who understand the pig industry best, belatedly should be rattling the DEFRA cage somewhat vigorously. The UK pig industry has a commendable survival and self-help track record. In order to deliver more sustainable lean meat production it will certainly have to push these qualities to the absolute limit. The innovators and early adopters will have a lot on their plate and will need to work even more closely with universities, what remains of our research base and the most forward-looking manufacturers. Meanwhile the NFU suggests “You can’t be green if you’re in the red.”

Why the push for freedom must be given time Jane Jordan reports

F

arrowing crates continue to dominate the government’s animal welfare agenda and Defra has stated it wants to reach a point where farrowing crates are no longer necessary. Non-government organisations (NGOs) want a complete ban on crates and total free-farrowing by 2027. The NPA, however, is fiercely campaigning for a much longer transition phase – up to 30 years. This extended time scale will allow a voluntary approach to the phasing out of crate systems and for meaningful research and development and trial work to be carried on suitable alternatives. NPA also wants more clarity on what systems will be permitted long term, and for any new welfare legislation to endorse the use of temporary crating, where sows can be restrained when necessary, such as during the first few days post-farrowing and for treatments such as vaccination.

Pig producer Matt Wilkin has been freefarrowing sows on his breeding unit for around eight years. The family business has developed its own fully-slatted farrowing system and has been sharing their management experience and how pen design and functionality has evolved with industry stakeholders and other interested groups for a number of years. The 2,100-sow business initially replaced some traditional crates with 360-degree pens, but overtime has modified the system to suit their own requirements. Refurbishing and converting the farm’s crated accommodation has been a steady reinvestment programme and it now farrows 80% of the breeding herd in freefarrowing pens. It plans to replace the remaining crates during the next six to 12 months. But unlike other pig businesses, the Wilkin’s decision to free-farrow has been about protecting capital investment and future proofing their business.


FREEDOM FARROWING “We are a typical commercial pig business, supplying 7kg weaner to finishing farms that rear pigs for various markets. We need production systems that are viable, that work efficiently and can help us optimise productivity and labour resources. The farrowing accommodation we have here works well, with performance comparable to a conventional crate system. But it’s taken us around ten years to develop it – a point I’ve really emphasised during my industry discussions,” says Matt.

This business is fortunate to have fabrication skills, so has been able to develop a bespoke system that combines both 360-degree movement and temporary restraint. “Pig production is a way of life for us, and when you are with pigs every day, working in all production settings, you get an understanding about what works best for you and them. Developing our free-farrowing pen followed this ethos and what we have here is a very practical, functional system that gives the sow freedom, protects piglets and allows the stockmen to do a good job and safely,” he explains.

• The Wilkins free-farrowing system was awarded the National Pig Award for Farm Innovation in 2020. • The 6m2 pen is fully-slatted, has rails to keep sows lying central and away from the walls, and features a well-designed moveable, temporary crate that can be opened fully to allow complete freedom or fastened in specific positions along the rear rail to suit sow size and stockman requirements.

The farm’s key objectives are to improve efficiency, reduce production costs and achieve premium prices for the weaners they sell. Good performance is vital at every stage and pig quality and consistency of production are paramount. The breeding herd aims to wean 13 to 14 piglets a litter with an average 7kg wean weight. Preweaning mortality runs at between 10% to 12%. Health and hygiene are of utmost importance in the farrowing rooms and why they use a fully slatted system. “Solid flooring and bedding are difficult to manage in a free-farrowing setting. It’s hard to keep pens clean so piglet health can suffer. The labour requirement to manage it properly is also very high and I doubt many farms could sustain those additional costs without receiving premium payments. Our pens are fully slatted and perform well. Sows are comfortable and piglets thrive,” says Matt. Both sows and gilts are kept unrestricted at farrowing, but are restrained once all piglets have arrived and for the first four days lactation – mainly to allow stockmen safe and easy handling of piglets for sizing up, fostering any vaccinations and teeth grinding etc. Matt says allowing sows to move freely when they farrow lets them settle and position themselves comfortably. It has also reduced the length of time farrowing takes, with fewer born dead piglets, and better neo-natal survival rates. Gilts are also calmer when left free and no savaging has occurred since they stopped restraining them. “They do fidget at the start, but once farrowing begins, and they decide where they want to lie, then they don’t move until the job’s finished. Restraining sows might seem like a sensible option for piglet safety, but we’ve found they’re better off finding their own position. You just have to watch them once they’re done as they tend to get quite active, especially when you go in to clean up and check piglets. They stretch, will usually drink and eat plenty, and do this quite frequently during the first few days, which is why we restrict their movement, particularly if they have a large litter,” he adds. These are fundamental observations and ones Matt’s been keen to point out during his industry discussions. He firmly believes temporary crating must be permitted to protect piglet welfare and stockman safety.

Protecting the reputation of pork and promoting its benefits Consumer marketing activities such as the midweek meals campaign, which is now in its fifth year, support the industry by encouraging a positive attitude towards pork. Demonstrating pork’s versatility, taste, leanness and value ensures it maintains relevancy to modern consumers and drives sales. Independent evaluation of the midweek meals pork marketing campaign, which ran from October 2020 to January 2021, shows it reached more than 85% of UK households, with consumers’ desire to buy pork at its highest level in three years. A further burst of the campaign was run in October 2021 highlighting the great taste and versatility of pork shoulder to make delicious pulled pork. A pork medallion campaign is planned for January 2022, which will focus on the leanness of the cut. Our We Eat Balanced campaign has proved successful and is being repeated in January 2022. The campaign, which includes a new TV advert, will educate consumers on the sustainability aspects of British farming, and the nutrients found in pork – particularly vitamin B12. In addition to our work to help influence consumer attitudes and perceptions around pork, we also support industry initiatives to help connect consumers with the farming sector and ensure that young audiences are well informed about where food comes from.

Animal health and welfare, and the environment We provide a wide variety of support services and tools to help all producers breed and rear animals in optimal conditions. We also work closely with other organisations such as the British Pig Association (BPA), the National Pig Association (NPA) and the Pig Veterinary Society (PVS) to ensure that, wherever possible, we can offer producers a holistic approach to managing animal health on farm. • Electronic medicine book for pigs (eMB): Our pioneering digital platform has recorded a 60% reduction in the use of antibiotics across 94% of finished pigs since its introduction in 2016 • Pig Hub: Pig Hub is a single pig industry portal for all producers, which provides an accurate database for the industry, recording changes on individual pig units The environment is also a growing concern

Our Environment team is active in major groups and decision making both domestically and globally. • Ammonia emissions: Our ammonia monitoring trial demonstrated that the British pig industry is successfully reducing ammonia emissions. The results, which were welcomed by the Environment Agency, finally enable the industry to firmly demonstrate compliance and best practice, saving producers an estimated £15.3m from environmental mitigation costs • Slurry cooling: Slurry cooling is reported to reduce ammonia emissions by up to 75%, and the heat extracted can be used to heat livestock housing, reducing energy and heating costs. We have created a dedicated slurry cooling hub to equip pig producers with the correct resources, guidance, and tools to understand the options available for implementing slurry cooling on a farm

Farmer-to-farmer learning: Our Farm Excellence programme is about making real change on farm through a wide-reaching platform of activity that allows farmers and producers to learn from one of their most trusted sources – each other We have two types of host farms, which differ slightly in what they cover: • Strategic Farms focus on delivering improvements to individual, technical areas of running a farm (e.g. water quality and quantity) • Monitor Farms focus on improving overall business performance and generally concern the whole farm (e.g. SmartPork and Lean Management) Our Retail and Consumer Insight teams work to understand the needs of modern food consumers and how their attitudes towards cooking, buying and eating influence the whole supply chain. RSPCA Assured continues to make its mark

N

ow in its 28th year, RSPCA Assured is proud to have about 25% of UK pig production operating under the RSPCA Assured scheme to the RSPCA’s welfare standards. And with more than 600 different pork products on offer in retail, pig production firmly remains one of RSPCA Assured’s biggest successes. In fact, RSPCA Assured labelled pork products account for nearly half of all the different RSPCA Assured products available. 2021 saw M&S expand its RSPCA Assured range to include all pork, farmed salmon, farmed trout, Oakham Gold chicken, milk and eggs. This means they now offer more RSPCA Assured products than any other retailer. But it’s not just in retail where RSPCA Assured continues to make its mark. As the scheme’s expansion into foodservice continues, it has launched a new supplier directory to make it easier for businesses to find RSPCA Assured suppliers. Today, more than 60% of UK consumers recognise the RSPCA Assured label - further reflecting the growing trend for higher welfare products*. And with the launch of its Welly Vision campaign, this figure is expected to continue growing. Welly Vision kickstarted in 2021 with a

10-minute micro-documentary focusing on pigs. Fronted by food campaigner and TV presenter, Kate Quilton, the YouTube video is aimed at people who eat bacon, sausages or other pork products, or who are interested in finding out more about pig farming. Keep an eye on RSPCA Assured’s social channels to see what Welly Vision has in store throughout 20202. For pork products to be labelled RSPCA Assured, all stages of a pig’s life must have been covered by the RSPCA’s standards including on farm, in transport and at the abattoir. Processors and packers must also be RSPCA Assured certified. The RSPCA standards are informed by scientific evidence and encourage best practice. The standards cover pig health, diet, environment, care and welfare outcomes. This includes the provision of bedding, nesting material for sows, environmental enrichment such as straw and prohibiting farrowing crates. All RSPCA Assured members receive annual assessments by specially-trained assessors and are subject to visits by RSPCA farm livestock officers to ensure standards are maintained. Your guide to BPA: British Pig Association The British Pig Association is the independent national pedigree registration organisation for 14 breeds of pig in the UK. Founded in 1884, the Association today is dedicated to the conservation of our native pig breeds. In partnership with the RBST, a genebank is being built to protect our breeds in the event of an outbreak of exotic disease. As part of our on-farm conservation programme we try to help small scale producers of pedigree pigs build sustainable rural businesses to ensure the long-term survival of our breeds in the farmyard. In support of this objective the BPA has launched a Pedigree Pork programme to promote finished pigs from pedigree breeders to independent butchers and assist with direct retailing of pork to consumers. Our Junior Pig Club works with schools to encourage the next generation of pedigree pig breeders and raise awareness of the link between consumption and conservation. Eat Them to Save Them. The BPA website has an interactive search page for local suppliers of pedigree pork. The website also has full listings of suppliers of both breeding and finished pedigree pigs based on the latest information from the pedigree database. The BPA has always recognised the individual identity of the breeds within the association. Each breed elects its own representatives who are the first point of contact for members with questions about pedigree breeding or problems to be resolved. EASYFIX provides environmental enrichment devices for pigs of all ages. Our “Luna” devices consist of a rubber ball in the centre which has up to twelve legs extending outwards to provide the pigs with a moveable and rollable object. This mobility helps to generate a sense of food search and exploration for pigs which mimics their natural environment. The rubber legs attract the pigs and encourage them to interact with the toys and eventually bite and chew them, with the toys able to entertain up to six pigs at any one time. As the pigs grow quickly so does their strength and that’s why EASYFIX has developed four models with different sizes and strengths: • Luna 50 - for piglets (0-4 weeks) • Luna 86 - for first stage weaners (4-7 weeks) • Luna 117 - for second stage weaners (7-12 weeks) • Luna 142 - for finishers/sows (12-26 weeks) Each toy is made of food-quality plastic and complies with REACH regulations.
