AWARD WINS AT UGLY BUTTERFLY

Ugly Butterfly’s sous chef, Connor Blades, won UK Young Chef of the Year 2021 at the prestigious Young Chef Young Waiter UK 2021 competition. Junior sous chef Ali Halbert also performed excellently in the competition final, achieving second place, demonstrating exceptional talent in the kitchen at Ugly Butterfly in St. Ives, Cornwall. The competition is renowned for recognising some of the best talents UK hospitality has to offer and was judged by, among others, Tom Kerridge and Ugly Butterfly’s Adam Handling as head chef judge and Simon King as head waiter judge. Winner Connor’s inspiration comes from his surroundings in Cornwall and he uses innovative techniques to create delicious dishes that take advantage of the huge variety of fresh and seasonal local ingredients. Adam Handling tells us, “Judging chef of the year has been super exciting. I didn’t have voting rights in the competition as two of my team were in the final ten, so it makes it even more special that my fellow judges not only picked Connor as the winner but Ali in second. Connor really cares about the industry, cooks amazing dishes and works beautifully in a team. I always think of the

relationship between chefs and waiters as being quite romantic, and the partnership he created with the waiter team was inspiring. Connor Blades is the future of hospitality, and I know for a fact that he’s the future of my restaurants.” A new menu has been launched at the restaurant and bar in keeping with the restaurant’s ethos of offering sustainable, local luxury British food, inspired by Cornwall. Guests can enjoy dishes such as Cornish crab with apple and jasmine. All seafood used in the restaurant is caught locally from fishermen in St. Ives and the signature dish at Ugly Butterfly is lobster with beef fat. Other new dishes include mushroom agnolotti with parsley and garlic, and squash with hazelnut and sheep’s yoghurt which use ingredients from regenerative Cornish farm, Trenow Fields. In keeping with the sustainability behind the menu at Ugly Butterfly, any waste from the kitchen is used by the bar team, maintaining the momentum towards being as zero-waste as possible. Bar manager Josh Linfitt has developed an innovative new cocktail menu in which every drink is crafted using some by-product from the kitchen. For example, the new Faltown Martini uses once-wasted oyster shells to infuse vodka and harness the flavour of the ocean, served straight out of the freezer.

SALCOMBE DISTILLING CO. LAUNCH NEW LONDON LIGHT FOR DRY JANUARY

New London Light from the Salcombe Distilling Co is a bold collection of contemporary non-alcoholic spirits and aperitifs in time for Dry January thanks to the adoption of innovative flavour combinations and a pioneering production process. The two latest expressions - New London Light Midnight Sun and New London Light Aegean Sky - have been created by master distiller Jason Nickels and the Salcombe Distilling Co. team who make a core part of the process at their waterside distillery where they keep as much of the process in house as possible. The production of most non-alcoholic spirits and aperitifs is often outsourced to flavour houses, where the entire process takes place externally. Master distiller Jason Nickels uses his extensive knowledge and understanding of flavour, foraging, botany, and of course distillation, to create the core flavour profiles inhouse. He tells us, “Until now, most alcohol-free drinks brands have been particularly light on detail and transparency when it comes to their distillation and production process. After nearly a decade of creating multi-awardwinning gin, we are delighted to share how our non-alcoholic aperitifs are created.” Howard Davis, co-founder and director at Salcombe Distilling Co. adds, “The non-alcoholic space is a fast-growing and exciting playground that has provided us with an opportunity to get creative and explore innovative techniques and processes. SOUTH AND WEST CORNWALL HOTEL TRESANTON, ST MAWES This hotel by the sea is formed of a cluster of houses built on the waterfront providing a stunning backdrop for weddings. ucinda and Adam met online. “I was attracted to his beard,” Lucinda tells us, “and I loved her legs!” Adam adds. The couple started dating and became engaged during a surprise proposal on the beach in St. Ives, Cornwall. “It was a wonderful moment and the weather was perfect,” Lucinda tells us. “Some members of the public nearby clapped and cheered us on which was very special!” The couple decided to get married at The Minster Church of St. Andrew Plymouth and host their reception at the Treasury café, bar and restaurant next door. “The church is breathtaking and both venues are very centrally located which was perfect, especially for our older guests,” Lucinda tells us.

SETTING THE SCENE Lucinda and the bridal party arrived at the church in a classic Bramwith car. “I was so nervous and excited before our ceremony and couldn’t wait to walk down the aisle! The church looked magical and everyone was beaming with happiness so we exchanged our vows surrounded by plenty of love and support. All of our guests sang the hymns enthusiastically with Hosanna being a highlight!” At the Treasury restaurant, Lucinda and Adam decided to have their top table placed along the back wall so that all of their guests faced them and the view of the church behind. “We gave our guests wildflower seeds from Marie Curie as favours with the sentiment of letting love grow,” Lucinda explains. “We had laser-cut rose gold place names and tea lights placed in vintage-style gold, copper and rose gold holders and we displayed elegant tall vases trimmed with crystals and filled with white hydrangea, wisteria and eucalyptus on the tables. We also had a flower wall and a pretty rose and eucalyptus garland which our guests loved.” The couple chose a showstopping five-tier cake which took centre stage. “We combined fruit cake with a vanilla sponge layer and a chocolate sponge cake,” Lucinda says. “The dinner menu was delicious and we catered for our guests who were vegan, vegetarian and pescatarian.”

LOOKING THE PART Lucinda wore an ivory wedding dress by St Patrick called Musset. “I tried on seven styles in total and this was the first one that I instantly fell in love with!” she tells us. “I loved the Bardot-inspired neckline, sleeves and the fact that it had pockets!” Adam wore a navy suit with a pink tie and pocket handkerchief and his groomsman wore the same. “Our bridesmaids looked stunning in their Bardot-inspired full-length grey dresses,” Lucinda says.

TIME TO CELEBRATE “We hired a band called The Harbour who was fantastic from start to finish,” Lucinda tells us. “The crowd participation was amazing! Everyone in the venue was dancing, including the staff! The band performed an acoustic set while we ate which created a wonderful atmosphere.”

elissa and Ricky met at the We Are FSTVL dance festival during the Summer of 2015. “We share a passion for the same type of music and dancing,” Melissa tells us. The couple became engaged during a surprise trip to Seville, Spain where Ricky proposed in the Alcázar Gardens. “It was a wonderful moment and so romantic,” Melissa says. The couple chose the Carbis Bay Estate to host their big day where they enjoyed a ceremony in the hotel’s new Ocean Venue that helped determine their beachy seaside theme. “We decided on a gold colour palette to represent what would be my new married surname (Goldman) along with splashes of agate and marble. Before our ceremony, we stayed in one of the three-storey Beach Lodges situated directly on the white sand and we didn’t want to leave! It had a roof garden with a hot tub and a spacious open-plan lounge and staying at the resort meant that we were just a moment away from our wedding venue the following morning which was so relaxing – Ricky and his father even took a swim in the sea!

We loved our floral moon arch for our ceremony that looked wonderful in our photographs. Later, we moved it outside for some couple portraits. 34

We celebrated the confetti throw with our loved ones on the beach, creating some memorable photos, followed by a drinks reception to toast. Our guests loved the edible flowers used to garnish the prosecco!

hloe and Joby met while working as mental health nurses in 2012. “We got to know each other during a night out in Truro,” Chloe tells us. “We started dating and were together for a few years before going our separate ways. We then bumped into each other again in 2018 and the spark was undeniable so things developed from there.” The couple became engaged on Perranporth Beach in Cornwall. “We had planned to go to the beach for the day and took a mini tapas picnic with us,” Chloe says. “We enjoyed a walk across the dunes and just as we spotted the sea, Joby reached into his bag, got down on one knee and asked me to marry him! It was a wonderful moment.”

SETTING THE SCENE

“Joby gave an amazing and heartfelt wedding speech, he did an amazing job. We often talk about the day and there’s nothing that we would change. The ceremony was my favourite part because it was so beautiful.” – Chloe

Knightor Winery was the only venue that Chloe and Joby visited and both fell in love with it straight away. “We wanted an intimate and laid-back wedding with our closest loved ones and felt this special venue was a perfect size and looked so beautiful,” Chloe says. “We decided on a dusky blue and grey theme so we hung white lace, blue and hessian bunting from the beams and displayed mini crates that my dad had varnished brimming with succulents on the window sills which looked great.” The couple wanted plenty of wild foliage and flowers with pops of blue in their arrangements at their ceremony and reception. “We got married outside under an arbour where we had a stunning flower archway that was moved into the courtyard after the ceremony,” Chloe tells us. “We had four meadows within the arbour that were later placed in front of the top table. Myself, our bridesmaids and flowergirl held stunning bouquets and Joby, the groomsmen, our fathers and our usher all wore coordinating buttonholes while our mothers each had a magnet corsage.” The couple’s cake was also decorated with foliage and blue details. “We had a stunning three-tier semi-naked cake with two chocolate tiers and a salted caramel layer. It tasted delicious and worked beautifully with our rustic theme,” Chloe says. “Our cake topper was wooden peg dolls made to look like me, Joby, our pug Milo and our cats, Henry and Maisie and is one of my favourite keepsakes from the day!” The couple chose coloured glass bottles filled with eucalyptus leaves and single-stem foliage as their centrepieces. “Each table was decorated with soft blue cheesecloth table runners, glass jars filled with fairylights and hessian covers,” Chloe describes. “Our top table featured a wooden ‘Mr and Mrs Plant’ sign. We had rustic-inspired place names made from mini wooden tree logs and wooden table numbers. Our favours were pin badges that we had designed especially to represent us in a quirky way - we were so happy with them!”

REAL WEDDINGS “Performing our first dance was a highlight for me because we had practised it a couple of times beforehand and were a bit nervous but it was wonderful to have a few precious moments with my new wife.” – Jody Chloe and Joby also styled their wedding with various wooden signs, a hand-painted order of the day and a ‘find your seat’ sign decorated with eucalyptus leaves and fairylights. They provided some personalised activity packs for the children and grey blankets featuring brown rustic-style tags stamped with their newly married name and wedding date. “We also provided pairs of blue flip flops for when our guests needed to relax and dance!” The couple treated their guests to canapés which included fish and chip cones, courgette fritters and vegan options of chip cones and fritters. Their chosen starters were chickpea falafel, roasted squash soup or butter-steamed Cornish sole and the main dishes were roast beef, chicken or a root vegetable roast. “Everyone loved the catering, especially the summer berry mess, triple chocolate devil’s food cake and crispy banana fritters for dessert,” Chloe explains. “During the evening, we provided pasties and cake and plenty of prosecco for the toasts. We placed cocktail jugs of Cornish Spritz on each table instead of wine.”

LOOKING THE PART Chloe wore the dress called Kameron teamed with the Itala top both by wedding dress designer Catherine Deane. “I fell in love with it and felt that it suited me and the wedding day that we had planned,” she says. “During the day, I wore the dress with the top which I had altered so it fitted snug around my waist. I teamed it with a simple and elegant long veil and a pair of beautiful diamond halo drop earrings that matched my engagement ring. During the evening, I removed the top and added a sparkly belt ready to party! I also wore a diamond halo necklace that Joby gave me as a gift on the morning of our wedding along with a heartfelt letter that he wrote for me.” Joby and the groomsmen wore blue tweed three-piece suits. “They got so many compliments and looked so smart,” Chloe says. “The suits were slim-fit styles which I had to talk Joby into trying on because he doesn’t usually feel comfortable in slim-fit clothing, but he liked it and looked so handsome! He rented it for the wedding but loved it so much that I purchased it for his birthday soon after the wedding!” The couple’s bridesmaids wore beautiful pale blue floor-length dresses and all felt comfortable in them. “I wore my hair half-up and half-down so our bridesmaids all had beautiful up-dos,” Chloe explains.

TIME TO CELEBRATE Chloe and Joby chose Classical Strings to play during their outdoor ceremony. “It was a last-minute decision and we were both extremely happy that we booked the musicians because it created such a romantic atmosphere,” Chloe tells us. “I walked down the aisle to Eric Clapton’s Wonderful Tonight and Taylor Swift’s Wildest Dream was played whilst as we signed the register followed by All You Need is Love by the Beatles as we walked back down the aisle together as newlyweds.” During the welcome drinks, Chloe and Joby hired the singer Mike from Crown Entertainment to entertain their guests. “His voice was incredible and the atmosphere was so relaxed. We also had a coconut shy and a selection of outdoor garden games including giant Connect 4, hook-a-duck and Jenga. For the evening entertainment, we had a photo booth that printed the pictures instantly. It was so much fun and was used a lot by us and our guests who loved the mini boomerang videos! Our DJ was fantastic and played the right type of music to get our guests on the dancefloor!” 41

ELLIS ROSE FLORAL DESIGN Natalie and Gary Drake are the husband and wife duo behind Exeter-based Ellis Rose Floral Design, named after their children. “They’re always on hand to fill up water buckets and are great little conditioners!” Natalie tells us. Natalie does most of the designing and drawing of ideas which Gary then works out the mechanics for to bring it all to life. “Gary’s an expert at wiring so most of our floral crowns are his designs while I love creating the big statement pieces,” Natalie explains. “Our varying styles complement each other but we can both turn our hand to the other’s style easily. We love capturing each couple’s style and bringing that drama and excitement to our work so it reflects their personalities and provides a beautiful backdrop for them. We see flowers as an art form to create something beautiful with.” Looking ahead to new-year weddings, Natalie and Gary believe that dried and fresh blooms mixed will be a big trend. “The large wow-factor flowers are also proving popular when combined with simple table arrangements,” Natalie explains. “We promote seasonal varieties where possible and try to buy a mixture of flowers from local growers. When we do use a wholesaler, we check that safe and fair conditions are applied throughout the supply chain using socially responsible growers.

Natalie says, “Unlike floral foam, moss doesn’t need to be hidden so we can utilise sustainable methods that not only keep costs down but also become part of the design and look beautiful. We never use single-use plastic and we reuse, recycle, and repurpose everything possible that comes through our studio - for example, the boxes that the flowers are delivered in are cut down and used to make smaller presentation boxes for bridal bouquets or boards to present buttonholes on. We try to ensure that as much moss and chicken wire is broken down after each event and reused for the next one, and even elastic bands are taken off deliveries and kept to be reused. Leftover floral material is put on our compost heap and then used on our vegetable patch at home. We try to make sure that unused flowers that can be dried, are, meaning that they can be used in the future.”

THE FLOWER PRESS SHOP Ellie Truscott is the owner of The Flower Press Shop, a specialist botanical and flower shop located in the heart of Truro. As well as providing beautiful, bespoke flowers for weddings and events, they also deliver gift bouquets in and around Truro. Ellie tells us, “I go foam and plastic-free for my wedding installations,

preferring to work with moss and wire instead. Where I can, I source local flowers from growers such as Perdie’s Flowers (www.facebook.com/perdiesflowers) and The Cornish Flower Patch (https://thecornishflowerpatch.co.uk), especially during the summer months when there are plenty of choices.”

VINTAGE & BLOOM Angela James is the owner of Vintage & Bloom, a bespoke florist based in Falmouth, Cornwall. She tells us, “In 2022, we will see the ongoing movement towards floristry being more sustainable and environmentally friendly with couples shopping locally where possible. Customers are becoming more conscious of the impact that their wedding has environmentally, we are seeing many that want to reduce their carbon footprint and waste.” Angela continues, “As an eco-friendly florist, we have stopped using floral foam and all of our installations are now foam-free. Foam has a massive impact on the planet being a micro plastic so we have taken floral arranging back to traditional methods by using chicken wire, water containers and sustainable moss. We are using

Cornish and British-grown flowers and foliage to eliminate air miles which are not only better for the environment but also supports local growers and businesses. We encourage our brides to pick flower varieties that are in season for their big day.” All of the packaging that Angela and John at Vintage & Bloom use is recyclable. “The ribbons are natural plant-dyed silk and vegan ribbons, handmade in a sustainable method from a small business called The Botanical Dyer (www.thebotanicaldyer.co.uk),” Angela says. “We use upcycled vintage props and vases for our weddings which look fantastic and can be reused again and again. Small changes make a big difference.”

Cornwall’s Sharp’s Brewery has won six internationally-recognised awards across three categories at the International Beer Challenge 2021 which exists to reward and promote excellent beers from around the globe whilst providing brewers with a platform to promote their beers to trade and consumers. The Rock-based brewery in Cornwall won three silvers within the ale category for Atlantic Pale Ale, Sea Fury and Wolf Rock and bronze for Doom Bar in the same category. Frances says: Unlike a civil ceremony which can only take place in a civic registered venue, a wedding ceremony with an independent celebrant can take place anywhere. This could be in your garden, on a beach, on a farm or in a woodland area which is a popular choice. There are no limitations, meaning that you can both choose somewhere that is personal and special to you as a couple. Your ceremony will be entirely bespoke and all about you, written specifically for you, celebrating your love story and your relationship with each other but also with your friends and families and there are no templates or restrictive words. The choice about the content of your ceremony is entirely yours. It doesn’t have to be devoid of tradition or familiarity, it can be structured to your exact wishes. This also applies to music, readings, writing your vows and including symbolic rituals. Some couples want certain traditions to be incorporated and some want religious and spiritual elements to be reflected in it while others don’t want any. The script will be crafted to reflect you, your values and beliefs and can be light-hearted, solemn, formal or informal. Unlike with a civil ceremony when you’re allocated a registrar for the day, you get to choose who to work with on your ceremony and who will lead it. An independent wedding celebrant is like any other wedding supplier and is likely to be the one that you’ll get to know the most. To create that bespoke script, they need to get to know you both well which will involve meetings before the wedding so choose a celebrant with who you feel comfortable and happy to share your story and whose style and character aligns with your own. Ruby Mimi in Zurich opened in October 2021, and is the first hotel of the Munich-based Ruby Group, to open in Switzerland. Those wishing to relax with an after-dinner drink can do so in The Monkey Bar where the Harrow & Hope Brut Reserve and Monkey Shoulder blended malt scotch whiskey are to be tried. For a cheeky late-night tipple, The Whiskey Snug, accessed via a secret staircase, is not to be missed, especially for the romantic view of the footbridge lit up at night.

WHAT’S NEW? The Shepherd’s Hideaway is nestled in a private spot in the grounds, decorated with contemporary countryside interiors. Memories can be made at this hand-crafted hut, with a celebratory afternoon tea or a gourmet picnic for between two and six guests that can be booked as an add-on to an overnight stay.
