s it that time of year again where we are getting ready for the holidays and shopping for our favorite event of the year, the National Finals Rodeo? Well, yes it is and I am so excited! We had a great time finding some yummy holiday recipes for this issue. The Pumpkin Pie Dip is one of our favorites! Also, it is an honor to feature Miss Rodeo Arizone, Taci Shaffer on our cover with a featured article. Taci will be competing for the title of Miss Rodeo America this year.
As this time of year rolls around again, I can’t help but thank you all for the support that you have given us here at Cowgirls In Style magazine! I
feel the most gratifying feeling comes from doing exactly what you know you were meant to do. It’s not always easy, but so much peace comes from standing in the exact position that you believed you could. That is why, I knew I could not give up on my passion. I have been participating in Rodeo Queen pageants since I was eight years old. It took me five years of multiple pageants a year to finally win my first title at age 13. Rodeo Queening taught me how to work hard, and how hard work pays off. At a young age it made me determined, goal oriented, driven and passionate. Later in 2009, I was able to see my dedication really pay itself off. After many years of trying, I went on to win the National High School Rodeo Queen, the highest title a teen can hold. So many ask me, “Why did you decide to continue to rodeo queen, after winning a national title?” For me, I had dreamed about being Miss Rodeo America! Each time I would lose a competition, I would smile at my Dad and say “Don’t worry Dad, they can win because someday I’m going to be Miss Rodeo America.” I chuckle at the thought of my innocence, but I still have that little girl beaming within me, and that little girl pushed me to never give up. If I tell myself I’m going to do something, I just have to do it. We are what we believe, we become what we repeatedly do. I knew, that if I won Miss Rodeo Arizona, I wanted it to be about others. I wanted to dedicate myself to in-
spiring others. I had a vision, a plan a goal and a dream. When I think about the title of Miss Rodeo Arizona, I don’t think solely about myself. I think about the past and the future that this title has. I wanted this time to be about bettering the brand of Miss Rodeo Arizona, create awareness about what a rodeo queen is, and what the job entails. I wanted to gain interest to raise pageant participant numbers, the caliber of girls and the sponsorship opportunities that Miss Rodeo Arizona can gain. And for myself, I want this title to grow, so that someday when I have kids, they look back in awe, that their mom was Miss Rodeo Arizona! That moment when you believed in yourself becomes the most powerful gift, never give up, a moment can easily turn into a memory. I feel so blessed to be right where I am. I am excited about the Miss Rodeo America Pageant. Although, the same little girl that’s beaming within that believes in herself without defeat. I know going into this pageant, there are 39 other absolutely beautiful, determined and inspiring young women who would also make an incredible Miss Rodeo America. The pageant comes down to, who can do the best with the draw they have in that one week. It is a pageant marathon. At a pageant such as this, one tiny mistake can cost you the whole thing. It is very intense, much more than what you’d watch when watching Miss America on TV. At the pageant, days begin at 4 a.m. and end around midnight. For nine days, our lives are a blur of one-on-one interviews with judges, intricate and high-pressure horsemanship routines, current events questions answered in front of huge audiences, fashion shows and modeling, photo shoots, speeches, Winter 2014 | www.Cowgirlsinstylecom

written tests. It would be wrong of me not to say that I’m starting to become a little nervous. But I believe, that in all your moments of fear, believe that fear can be your greatest asset... Fear is what challenges you, fear pushes you, fear changed you. If you are not afraid you’re not dreaming big enough. I want to give a huge THANK YOU! I’m beyond grateful to those of you who have pushed me, loved me, challenged me, believed in me and inspired me. Your love and belief absolutely finds me. So thank you. I love you all. With all my heart I believe that win or lose... This has always been my path. I guess now is the time to let the little girl in me, that always believed that she could be Miss Rodeo America, SHINE!! I trust in God’s plan for me, and I will let him be the catalyst of my destiny! And no matter the outcome I will be forever grateful that “being the queen of the rodeo” has been such a big part of my life. It has always been what I’ve always wanted to do; it’s always been one of my greatest loves and passion. It has shaped me into the woman I am today. A woman who beliefs in herself and never gives up. Holiday Traditions... Pumpkin Pie Dip.
Ingredients 1 package (8 ounces) cream cheese, softened 2 cups confectioners’ sugar 1 cup canned pumpkin 1/2 cup sour cream 1 teaspoon ground cinnamon 1 teaspoon pumpkin pie spice 1/2 teaspoon ground ginger Gingersnap cookies
Directions
In a large bowl, beat cream cheese and confectioners’ sugar until smooth. Beat in the pumpkin, sour cream, cin-
namon, pumpkin pie spice and ginger until blended. Serve with gingersnaps. Refrigerate leftovers. Yield: 4 cups. Note from the Chef...
I came up with this rich, creamy pumpkin dip when I had a small amount of canned pumpkin left in the fridge after my holiday baking. Pecan Pie Bars for a Crowd Ingredients 6 cups all-purpose flour 1-1/2 cups sugar 1 teaspoon salt 2 cups cold butter, cubed FILLING: 8 eggs 3 cups sugar 3 cups corn syrup 1/2 cup butter, melted 3 teaspoons McCormickŽ Pure Vanilla Extract 5 cups chopped pecans Directions In a large bowl, combine the flour, sugar and salt. Cut in butter until crumbly. Press onto the bottom and up the sides of two greased 15-in. x 10-in. x 1-in. baking pans. Bake at 350° for 1822 minutes or until crust edges are beginning to brown and bottom is set. For filling, combine the eggs, sugar, corn syrup, butter and vanilla in a large bowl. Stir in pecans. Pour over crust. Bake 25-30 minutes longer or until edges are firm and center is almost set. Cool on wire racks. Cut into bars. Refrigerate until serving. Yield: 6-8 dozen. Makes 72 servings

Candy Cane Rolls Ingredients
1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°) 3/4 cup warm milk (110° to 115°) 1/4 cup sugar 1/4 cup shortening 1 egg 1 teaspoon salt 3-1/4 to 3-3/4 cups all-purpose flour 1 cup red candied cherries, quartered
1 cup confectioners’ sugar 1 to 2 tablespoons milk Directions In a small bowl, dissolve yeast in warm water. In a large bowl, combine warm milk, sugar, shortening, egg, salt, yeast mixture and 2 cups flour; beat until smooth. Add cherries. Stir in enough remaining flour to form a soft dough (dough will be sticky). Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover with plastic wrap and let rise in a warm place until doubled, about 1 hour. Punch down dough; let rest 10 minutes. Turn dough onto a lightly floured surface; divide in half. Roll each half into a 12x7-in. rectangle. Cut each into twelve 1-in.-wide strips. Twist each strip and place 2 in. apart on greased baking sheets, curving one end like a cane. Cover with a kitchen towel; let rise in a warm place until doubled, about 45 minutes. Preheat oven to 375°. Bake 12-15 minutes or until golden brown. Remove from pans to wire racks to cool. In a small bowl, mix confectioners’ sugar and enough milk to reach desired consistency. Drizzle over rolls. Yield: 2 dozen. Note from the Chef... Fun and lightly sweet, these festive rolls will delight children of all ages. Angel Frost Ingredients 3/4 cup thawed pink lemonade concentrate 1 cup milk 1 package (10 ounces) frozen sweetened sliced strawberries, partially thawed 1 pint vanilla ice cream Directions In blender, place first four ingredients in the order given; blend until smooth. Pour into glasses. Garnish with fresh strawberries if desired. Yield: 4-6 servings (about 1 quart).
