uxury is more than looks. The real deal is a complete package of product, consumer experience and service – as Wayne Dance, MD of InHouse explains: “When a consumer has decided to spend money on a luxury kitchen, every interaction and option must be at the highest level. Any kitchen retailer seeking to sell luxury ranges must make sure that their service provision matches expectations.” Bob Marsden of Nolte UK is in total agreement. “The right location can be very important but the service from the retailer is even more so. Product knowledge is vital to allow dealers to point out features and explain why the furniture offers superb value for money. This should be backed up with imaginative design that caters to the need of

the consumer – and this must involve a sophisticated CAD package. The showroom must match the luxury image presented by the kitchens. Shabby decor will ruin the image. The whole showroom must reinforce the pristine, clinical look. Appliances, lighting and even the props used to dress the displays are all vital to the end result to sell the dream.” Jeff Searle of Searle & Taylor, the UK agent for Intuo says that showroom layout is very important. “Avoid a labyrinth of tunnels and try to utilise as much natural light as possible. Where this can’t be done, use clever lighting to highlight the character and design of displays. Train staff to treat all customers with courtesy – whether they are billionaires or on a budget.”

he old saying goes that the kitchen is the heart of the home but, until now it has been difficult to find lighting that both sustains this cosy image and provides the right level of illumination for cooking and food preparation. The ideal kitchen set up is a mixture of task, ambient and profile lighting. Task lighting as its name suggests provides clear, directed illumination where needed – above the hob or worktop. Ambient lighting is the background – most usually provided by recessed ceiling lights which can be dimmed or controlled in groups. This is useful if there is a dining area in the kitchen as the rest of the room can be dim or in semi

darkness while the table area is lit. The old rise and fall fittings we all loved back in the 70s remains a good choice, especially in a traditional style kitchen. A powerful lighting control system is the obvious answer to multifunctional requirements, advises Hampshire Light. At the touch of a button the mood of the room can be transformed with skilful blending and dimming of different circuits to pre-set levels. The Ins and Outs of Ducting Incorrectly installed ducting can have an adverse effect on the way a cooker hood performs so it is important to get this important feature right.
• It is not always the fault of the cooker hood when odours and steam linger and there is too much operating noise. It can often be that the wrong size ducting or wrong configuration has been selected by either the installer or by the system designer.
Aura from Miele needs no external ventilation so it can be fitted directly to the wall or suspended from the ceiling. It features Miele Con@ctivity technology, which allows the extractor to communicate with the hob, so it can switch on at the correct setting to suit what is being cooked. The hood activates soon after the hob is turned on and the fan operates at a setting to suit the number and power level of the cooking zones being used. • Remember that the key aim in good ventilation installations is to move the air from its source to the outside of the house as efficiently and quietly as possible. The shorter the distance the air has to travel, the quicker and more efficiently it will get there. Obstacles such as bends slow the air down on its journey – so when bends are unavoidable, extra power may be needed. • Cooker hoods vary in power – and the more powerful the fan, the more important it is that the ducting is the right size for the job and has been installed in the most efficient way possible. In many cases the manufacturer’s guarantee will be invalidated if the correct size of ducting for the hood is not used. • To avoid problems always choose the shortest and most direct route to the outside or the point where the air is to be released. •
Keep bends are kept to a minimum.
• Check the extraction capability and connection size of the hood and choose an appropriate size duct. Refer to the manufacturer’s spec for the model’s ratings. Never, ever reduce the ducting size. If the hood outlet is 150mm (6”) then the ducting must be of the same size. • Air travels better through a round duct, as it moves at a lower speed, resulting in less turbulence, vibration, noise and energy loss. However, the installation space available may prevent this ideal. • A rigid duct is more efficient than a flexible duct and should be used whenever possible. • If flexible hose is used, the hose should remain taut and as straight as possible.

Crush it... Trash smashers are popular in the USA but have been hard to find here. A trash smasher, as its name suggests, compacts tins, packaging and plastic bottles by 75 percent, reducing a pile of rubbish to a neat parcel. Recyclables, such as metals and plastic bottles can be sorted and crushed separately, freeing up more space in outside recycling bins. WASTE – THE FACTS • An estimated 7.2 million tonnes per year of food and drink waste is generated by UK households. • 19 percent of food and drink brought into the home ends up as kitchen waste. • On average, each household produces 270kg of food waste a year, or 5kg per week. • 4.6 million tonnes per year (64 percent) is collected by Local Authorities mainly through kerbside collection. • Food waste represents 19 percent of the entire waste stream for Local Authorities. • 17 million tonnes of CO2 equivalent of greenhouse gas emissions is generated by food and drink waste. • Food waste is the most difficult fraction of biodegradable municipal waste to manage. • Food waste has 70 percent moisture content so it biodegrades rapidly, becomes smelly and attracts flies and vermin – especially in areas where bin collection is fortnightly. • Anyone with a garden can turn all waste (except meat, fish, bread, and cake) into compost, which will enrich the soil. Ripped up newspaper and cardboard can also be added to the compost bin.
Finding a strategy to cope with food waste and packaging is an important aspect of kitchen design. Bins that make recycling easier, trash smashers and waste disposers are the three most effective ways of dealing with the problem.

A waste disposal unit is a device, usually electrically powered, installed under a kitchen sink between the sink's drain and the trap which shreds food waste into pieces small enough to pass through the drains. The waste disposal is claimed to have been invented in 1927 by John W. Hammes, an architect working in Racine, Wisconsin. After eleven years of development, his InSinkErator company put his disposer on the market in 1940. In the USA around 50 percent of homes of homes had disposal units in 2009, compared with only 6 percent in the UK. Some local authorities in Britain subsidise the purchase of garbage disposal units in order to reduce the amount of waste going to landfill. Food scraps range from ten to 20 percent of household waste and are a problematic component of municipal waste, creating public health, sanitation and environmental problems at each step, beginning with internal storage and followed by truckbased collection. Burned in waste-to-energy facilities, the high water-content of food scraps does not generate energy; and when buried in landfills, food scraps decompose and generate methane gas which adds to the greenhouse effect. The idea behind the proper use of a disposal is to regard food scraps as liquid (averaging 70 percent water, like human waste), and use existing infrastructure (underground sewers and wastewater treatment plants) for its management. Modern wastewater plants are effective at processing organic solids into fertilizer products (known as biosolids), with advanced facilities also capturing methane for energy production.

A high-torque, insulated electric motor, usually rated at 250-750 watts, spins a circular turntable mounted horizontally above it. The turntable is surrounded by a shredder ring, which has sharp slots. The food waste sits on the turntable and, through centrifugal force, is forced to its perimeter and through the shredder ring. The turntable has a number of swiveling lugs similar to little hammers attached to its topside which assist in forcing the waste through the shredder. Waste is fed into a chamber above the turntable and drops on to it. The chamber may have a rubber partial closure through which waste can be pushed without letting cutlery and other objects fall in, but essentially the chamber is open at the top, and there is access to the turntable. This is useful in the case of a jam. The turntable can be forced round by pushing with a wooden spoon handle or similar object until the jam clears. Waste that cannot be ground successfully can be removed manually. Most units are of the continuous-feed type, allowing waste to be added as the unit runs. Batch-feed models are also available with a lid that must be locked before operation, making it impossible to run the machine when a user is trying to clear a jam by hand and preventing cutlery, etc. from falling in. Some commercial and high-end domestic disposals also have an undercutter blade that revolves below the turntable and chops the ground waste, including fibrous material, which could cause a drain clog, finer. These disposals can handle fibrous waste such as artichoke leaves that cannot be successfully ground in a standard disposal. Waste disposal units may jam but can usually be cleared either by forcing the turntable round from above or by turning the motor using a hex-key wrench inserted into the motor shaft from below. Very hard objects accidentally or deliberately introduced, such as metal cutlery, can damage the waste disposal unit and become damaged themselves. More problematic are drain blockages caused by shredded waste that is fibrous or starchy. Energy usage is not high; typically 500-1500W of power is used - similar to an electric iron, but only for a very short time, totalling approximately 3-4kWh of electricity per household per year. Daily water usage varies, but is typically about 6 litres of water per person per day, comparable to an additional toilet flush. A customer who lives in an isolated rural area may have a septic tank rather than mains sewage. Always check before you sell this sort of customer a disposer and point out that they will have to inspect the septic tank and pump out the solids about twice as often as normal.

very kitchen needs a fridge and probably a freezer too - but not all consumers need the same sort of fridge and freezer. People who mainly eat out don’t need lots of chilled space but families do and what they want is equipment that will keep more food fresher longer, reducing waste and bills. A survey recently carried out by Cathedral City cheese revealed how much our fridge habits have changed in the last 20 years. These days we don’t store lard, dripping, pork pies and black pudding in the fridge but we do want space for bagged salads, fresh vegetables, mineral water, dairy, olives and cook chill ready meals. Today we spend about £37.80 a week on food that needs to be stored in the fridge compared to £20.58 twenty years ago - and according to Gino Grossi, Product Manager for cooling at Samsung we are much more worried about waste. “Features that help to keep food fresher for longer are very much in demand,”
he says. “Appliances with optimum cooling solutions that monitor the interior temperature of a refrigerator, or separate zones that operate independently to the rest of the fridge to allow different foods to be kept at different temperatures are proving very popular.” The widely held view a year or so ago was that we were over our love affair with side by sides - but according to some manufacturers the flames have been rekindled. Gino Grossi says that Samsung has noticed a resurgence in this market. Tayfun Akturk, Product Manager for cooling at Beko agrees and says that larger models performed particularly well in 2011 and in February 2012, side by side sales were up 14.2 percent against the same period last year. He says that these figures support the Beko Consumer Insight programme that says more people are cooking at home and taking advantage of multi buys so have more need for cold storage.

For the consumer who wants to freeze a lot of stuff, the outright best choice is a tall freezer with drawers. Pairing this sort of freezer with a matching fridge makes a very large side by side food storage centre. American style side by sides pack the whole idea into one - but there is not as much freezer space. There has been growth in fridge freezers with large freezer drawers below the fridge section. New Showroom for Kitchens International Celebrity chef Nick Nairn has opened a new showroom in Perth for Kitchens International. This is the sixth showroom for the group and the second to be opened in the last two years. Nick and his team from the Nick Nairn Cookschool gave demonstrations to show how a well designed kitchen can work in the home. The new showroom includes displays from Leicht and Callerton with appliances from V-Zug, Wolf, Siemens and Sub Zero. There are many working displays. AEG has been awarded the Quiet Mark for a dishwasher, a washing machine and a blender. The Quiet Mark is the international mark of approval from the UK Noise Abatement Society. Call that a knife? Inspired by the shape of the iconic Swiss Army knife, this modular piece in Silestone was designed by the Campana brothers and shown during the Salone del Mobile in Milan. Shaping Silestone is the name of the design, which integrates a worktop, a table and a sink. The front panels are in a hardwood veneer made from a walnut tree cut over half a century ago.
