The ProCombi steam oven from AEG has three steam cooking functions. The 100 percent steam setting is a controlled alternative to boiling for vegetables, rice, potatoes and pasta. The 50 percent steam, 50 percent hot air setting is good for flans, terrines, puddings and casseroles and for re-heating while 25 percent steam is good for large joints of meat, bread, gratins and casseroles. what do cooks really want? I

f you watch Masterchef et al, you’ll have seen a lot of chefs immersing vac packed bags of food in tanks of simmering water. This technique, which is called sous vide, is all the thing at the moment. KitchenAid and Baumatic have both ventured into the market – and we spotted a sous vide machine from an obscure brand at Living Kitchen in Germany – but to date it is far from mainstream and we think it will be a long time before this feature joins the ever growing list of functions available in more sophisticated ovens. Larger cavities that can be divided are a clear trend in the oven market. Many companies have introduced the larger cavity to allow cooking on five shelf positions. One of the largest is the 76 litre CulinArt from Miele while AEG has opted for 74 litres with its MaxiKlasse. Bill Miller of ATAG believes that over the next few years more consumers will opt for a single multifunction oven and believes that capacity will become larger and more flexible: "It is likely that we will see an increase in the number of functions available on single ovens with pre-programmed recipes and features such as steam combined with microwave and fan cooking to give reduced cooking times without sacrificing quality." Hoover’s 74 litre Prodige can be split into two flexi cooking zones each with independent temperature control so it is possible to roast a Sunday joint and batch bake cup cakes at the same time. Hotpoint has also gone for the split option with the LUCE Openspace where the 70 litre cavity can be split into large and small cooking zones. Steam ovens have been much talked about – but the best success level is in multifunction ovens with a steam feature. Neff’s AquaAssist works in conjunction with seven cooking functions to produce improved cooking results. It is easy to use and easy to understand and is available on a selection of products including two with the SlideAway door. Steam is a healthy way to cook as it conserves flavour, shape and colour. Pre-programming has become an increasingly popular feature where basically all the cook has to do is put the dish in the oven, press the right button and wait for the results. CDA’s award winning SV310 does it with one touch picture icons – a first for the UK. DeDietrich offers ICS and there are several other pre programmed options from other manufacturers. Getting consumers to believe that it works and convincing them that they need it is the key to sales. In general, these systems do work and are particularly good for inexperienced cooks.

What the average cook wants from an oven is hard to fathom. If you believe tv cookery shows, life is unsupportable without sous vide or steam. The real question is, how much is enough – and does too much have the effect of putting consumers off rather than encouraging them to buy?

DIVIDE AND RULE Multi function ovens that can be divided into two cavities are the latest idea and appeal to consumers who would like two ovens but don’t have the space for a double.

“Every oven in the De Dietrich collection is multifunction, and all single and double ovens feature fan cooking as standard,” says Richard Walker of De Dietrich. “At the peak of multifunction oven technology, the top of the range De Dietrich DOP895 (in black or stainless steel) features the widest range of cooking modes available. These include Intelligent Control System (ICS) with 16 total automatic cooking programmes; Cooking Guide with 44 pre-set recipes - where the user just inputs the weight of the food; Low Temperature Cooking with 10 pre-sets for slow cooking and roasting and Expert which features 12 oven functions including Pyroclean Plus. ATAG was one of the first companies to offer a single oven that can be split into two cavities. Both oven compartments are multi function with their own fan systems, lighting and controls. If someone wants to cook a low temperature meringue and a high temperature dish such as Yorkshire Pudding at the same time, there is no problem – and no need for a double oven, which is a boon where space is short. WHAT IS SOUS VIDE? Invented by Michelin starred chef Pierre Troisgrois as a way to prevent premium priced foie gras from shedding too much weight during cooking, sous vide is a clever idea that conserves flavour and moisture. Food is vac sealed in a heavyweight plastic pouch then immersed in a bath of barely simmering water for long, slow cooking – which can be up to 72 hours. Various appliance manufacturers have had a go at built in sous vide - KitchenAid combines a vac packer with a steam oven while Baumatic offers a machine that vac packs the food but does not cook it. The interesting news for this market that may well put off any future developments is that Heston Blumenthal is launching a sous vide machine with small appliance specialists Salter. Due for launch in 2012 the machine is likely to sell at around £200 – and, with Heston’s name attached, will have a lot of publicity.

DRYING Tumble drying clothes is an expensive option, which makes the emergence of machines rated A and above good news. The downside is price as most retail at over £400. Most machines now are condenser dryers which allows for a better energy rating than the old hot air vented models. All have a removable water tank so it is not necessary to plumb the machine into the drain outlet. Larger capacity washing machines means that there is a need for larger capacity dryers so 7 and 8kg models have started to appear. Fast and efficient, a gas vented tumble dryer is the best value of all – Crosslee are the specialists in this.

The 8kg Supertronic W5000WPS washing machine from Miele has an A+++ energy rating and includes an Express 20 minute cycle plus 22 pre programmed stain cycles to remove stubborn marks such as grass, red wine, coffee and make up. Energy saving is the hot trend in laundry, say Siemens. Consumers prefer A+++ rated washing machines and are looking for A rated dryers that use heat pump technology. Siemens will be developing a full range of A rated dryers in 2012 featuring their unique self cleaning heat exchanger which maintains the energy rating throughout the life of the machine. Detergent drawers can become black and gungy after a while - a problem solved by Haier with the development of specially treated seals and detergent drawers that prevent the growth of bacteria.
