If there were a competition for the world’s most dramatic natural setting, Cape Town would be among the winners every time. The vast Atlantic Ocean curls along wide, sweeping beaches, while Table Mountain rises up over the city skyline, creating an imposing backdrop.

CHILL ON THE BEACH Cape Town's beaches are both diverse and spectacular. Lladudno and Clifton Beaches are some of the most popular, while Camps Bay has a generous offering of bars and restaurants. If you're visiting during peak season in December and January, you may want to escape the crowds by heading to Glen Beach, under a kilometer from Camps Bay, and enjoy the peace and quiet. DUNE SPINACH

small but mighty

We know the beaches are stunning and you could gaze out on the horizon forever, but while you’re strolling along the sand dunes, take a moment to look down at your feet. Can you spot it? Yes, right there! You’ll likely see a small, unassuming green plant, with a glistening sheen. This is dune spinach, or “kinkelbos” in Afrikaans, a hardy little shrub that can withstand the long regional droughts and windswept coastline. Foraged by nomadic, indigenous people for hundreds of years, it has now made its way into many modern-day recipes and is often used in salads, stir-fries, and garnishes.

BRAISED DUNE SPINACH

with Oyster Mushrooms

With these delicious ingredients, the recipe options are endless. Create a warming soup by adding stock, serve on squid ink pasta for a visual feast, accompany it with jasmine rice, or use it as an omelette filling to kick off your day.

WHAT

you need

250 gr oyster mushrooms 1 bunch spring onions 300 gr dune spinach 100 ml heavy cream 10 gr salt 10 gr black pepper ½ lemon, freshly squeezed 15 ml olive oil 30 gr Parmesan cheese

STEP

by step

Slice the oyster mushrooms lengthways into 2 cm strips. Slice the spring onions into very thin, diagonal pieces. Remove the leaves from the stems of the dune spinach. Braise the spring onions and mushrooms together for a few minutes, then add the dune spinach leaves. Cook until just done, but be careful not to overcook the spinach leaves. Add the cream and stir until the cream has reduced. Season with salt, pepper, and freshly squeezed lemon juice. Plate up, drizzle with olive oil, and garnish with shaved Parmesan. Season again with salt and black pepper to taste.

Season 2

Waterford Rose-Mary is a sophisticated Blanc de Noir white wine produced from red grapes. The red varietals used to produce the Rose-Mary are picked early and whole bunch pressed, in order to preserve the elegance, delicacy and finesse of the wine. This past season was incredibly dry, but not particularly hot, which means the grapes achieved ripeness at lower sugar levels. As a result, the wine is cleaner and fresher than ever. Limited skin contact during pressing only, gives the wine a beautiful blush colour. This is a perfect summertime wine, with an alcohol content of around 11%, which is very easily paired with many light, fresh dishes.

Explorers first brought cocoa back from their travels to South America during the 17th century, when Belgium was under Spanish rule. It was the invention of the praline in 1912 by Jean Neuhaus, however, that really put the Belgian chocolate-making industry on the map. Today, Belgium’s superior quality and strict regulations (each recipe must contain at least 35% cocoa) rank Belgian chocolate among the best in the world.

DARK CHOCOLATE MOUSSE

à la Belge with Pecan Praline and Raspberry Caramel Deliciously rich and a bit naughty… try and resist this indulgent dessert.

WHAT

you need

For the raspberry caramel: 200 gr sugar 2.5 gr yellow pectin 250 gr frozen raspberries 40 gr butter For the pecan praline: 400 gr pecan nuts 200 gr sugar For the chocolate mousse: 450 gr Sao Thomé 70% dark chocolate (Callebaut) 2 x large egg yolks 25 gr sugar 130 ml whole milk 150 ml heavy cream 450 gr whipped cream

by step

Raspberry caramel In a medium saucepan, combine the sugar with yellow pectin and stir occasionally to make a dry caramel until the sugar reaches a light brown color. Add the frozen raspberries and heat up to 103ºc then add the butter until melted and combined. Strain the coulis through a fine sieve to remove the seeds. Pecan praline Roast the nuts in the oven for 15 minutes at 130°C, then set aside. In a medium saucepan, make a dry caramel with the sugar. Once light brown, set aside the caramel and let it cool to room temperature. Combine thoroughly with the pecans to ensure they are completely covered with caramel. Keep some crushed, mix the rest until smooth and keep to one side. Chocolate mousse Heat and combine the milk and heavy cream with the egg yolks and sugar to 85°C over a low heat (keep a close eye on the heat, otherwise the eggs will scramble). Pour and mix in the chocolate. Let it cool to 28ºc then mix and fold in the whipped cream carefully so you don't deflate the mousse. Put the mixture in a large bowl or smaller ramekins depending on how you are planning to serve the mousse, and leave in the refrigerator for 2-3 hours before serving. To serve Spoon the chocolate mousse into a bowl, then top with a drizzle of raspberry caramel and a handful of the pecan praline.

LARGER than life Glamorous, extravagant, larger than life: Dubai does nothing by halves. This business hub in the Middle East is known for its towering skyscrapers, designer stores, luxury cars, and extreme sports. Surrounded by the Arabian desert, Dubai enjoys year-round sunshine, so unless you like it hot (and we mean, really hot) the best time for visiting is in winter and early spring, when daytime temperatures are in the mid-to-high twenties celsius. TIPS:

WILD ABOUT WILDLIFE? Al Qudra Lake Sanctuary is home to over 200 species of birds and is a welcome break from the hectic city life. We recommend heading out early in the morning during the week to avoid any crowds and have the best chance at spotting some local wildlife such as desert foxes and oryx. Due to its remote location, a 4x4 is the best and most practical way to get there.

CUMIN If there’s one thing Middle Eastern cuisine is known for, it’s spices. Cumin is one of the most popular with its unmistakable warm, earthy flavor used to season fish, meat, soups, sauces, and dips. The small, white plant is usually harvested by hand when the flowers have finished blooming and the pods have turned brown. The pod clusters are then dried and rubbed to remove the seeds.

Did you know? Cumin, along with other spices such as cardamom and cloves, is often used in Emirati culture to give Arabic coffee or "qahwa", its distinctive aroma and taste.

CUMIN SPICED

lamb rump

Succulent, roast lamb is always a winner. Impress your family and friends at home or, alternatively, enjoy the full experience at our hotel’s Fire Lake Grill House and Cocktail Bar, Dubai, where it is served with grilled hispi cabbage, pickled onion, sumac yoghurt, and pomegranate.

WHAT you need

STEP by step

For the lamb rump: 4 lamb rumps, around 200g each 3 garlic cloves 2 tsp turmeric 2 tsp fresh ginger, minced Zest of 1 lemon and juice of ½ lemon 1 bunch of coriander, finely chopped salt

Prepare the Baharat spice mix by sifting all the spices together.

DUBAI, UNITED ARAB EMIRATES

Zest the lemon and squeeze the juice. Mix everything together (including the spice mix) and marinade the lamb in the fridge for at least 3 hours or preferably overnight. For the jus Roast the bones until lightly browned. Add them to a stockpot and cover with the beef and chicken stock. Add the balsamic vinegar, tomato paste, onions, carrots, celery, button mushrooms and garlic. Reduce until you have a thickened jus using a little corn flour if needed. Strain the liquid through a fine sieve, and season with salt and black pepper. Putting it all together Pre-heat your oven to 180ºC. Remove the lamb from the fridge and grill on a hot BBQ or in a very hot cast-iron pan so that the meat is charred on all sides. Finish cooking the lamb in the oven (approximately 25 mins per 500 gr). Allow the lamb to rest, covered with aluminum foil. Reheat the lamb jus and whisk in a couple of pieces of cold butter. Carve the lamb into 4 pieces and drizzle with the jus.

For the lamb jus: 2 kg lamb bones 500 ml beef stock 1 l chicken stock 100 ml balsamic vinegar 50 gr tomato paste 100 gr onions 100 gr carrots 75 gr celery 50 gr button mushrooms ½ garlic bulb 20 gr corn flour Salt and black pepper to taste

Mince the garlic and ginger, and finely chop the coriander.

For the Baharat Spice Mix: 1½ tsp cumin seeds, finely ground 1¼ tsp sweet paprika 1 tsp ground black pepper ½ tsp coriander seeds, finely ground ½ tsp ground cinnamon ½ tsp ground cloves ¼ tsp star anise, finely ground small pinch of grated nutmeg

Trim the lamb rumps, removing any excess fat and sinew.

DISCOVER HISTORICAL SITES Visit Al Masmak Palace where the vast clay and mud-brick citadel witnessed the birth of a kingdom. In 1902, King Abdulaziz captured the fortress and took control of Riyadh (his ancestral home) after living in exile in Kuwait. From this fortress, Abdulaziz Al Saud conquered and united the different kingdoms and provinces. This renovated 19th-century mud fortress looks like a giant sandcastle, and contains costumes, handicrafts, a sitting room, a courtyard, and a well.

Sift the flour and set aside.

you need

Chop the dates into cubes and place them in a pan, and add water. Wait for the water to boil.

Date cake: 525 gr date paste 170 gr butter 500 gr sugar 9 eggs 500 gr flour 525 gr water 15 gr baking soda 200 gr almond flakes

Smash the dates to create a paste. To make the caramel sauce, boil the water with sugar together in a large saucepan until golden brown. Be careful not to burn the caramel and do not stir the ingredients while in the pan. Add the butter and stir until all the butter is melted, then add the whipping cream and mix well. Lastly strain your caramel sauce and set aside to cool.

Home-made banana ice-cream: 250 ml milk 150 gr sugar 500 ml whipping cream 5 egg yolks 5 drops of vanilla extract 500 gr banana

To continue making the cake, add the baking soda and stir for about 3 minutes. Set aside. Beat the butter and sugar until combined, then add the date paste. Add the eggs one at a time. Lastly, add the sifted flour. Put the mixture into your choice of baking mold or pan.

Caramel sauce: 60 ml water 300 gr sugar 55 gr butter 115 ml whipping cream

Add the caramel sauce inside of the date cake mixture, then add almond flakes on top and bake for 15-20 minutes. Remove from the oven and allow to cool. Banana Ice Cream Boil the milk, sugar, vanilla extract, and banana. Temper the milk and egg yolks and put back on low heat, stirring constantly for 3-5 minutes. Strain the mixture and add the whipping cream. Churn the mixture in your ice cream machine for about 45 minutes to an hour. Leave in the freezer overnight to set and harden.

& fasting The Islamic holy month of Ramadan is a period of reflection and prayer. Many Muslims also fast during this period from sunrise to sunset. Dates are particularly beneficial at this time, as they are high in sugar and vitamins, and many people of the Islamic faith will follow a tradition of serving dates (tmar) at iftar (the evening meal where the daily fast is broken).
