225g Grape Leaves 1 Cup Chickpeas, Drained and Rinsed 1 Onion, Finely Chopped 3 Cups Parsley, Chopped 3 Cups Tomatoes, Diced ¼ Cup Mint Leaves, Finely Chopped 1 Cup Rice, Washed ½ Cup Olive Oil ¾ Cup Lemon Juice Salt & Pepper to Taste 2 Potatoes, Cut in Rings

Soak the grape (vine) leaves in hot water for 2 minutes, remove and set aside. To make the filling, combine chickpeas, onion, parsley, tomatoes, mint, rice, oil, lemon juice, salt and pepper. Open flat the vine leaves on a board and put 1 teaspoon of the filling in the center, fold 2 sides over filling and roll up tightly like a small cigar. Repeat this step till you finish all the stuffing or all the leaves. Place the potatoes in the bottom of the saucepan. Layer tightly all the stuffed wine leaves, cover with water and season with salt. Use a plate as a lid. Choose a plate that fits inside the saucepan and top the leaves with upside down. This will prevent the wines leaves from opening. Cook on low heat for 1 hour. Serve cold.

INGREDIENTS 15 pieces of zucchini, 70g per piece 450g lamb shoulder, minced 50g lamb fat, minced 100g onion, chopped
60g garlic, chopped 40g pine nuts, roasted 100ml olive oil
Method for the Zucchini: 1 In a medium heated pan, add the lamb fat and 20 ml of the olive oil till hot then add the lamb fat until melting, then sautĂŠ the onion till soft, add the garlic and cook for 10 minutes. Add the minced lamb and cook for 20 minutes then add the spices and pine nuts and remove 2 Once cooled, fill the zucchinis with the minced lamb mixture 3 In a separate sauce pan add the remaining olive oil and fry the zucchinis till golden brown and set them a side Method for yogurt sauce: 1 Pour the yogurt and egg in a pot and place in a medium heated pan for 10 minutes. Once the yogurt reached 60C add the chicken stock and bring to the boil. Reduce the heat and add the corn starch, salt and black pepper and keeping stirring until the mixture becomes think, then remove from the stove. In a separate pan add the olive oil and chopped garlic and stir until golden brown. Add the chopped mint leafs and remove from the stove. Pour over the top of the yogurt.

5ml Kewara water 100ml clarified butter 2 tablespoons gram flour (besan) 1/2 teaspoon Cumin (Jeera) powder 1 inch Ginger, grated 5 sprig Coriander (Dhania) leaves, finely chopped. FOR GARNISH 3pcs – Baby carrot Sakura Mix
1 For the chickpeas gilawat, soak chickpeas for at least 8 hours and boil along with salt and whole spices (make a bouquet garni) until very soft. Drain excess water completely. 2 Mince the chickpeas well and add brown onion and roasted cashew nut paste along with rose and kewara water. Add freshly chop coriander and grated ginger. 3 Transfer the mixture to a bowl and rub until the texture gets smooth. Now add tahini, salt and other powder spices. 4 For binding add roasted gram flour. 5 Smoke the mixture with a burning charcoal along with clove. Add clarified butter to produce smoke and cover the mixture. 6 Divide the mixture into 3 equal portions. Shape the portions into round circular pattice. 7 Now preheat a pan and grease it with clarified butter. Pan fry the pattice on both sides until crispy and brown. 8 Garnish with sakura mix and grilled baby carrot.
Chef profile: Chandrachur Chamoli Chef de cuisine Chandrachur Chamoli started as a trainee in 2002 Hotel Oberoi’s Delhi in India then moved to JW Marriott Hotel in Mumbai. He later acquired the position of chef de partie in Lalit Ashok, a very famous restaurant serving authentic Indian Cuisine. CHICKEN KABSA Serves 6-8
INGREDIENTS 1 kg of basmati rice 2 chickens, each cut into four parts 1 teaspoon of mix spices 1 teaspoon ground cumin 1 teaspoon soft coriander 1 teaspoon of paprika
1 small spoon of salt Fresh turmeric, grated A pinch of brown pepper, added as desired 2 tablespoons of ghee 5 grains of black pepper 2 bay leaves
1 Rinse the rice well with water and then soak it with warm water for half an hour. 2 In a small bowl, mix the coriander, cumin, salt, black pepper, fresh turmeric, paprika and mixed spices, then set aside. 3 Place the chicken in a bowl and sprinkle with a teaspoon all mixed spices. 4 In a frying pan, place the two tablespoons of ghee and cook on low heat the chopped onion, until its color turns golden. Add the chicken pieces and toss them well with the onions until their color change to golden brown. Add the tomatoes, tomato paste, cardamom grains, cinnamon sticks, bay leaves, green pepper, and toss well.

5 Pour water over the frying pan until the chicken pieces are completely immersed and leave on medium heat for 45 minutes. 6 Take the chicken pieces out of the frying pan, cut them in half, and put them in an oven to roast. 7 Add to your frying pan, two cups of chicken broth, then add the rice. Cook the rice on high heat until boiling, then lower the fire, cover your pan and leave it for 15 minutes. 8 Drain the rice and place it on a serving dish, add the chicken pieces over it, then spread few roasted nuts (almonds, pine nuts) over your dish. The food
The extravagant buffet includes everything from authentic Emirati dishes, traditional Egyptian and Moroccan bites, local Syrian and Lebanese delicacies to international savoury selections from various cuisines including Japanese, Chinese, Indian, Italian as well as European cuisines. Explore Emirati cuisine and try ‘lamb foga’ and ‘harees’, or sample Egyptian cuisine with ‘mulukhya’ or ‘fatah masreya’. People curious to explore the Moroccan cuisine are invited to taste its ‘lamb tajeen’ or famous ‘cous cous’, or venture to India with ‘chicken biryani’ and ‘butter chicken’ or sample international dishes like ‘grilled lamb chops’ and ‘grilled salmon’. Vegetarian foodies have their own special dishes from different cuisines including Italian pasta, Egyptian ‘koshary’, Indian ‘dal makkhni’ or Syrian ‘veggie mussakaa’ and Middle Eastern ‘lentil soup’. Iftar, for the first 10 days of Ramadan is priced at AED 175 per person (including food, Ramadan juices, soft drinks and still water – inclusive 5% VAT) and from 11th day of Ramadan until the end of the holy month at AED 199 per person (including food, Ramadan juices, soft drinks and still water – inclusive 5% VAT). Children below 4 years enjoy complimentary Iftar. Children aged 5 up to 12 years old enjoy Iftar at AED 99 per child. Suhour is available with a minimum F&B spend of AED 100 per person.

Dried and fresh, sweet or rich, dark to light – there’s much more to dates than meets the eye. Here, Sophie McCarrick finds out a little more about the popular Middle Eastern ingredient.

Dates are one of the oldest cultivated fruits - it’s thought that they were a staple part of the Babylonian diet 8,000 years ago. Grown in North Africa and some parts of the Middle East – Saudi Arabia in particular, there are quite a few varieties. Colours range from honey yellow, red to brown, the last of which is the most common. Available fresh or dried, they’re very sweet, with a rich, deep flavour and a lush, slightly chewy texture. The mahogany brown Medjool variety is the sweetest, and tastes a little like toffee.

Choosing your dates
Fresh dates should be plump and moist with glossy skins. Dried dates, though a little wrinkly, shouldn’t look emaciated, and should still be plump and glossy, with an even colour. They are sold whole, packaged in long narrow boxes, or pressed into blocks.
Preparing dates
Dried dates are ready to use straight away - just slice off from the block or pick as many of you need from the box, but you can also soak them in a liquid like
tea, to boost flavour and moisture. To remove the stone from a fresh date, just push it out with your fingers, or slit open lengthways, remove, and push the flesh closed again. To remove the skin, pull off the stem, then pinch at one end to push the flesh out.
Storing dates
Fresh dates will keep in an airtight container in the fridge for around a week. Dried dates stored in an airtight container in a cool, dark place will keep for up to a year.

Health benefits
It comes as a surprise to many, but dates are full with vitamins and minerals. Here are some health benefits that dates have: • They contain natural sugars like sucrose, glucose and fructose, which are a great source of energy. • Dates have lots of natural fibre, which does wonders for your digestive system. They are also low in simple carbohydrates, which can lead to obesity and diabetes. • High in antioxidants, which means they are great for detoxing and neutralising your body. • They help fight illness and disease. They are rich in vitamin A, which

supports good vision; vitamin C, which strengthens your immune system; and B-complexes that help fight infections. Fresh and dried dates have the same health benefits, but the dried ones have more calories, so be aware when you’re munching away. Packed with minerals such as potassium, which promotes a healthy nervous system, dates also have lots of iron, which is essential for blood formation. And just when you think they couldn’t contain any more – they also have calcium for healthy bones and teeth, plus magnesium, which is good for your nerves, muscles and brainpower.
1 Put the pistachios into a food processor and coarsely chop. 2 Take out three quarters of the nuts and place them in a big bowl to one side. Then grind the remaining quarter into as fine a dust as you can, then tip it out onto another plate. 3 Check the dates for stones, remove any you find and then put the dates into the food processor along with the Vita Coco Coconut Oil, cinnamon and blend. It will take a few minutes for the mixture to come together into a dough. 4 Once a dough is formed, roll the mixture into small sized balls, as pictured. Lay out onto a try and allow to rest in a cold fridge for 1 hour before serving.

RAMADAN DOS & DON’TS
Ramadan is one of the most important months for Muslims, and whether you’re celebrating or not, it should be a special time for everyone. Here are a few things you should and shouldn’t do during the holy month.

Go and experience Iftar
Make an active effort to respect everyone’s views and outlooks. It’s a month for respecting each other and becoming a better person, so take time to appreciate and care for one another.
For those who are not fasting, try to experience at least one traditional Iftar during Ramadan. Enjoy the authenticity and the culture of where we live – join a Muslim friend, and try and cook an Arabic meal at home. It’s an experience you’ll never forget.

Shoulders, chests and knees should be covered during Ramadan when in public places. The bottom line is that it’s a sign of respect and if you do otherwise, you may find yourself being asked to leave certain areas.
Be safe on the roads
Come Iftar time, after a long day of fasting, many people are driving eagerly to break their fast. Bearing in mind, these people have not eaten or drank anything all day, which in turn can make them light headed and sometimes dizzy. Roads can be busy around this time and accident tolls tend to increase. Put dizziness, tiredness and hunger onto a busy road and you have a recipe for disaster. Take care when you’re driving, and be patient.

Don’t eat or drink in public
With Muslims fasting during daylight hours, it is seen to be disrespectful to eat or drink in front of this. Due to this, you’ll find all restaurants and cafés closed (or covered from public view). Of course you can still eat and drink, but you must do so in the comfort of your own home or in a private place where nobody that is fasting can see you. This goes as far as no drinking in your car – you never know when may be watching.
You shouldn’t party
Many bars and clubs will close during Ramadan, and those that remain open
Ramadan is a time for removing bad, impure thoughts from the mind. So if something frustrates you during the day, do not let your anger show – no swearing, no violence, no loosing your temper. It’s time to have some self-control.
No inappropriate behaviour
Dancing around, acting boisterously during Ramadan will not be tolerated. Find your zen this month and try to remain calm and dignified at all times. For people that are fasting, it can be extremely irritating to see others jumping around, laughing loudly during a time where calm and respect is supposed to be maintained.
