GOLF The Royal Lakes course makes 3 unique, Championship courses at Lakewood Ranch Golf and Country Club. Each poses a different challenge including: bunkers, water, forced carries, hazards and length. Offering many sets of tee boxes, the courses can be challenged by many different skill levels. As a member you have the privilege to play all 54 holes, Cypress Links, King’s Dunes and Royal Lakes. They are all part of the Private Lakewood Ranch Golf and Country Club. The private club opened on November 29, 2001 with the Cypress Links course and we opened the King’s Dunes course in March 2005. Now with the opening of Royal Lakes we have 54

Each has its own unique style and feel, providing a variety of playing experiences. From the “tips”, they are the most challenging two course test of golf in the Sarasota area. With 7 rated tees (four for men and three for women) on both courses,

Two courses allow for at least one to always be open, regardless of maintenance or event schedules. We have many social and competitive events for men, women and mixed, so if you are looking for games, you will have no problem finding groups to play with. For those interested in a round with friends and family, or business entertainment, tee times are always available for individual play. Walking, at no fee, is allowed at any time with the approval of the pro shop. In the summer season, we have reciprocal privileges with about 30 other private clubs in southwest Florida, which expands your course options to more than 45. Four full time golf professionals, and a fifth in season, insure we can always help you keep your game in shape.
Laurel Oak Country Club is a private, member-owned club located in Sarasota, Florida. Its outstanding facilities include two championship golf courses crafted by Gary Player. The West course was redesigned by Rees Jones, the famed “U.S. Open Doctor”, in 2005. Our tennis facility is consistently ranked among the best in Sarasota with 12 well maintained Har-Tru courts of which 8 are lighted. Our members span the range from beginners to USTA 4.5 ratings, so you can always find games at your level of play. Clinics, leagues, tournaments and social play for men, women and mixed are offered throughout the week, satisfying even the most avid players. The bi-weekly Friday night mixers under the lights followed by dinner at the club are a favorite of the members. Also a favorite are the monthly professional exhibitions featuring local and nationally known players. With three full time tennis teaching professionals on staff, there are plenty of opportunities to improve your game. In addition, each summer the club provides an opportunity for members’ children and guests to participate in Junior Summer Sports Camp which combines tennis, soccer, swimming and volleyball. All activities take place on club property and the children have constant supervision.

Lakewood Ranch Golf & Country Club and The Lake Club The Taylor Emmons Scholarship Fund was created in the wake of 19 year old Taylor Emmons untimely death on December 5, 2010 while attending the University of Miami. In lieu of flowers or other tokens of sympathy, the family established the Taylor Emmons Scholarship Fund for the students at The Outof-Door Academy, Taylor’s High School. After receiving over $150,000 in donations the Emmons family knew they needed to continue to raise money for the scholarship fund and honor the Legacy of this exceptional young man. One of the ways to raise funds for this cause is an annual golf and poker tournament, two of Taylor’s favorite past times. This past January we held our second tournament. The golf tournament was expanded to two courses to accommodate all the golfers. We had numerous poker players playing in the Texas Hold ‘Em Tournament. The winner of our poker tournament took home the grand prize of $5,000 and the Champion Texas Hold ‘Em bracelet. Both events are extremely fun to attend, fun to play in and it’s a great cause.

Bobby Jones Golf Club is a 45-hole municipal facility named for the legendary Robert Tyre Jones, Jr., who personally dedicated the facility on Sunday, February 13, 1927. The original 18 holes were designed in 1926 by the famed course architect Donald Ross. Nine additional holes were constructed in 1952 and another nine were added in 1967. The John H. Gillespie Executive Course was completed in 1977. In 1930 Bobby Jones accomplished one of the most amazing feats in sports history, the Grand Slam of Golf. In honor of these championships the British Course front nine is named for his British Amateur victory at St. Andrews and the back nine for his British Open success at Hoylake. The American Course honors Jones’ championships in the U.S. Amateur at Merion and the U.S. Open at Interlachen. Jones is the only golfer to have won all of these major championships in the same year.

the cradle of golf A frequent question from folks visiting southwest Florida is “Why do so many locals call Sarasota the Cradle of Golf in the United States?” Read on to find the answer to the Cradle query. Several communities across the country have laid claim to being the first location to provide a golfing facility. The most popular of these claims comes from Yonkers, New York, where two gentlemen from Dunfermline, Scotland, Robert Lockhart and John Reid, constructed a three hole golfing ground in 1888. These men formed the Apple Tree Gang and are recognized by many golf historians as providing the first golfing ground in America.
Many Sarasotans disagree with the Yonkers claim and local historical records may support their position. In December 1885, John Hamilton Gillespie arrived in the southwest Florida fishing village of Sarasota to oversee the Florida Mortgage and Investment Company for his father, Sir John Gillespie. The younger Gillespie brought his hickory golf sticks with him from Scotland and by May 1886 he had constructed a two hole golfing ground between what is now Main Street and Ringling Boulevard. By 1888 the number of golf holes increased to four and a practice range was added to the mix. This course increased to 9 holes and a clubhouse by 1901 and by 1906 a full 18 hole course was in operation. There it is. Sarasota had a two hole golfing ground a full two years before the Apple Tree Gang had put a cup in the ground in Yonkers, New York.

Benderson Development and Taubman have collaborated to create The Mall at University Town Center. This mall will contain roughly 115 stores and the majority of them aren’t available anywhere else in Sarasota. Golf is one of the most popular sports played in the United States with an estimated 20 million golfers hitting the links nationwide. Due to many various factors, golf can also be associated with some of the most nagging and potentially career ending injuries. Luckily, many injuries can be prevented when a proper swing is combined with adequate flexibility, stability, and balance.
Basics of the Golf Swing The proper golf swing is a wellcoordinated athletic motion that requires movement of the trunk with a combination of rotation, side bending, and flexion/extension of the spine and limbs. Due to this multiplanar coordinated motion, joints and soft tissues require flexibility and adequate control of motion through balance and muscle contraction. While most athletes are familiar with a concentric (positive) muscular contraction like the typical bicep curl, most athletic injuries occur during an eccentric (negative) muscle contraction. This type of contraction would be equivalent to lowering a weight during a bicep curl. Golf requires multiple eccentric muscle contractions during the swing, which, together with improper swing techniques, lead to many common causes of soft tissue injury.
Back Pain While studies have shown that back pain is the number one musculoskeletal injury experienced by amateur and professional golfers, the exact etiology of back pain is often unknown. Fortunately, most cases of back pain will improve within a few weeks with rest and gradual reintroduction of activities. More concerning, however, are symptoms that radiate into the legs. This condition is known as sciatica and one should seek medical consultation.
Preventing back pain can be crucial to the success of any golfer throughout their career. Research has shown that decrease motion of the lead hip and improper spine positioning are significant risk factors for back injury. Therefore, a proper training regimen as well as warm-up which involves hip range of motion as well as spine exercises which simulate the golf swing (using all three planes of motion) can prove crucial in preventing and treating low back injuries in golf.
Shoulder injuries Golfers impose a significant amount of stress through the shoulder complex during the golf swing. The shoulder complex is composed of several joints, which provide significant mobility but also require stability in order to function normally. The stability of the shoulder joint comes from the function of small muscles and tendons known as the rotator cuff, which work eccentrically and concentrically, together with muscles of the truck and shoulder blade. Together these coordinated muscular contractions provide adequate stability and strength required for the golf swing. During the backswing, the rotator cuff tendons of the lead shoulder, especially when there may be arthritic changes present in the shoulder joint, can get pinched at the top of the back swing creating debilitating shoulder pain known as impingement. While ice and a brief course of antiinflammatory medication can often help, improvement in shoulder blade mechanics, flexibility of the shoulder joint, and functional strengthening of the rotator cuff tendons often allows successful return to play. If significant weakness or persistent pain continues, concern exists for a tear in the rotator cuff, which may necessitate more invasive treatment.
Elbow pain “Golfer’s elbow” usually is described as pain coming from the soft tissue structures on the inside of the non-

The structures that reside here are origins of the tendons of the wrist which are responsible for eccentric contractions that help control wrist motion and grip at ball impact. Pain on the outer side of the elbow is ironically referred to as “tennis elbow” but occurs in the lead elbow as a result of excessive eccentric load from improper grip and downswing. While often mistakenly referred to as a tendonitis, chronic cases of these tendon injuries have been shown not to contain any of the typical inflammatory cells and are more often related to a degenerative process. If pain persists despite a trial of relative rest and bracing, appropriate strengthening exercises have been proven to be effective for this condition. Additionally alteration of grip and swing mechanics will prevent the condition from occurring. For more persistent symptoms, more invasive treatments have proven very successful. ■

Then head to the range to hit a small bucket of balls. Not only will this loosen you up for that day’s round, but will be beneficial to you in the long term.

Incorporate a proper warm up for your wrists and forearms to include stretching and slow golf swings on the practice range. This will reduce the amount of shock on your arms when hitting the golf ball. Wrist curls or squeezing a tennis ball for five minutes a day can develop the strength needed to play those tough lies. Also, pay attention to how and where the ball is sitting on the golf course. Hitting a ball off a hard surface such as a tree root can cause serious injury to your hands and wrist.

f you have ever experienced joint pain in the back, knees, hips or shoulder you know how it can affect not only your daily activities but your game as well. Arthritis, strained ligaments or tendons limit the movement of your joints. You

Does it hurt? What does the treatment feel like? There is little or no sensation during treatment. Occasionally, one feels mild, soothing warmth. There is no pain associated during laser application. Laser treatment is relaxing and some people even fall asleep. On the other hand, it sometimes occurs that pain can increase or temporarily worsen 12-24 hours after a treatment session. This is because the laser light starts the healing process. This type of pain is particularly likely to arise when the health problems are chronic in nature. It usually subsides after a few days but can, in rare cases, last longer. This is a normal reaction if it occurs, and will subside.
How long does the treatment take? The typical course of treatment is 10-minutes, depending on the size of the area being treated. Acute conditions may be treated daily, particularly if they are accompanied by significant pain. More chronic problems respond better when treatments are received 2 to 3 times a week. Treatment plans are determined on an individual basis.
How many treatments does it take? This depends on the nature of the condition being treated. For some acute conditions, 2 to 6 treatments may be sufficient. More chronic conditions may require 6-10 sessions. Conditions such as severe arthritis may require ongoing periodic care to control pain. How long before results are felt? You may feel improvement in your condition (usually pain reduction) after the very first treatment. Not everyone responds to laser therapy and results cannot be guaranteed. Each treatment is cumulative and results are often felt after 2 to 4 sessions. The opportunity to help launch The Concession more than made up for it. It was a great honor to participate in the grand adventure that is The Concession. I got to work with Tony and Kevin Daves and then finally the Cassidy family, the very gracious people that own and operate The Concession now.

I also learned about “Golf Food” – and what I learned is that the golfer is much more passionate about golf than he is about food. The golfer wants to drive his cart with one hand and eat with the other – and he doesn’t want the hand he is eating with to get greasy and ruin his grip on the club. Thus the ultimate “Golf Food” … is the hot dog - in a very good, absorbent napkin.

In 1895 the Archbishop of Canterbury described golf as “… a game whereby a small ball is knocked into a small hole with an instrument singularly ill-suited to the purpose.” As a kid I took the quote as a directive. I neglected to pick up the game. I have no idea why I followed a Protestant bishop’s advice yet showed no regard for the advice proffered by all of the Irish Catholic bishops I was related too. My true introduction to golf began about eight years ago. Tony Jacklin told me that he and Kevin Daves and Jack Nicklaus were going to build the best golf course in America and they wanted me to do the food. I was daunted by the responsibility but was also flattered by the attention of such illustrious company. I accepted. A week later, while on a hockey journey with my son through the frozen wastes

of Minnesota, I received a call from the Publicist for The Concession. She informed me that in two hours I was going to be interviewed by Lynne Kasper of NPR’s “The Splendid Table”. It was to be a live national broadcast. The subject was to be “Golf Food”. I had no idea what “Golf Food” was. My son and I were staying in a cheap hotel next to a hockey rink. The only way I could get cell phone reception was by standing on the bed and pressing my cheek up against the frozen hotel window. I was draped in bad polyester drapes. Throughout the interview I looked like an idiot and I sounded like one too. I had no idea what “golf food” was. I took a politicians’ approach - no matter what Lynne Kasper asked me about “golf food” I talked about Rack of Lamb. It was a chilling and humiliating experience.
Our passion for perfect food at The Concession led us down a giddy path in pursuit of the tastiest hot dog we could build. We started with a great, allbeef dog. Then we wrapped it in bacon - because everything tastes better with bacon. And then we fried it - because everything tastes better fried. We served it in a grilled bun brushed with garlic butter - because bread always tastes better with garlic butter. And then we trickled the whole thing with truffle oil and served it with béarnaise because we could. When Tony Jacklin tasted our hot dog he said, “Wow. But it is going to give me a coronary.” So we called it the “heart attack hot dog.” At “eat here” we serve them with a short term will. We all know Emeril is an incredible food architect. He has developed a viewing audience of a hundred million people. But what makes him really cool is the Emeril Lagasse Foundation. Emeril’s foundation has contributed over five and a half million dollars to causes that help young people learn life skills and talents that can build better lives. I first met Emeril over twenty years ago. I had been operating the Beach Bistro for about five years. Every critic, food writer and new “chef” was drinking the Kool-aid that was “cuisine minceur” - plates with little bits of food and parsley water. I wasn’t getting it. We were serving big chops and seafood stews and steaks with lush mashed potatoes and killer gravy. It was about then that I was invited to a cooking demo featuring a number of chefs. One of them was some kid from New Orleans, a new rising star. He looked like he was about twelve. He prepared a magnificent chicken stew with lush mashed potatoes and killer gravy. I felt vindicated. It was a good day. I bought a cookbook and he signed it.
And then there was Emeril. He pulled up in a limo van and made his way through introductions and hellos and wires and lights. He was gracious but a little subdued. He seemed a tad uncomfortable in the close quarters. He retired to his limo bus for make-up. It was disconcerting to see him leave the building. I was hoping he was coming back. Than the crew switched on the lights...and the power went out. There are times in your life when the whole board seems to tilt and all the pieces are in danger of sliding off. This was one of them. We called electricians and ran in and out and around throwing off and on breaker switches until the power came back on. Right about then a glass of wine seemed like a great idea. As I was popping the cork Emeril came back in.
About a month ago a man called and told me that Emeril wanted to come to my restaurant and tape a television show. After talking to him for a while I began to believe him.
Emeril’s team began arriving in waves - trucks filled with cameras and lights and cables. There were makeup people and lighting people and key grips and writers and producers and camera crews and security. We had to move out most of the tables and chairs in the Bistro to get all the stuff and all the people in.
As the crew put the restaurant back together we finished another glass or two and he talked about his current passion - his foundation and the joy he was celebrating at the success of projects to feed inner city kids at school and train troubled youths in the restaurant trades so that they could reconnect and develop productive lives. We made plans to get together again. He took the time to have his picture taken with some of the staff. And the limo bus swept him away. He was a great guest. It was a great day. Emeril is cool.

That kid became Emeril, the first rock star chef, the most famous chef in the world.
The big day arrived. We had painted everything that didn’t move and cleaned the place inside out.
We shared the bottle and did the show. Two locations and six dishes later he was praising my rack of lamb. He loved the Bistro Bouillabaisse and told me that the Bistro’s Food Heaven was amazing and that I should be locked up for being crazy enough to imagine a dish with lamb, butter-poached lobster and foie gras all on one plate.

In the early stages of my culinary career, I worked as a private chef to billionaire Texas oilman W.A. “Tex” Moncrief. He was an avid golfer and member of the prestigious Shady Oaks Country Club in Ft. Worth. Mr. Moncrief also happened to be best friends with Ben Hogan and Ben’s brother, Royal. Although I’d never golfed before, I was aware that Ben was a legend in the game and I was fortunate to spend time with him and his lovely wife, Valerie, on many occasions. Whether we were off in the private jet to the Moncrief’s home on the golf course in Palm Springs, or their ranch in Gunnison, Colo. for trout fishing, the Hogan’s were often along too, and as I became more familiar with these gentlemen I came to realize how they lived their lives with a sense of extreme comfort.
