Seasonal Produce With new summer fruits coming into season, now is the perfect time to be planning your desserts to include classic crumbles and cobblers. Not only does it make economic sense to eat seasonally as fruit and vegetables are at a better price, it also has health benefits too: foods in season contain the nutrients, minerals and trace elements that our bodies need at particular times of year. For example, British Food Fortnight (23rd Sep – 8th Oct) marks the shift from summer to winter and the fruit and vegetables that are coming into season then, such as apples, are packed with vitamin C to boost our resistance to winter colds.

Minneola’s 603320 kg

Nicknamed “The Honeybell” because of its bell shape, the Minneola tangelo is a cross between a tangerine and a grapefruit. Its large size and slightly elongated “neck” make it easy to recognize. The most popular of the tangelos, seedless Minneolas are brimming with sweetly tart juice.

All plums share three common characteristics: thin skin, a single central pit and a succulent flesh when ripe. A versatile culinary ingredient they can be used in crumbles to salads.

Granny Smiths (new season French) 601460 kg

Granny Smith apples have a bright green skin that is often speckled with faint white lenticels (spots). Medium to large in size and round in shape, they are a firm and juicy apple with thick skin. Their flesh is bright white and crisp in texture with a tart, acidic, yet subtly sweet flavour.

Quality Standard

The Quality Standard Mark Scheme for beef and lamb provides high levels of assurance about the meat you buy. All beef and lamb carrying the mark is chosen according to a strict selection process to ensure it is succulent and tender. Quality Standard Mark (QSM) beef and lamb is produced to higher standards than required by law with a supply chain which is fully assured and independently inspected at every stage.

What is RSPCA Assured?

RSPCA Assured, previously Freedom Food, is the RSPCA’s farm assurance and food labelling scheme. It aims to improve the welfare of animals farmed for our food. RSPCA Assured assesses farms, hauliers and abattoirs to the RSPCA’s strict welfare standards. If they meet every standard, the RSPCA Assured label can be used on their product. RSPCA Assured allows free range, organic, indoor and outdoor farms to join its scheme as long as the RSPCA’s welfare standards can be met.

Red Tractor

Accreditation Jargon Buster With so many different accreditations it can be difficult to know what each means, and more importantly which ones you should be looking out for to make sure the meat you are purchasing is of a good quality with full traceability. We’ve given you a breakdown of what our top three accreditations mean.

The Red Tractor logo confirms that independent assessors have checked the food or drink and it meets comprehensive standards, from farms to fork. Red Tractor standards cover the following: 1. The Red Tractor logo is a mark of quality food you can trust. Red Tractor insists on rigorous production standards from farms to pack eg. They don’t allow growth hormones or antibiotic residues in your meat. Just good quality food at its seasonal best! 2. They know where all Red Tractor food and drink comes from. Every stage of the journey is checked. Their systems ensure that all food can be traced right back to the original British farms. 3. Red Tractor farmers care about their animals. Every farm approved has been visited and only skilled people are allowed to look after livestock. Their standards mean animals have suitable space, and the right food and water to ensure they’re healthy. Vets only prescribe medicines when animals are ill. 4. Red Tractor farmers care about our countryside. Their land is their office and their home so they want to look after it! Fertilisers and pesticides are used only when necessary to keep crops healthy and always in a manner that reduces the risk of pollution and impact on wildlife. 5. The Union Jack flag in the Red Tractor logo confirms your food has been born, grown, prepared and packed in the UK. Every stage of the journey is checked. Their systems ensure that all food can be traced right back to the original British farms.

Korean BBQ Wrap

It’s a wrap! A speedy grab and go option that’s full of flavour and low in calories. Take a look at our video with Executive Development Chef Rob Owen. Ingredients 150ml of Korean maribase 177751 2 tbsp olive oil 2 tbsp finely chopped fresh coriander 600500 1kg Red Tractor Whole Chicken Inner Fillet (pf) 900500 4 12in Country Range wholemeal wraps 786790 1 medium peeled carrot 600221 100g red cabbage shredded 600201 ½ Spanish onion thinly sliced 601081 1 courgette spiralized 600730 Method 1. Slice the chicken inner fillets and marinade in the Korean Maribase ideally overnight (a couple of hours should suffice). 2. Fry the chicken in a drizzle of olive until fully cooked. 3. Chop the Coriander, Carrot, Red Cabbage, Onion and Courgette finely for the slaw. 4. Mix a drizzle of oil and a tablespoon of the Korean Maribase into the slaw. Add the slaw then chicken to the wraps and fold by bringing the bottom upwards and the two sides in. 5. Wrap in parchment or foil for a grab and go option.
